CANADA: TWO QUEENS FOR THE QUEEN CITY By Tobie Hainstock
A
fter a 50-year dry spell, Regina is receiving some incredible recognition: for two years in a row, the Miss World Canada crown has gone to young women from Regina. Camille Munro was crowned Miss World Canada 2013 and Annora Bourgeault received the Miss World Canada 2014. Both women take the responsibility of representing their city and province very seriously. “I see myself as an ambassador for Canada wherever I go,” states Bourgeault. “My role is to welcome everyone equally and represent Canada well.” “I’m proud to tell people I’m from Saskatchewan and about my experiences growing up here,” Munro smiles. Born and raised in Regina, she expresses a lot of civic pride describing her hometown as a diverse geographical area with people of multicultural backgrounds. Self-described as a humanitarian, Munro acknowledges the importance of giving back to the community through volunteerism, philanthropy and charitable acts. It was the humanitarian aspect of the Miss World program that sparked Munro’s interest in participating. “This was perfectly fitting,” she remarks. “I love

to dress up and wear sparkly things, but in doing that, I’m also able to spread my message and my hopes.” The mandate for the Miss World and Miss World Canada programs is “Beauty with a Purpose.” According to Munro, the program is not as much about appearance as many may think. “It’s not just that you are beautiful, but that you have a message and a purpose as well. What is it that you are giving back to others?” Bourgeault has a true heart for community involvement and multiculturalism, which fits the Miss World mandate well. “Being involved in your community is an important form of self development. It helps change our viewpoints as we learn something new from each other,” she says. Personally involved with a variety of children’s charities and local community events, Bourgeault says her roles in the community have helped her grow as a person. “I really give credit to Regina for making me the person I am today. I’ve been fortunate to grow up in a culture that is truly friendly.”
Munroe says her pageant experience helped her become more comfortable with herself and who she is as a person. “It’s an excellent experience that helps build your self confidence,” expresses Bourgeault. Both women were coached by Kaya Shereen Palmer, who moved to Regina from Oregon, U.S. Being a former pageant winner herself, Palmer shares her broad knowledge base. “My focus is building up their confidence,” she explains. “My coaching is very repetitive because it takes those patterns of training to break old habits,” she says. Part of the training is learning how to present yourself with elegance and grace, as well as how to exude a presence on stage, she adds. Much of the coaching involves communication skills, which include answering interview questions and being able to speak on the spot to media. Palmer is ecstatic about the two wins: “Two years in a row… two girls from Regina… it’s amazing!” The Miss World pageant will take place in London, England on December 14. Bringing an
Artistic Flair to Hair

hen Kelly Knowles was a young girl, she spent hours styling the hair of her Barbie dolls and two sisters, creating different looks and putting on fashion shows. “It was a part of me,” says the Redken artist. “I absolutely love doing hair.”

During a pivotal conversation years later, a woman Kelly knew pointed out her passion for hair and said to her, “Why aren’t you doing it for a living?” Within two weeks, Kelly enrolled in Richards Beauty College, turning her creative interest into a career. For more than a decade, Kelly has been cutting, colouring and styling
hair, and has continued educating herself through classes on product knowledge and hair trends, tips and tricks. Kelly’s friendly approach quickly sets clients at ease, and her in-depth consultations enable her to understand clearly the hair goals of each person she serves. “I always
to love their hair and feel more confident,” she adds. “People say they appreciate that I go the extra mile.” Kelly is colour-certified with Redken, and has undergone specific training to work with curly hair. One of her current passions is men’s barbering, from beard grooming and tapering to haircuts.

Kelly’s passion for both hair and helping others has also led her to volunteer
with an organization for women struggling with drug and alcohol addiction. Kelly’s hair services can help the women feel more confident and cared for. Kelly says she enjoys taking new clients and never turns anyone away. An artist in not only hair, but in painting, drawing and theatre, she loves to express her creativity. “I live and breathe art,” she says. “Looking at the way light cascades down a building can inspire the way colour melds within hair. Plan tHe Ceremony and reCePtion Communication is important when it comes to envisioning the wedding, so sit down with your partner and discuss what you each have in mind for venues, music, flowers, food, who will officiate, who will be invited, and who will stand for you. The guest list affects many of your decisions, so it is good to take care of that sooner rather than later. The bridal party is another tricky issue, but don’t feel the need to ask every single close friend to stand. Some friends will actually be relieved to not have to spend the time and money on the event, and will actually be more motivated to help out when they can. CHoose a PHotograPHer Weddings can be a whirlwind, and all the details you spent a year obsessing over are seemingly over in an instant. The photographer will help you remember the special day for years to come, and they are well worth the investment. This should be one of the first things you look into, because the good photographers
are booked months or even years in advance. Make sure to check out a few options, and ask for recommendations from people who share your aesthetic. Above all, choose someone you are comfortable with because you will be seeing them a lot that day. CHoose a dress Dress shopping is a very personal thing, but there are some good tips out there for how to start your search. Finding a good silhouette will help you narrow down the options before focusing on the details of the dress. Taking your camera with you is a great way to remember what you tried on and make sure the mirror isn’t lying to you, but call ahead to check if the boutique allows it first. Remember that wedding dress sizes run larger than your regular size so don’t get caught up on the number on the label. And don’t feel pressured to take a group of girlfriends with you; often that will just put more pressure on you, and dresses are almost always non-refundable so it’s better to make the decision on your own or with select trusted friends or family.

