THE SUMMER SOLSTICE

I

've spent the last couple of months talking about taking pictures of the night sky, so it's time for a change. I'll return to photographs in a couple of months with the results of our little competition, you've plenty of time to take some pictures and email them to me.

Midsummer isn't the best time for most amateur astronomers, short nights and murky skies limit viewing a lot. That doesn't mean that it isn't an interesting time of year, far from it, the summer solstice is probably the most ancient astronomical event that humankind has been aware of. Most people will be aware that ancient stone circles were used for many things, including calculating when midsummer was due. What you might not know, is how common these circles used to be, around 1,300 are known about, and probably some sites have been lost. This means that ancient people knew about the importance of the seasons and found a way to work out the important dates. Clever weren't they, I'm not sure how many people today would be able to achieve that, and our ancestors were doing it before the Pyramids were built. So, what exactly is midsummer? We all know that the Earth orbits, goes around the Sun, and that the time it takes is 1 year, that's why other planets have years of different times. This orbit isn't a circle, it's an ellipse, a squashed circle, so that means that at one point in its orbit the Earth is nearer the Sun than at any other time, that, combined with the tilt of Earth on its axis gives us midsummer. That's the important science, there are other things going on, but that's the main bit. Why does this matter? The solstice marks the middle of the seasons, and without seasons we would be in a bit of a mess, in fact we wouldn't be here at all. No seasons means no agriculture as we know it, even wheat might not have evolved. The planet would probably have almost permanent hot and cold areas in bands, everything would be as different as an alien world. The evolution that shaped our plants, animals and us would have been totally different. So, if you are reading this in late June, be glad that we have midsummer, and remember how smart your ancient ancestors were. I'll finish with a couple of things to look out for in July. Venus is prominent just after sunset, with good binoculars you will notice that it's a crescent, like a new moon. If you have a look on the 12 of July, Mars and Venus are close together, with Venus being much the brighter. If you get a clear sky, have a look almost directly overhead as the constellation Cygnus, the swan is plain to see. The brightest star, Deneb marks the head, at the other end, the star Alberio marks the end of the tail. Alberio is an especially beautiful double star, one a reddish giant, and the other is a very yellow giant. A small telescope will reveal the beauty, it's one of the go to sights in the night sky. Incorrect Car Insurance - it is not worth the risk I had my second vaccine two weeks ago and sadly, once again I had a severe reaction, actually worse than the first time, and I am still feeling very tired and drained. An issue with Brexit that is now coming to light is that some British Health Insurance companies are no longer covering residents in Spain. If this is the case for you, please call my Head office, where you will get the advice and information you need. Another issue is that there are a large number of British number plated vehicles still on the road in Spain, many of which should be changed to Spanish plates, with residents requiring a Spanish Driving Licence. It has been reported in the press that there are over 1million vehicles recorded in Spain without a current ITV. I understand there are nearly 3 million cars on the roads in Spain, without all the correct paperwork, which represents 8% of all cars registered. The largest issue is cars with a lack of insurance. If the police stop you unless you are properly and legally insured and have all the correct paperwork, you will be fined very heavily. Now we have the new speed restrictions in place for urban areas, throughout the whole of Spain, and the government are promising far more speed checks, the chances of being pulled over have increased dramatically as the police are far more active with this situation and this will result in a large number of fines, possible points on your licence and in some cases, vehicles impounded and this obviously means your paperwork could be checked more frequently. Why people think they can drive uninsured cars, is amazing to me. Hopefully this will help to decrease un-insured cars being driven on the road. The risks involved with not being insured and being involved in an accident, where there are injuries or death – it is just not worth the risk. Our family (like many others) have waited such a long time to have a break away and the moment has finally arrived. We are off for a glamping weekend where the plan is to chill out, relax and have lots of lovely BBQ food, sangria and cocktails, as well as going back to basics with some silly games. I´m sure we will return completely refreshed and revitalised! I also have a few day trips planned in the coming weeks for my angel's upcoming dance competitions to Valencia (again), San Javier and Alicante. We also have a big one in Tarragona as her group qualified in the Murcia competition to compete at the National finals, so fingers crossed they all go well. It is now looking much more likely that the streets will be full of visitors once again and we will no doubt struggle to get parked. Although this is usually something we always complain about, I think this year will be different and actually be a welcome hindrance. Book Review by Ivor Kindle Title: The War of the Wolf Author: Bernard Cornwall Publisher: Harper Collins

