Another special story in this issue is the recent Bocuse d’Or fundraiser hosted by the Regina branch of the Canadian Culinary Federation (CCFCC). Pegged as the world’s premier culinary competition, Bocuse d’Or requires months and years of intense preparation by chefs who take on the challenge. In their desire to support Canada’s team heading to Lyon, France in winter 2015, Regina chefs presented a memorable afternoon of the best in food and drink on a sunny Sunday in September. It was an honour to be there.

Allure of Gemstones

arilyn Monroe famously sang Diamonds Are A Girl’s Best Friend, but it was only in the 1930s that De Beers began an aggressive marketing campaign to increase the stone’s popularity. With crystal clear white diamonds flooding the market, many people are turning to uniquely coloured diamonds and precious gemstones to create pieces as unique as their wearers. Ruby Traditionally known as July’s birthstone, this crimson beauty has been mined in Myanmar since 600 AD. More recently, rubies have been discovered in Madagascar and under the receding glaciers of Greenland, yielding stones of astounding sizes. For centuries, the gem has been associated with strength, royalty and wealth. Rubies larger than five carats are so rare and prized that the most expensive ruby ever sold went for more than $3.6 million in 2006, greatly overshadowing white diamond prices at $425,000 a carat.

Rubies have also been the traditional choice of royalty. Sarah Duchess of York received a Burmese ruby engagement ring and Queen Elizabeth II’s ruby tiara incorporates 96 stones, given to her by the Burmese people for her wedding in 1947. The precious gemstone ranges in colour from blood red and pink to pigeon’s blood — which is the most valuable and features a blue tone. The crimson colour of this stone symbolizes undying passion and courage, the perfect gift for any man or woman. sapphiRE Historically worn by royalty as a symbol of good fortune, virtue and wisdom, this September birthstone is most known for its dark blue colour. However, the stones can also be found in orange, purple, green and an almost coral pink colour called Padparadscha (lotus flower), which is the most valuable. In 1997, the world’s largest sapphire, at more than 61,000-carats, was discovered in Madagascar. Named the Millennium Sapphire, it is currently valued at $180 million. The stone was carved featuring the evolution of human history, with representations of historic figures like Christopher Columbus, Mozart, Newton, Shakespeare and Albert Einstein. Legendary beauty Helen of Troy was reputed to draw her power from a large star sapphire and Jean Harlow and

Elizabeth Taylor both collected the stones. More recently, sapphires made headlines due to Kate Middleton’s stunning 18-carat engagement ring, securing Prince William’s wife as a fashion plate the world round. Often associated with stability, sapphires are the perfect centrepiece to a modern setting. EmERalds Mined in Egypt since 1500 BC, emeralds were used to great effect by Cleopatra to emphasize and solidify her royal status. Unlike diamonds, there is no such thing as a flawless emerald; each stone has its own inclusions that make it one-of-a-kind and allow gemologists to trace the stone back to its original mine. The gemstone can be found around the world and was even discovered in the Yukon in 1997, for those looking for a uniquely Canadian piece. Depending on where emeralds are harvested, they

can range in colour from a deep green to a misty mint. Often noted as the May birthstone, the subtle glow of the emerald wowed Spanish conquistadores. Emeralds feature prominently in the world’s most expensive tiara. At 500 carats, the headpiece sold for more than $14 million at Sotheby’s. Recently, the stone has graced the red carpet on celebrities including Angelina Jolie, Victoria Beckham and Uma Thurman. Encapsulating enduring love, luck and intelligence, the emerald is the ultimate statement piece for a truly unique person. Whether you have that perfect engagement ring, an heirloom statement piece or a small token of affection in mind, the beauty and symbolism of precious stones have entranced people for centuries. With rubies, sapphires and emeralds, jewelry can go from ordinary to extraordinary.

The Journey to

ABUNDANCE

By Sarah Vermette

“The first wealth is health.” Ralph Waldo Emerson

T

here is an old adage that says we can’t know where we’re going unless we know where we’ve been. Allison Bachmeier, an advanced BodyTalk practitioner and instructor, agrees. Her course, Money, Wealth and Valuing Yourself, allows people to explore how their concept of self-worth ties into their current state of wealth. That is, wealth on all levels; financial, physical and emotional. “Our state of financial health is a very clear mirror to how we relate to ourselves,” says Bachmeier. If we are in financial debt, we can see our situation as a clear metaphor for lack in deeper, more personal aspects of ourselves. In this vein, those struggling with finances might benefit more from exploring the concept of self worth, rather than looking directly at finances. “When finances are lacking, the deeper question

16

FineLifestyles

Regina

is what is limiting you,” says Bachmeier who recommends spending time revisiting your past. For starters, explore how your parents dealt with money and spoke about money. “We often hear in society money is the root of all evil. That translates to the feeling there’s something dirty about having money,” says Bachmeier. If we take on this, or similar, beliefs our ability to receive money is greatly limited. “Our belief systems, our thought patterns, our attitude and our personality affect all aspects of our life, and we see it very clearly in our state of financial health,” says Bachmeier. Her online 40-day course offers daily exercises in selfexplorations, allowing participants to see where their limitations are coming from, and how to address them, in order to move into a better state of awareness and overall abundance.