To maintain the tranquil, calming experience a spa is designed to offer all of its guests, many spas have restrictions for babies or small children. Having children in the spa could also be a safety concern. Most spas house hot wax, sterilizing and disinfecting chemicals, sharp medical instruments, and even unsupervised pool areas. To experience the best spa visit you can, I definitely suggest finding a helpful sitter and enjoying your relaxation time
in peace and quiet! After all…don’t busy moms deserve a little me time too? Am I supposed to be naked for a massage and will the massage therapist be there when I undress? — Sonja Jan Every massage therapist may differ from spa to spa, however, the comfort of their client should always be of the utmost importance. I suggest requesting a Registered Massage Therapist (RMT) to ensure your service provider is qualified and professional. Generally, your therapist will step out of the room for your privacy while you undress and make yourself comfortable on the treatment table. You may choose to undress fully or keep undergarments on if this makes you more comfortable. Your therapist should always knock upon re-entering the room to perform your massage and will continue to keep you draped appropriately through your treatment to avoid any discomfort. Following your treatment, your therapist will leave the room for you to re-dress and enter only when you have completed.

ost people are aware the ultraviolet (UV) rays are harmful to the skin and over-exposure to them can result in skin cancer. Few people, however, realize that eyes are also adversely affected by UV radiation. Like with the skin, UV damage to the eyes is cumulative, and it can take years before the harmful effects show. Exposure to too much UV radiation can potentially lead to a variety of eye ailments. Photokeratitis (also known as sunburn of the eye or snow blindness) is one of the few effects that can be felt in a short amount of time. Temporary blindness can result after only one hour of intense glare from sunlight off of the snow. Most of the effects of over-exposure to UV radiation on the eyes take longer to show. Long-term exposure to UV rays can result in certain type of cataracts, cancer around the eyelids and possibly even age-related macular degeneration later in life (the leading cause of vision loss in Canadians over the age of 50). The skin cancer melanoma which has been linked to UV radiation can also develop in the eyes. Pterygium, a usually non-cancerous growth in the corner of the eye, results from prolonged exposure to UV rays. The potential consequences of too much exposure to UV rays are many and serious. It is necessary to protect your eyes from these rays by wearing sunglasses and wide-brimmed hats. People who use tanning beds should wear protective glasses when tanning; the raccoon eyes that result can be easily covered up with a self tanner. Good quality sunglasses help to protect your eyes from damage due to UV rays and fatigue. When choosing a pair of sunglasses, be sure to buy a pair that provides 99 to 100 per cent protection from UV rays. The amount of protection provided should be stated on the tag. Choose sunglasses with bigger lenses to shield the eyes more fully. Wrap-around sunglasses are the best as they provide protection from peripheral rays, as well. The colour of the lenses is also important. Really dark lenses on sunglasses can actually increase the likelihood of UV damage to the eye by causing the pupil to expand in order to see better thereby allowing in more UV rays. Sunglasses that are tinted amber block out blue light, making it easier to see things in the distance, especially in hazy conditions while sunglasses that are tinted gray are best for driving as they do not distort the colours of traffic lights. Many people wear sunglasses only in the summer or on sunny days. However, sunglasses should be worn even on cloudy days as most clouds actually block out very little UV radiation. Sunglasses should also be worn at all times of the year as many of the UV rays to which the eyes are exposed are reflected off of bright objects, such as cars, buildings, snow, water, sand and pavement. Finally, be sure to have your children wear sunglasses, as well. The World Health Organization states 80 per cent of UV damage to eyes occurs before a person reaches the age of 18. Be sun smart. Protect your eyes from UV radiation. Wear sunglasses year round.

July 18, 2014 was truly “a night to remember” Alzheimers Disease at a charitable auction fundraiser held at the home of Shaun Semple, president of Brandt Group of Companies. Stylish and celebratory, the evening held a sincere spirit of giving.

thought it was a great idea,” explains

Semple. Premier Brad Wall’s enthusiastic request to do something to help out such a worthy cause affected many people, Semple adds. The Premier’s request was the beginning of plans for an elegant,
tasteful and entertaining gala night. According to Semple, the gala event raised in excess of $1 million, with more than $962,000 going to the Alzheimer Society
Saskatchewan and $100,000 donated to Football Saskatchewan. As a major sponsor of the fundraiser, Brandt Group of Companies contributed almost $258,000. The event was emceed by Premier Brad Wall and featured a champagne reception catered by the Diplomat. Live entertainment included performances by Buffalo Narrows, Blake Berglund and headliners, George Canyon and Blue Rodeo.
Ritchie Brothers Auctioneers facilitated a live auction that included items such as jewellery, vacation packages and more. Among the more anticipated items on the auction block was the Saskatchewan Roughriders-themed 1968 Shelby GT500 Mustang convertible; it was restored and customized through the joint efforts of Pat Mengel of Advanced Collision in Regina and Premier Wall. It sold for about $200,000. Guests were also treated to a surprise
visit by Roughrider greats George Reed, Roger Aldag, Gene Makowsky and Chris Getzlaf, who dropped in via helicopter to sign autographs and socialize with guests. The evening was a true success thanks to the generosity of the guests and the hard work and dedication of all who contributed. “There was a great atmosphere of giving that night,” comments Semple. “It was a memorable evening filled with good people who wanted to give back.”

Shannon Tweed and Daughter Sophie Shine in New Reality TV Series

W
hen the A&E reality show Gene Simmons’ Family Jewels premiered in 2006, fans began a voyeuristic love affair that lasted seven seasons. We laughed, cried, gasped, raised our eyebrows and shook our heads in disbelief as KISS rock legend Gene Simmons, actress and former Playboy model Shannon Tweed and their two children, Nick and Sophie, bared their all for our reality viewing pleasure. The show ended in 2012, but fans can now get their Tweed-Simmons reality kick as the ‘diamond duo’ of the famous family star in their own show, aptly called Shannon & Sophie.

