Watching Conant and Stratta work together was an inspirational journey and testament to their special partnership. No competition here, although Stratta was glowing at my remarks on a phenomenal appetizer of Oysters wrapped in Pancetta, as he jokingly pronounced, “that was my creation!” Unlike many of its peers in the area, this dining room was completely full soon after we arrived. Open and vibrant, one entire wall is filled with windows highlighting the spacious patio and Beverly Canon Gardens outside. The staff was friendly and attentive without being too distracting, clearly a necessity in a city that caters to the rich and famous. The Wine List was so massive that we invited the Sommelier to surprise us with a dark Italian vintage, and he did not disappoint. There’s something special about a complex Sicilian red paired

with authentic Mediterranean cuisine. Conant and Stratta offer a modern Italian cuisine that boasts finesse and simplicity, complete with bold and straightforward flavors. “Scarpetta in Italian means to make a little shoe, so we encourage our guests to grab a piece of bread and use it to sop up everything from their plate” Conant explains. From Leek and Spinach Soup to Raw Yellowtail, or Tuna ‘Susci’ with marinated vegetables and preserved truffles, Stratta says they try to stay with local ingredients as much as possible. “We get a large percentage of our vegetables from farmers markets, small growers, and purveyors who specialize in organic produce,” he says. “Now that we are starting to incorporate some of my own dishes and techniques, we will continue the evolution of the Scarpetta cuisine.” Cooking as seasonally as possible, Stratta focuses on the freshest, simplest and brightest flavors. I highly recommend the

If you are a seafood lover, don’t miss the Crispy Sea Bream with caramelized fennel, candied citrus and red wine sauce. “ Other popular favorites include the Pancetta Wrapped Tenderloin and Braised Veal ‘Osso Bucco’ or the Roasted Duck Breast with apicius spice glaze. Stratta loves Italian cooking because of his roots and some of his training, even asking his guests what their preferences are. “Italian food is delicious, fresh and unpretentious,” he says. “A variety of styles can be found in all of the regions of Italy, from Northernmost to Sicily. Each region has its own distinct personality.” No doubt, we have a handful of really great chefs here in San Diego. air, black, freckled or tan, the human epidermis is the largest organ of the human body. For centuries, a light complexion was revered by royalty—a symbol of wealth and a life free from hard labor. However, in the early 20th century, doctors began to prescribe sunbathing to patients afflicted with illnesses like tuberculosis. As notions of the sun’s medical qualities became more popular, public perception changed. Europeans flocked to the shores of the French Riviera, the Côte d’Azur, and a new standard of luxury and beauty was born. In is rumored that in the 1920s, style icon Coco Chanel began our modern obsession with bronzed bodies when she returned from holiday with tan lines. Whether or not a tan is fashionable, skin care is at the forefront of beauty—the

that the health and vitality of one body function is dependent on the health and vitality of them all. “It’s all just one mechanism,” he said, adding that understanding how the components of the body effect the skin sheds greater light on this issue. “No salt or refined sugar,” he recommended. “When you consume a lot of salt you become dehydrated, you become more swollen. Salt pulls water out, so it’s important to keep salt intake low, as well as sugar. Sugar is bad because it’s inflammatory…you don’t want to have these large spikes in your glycemic index.” What’s more, eight glasses of water is recommended. Sleep is also very important. Daneshmand recommends seven to eight hours of sleep a night to reduce stress, which is also linked to skin health. Aside from environment, it’s also important to consider what’s going on the skin. Daneshmand recommends incorporating a Retinal or Retin-A cream in your daily regiment. “It’s all about stimulating the skin and exfoliation of the skin,” he said. “We constantly want to have the fibroblast that are the cells that lay down the collagen and the dermis stimulated.” Cells that produce the visible skin layer we perceive as healthy,

youthful and glowing, are more active in young people. But by stimulating these cells with home care products and simple noninvasive procedures, skin health can be obtained through generally healthy life choices that benefit the whole body. Daneshmand has a fairly simple maintenance plan: “Once every three or four months get some microdermabrasion or a superficial peel. The 15-percent TCA peel is inexpensive and it does a fantastic job,” he said. “Then maybe once a year, depending on the skin type—or even every other year—it’s a good idea to do some kind of laser resurfacing.” Patients undergoing these kinds of procedures are healing much faster these days with pixelated treatments—instead of burning all of the skin, a Fraxel laser only burns about 80 percent of the skin, while the remaining 20 percent acts like a bandage. People who live generally healthy lives are more likely to have healthy-looking skin well into old age. Healthy skin is all about taking care—not after it becomes damaged, but with the understanding that everyone gets older, aging is inevitable, and healthy will never go out of style.