Stressed Over Finding that Perfect Gift?

or many of us, there’s a point during the Christmas rush when we feel overwhelmed looking at our list of loved ones. You know you want to find the perfect gift for everyone, but where to start? Seeking out different shops and items for multiple people can be challenging in the midst of a busy schedule. En Vogue Day Spa, a popular Regina spa that is leading the industry in standards and services, has the Christmas list solution: a selection of spa gift certificates available online, with options for women,

tweens and teens, and even the guys. That’s right — En Vogue Day Spa owner Patricia Cassell-Ogilvie says boyfriends, husbands, brothers and dads surprise themselves by how much they enjoy the gift of a spa service. For the men on your list, the Heavenly Stone Massage is an excellent choice, with heated basalt stones that soothe stiff muscles. Also popular is the Tune Up Back Treatment, a deep-cleanse facial for the back. Does he need a little extra care for his feet? En Vogue’s Peak Performance

Luxury Foot Treatment consists of a Corona Beer soak — known for intensive cleaning and deodorizing — as well as exfoliation and a lower leg and foot massage. Tweens (ages three to 10) can enjoy Cotton Candy Manis and Pedis with Piggy Paint Natural Nail Polish, a water-based, eco-friendly nail polish for girls and boys. Hands and feet are soaked in cotton-candy scented baths, and each pointer finger or big toe is finished with a decal or rhinestone on top of polish.

En Vogue also features several treatments for teens, including eyebrow shaping, facials and Makeup 101, an application and lesson. Patricia says spending time with your tween or teen at the spa is a great way to connect. “It’s a time to listen to each other and relax together,” she says.

“En Vogue is taking a fresh approach to the spa experience,” says Patricia, “with a focus on helping clients reconnect with the special people in their lives.”

Of course, a wide variety of En Vogue treatments are available for women, whether it’s your wife, mom, daughter or sister. Choose from massage, facials, body wraps and hand and foot therapy. Couples’ treatments — which Patricia emphasizes are not only for significant others, but can be anyone from two friends to a mother and daughter — include options such as side-by-side facials and Body Coffee® Spa Pedicures, combining the gift of a treatment with time together. Is someone on your gift list expecting a baby? Also available is massage with specially designed pillows to keep a pregnant mother comfortable. The I Can’t See My Feet pedicure includes a whirlpool foot bath and hand and arm massage. En Vogue spa gifts make shopping easy. You can order gift certificates online in a variety of formats (changing the look for each person you’re buying for), in either a dollar amount or for a specific treatment, personalizing it with your message. Integrative Oncology: Infusing Cancer with

Hope and Wellbeing By Dr. Laura Stark, B. Kin., ND Doctor of Naturopathic Medicine

A

s a naturopathic doctor with a focus in integrative oncology, I am uniquely skilled to serve as the centre of your cancer care “circle.” I will help you navigate your options and integrate the care offered to you by your surgical oncologist (specialist in cancer surgery), medical oncologist (specialist in chemotherapy treatment), and radiation oncologist (specialist in radiation treatment). My expertise provides the missing piece in conventional oncology — providing you the treatment to allow your body to return to a state of health and wellbeing. Although the approach of integrative oncology is always individualized whole-person care, there are three broad categories of integrative cancer treatment to consider:

Managing side effects of conventional chemotherapy and radiation treatments is critical to maintaining quality of life throughout treatment. Using evidencebased naturopathic interventions (supplemental nutrition and botanical medicines) can not only safely manage side effects, but greatly improve the effectiveness of chemotherapy and radiation. Cancer-targeting alternative therapies can be appropriately used along with or during breaks from conventional treatments. Most of the advanced therapies offered at integrative cancer clinics in Europe and Mexico are also accessible right here at home. Mistletoe injection therapy, intravenous high-dose vitamin C and other IV nutrients and botanicals, targeted hyperthermia, and individualized dietary and supplement advice are raising the standards of cancer care.

Restoring health by treating the person with the cancer diagnosis is the critical difference offered by integrative oncology. Priority is placed on identifying and resolving the root causes of cancer growth which may include toxicity, chronic infection, stress, weak immune function, hormonal imbalance, chronic inflammation or emotional trauma. Good old-fashioned naturopathic care seeks to return the body to a state wellbeing and prevent cancer recurrence. When we shift our focus onto creating health rather than fighting disease we create hope instead of fear. We can address root causes, treat the whole person — body, mind and spirit — and create vitality through and beyond cancer.

anuary is the month of good intentions and resolutions! For high school students, it also means end-of-semester final exams. Some high school students have never had to prepare for comprehensive exams, while others think just reading over their class notes will be enough. A positive focus, good planning and lots of prep time will help ease the stress that often accompanies exam time. Preparing for and writing tests and exams does not have to be stressful. Good study habits practiced throughout the semester will help students comprehend concepts they can apply to any question. Learning how to study, organize time and use resources will help lessen test anxiety. Setting a goal for the final mark at the beginning of the term and working towards that goal will help students stay focused on the eventual outcome.