Fans watched little Sophie grow up in the front of the camera; now that she is entering a more independent period of life, she and her mother thought bringing the old Family Jewels fans along for the ride might be fun.
attended college and stepped out of her parents’ shadow with a short run on the TV music competition series The X Factor. Her Surrey-based charity, Sophie’s Place, is part of an outreach centre treating nearly 4,000 abused children a year.
“It seemed like a natural continuation,” Shannon says at home in the TweedSimmons mansion. “We ended Family Jewels kind of abruptly so there are a lot of fans sort of wondering what we’re all doing now.”
When Sophie wondered out loud about a show that focused on the motherdaughter pair, Shannon pitched it to Force Four Entertainment. Eight episodes were produced and the show premiered in May on the W Network.
What are they doing now? To say they’ve been busy is an understatement. Gene tours with KISS and is heavily involved in production and charity work. He has also recently taken on the rapidly expanding network of ‘family-friendly rock ‘n roll experience’ restaurants called Rock and Brews — the first Canadian location is coming soon to Shannon’s hometown of Saskatoon. Shannon’s doing voice over and television work, has a hand in The Smartest Person in Canada game show and works with the Canadian Cancer Society. Nick finished college with a degree in English and World Literature, is a writer, voice over actor and musician. Sophie
“I think there is a lot of reality TV out there that focuses on the drama and fighting; I thought maybe people would just like to see a mom and daughter being happy and enjoying life,” says Sophie. “I honestly don’t know a lot of mothers and daughters who are as close as my mom and I.” Shannon & Sophie is billed as a reality show, and for the most part, that’s true. “Of course we know we’re being filmed,” she adds. “So we’re very conscious that whatever we’re doing is permanent. If something happens, we just deal with it, get over it and go on with life. It’s a reality show, but it’s our life,” she says.

“Eventually, your children grow up and become smarter than you. I don’t know how that happens! The beauty of getting older is that stuff doesn’t bother you. You just want your children to flourish and grow. I’m just glad to be a part of that.” For her part, Sophie is nonplussed about wading into another reality show with all the television cameras intruding in a good portion of her life. “I grew up in the entertainment industry, so having cameras around is normal for me,” she shrugs. “Yeah, it’s kind of annoying they film everything but it’s nice to have those home movies we can look back on.” It’s clear Shannon admires and respects the woman her daughter has become, perhaps with tougher skin than she had at that age. “For Sophie, maybe it was good to get that public humiliation out of the way early,” Shannon laughs. “I mean having parents like us, having your baby pictures and your awkward growth phase up there for everyone to see. She’s stronger than I thought she was and can handle more pressure than I probably could have at that age,” she says. “When I made mistakes when I was 24, they were private. Now you do anything and the world sees it and judges you.” Shannon interjects, “We might not chew with our mouths open, but what you see is really what you get!” Best friends mom and daughter have “always hung out a lot” but as Sophie is growing up and away, Shannon sees a bit of a role reversal. “Now without the boys in it, I’ve become the idiot and she’s the smart one,” Shannon laughs. “Before, Gene was the idiot and the rest of us were smart! The juxtaposition is completely reversed and now I’m getting a taste of what he went through.” She’s philosophical about parenting children who are adults themselves.

As the producers wait for the show to be picked up in the U.S. and Canadian markets, Shannon and Sophie are happy to be sharing authentic lives with new and old fans. “I’m not interested in mothers and daughters who don’t get along. I think we see enough of that on TV, and we see enough fake interactions,” Shannon says, and suddenly studies her daughter closely. “Hey, you’re wearing my pants!” she says. “Yeah? Well, you’re wearing my shoes,” Sophie replies without missing a beat.

A Thrilling, Yet Chilling, Kind of Weekend
T
his year’s headliners included the Sam Roberts Band, who appeared Friday night at the Exchange; Serena Ryder on Saturday evening’s main stage in Victoria Park; and the legendary Los Lobos, who closed the event Sunday night. On Saturday and Sunday, the park bustled with free music and activities for the entire family. On all three stages were performers such as The Fretless, Indigo Girls, The Dead South, Geoff Berner, The Mexican Institute of Sound and more. The Children’s Stage featured many highly entertaining acts, including Nouns and Adjectives, Al Simmons, Fada Dance and Andino Suns. Parades on Saturday and Sunday afternoons delighted young and old spectators. For music lovers who wanted to escape the heat and crowds, the Chill Lounge was added this year. Patrons were able to socialize in a relaxed, environmentallycontrolled atmosphere while listening to their favourite performers.
The Value of Volunteers According to Sandra Butel, artistic director for Regina Folk Fest, planning for the event takes about eight months. It requires extensive commitment and hard work involving four full-time staff members and more than 600 volunteers. “Sixteen team leaders start working in April and are busy recruiting, training and scheduling volunteers,” she explains. Butel says the success of Regina Folk Fest depends upon those who step up and volunteer, and she encourages new recruits to come forward for an awesome experience. “We have an incredible group of highly dedicated volunteers and we really count on each one of them.”

Among the long lineup of incredibly talented entertainers was the Regina band, Indigo Joseph. The four-member band consists of Sean McCannell, Etienne Fletcher, Eric Tessier and Byrun BoutinMalloney. “The last time we played at Folk Fest was three years ago,” states guitarist McCannell. “We were happy to come back this year and had a great time.”

Indigo Joseph is proud of the recent release of their album Collage, featuring a mix of original French and English original songs written by members of the Francophone band. The diversity their music appeals to all ages. “We switch our instruments to fit the music and we have two very different lead singers to give us distinctive sounds,” McCannell says. Fletcher is more of a crooner and delivers a smooth melody, while Boutin-Malloney’s voice is a bit husky and demanding in a style similar to Bob Dylan. They look forward to a six-week tour this fall with stops in Edmonton, Vancouver and Halifax.
The Beat Goes On If you can’t get enough of the talented artists at Regina Folk Fest, you’ll be thrilled to know it doesn’t end at the festival. “Our concert series runs from the first part of October
to the end of May, which adds up to about 10 to 15 shows each year,” says Butel. This year’s lineup includes such artists as Royal Canoe, Fred Eaglesmith, The Harpoonist and The Axe Murderer, Jill Barber and more. Regina Folk Fest is also pleased to partner with the Prairie Valley School Division to encourage students to pursue their musical interests. Regina Folk Fest works as a liaison between the school division and the artists to set up in-school concerts and some teaching sessions for the students. “Teachers often integrate the musical sessions into their lessons,” says Butel. “The students will learn about the culture, music and history of the artist that’s appearing at the school.” She uses the example of an artist of African descent appearing at the school during Black History Month. This is a chance to teach students about the history and social issues surrounding African- Canadian or
African-American people and how it affects our society. “The program is an amazing opportunity for students and artists,” she adds. Creating and maintaining partnerships within the community is important to Regina Folk Fest. “We’ve started working with Agribition to set up music programs for after-hours,” says Butel. Another successful partnership exists with the Mackenzie Art Gallery, particularly during Bazaart, where Regina Folk Fest stages artists to perform and add even more charm and ambiance to the day. AROUND THE CORNER: Regina’s Celebrated Canadian Crime Writer, Gail Bowen, and Her Craft By Tonya Lambert Photos Calvin Fehr

