n imposing lady stands in front of most judicial buildings. She is not security. She is not a bailiff. She is an icon of fairness and judgment. In her right hand, she holds a suspended set
of scales symbolizing truth and fairness, upon which she measures and balances the strengths of a case’s support and opposition. In her left hand, she wields a double-edged sword, symbolizing reason and justice. They call her Lady Justice. This icon may date back to ancient Egypt, however one can’t help but conjure it up when talking to Debra Lewis and Sara Compton, the business attorneys behind INC. Legal, APC. The mother-daughter team is proud of its partnership, which helps them foster long-term professional relationships. Lewis is a 30-year veteran of small business law, which includes litigation, contracts, trade secrets, start-ups, landlord and tenant services, employment, buy and sell agreements, shareholder disputes and real estate. She served as the mayor of Rancho Santa Margarita in 2000 and in the kitchen cabinet of Orange County Supervisor Tom Wilson. in jury trial. Her mediating skill has been successful in resolving disputes without the necessity of going to trial. An added benefit of having the two women combine their understanding of how legal requirements intersect with business practicality and reality is that a client gets billed for only one attorney. It is this caring quality which differentiates them from just being attorneys, to also serving as invaluable business and legal advisors. The chief tenet in their philosophy is to operate with a preventative strategy to avoid potential expensive courtroom battles. But both are fearless champions of truth and fairness, and have the strength to brandish the sword of reason and justice if need be. It’s no chance that the symbol of their logo is a knight chess piece, representing strategy and strength. Lewis and Compton recently sat down with FINE to discuss their success and philosophies on small businesses. FINE: What is the success rate of your mediations versus going to trial? INC: Success in a lawsuit depends heavily on legal strategy. We school our clients early on in the process. As anyone knows, it can be an emotional roller coaster. Managing expectations is key, along with

honestly assessing how each piece of newly acquired information impacts a client’s position, for better or worse. Therefore, the strategy is to be in the strongest position possible to win at trial, which in turn allows the greatest potential for a good settlement before trial. Lewis: In the overwhelming majority of cases, in my 30 plus years of doing this, I am able to avoid trial and settle the case on terms satisfactory to the clients.

But both counties have a strong entrepreneurial base or privately held corporations or limited liability entities, many still run by original owners. This is the type of business we service.

Too often, we have to help the do-it-yourself client clean up a mess because they did not appreciate the longer-term ramifications of legal decisions early on. We meet too many people who started up corporations or LLCs through an Internet site, and have no clue why they chose the entity a day-to-day basis to make sure the corporation or LLC is there to incorporated in another state only to find that they didn’t avoid the California taxes or liabilities, but rather now have exposure in two states. Too many times, we have seen business owners who have surfed the web, used a contract and found that it didn’t protect them as they expected. FINE: What are the top three important considerations for a small business startup, and how would your firm differ from others in expertise? plan. [A lot of businesses] fail because someone is turning a hobby of it. [Such as,] what is my product or service? Who are my target customers? Do I have enough or do I need investors? Once you decide the business idea is viable, have a clear understanding of why you are taking a specific action, which may have legal ramifications. For example, why am I incorporating vs. choosing an LLC? easier and cheaper in the long run than cleaning up a mess. FINE: How do you handle (if any) prejudices from male clients or contemporaries?

Lewis: When I started practicing in the early 1980s, it was common for me to be the only woman in the room. At one deposition I was taking, before I could ask the first question, the male deponent threatened me, jumping up with a lit cigar in his mouth just inches from my face and shouted, “Don’t think because you’re a woman, I won’t hit you!” He thought he could bully me because I am a woman. He did not know I had a green belt in karate, and that I had been training with my husband and two daughters—Sara being one of them. I grabbed the cigar from his mouth, threw it in the garbage and got into a karate stance. “Go ahead. Throw the first punch, but I’m throwing the last punch!” I will never forget the look of shock on his face. He sat down and the deposition went forward without any interruptions. Now I’d say almost half the lawyers are women; it is so much different. We still run into that kind of prejudice from time to time. FINE: Which charity organization does INC. Legal stand behind? Compton: We are huge supporters of the military, and in particular, the Marines. My husband is gunnery sergeant in the Marines and stationed at Pendleton. We understand firsthand the extreme financial and personal sacrifices military families make to protect the rest of us. We also help former Marines in their new business ventures. Another cause we support is Amniotic Fluid Embolism (AFE). This is a rare and deadly condition and the second leading cause of maternal

FINE: How did you come to choose the knight (chess piece) in your logo? Lewis: Through brainstorming with Sara. She thought of the name, “INC. Legal.” We wanted our name to say who we are at a glance. We [also] wanted a logo that evoked the image of strength and being strategic, since that is how we practice. We thought about the queen, but we did not want to confine our image to strictly female. The chess horse piece often makes the opening move, and it is used strategically to take opponent pieces and protect its own pieces. And the horse is a strong animal.

