It is no surprise that some of Scotland’s finest chefs come from the East of Scotland: St Andrews and Edinburgh’s historical, cultural, and financial influence alone, not to mention the cities of Dundee, Falkirk, North Berwick, Perth, Linlithgow, Dunfermline and everything in between, have helped shape the region into a hotbed of innovation in the world of food and drink.

Mara Seaweed sustainably sources ingredients from the sea surrounding Scotland, turning what it calls the country’s “forgotten superfood” into a range of seasonings and ingredients. The company is keen to boast the natural health benefits of seaweed, as well as its great flavour – increasingly prominent on restaurant menus and in home larders. It is, it says, “rich in fibre and essential nutrients such as iodine, potassium and magnesium, low in sodium and easy to incorporate into a huge variety of foods and dishes.”

Toll House Spirits is a family-owned spirits company based in Arbroath, Angus. Its flagship brand, Redcastle, was founded in 2017, and now features a range of six full strength gins, five fruit gin liqueurs, a rum and a coffee rum liqueur.

Intent on operating sustainably, the company has removed all single-use plastic from the production process - relying on paper-based packaging for postal orders, natural corks with wax seals for the UK-sourced bottles - and introduced refill pouches across the whole spirit range.

The brand’s Scottish & Caribbean Spiced Rum Fusion (70cl, 40% ABV, RRP £35), Blueberry Old Tom Gin (70cl, 40% ABV, RRP £35) and Cold Brew Coffee Rum Liqueur (50cl, 20% ABV, RRP £25) were successful in the Great Taste Awards, each earning 2-star recognition.

Home to Scotland’s largest herd of water buffalo, The Buffalo Farm in Kirkcaldy, Fife, is the sole producer of Scottish Buffalo Mozzarella, now widely available from wholesalers across the UK. Made on the farm using milk from the free-range herd, the mozzarella is creamier and slightly firmer in texture than its Italian counterpart thanks to the lush, green grass the animals enjoy. The producer also makes buffalo milk ice cream, which, sadly, is only sold locally.

Third-generation family company Macsween of Edinburgh has been handmaking haggis and black pudding ever since it was established in 1953. The ‘Delicious Every Day’ haggis, a blend of lamb, beef, oatmeal, onions, and spices comes in a 400g pack with an RRP of £3.20. The ‘Traditional’ haggis follows the same recipe but comes in a natural casing in multiple sizes, from 454g to 3.6kg, with an RRP starting at £6.50. The popular vegetarian haggis, made with a mix of vegetables, pulses, oatmeal, seeds, and spices, has a suggested retail price of £3.20 per 400g, and finally, the company’s staple black pudding, blending pork with oatmeal, barley and spices, has an RRP of £2.50 per 200g.