Showing up for class and taking organized notes during the class is half the battle. When you don’t understand something, ask for clarification. CreaTe STudy noTeS Creating study notes helps solidify the day’s lessons. When reading over notes, write down all the subject headings, subheadings and bolded words. This will help provide a clear picture of the material. Plus, the physical act of holding the pen and writing makes study time active rather than passive and leads to greater retention. uSe an agenda Students’ No. 1 study tool is their agenda. For an agenda to be effective, you have to remember to use it. That means bringing the agenda to every class, and entering homework, projects, tests and assignments in the agenda as soon as they are assigned. Have a deSignaTed STudy area Whether it is the kitchen table or a desk in a bedroom, establish an area to study that is a designated study zone. brain are not yet fully developed. These are formed during the “critical period,” which studies have shown is between six and nine years old. Anything that interferes with a clear image falling in one or both eyes during this “critical period” can result in amblyopia. Common causes of amblyopia includes strabismus (an eye turn), a significant difference in prescription between the two eyes or a high astigmatism in one or both eyes. Less common causes include congenital diseases of the eye such as cataracts.

A

When a condition, such as an eye turn, results in one eye not receiving a proper image, the optic nerve fibres in the affected eye fail to develop the pathways to the visual cortex in the brain. The space in the visual cortex is taken over by fibres from the other eye. This results in the turned eye becoming amblyopic, meaning the eye cannot see 20/20. If this condition persists or goes untreated beyond the “critical period,” it becomes permanent. The good news is the vast majority of cases of amblyopia are completely treatable if dealt with before the “critical period.” Thus, permanent vision loss from amblyopia is almost always preventable. Treatment of amblyopia

can take on various forms, but the first step is to always correct the problem causing the eye to receive an improper image. In the case of high astigmatism or a significant difference in prescription between the eyes, glasses are prescribed. In some cases, if done early enough, the glasses alone can correct the amblyopia. However, in more severe cases or those not discovered until the child is older, glasses may not be enough to fully correct the amblyopia. In these situations, the good eye is patched to make the amblyopic eye do the work; this forces the eye to develop these missing pathways and, in most cases, the child can regain most or all of the lost vision. THE TAKE-HOME MESSAGE: this condition is almost completely treatable and vision loss is almost always preventable — if your child is diagnosed and treated early enough. The easiest way to ensure this happens is to follow the Canadian Association of Optometrists recommendations for children’s eye exams. Your child should have their first eye exam by age of six months, and annually thereafter. This will allow the earliest possible diagnosis and treatment. Get your child’s eyes examined today! The optometrists at Advance Eye Care Center are accepting new patients. To book your exam, call 306.586.7036.

My feet and heels are in extremely bad shape. What can I do to prevent this and what type of treatments and home care are needed? — Courtney Saliken

Dry, rough feet and heels are actually a very common concern. For best results, I would suggest getting a pedicure every six to eight weeks by a professional pedicure technician in a clean and sanitary environment. If your budget does not permit for professional pedicures, I would suggest purchasing a foot file or paddle (approximately $5 to $15). Once a week, soak the feet and use the paddle on callused areas afterwards. Filing any more frequently could actually increase callus build-up. Apply a foot cream immediately after filing and continue applying nightly to maintain the best results. My favourites are: Gehwol MedSalve for cracked heels ($20), Gehwol Callus Cream ($21) or Gehwol Blue for dry rough feet ($17). My pre-teen wants to start wearing makeup. What should we mothers do so our daughters don’t stumble through like we did when we first started, wearing blue eyeliner and pink lipstick? I was thinking of booking her an appointment with a professional makeup artist. Can you advise? — Angela Jennings Simmons I think it’s really important to advise our daughters that beauty comes from within first and that makeup is designed only to enhance that beauty. When it comes to cosmetics and beauty products, I believe it’s very important to first understand that the secret to looking beautiful is healthy skin. I suggest starting your

daughter on a healthy skin care program, available from any skin care professional, and teaching her the key to beautiful makeup is looking natural. Begin with a few basic items that help enhance her true beauty, like mascara, light powder and a subtle lip gloss. Scheduling her with a makeup artist is a fabulous idea as she will be given suggestions and taught to apply makeup properly. What is up with getting acne in your 30s? What’s the best product to prevent and/or treat it? — Marie Schultz Those pesky breakouts don’t necessarily end when we pass the teen years! There can be many reasons as to why an adult may break out or be dealing with acne. It could be caused by the cosmetics or products being used on the skin, or be related to allergies, stress, diet or hormonal changes. To best determine exactly what is causing the breakouts and to be able to properly remedy these concerns, I suggest scheduling a consultation with a skin care professional. You may need to make changes to your diet or skin care regime, use a specific facial treatment or be referred to a dermatologist for severe cases. T

hat favourite Shakespearean comedy, Much Ado About Nothing, kicked off Globe Theatre’s 2014-15 season. Directed by Marti Maraden, the charming play delighted audiences with the best of this great playwright. Among the cast were fresh young actors who have completed the Globe Theatre Conservatory Program. This thorough 16week development program emphasizes acting, movement, voice training and text analysis — taught by some of the most respected theatre professionals in Canada. Upon completion, participants are given priority when auditioning for a role in a Globe Theatre production for the upcoming season.

