I

awoke today to a crispness in the air — the kind that tells me that summer is departing and autumn is around the corner. The summer has been full of visits to the beach, lounging by the pool, and warm evening BBQs in simple summer dresses and flip-flops. As much as I love the carefree style that the warmer days encourage, there is a cocooning and comforting element brought in preparation for this transition to cooler days. The harvests are maturing and the colour of our Canadian landscape is changing. The trees begin to layer with a wash of warm and rustic tones. Hats, gloves and boots find their way to the front of the closet.

This is the most inspiring seasonal change for me, imprinting these observations on the styles I create for the fall/winter collections. I favour supple vintage wools rich in colour and texture, layered for a more complex ensemble than we have been accustomed to. This season’s

palette is awash in emerald, cranberry, purple, ochre, aubergine — all perfect for layering in reverie to the season’s bounty. In anticipation of the coming season, we captured some vintage-inspired autumn looks against the setting of my own home. Featured are suits, capes and cardi-wrap jackets, punctuated by vintage-inspired wool fedoras, long leather gloves and tall boots. To create your vintage-inspired fall look, layer lux-knit dresses with leggings and throw a light wool cape — pinned or open — over your shoulders. This gives you the option to stay warm or remove

layers depending on those occasional warm fall days when the sun surprises us mid-afternoon. Wrap a brightly coloured textured scarf as a contrast to neutral tweed in camel or charcoal. Have fun with a mix of vintage and modern styles in a variety of textures and autumnal shades. Light a fire and stay warm, in style.

P

latinum Hair Design has been providing the people of Estevan with high quality hair care for almost 10 years. The salon is owned and run by the mother-daughter team, Marcia Hirsch and Kara Blomberg, who bring their family feeling and spirit of community to their work at the salon every day. “It is a real team atmosphere here at the salon,” remarks Kara. “We all help each other out, and have a lot of fun.” Kara is a journeyperson hairstylist with over twenty years of hairstyling experience. She manages the day-to-day activities of the salon, while her mother, Marcia, does the bookkeeping and makes sure everything is running smoothly behind the scenes. Kara and Marcia’s excellent team of stylists really make sure each and every customer leaves the salon looking and feeling their best.

The Platinum Hair Design team is made up of Kara, Marcia, Chelsea, Lindsay, Tanya, Leah and Michelle. Chelsea Hinrichsen took her cosmetology course in Regina at Marvel Beauty School. She is very excited to be starting her new career here in Estevan. Lindsay Jacob studied cosmetology through SIAST at the Southeast Regional College in Weyburn and just recently moved to Estevan, so she is really looking forward to exploring more of the city and meeting everyone around town. Tanya Tosczak is a journeyman hairstylist who has been in the trade for 18 years. Two years ago, she took some time off to pursue her certified trainer and nutritionist course, but has recently returned to rejoin the team as Platinum Hair Design’s assistant manager. She is happy to be back at Platinum and her strong dedication and work ethic resonate through the salon. Leah Beam studied Education at the University of Regina. However, not long after graduation,

Leah decided to pursue cosmetology at the Southeast Regional College, and has been styling hair ever since. She has also been teaching cosmetology at Weyburn Comprehensive School since 2006. Michelle Hala also studied cosmetology through SIAST at the Southeast Regional College, and brings her positive energy to everyone she works with. With new talent as well as experienced hairstylists, the team at Platinum Hair Design boasts both experience and enthusiasm. The team at Platinum Hair Design takes extra care to make sure their clients enjoy the visit, and are pleased with their styling. Consultations are very important at Platinum, and they really make sure they get to know the client and their hair before they begin the styling. Platinum Hair Design does ladies’, men’s and children’s haircuts, as well as hair and makeup for weddings and special events. They do hair colouring, perms and “hot head” extensions, and sell a wide variety of hair care products, from shampoo and conditioner to curling and straightening irons. They will colour customize shampoos and conditioners so that their customers’ hair colour can remain vibrant long after their initial colouring. Finally, they also have a standup tanning bed for those who want to get a little more sun in the winter, as well as facial waxing. The salon is always changing and has expanded considerably since it opened in 2004, but it retains its welcoming, friendly atmosphere. Walk-in visits are more than welcome. Building the Foundation For YouthFul Skin By Trina annand

M

any people these days are on a personal quest for the fountain of youth, trying the latest lotion, potions and trends. During his twilight years Mark Twain himself shared a unique view on aging, “Life would be infinitely happier if we could only be born at the age of 80 and gradually approach 18.” Baring a discovery of mythological proportions, the only way to appear more youthful is to take better care of ourselves. The cosmetic industry is full of products that trumpet age-defying, wrinkle-reducing and skin tone-evening breakthroughs. Healthy skin doesn’t take a lot of work; it is the simplest tools that make the biggest difference. For clinical skin care therapist Tricia Dauphinee-Bishop, true skin care miracles are not about covering up aging, but about rejuvenating the skin you have. “So many people think that once the damage is done you have to live with it. I always remind my clients that they are 300 billion cells different than they were yesterday. The body is constantly renewing itself; it’s up to us to nurture and protect those new cells,” notes Dauphinee-Bishop.


Cell Restoration The foundation for a healthy youthful appearance is skin cells and they can only truly be helped with clinical strength products — not over the counter quick fixes. Skin damage is caused by a variety of factors; this damage causes free radicals that can be battled through the use of Vitamin C. The cell-restoring properties of the vitamin were discovered during cancer research; though taking Vitamin C orally had little effect on skin cells, it did help fight certain cancers. What makes Vitamin C effective is finding products that are stabilized, and this means looking for products with United States Pharmaceutical (USP) on the bottle. As a volatile vitamin, it needs to be properly treated so its molecules are small enough to penetrate skin. You don’t get the same effects from simply breaking open a Vitamin C capsule and rubbing it into skin.

Vitamin A Another vitamin powerhouse discovered by the scientific world is Vitamin A. As a skin cell normalizer, it helps create healthy skin cells; it is slightly acidic and can make skin sun-sensitive, which is where sunscreen comes in. Dauphinee-Bishop is quick to point out that like Vitamin C, not all Vitamin A treatments are created equal. “Pharmaceutical-grade products have to prove to Health Canada that their products actually do work. Over-the-counter products can make all the claims they want. Vitamin C fights free radicals, helps build collagen and lighten pigmentation, but not necessarily in their over-the-counter product,” remarks Dauphinee-Bishop.

Mineral Makeup There is no single magic ingredient that makes skin reverse the tides of time; it is a combination of habit and product. Though cosmetics such as foundations and concealers claim to have skinsoothing properties and moisturizers, they are often to blame for irritation and breakouts that can lead to skin damage. Experts recommend a high quality mineral makeup. As an extension of your skin care regime, mineral makeups are actually good for skin; they don’t harbour bacteria and don’t settle into pores like other makeup products. At Landings Surgical Centre, DauphineeBishop recommends Jane Iredale and Colourscience mineral makeup to her clients, “Mineral makeup actually protects skin.

They are amazing for people with rosacea or acne because it sits on skin like shingles, it doesn’t stick together and cause pore congestion like other products.” When you are done putting on your makeup, it is still important to reapply sunscreen; the expert recommends Sunforgettable from Colourscience. The powder product comes in SPF 30 and 50 and can be applied over makeup.