When Gail Bowen first contemplated writing a mystery series, she chose a rather unusual protagonist — a middle-aged woman from Saskatchewan who was a single mother with strong political views. It was a risky choice, but one which has since proven to be a very good one, says Bowen. Birth of a Writer
B
owen did not start writing until she was 43, and when she finally did write something, it was not entirely by choice. A family friend had called her for a favour; he was editing a series of articles on western Canada for a humourous guide book for eastern Canadians and needed someone to write a last-minute piece on Saskatchewan. At first, Bowen told him no; she was not a writer. However, at her husband’s insistence that you should always help a friend in need, she called him back and agreed to write the piece. The publisher, Western Producer Prairie Press, was so pleased with her article that they invited her to write something else. The result was the first Joanne Kilbourn mystery, Deadly Appearances (1990). “I have had an extraordinarily lucky career,” states Bowen. From there, she followed her editor to Douglas & McIntyre in Vancouver. Today, the Joanne Kilbourn series is published by Random House Canada in Toronto.
The Writing Process As a professor, wife and mother of three, Bowen says writing time was whatever she could chisel out. Her family was good about helping her to find the time as they all benefited from the extra income. Bowen claims that she has never suffered from writer’s block, a fact which she attributes to her long, daily walks to the university during which she would work through ideas. Bowen recommends authors try taking long walks to overcome hurdles in their writing. Bowen also encourages up-and-coming writers to listen to what others — editors, friends, readers — have to say. Bowen is full of praise for the editors with whom she has worked. Bowen recalls that her first novel needed to be rigorously edited. She says that editors are really teachers, and she feels she has learned a great deal from hers. This is high praise, indeed, coming from a retired English professor. Bowen also listens carefully to suggestions she receives from readers. For example, one reader wanted to know more about Joanne’s past, so Bowen decided to work the revelation of this information into the plot of The Gifted (2013). Bowen says she has always been interested in understanding why people make the decisions they do. Describing herself as a keen, but nonjudgemental, observer of others, Bowen feels that while one’s personality

is in place from the moment of birth, the manner in which a person was treated as a child has a huge effect on a person. Bowen recognizes this in her own life. She says that her relationship with her own mother, a somewhat difficult woman, taught her at a young age how to read a situation and to pay close attention to detail — skills which have proven invaluable to her as a writer. The notion that “childhood never ends,” that a person’s childhood experiences affect their behaviour and decisions as an adult, is found throughout Bowen’s books, especially in The Last Good Day (2004).
Social Issues As a writer, Bowen does not shy away from tackling contentious social issues headon and with praiseworthy honesty and compassion. For example, in her Joanne Kilbourn mystery series, Bowen confronts the issue of racism in Canadian society. Alex Kequahtooway is an Aboriginal police detective whom Kilbourn dates for three years. The relationship is a rocky one that sees the two grappling, individually and as a couple, with issues related to the fact that Alex is Aboriginal. Bowen says that she had originally planned to take a colour-blind approach to their relationship, but decided against that, knowing that it would not ring true. As a long-time resident of Saskatchewan and professor at First Nations University, Bowen realized that such a relationship would be bound to elicit a reaction in the small city of Regina.

The breaking point in Joanne and Alex’s relationship occurs in A Killing Spring. In an honest and thought-provoking piece of writing, Bowen has Joanne and Alex walking across the street when a vehicle goes by and the occupants shout racial slurs at them. Joanne breaks away from Alex and runs across the street. Joanne soon realizes that her reaction is the beginning of the end for her and Alex. Pondering the incident the next day, she apologizes to Alex for her behaviour, telling him she does not care what other people think of their relationship. Alex responds, “After it starts happening to you every day of your life, you will care.”
The Stories Continue Retired from her career at the university, Bowen continues to write the Joann Kilbourn series. Since retirement, she has also written a second series of mysteries, centering on the character of Charlie D., who hosts a late night radio show. These four books, which

are darker than the Joanne Kilbourn series, are part of Orca Books’ Rapid Reads, books written at an easy reading level for adults working on literacy. Despite her tremendous success as an author, Bowen remains a highly approachable, down-to-earth person. Her genuine, supportive personality is something she shares with her wellknown protagonist. Aspiring local authors will find her a valuable resource as the current writer-in-residence for the Regina Public Library. Readers will be happy to learn that the manuscript for the 15th book in the Joanne Kilbourn series is currently in the hands of Bowen’s editor. As with her earlier books, 12 Rose Street will no doubt continue to remind readers that life on the Canadian Prairies is anything but dull!

Infusing Food with Passion… and Beer
S
pend a little time with Malcolm Craig, executive chef, and the topic of food is likely to arise. “It’s been my life for 30 years now,” says Craig, whose career began with a dishwashing job at a hotel in Bath, England. “I get passionate about food and talk about food. Once you’re passionate about it, it’s with you for life.” After completing cooking school, Craig opened a bistro in Bath and eventually brought his skills to Canada. Since becoming executive chef of Beer Bros. in 2008, his focus has been on creating innovative cuisine inspired by one essential ingredient: BEER! “I’ll research the region a beer was brewed in, and what kind of food items would be available to the brewers in that area, then try to recreate some aspect into the dinner pairing,” says Craig. “Our philosophy is we like to infuse as much food as possible with beer.” From beer brines and salad dressings to hard cider BBQ pulled pork and ‘Beer’ogies, the Beer Bros.’ menu offers distinctive dishes guaranteed to intrigue adventurous eaters. Along with preparing original cuisine for his clientele, Craig hosts “Brewers Dinners,” inviting beer makers from local areas and beyond to discuss the industry and taste his latest creations. “I love creating dishes, making food look nice,

