Here’s a little guide on all things field&flower. We’ve put together our recommendations so that you can get the most from your field&flower membership. You’ll also find a delicious recipe that Anna from the customer team created! We started field&flower after meeting at agricultural college. We bought a cow from James Flower’s family farm in Somerset and began to sell grass-fed beef to friends and family. Seven years and lots of awards later, we still pride ourselves on selling meat of exceptional quality, not only from our own farm but also from farmers raising animals which have led happy, free-range lives fed on high-quality diets. We guarantee complete traceability and the knowledge that our meat and sustainable fish will be of the best quality. Thank you for your support and enthusiasm for eating free-range, grass-fed meat.

OUR STORY We began field&flower on Home Farm in 2011 having met at agricultural college. From starting with a single cow to becoming The Observer Food Monthly Best Independent Retailer 2019, it’s been quite a journey! Here are some of our favourite moments along the way‌

Use field&flower to plan meals, budget, and nutritionally balance your meat and fish consumption.

OUR PHILOSOPHY

Eat less but better-quality meat...

We believe it’s essential to eat better-quality meat, even if it means eating it less often. Our free-range meat is raised sustainably and chosen on welfare standards maintained by co-founder James Flower and his sister Claire.

We have over 200 cuts of grass-fed meat and sustainable fish to try. Whether it’s sustainable coley or grass-fed rack of lamb, we hope you enjoy cooking up a storm in the kitchen!

Here, you can alter the delivery date and the order contents all in one place! • Tick the ‘update all future boxes’ every time you make changes if you would like your next box to have the cuts that you last had delivered. • Don’t forget to click the green ‘save changes’ button once you’re finished.

• Amending your delivery addresses for each order (if you want a specific order delivered to another location). • Changing your default delivery frequency (just make sure you alter all three individual order dates if you do this). • You cannot save an empty basket – if you need to cancel an order then simply move the delivery date of the order you don’t want or select Subscription Holiday.

ORDER AND DELIVERY REMINDERS We will always: • Send you a reminder email five days before your order is due for delivery. You then have until 9pm the following day to make changes to the date or contents. • Be available between 9am and 6pm, Monday to Sunday, if you need any help planning or managing your orders. • Send you a despatch email the day before your delivery so you know your delivery has been prepared and will be arriving shortly. FOOD WASTE AND FOOD POVERTY

By shopping with field&flower you’re also supporting the charity FareShare South West each week. FareShare South West save quality surplus food from going to waste and redistribute it to those most vulnerable, delivering to homeless shelters, elderly people’s lunch clubs, schools and refugee charities. They transform the food into nutritious meals for the vulnerable people they support each week. At the end of the week I personally pack and send FareShare South West a selection of meat and fish – we love supporting them and ensuring nothing goes to waste!

Recycling your packaging At field&flower, we are committed to reducing our packaging in general and are putting all our efforts into finding greener options. Currently, our cardboard box is made from FSC-certified sources and is composed of 75% recycled cardboard and can be recycled again. Our ice packs are clear plastic, which is widely recyclable, and they contain only purified water. Our silver liner isn’t widely recycled at the moment. However, we aim to combat this by reusing it where possible. We deliver 35% of orders ourselves, using our own driver who collects all outer packaging which can then be reused. We are not too far from offering a collection service for all customers!

WHAT SHOULD I DO WITH my field&flower box? • Once your ice packs have thawed, score them with a knife or some scissors and pour the purified water down your sink or on your plants. This plastic can go in your household recycling. Alternatively, refreeze for your barbecue cool bag.

• Take out the foil liner and flatten it. This is not yet widely recycled, but can be disposed of with your household rubbish.

• Break down the brown cardboard box into smaller pieces and place in your household recycling.

POACHED CHICKEN WITH SAFFRON RICE AND HERBED YOGHURT Ingredients

Method

For the chicken:

1.

1.5kg field&flower chicken (remove giblets) 3 celery sticks, chopped into pieces 2 carrots, chopped into pieces 2 onions, peeled & cut in half 1 bulb of garlic, cut in half horizontally

2. B ring to the boil and then simmer for one hour.

3. While the chicken is poaching you can

make your herbed yoghurt. Add all the ingredients to a food processor and blitz. Season to taste and put in the fridge until you are ready to serve.