Three cast members shared their thoughts about the program with Fine Lifestyles.

Nathan Pylypuk (Don John) Pylypuk originally approached drama with the idea of being a playwright, but fell in love with acting after taking a few drama classes. “The experience [of the Conservatory Program] has really affected me in a positive way. It’s helped me as a writer and an actor and has really assisted me with character development.”

Devin Wesnoski (Balthasar, Hugh Oatcake) Devin Wesnoski’s love for theatre started at a young age. He found the Conservatory Program to be an experience that will help carry him through his career. “The Globe

brings in teachers from all over Canada, which really offers pools of immeasurable knowledge for a young actor like me.”

Josh Ramsden (Benedick) Considering himself a fortunate young artist, Ramsden enjoyed being totally immersed in the Conservatory Program. “I had heard lots of great things about the program and how it challenges actors. One of the biggest things I walked away with was: ‘Did you do the performance to the best of your ability?’ ” We are sure to see more of these young upcoming actors. Visit www.globetheatrelive.com.

A Little Bit of Italian in

egina’s East Side Mario’s has a whole new look, thanks to an extensive renovation that saw the 11-year-old restaurant close for two weeks this past September. Owner Scott Hischebett says the new interior features six additional booths and 11 tables that can comfortably sit more than four. “We kept some of the traditional elements, but gave the restaurant a more open, family-friendly layout,” says Hischebett. “Now we can serve more families and groups who come here to dine.” While the original design gave more of a New York feel, the new East Side Mario’s is more Little Italy. “There’s a lot more colour and, like we say, a little bit of Italian in every bite,” Hischebett adds. Televisions have been added to view from every seat, and Hischebett is pleased

customers can now enjoy the enriched energy and a great atmosphere. During the restaurant’s closure, both kitchen and wait staff underwent an intensive training program to ensure standards and service at East Side Mario’s are the best they can be. “The staff are very excited about the restaurant’s new look,” says Hischebett, “and customers are raving about it.” Stop in soon and bring the family. Regina Chefs Support Canada’s Team for 2015

Bocuse d’or By Sherry Lee Photos DeAnne Bell

Bocuse d’Or — two words that signify the most prestigious culinary competition in the world. Every two years, chefs from 24 countries gather in Lyon, France to show their talent and compete in front of thousands of cheering visitors from around the world. The spectacular two-day event occurs in conjunction with SIRHA, the International Hotel Catering and Food Trade Exhibition.

28

L

egendary French chef Paul Bocuse and Albert Romain, organizer of the trade exhibition, founded Bocuse d’Or in 1987. They envisioned a competition showcasing the greatest chefs in the world at work in front of an international audience.

Road to the Bocuse d’Or Chefs who reach this pinnacle event go through a gruelling process, including winning a qualifying competition in their own country. Chef Laurent Goudbout of Montreal, Quebec topped the most recent Canadian competition in November 2013. “I started competitions in 1987,” said Goudbout, during his September visit to Regina. “During my career, I did more than 100 competitions all over the world. After some prompting, Goudbout flew to Lyon in 2013 to check out Bocuse d’Or. “From that time, I just started to practice. I’ve just prepared from there. It’s a lot of work.” In addition to operating two establishments, Goudbout’s training had increased to 80 hours a week by late September 2014. “The best chefs in the world are going to be there… they are looking for good food,” he added about the 24 judges — one from each of the competing countries. A critical element of success for Goudbout is his young apprentice, who must be 22 years old or younger. Goubout selected 20-year-old Adam Martin to assist as his commis. “I took a guy already working in my restaurant who knows how I work; we don’t have to speak — we just look at each other and understand.” The chemistry between the two is critical, given the noise level and speed with which they must work during Bocuse d’Or. “We practice with music playing really loud.” The standards and requirements of Bocuse d’Or are not for the faint of heart. Competitors must prepare one meat dish and one fish dish in five-and-a-half hours. Bocuse d’Or Canada manager, Cornelia Volino, said during her Regina stop: “You have to have studied the expectations on the Bocuse d’Or level. When you’re creating a platter, it’s a style of presentation, which is very influenced by the French because they set the standard. You’re also on TV… [they are] watching for true composure, so you can’t slip up. It requires a ‘poker face.’ ”

the Regina branch of the CCFCC hosted a fundraiser on Sunday, September 21, attended by chef delegates from across Canada. CRAVE Kitchen + Wine Bar was transformed to accommodate eight chef stations, unique beverages and a silent auction. The first-class culinary event, which opened with live symphonic music, resulted in the presentation of a $7500 cheque towards chef Goudbout’s team. Chef Donald Gyurkovits, CCFCC national president from Vancouver praised the efforts of the CCFCC Regina branch, thanked all sponsors and presented a recognition plaque to Moxie’s Grill & Bar — Bocuse d’Or Canada title sponsor since 2006.