“I am getting ‘A’s in college, and I never knew that was possible for me.” Corinne Wilcox was frustrated. She was trying hard in school, but everything just seemed harder for her, especially reading. It had been like that since the second grade, when she was held back while all her friends went on without her. She felt so embarrased. “I tried everything,” Wilcox says. “Teachers would tell me my grades were suffering and my parents would have to come in. I’d always be singled out and pulled aside. It was a struggle for me.” During her sophomore year, Wilcox visited a psychiatrist, who diagnosed her with ADD and ADHD. She started taking Adderall, which killed her appetite and gave her insomnia but didn’t do much for her learning capabilities. Her mother then made an appointment with Cognition Ignition, an Encinitas-based institution offering cognitive therapy for children and adults with learning challenges, brain injuries, and memory problems. Wilcox met with director David “Beba” Witkowski, who treats clients with a therapy called Instrumental Enrichment that uses task-based exercises to “rewire” the brain. “It is literally a subliminal language to the operating system of the brain in order to get it going and correct it,” explains Witkowski. “The brain is modifiable.” The amount of time Cognition Ignition’s therapists spend with a client varies, but Witkowski says the improvements are permanent. He claims his success rate is 99.99 percent

Wilcox, now in her senior year at Texas Christian University, is definitely a success story. “Beba has changed my life in so many ways,” shares Wilcox. “I can sit down and focus in my classes instead of distracting myself. I am getting ‘A’s in college, and I never knew that was possible for me.” “A side effect of my work is happiness,” says Witkowski. “How can that not happen when someone starts experiencing success?”

Fun runs are uniquely designed races that promote great exercise and fun at the same time. Whether you just like to be active or are a dedicated marathon runner, these thrilling rallies are energetic, tough and colorful—and can even get pretty muddy. Check out our top picks for creative and fun ways to get outdoors, get moving and have fun while getting in shape. Recently held at Camp Pendleton was the gnarly Tough Mudder. Designed by the British Special forces, the Tough Mudder is an intense 10-12 mile obstacle course that tests your strength and endurance. Participants support the Wounded Warrior Project— which assists thousands of soldiers returning from the battlefield— by getting down and dirty with family and friends for an intense

experience similar to boot camp. This worldwide obstacle course challenge has already raised $5 million for the Wounded Warrior Project. So, are you tough enough? This race offers the Tough Mudder Boot Camp to prepare warriors for the obstacle course. The camp combines resistance training and cardio to give runners the edge. And each dollar raised helps provide combat stress recovery programs, adaptive sports programs, benefits counseling, employment services and more. Every Tough Mudder event has a team of Wounded Warriors to remind everyone what the definition of “tough” really is. After the Tough Mudder, don’t bother doing the laundry. The fourth consecutive year of The Del Mar Mud run is going off at the historic Del Mar Fairgrounds on Oct. 5. A 5-kilometer race, it has more than 15 obstacles throughout. Also known as the “Happiest 5k on the Planet,” the Color Run promotes happiness, healthiness and individuality—all while giving back to the community. The guidelines for this event are simple: wear white at the beginning and come to the finish line plastered in color. Participants

here is a sleek, futuristic vehicle called Tesla passing the loud, petrol-driven showboat imports on the highway. Quietly accelerating as if by magic, it’s a mystical sylph gleaming by in the periphery. It’s covert and sexy enough for James Bond, yet its low profile assimilates easily into the elementary school drop-off line formation. This green alternative automobile is the new black. The car is named after the quintessential mad scientist Nicola Tesla, a naturalized Serbian immigrant famous for his otherworldly high voltage, high-frequency power experiments in New York and Colorado Springs during the 1800s, and best known for his contributions to the design of the modern alternating current (AC) electricity supply system. Tesla’s experiments included patented devices and theoretical work used in the invention of radio communication, X-ray experiments and the unfinished, ill-fated