This book is the 11th title in "The Last Kingdom" series and once again the main character is Uthred of Bebbanburg. I am a great fan of both the written book series and also of the TV series "The last Kingdom". I am now awaiting the publication of Book 12 of the series and have read that indeed it may be the last of the series. The series has certainly moved on from the days of Alfred the Great and his constant battles against the invading Viking hordes. Uthred has now set his sights on maintaining his power and presence in the North but he has both the Scots and a selection of differing Viking invaders to deal with along with the infighting amongst the factions of the feuding offspring of Alfred the Great. This book is a good read and attempts to hold the storyline without actually moving it forward. Let's see what Book 12 comes up with. That said if you are a fan of the series then it is a must read.

At 53, Davina McCall is a fitness powerhouse. The TV presenter and mother-of-three has transformed her physique in recent years, launching her own fitness platform Own Your Goals Davina, as well as sugar-free cookbooks and workout DVDs. But wellness wasn’t always top of her agenda, and early on in her career, McCall admits a poor diet and lack of exercise put her health at risk. “In my 20s, exercise wasn’t as much of a focus for me as it is now. I was quite slim but my body wasn’t very toned, which was probably because when I did go to the gym, I would never really break a sweat. You would typically find me on the stepping machine reading a magazine. “But soon after I had my second daughter Tilly, I got in touch with this amazing [personal trainer] couple, Jackie and Mark, who I found in a local magazine and they completely turned my life around. I went from walking down the red carpet and no one really taking any notice of me, to then walking down the red carpet and everyone screaming my name and wanting photos – and that was because I had really toned up. “Comparing my fitness now to back in my 20s, I am so much fitter than I was then. At the time, I was quite content with my fitness, but if I was to have done a fitness test at 28, I’m sure I wouldn’t have scored as well as I would now, despite being in my 50s.” During this time, before she became a household name on Big Brother in the Noughties, McCall was shocked to discover she had high cholesterol while undergoing a routine health test, putting her at risk of developing heart disease. “After I met my husband [McCall married Matthew Robertson in 2000; the pair have since divorced], we decided we wanted to try for a baby. One of my biggest fears was whether I would come across any barriers in getting pregnant, and so to put my mind at ease, I booked a general health check with my GP. “They took some bloods and the test flagged two things: the first was that my thyroid was struggling and the second showed I had high cholesterol. “I just looked at my GP and asked if it was mistake,” McCall recalls. “At the time, I considered myself to be a moderately healthy 28-year-old and it never even crossed my mind that I would be at risk of something like that, especially as I always associated high cholesterol as something old people get – not someone in their 20s.” High cholesterol is believed to affect around six in 10 adults in the UK, but despite this, awareness about it is generally low. Looking back, McCall says she believes her high-fat diet was the main culprit, although genetics likely had a part to play too, as there’s a history of high cholesterol in her family.