CCFCC Regina branch president, chef Trent Brears, was equally moved. “Laurent is representing Canada, and we all wear that flag on our chest. We have a bunch of young dynamic chefs in our group. We couldn’t pull off an event like this without them. James [Hanna], sous chef at CRAVE, was the catalyst for this event.” James Hanna’s reaction to the day was pure elation. “We couldn’t have had a better day. I just really wanted a foodforward CCFCC Canadian event held in Regina. I used all my connections from across the country. It’s a huge event for these gentlemen that they personally and physically take on; it’s a drive to perfection and helping to enable that is a great thing.”

Chef Goudbout, who oversaw his own station and mingled extensively among the crowd, was overjoyed. “It’s fantastic all the chefs and people that came to support us. I’m so proud.” Goudbout clearly has his sights set on the international winner’s circle. “You’re never ready enough,” he added. “Every time I practice, I realize I can do something faster or in a different way… save seconds or minutes, every time.” Best of luck, chef Laurent — Regina and Canada are cheering you on! espite the growing attention paid to gluten intolerance in North America, the restaurant scene is only now realizing the importance of educating staff and providing options for people with food allergies. Table 10 Restaurant is leading the trend in Regina and offering excellent fresh upscale dining that caters to dietary restrictions.

FineLifestyles

Regina

Owner Denise Blondeau has been in the industry for 22 years, and after travelling the world, finally settled in Regina to open her restaurant. “The restaurant has been very well received,” she says. “There are a lot of people out there who have trouble finding somewhere to dine because many restaurants are still not very knowledgeable about the issue. I’ve always noticed the person with dietary restrictions usually

picks the restaurant, because if not, they often are left with very few menu choices to accommodate them.” Not so at Table 10, with a menu that focuses on gluten-friendly dishes, and everything made from scratch to accommodate special requests. Using local ingredients whenever possible, the management and staff at Table 10 are attentive and well-

educated on celiac disease and gluten intolerances. They can work around any other food allergies as well. The Table 10 atmosphere is warm and inviting, and the staff make the extra effort to get to know their guests. They are known for casual fine dining, a wide menu, upscale drinks, and delicious desserts made on the premises. Chef Ricardo Rodriguez from Argentina also offers a taste of Latin America with his famous empanadas, Lamb Carbonada, and even Argentinian desserts including ice cream made in-house with indulgent flavours such as dulce de leche and pink peppercorn. Blondeau says the most important part of her job is making sure that everyone has a great meal and enjoys themselves, ensuring everyone at the table has options. “Working in the industry so long, you notice how hard it can be for people with gluten intolerance or celiac disease to order anything but a salad,” she says. “Seeing how hard it was for them to order a meal or even a drink inspired me to design a menu that doesn’t restrict any guests from enjoying a fantastic meal. Part of my job is making sure Table 10 offers amazing food, a great atmosphere and excellent service for everyone.” Table 10 has recently relocated from the Cathedral area to the east end on Quance Street, where they are one of the only bistro-style restaurants in the area offering a great brunch, lunch or dinner, especially ideal after a long day of shopping. Perfect for any upcoming holiday event, the entire restaurant can be booked for an evening. The chef will create an exclusive three, four or five-course meal catered to the needs of guests. This is perfect not only for office Christmas parties, but for groups of any size for personal or work events throughout the year. HOW

SWEET IT IS

By Mike Tory, The Wine Guy

Nothing tickles a wine lover’s fancy more than the opportunity to enjoy the deep subtleties and fortified fruits of a perfect port or dessert wine, and there is no better time to enjoy these than in the cosiness of warm company on a cold night — preferably after a fine feast and in front of a warm fire!

The Wine Guy’s observations have been featured in Wine Spectator, Food & Wine Magazine, a variety of Sunday supplements and various blogs. He is fully committed to the grape cause.

LIVING SKY WINERY JULIETT CHERRY PORT (SASKATCHEWAN): Strong but elegant. The succulent flavour from the Saskatchewan cherries holds on the palate, while the finish leaves you dreaming of candied fruits and warm fires.

DAUPHIN DE GIRAUD (FRANCE): A classic example of French dessert wine, where ‘Botrytis’ is allowed to affect the grapes before picking. Deeply golden, quince, pear and orange flavours mingle with spiced orange treacle. Clove and cinnamon lingers.

GRAHAM’S 20 YEAR OLD TAWNY PORT (PORTUGAL): Tawny ports are made from red grapes aged in wooden barrels, exposing them to gradual oxidation and evaporation. As a result, they gradually mellow to a goldenbrown colour with a nutty flavour and a medium sweetness drawn from the oak casks. Like all good things, tawny ports will improve with age.