wireless transmission Wardenclyffe Tower project. At the height of his international fame and fortune, poets, scientists, industrialists and financiers alike sought Tesla’s steeltrap photographic memory and his hundreds of inventions. His experiments, namely his death-ray blaster weaponry forays, eventually earned him J. Edgar Hoover’s suspicious attention, resulting in one of Hoover’s infamous FBI confiscation paper sweeps. His work fell into obscurity after his death in 1943— only to come back into popular culture in the last two decades. The General Conference on Weights and Measure for the International System of Units even dedicated the term “tesla” to the SI unit measure for magnetic field strength in 1960. With this weighty posthumous accolade to add to his reputation, surely Tesla is a worthwhile distinction to bestow upon a mechanical,
alternative energy chariot—namely, an electrical car made with pride in America. A visionary himself, Elon Musk has adopted Tesla’s exact AC supply system developed in 1893 with Westinghouse for his zero emission, 21st century electric powertrain and has called it the Tesla, in honor of its inventor. Musk is co-founder, CEO and product architect of Tesla who has overseen product development and design since its genesis. He is also the CEO/CTO of Space Exploration Technologies, or SpaceX, which oversees the development of rockets and spacecraft for mission to earth’s orbit and ultimately to other planets. In addition, Musk is the non-executive chairman and principal shareholder of SolarCity, which he also helped to create. SolarCity is a leading provider of solar power systems in the United States and is being utilized in the Tesla Supercharger network stations. As if that wasn’t enough of a bio, Musk is also a

co-founder of Paypal, the world’s leading Internet payment system and Zip2, a provider of Internet software to the media industry. It’s an impressive resume to back an impressive product. The recently unveiled Model S (Signature and Signature Performance) goes from 0 to 60 mph in 4.2 seconds, can hold a charge for 300 miles and has received a 99 rating out of 100 in safety and performance from Consumer Reports. “Accelerating in it feels like an amusement park ride…hit the pedal and blast! No engine delay, no shifting, and no noise,” said Jim Kaese, brand-new owner of the Model S. “The heavy battery beneath the car seems to keep a low-center of gravity and helps the car feel really secure around turns. People are curious and ask about the car, so owners should be prepared to talk about it.” And indeed, they are talking about it.

Like a Miss America pageant contender, it has climbed up the ranks of competition to prove it is not only beautiful, but also intelligent with a responsible plan to leave the world a better place. Throughout well–traveled routes in North America, Tesla is building a network of Superchargers designed to give half a charge in about half an hour. This includes all hardware, software, and unlimited free charging with no additional connector required. The half hour required charge on a road trip could be a challenge for today’s society—a palate honed by immediate gratification with daily access to social media and gasoline consumption. Perhaps with a Starbucks, shoeshine and a nail salon at each Supercharger, impatience could be
assuaged and reconditioned. The Model S has been outfitted with the latest sensors, like a 17-inch capacitive touchscreen allowing for better viewing and complete with media, communication, cabin, vehicle controls and Bluetooth wireless technology. The most disconcerting feature is that you simply shut the door and walk away when in park. Like magic, the car fob automatically turns the engine off, locks the doors, and initiates the theft deterrent while the door handles become flushed again with the streamlined body—a space rocket concept now available on terra firma. For local San Diego commutes, the added government incentive of a $7,500 rebate, discounted utility rates from San Diego Gas and Electric during off-peak hours, and a Clean Air Decal for HOV (high occupancy vehicle) lane usage, the sedan can be an alternative family or date

In the event of another citywide electrical blackout, Kaese’s response was efficient: “We have a 20-kilowatt gaspowered emergency generator at our home, so no problem there.” A check up is required only once a year, as oil changes are replaced by “road rangers” who come to your home to inspect the vehicle for maintenance. And with the combined long-term sustainable energy return on discounted solar panels from SolarCity, the garage or carport of the future can also be efficient in utilizing solar energy to generate electricity. For an additional $1,500, the car’s sunroof can be a panoramic all-safety laminated glass which blocks 98 percent of sunlight and 81 percent of heat. Experimentation was conducted with small solar panels, but Tesla found it wasn’t cost-effective for the amount of stored sunlight received and utilized. However, the sunroof did prove to be