Cleansers How you take products off at night is just as important as what you put on your face in the morning. Experts often say not to put anything harsher than a cotton ball on your face. With layers of makeup, moisturizer, sunscreen and environmental debris from the day, it is hard to imagine a lowly cotton ball doing the work. Dauphinee-Bishop only uses the soft side of a baby washcloth on her skin; they dry quickly, are affordable enough that you can use a clean one each time you wash and are designed for tender skin. The most important part of cleansing is time, if you took 30 minutes to put on that face, it is not going to come off with a simple splash of water. Cleansers need to be actively moved around the face for at least two minutes to fully do the job. When deciding on a skin care regime, it is often a professional consultation the makes the most difference. They understand the science behind why skin reacts the way it does. “People spend a fortune on skincare and they waste a lot of money on skincare. You really just need someone who can tell you which products will work best for your skin so you don’t waste time and money. You don’t need to spend a lot of money on a moisturizer; it’s better to invest in the pharmaceutical products,” remarks Dauphinee-Bishop. The expert is quick to point out the best thing you can do for your skin is religiously use sunscreen every day, even in winter. “Laughter comes so easily now” When I went on a plane for the first time with friends, I worried whether the seatbelt was going to fit. On the trip down, it was snug but not uncomfortable. On the way back, it was so tight that my friend asked me if I needed help doing it up. I took a deep breath, heard a click and never moved the rest of the painful trip, with a smile on my face I said, “Nope, I’m fine.” I wasn’t fine. When I first heard about WLF, I thought it sounded drastic but then I heard the stories from people doing it through this company. I wanted to do the surgery but put the thought aside. I kept looking at the WLF website and there I found a statistic that changed my mind. On average, people who are morbidly obese for many years (that was me) live to be 57. I turned 40 this year and my two boys are 17 and 15. I was not going to have them bury me in their 30s. I was never worried about the surgery or the hospital at all. You feel like a little family with a larger family waiting for you back home. The support is amazing through meetings, texts and Facebook. The facilitators are there to answer any questions and give you that boost you need. It’s an amazing sense of support and community. Laughter comes so easily now. My youngest son is only 12 pounds heavier than the total weight I’ve lost. We were talking the other day, and all of a sudden my 15-year-old son scoops me up and carries me around the kitchen. It was a bittersweet moment. I couldn’t get over the fact that my baby could carry me. I feel not just physically light but “emotionally light” because all the troubles with being overweight are gone. I am often in tears knowing that I took a chance on myself. Happier and healthier When my husband and I were first dating we went to our local fair for a romantic ride on the ferris wheel. I fit in the seat, barely. The operator tried several times, but finally apologized. We were too heavy for the ride. You can’t imagine the embarrassment. I thought I would never consider weight loss surgery. “I can play with my kids” After I went to a school function for my oldest son, the boys in his grade started saying mean things about how fat I was. My son got into a fight got suspended from school. I had been waiting for approval to have the surgery in Regina. I had lost a little weight before I heard, and then was told at 265 pounds, I was “not fat enough” to qualify. I was on the waiting list in Winnipeg, and called once a month to check. I was always told no and to call back. I did, for two and a half years. Finally one day they told me that they couldn’t understand why I kept calling since they never take out-of-province clients. I was so discouraged. One night, I was sitting with my daughter on her bed and I caught sight of myself in the mirror. The absolute embarrassment and shame I felt was devastating. I never realized how big I was until that moment. When I started to cry, my 12-year-old daughter Maddy told me I was beautiful even though I was overweight. That is when I decided I needed to do something. When I heard about WLF, I hoped it wasn’t too good to be true. All I can say about WLF is “Wow!” The support from everyone has been phenomenal. Not once did I get the feeling they were too busy to help or listen. Not only is Bonnie my facilitator, she is my friend. I am thankful for her every single day. My surgery was awesome. I was expecting it to be painful afterwards, but other than a little soreness, I had no pain. Now I can go for walks with my kids. I can play volleyball with my daughter, and paintball with my boys. People don’t look at me with disgust. I love walking into a store and finding clothes that fit. I have more confidence, and am so happy to see the reaction that people have when they see me now. I love my life.

“I can pay my journey forward!” Although I was overweight, I was lucky to never have any healthrelated issues. But it constantly was embarrassing to be the overweight wife, married to a healthy fit, good-looking husband! I hated to meet new people. I figured everyone would look at us and think, “Why is he married to this fat woman?” When my son was about to start kindergarten, I dreaded being the “fat mom” at school. I never wanted either of them to be ashamed of me. When I heard about WLF, I thought, “OMG, it’s in Mexico! That can’t be safe!” After someone I know an amazing transformation with WLF, I started doing my research. Then I knew WLF was going to be my best chance at the life I always wanted. WLF is 100 per cent hands down the best team out there. My facilitator Julie has been incredible throughout my whole journey. Now eight months out, if I need anything at all she’s just a phone call away. When people ask me how I am doing now, all I can say is amazing. My whole family is all starting to eat better and make healthier choices. I love waking up in the morning and not feeling tired, depressed and angry about life. I can exercise. In fact, I’ve started running and soon I’m doing a five kilometre race. Something silly that I can do now is sit with my knees up by my chest. I could never do that before! I love life now and I can pay my journey forward! I have been blessed to become an independent WLF facilitator. By sharing my story with others, I can help someone else achieve this level of happiness. WLF saved me.

Physician, heal thyself – with help from WLF I’m a family physician. Like many of my patients, I have struggled with weight for a long time, despite trying many diets and exercise to lose weight. I had hypertension, daily heartburn and shortness of breath with any exertion. As a physician, I knew well the health risks of obesity. Melanie and Dr. Pompa have changed many lives. Now I have had over 100 of my own patients who had surgery through WLF. Having gone through the weight loss surgery myself makes a huge difference in how I counsel patients struggling with obesity. I understand what hard work it is to go through this process, but patients can also see the difference it made in me. I can more easily discuss with patients my experience with Dr. Pompa and her staff at the hospital. I am also able to help patients through the post op stages. It brings me great joy to see the trust that patients have in me when they realize that I was a patient myself. It feels good to have patients and friends compliment me on how well I look now. I enjoy having more energy and being able to exercise without limitation. Going up and down stairs is easy! It is wonderful to be off my blood pressure medication, to have no heartburn (which I had daily before!) and to have a normal cholesterol level again. Surgery seems like a drastic procedure to lose weight, but doing it with the support of the team at WLF and Dr. Pompa, this has been a success when nothing else worked before. I am forever grateful for this opportunity to improve my life and health, and to continue to support and counsel my patients who struggle with obesity.

ith rising concerns about health, it seems everyone is looking for a better way to satisfy their sweet cravings without using sugar. More and more people are turning to so-called “natural” sweeteners as a substitute for regular sugar. Are these natural sweeteners healthier than regular sugar? Let’s examine a few of the more common “natural” sugar substitutes in comparison to sugar.

Granulated Sugar: Refined white sugar can come from sugar cane or sugar beets. By the time it has been refined it is pure sucrose. The refining process is quite extensive. Calories per 100 grams: 387 Honey: Arguably the least processed of all the natural sweeteners, honey contains vitamins and minerals such as B2, B6, iron and manganese. It is anti-fungal, anti-bacterial and contains antioxidants. Honey’s glycemic index is higher than agave with similar calorie count (about 60 calories per tablespoon). Strict vegans usually avoid honey. Calories per 100 grams: 304

Agave Nectar (and Syrup): Agave syrup is low on the glycemic index (meaning your body absorbs it more slowly and your blood sugar typically doesn’t spike) but there is debate about its health benefits due to the high fructose content. While from the same plant and a similar-looking product, agave nectar and agave syrup are different. Agave nectar is less refined than agave syrup and purported to be healthier. Both are vegan and in many cases raw. Calories per 100 grams: 310 Stevia: Who knew a little grean leaf could provide something so sweet — and be completely calorie-free? Just make sure you’re buying pure stevia — not the variety mixed with sugar alcohols —for the most natural sweetness and best flavor. Expect to use an eighth of the amount of stevia where recipes call for sugar, which can wreak havoc on your baked goods. Calories: 0 Maple Syrup: Another hardly-processed natural sweetener which is high in antioxidants, zinc and manganese, maple syrup can usually substitute for honey or agave in baking — and on pancakes and waffles, of course. Calories per 100 grams: 260

Coconut Sugar: Another natural sweetener that is low on the glycemic index but is also one of the least refined sugars, coconut sugar is made from the sap of the coconut palm bud. It is rich in vitamin B8 and potassium. Coconut sugar has a

subtle caramel flavour and bakes up like a dream in place of regular sugar cup-for-cup. Calories per 100grams: 375 What natural sweetener you select largely depends on your own health and dietary needs — as well as your budget. Typically natural sweeteners (like anything that is touted as healthy and natural these days) the cost is going to be higher than regular ol’ granulated sugar. If you’re a strict vegan, you’ll probably avoid honey but prefer agave, maple syrup or coconut sugar. If you’re diabetic or have blood sugar issues then choosing a low-glycemic natural sweetener like agave or stevia is probably a wise choice. If minimal processing is your preference, then stick with honey or maple syrup as they are the least processed of all the natural sweeteners. If you’re an avid baker, stevia may be difficult to work with since it packs a sweet punch with very little, and coconut sugar might be a better choice. Regardless of what type of sweetener you prefer to use to suit your own health and dietary needs, it’s still a sweetener and should be used in moderation. Indulge in a moist pineapple cupcake topped with toasted coconut frosting. You’ll be surprised it’s both gluten-free and vegan. margarine. Add applesauce and beat until well combined and fluffy.

Ingredients Cupcakes:

3. In a small bowl combine sour non-dairy milk with baking soda. Let sit at least five minutes.

4. In a separate bowl sift together brown rice flour, tapioca starch, xanthan gum and baking powder.

5. Alternate adding non-dairy milk mixture and dry mixture to the creamed sugar mixture, making sure each addition is fully incorporated before adding the next.