Sarah McLachlan By Trina Annand Photos courtesy of Universal Music

W

ith her new album, Shine On, and recent U.S. and Canadian tours, beloved singer-songwriter Sarah McLachlan is looking to the future with hopeful optimism. “All my albums are postcards of where I am emotionally in my life,” McLachlan tells Fine Lifestyles in an interview just weeks before leaving on her cross-country fall tour. “I tend to tell stories about my own experiences through music. I feel like I have worked really hard to come back to a place where I feel strong and whole again, and Shine On reflects that.” In just a few short years, McLachlan faced a crisis of identity with a divorce, the death of her father, a split from her manager of more than two decades, and a failed reprisal of Lilith Fair. With a near complete collapse of her support system, she released Laws of Illusion in 2010. It was punctuated with the anguish and grief of that period of her life, a stark contrast to Shine On. After the chaotic

38

period of change, the artist has found light at the end of the tunnel and is embracing life with renewed enthusiasm, drinking up every moment. The dedicated mother of two girls — India Ann Sushil, 12, and Taja Summer, seven —McLachlan credits her children for keeping her afloat through the hard times. “My girls are my biggest and most beautiful distractions. I was very lucky to have them when I was fairly established and could take time off to just be a mom. It has opened up my heart exponentially and I get to see the world through their eyes,” says McLachlan. For the vocalist and musician who has sold more than 40 million records, won three Grammys and eight Junos, McLachlan counts her Vancouverbased Sarah McLachlan School of Music among her greatest achievements. The free after-school music program draws droves of youth, sparking their creativity and nurturing a love of music. There are almost 700 kids in the program this year, making a very real change in their lives.

COVER STORY Drawing inspiration from Cat Stevens, Simon and Garfunkle, Willie Nelson, Joni Mitchell and other North American folk music, as well as Gaelic and Irish music, McLachlan has developed a unique sound all her own — a sound she has stayed true to throughout her career. She says there will be no pop or jazz albums in her future just to stay on a Top 10 list. “The best advice I ever got about my career was from Annie Lennox when I opened for her in New York many years ago. She said, ‘Don’t let anyone sway your heart.’ It’s advice I really took to heart,” remembers McLachlan. This year has seen McLachlan’s return to the electric guitar, releasing in her words a more wild side to herself. Being proficient in both guitar and piano also gives the artist the ability to work through songs with different instruments, often creating those coveted breakthrough moments in the writing process. “There are no mathematical equations to finishing a song, it’s different every time. The important thing is to stay open and knowing when to quit.”

“I feel very lucky to have been doing this for 26 years and that people still want to hear my work. There are a lot of ways to view success, I am my own harshest critic and knowing I’ve done my best, worked as hard as I could and was true to myself is important,” says McLachlan. The artist’s eighth studio album, Shine On contains song dedications to McLachlan’s father (Song for My Father and Broken Heart), her daughters (Beautiful Girl) and boyfriend, former NHL player Geoff Courtall (Flesh and Blood), whom she met at a Sarah McLachlan School of Music fundraiser. Shine On also includes a song that was originally about bullying and the

40

FineLifestyles

strength of the female spirit, which later became an ode to education activist Malala Yousafza, who survived a Taliban assassination attempt in 2012. While on tour, McLachlan returns to her childhood home of Halifax, the scene of relentless childhood bullying and her musical awakening. At the tender age of four, McLachlan began learning to play the ukulele and taking voice lessons. “When I was a kid I wanted to be Joan Baez, my mom always had her music playing. I was drawn to beautiful melodies. I loved the feeling music gave me; it lifted me and nourished me. I was always singing for as long as I can remember, it was always in my head,” says McLachlan.

Though writing her own music takes more time (there are often three to seven years between albums), the end product is well worth the wait. It creates a more authentic sound for her fans that she loves to share. “Performing live is a culmination of all the blood, sweat and tears I have shed spending months, if not years, on something. Writing is a very isolated experience, so it’s great to be able to finally share it with people. There is a unique energy that is created playing live.” At 46, the artist has seen a lot of shifts in her life and in the music scene as a whole, but she has stayed true to herself and her sound through it all. Looking forward, McLachlan is planning to make the most out of every second she has. “If I am lucky my life is half over. I have been taking a good look at my life and thinking how I want to live it. I want to do as much as I can, have as much fun as I can, live as much as I can, love as hard as I can and give as much as I can. I want to shine, not just endure, to suck the marrow out of everyday. When you put forth that energy and light you get so much back,” says McLachlan.