significantly cooler than a metal roof, which retains heat despite shading the interior. Jason Knapp is a San Diego resident who has put 40,000 miles on his Tesla Roadster and hasn’t been to a gas station since 2010. The Roadster was leased in lieu of being waitlisted for the Model S, which he received in September of 2012 and has already put 22,000 miles on. Knapp, who commutes to Irvine daily, said that there are Superchargers along I-5 and sitting in traffic doesn’t use the energy. Instead, it’s consumed in speed—“the faster you go, the more electricity you use.” “The only downside to owning an electric car is the need to plan your long road trips around the Superchargers, which we have done when driving to the Bay Area,” Knapp said. “I love it because you can just plug it in at night wherever you stay, and you have a full 300 miles ready to go—which lasts about five hours. And with kids we don’t drive
much longer than that anyway.” Knapp said his wife is waitlisted for the Tesla SUV, which is expected to be available in 2014. “We will then be an electric car family completely,” he said. In an interview with Justin Hyde of Yahoo! Autos, Musk had this to say about the reliability of free nationwide Supercharger stations: “These stations will operate even if the entire national grid goes down,” Musk said. “Even if there’s a zombie apocalypse, you’ll still be able to travel using the Tesla Supercharging system.” It’s a confident statement bordering on brashness from a Silicon Valley entrepreneur who has captured the kilowatt successfully, encased it in aluminum and reinforced it with high strength, boron steel elements—all while disregarding Wall Street’s naysayer and others. The ghost of Nicola Tesla should be deeply gratified to know he had been on the right track all along.

After the Finish Line What awaits a thoroughbred after the finish line?

hen does the race end for a Thoroughbred and what awaits them after the finish line? Are the Thoroughbreds in control of their destiny once their racing careers are over, or does someone make decisions for them that may be in the individual’s best interest rather than what is in the best interest of the horses? Every racehorse reaches the finish line at a different stage in their racing career. This should be a time of victory, a momentous occasion of hope and security for a Thoroughbred ex-racehorse commonly known as an Off Track Thoroughbred (OTTB). But too often, it is not. There needs to be a helping hand leading them to a new beginning. After the Finish Line is an all-volunteer 501 (c) 3 funding non-profit dedicated to the welfare of Thoroughbred horses that can no longer race or breed. ATFL does not keep a farm with horses. We are
a fundraising organization that awards year-round financial support to qualified Thoroughbred rescue organizations that save, rehabilitate, re-train and adopt horses for a second career or retirement. We understand the need to provide rescue organizations a reliable year-round funding source because horse racing is a year-round sport. The average racehorse retires at 6-7 years old while the life span of a horse is between 25-30 years. Rescue organizations can find themselves needing to support a horse for over 20 years. They often work on shoe-string budgets just to meet the everyday needs of their horses and often don’t have money budgeted for emergencies or to save additional horses. ATFL awards yearly Grants, and Emergency Funds are awarded in each of the remaining eleven months of the year because we know every day a horse needs our help. In 2012, After the Finish
Line awarded nearly $100,000 to 65 rescue organizations helping over 300 exracehorses. Horse racing is a sport for the fans but a business for the owners and trainers. Unfortunately, the profit and loss aspect of racing doesn’t always result in a good outcome for the horses. Horses need to be rescued due to overbreeding and injuries, being too slow to win and because too many owners get “into the game” without an understanding or commitment to provide long-term aftercare for their horses. Our mission is simple: 1) to educate the public about the health, protection, preservation and alternative career options for Thoroughbreds when their racing or breeding careers are over. 2) to provide year-round financial support to qualified rescue and retirement organizations that save, rehabilitate, [continued on page 50]

people, that these horses don’t always retire to green pastures when their racing and breeding careers are over. It was then, over a decade ago, that she made a commitment to help these unwanted horses. In this Sport of Kings, the horses are the true celebrities that draw fans to the racetracks. They enter the paddock and parade in front of thousands of people who take one last look before they place their bets. We know the horses can’t read the odds board. Many longshots do win their races. Yet, a horse that is unsuccessful at the track can one day be a star in the competitive horse show arena. Just like people, the horses can transition into more than one career. If given the chance, these talented equine athletes can excel in careers as hunters, jumpers, dressage, western or pleasure, polo, trail, companion or therapeutic riding horses. In life people often ask for a second chance. Horses are no different. Instead of

