MAKE THE SAUCE: Pour a cup of Extra Virgin Olive Oil into a sauce pan and heat on low-medium for sauté Add ½ - 1 Tablespoon Butter

Owner at the 5th Avenue Coffee Company FINE: Where were you born, where did you grow up? Where else have you lived? Frederik: I was born and raised in Holland and lived there until I was about 24 years old. In 1988 I moved to Ayrshire in Scotland, then to Grantham in Lincolnshire, then to Leeds in Yorkshire, and back to Ayrshire in Scotland in 1997. My wife and I finally decided to move our family to Naples, Florida in 2008. I have been here in Naples since 2008, where we bought this as an existing business. About 3 years ago, we upgraded the business by updating and adding to the kitchen. We added a hood and a lot of other essential items to create a full kitchen. We also updated the décor, the space, the colors, and added a much larger seating area outside. We have big crowds at breakfast, and lunch, and sometimes in the evenings during season. FINE: In your professional work life, did you start in the restaurant business or another type of business? How did you first get into the restaurant business and where was that? Frederik: When I was 24 years old I started working in the restaurant/hotel business in Holland. I was the only one in my family who ventured into that business. In 1988 I moved to Ayrshire in Scotland where I worked at the Marine Hotel at Royal Troon. I am still a member of the Royal Troon Golf Club and I was actually in the clubhouse this year during the 2016 British Open. Then I was asked to handle the opening of some new hotels. One was in Grantham

in Lincolnshire, England, and another in Leeds in West Yorkshire, England. After that, I came back to the Marine Hotel at Royal Troon. In 1997 my wife and I decided to start our own business of coffee shops in Scotland similar to the coffee shop here. We ran those stores for a number of years and in 2006, we made a decision to plan a move to the United States. FINE: When did you first open the Fifth Avenue Coffee Company? What is your plan for this store? Frederik: We purchased this business from the existing owners at the time in 2008. We wanted to make some changes to the shop and began to remodel and make some changes about 3 years ago. We really updated our kitchen to be a full service kitchen including hood ventilation, which allowed us to offer more menu items that we felt were essential. We also remodeled our bathrooms, updated the décor and colors, and added a much larger outside seating area for our customers, which has been very well received! FINE: What do you feel are the secrets to your success here? Frederik: I feel that it is really a combination of the remodeling, the updating of the store and kitchen, the addition of new items on the menu, and the expansion of the outside seating have been successful additions to our business. We love our location on 5th Avenue and we really enjoy serving our breakfast and lunch menu items for our customers, along with the evening crowds. FINE: What are your season and summer hours here? Frederik: During the summer hours, we are open from 7 AM – 6 PM. During season, we are open from 7 AM – 9 PM, and we stay open until 10 PM on the weekends.


FINE: Do you have a lot of customers who are “Regulars?” Lexie: We have a lot of regulars! We have people and groups that are here every day. We have men and women who like to have their business meetings here. We enjoy our regulars! FINE: I have heard that the restaurant business is 24/7, every day. How true is this statement? Frederik: That is somewhat true, but not really 24 hours a day! We are open just about every day though, except Christmas day. So, we are definitely 7 days a week!

FINE: What advice could you give to other business owners and entrepreneurs? Frederik: I would say that this is hard work! That is like any business though, to be successful. I feel like people might think that we serve coffee, breakfast sandwiches, pancakes – that’s so easy. That’s very far from the truth. There is a lot that goes into this business! We love it though and it is fun for us! FINE: Do you have any favorite local charities? Frederik: I really don’t have one favorite, but we like to support all local charities, schools, etc.

FINE: Do you have any plans to open another coffee shop in the area? Frederik: We actually opened another coffee shop on Marco Island located in the Promenade there. It has been a great addition and we look forward to its growth. FINE: Why do you think Naples is a special place to live? Why do you call this home? Frederik: We have been coming to Naples on holiday for a long time. We love the weather here and all of the outdoor activities. We enjoy the casual atmosphere, the good school systems, and the quiet and safe neighborhoods. This is just a great place to raise a family! FINE: If you go out to eat, what are some of your favorite restaurants here in Naples? Frederik: I don’t really have one favorite restaurant; we enjoy eating at all of the restaurants on 5th Avenue, on 3rd Avenue, and other spots in Naples, Estero, and Bonita. There are so many great choices.

TAKE CONTROL‌ of uneven lies UPHILL Playing a shot from an uphill lie is more favorable for most golfers. This shot adds additional loft, and you tend to hit the ball left of your intended target. Set up by taking a longer club, depending on the severity of the slope. Play the ball slightly back with a wider stance for better stability. Address the ball aiming right of the target with your hips and shoulders parallel to the slope of the hill, and swing up the slope.

DOWNHILL Playing a shot from a downhill lie is more challenging. This shot decreases the loft, and you tend to hit the ball right of your intended target. Set up by taking a shorter club, and choke down. Play the ball in the center of your stance, and address the ball aiming left of the target, with your shoulders and hips parallel to the slope of the hill, distribute your weight evenly. Maintain the flex in your knees throughout the shot. The ball flight will be lower and the ball will release.

The IRS recently proposed expanded IRC Section 2704 regulations designed to prevent taxpayers from discounting the value of gifts, estates, and business interests on intra-family gifts. These new regulations will not be effective until after a public hearing plus 30 days. The