6. Add salt and vanilla extract.

7. Fold in the reserved pineapple juice. Stir until completely combined.

8. Fill cupcake liners half way and place about four or five pineapple tidbits on the top.

hristmas is a season we all look forward to. Along with celebrating with friends and family, our pets are often in the middle of the activity as well. We all know little kids love presents, and so do pets! Many people gift wrap presents for their pets, and sometimes those beloved pets tear into presents that may or may not be theirs. These tips can help your pet

there’s a reason that’s in all caps. Cats (and some dogs) climb trees, they think ornaments are theirs to play with, and if there’s tinsel, it’s theirs to eat. I’m sure many of us with cats have had to pick the tree up, sweep up shattered ornaments and deal with tangled lights. If your cat (or dog) climbs the tree, find a way to secure or stabilize the tree so it’s not likely to fall over. Cats are notorious for eating tinsel. Tinsel can lead to intestinal problems that left untreated, may result in surgery or death. Ornaments that are unbreakable, and don’t have parts that pets can chew off, are available and recommended. Water for the tree often has preservative added; it is best to set it up so pets cannot drink from the tree stand. Christmas plants are often given as gifts or used as decorations. Poinsettias, mistletoe, holly and lilies are part of the tradition. Place them in the home where the pets do not have access. Pets will nibble given a chance, and if they eat enough, toxicities can ensue. Depending on the plant, signs may range from general digestive upset to fatalities from organ damage. Food is a huge part of the festivities. When there’s turkey roasting, ham, gravy and all the other goodies, it’s tempting to share with the pets. Bones are an obvious hazard, even for the

smaller dogs. Eating too much turkey or other foods that aren’t part of a pet’s regular diet can lead to digestive upsets. Proper disposal is necessary. I had the lovely experience years ago of having one of my dogs break into a container of discarded turkey fat. I cannot emphasize enough how unpleasant the result was (he lived). Along with discarded bones and grease from cooking, some pets also get into the good stuff, such as chocolate. It doesn’t take a lot of chocolate to cause serious, life-threatening toxicity. Make sure kids remember to put their goodies out of reach of the pet. Children’s toys can be hazard, as can certain pet toys. Dogs can chew off pieces of toys (doll heads are a favourite), and cats also love to nibble off small parts such as jingle bells and strings; an ingested piece often results in the need for surgery. For those pets that have to be left behind at a boarding facility during the holiday season, proper vaccinations are the best gift you can give them. Canine cough is a common virus that can put your dog at risk for and isn’t usually part of most pets’ regular vaccine program. Ensure your pet is properly vaccinated by getting all your vaccinations at least two weeks prior to your boarding visit. I

t all began in 2010 when entrepreneur and veteran restaurateur, Delbert Dunn, drove through Estevan. “I thought it would be a great town for a brew pub,” he recalls. The vision was to create a gathering place for locals. Dunn could see this happening by offering the ambience of a neighbourhood pub that serves great “pub grub.” The Black Grasshopper opened its doors on August 16, 2010. Dunn admits that

there have been growing pains along the way, but this was no surprise to the experienced businessman. Over the course of his career, Dunn had come to understand that, once a place is opened, there will be staffing hiccups, and it was no different with The Black Grasshopper. Dunn remained determined and confident, “I create employment and I knew that the best staff would eventually come,” he states.

Dunn is very thankful to the people of Estevan for their patronage and their patience through the first years of growth and development. He points out that during the transition of staff, people were willing to give The Black Grasshopper a second and a third chance and, yes, even a fourth chance. “They came back and came back,” he comments, “and it really means a lot to me and the rest of the staff at The Black Grasshopper. We are really grateful.”


Today, with an experienced and skilled staff of 35 people, The Black Grasshopper is pleased to offer friendly service and delicious food to its patrons. Dunn says owner and general manager Chris Toth does an excellent job of overseeing the day-to-day operations of the pub. The solid kitchen staff consists of Jamie Trafford, kitchen manager, and a full line of cooks and assistants, including line cooks and prep cooks. The servers and bartenders who work the front offer quick and courteous service. t’s that time of year again! The kids are back in school, the cabin is closed and it’s dark too soon … but don’t give up just yet! While it is probably still too early to resort to the enveloping embrace of an Aussie shiraz or mouth-staining red from South America, there are plenty of middleweight wines to offer comfort as the nights draw in. In autumn, red wines made from grapes such as Grenache and Pinot Noir

Carrot & Ginger Soup Ingredients 3 tbsp. olive oil 1/2 yellow onion, diced 1/4 cup fresh ginger, minced 4 cups garden carrots, chopped 4 cups vegetable broth 1 orange, zested nutmeg salt and pepper to taste parsley

Preparation 1. Sauté onions and ginger in olive oil until soft. 2. Add carrots and vegetable broth. Simmer for 40 min. or until carrots are soft. 3. Add the orange zest and stir well. 4. Working in small batches and using a food processor or blender, process soup until smooth. 5. Return to pot or serving bowl and add nutmeg, salt, pepper and parsley.

It makes a great partner for those last few BBQs on chilly September

evenings; baba ganoush or even garlic ribs pairs well with the Côtes du Rhône Réserve. But autumn isn’t just about reds. A weighty, well-oaked white such as the 2011 Wente Morning Fog Chardonnay is a good example. It is luscious and rich, ideal for everything from grilled fish to roast chicken. I recommend trying this fullbodied wine with one of my favourites: carrot and ginger soup. If it’s the agricultural flavour of autumn you’re after, you don’t need to look very far for the perfect food-friendly glassful. Anyone who hasn’t recently experienced the refreshing, earthy delights of wellmade cider has a surprise in store. Living Sky Winery is based in Purdue, Saskatchewan and its rhubarb and cherry ciders not only pack a punch but have a rich fruitiness and balanced acidity — as good a match for pork as you’ll ever find.


Pork & Cider Casserole Ingredients

Preparation

2 tbsp. canola oil 3 lb. pork shoulder, cubed 1/2 pack of thick bacon, roughly chopped 1 onion, chopped 2 celery sticks, roughly chopped 12 shallots, peeled 1 bottle Bunny Hugger Cider (Living Sky Cherry Cider) 350 ml chicken stock 2 tbsp. corn flour 2 tbsp. water 3 tbsp. wholegrain mustard 3 tbsp. tarragon leaves, chopped 4 cups washed small button mushrooms 12 small potatoes crème fraîche, as much as you like

1. Pre-heat the oven to 170 C. 2. Heat a large flameproof casserole dish over a medium heat on the stove. Add the oil and heat to foaming. 3. Add the cubed pork and fry for 10 to 15 min. until golden brown, stirring from time to time. Take care not to burn. 4. Heat a frying pan until hot and dry-fry the bacon until crisp. Place to one side. 5. Fry the onion, celery and shallots in the same frying pan until slightly soft. Place all the vegetables and bacon into the casserole dish with the pork. 6. Add the cider and stock, bring to a gentle simmer on the stovetop. Add button mushrooms and potatoes, then cover with a tight-fitting lid and place in the preheated oven. Cook for 2 hours, or until the pork is tender. NOTE: If the liquid starts to dry out, add more! 7. Mix corn flour with water to form a thick paste. Add the paste, mustard, tarragon and crème fraîche to the casserole dish and stir thoroughly. Gently cook on the stove top until the sauce has thickened slightly.

ow long does it take to have a pizza delivered? 45 minutes? Half an hour? At Domino’s Pizza, they pride themselves on being a little quicker on the uptake. “Our average delivery time is at around 20 minutes,” says owner Tim Stephens. “There’s been quite a few times when we’ve delivered pizza in under 15 minutes.”

“When I was sixteen years old, I started delivering pizza for Domino’s,” Stephens recounts. “After high school, I started managing and supervising.” Stephens took the leap towards ownership in 2009, and it’s worked out personally and professionally. “I like being my own boss,” he laughs. Delivery speed is, of course, only one factor in satisfying customers; so Domino’s also focuses on first-rate ingredients. “Nothing’s precooked. It’s

all fresh. We make our dough every day,” Stephens says. “I like to bring people in the back and show them how we make our dough... people are interested to see how much oil we put into a batch of dough. It’s really not very much.” That lighter crust has proved popular. “I get a lot of compliments that the pizza isn’t greasy, and that’s a nice thing to hear.” (Customers who still prefer a rich crust will enjoy Domino’s recently introduced pan-style pizzas). Stephens has worked for Domino’s since his teens, but “I definitely still eat pizza two or three times a week,” he laughs. What’s his order of choice? “I’m a pretty simple guy… I’ll make myself a pepperoni pizza. Sometimes I’ll put onions on it,” he says. “Lately, I’ve been doing the gluten-free crust.” Gluten-free crusts are still fairly new, having been available for less than a year, and “I was pleasantly surprised how good it was…

in the first few weeks, we were selling out like crazy.” A long-term Saskatchewan resident (“born in Saskatoon, raised in Regina”), Stephens understands Estevan’s unique demographic. Recognizing the number of Domino’s customers ordering from workplaces, he has instituted a matchless “business special”. “Any pizza, any size, any toppings for $12.99 – any business around Estevan,” he says. “The price is, really, unbeatable. I’ve been told by many people that nobody even comes close.” Likewise knowing that families make up much of Domino’s clientele, Stephens keeps the pizzeria’s atmosphere neighbourly. “Lots of times I’ll ask, if the parents are waiting for the pizza, if the kids want to make one for themselves,” he says. “I like to give children a chance to make their own pizza.”


All Domino’s customers – businesses, families, and individuals – benefit from Stephens’ efforts to achieve and maintain competitive prices. “In December, I lowered our average pricing by about 18 per cent,” he notes. “I think people appreciate that I’m willing to sell pizza at a reasonable price.” And when charities and community groups knock on Domino’s door, there’s sometimes no price at all. “Whenever I can help, I try,” Stephens says. “I’ve given away up to a few hundred pizzas for free.” It’s not just Domino’s menu that places the pizzeria “a cut above” – it’s also their team. Despite Estevan’s overflowing job market, Stephens says, “I don’t have a hard time holding onto staff.” Perhaps that’s because his own work ethic is nonpareil. “I’m always out on the floor cleaning, or making pizzas… [the staff] seem to work hard for me, and I think it’s because I work hard for them,” he says. “I don’t ever ask anybody to do anything I wouldn’t do.” Stephens continues to incorporate workplace improvements. “I’m looking at offering benefits to my fulltime staff now,” he says. “A lot of my people have families… I know they’ll appreciate that.” A portion of Tim Stephens’ free time is dedicated to serving as counselor on Midale’s town council, to which the young entrepreneur was elected in November 2012. Otherwise, his off hours are mostly spent with his family, including children Seth (8) and Kaydence (4 – “she’s starting kindergarten,” Stephens says proudly), and wife Ashley, whom he wedded in October. “We actually have a third on the way,” Stephens says. Seth and Kaydence are already big fans of their dad’s profession, he admits. “They think it’s the coolest job ever.”