people deciding what’s best for the horse, we need to listen to and find out what the horse says is best for him. The unspoken language of a horse speaks loudly. Be patient and give the horse the opportunity to show its true potential. Embrace them and develop a relationship. The bond that forms can never be torn apart and he will always do his best to please you. After the Finish Line has many success stories. With the support of our donors combined with ATFL’s expertise, we have helped over 1,000 ex-racehorses and broodmares at all different stages of their racing and breeding careers. If we had to pick one story that really touched my heart, it was helping Itsuko, a horse that raced 99 times earning over $100k. After racing she had several foals. Luckily, at 20 years old she was rescued from an abusive situation, regained her health and is living happily ever after. Rancho Santa Fe and the surrounding communities share their love of horses.
Racing season is a social event. ATFL wants to present a different perspective from the horses’ point of view. Do we understand how hard they work for our enjoyment? Do we understand the danger and injuries they face as they race around the track at speeds upwards of 40 miles an hour? n the nineties Karian followed her dream of opening her own matchmaking company in Hawaii. Soon thereafter she was approached by the largest matchmaking service in the United States to open a franchise here in San Diego. In 2009 Karian aspired to open another matchmaking business catering to couples throughout southern California. rom world-class equestrian facilities to backyard barns, nothing is more pleasurable for horse-crazy riders than feeling the hot breath of a horse on their face, tacking up and riding. And despite the vast array of roles horses play, these animals impact those who interact with them in amazingly similar ways. To start, riding provides an abundance of health benefits for riders. Simply getting on a horse involves flexing and stretching little-used muscles. Once aboard, every single muscle is toned and strengthened as the body counter-reacts to the horse’s movements, avoiding getting off balance while guiding and controlling the horse. To reap these benefits, you certainly don’t have to be a world-class equestrian. Even leisurely trail rides at a slow walking pace work to develop more rapid reaction times, spatial awareness, and better handeye coordination. And at faster paces like the trot and canter, riding becomes an excellent aerobic exercise, oxygenating the blood, improving circulation, speeding up the metabolism, and extending breathing and breath-control. In fact, it can even be better than jogging at burning off calories! But the healthy benefits extend far beyond the physical. These animals become riders’ friends and companions, and they teach powerful lessons that resonate throughout all aspects of life. Yet it instills enormous self-esteem and selfdiscipline. There is strong evidence that time spent petting, grooming and riding horses is beneficial to people with a variety of special needs. That’s why many longestablished and respected organizations in San Diego, such as the Helen Woodward Animal Center in Rancho Santa Fe, offer equine therapeutic programs to help individuals develop better communication, compassion and self-confidence. As if all these benefits were not enough, horses have the ability to touch your soul! There is something very humbling about standing besides a 1,000-pound animal. Despite its huge advantage in size and strength, a horse trustingly lets riders climb onto its back, while responding the rider’s cues. Hyper focusing on something that necessitates all of one’s physical and mental concentration allows a person to put their troubles into perspective. Countless riders report feelings of purpose, calm and joy when being with their horse—similar to the Zen one achieves from practicing yoga. In a sense, riders can leave their troubles on the ground, as horseback riding takes them to places that transcend ordinary existence. Feeling motivated to get healthy and get riding? In an area known for its upscale ranches, and with more than 125 horseboarding facilities, it’s easy in San Diego to find a barn to get involved. It is a city where riding and equestrian events are as popular
as baseball and football. No matter what the style—dressage, saddle seat, hunter/ jumping or just riding for pleasure—there is really something for everyone in this equestrian paradise. Often referred to as horse ballet, dressage is one of the hottest trends in the local equestrian scene. It’s grounded in the development of communication between rider and horse, and defined by the precision and fluidity of its elegant form and difficult maneuvers. A sport where horses and riders have to be in perfect harmony, dressage involves a melding of personality and temperament that can take years of training as the horse learns the delicate cues from its rider. Many have viewed this refined sport on television—perhaps at the Olympics or the World Games—with riders dressed in top hats, horses groomed to a sheen, and crowds that respond with cultured applauses and mummers of approval. But not all San Diegans are aware that tucked away in Carmel Valley is an internationally recognized dressage-training stable that turns out world-class dressage riders and horses. The 22-acre equestrian center, known as Arroyo Del Mar, is led by fourtime Olympian Steffen Peters—who ranked first while riding the horse Ravel on the U.S. dressage team at this year’s Olympics—along with his wife Shannon, a dressage champion herself, and five other trainers.