THE PERFECT RUN

By Erin Legg

“Adventure is worthwhile in itself.” Amelia Earhart

Y

ou’re at the top of the world. The natural mountainscapes are coated with soft, powdery snow. Long, untouched descents are accompanied by the soundtrack of adrenaline pounding in your ears. You’re exhilarated: this is the adventure you’ve been waiting for. “The first heliski experience is something you will never forget,” says Bruce MacMillan of Mike Wiegele Helicopter Skiing in Blue River, B.C. “The excitement of watching the helicopter flying in to pick you up is what gets the heart rate going, and from there it’s the best skiing experience ever.” Western Canada, and British Columbia in particular, is a hot spot for the sport; the majority of the world’s heliskiing trips take place throughout the Rocky Mountains. MacMillan notes, “The fact that we ski in the lightest, most dense powder snow in possibly the world is something that you can never forget.” It seems unlikely there is anything forgettable about a heliskiing adventure. Experimented in Western Canada in the 60s, the sport grew in commercial tourism across North America and into Europe by the 1980s. “It is the best way to ski – powder snow every run, [you’ll] never ski in another person’s tracks and, of course, no lift lines!” exclaims MacMillan. “What got me hooked? The first run! I can guarantee you will have the same feeling the first time you try it.” “It” involves skiers boarding a helicopter and being flown to fresh terrain (the average ride is just minutes long) where they are dropped off with a skilled guide to experience the best run of their

lives. “We have terrain to suit all levels,” explains MacMillan of Mike Wiegele’s 1.2 million acres of terrain that spans the Cariboo and Monashee mountain ranges. While each heliskiing operation has its own unique prerequisites for skiers, MacMillan says, “If you can ski a blue run, you can come heliskiing with us. This speaks for itself, but coming with some fitness will allow you to enjoy every turn, run and day that you are skiing with us. As long as you show up with the ski attire and boots you are comfortable with for the day, we supply the rest: the latest Atomic and Völkl powder skis and the perfect deep snow boards from Burton. All safety equipment including an avalanche transceiver and backpack are standard.” If the thrill is tempting, but the fear of something going wrong lingers in the back of your mind, let it go. Skier safety is essential to the heliskiing industry and all precautions are taken. The Canadian heliskiing industry is strongly regulated with the highest safety standards in the world. Well-established systems are in place to forecast potential avalanches. “Every decision, every run, all day is based on getting the best and safest powder skiing anywhere in the world,” MacMillan explains. “We use the five-step stability forecasting system developed over 40 years ago, and have two guides, one in front and one in back, in all our 212 groups. [We] are world renowned for setting or exceeding the best, safest practices for skiing safely in the mountains.” MacMillan shares one last final piece of advice for those who are ready for an unforgettable, breathtaking adventure like heliskiing: “Be prepared to endure face shots, perma-grins and fits of childlike excitement!”.

How can a dedicated golf enthusiast indulge in their passion during the winter months? Unless you’re a fulltime “snowbird,” travelling south is only a temporary solution to the issue. First Tee Indoor Golf offers golf lovers the opportunity to enjoy their favourite sport all year long. Keep your golf swing in tune over the winter months by visiting First Tee to practice on a course or even the driving range. Get pointers

and lessons from the golf pros on staff. “Two of our staff members are PGAaccredited,” comments Jim Johnson, coowner/manager. Johnson believes First Tee is the perfect environment for beginners. Each person occupies their own individual simulation booth and can play at his or her own pace. There’s no pressure and no intimidation. No one will ask if they can play through. For those wanting to see what indoor golf is all about, First Tee offers the opportunity to try it free for 15 minutes. “Once you try it, you will love it,” Johnson says. “It’s hard not to have a great time.”

As a completely licensed facility featuring a full menu and bar, guests can also enjoy food and beverages at the table while golfing. This is ideal for those wanting to book a special event such as a birthday party, staff function or Christmas gathering. Johnson points out First Tee also makes a great fundraising venue. Your At-Home

Gallery: a Personal Work of art By Tori Stafford

W

hen it comes to making a house a home, displaying artwork has long since been a means of bringing your own personality and style to your space. However, the how and why of placing pieces on your walls is constantly evolving. Today, perhaps more than ever, creating gallery walls in the home is proving a popular trend, and one that allows homeowners to make a statement while investing in original pieces. Gone are the days of mass-produced prints on every wall, as more people turn to original artwork – and the minds behind these pieces – to seek inspiration, create an esthetically pleasing environment and make a unique space all of their own. Displaying original pieces is something many find both meaningful and rewarding. The key to achieving this in your own home comes down to one word, says gallery owner and curator, Raymond Vos. That word? Connectivity. For Vos, providing a space where local artists can show their work is equally as important as providing a space for locals and tourists to not only take in these works, but also meet and communicate with the artists. This allows his patrons the opportunity to connect – with the pieces themselves, with the local art community, and with the visionaries responsible for the artwork in the gallery. That connection is something more and more people are looking for when purchasing original works, Vos says, and often, those purchasing pieces are interested in the artist behind the work. A great way of being able to connect with the artist is to look into and purchase pieces by local artists. Meeting the artist allows a person to discover the inspiration behind specific pieces, which adds a whole new level to what those pieces mean. “Then, when you see the painting, you’re also seeing the experience behind it,” says Vos. “There’s a sense of depth – it is not just a pretty picture you can get at any Ikea.” Whether you’re looking to fill a wall with a collection of smaller pieces by different artists, or create a focal point with one larger piece that suits the space, in the end, it is all about creating a connection between yourself, the pieces and your space. “It’s really about a place for