Three former Roughriders offer their unique perspective on the 2013 team, which set a torrid pace to start the season and have all the ingredients of a championship team. Each represents one of only three championship Riders teams: Al Ford (1966), Bob Poley (1989) and Chris Szarka (2007). They share their thoughts on the current season, and compare it to their own championship experience.

F

ormer Roughriders player Alan Ford knows something about the alchemy that must come together to create a championship CFL team. Between 1965 and 1976, he was on five squads that made it to the Grey Cup game, but the stars aligned for him only once. Along with legends like Ron Lancaster and George Reed, he hoisted the silver mug in 1966, securing Saskatchewan’s first title, but never again. Ford sees similarities between his 1966 team and the 2013 incarnation of the Roughriders. “What I’ve noticed is the way head coach Corey Chamblin talks about his team and the togetherness of the team,” says Ford. “Back in 1966, that was the same theory that Eagle Keys used too — that we needed to do things together outside of practice. I would say 75 per cent of the team had their permanent home in

Saskatchewan back then, and I think that togetherness during the offseason helps you build your team.” Chamblin’s “team-first” approach seems to be paying dividends, as the Riders rocketed out to the best start in club history, and star running back Kory Sheets followed his posse of bodyguards on the offensive line to a torrid start that drew comparisons to hall-of-famer Mike Pringle. Bob Poley and Chris Szarka also brought glory to Rider Nation, in 1989 and 2007 respectively, and agree this year seems special, thanks to the blend of personalities and team cohesiveness. “I think we also had a great mix on our team,” says Poley. “There were no huge stars. Kent Austin had only been in the league a few years, and the same with Tom Burgess. We all believed in each other and that took us to our goal.”

Szarka’s experience in 2007 was similar: “We were such a tight-knit group. We were together in every aspect and we always celebrated everybody’s success because it meant we were all going to be successful. This year’s team also seems to have a lot of confidence in each other.” Having something to prove may be a part of the winning formula. In 1966, Ron Lancaster was a talented, but unproven, quarterback with a chip on his shoulder after being sent west by Ottawa. He was struggling to earn credibility with a team that had never won. “I think Ronnie’s whole career was about proving something, because he was undersized for a quarterback, so nobody gave him a chance that he could be a regular starting quarterback,” says Ford. Darian Durant is looking to erase the memory of Grey Cup losses in 2009 and 2010, and secure his place in

Roughriders history with a win in the big game. Likewise, Sheets attacked the 2013 season stinging from the lack of appropriate respect he received after his rookie season, when he finished only 180 yards behind league leader Jon Cornish, but largely escaped the spotlight due to the Riders’ 8-10 record. Szarka says that burning desire to prove something fuelled him and guys like Andy Fantuz, Scott Schultz and Eddie Davis on the 2007 team. “They were all great personalities around the locker room. All of our veterans were. A lot of us had been through a lot of struggling years in Saskatchewan,” says Szarka. That sense of pride carried over to special teams, which the former Canadian fullback says was one of the factors that led to success. He thinks the same thing may be in evidence on the 2013 team. “On our squad, it was the first time in a long time that guys took pride in being on special teams. Even the starters that played on special teams took pride in what they did. What I see so far from the Riders nowadays is that same kind of

intensity. Special teams is all about effort more than skill, and I see those guys making those same kinds of efforts.” With the likes of Levi Steinhauer, Paul Woldu and Graig Newman sacrificing their bodies to limit returns, the Riders can boast some of the best special teams in the league. Poley also knows by the weighty ring on his fingers how special teams can turn the tide. “These guys are doing a phenomenal job. In 1989, we had great cover guys like Dan Rashovich and Glen Suitor, and that’s what you need to win. Of course, we had a great kicker in Dave Ridgway and a fine punter in Terry Baker, and that helps a team so much. Milo is much the same as Ridgway — the kid doesn’t miss too many.” One huge intangible for the current edition of the Riders is the pressure they face as the hosts of the Grey Cup game. Ford, Poley and Szarka agree the screws will be tightening on the team as playoffs loom, but once they’ve protected their home locker room from the threat of interlopers, the Grey Cup game will take care of itself.

“I always felt the pressure was getting to the Grey Cup,” says Ford. “Once you finish with the Western Final, when you get to the Grey Cup there wasn’t as much pressure as there was getting there.” How the Riders handle adversity, be it through injuries or tough losses, will likely play the biggest role in their success or failure. “We had the same type of squad,” says Szarka. “In 2007, we did a lot of coming from behind in the fourth quarter. We never really felt like were out of it. That year we did some good things, but we had some stumbling moments too, and I think that made us stronger and mentally tougher. I see that same kind of presence from this team.”

Obviously Neil Donnelly has been doing something right. The executive director of Grey Cup 101 in Regina is in the “catbird seat” with the Saskatchewan Roughriders exploding for their best-ever record in the first half of a season, and ramping up the Grey Cup heat in a football-crazed province always on a rolling boil. Sold out since July and hotels booked up, Grey Cup 101 promises to inject significant dollars and spirit into the local economy.

verything planned for this year’s Grey Cup Festival, which runs Nov. 20 to 24 in Regina, is predicated on lessons learned in 1995 and 2003, when the city last hosted the CFL championship. Donnelly was a volunteer at both. “Because of the experience at that 2003 game, we’ve done some things differently. Our seating structure is not as high as it was, and there’s wrapping going around the outside of the temporary stands to cut down on the wind that can penetrate from below. So, we are learning from some of the experiences we had to make the experience that much better for people this time around.” While 52,000 fans watched the 1995 game live, and almost 51,000 fans in 2003, seating for 2013 was capped at 45,000 to make sure the fan experience will be better than ever. Organizers also

made sure the seating was fully in place in time for the Labour Day game to allow them to work out bugs and ensure high service levels. Donnelly said organizers took some risks this year in the Grey Cup 101 festival in doing a few different things, as a result of knowing how it had run in the past. Evraz Place is hosting nightly concerts at Brandt Centre, as well as all the team parties. One of the biggest changes, from a festival perspective, will be the single pass to gain access to all the individual team hospitality rooms. Called the Crescent Point Energy Zone, all the traditional team parties will be under one roof at Cooperator’s Centre at Evraz Place. So if the line is too long at Riderville, fans can easily swing by the Lion’s Den venue for example, or take in Touchdown Manitoba or Tiger Town. “When our committee went out to Toronto this past year, line-ups were mentioned by fans a number of times,” says Donnelly. “There were long lines

in 2003 to get into Riderville, and, quite frankly, the other parties weren’t as successful. We wanted something that would allow people to go into other teams’ parties, rather than standing in line at Riderville without having to pay additional pricing.”

Donnelly says that given the Team Party Pass sales so far, it’s sure to be a success.

Donnelly says these initiatives are just another way to engage the province, and he’s hoping they will also spur school rallies and local Roughrider spirit days. “Once these things start to happen, they take on a life of their own and then we’ll see things popping up across the province for sure.”

Downtown Regina will be the other hub of Grey Cup 101 activity, with the Telus Street Festival, the Nissan Family Zone and the Mosaic Underground Tent at City Square plaza. On top of Canadian music celebrities like Serena Ryder and the Sheepdogs performing at the game, Grey Cup 101 will be bursting with entertainment. The theme — Celebration in Rider Nation 2013 — is a nod to the provincewide support the team enjoys. Organizers have made a concerted effort to spread the festivities around. The Richardson Pioneer Rider Nation Community Celebration attracted entries from 29 communities vying

The organizing committee is also sponsoring a competition to dress up neighbourhoods, homes and businesses for Grey Cup 101. “This will be a great way for people to show their pride and their spirit for the event.”

In January, Roughriders star receiver, Chris Getzlaf, introduced his loveable pit bull Oscar to Penny, a rescued mixed-breed dog he adopted while on a trip to Mexico. Then in July, Getzlaf took his wedding vows with longtime partner, Tia Zelinski.

