FINE: Tell us about yourself and your background? Where you are from and what was your family like? Where have you lived in the country or are you originally from Florida? Tell us about your work/professional background? Jason: Todd and I are both from different areas. I grew up in South Florida and Todd is from Ohio. Todd grew up in the jewelry business, his Grandfather started in 1919 and he worked with his family until they closed the business in 1989. This is when Todd and I met and when I started in the business. We worked for a retail jewelry company based in Ohio for fourteen years before leaving the company in 2003 to open the Diamond District. FINE: How and when did you first have the idea to start the Diamond District? What made you choose Naples/Estero? Jason: We opened the Diamond District in 2003. Todd was living in the Naples/Estero already and was in love with the community and we both saw the growth potential and felt it was a great fit for our business plan.

FINE: What makes the Diamond District unique compared to other jewelry stores? Jason: We’re unique in several ways. We have on inventory more loose GIA certified diamonds than any jeweler in Southwest Florida and we price our diamonds at or below-internet prices. We also have a state of the art shop in our store with three master-craftsmen. It’s all glassed in so that clients can watch as work is being completed. FINE: Can you tell us about some unique selections and some of your items in the store? Do you custom design or customize designs? Jason: We are the exclusive jeweler in Southwest Florida for many world renown designers including Tacori, Verragio, Simon G, Gabriel & Co, and Christian Bauer to name a few. We also have a large selection of John Hardy and many other fashionable lines of jewelry. We are the exclusive dealer for Forevermark Diamonds, the rarest diamonds in the world. Less than 1% of all diamonds mined are elgible to be cut into a Forevermark diamond and DeBeers asked Todd and I if we would represent their diamonds. In fact, we are one of only 30 diamond dealers in the world to offer the Forevermark Exceptional Diamond Collection which is basically DeBeers Museum diamonds. We do custom design as well.

FINE: What are some of your favorite things about the Diamond District? Do you have any other locations?

FINE: What are some of your favorite charitable organizations here?

Jason: We have the one location in Coconut Point and this is one of our favorite things about the Diamond District. On a serious note, we love our Diamond District family, both our team and clients. We have forged some very special relationships over the years.

Jason: We support many organizations locally. We love the arts and support the Rauschenberg Gallery as well as Sidney & Berne Davis Art Center. We are quite active in supporting FGCU Athletics and many other organizations locally including March of Dimes, Make A Wish and the Passion Foundation.

FINE: How many engagement rings do you sell per year? What time of year are you the busiest?

Community Involvement We are proud to support our community.

Jason: I’m not sure the number of engagement rings we sell per year, but there is no busier time than the Christmas season. We generate about a third of our entire year’s sales from Thanksgiving Weekend through the end of December. FINE: Do you offer all of the different certifications of stones, such as GIA, EGL,etc? Jason: Our diamonds are certified by either GIA or Forevermark. FINE: What is your best selling item or best selling items? Jason: As far as the best selling item, year after year there is no more popular gift than diamond stud earrings so I would have to say those along with engagement rings. FINE: What are some of your favorite restaurants and things to do in your area? Jason: We both have a few favorite spots to eat in the area; Todd loves Tru Food in Naples and Angelina’s in Bonita Springs. One of my favorite dishes in the world is the Sea Bass at U.S.S. Nemo.

And no, I didn’t plan it that way! But to answer your question, expansion is always on the horizon. FINE: What are some of your favorite things about Naples and why you like living here and having a business here? Kylee: Naples is beautiful; the sun, the water, the beach. That’s why it makes it the perfect place for The Bowl. Everything on my menu is cold, from the organic pitaya bowls to the iced matcha lattes, it’s exactly what you’d want to eat and drink fruit on top of your bowl to the frozen fruits, juices and plant based milks in the blend, nothing is doused in pesticides or chemicals like conventional fruit or other food. Acai is the main ingredient in the blend of our bowls, unlike some competitors who’s main ingredients are often ice or sweetened juices/milks. The acai berry provides antioxidants, fiber and heart healthy fats. Our pitaya bowls, made with dragonfruit, are the naturally bright pink bowls and supply you with a healthy dose of fiber, magnesium and vitamin B. No matter what you choose on our menu, you’re going to get something healthy with loads of benefits. FINE: Can you tell us about the different Bowl selections on your menu? Kylee: The Bowl offers organic acai and pitaya bowls: a cold berry blend, thicker than a smoothie, topped with granola, fresh fruit and other toppings like coconut shreds and raw local honey. 8 veal cutlets Salt and freshly ground black pepper 2 to 3 tablespoons unsalted butter 2 to 4 tablespoons olive oil 1 large shallot, finely chopped 2 to 4 garlic cloves, smashed 2 ounces assorted mushrooms, sliced 1/2 cup sweet Marsala 3/4 cup low-salt chicken broth Leaves from 1 fresh rosemary sprig

DIRECTIONS: • Sprinkle the veal with salt and pepper • Melt 1 tablespoon of butter and 1 tablespoon of oil in a heavy large skillet over medium-high heat

• Add 4 veal cutlets and cook until golden brown, about 1 1/2 minutes per side • Transfer the veal to a plate • Add another tablespoon of butter and oil, if necessary • Repeat with the remaining 4 cutlets • Set the cutlets aside • Add 1 tablespoon of oil to the skillet • Add the shallots and garlic • Saute until fragrant, about 30 seconds • Add a tablespoon of the olive oil, if necessary • Add the mushrooms and saute until tender and the juices evaporate, about 3 minutes • Season with salt • Add the Marsala

• Simmer until the Marsala reduces by half, about 2 minutes • Add the broth and the rosemary leaves • Simmer until reduced by half, about 4 minutes • Return the veal to the skillet • Pour in all of the pan juices • Cook just until heated through, turning to coat, about 1 minute • Stir the remaining 1 tablespoon of butter into the sauce • Season the sauce with salt and pepper, to taste • Using tongs, transfer the veal to plates • Spoon the sauce over the veal and serve