he says, such as purchasing a piece each year on your anniversary, or finding a piece on each trip you take to mark that experience. In planning to display your art, simplicity is best – over the last 20 years, there has been a marked shift from large, ornate and gilded frames to simple floating frames. “The simple, clean lines of this type of framing allows the art to speak for itself,” Vos explains. you to express yourself, express your creativity, express what excites you and makes you feel good,” Vos says, noting that, like music, art can stimulate or soothe, as well as make a statement. Choose pieces that appeal to you personally, Vos says, and allow that to guide you. A lot of collectors create a means of adding to their collection that is sentimental,

60

FineLifestyles

Regina

Keeping a theme throughout the pieces you display, such as colour or style, is important for ensuring a connectedness between the pieces of art, Vos advises. A growing trend shows people are opting for larger pieces. While more expensive, they are an ideal means of making a bold statement and filling a wall without creating a cluttered appearance.

And when it comes to seeing the pieces you love in the best light possible, how a room is illuminated is crucial, Vos explains, and can drastically change effect and appearance. Having as much natural light as possible is optimal, with ambient lighting as opposed to focused spotlighting key to letting your artwork shine. Lighting and atmosphere are so important and can have such a large impact on how a piece of art is perceived that Vos almost always insists his clients take pieces home to view in their own environment before purchasing. “When you are purchasing a piece of art, you are choosing to invest your money in that specific piece,” says Vos. “It all comes back to that sense of connectedness – the piece should connect both with the owner, and the atmosphere in which it’s placed.”

Unfortunately, many of these systems are highly complex with numerous different categories thereby canceling out their usefulness. The Colors System was developed by a California junior high teacher for his students. It has only four personality types or Colors (Blue, Gold, Green and Orange) and is easy to learn and employ in everyday life.

Blue are people who are guided by their emotions and intuition. They are generally very compassionate and empathetic. They love to talk and when they ask you how you are feeling, they really want to know. Blue employees are creative, flexible and need to be part of a team. If a Blue employee feels that they are making a difference through the work they are doing, they will feel successful, work harder and remain with that company. Oprah Winfrey and Rachel Ray are two well-known Blues.

Golds: the Organizers Golds love order. They like to-do lists, plans, systems, procedures and routines. Their workspace and home are very neat and orderly. Golds can often be found in administrative and leadership positions. Notes Boelcke, “Golds are very efficient and skilled time-management experts who work accurately and with a singleminded focus towards deadlines and completion of tasks.” Golds are not multitaskers but prefer to do one thing at a time. Two well-known Golds are Suze Orman and Michelle Obama.

Oranges: the Energetic Go-Getters Oranges are people who make quick decisions and prefer to figure things out as they go along rather than plan things in advance. Great networkers, Oranges see the big picture and do not get bogged down in the details. They make

Greens may not speak much but when they do say something it is often very insightful and well thought out. As employees, Greens generally do a very thorough job. Launching the Luxurious 2015 Lexus NX:

A STEP ABOVE THE REST By Tobie Hainstock

“I

t’s unlike any other SUV in its category,” says Doug Herbert, product specialist for Lexus College. He’s talking about the thrilling 2015 Lexus NX. With a more cutting-edge design and exciting new performance technology, the 2015 NX has been created with a more youthful appeal than its predecessors. According to Herbert, the design of the 2015 NX originated with the power of

performance vehicles. “The 2015 NX unites the engineering input of racers with the sophistication and class of Lexus luxury,” he continues.

Because of the kick-down function of the new transmission, the hybrid offers the powerful thrill that drivers have come to expect from other Lexus vehicles.

The 2015 NX is available in two aweinspiring models, the NX 200t with a turbocharged 2.0-litre four-cylinder engine and the NX 300h hybrid. This now means that Lexus offers six hybrid vehicles to choose from; that’s more than any other luxury brand to date.

Is venturing into unexpected weather a possibility for you? Both NX models offer their own version of pro-active all-weather drive (AWD). Just seeing the Lexus NX is a pleasurable experience. The excitement in Herbert’s

voice is unmistakeable as he describes the look of this edgy compact SUV. “The designers wanted something that would ‘pop’ and the NX definitely turns heads,” he says. While still upholding the Lexus tradition of impeccable quality, the Lexus NX features a sportier design that’s not only aerodynamic but very pleasing to the eye.

design, coddle driver and passenger as you’d expect from a Lexus.

The Lexus NX was designed in Japan by the team of innovative designers Takkakaw Kato, Keiichi Nishiyama, Hiroshi Inoue and Sunao Ichihara. The team has a history of racing and advanced automotive design with Lexus. Together they focused on optimal performance while targeting fuel efficiency.