The four of them are now happily living life together in Regina, where Chris and Tia grew up. Oscar and Penny are now best friends and keeping the newlyweds busy. Getzlaf had been in Bonfil, Mexico as part of a group of CFL players doing volunteer work at a spay-and-neuter clinic. He is a friend of Chris Cvetkovic, long-snapper for the Blue Bombers, and founder of Cvet’s Pets, a non-profit organization that raises funds for no-kill shelters in Winnipeg. The group of football players was brought together by Cats and Dogs International, which ran the clinic, for five days of hands-on volunteer work. Bonfil is near Cancun, home to one million people and two million dogs, many of them strays. The sterilization blitz saw 1,300 dogs treated by veterinarians donating their time, along with six CFL layers, including Getzlaf, Cvetkovic and Buck Pierce. “We did it all,” says Getzlaf. “I helped prep the dogs for surgery, give shots and put tubes down their throats, shave the area for surgery, lift dogs to and from the operating table — the whole works.” Some of what he saw wasn’t easy to handle: abused, injured or malnourished animals were common at the clinic. The big-hearted football players brought seven shelter dogs home to four different cities in Canada. “My wife and I had a few discussions about wanting another dog prior to that, and I decided to pull the trigger on my second-last day,” says Getzlaf. “She had all the shots she

needed and the appropriate paperwork, and Air Transat made it very easy for us.” Voila! Oscar now has a sister. “She’s extremely energetic, but they get along great. They play all the time. Oscar can’t really keep up with her, because he’s quite a bit older. She’s definitely testing him on a regular basis.” Getzlaf says he has always loved dogs, but didn’t have one for a friend when he was younger because his family was always so busy with sports and activities. “Now I’ve had Oscar for seven years and I’m definitely a dog lover,” he says. “Tia takes them out for a long walk in the morning, and we either take them out again later, or hang out with them and play in the back yard. But Tia definitely mans the fort when I go off to practice. She takes them out and makes sure they’re loving life.” As a CFL player who must juggle training, practices and games — 10 of them on the road — Getzlaf is still very busy. And he works as a financial advisor on top of it all. But getting home to his pets is therapy in itself. “It’s a lot of work when they’re puppies. But it’s nice to be able to pet them, especially when they’re tired after a walk. What is Geothermal heatinG and air ConditioninG? By Shell BuSey

ompared with conventional heating systems, geothermal heating systems substantially reduce your heating costs and also save on cooling and hot water heating costs. Compared with an electric heat pump system, geothermal heat pumps cut space heating costs by up to twothirds for a typical home. The reduced energy cost to operate geothermal systems can help offset the additional cost to install it. In terms of economics, the ideal time to install a geothermal heating system is when building a new home or replacing an aging heating system. When building a new home, a general rule of thumb for the feasibility of a geothermal heating system is that it may be suitable for

any home 3,000 square feet or larger. In a retrofit situation, it is preferable to have an attic that can be used for the required ducting. The heating and cooling system will be much more efficient if you’re able to move the air through an insulated attic space in a rancher or bungalow. You probably have noticed that the back of your refrigerator is warm. A geothermal heat pump works much like a refrigerator. A refrigerator extracts heat from inside the unit and passes it into the kitchen through coils on the back of the refrigerator, keeping the refrigerator cool on the inside. A geothermal heating system works in a similar manner, however it extracts heat from the earth through a system of underground pipes

containing a heat transfer fluid that brings heat from the ground into the system to heat or cool the home. A geothermal ground-source heat pump moves or “pumps� heat out of the earth using a system of vertical or horizontal high-density polyethylene pipes. This is different than a traditional heating system that creates heat by burning a fossil fuel (such as natural gas) or circulating current through an electric element (such as baseboard heaters). How you decide to bury your pipes depends on how much property you have. If you live on acreage, you may want to consider laying the pipes horizontally. If you are limited on available space, you may have to have the pipes installed vertically.


After circulating through the vertical or horizontal piping in the ground, the heat transfer fluid is piped into your home, where it is connected to the heat exchanger in your system to be converted into heat or cooling for the home. In winter, the mixture in the pipes absorbs heat from the earth and distributes it to your home. In summer, the system works in reverse, with the mixture absorbing heat from your home and sending it back to the earth. The piping is virtually invisible and can be installed under a lawn, landscaped area, driveway or the house itself. ettling down for a long winter’s nap may be the way of many as our days shorten and temperatures plummet. Our gardens remain as digital memories now under snow or, at the very least, not looking their best. At this time of the year, I rely on my houseplants to satisfy that “green thumb itch.” Naturally there are many excursions to the local garden centres, all of which are four-season establishments bulging with not only a great selection of living material, but abounding with household and lifestyle accoutrements. A neverending supply of floral and greenery can also be found at the “box stores”; unfortunately the care and maintenance typically is not the best. What I suggest is spending a little bit more and get good quality and well-maintained houseplants. AFRICAN MASK ALOCASIA AMAZONICA

Given that our homes supply less than desirable growing conditions during the winter months — drier air and low light — be diligent in what you select. Humidity is the biggest problem by far. I know many of you say that you have humidification with your heating system, and that’s grand; however, in order to supply humidity sufficient for most tropical plants, the wallpaper would be peeling off the walls. Rather than stress your system, it’s much wiser to group your plants together so that they may enjoy collective humidity. Another idea is to prepare a “pebble tray” which is simply a saucer filled with stones that will hold water. Place your houseplants on the stones so that they are not in the water yet will benefit from evaporation. Maintain

water in your tray at all times and you will be pleasantly surprised how your plants react. Misting the foliage is often suggested as a method of increasing humidity and it may work to a degree. I for one just don’t find the time to be misting as often as is required to benefit the plants. A plant that tolerates lower light and typical house conditions that you might consider is African mask, Alocasia amazonica. This tropical beauty has outstanding foliage with very distinct markings. African mask belongs to a family that includes some poisonous relatives and this one is no exception if ingested. If your pets are foliage “munchers,” this is not a great plant for you. Flowers are rather non-descript and sporadic, but the foliage makes up for this by far. Gloxinia, Sinnigia speciosa, is a delightful, bulbous plant belonging to the African violet family. These fuzzy-leafed plants will bloom profusely during the later winter months in hues from deep crimson to mauve and through to white. Once you have a gloxinia, you will or should always have it because they are bulbs that re-grow annually indoors. A great aunt of mine used to water her plants with cold tea, and I have yet to see gloxinias with as spectacular flowers as hers had. Consider these and other houseplants to help you through the darker seasons as you leaf through the seed catalogues; they will help to encourage you along. “With all the competition right now, you need friendly people,” says Margaret Sereggela, who owns the three Subway locations mentioned above. “We focus on our staff being courteous, friendly and polite — from the moment you walk in and get a friendly greeting, to the moment you leave with a ‘thank you.’ ” Sereggela purchased Subway’s Weyburn location a little over a decade ago, adding

and renovating the 4th Street location in 2008. The Kensington location, open since March, is her newest enterprise. “All three stores are doing really good,” says Sereggela — so good, she hints, that there might be more locations in the future. Sereggela understands that flawless customer service is vital to a successful eatery. She herself is a long-term

hospitality professional; years serving Estevan locals at the Tower Café taught her the secrets of earning customers’ loyalty. “Most of Estevan knows me from waitressing at the Tower,” she laughs. Sereggela takes a hands-on approach at work, preferring not to place managers between herself and her service staff. She does, however, rely on the hard work and talent of her “second-hand man,” Michelle Betito, to maintain her Subways’ first-rate reputations. “She’s awesome,” Sereggela enthuses, listing the tasks she relies on Betito for without hesitation: financial details, inventory, stock orders and training. Speaking of training, Sereggela knows that exceptional customer service isn’t just about seeking out the best people (although she’ll hire longdistance or even overseas to secure the right employee for the job). It’s also appropriate training that enables employees to deliver the best customer experience. Betito and Sereggela train new hires themselves to ensure service of a constantly high standard. Whichever Subway you visit, Sereggela says, “Orders are fulfilled according to the high standards set out by Subway, and customers can personalize each sandwich to their own specifications, guaranteeing that they leave with the exact sandwich they want each time.” Subway itself has celebrated Sereggela’s hard work: last year, the company named her Saskatchewan’s “Franchisee of the Year” for excellence in every aspect of her Subway restaurants.

Everyone can appreciate a perfectlyassembled sandwich, so Subway sees every kind of customer. “A lot of kids, a lot of families, a lot of crew guys… we do a lot of catering, too,” says Sereggela. “With both towns booming and expanding, we strive to meet the needs of the communities. We’re open early morning and late into the evening. Family and workers alike can find something that meets their expectations.” Many customers have become familiar “regulars,” striking up a rapport with Sereggela’s staff. “There are customers who bring coffee or donuts and say ‘thank you for being friendly when I’m having a bad day.’ ” And although Sereggela sets her staff high standards, she says her tight-knit employees have plenty of opportunities to enjoy each other’s company. “It’s fun to work here,” Sereggela says. “Everybody’s at home: it’s like family.”