Northwest of the Golf of Tonkin, the bay is dotted with monolithic islands covered in lush jungle. The legend of this bay claims that gods sent dragons to protect the Vietnamese people from foreign invaders. urrounded by the majestic Santa Rosa Mountains and offering yearround sunshine, it’s no surprise that La Quinta has been named the “Gem of the Desert.” For decades, visitors have been drawn to this California city to experience the best in leisure and luxury. And this gem does not disappoint. Long hailed as an exclusive resort getaway, La Quinta hosts some of the top golf courses in all of the desert, as well as dining, shopping in the quaint village area, biking along the Bear Creek Trail, and hiking in the Santa Rosa and San Jacinto mountains. The most prominent feature of this area is the mountain ranges. First populated

page 44 continued from alongside charities and organizations that support these conservation endeavors both at home and abroad. “I encourage people to start their own beach cleanups amongst friends or family… even on their own, if they’re out on a beach stroll or taking the dogs for a walk,” Crosley advised. “I also encourage people to stop using plastic. Only about a third of all plastic products are recovered for reuse and recycling. Plastic is the main cause of why our oceans are in danger.” Crosley currently works in partnership with Sea-thos Foundation (seathos. org), an ocean conservation program that helps to protect ocean biodiversity and wildlife. She also owns a company that uses seashells to make candles, donating a portion of these proceeds to the organizations she supports. “[My] hope is that I get the idea out there and other people will take part,” Crosley said. “There are so many areas of our world with marine or animal life that need to be protected. On a recent visit to Africa, I learned about the decrease in population of elephants, lions and several other

Crosley’s message is simple, and with the support of others at home and abroad, beauty can remain beautiful for generations to come: “I hope my journey takes me to more beautiful places, with special people, and I make long-lasting memories,” she said.

s you wind down Point Loma Blvd in the middle of eclectic Ocean Beach, it’s hard to imagine finding a quaint French farmhouse at the end of your journey. BO-beau Kitchen + bar is nothing less than a diamond in the rough, a jewel of fine French cuisine that is distinctive in its location as well as quality. The front entrance is surrounded by visions of the French countryside, complete with weathered wood containers filled with dried herbs, wrought iron accents and old garden tools. Indoors, gaze upon stone walls, tall beamed ceilings, antiques, and a stone hearth fireplace. All of the tables are packed together in typical bistro style, surrounded by people in conversation, adding an exciting and vibrant exhilaration to the atmosphere. It’s rare to find an authentic and cozy French bistro in Southern California, but this tiny little structure houses one of the finest culinary artists in town. With plenty of big-time experience under her belt, Executive Chef Katherine Humphus has an extraordinary talent in bringing France to your tableside. “We have somehow managed to have a real neighborhood feel and yet be a ‘destination’ restaurant at the
same time,” she says. “Plus the ambience is one of a kind.” Bo-Beau’s cuisine has reached an impeccable maturity displayed by Humphus, who says she’s mastered the art of multitasking, while still understanding the difference and importance of time constraints, quality, and perfectionism. Her propensity for creative cuisine has been seasoned by various stops along the way, including an internship at the revered French Laundry in Napa Valley, California. “I originally started with the Cohn Restaurant Group at The Prado at Balboa Park,” she says. “After leaving for a few years to go to culinary school at Le Cordon Bleu in Paris, I returned and asked owner David Cohn if he had any new projects in the works. With one of Bo-beau’s most popular dishes, the Crispy Brussel Sprouts, Humphus makes liberal use of balsamic vinegar, pancetta and shaved parmesan, all flamboyantly presented in an oldfashioned glass jar, spilling out over a rustic cutting board as a plate. Also seen floating through the dining room on a regular basis were flatbread choices, highlighting Humphus’ mastery of combining old and new styles to delight her guests. Two perfectly different flatbread examples include the Chorizo with Serrano, marinara, five Italian cheeses and basil, or the Banh Mi, with sesame pork meatballs,

pickled carrots and daikon, jalapeno, cucumber, cilantro and sriracha aioli. The Frisee Salad was a study in freshness and artistic technique, boasting a poached egg as its centerpiece, effortlessly suspended atop tender lettuce and dressed in a warm bacon vinaigrette with truffled goat cheese toast as its base. This salad pairs nicely with the Moules (Mussels) in a red curry broth, that not only boast a nice texture and color, but lend a subtle sweetness and spicy bite. My standards were set high for the Boeuf Bourguignon, a dish many cooks cannot master successfully. Humphus captures the true essence of this traditional dish that is comprised of a rich and velvety gravy with slow-cooked and fork tender chunks of beef and al dente vegetables, including baby carrots, mushrooms, pearl onions, and fingerling potatoes. Just when I thought it couldn’t get any better, Humphus unremittingly shows off her
exotic mystique with a juicy-to-the-bone Chicken Fricassee balanced with tarragon dumplings,
seasonal
vegetables
and
champagne mustard seed. Humphus makes a sumptuous ending to the meal with the Ménage a Trois, which is not only delicious, but impressive to behold. Three complimentary desserts are strategically placed side-by-side, leading to a treasured journey into sugar land. The homemade Peanut Brittle is subtly sweet and studded with salty peanuts, and unlike your run of the mill store bought brand, it is not overly crunchy and offers more of a soft, cookie-like consistency.

Kahlua Pot de Crème is superbly silky, complimented with an amber caramel sauce and topped with miniature fluffy marshmallows. And finally, the pecan praline cheesecake adds a rich and velvety texture to its partners on the plate – definitely all too easy to lap up!

Club Seacrest On April 13, The Women’s Auxiliary of Seacrest Village Retirement Communities hosted its 35th Annual Gala, “Club Seacrest”. The event was held at the Hilton La Jolla Torrey Pines. This annual gala benefits the Seacrest Village’s Resident Assistance Fund. Guests dined and danced to a“club” theme.