2 cinnamon sticks 4 cloves 1 bay leaf Handful of coriander 2 tsp ground cumin

4. W hen the chicken is nearly ready,

cook the rice according to the packet instructions, adding the saffron to the water while it cooks.

1 tsp turmeric 1 tsp ground coriander Sea salt and freshly ground black pepper Sesame oil and pomegranate molasses

5. Remove the chicken from the pan after an hour or when the juices from the chicken run clear when you pierce the chicken at its thickest point.

For the rice: 375g rice 2 pinches of saffron

6. Strip the meat off the chicken and shred into a bowl. Drizzle with a little sesame oil and pomegranate molasses.

P lace the chicken, herbs, vegetables and spices in a large stock pot. Pour water over the contents of the pot until covered.

FAQs

Delivery and recycling IS THE MEAT AND FISH DELIVERED FROZEN? No, all our meat and fish is delivered fresh (never frozen). This means you can freeze your meat and fish when it arrives. HOW IS MY FOOD PACKAGED, WILL MY DELIVERY STAY COLD AND FRESH? We deliver your order in temperature-controlled recyclable boxes with recyclable ice packs to keep your food chilled for a minimum of 36 hours. The ice packs may melt while your order is out for delivery, but this is completely normal. We regularly test our box temperatures to ensure the minimum chill time doesn’t change. WHAT DAYS DO YOU DELIVER ON? We deliver 7 days a week. You can’t choose a time slot at the moment but on the morning of your delivery DPD will notify you of your one-hour delivery window. We also have our own driver, Dave, who delivers in certain South London postcodes. DO I HAVE TO SIGN FOR MY DELIVERY? No, one of the best things about getting a field&flower order is that you don’t have to be home when we deliver. Our courier service (DPD) is able to leave your box in a safe place as specified by you under ‘Delivery instructions’ in your account. As we deliver perishable goods, we are unable to redirect a box once it is with our couriers.

FAQs

Animal welfare and sustainability HOW DO YOU ENSURE HIGH ANIMAL WELFARE? We have a dedicated team member who deals with the approval and monitoring of each supplier. Approval is based on high animal welfare, environmental care and sustainability. As we only have a small number of suppliers, we can contact and visit them regularly to monitor animal welfare. WHAT STANDARDS DO YOU WORK TO? Many of our producers are already members of the RSPCA Freedom Foods approval scheme and we also have our own exacting standards for the benefit of smaller farmers and producers not currently under high-welfare certification bodies. HOW DO YOU SUPPORT BRITISH FARMERS? We ensure that we source all our produce from British farmers and producers and, as much as possible, we source from the West Country regions of Somerset, Gloucestershire, Wiltshire, Dorset, Devon and Cornwall. IS THERE ANY FOOD WASTAGE? There is no food wastage as we source to order and only hold stock of the longerlife items such as bacon, hard cheeses and condiments. We’re proud to partner and support the charity FareShare South West who tackle food waste and food poverty. IS YOUR MEAT ORGANIC? No, our meat is not organic. However, we focus on farming with well-managed free-range systems that in turn work towards natural disease prevention within livestock. The use of antibiotics as feed additives has been legally prohibited since 1st January 2006, so any antibiotic used is for the prevention of animal suffering only. We work to a specified withdrawal period which prevents meat entering the food chain before it’s deemed safe. Suppliers are also approved on their environmental and sourcing procedures as we like to see a high level of care taken throughout the whole farming sector.

WHAT ARE THE ANIMALS FED? All our farmed animals are reared traditionally on high-quality diets which complement their breed, lifestyle and development. They all have constant access to clean, fresh drinking water as well as the following. • Cattle – The animals are fed a predominantly forage-based diet consisting of no less than 70% grass and conserved forage. Conserved forage can include hay, grass silage, maize silage and wholecrop. • Sheep – Are fed a forage-based diet consisting of no less than 70% grass and conserved forage. Other sources of food may come from home-grown turnips or forage rye during the winter months, and the sheep will always have access to supplementary conserved forage to aid digestion. • Pigs – Are fed a home-mixed diet of home-grown cereals, vegetables and brassicas along with what they can root out (such as plant tubers, shrubs and the occasional grub). • Poultry – Chickens, ducks and turkeys are fed on a mix of home-grown or locally sourced cereals, herbage and vegetables, as well as the flowers and insects they can find in their habitats. • Wild game – Our wild game eat a natural and varied diet of grasses, shrubs, cereals, insects and berries.