Local Entrepreneurs Go InternatIonal By Tobie HainsTock

I

t all started with three young friends spending some time out on the golf course. At the age of 18, these young entrepreneurs from Weyburn — Brad Wallin, Jason Hoium and Drew Krainyk — came up with a unique improvement to a traditional putter grip design that would later take off to become a success in countries around the world. “The initial idea came to us in 2004,” explains Brad Wallin, co-founder and now president of TourMARK Grips. “It went through some product revisions; in 2006, we filed our U.S. and Canadian patents, and in August 2007, we incorporated.” During this time, Wallin went on to university to study business while his partners studied dentistry. All the original founding partners are a part of the company’s executive management team, involved at varying degrees within the company’s dayto-day operations. Jason Hoium is in


charge of custom grip design artwork and website management, while Wallin has taken an active interest in moving the company forward as the chief executive officer. The growth of this company has taken off quickly in the past year with recent expansion into 19 countries worldwide. “First quarter sales this year have exceeded total sales from last year; we continue to obtain strong international distribution partners which will allow us to continue to push things forward in new markets,” Wallin comments. He points out that while profit is the primary motivation when in business, “as an entrepreneur, it’s very satisfying to see people using our product.” It hasn’t been an easy journey, but the founders’ entrepreneurial spirit has brought growth and new product development to TourMARK Grips. “It’s always a challenge to bring a new product to market without a large financial partner,” Wallin remarks. Knowing the popularity of the NHL teams in Canada, TourMARK used NHL team licenses as an opportunity to encourage interest. It was a successful test market and in May 2012, TourMARK

Grips signed a 2nd licensing agreement with LoudMouth Golf for both putter and swing grips. “This allowed us to hit a different demographic and expand to additional international markets,” says Wallin. While moving ahead with product development and diversification, TourMARK Grips has recently obtained a manufacturing agreement with Team ProMark out of Denver, Colo., which includes agreements with NCAA, NFL and Major League Baseball. According to Wallin, TourMARK and Team ProMark have been working together

on the development of a 16-ounce hammer equipped with team coloured polyurethane grips. He adds that this is a nice fit for them and the operations of their current production lines overseas. As TourMARK Grips moves forward, Wallin reflects on the years of hard work and how it’s paying off. “We had many challenges along the way, developing our product, marketing, cash flow and so on, but we had a lot of great support here in Weyburn,” he expresses. The moral and financial support that TourMARK Grips has received from the community is greatly appreciated by Wallin and his partners. “I don’t think we’d get the same kind of widespread support in a larger centre,” he says. Wallin believes the key to owning a successful business is to surround yourself with the right people. He notes that being an entrepreneur is a very demanding career, and it’s important to have strong personal and work support networks. When asked for advice to other up-andcoming entrepreneurs, Wallin advises, “Remember to keep a healthy lifestyle balance and to talk to others about their experiences in business.” He adds that a lot of challenges for entrepreneurs are the same; it’s just the products or services that are different. n 1965, Don Pokletar’s father, Ernie, started a sign-painting business: Ernie’s Signs. Over the years, the business transformed from a one-man, hand-painted sign business into a fiveperson operation providing an extensive array of signage and visuals. Don Pokletar, who began apprenticing with Ernie in 1985, took over in 1997 and the business became Protouch Signs. Taking advantage of advances in

technology, the business has grown and now employs a wonderful staff of four full-time employees: Brandi Seitz, Robyn Lee, Daylee Marr and Areta Berzina. Don’s daughter, Emily, works part time at the store, and Ernie helps out in his spare time. “I’m lucky to have a very good staff here,” Don remarks. “They are such a big part of the business.” Brandi and Robyn are trained graphic designers who, along with Don, are responsible for Protouch Signs’ top quality graphic design services

and eye-catching logos. Daylee and Areta specialize in the sign installations and every sign is professionally installed. Steinke ensures that her customers receive support as quickly as possible; she provides on-site same day response. She

also has remote support software that allows her to access clients’ computer systems. This enables her to provide problem solving in a timely matter, and even help clients while she is away from home. Steinke’s extensive experience with a variety of diverse companies and settings has given her the knowledge and expertise to help clients with essentially


any of their needs and problems. She is well versed in all the types of computer problems that homes and businesses encounter, including network services, computer repairs, backups, data recovery and security. “Network problems are very common for businesses,” remarks Steinke. “When people have these problems, I can resolve any issues, keeping networks performing seamlessly.” Steinke works closely with the client to create a network design that is the best fit for their home or business while providing the latest technologies in security and reliability. Steinke also does a lot of work removing viruses and spyware from people’s PCs. “That’s the most common problem with computers,” she remarks. “If people’s computers are operating very slowly, I have tools that eliminate viruses and spyware to speed up the system.” Steinke also does amazing work with data recovery. “If you’ve lost files or pictures, I can run software to recover any data possible from the drive,” she notes. When the drive is not recoverable by software, she also works closely with a professional data recovery lab that can assess the damage, and even recover the files from it. “I had a client a couple of months ago who lost all of her pictures. She didn’t have a backup of anything. All of her pictures were gone,” remembers Steinke. “With the help of the recovery lab we were able to have 100 per cent of the files recovered.” Most of all, Steinke is happy to be back in Estevan. She says, “It’s been a really good experience. I’ve worked for a lot of good companies and met a lot of great people.” Lending her skills to the community has been a way to contribute to her hometown. “It’s been an awesome way to get back into the community.”

S

outheast Regional College has been providing quality postsecondary education programs to Southeast Saskatchewan for more than 35 years. Its main campuses are located in four different Southeast Saskatchewan communities — Assiniboia, Estevan, Moosomin, and Weyburn — with two learning centres in Indian Head and Whitewood. The College’s decentralized nature enables it to cater to residents of the many rural communities of southeast Saskatchewan. In 1971, Saskatchewan’s post-secondary education system was in need of a change. University enrollment was low, while technical institutes were in such high demand that they were unable to accommodate applicants. To add to this, continuing education programs were not offered consistently by school boards. This left many hopeful learners without accessible education. The Community College Act was thus passed in 1973 to facilitate more reliable, widespread post-secondary education for residents across the province. It was through this legislation that the South East Region Community College was born. “Our first board meetings were long,” reflects Kathryn Groshong, a member of the College’s original board. “It took hours to form bylaws, mission statements and organizational material for this new Southeast Region Community College.” The College received great response due to the hard work and dedication of those involved. “In the first six months, we had Contact Committees formed in about 19 communities, rural and urban. And they were so important in running the actual classes,” says Groshong. These local Contact Committees helped to identify needs and resources within each community, and initiate the necessary action to get programs started. In the first six months of the College, the community College offered 31 classes, and had a total of 567 participants throughout the region. “It was a great start,” Groshong recollects. Classes at the College ranged from farm marketing and income tax to welding, typing, sewing, gardening, upholstery,

acrylic painting, pattern drafting and French. “It may sound like humble beginnings, but in the years following, there was a steady growth in the number and variety of classes, responding to the needs of people in the local communities,” remarks Groshong. In March 1976, the Weyburn Vocational Centre, which had been providing continuing education programs for the Weyburn area, closed. In its wake, the South East Community College took on the responsibility of offering the training the Weyburn Vocational Centre had previously offered southeast Saskatchewan. These courses included general welding, small motor repair, one of two pipeline welding courses in Western Canada, a bookkeeping module from the Saskatchewan Technical Institute (STI) program, a basic vehicle operators’ course for Saskatchewan Power employees, occupational English classes for refugees, and a Basic Job Readiness Training Program. Through offering these highly sought courses, the South East Region Community College had the third highest enrollments in the province that year, and the College has been an important source of education for southeast Saskatchewan ever since. “In 1977 to 1978, when I served as chairman of the board, the number of classes given had risen considerably,” says Groshong. “During this year, there had been 9,000 registrations, with over 11,000 hours of instruction; 21 university programs had been given, and 87 adult basic education classes.” The biggest change for the College came in 1987, however, when it changed from a community college to a regional college. At this time, the College shifted its programming focus from public interest classes to accredited technical and academic courses. “While the Community College had provision to provide some actual credit classes, and there were contracts with the University of Regina and the technical institutions to provide some credit programming, the main focus was on what was called community programming,” says Brian Binns, coordinator of Adult Basic

Education, who has worked at the College in different capacities since 1984. After the shift, the College began to offer far more credit courses. “While there was still community programming in some places, the focus had switched to credit programming,” says Binns. For example, when students signed up for a welding course, they would gain their full first year pre-employment welding accreditation from SIAST. “The focus was then definitely on higher level credit training,” Binns reflects. The College changed its geographical focus, too. Rather than operating out of numerous rural centers around the area, the College shifted its focus to the larger rural centers such as Weyburn and Estevan. “It was still decentralized in the sense that it wasn’t focused on Regina and Saskatoon or Moose Jaw and Prince Albert, but it was then focused on bigger rural communities such as Weyburn and Estevan and Indian Head,”

In the last decades, the College has continued to expand its service to provide a wide range of credit courses including business and entrepreneur training workshops, basic education, university education, technical skills and trades education, energy-specific courses through the Saskatchewan Energy Training Institute, and a wide range of online courses for those who want to learn right from their home.

“I believe the College has the capacity and drive for growth,” says McGrath. “We are in a process of renewing our commitment and dedication to the communities and learners we serve, including those in business and industry. We will be working hard to engage business and industry in order to ensure the College supports continued economic growth and prosperity. For example, we will be working to align our programming in order to maximize education and training efforts for labour market demands.”

Southeast Regional College’s strength is in its ability to align its programming with labour market needs. It achieves great success in connecting learners to jobs in a growing Saskatchewan economy. Dion McGrath joined the College as president and CEO in October 2012, and has embarked on a number of initiatives to renew and re-invigorate the College’s efforts.