www.femalefocusonline.com “Back then, I would refer to myself as a ‘butter fiend’, as butter and sugar would be my absolute guilty pleasure,” she says. “And with being half-French, processed meats such as salami were also something I devoured on a regular basis. “I now understand the fat content in salami is just horrific, and so that is something I’ve really dialled back on and see more as a treat now. White pasta and white bread were also things I always had in my cupboards. I never really thought to make the switch to wholemeal, as at the time, I didn’t think it would make much difference to my health.” Now, her diet is much more balanced. McCall says she’s been learning “so much” about fibre from gut health guru Dr Megan Rossi (@theguthealthdoctor). She also tries incorporate 30 different types of plant-based foods into her diet each week. “As well as meat, I went from full-fat milk to semi-skimmed, which was a big sacrifice for me as I would often drink pints of milk, as I thought it was good for me in terms of calcium. But with it being full-fat, it wasn’t great for keeping my cholesterol levels down.” One great sacrifice McCall made, which she “continues to grieve for”, is cheese. “My half-sister and I lived together for a long time and I remember our favourite dinner would be a ‘picky plate’ of assorted meats, cheeses, French bread and tons of butter. “Now I very rarely eat cheese, other than a sprinkling of parmesan on my pasta or at Christmas time – I definitely see it more as a treat now.” Luckily, she really enjoys eating healthily, and her diet is just one way she’s looking after her wellbeing in her 50s. “As I’ve gotten older, fitness has taken on greater importance and as a result has become more of an interest. I now make time for 30 minutes of exercise a day, five days a week, just to keep on top of my fitness, and that may be split between one or two runs and then the other three days I’ll do an at-home workout. “Essentially, I look at my body like an engine and it constantly needs fine-tuning to be working at top capacity,” she adds. “And so I now think about various aspects of my body, such as my bones, my heart, muscle tone, staying strong, and my overall mental health – all things I never really thought too much about when in my 20s – and how best I can nourish them.” Over the years, McCall has spoken openly about her battle and triumph over drug addiction, including a dependency on heroin when she was in her 20s. “I’m really open with my kids – they know about my history with addiction and we talk about that, but with my parents’ and grandparents’ generations, it was quite the opposite.” McCall says part of the reason she was caught short by her cholesterol diagnosis was because she was in the dark about her family history. “Since then, things have changed, and we can now identify health issues through hereditary causes and the stigma of talking about health issues has definitely faded, which is a great thing. “After I overcame my addiction issues in my early-20s and quit smoking at 25, I naturally became much more health-conscious – but of course in hindsight, you always think you could have done more to live a healthier life.” So, if she could give her younger self some health advice, what would it be? “I think I would tell my younger self, ‘Do what you’re doing, just bear in mind that you will pay a price for the decisions and lifestyle choices you make now in the long run’. Nothing in life is perfect…that is what keeps us trying to sort things out! What will help however, is learning how to cope when things are not the way we want them to be, and when they don’t look like changing! You may find that applying the 3As might help!

Acknowledge, Accept, Adjust.

It can be simple, it just may take a little concentration to apply it at first. Acknowledge that the problem exists, don’t spend your life in denial and refusing to admit that you can see what is wrong, and that it bothers you. Accept that some situations are here to stay, and that this may be one of those situations. Adjust to it and be determined to look for ways to prove that life is still very much worthwhile, and find the things in life that we can feel positive about and that we can build on. I originally started to write this article in Bangkok. I don’t really go to visit the country itself, travel films, books and photos can show me everything I need to know about Thailand. My personal reason for continuing to go back there is that I have been completely knocked sideways by the experiences I have had with the Thai people out there. I have decided that they, above all people, must have learned to apply the 3As better than any of us and it really shows! Their happiness shines through, not only in the way they project themselves, but in the way they treat others, with a kindness and grace that I have never witnessed anywhere else. They have very little, and yet they are wonderfully happy, appreciating everything they have in their lives. They admire us tremendously, but I feel we have lost the plot in comparison. It could be said that perhaps we have totally lost our appreciation for the important things in life and we are materially led, which does not make for happiness. Having things just makes you want more, and we can so easily take things for granted. Coming into contact with as many people as I have done, through counselling and other related work, I have never come across a set of circumstances that could not be resolved or improved by just having the right attitude. I cannot impress upon you strongly enough that it is life changing to realise that. There is nothing we can do about things that have already happened, and with the best will in the world we cannot prevent every disaster in our lives, but remember that the way we deal with it is what will affect the rest of our lives, and the lives of others we love, and those we come into contact with. How to have a solution-oriented mind

W

hen we have a problem, we usually try to solve it by starting to analyse it. But a thorough analysis of the problem usually makes us an expert on the "problem", but not an expert on solving it.

You become such a "problem expert" when you can answer these kinds of questions: What exactly is the problem? When did it happen? What's the worst thing about it? Who is to blame? Why can't it be solved? What is stopping me from solving it? ... Imagine a person whose goal is to be able to give a presentation to an audience but they are prevented from doing so by feeling jittery or fear. This person comes to me and "logically" wants to talk and analyse jitters and fear.