Among Peters’ current students are internationally ranked Emma Weinert from Australia, Lientje Schueller from Germany and Brandi Roenick from Arizona. The ranch also offers training, lessons and horse clinics, to which people with an interest can come and learn from these experts about all things pertaining to dressage and training methods. Saddle seat is also a popular style of riding in San Diego. While this riding discipline incorporates the same principles of control and balance found in dressage, the ultimate goal in saddle seat is to deliver a truly thrilling and animated performance. These horses are flashier in style with high head carriages, long arched necks and lots of “knee action”—lifting their feet high and gracefully off the ground with each step. Whistling and boisterously cheering spectators watching a truly great saddle seat performance might think the horse is about to burst with excitement, but the well-trained saddle-seat horse is very responsive and comfortable to ride—much like a finely tuned sports car. Breeds such as American Saddlebreds, Tennessee Walking Horses, Morgans and Arabians are typical for this manner of showing. Riders interested in saddle seat can learn in San Marcos at one of the top Arabian and Half-Arabian saddle seat farms in the industry—Stachowski Farms West. Head by National Champion trainer Jonathan
Ramsay, this barn draws top clientele from all over the United States, and is known for its tremendous success at both regional and national levels. Or one can head down the road to Liz Bolton Stables. Also located in San Marcos, Bolton Stables offers topnotch riding lessons and instruction on Saddlebred horses for serious show ring competitors, as well as recreational riders. For a more eclectic variety of riding disciplines, The Rancho Riding Club on Rambla De Las Flores has long been a mainstay in the Ranch for both beginners and experienced riders. There are five versatile trainers in residence, each with their own style and discipline. This includes saddle-seat trainer Nicole Johnson, as well as Tina Caldwell, the former assistant to three-time Olympian Guenter Seidel. But the club is recognized more for training hunters and jumpers. RRC trainers Wanda Weldy—who also heads a competitive show team—and Tanya Levorchick specialize and offer lessons in these disciplines. Bred to carry riders while hunting foxes, these horses should have loads of endurance to cover great distances while following their hunt—moving with long, low, ground-covering strides. In the arena, they are still judged on these criteria, but rather than actually hunting the fox, they are typically used for showing in hunter or jumper classes, or for cross-country riding, when riders jump natural obstacles like logs, ditches and streams through fields or
forests. Those who are unfamiliar with horse shows might be confused about the difference between hunter and jumper classes. Hunters are judged subjectivity on the level to which they meet an ideal standard of behavior, style and way of going. he first few years of an infant’s life are critical to the development of a healthy posterity. A mother’s touch can’t be replaced especially during the unfortunate circumstance of caring for a pre-mature or sick newborn. San Diego based Miracle Babies, a nonprofit organization is here to help. Founded by Dr. Sean Daneshmand and his wife Marjan, Miracle Babies is the nation’s premier non-profit resource for neo-natal intensive-care unit (NICU) patients and their families. Their mission is to provide financial assistance and support to families through a variety of programs including Family Assistance, Family Network and the Mentor Program. These programs are designed to aid families that are not able to afford proper care for newborns facing health complications. Miracle Babies is committed to assisting families of NICU patients with items such as
baby supplies, clothing, living expenses and other newborn necessities. Honoree Committee members for Miracle Babies include Cristiane Valdez, Stevie Younkin’, Marjan Daneshmand, Christie Combs, Valerie Robbins, Tracy Mccotter, Mona Hacker, Lola Green, Sarah Cox and Melanie Mentzel Baird, will be in attendance at the 4th annual Casino Royal Gala, August 8 at the Hyatt Regency La Jolla. Guests will be treated to an exciting and luxurious evening alfresco in the Palm Court with a variety of food and drink stations and silent auction. Roll the dice at several casino royal game tables, listen to music and live entertainment while enjoying an evening under the stars. All proceeds raised from this event will support Miracle Babies and the families and programs the charity supports throughout San Diego.
