OF MHK ARCHITECTS FEATURING HIS NEW VENTURE, “TIMELESS” INTERVIEW BY BRIAN RITZ FINE: Matthew, you have been extremely busy here in Naples building a very successful Architecture Firm, MHK Architects. We see your signs everywhere! So, what is this new venture of yours, “Timeless?” Timeless is a local neighborhood restaurant concept that will provide a bakery, freshly baked bagels, breakfast items such as egg sandwiches, quick light lunches with farm fresh organic salads and proteins, artisan deli sandwiches, and coal fired oven pizzas delivered to your door with a smile as a true American staple. But, in addition to these items, Timeless will also offer a full lunch and dinner menu, the ultimate coffee experience with our variety of classic espressos and coffees, as well as craft beer and wine in the indoor/outdoor Wine, Beer and Pizza Lounge. FINE: How did the idea for Timeless come to you? The idea slowly evolved in my mind over years of downtown master planning. I would often add the missing neighborhood elements to a list in my head. Then a year ago, I found myself with a terrible flu and an extremely high temperature. I laid in bed for a few days watching countless episodes of Chef’s Table. By the time my fever broke, I had convinced myself I was going to open a restaurant geared towards our community.

FINE: Tell us a little more about the concept of Timeless? I have had so much fun these past 8 years helping to recreate the New Old Naples and our downtown area. Along this journey, I have met so many amazing people! They are people who, as I do, truly appreciate Naples for its special nature and wish to see it grow smartly and to the appropriate scale with something special on every corner. Listening to the community, I discovered there were a few missing pieces to our small town, specifically the downtown area. For the past few years, my brain started envisioning a concept that would incorporate all of the missing ingredients into a collaboration under one roof. The first step was to seek expertise. Through my network, I found this quickly in David Nelson - a veteran executive chef from Trulucks Seafood. David quickly brought those dreams from the Chef’s Table episodes to my reality. He is taking my simple concept and creating a culinary masterpiece without losing the community driven and simple concept. Additionally, I met Yannick and Ana Brendle just before I started construction on the restaurant - a third generation French baker and wife. I instantly thought adding them to the concept would not only enhance our menu, it would also enhance our community experience. Though financially separate, their establishment, LeMoulin Bakery, is open to our space. The lack of walls will allow the visitor to transverse from our simple concept into their community bakery and vice versa. Our Old Florida décor will be evident of my work, specifically in my single family work and neighborhood charm, while Le Moulin’s area will be representative of Yannick’s youth from an old world French bakery. The bakery will be making 100% of the Timeless baked goods, breads for fresh sandwiches, desert pastries, and our amazing pizza dough uti-

FINE: What are some of your goals for Timeless? I have no financial goals for timeless. I wish for it to purely be an asset to our community and successful by default. I am certainly not quitting my day job. Architecture is my passion and I feel I have only broken the surface to help define our community. I have a lot of work to do. As far as Timeless, my goal is for it to be a long lasting staple of our community and I wish success for our Executive Chef, David Nelson and his team.

FINE: What will the interior décor look like and what do you envision for the atmosphere of Timeless? The atmosphere of Timeless will be special! You will feel like you are eating in one of my houses with comfortable and timeless Old Florida style. We actually built a house inside the restaurant that encompasses the open kitchen concept. It will be adorned with the infamous MHK brackets, decked out in nothing else but white, and be covered in a mill finished standing seam roof. The interior designer for the space, Suzanne Costa, really brought a special touch to the concept. Her simple and clean décor will mesh seamlessly with textures of reclaimed barn wood accents, live edge wood table tops and elegant seating. The space will feature several large works from my favorite local artist, Ed Koehler. The main piece will adorn a magnificent driftwood sculpture climbing the wall of the dining room with elegant back lighting. The restaurant will also include a few amazing furniture pieces from one of my most cherished clients including an amazing giant horseshoe crab, a community table and some high top bar seating. This was my first residential client in Naples so it made great sense to have some of her pieces in the space. Additionally, the space will be filled with my work throughout the community. It will be adorned with the MHK houses as artwork on the walls as well as several televisions throughout the space. This restaurant is a tribute and a thank you to the community that has embraced my architectural work and I wanted to show it throughout the space. When you sit in Timeless, I want you to feel like you are in the heart of Old Naples.

FINE: I understand that your chef is David Nelson. Can you give us a little bit of his history or background? Yes, David is a Minnesota Native that started cooking at a young age. The pace, stress, and daily challenges of running kitchens is what excites him. The military brought him out to the Pacific Northwest. After his service was over, he stayed and worked for some great chefs in Seattle before relocating back to Minneapolis where he had the opportunity to work in a lot of different operations and learn from some of the best chefs in the city. With the harsh winters nudging him South, David got the opportunity to join Trulucks in 2006 when they only had the Naples location in Florida. He opened their Boca Raton location and trained the chefs and kitchen crews for their Ft. Lauderdale and Miami locations. He came back to Naples to head the Naples kitchen. Naples always felt like home with its Midwestern attitudes and people. David is very excited to work with Matthew and MHK to create a restaurant experience that is unique and diverse. Timeless will have a coal fired oven which will be the only one in Naples. This oven will be used to bake our bagels and pizza among other things. Having a French bakery next door is a dream and a perfect partnership for what we are trying to accomplish, with all our bread products being made fresh daily. The open kitchen concept will really allow the opportunity to connect with our guests on a daily basis. We will be a show kitchen where guests can interact with the kitchen staff and maybe learn a few things. FINE: When is the opening date and what is the location of Timeless? Our goal is to open Timeless slowly this summer. We want to get our ducks in a row and our staff up to par. We also have a great deal of coordination to do with the bakery in order to get our coordination in sync. We anticipate opening around June 1st with a small community opening and then most likely have a grand “Season” opening sometime in October or November.