and being able to present something at a table,” says Craig. “I like to promote the beer and have personal interaction with the brewers.” With food never far from his mind, Craig aims to continually introduce new dishes
to his repertoire. “There’s always room for evolution, for new ideas,” he says. “I could be walking down the street and I’ll think of an ingredient and how I could use it in a dish, and then… I’ll have a three-course meal planned.”
Fish & Chip pie 1 short crust pastry shell 4 inch diameter 1/4 cup minted pea puree 3 pickerel fingers (beer battered) 2 tbsp. tartar sauce 3 Pont Neuf potato (thick-cut fries) 2 fl. oz. baked bean gravy 1/2 fl. oz. Franks Red Hot Xtra Thick 1. Warm the pea puree and baked bean gravy. Fry the Pont Neuf potatoes and the beer battered pickerel fingers. Once all ingredients are hot, begin assembly. 2. On a large plate, ladle the baked bean gravy into a pool ready for a gentle smear. Use the back of a large spoon or the ladle in a gentle stroke motion, making a teardrop shape. 3. Place the pastry shell on the widest end of the sauce and gently press in to the sauce so the shell does not
slip around when placing the rest of ingredients in. 4. Spoon the minted pea puree into the bottom of the pastry shell. 5. Stack the battered pickerel fingers on top of the peas and spoon the tartar sauce over. 6. Top the pie with the 3 Pont Neuf potatoes and drizzle with the Franks Red Hot Xtra Thick. Serve immediately. TIP: For the baked bean gravy you can use any flavour of canned variety or make your own. Add beans to a food blender and blitz for a minute or two; add a little water, chicken stock or beer to stop any over-thickening. Taste and season with salt and pepper if needed and any other desired spices (Worcestershire sauce, BBQ sauce, hot sauce, etc.).

Chef, The Creek in Cathedral Bistro Evoking Emotion with Comfort Cuisine
It’s hard to believe the chef of The Creek — who is a member of the Canadian Culinary Federation and has been slicing, dicing and grilling professionally for nearly 32 years — once swore he would never get into cooking. “It isn’t exactly a family-friendly profession, with the long hours,” says Martin Snow, who has been masterminding The Creek’s cuisine since 2000. Snow’s father was a chef, and though his son didn’t plan to follow in his footsteps, some of his knowledge was inevitably passed down. “I got a job as a dishwasher at a restaurant in Moose Jaw, and they found out I had some knife skills,” says Snow. Trained in culinary arts at Toronto’s George Brown College, Snow takes classical dishes from a variety of cultures and modernizes them. “The days of thick heavy sauces were a long time ago,” he says. “People are more health-conscious now. We look at things and say, how can we make this a lighter dish?” Snow is passionate about using local products when they’re in season, and supporting the community while creating fresh, original dishes. “It’s much easier to get great flavour when it’s closer to home,” he says. For Snow, one of the best uses of flavour is in meals that provide a sense of comfort.
“For a number of years, I’ve been tapping into comfort food, foods that evoke emotion,” he says. “On the menu now we have a port braised short rib with a truffle mac and cheese. I use a lot of braising techniques, pulling in lots of flavour.” Always seeking out new, inventive ways
to prepare food, Snow collaborates with his staff and shares ideas with other local chefs. “Part of what got me into cooking is that I knew there was no way I would ever know it all,” he says. “Collaborative efforts produce better results.”
Cioppino Makes six portions 1/4 cup olive oil 1 rib celery, chopped 1 large green pepper 1 onion, diced 1 can diced tomatoes (28 oz.) 2 cups clam juice 2 cups white wine 4 cloves crushed garlic Juice of 1 lemon 1 teaspoon Worcestershire sauce 1 bay leaf 1 tsp dried basil 1 tsp dried oregano 1/2 tsp red pepper flakes, or to taste Salt & pepper to taste 600g snap and eat crab legs 340g halibut fillet, cut into 1-inch slices 340g cod fillet, cut into 1-inch slices 30 prawns (21/25 count IQF P&D) 30 mussels 1/2 bunch Italian parsley, chopped
1. In a large pot, on medium-low heat, melt the butter with the olive oil and sweat the celery, green peppers and onions until soft, about 10 minutes. Add all the rest of the ingredients except the seafood and fresh parsley. Simmer on low, uncovered, for one hour. Add a splash of white wine if the sauce gets too thick. 2. Add the crab, shrimp, cod and halibut, and simmer covered another five minutes. Add the mussels, cover the pot and simmer for three minutes more, or until the mussels open. Turn off the heat, and stir in the Italian parsley

Don’t mess with it too much. Pour into a parchment-lined-and-greased nineinch spring form pan and bake at 350 F for one hour. Turn the oven off, open the door and let the cake sit until cool. Take the ring off the pan, place on a fancy plate and serve with your favourite crackers. Pretty impressive!