With its energetic staff and Saskatchewan’s ever-growing economy, Southeast Regional College looks forward to playing an important role in education for many years to come. “With a renewed focus, and our team of dedicated professionals, our belief is that there is untapped opportunity for the College to contribute even more to the future success of the province,” says McGrath.

hether you are seeking training as a nurse, wish to pursue a career in the trades, want to obtain a degree through distance learning, or are looking to enhance your skills with Basic Education courses, Southeast Regional College’s (SRC) Weyburn campus provides the classes and resources you need — for these and a variety of other fields. “We are all about connecting people with education,” says Dave Harazny, SRC’s marketing and recruitment manager. “The college runs a wide array of programming.” With the motto “Where Minds and Possibilities Meet”, SRC focuses on providing opportunities for learners in a range of areas, facilitating their educational path. Founded in 1975 as the South East Region Community

College, the school has campuses in Estevan, Moosomin, Assiniboia and Weyburn, as well as smaller learning centres in Indian Head and Whitewood. Currently located in the Weyburn City Centre Mall, SRC’s Weyburn campus features a safety training classroom, nursing classroom and lab, two classrooms and a computer lab for basic education classes, teaching salon for the school’s hairstylist program, two multi-purpose classrooms and a student lounge. Guidance and student service counsellors are available to assist students in navigating their SRC journey. The Weyburn campus’ student services counsellor provides information on funding and student loans, facilitates

aptitude assessments, helps students make career decisions, and assists with resume writing and job searches. Take a stroll through the college and you may spot students as young as 18 and as old as 80: SRC caters to everyone with an interest in learning. “Students say the environment is very learnerfriendly,” says Harazny. Over 2,300 students per year are enrolled at SRC’s Weyburn campus, ranging from fulltime attendees to those doing parttime evening or weekend classes. One or two-day workshops are offered for businesses that want to enhance their employees’ leadership or management skills. English as an alternative language courses are offered twice weekly.


Most SIAST certificate courses offered at SRC average 10 to 15 students per class, offering greater instructor interaction. “Smaller classrooms enhance learning opportunities,” says Harazny. “The classes are more personal.” The college’s instructors are professionals in their field. “Some are retired from their profession, and some take leaves from their job to instruct,” says Harazny. “Students say the instructors are fantastic.” Safety training is a prominent focus of the school, with innovative training simulators provided such as a portable oil rig simulator that enables students to practice their responses for rescue situations, and a confined space trailer for training students how to navigate a dark, confined space. The college also has an SUV equipped with a SKIDCAR system that enables students to practice entering and exiting skids and to learn skills for driving on dangerous roads. “We are leaders in the area of industry safety training,” says Harazny. Wish to pursue truck driver training? You can obtain a Class 1A driver’s license through SRC. SRC’s Weyburn campus is the only option in the city of Weyburn for postsecondary schooling. Students can take advantage of a realm of courses without having to travel or move out of the area to receive a high quality education. Harazny says many Weyburn students save on costs by continuing to live at home while attending the local campus. One of the biggest benefits of enrolling at SRC is the access to its scholarship program. The college has over $75,000 in scholarships available through the region, ranging from $100 to full tuition. Because of SRC’s smaller student population, odds of receiving a scholarship are in the students’ favour. “They are not competing against thousands of students, like at some universities,” says Harazny. SRC’s Weyburn campus has at least one scholarship available for every full-time program, with winners chosen based on their academic standing, community service and financial need. SRC bases it programming on job trends and student demand, continually updating it course offerings. For example, various trades are in demand at various times, and SRC adjusts its programs accordingly. The Weyburn campus’ business consultant works with local businesses

and industries throughout the region, keeping current on training requirements for employees. “Our business consultant is our connection to business and industry, constantly assessing the needs of the region,” says Harazny. ome companies have a certain structure, and within that structure, they can only grow to a certain level,” says Tracey Fieber. That’s not necessarily a bad thing: once structural shortcomings are addressed, many companies achieve growth they previously only dreamed of. The team at Tracey Fieber Business Solutions helps clients resolve such roadblocks to success. “We evaluate [clients’] structure and suggest ways to change, so that they can have the growth that they want.”

Tracey Fieber Business Solutions was established in 2009. After 15 years in finances, Fieber knew that many businesses weren’t realizing their potential in fields like human resources and marketing – vital to any company’s success. he breakdown of a marriage or relationship has widespread consequences and complications, especially if there are children involved. And tax time is one of those complications. We have received many questions from couples who have parted ways. Some splits involve joint custody situations while others appear to be more acrimonious. All of them impact a tax return. Your marital status is determined on December 31 of the tax year, but if you are in a common-law, relationship you are only considered separated if the period of separation lasts 90 days or more. That means if you separated on New Year’s Eve, you would indicate separated on your tax return if you are preparing it 90 days later, or if you still

If your marital status has changed, you should file a RC65 Marital Status Change form. Credits and benefits like the GST payment and Child Tax Benefit are calculated based on household income. The RC65 informs the CRA and causes benefits to be re-calculated based on a single income.

each parent can claim one as an eligible dependant, plus the child amount, if they each maintain the household where the child or children have lived after the separation. However, in years after the year of separation, if either partner is required to pay the other child support at some time during the year, even if the payment hasn’t actually been made, he or she cannot claim the eligible dependant for that child.

Both people should file their own return with their new status. If you supported your spouse or commonlaw partner while you were together, you can still claim the spousal amount one last time. The amount will only be reduced by the amount of their income before you separated.

If you paid childcare expenses so you could go to work, while you had custody of the children, you can claim those expenses, whether you can claim the child amount or not. If you paid for activities that qualify for the Children’s Fitness Credit and Saskatchewan Active Families refundable credit, you can claim the credit on your tax return.

If you have custody of your child, you can claim the amount for an eligible dependant for the child, although this would be reduced by the child’s income. You can also claim the child amount for that child and any other children born in 1996 or later, no matter how much income they earned.

Child support payments are not taxable if the agreement was made after May 1, 1997, but spousal support payments are considered taxable income as long as the payments are made pursuant to a court order or written separation agreement.

Both parents cannot claim the same child on their tax returns. For joint custody situations, the parents may be able to split the benefits. If there are two children in a joint custody situation,

ENDORSING SAFETY IN THE SASKATCHEWAN OILFIELDS BY APOLLINE LUCYK

Mission: Zero is Important for all Saskatchewan Businesses

T

here’s a little red dot with the words Mission: Zero showing up on more and more work vehicles around the province, but what does it mean? “Mission: Zero is a call to action,” says Peter Federko, CEO of The Saskatchewan Workers’ Compensation Board. “It’s a call to all of us to live and work safer in this province; to adopt ‘zero injuries, zero fatalities, zero suffering’ as a goal.” The impact on Saskatchewan’s overall injury rate is already showing: “Our statistics show that employers who embrace Mission: Zero and commit to the Health and Safety Leadership Charter (formed in 2010) have better injury statistics than those who have not,” attests Federko. “And while WorkSafe is very much focused on eliminating injuries that happen at work, the same is true for injuries that happen outside of work.”

Alongside the personal benefits to employees, investing in injury prevention makes good business sense. Steve McLellan, CEO of the Saskatchewan Chamber of Commerce, affirms, “not only does an injury cause pain and discomfort, it also costs money and time, and costs companies productivity.” The team at WorkSafe Saskatchewan “have increased awareness for workplace and off-work safety, and have created an enhanced culture of safety,” says McLellan. “Less people are injured and more people are consistently in the workplace, which is very positive for the individual and the workplace.”

The Oil and Gas Sector “There’s no question. The oil and gas sector has, over the last decade, transformed itself with a greater recognition of the need for safety of their work areas,” says McLellan. “They are an area where, by the nature of their work, injuries can happen. And many of these are preventable by additional safety practices. The oil and gas industry has been stellar in stepping forward and making sure that their workers and their workplaces are safe.”

All prospective workers must take a number of safety-related courses before gaining employment within the oil and gas sector. “Pretty much First Aid and CPR and H2S Alive courses are the standard two that every single person needs, and then the rest depend on what their exact job and their job description duties are in the oilfield,” says Sheena Onrait, Estevan Campus manager for Southeast Regional College. “So, if they’re doing anything where they’re climbing, climbing a tank, or climbing anywhere more than two metres above the ground, they would need Fall Arrest Awareness,” Onrait explains. “If they’re on a drilling rig or a service rig, they’re going to need a Fall Protection and Rig Rescue. If they’re digging anything up, disturbing ground, that’s where ground disturbance comes in. If they’re operating any equipment like a skid-steer or a backhoe, or a forklift, that’s where that powered mobile equipment comes in.” Ensuring that every oilfield employee is properly trained in the safety hazards particular to their place of work and specific job is very important to ensure oilfield safety. Many companies in the industry, with the help of the oil and gas safety organization, ENFORM, have successfully implemented safety precautions into their workplaces and reduced their workplace injuries. “Particularly in regards to the industries and employers, we see remarkable results in terms of injury reduction in these targeted groups,” says Federko. John Kennedy, general manager of corporate development at Diamond Energy, an oil well servicing company out of southwest Saskatchewan, says their company has implemented many measures to improve the safety at their workplace since signing on with Mission: Zero. “We are a big believer in Mission: Zero. That is our goal at our company, and I imagine that with everyone else in the province, it’s the same,” Kennedy says. “We have programs in place that we use for our green hands, our new employees,” Kennedy adds. are integrated into the work slowly and safely. “Once we’re done that, the COADC (Canadian Association of Oilwell Drilling Contractors) has competencybased training that we do with all of our employees,” he says. The company also has additional measures to ensure their workers are comfortable on site, including running rigs with extra men to ensure that the “green guys” can safely gain hands-on experience. “All of our guys wear impact gloves for pinches and stuff, because our hands are our biggest injury,” Kennedy says. “We supply all our guys with all the safety things they need. We have lots of little tools on the field we use, like the ‘step back five by five,’ our Job Safety Analyses (JSA), our Hazard IDs, and all that good stuff that helps identify and eliminate the hazards.” The company has already seen measurable improvements in workplace injury prevention since adopting Mission: Zero. “The oil and gas companies have said, ‘This is important to us,’ and they have followed through,” McLellan remarks. “They have fired employees who will not work safe, employees who have put themselves or others in harm’s way. They have done drug testing, which is very productive, and that’s all to be applauded.” “Companies themselves, through the leadership of organizations like ENFORM