FINE: Do you have any unique or interesting projects coming up that you can share with us? I would say the four that I can talk about would be the St. George and the Dragon redevelopment, the 1075 Central Avenue (former Naples Daily News site), the commercial components of Naples Square and the Pelican Bay South Beach restaurant and beach facility. In addition, I have been doing small scale ongoing improvements for Neapolitan Enterprises along Third Street South that I am extremely proud of. All of these projects are going to be smartly developed and become assets to our residences. In addition, this past year we completed several great clubhouse projects, including Greyhawk at the Golf Club of the Everglades and we are currently working on a very large clubhouse for Moorings Park. The location is easy to remember. It is directly across the street from Wynn’s Market. The physical address is 90 1st Avenue North in the heart of our “D” Downtown neighborhood. We feel we are in the perfect location for a walking or biking community where we are within a stones throw to Old Naples, the hospital, the Lake Park neighborhood and the new mixed-use developments throughout the “D” Downtown such as Naples Square and others. FINE: We have been following your single-family residential projects in town for years now, but what are some of your recent larger planning and commercial projects that you have designed, completed, or have been a part of? Well, you have probably all noticed the new Robb and Stucky building. That was my first large scale commercial design since I opened my firm in 2010. I was very proud of the way a large building like that could fit into our community seamlessly. Since then, commercial and mixed-use developments have slowly been awakening through development opportunities. I am also proud to have had my design influence on a few restaurants in town like Tulia, Bar Tulia, and the French. Additionally, the new Hyatt Hotel, renovations to Beau Mere and the Naples Square Mixed Use Development are all creations of MHK. It seems like non-disclosure is my middle name these days; however, I will tell you I have a few

things on the drawing board that will be real gems for our community. Actually, more than a few. They are in places that desire and need redevelopment so I am extremely excited about the near future. One of which is the St. George and the Dragon property which just received preliminary Design Review Board approval. This building will really change the face of four corners. When it is fully detailed and executed, it will be an amazing work of art. FINE: What do you see as far as development in Naples and where this town is heading as far as growth? Where are some hot development areas here? I would say the “D” Downtown has the most potential. It allows up to 30 units per acre and allows developments to purchase parking spaces to supplement their development footprints. This area is a Community Redevelopment Area. It is the primary connectivity to Baker Park, the Gordon River Greenway, the Lake Park Neighborhood, the Residences at Naples Square, and Bayfront to our special downtown areas such as 5th Avenue South and the Third Street Shopping District. I am excited because most of these properties are relatively small in scale and these small scale mixed-use developments can really create opportunity for people to live close to their work and to create special and unique neighborhood commercial areas.

Our residential and hotel work has also recently taken us outside of Naples. We are doing residences in Ocean Reef, Pittsburg, Telluride, and nine single family houses in the Abaco Islands of the Bahamas. We also just finished a hotel in Chub Cay of the Berry Islands in the Bahamas. I would say my passion is currently driven by Old Naples houses, downtown Naples redevelopments and my Caribbean work. FINE: You have done a great job branding MHK Architects here – overall, what makes MHK unique or different from the other architectural firms in town? I would say our secret is easy - we strive to be “no ego” architects. I know it is an oxymoron. However, it was the top guiding principle when I started the firm. It is my goal to create my client’s vision, not my own vision. I simply use the gifts that God gave me to fulfill their aspirations. Additionally, we are one of the larger employers in our community. We typically have between 40 and 45 staff members. I have an amazing staff from draftsmen to amazing architect designers to graphic design specialists and summer interns. We all work seamlessly to fulfill our clients needs and timelines. FINE: What are some of the things you enjoy about Naples? What are your favorite restaurants, activities, places to visit, etc? My favorite thing about Naples is the sense of community. It is a place where I enjoy raising my two children, a place where I always have someone saying hello at the grocery store or at a café. Our town is such a gem. I have to pinch myself every day to realize I have been given this great responsibility to help our town grow while maintaining the character of what it is today. My favorite restaurant is hands down Tulia on 5th Avenue. I probably eat there 4 days a week. It’s a fun little walk from my office and a great place to meet clients for lunch. As far as activities, I am a huge golfer. I love to unwind on the golf course and I love Sundays out on the boat with my wife and kids. It doesn’t get any better than that. As far as places to visit, I have made our home away from home the Abaco Club in the Abaco Islands, Bahamas. Besides it being a steady stream of work, it is a place to unwind and get away from humans for a bit. Additionally, we have a summer cabin in Canada on an island in the Lake of the Woods that I hope to spend more time at in the near future. It’s a way to beat our September heat for a few weeks.

4 fresh shiitake mushrooms 1 cup dry white wine 1 teaspoon marjoram Fresh parsley Salt and pepper to taste Olive oil DIRECTIONS: Slice mushrooms thinly Chop garlic and toss lightly in fry pan on with 3 tablespoons olive oil, medium heat Add mushrooms, artichokes, and salt and pepper Add wine and fresh chopped parsley If you used dried porcini mushrooms add juice from hydration FOR SHRIMP: Add a tablespoon of chopped garlic into 2 tablespoons olive oil, medium heat Add 1-tablespoon marjoram Add salt and pepper and more olive oil if needed Butterfly shrimp, retaining shell. There is also the issue of training your successor if needed. Will your passing cause a liquidity crisis? In addition to coping with an emotionally difficult time, your family could also be presented with logistical issues in regards to your company. This is another reason why detailed plans for your succession are so important. Potentially, insurance proceeds can be set aside to replace income lost during the transition so business can continue uninterrupted.