CCC, Executive Chef, Wascana Country Club Classical Training Meets Contemporary Cuisine
Rod Schubert has been creating mouthwatering menus at Wascana Country Club since he became executive chef in 2002, but his passion goes back to childhood. “I first became interested in cooking through my mother, “says Schubert. “We didn’t have a lot of money in our family, so she had to find creative ways to stretch her dollar.” A Certified Chef de Cuisine, Schubert invokes the classical training he received at a culinary program in Dawson Creek, B.C. to devise recipes such as the Mushroom Crusted Bison Tenderloin he is sharing with Fine Lifestyles. “I trained under old school European chefs,” he says. “Working with them inspired me. They were like rock stars to me.” While the upscale casual dining at Wascana features plenty of light fare such as salads and sandwiches — made with local produce as often as possible — one of Schubert’s favourite ingredients to work with is wild rice. He has been featured on a segment of the TV program Farmgate, where he described and demonstrated how to cook with the grain. “It’s very versatile,” says Schubert. “It can be used as a side dish, stuffing or dessert.” Schubert says he continually revamps the cuisine at Wascana to keep it fresh, collaborating with his staff and drawing inspiration from outside the kitchen. “I keep updated on what’s happening with food,” he says. “I try to take advantage
of every opportunity to upgrade my knowledge and skills.” In peak season, Schubert manages up to 17 staff, including interns from culinary programs. “They have to have a passion for what
they’re doing and a strong work ethic,” says Schubert. “In this career, if you’re not passionate about it and don’t enjoy going to work every day, you’re not going to be around for very long.”
MushrooM Crusted bison tenderLoin with GorGonzoLa stuFFinG Four 5-6 oz. bison tenderloin steaks 1 cup finely chopped onion 3 cloves minced garlic 2 tbsp. Camolina oil 1 tbsp. minced fresh rosemary 1 tbsp. minced fresh thyme 4 oz. Gorgonzola cheese 1 oz. sundried cranberries 1 oz. dried mixed wild mushrooms, coarsely chopped 1 tbsp. Dijon mustard Salt and cracked pepper to taste 1. Combine onion, garlic and 1 tbsp. of the Camolina oil in a sauté pan. Cook on low heat until soft and lightly browned. Add rosemary and thyme, cook another minute. Cool completely, add cheese and cranberries. 2. With a sharp thin bladed knife, cut a pocket in each tenderloin. Press an equal amount of the cheese mixture into each pocket. 3. Season each portion with salt and pepper and brush with Dijon
mustard, top and bottom. Press each portion into the dried mushrooms, top and bottom. Cover with plastic wrap and refrigerate for at least 2 hours. 4. Sear the steaks in a medium-hot pan with the remaining oil. Remove, place in a roasting pan and finish in a 400 F oven. 10-12 minutes for medium rare. sauCe 1 tbsp. Camolina oil 1 small onion 4 cloves of garlic 1 cup dry red wine 1 cup rich beef stock 1 tbsp. cold butter 1. In the same pan used to sear the bison add the oil, onion and garlic. Sauté until slightly colored. Add the red wine and reduce by half. Add the beef stock and reduce again by half. Season to taste. Whisk in butter and serve.

rom June 27 to 30, heavy rainfall overtook the southeast region of Saskatchewan. Reports indicated some areas received as much as 200 millimetres of rain, but this was only the beginning. The rain continued throughout the month of July, resulting in even more flooding damage. According to Tim Johnson, public affairs and development coordinator for the Canadian Red Cross, about 150 communities declared a state of emergency. Families, farms and businesses were devastated by the overwhelming effect of flooding in their communities. The personal and business losses have been shattering to many Saskatchewan residents. “About 540 people were forced to flee their homes,” comments Johnson. The Canadian Red Cross moves in during disasters, providing basic needs for the affected families such as accommodations, food, toiletries, clothing and toys for the children. “Assistance is provided on a case-by-case basis,” he adds. Seeing a need, many generous and dedicated Saskatchewan country music artists and the fine people of our province stepped up to offer support and assistance.

Taking place in Saskatoon, Yorkton and Regina between July 10 and 23, each concert included Jay Semko of Northern Pikes’ fame and three-time Canadian Country Music Association nominee, Codie Prevost. They were joined by several of this year’s Saskatchewan Country Music Association (SCMA) award winners, including Female Vocalist of the Year, Jess Moskaluke; Song of the Year award winner, Chris Henderson; Roots Artist of the Year, Eli Barsi; Country Music Person of the Year, Stephen Maguire; and Rising Star award winner, The Midnight Roses.

Johnson is grateful to all the participants and attendees for their generous donations. “The response from the public has been absolutely amazing,” says Johnson. He recognizes Maguire’s motivation and his organizing efforts. “It’s so cool to have someone like him involved. Stephen is an incredible guy to put these events on at a moment’s notice.”
Along with 2013’s Next Big Thing winner, Alex Runions, past SCMA award winners, Blake Berglund, JJ Voss and Samara Yung rounded out the impressive lineup. “It was an honour to be involved in the concerts. I was happy to participate with all the other amazing artists,” states Yorkton’s Samara Yung.
“Everybody wants to help out, but don’t know how to do it,” says Maguire, “The concerts gave people the opportunity to be involved.” He adds this can be just the beginning; many people have great ideas for fundraising in their own communities to help out. “There are plenty of concert halls and theatres around the province. It’s not that hard to get your community involved by putting on dinner theatres, concerts, plays, steak nights or whatever you can think of. Everything helps and it never too late to do something.”

he weather encountered during a Canadian January is often less than balmy! Indeed, this may be why so many Canadians are found aboard cruise ships sailing exotic lands, enjoying the warm weather of the tropics. I for one will be soaking up the sun from January 16 to February 3, 2015 aboard yet another exotic adventure with Oceania Cruise Line’s beautiful Regatta.
As the enrichment lecturer aboard, my responsibility is to enhance the already spectacular 18-day itinerary with itineraryspecific regular presentations, related to plants and peoples of the regions we visit. This voyage originates in Miami and meanders along the coast of Central America to the famed Panama Canal
through which we have a daylight transit — spectacular! Roughly halfway through the itinerary, we will sail along the Pacific coast of Ecuador for several days until we reach neighbouring Peru. Docking in Lima for two days allows for an expedition to the famed site of Machu Picchu. Oceania regularly offers itineraries that include airfare as well as many of the “a la carte” options one would pay extra for on other lines. One example is dining options in the specialty restaurants, Toscana and the Polo Grill, requiring only a reservation and no additional fee. Actually, on a previous cruise we received a note from the concierge with reservations already made for us as we just hadn’t had time to make them ourselves. The Toscana experience was exemplary but not over-the-top fancy. We felt extremely welcome and very comfortable dressed in country club casual attire — no tie for me and most men weren’t wearing jackets.