and others, have stepped forward,” McLellan adds. “And of course, work safety can be done corporately, but it has to be individually driven. The individual is the one who makes the mistake, or doesn’t take the time to tie off or make sure precautions are in place.”

Looking Towards the Future The results speak for themselves: since WorkSafe Saskatchewan was formed in 2002, the time loss injury rate in Saskatchewan has dropped 43.6 per

cent. Since the launch of Mission: Zero in 2008, approximately 80 per cent of Saskatchewan employers achieve this target annually and more businesses are implementing safety solutions all the time. However, Federko stresses that there is still more ground to be gained. Now is the time to adopt Mission: Zero into your daily life, at work and at home. Saskatchewan is continually becoming a better, safer place to live, and safety remains as important now as ever.

(EM) surveys use the principle of EM induction in assessing electrical ground conductivity. A transmitter coil on the EM instrument generates an EM field (the primary field) to induce eddy currents within subsurface conductors. These currents result in a secondary magnetic field that is measured together with the original primary field, using a receiver coil on the EM instrument. The resulting secondary magnetic field is split into two components: one component provides a measure of the apparent ground conductivity, while the other component is responsive to buried metallic objects. EM methods can cover a large area (200 m x 200 m) in a relatively short timeframe (several hours), and the results can be plotted in the field to increase or decrease the survey area to any specific regions of interest. The EM instruments can be coupled with a global positioning system (GPS) to obtain positional information with the respective EM data measurement points. Typically, two maps of the resulting EM data (and respective

positional information) are constructed: the apparent conductivity map and inphase map. The apparent conductivity map is useful for displaying relative changes in ground conductivity (saline areas typically generate an increased or elevated apparent ground conductivity response), whereas surface and buried metallic objects typically generate anomalous zones (both high and low in-phase values due to instrument saturation) on the in-phase map. The apparent conductivity and in-phase maps can be used to design a targeted drilling program, thereby reducing the time and cost of traditional grid sampling in a given area of interest.

I

t was 1988 when a local Weyburn man, Wayne Aitken, started his role as owner and manager of a new company, based on ideals. Through hard work and dedication, Hotshot Oilfield Service (1988) Corp was born. Because of these ideals, the company has continued to serve clients throughout southeast Saskatchewan for more than 25 years. “I’m the kind of guy who knows a little about a lot of different things,” Torrance Aitken states humbly. However, you don’t get to be owner/manager of Hotshot Oilfield Service’s testing division, without knowing a lot about the oil industry. Aitken accredits his success to his family and his upbringing. He speaks fondly of his father, Wayne Aitken, who works with him and manages the rest of the company. “He has over 35 years of experience and has worked in 30-plus

countries,” Torrance remarks. “He’s a great guy who knows a little bit about a lot more, and when I don’t know the answer, I ask him.” “I started at the bottom and worked my way up. After a couple years in management, I felt it was time to move on,” Torrance Aitken recalls. Working from the far north in the deltas, to New Mexico testing oil and gas wells, Aitken eventually felt it was time to branch out on his own. Raised in a family of entrepreneurs, he felt he had a substantial knowledge base and support system to be successful. In November 2011, Torrance started his own division within Hotshot. The testing division has the equipment, experienced crews and is capable of all types of jobs: high pressure gas testing, critical sour well control, high volume oil recovery, methane and light gas testing, all kinds of fracs, CO2 well control, inline

testing, small underbalanced drilling applications, blow downs, snubbing, coil clean outs, completions, stimulations, chemical jobs, milling and more. “With an auxiliary line heater, and TC-51 compliant fuel skid, there isn’t much we can’t do!” Torrance exclaims eagerly. As someone who grew up on the family farm, with the core values and pioneer spirit of his grandparents, Torrance takes pride in being raised to work hard. “I believe in an honest day’s work for an honest day’s pay,” he comments, “I’m very meticulous and I don’t cut corners.” The Aitkens’ high standards and hardworking attitude have rubbed off on their staff. “We are very particular about the guys we hire and get them trained to do things right the first time,” comments Torrance. He says that it’s very important for the people on their team to be well trained before they send them out into the field. “We treat our employees well,”


he adds, “They’re not just employee numbers to us.” Hotshot Oilfield Service has a core safety program and is insured. “We are also WCB (Worker’s Compensation Board) compliant, active members of ISNetworld, Comply Works, and currently in the process of certification for our Core certificate,” Torrance notes. T

he air is so rarified in this world of bank-breaking vehicles that performance specifications become meaningless — like trying to comprehend a trillion stars in the sky, what does 750 horsepower even mean? Or, what does going from 0-100 km/h in less than three seconds feel like? This is an exclusive club of cars beyond the comprehension of most people. The common trait of supercars is their very limited production runs, handcrafted quality and heart-melting beauty. They have more in common with sculpture than they do with transportation.

One of the least expensive, but most popular supercars is the Ferrari Enzo. At only $670,000 US, it screams performance with its extremely low profile and large rear air scoops. It will reach more than 340 km/h — if you want to risk the jail time. For a classic sports car look, you may want to dig a little deeper and pay the $970,000 price tag for the gull-winged McLaren F1. But for real eye-popping reactions, check out the Lamborghini Veneno. Like something out of a future Batman movie, the car costs $3.9 M and requires a purgatorial stint on a waiting list, as only three are produced each year.

He occasionally ships one of his beauties to a customer in Saskatchewan or has a visitor from the province in his store. “We sell cars all over Canada, including a few in Saskatchewan,” Punia says. He says in general his clients are between 45 and 50 years old and have reached the sweet spot in their lives where they’ve earned a little money and are ready to start treating themselves. KULU’s niche is the sports cars segment, although they have sold some sedans and high-end SUVs. Punia often deals with limited editions Ferraris — like Enzos or F40s and F50s — that get into the $1 million-plus range. But most of the transactions average around $100,000. He says while it seems like a lot of money, the people he deals with don’t blanch at

the price tag. “Generally speaking, to sell a $200,000 car is easier than selling a $50,000 car, just because people know exactly what they want, and if you have it they just go ahead and buy it. With people looking at $30,000 to $50,000 cars, they’re test driving five different cars at five different places, trying to arrange for financing or trying to trade in a car.” He says high-end transactions are usually smoother because these are the type of people that if they see it and like it, they buy it and drive away. “And typically, [with] most of the stuff that we have to sell, there aren’t 10 other ones to compare.” Saskatoon got its own premium car dealership in 2010. Bruce Duguay, sales manager at Porsche Centre Saskatchewan, says the province has really welcomed the brand. The Porsche dealership in Saskatoon has been open for three years


— one year in its new location on Brand Road in the city’s south end. “There’s been steady growth for Porsche sales over the last few years. When we started in 2010, we didn’t quite know what to expect from Saskatchewan’s market,” says Duguay. “And the year over year growth has actually been quite a bit higher than what we originally projected. For example, this year we’re on track to sell about 66 new Porsches and about 25 certified pre-owned Porsches. We’ve definitely provided a healthy injection into the ultra-premium segment in this province.” Duguay says awareness has really grown in the last two years through word-of-

mouth from its customers, who are often professionals. “It just gets around their industries that they had a great sales and service experience with us.” The most popular Porsche in Saskatchewan is the Cayenne sport utility vehicle — especially the diesel model. It’s a year-round vehicle that seats five and drives and handles like a sports car, says Duguay. A new Cayenne can be had for about $60,000, but with options and a high-performance engine clients can spend up to $200,000.

Get behind the wheel For those who yearn to experience the world’s best automobiles, but have limited financial resources, there is a temporary remedy. GTA Exotics in Toronto (gtaexotics.ca) offers a variety of packages that allow members of the public to test drive Ferraris, Lamborghinis

and other elite vehicles. At about $400-per-hour it’s an expensive treat, but promises to create fun memories. One of its most popular offerings is the chance to drive six exotic cars all in one day for $699. Another package offers the chance to drive a police car in high-speed pursuit on a racetrack. But be warned, your 1999 minivan probably won’t ever feel right after that day!