But we know that what we pay attention to, is what grows. So, if we are going to pay attention to problems – what will grow? Problems. The same as, when you are hungry and you are thinking about how hungry you are… in 10 minutes you will be even more hungry. Therefore, we need to pay attention and develop something else. One of the possibilities is to focus on “What do we want to have instead of this problem?” In this case: “What does the client want to have instead of jitters and fear?” And the client can probably tell us “I want to be brave” or “I want to feel good while talking in front of an audience”. Well, it is a better-defined goal. We can develop this or if you wish, we can analyse it: “When were you brave for the last time?” “How will you notice that you are brave?” “What helped you to be brave?” … and many more questions. What I do notice almost every time is that clients' already feels better when they think about these answers. Suddenly they are focused on solutions, on possibilities and on already achieved progress. Who can resist a tangy fruit pie with buttery pastry? Cherries and apricots are a match made in heaven, in Ed Smith’s recipe for a luxurious slab pie. Making your own pastry isn’t always the easiest, but your labour will be rewarded with a buttery casing that melts in the mouth. You can still get in on the fun if you don’t have cherry and apricots to hand – any berries that are in season will do.

Cherry and apricot slab pie

Ingredients: (Serves 8) 430g plain flour, plus extra for dusting 200g unsalted butter, plus extra for greasing 100g icing sugar ½tsp flaky sea salt 1tbsp apple cider vinegar 3tbsp cold milk, plus a little extra as a wash 700g apricots, pitted and quartered 250g cherries, pitted 100g golden caster sugar 120g ground almonds 2tbsp demerara sugar Serve with crème fraîche This works particularly well in a 30 x 20 x 3cm baking tin. Method: 1. Rub together (or use a food processor to pulse) the flour, butter, icing sugar and salt into a breadcrumb-like consistency. Add the vinegar and cold milk, and press into a ball of dough. Divide the

pastry into two not-quite-equal pieces, push into rectangles about 3cm thick, then wrap both and refrigerate for at least an hour, ideally longer. 2. The pastry is very buttery and can be tricky to handle, so roll out between two sheets of baking paper: the smaller one so that it’s the same size as your tin (this will be the lid); the other, big enough to line the base and sides; and both to 2-3mm thick. You’ll be able to break off bits that are not in the right shape and place them where they should be as you go. Refrigerate for at least an hour (again). 3. Combine the fruit in a bowl with the caster sugar and leave to macerate. After 20 minutes, add half the ground almonds, stir and set to one side. Butter the baking tin, dust with flour, then line the tin with the larger pastry sheet. Use a knife to trim the pastry so it’s flush with the top of the tin, using the excess to patch up any holes or thinner areas. Sprinkle the base with the remaining ground almonds then tip the filling in, ensuring an even distribution. Brush the edge of the pastry base with milk, then place the lid on top, pressing down firmly to seal the pastry together. Trim any overhang. Brush with milk, then add a liberal sprinkling of demerara sugar. Refrigerate one final time for at least 30 minutes (the pastry needs to be cold and the oven fully to temperature). 4. Heat the oven to 200°C/180°C fan. Place the baking tin on a larger sheet (to catch any spilled juices) and bake for 45 minutes, until the pastry is hard and golden, with some of the fruit bubbling through. If after 35–40 minutes the pie is looking very bronzed, turn the oven down to 180°C/160°C fan but do keep it in for the full amount of time. "Open Sesame" boomed the voice of Abanazer. A great boulder blocking the entrance to the magic cave, slowly started to grind aside. Firmly grasping his nephew's hand, the wicked uncle Abanazer, led Aladdin towards the opening, eager to find the hidden treasure. On the edge of their seats, the audience, totally emersed in the plot, were left completely nonplussed when instead of a dark, bat infested, cobwebbed interior, as described in the programme, owing to a lighting malfunction, they faced a set brighter than Benidorm beach on a midsummer’s day. After a moment’s hesitation, like a true professional, Aladdin stepped into the cave and delivered his well-rehearsed, now immortal line, "It's dark in here uncle". Just one example of the many obstacles the Quesada based theatre company, Studio 32, have endured since their formation in 2013, but they are not alone. Stage managers, regardless of whether they are members of the RSC or Tumble-on-Marsh amateur dramatic society, always face an inevitable battle with inanimate objects and technical equipment that always seem have minds of their own, but hey! That's the magic of live theatre, anything can happen, and usually does. Over the last few years, Studio 32 have focused their creative ability on staging fully blown musicals including, `Chicago´, `Fiddler On The Roof´, `Oklahoma´,` White Christmas´ and their current production, `South Pacific´. During that time, they have built a solid base of state-of-the-art equipment, and amassed a fully stocked wardrobe, capable of dressing anything from a period drama to the latest Hollywood extravaganza. They are also blessed with a mix of young and older membership with 60/70 talented actors and technicians, all ready to `step into the breach´ at a moment’s notice. The musical, `Anything Goes´ was a prime example when the leading man was involved in an accident just two weeks prior to curtain-up. The part was recast, lines hastily learnt, night and day rehearsals, but the `understudy´ not only saved the day but was rewarded with thunderous applause during the final curtain call. To sum up, Studio 32 are a credit to amdram here in Spain, they work hard to obtain as close to professional standards as possible, but always retain a close personal relationship through fun social events, and in doing so, have raised over 35,500 euros for local charities. RECIPES by Pushpa from the Spice Hut