If you like to dress a bit more “uptown,” that is perfectly fine too, and you do see some passengers who indeed dress. I often slide a jacket on simply because it hides a multitude of sins (and my tummy) after several days of cruise food. On occasion, we are invited to a “Captain’s Reception” and we do dress appropriately, including a tie and jacket for me and a dressy outfit for my wife. This affair typically happens once on an itinerary — very impressive events indeed. Oceania is very much a family, and that attitude and respect comes across in everything a guest experiences, including special functions with senior officers. Recently, on an Amazon expedition, the cruise director made a point of chatting with every individual sitting on the pool deck and addressed most by first name. This level of dedication and incredible customer service is a hallmark of Oceania and not to be underestimated. Never

have I felt any crew member was just being courteous out of obligation; their approach was always genuine. This sincerity was not applied specifically to me because of my position as speaker; it was standard and consistently remarked on by others. As a matter of fact, on our Amazon expedition more than 60 per cent of the passengers were repeat guests - that speaks volumes. Ask anyone who has sailed Oceania, and I submit the response will be similar. This itinerary aboard the beautifully refurbished Regatta is very popular; actually many categories are waitlisted. Almost all areas of the facility have either synthetic ice or rubber matting so players can go anywhere in their skates. Co-owners, Todd Liskowich and Dale Derkatch, current director of player personnel for the Prince Albert Raiders of the WHL, scouted Bantam and Midget hockey players together for years throughout Western Canada and the U.S. “We realized these facilities existed in other areas,” says Liskowich, “but there wasn’t one in Regina. That’s how the idea to open Peak Performance this January came about. We spent three years researching and deciding what the best situation would be for our local kids and community.” Peak Performance works with players of all skill levels and ages. “We’ve had some very young children in learn-to-skate programs and we’ve had professional players,” says Derkatch. “Our biggest group are boys and girls, ages seven to 16.” Owners Liskowich, Derkatch and Tony Vogel have coached at various levels, but find coaching at Peak Performance very fulfilling. “We’re giving the players one-on-one time with direct feedback and kids are walking out happy,” says Liskowich. “It has a very positive effect on them and it’s a fun environment. Kids are coming here because they want to be here. They’re not under any pressure and it’s a great opportunity to work with an individual, small group or team, and see them gain some confidence and have some attention given to them as well.” Nicolson says, “We’ll definitely book more sessions for our son on the treadmill and look forward to using the other equipment Peak Performance offers. tudies show when parents are involved in their children’s education, the children perform better overall in school. However, it can be tough to know where to draw the line between supporting a child’s learning and actually doing the child’s work. Occasionally rolling up the sleeves is a great way to show children that education is important, and that as a family, you place a high value on academic effort and success. However, it’s also important to let children experience the highs and the lows of learning — and the effort that is often required — on their own. While most kids need a little support from Mom and Dad from time to time, it’s important to remember that, ultimately,

When it comes to homework help and school support, the ultimate role of parents is to establish the rules and routines that help children develop good habits at home. If kids run into problems while doing their homework, the role of the parent becomes to identify the problem, monitor the stress and frustration, and help their child find solutions. Parents can help provide homework structure and support in the following ways: DESIGNATE A HOMEWORK AREA Pick one area of the house to be the homework zone. This is an area with no distractions dedicated to doing homework, and where all the necessary support materials such as paper, pens, crayons and dictionaries are available. REMOVE DISTRACTIONS Unless it’s needed to complete the work, shut the technology off during homework time. A lot of time is wasted sending texts and checking social media. SET A TIME FRAME There are general guidelines to how long homework should take. A rough estimate is 10 minutes per grade. By Grade 6, students should have about an hour a night. This will vary, but paying attention to how long homework takes each night gives parents
an idea of how well their child is coping with the workload. OFFER PRAISE Be specific, and be sure to praise their efforts and hard work, not their intelligence. Kids will appreciate their efforts are not going unrecognized, and you’ll help bolster their confidence. LOOK IT UP Don’t worry about not knowing the answers. Instead, encourage your child to think actively about solutions by looking at previous examples, or rereading the textbook. If you need to, find an instructional educational site that can teach you both the lesson so you can work through it together. WATCH FRUSTRATION LEVELS Most importantly, if your child is feeling stressed by homework or just can’t master the concepts, then it’s time to intervene. As long as your child has tried his or her best, it’s okay to say, “That’s enough for tonight.” Getting homework done is a routine part of school, but it shouldn’t be the worst part. Tell us about your first real estate investment.
M
y husband and I had taken some real estate classes and were looking to make a real estate investment. We had made a few offers, but we were scared and worried and not sure how it would work. We backed out of a few of them. Eventually, a realtor wanted to show us apartments that had been converted to condos. We had a look, and it happened to be the condo my daughter was renting! She had only been there a few months, but had been talking to the next door neighbours. They’d been living there for 17 years. I asked if the apartment next door was for sale too. The realtor said, “yes,” and I responded, “We’ll take those two side-by-side.” We didn’t really know much about tenanting buildings, but we thought we’d have two perfect tenants. After we took possession, our daughter’s neighbours were kicking themselves for not buying their own unit years ago. They ended up buying in the same complex within six months and we lost them as

tenants, but we knew more by then and we weren’t so worried anymore. We had another renter within days and were able to increase the rent by a couple hundred dollars right away. How large have you grown your portfolio in the last seven years? We have 302 doors right now. If we have an 18-unit building, for example, that counts as 18 doors. Did you do it without spending any of your own money? For the first investments, we took equity out of our own home. But very quickly, within a year, we were able to start using other people’s money because we learned how. We bought one more property with our own money by taking equity from the first two properties and buying the third. Now, we put in our own money if we’re short, but we usually use other people’s money. And when I say we use other people’s money, it means we provide huge value for the use of their money, usually in the way of ownership
in the property. This investment provides them with cash flow, mortgage paydown and equity appreciation — what we call an armchair investment. We do all the work and the investor/partner provides the money — a joint venture partnership. What’s your secret? We do the management and don’t put any money in. I provide my expertise and time and I find the real estate. I build relationships with people who are selling. In our area, very seldom do you see apartment buildings listed through a realtor. We build relationships with each other and go back and forth as opposed to getting things on the market. Right now, the last four apartment buildings we bought and the one we’re working on now, are all from the same person. He is a bigger player who pays cash and gets really good deals. The last few buildings we bought needed some work. He didn’t have the team to do the work in our area. We bought an 18-unit property from him a year ago non-optimized and they are buying it back from us fully optimized. We made a great rate of return for our four investors who will each get approximately 20 per cent return on their investment in 14 months. I’m looking to invest. Do you have any suggestions or recommendations for me? First of all, you need to be comfortable investing $100,000 for five to seven years. Sometimes it takes that long to get your principal back. You can take classes
outside the province, like we did or you can do it right here in your local market with us. You’ll meet like-minded people who are trying to do the same thing and you’ll find support and encouragement. It’s nicer working together as a group as opposed to trying to do everything yourself. Everybody has their own strengths they bring to the team, be it number-crunching, negotiating or bringing money to the deal. Do you have any properties for me? It depends. We’re going to finalize a 24unit building within a month or so. This one’s pretty much at top value now, but we have six investors waiting on a list to get into that one. The next one will be a 36-unit building in Saskatoon. We always have people who are waiting to invest, so it might take four to six months for people to be included in a project. The seller is the same person and comes to us first because he knows we can close on these properties. You’re a recently published author. Tell us about your book, Multiple Ways to Wealth. My book came out in December 2013. I wrote it because people kept asking me how they could do what I’ve done. When the book came out, they read it and said, “It makes sense, but I don’t think I could do that by myself.” They wanted to know how they could build multiple streams of income and that’s how I developed my coaching program.

American inventor, Oliver Evans, developed the first known self-propelled amphibious vehicle called the Orukter Amphibolos in 1805 — although it’s since been disputed whether it successfully travelled over land and water under its own steam. Fast-forward more than 200 years and there’s not much to be disputed now. Amphibious bicycles, ATVs, cars, buses, trucks, military vehicles and hovercrafts can be seen cruising through deserts, gliding over lakes and sometimes even submerging under water.
W
hen you think of amphibious vehicles like, for example, hovercrafts, The Jetsons theme song may play in the back of your mind alongside a futuristic blinking sound. However, while George Jetson’s amphibious vehicle can fly through space, the ones currently being developed and used are a little more down to earth.
One of the most successful forays into the development of amphibious vehicles is California-based WaterCar, which established itself as a company to watch in 1999 for developing and marketing amphibious vehicles. “Growing up in southern California I was always involved in this kind of industry,” says WaterCar founder, Dave March. “We looked at the Second World War amphibious vehicles, which were real slow and realized we could do something better. We saw an opportunity.” For March, what started out as a personal challenge to build the world’s fastest amphibious vehicle, turned into a successful and exciting career. “We weren’t really sure whether people would be interested in what we were doing,” says March. “No one has been very successful in the past, but once we started, people were really receptive to it.”
March says when they began developing their first model, millionaires from around the world continuously approached WaterCar looking to purchase their own amphibious vehicle. March has even taken a deposit from the Prince of Dubai. “We became overwhelmed by the reception,” he says. “We were doing it more for fun than anything else.” However, March stresses that attaining a level of reliability and maintainability that was consistent with WaterCar’s standards and those of its prospective buyers was of the utmost priority. “Our team was adamant that we wouldn’t sell a product that we wouldn’t purchase ourselves,” says March. After 14 years filled with successes and failures, it was in 2013 that the amphibious model, Panther, achieved the quality, reliability and maintainability March was looking for. “Each Panther is a custom-built vehicle,” says March. In January 2010, March broke the Guinness amphibious speed record with WaterCar’s Python model. “I was driving,” recalls March, “and I was both excited and concerned because no one had ever gone that fast. We used a tremendous amount of caution.” March says the Python model reached speeds from 150 to 200 mph and looking back, he says, “I eventually became comfortable with the high speeds because once you get out there, it’s really cool. I can’t express what it’s like every time you drive one of these models.”

WaterCar broke new ground when it came to developing amphibious vehicles. It boasts a dozen different models that can go off-road, above water and even cruise down the highway. Models like the Turnkey Minus, which is a Panther package and includes everything you need to cover for land and water, is one of those vehicles. According to WaterCar’s website, all one has to supply is a new, rebuilt or a used Honda 3.5 or 3.7 V-TEC Engine and a 091 VW bus Transmission, along with your choice of custom paint and design. March says companies often reach out to WaterCar to market their brands in a unique way to pique consumers’ interest. “It’s definitely unusual, but it’s a great marketing piece of interest.” While the military has used amphibious vehicles for years, it’s become more of a fun and exciting luxury novelty for those closer to a large mass of water. “Our models can keep up with other boats in the water,” says March. “You can even go water-skiing.” WaterCar’s Python model (a price tag of $200,000) used to break the Guinness record, reaches speeds of up to 60 mph in the water with a Dominator Jet and Corvette engine. March says he was surprised by the various ways clients used their models. “It’s been used in many ways we hadn’t even envisioned,” he says. “It’s very convenient for people who have an island and use it to travel to and from, as well as on land.” Many clients also carry the models on their yachts when they encounter ports with restricted access. For those looking into purchasing an amphibious vehicle, the Panther is currently offered in three states of completion: Rolling Chassis, Turnkey Minus and Complete Custom. Brian Martynook, Moose Jaw Chamber of Commerce CEO, is excited about the city’s growth and development. Since 2012, more than 500 new business licenses have been issued within Moose Jaw and district. New hotels and restaurants, along with events such as the 2015 Scotties Tournament of Hearts, are attracting visitors and offering new employment opportunities. The results speak for themselves. Martynook says in the last two years, the population of Moose Jaw has increased by two per cent each year. “The demographic of the city is changing; we are drawing more young families,” he adds. With a wide range of amenities including schools, medical clinics, big-box stores, specialty niche stores, SIAST Palliser campus and more, Moose Jaw is a city for everyone. Every fall, shoppers converge from far and wide to kick off the season at Moose Jaw’s unique “Christmas in October” event. The entire city gets involved with decorations and lights, special displays and merchandise. This year’s event runs from October 23 to 26. A Healthy Vibrant Community A two-year citywide initiative was kicked off in January 2014 to make a difference in the health and well-being of Moose Jaw residents. Says Dr. Mark Lemstra of Alliance Wellness: “The Healthy Weights Initiative is designed to help residents shed pounds and keep them off.” So far, 81 per cent of initial participants have completed the program.