Channa bateta - chickpea & potatoes Ingredients 225g chick peas, cooked 1 tspn gram flour 2 green chillies, chopped 1 onion, chopped Little oil Salt Pint of water 1 potato, par boiled, peeled and chopped into cubes 2 tbsp of tomato puree Little lemon juice 2 tbspn dedicated coconut Fresh coriander Method Heat the oil, fry the onions until brown, add the gram flour and continue to stir for few minutes Add the tomato puree, chillies, salt, water, and bring to boil. Add the chick peas, coconut, potatoes and mix well Cook until the potatoes and sauce are thick. Garnish with coriander. Enjoy. ●

Gnocchi with a Spicy Twist!

A classic Italian dish but with a Spice Sister spicy twist! Gnocchi is a dumpling like pasta made from potatoes, flour and egg. Polenta, semolina, stale bread and pumpkin can be used to make gnocchi. Made right these fluffy pillows just melt in the mouth. Sometimes shop bought gnocchi can be a tad chewy, dense and little bland! For the potatoes; the more starchy the better, something like Russets or Desires even King Edwards are great. The potatoes are cooked with their skin on to keep out the moisture and peeled as soon as cool enough to handle. They also can be baked on a bed of rock salt for about an hour. Apart from the seasoning of salt and pepper the rest of the spices are optional. Half a sachet of Curry On Cooking curry kit works really well, our favourite is Bombay Potato! Gnocchi can be served with a simple sage and butter sauce, just butter and cheese or a fiery spicy sauce. Recipe Add the potatoes to a large pan of salted water. Boil until cooked. Once boiled, drain and as soon as they are cool enough to handle, peel the skin and push the potatoes through a fine sieve or a potato ricer on to a clean surface or large chopping board.

Ingredients 4 large potatoes 1tsp cumin seeds 1tsp nigella seeds 1tsp garam masala ½ tsp black pepper ½ salt 1 egg whisked 130g flour - extra for dusting

Add the spices to the potatoes, mix well. Create a well in the middle add the egg; gently push the potato mixture into the egg.

To create the traditional shaped ribbed look, dust with flour and gently roll along the tines / the back of a fork.

Sprinkle on half the flour and gently mix into the mixture, keep adding flour until it comes together into a dough. How much flour will depend on the potatoes – you might use all of it or have some remaining. Knead gently until it becomes pliable but avoid over working the dough. Divide the dough into 4 equal parts. Dust the surface with flour and with the palm of your hand roll each piece into a sausage shape of about 2cm thick. Cut into about 3cm pieces.

In a large pan of salted boiling water cook the gnocchi in small batches, avoid overcrowding the pan, stir, cook for 2-3 minutes, wait for them to float to the top. Use a slotted spoon to scoop them out and drain. Tip the cooked gnocchi in to a sauce or simply toss in butter and grated cheese before serving. ● Due to Brexit, we are really struggling to get the curry kits over to Spain.
