The Arts
Q: In celebrating your 22nd Season at the San Diego Ballet, how do you keep “The Nutcracker” fresh and somewhat renewed for audiences – while keeping to the tradition of the production? Morgan: We get this question often. And I guess I would have to answer it in three different ways. The first is that when the choreography is re-interpreted by different dancers, it becomes different. Every year’s cast brings cast changes. Sometimes it is in the principal dancer roles, sometimes in soloist roles. And in some cases, parts are double cast. So you could see two different interpretations of the Sugarplum Fairy in the same year. Just as Garth Brooks, Celine Dion, and Lady Gaga can all sing the exact same song and give you a totally different experience. The second answer is, in the big scheme of things, we really don’t do the ballet all that much. In a one year run, any show on Broadway will be per for med more than we per for m “The Nutcracker” in 12 years. And yet, I do not hear the question, ‘How does “The Lion King” stay fresh?’ F I N E sd. c o m

Which brings us to answer number three: to some extent, people want to see a repeat experience. They want the Christmas tree to grow, they want to see snow falling from the sky, and in our production, they want to see a horde of tiny marzipan sheep zoom across the stage. Q: Do you have a favorite scene?
Morgan: My favorite “scene” would probably have to be the snow scene at the end of Act One. The dancers are dancing full out. There is snow falling everywhere. The stage tur ns blue and the music sounds like a cross between a heavenly choir and a blizzard. Then everything sort of crystallizes into what could be a scene inside a snow globe. Q: Why do you think “The Nutcracker” has remained a timeless holiday tradition for so many (of all ages)? Morgan: I think because it is something that begins when people are very young. And music is such a strong link to memory. You could say that it has something to do with the fact that so many little girls take ballet classes and are exposed then, but I think that there is more to it than that. Additional Ideas:
• Present a monochromatic scene of or nament balls, candles and collectables. • Add varied fruit (including apples and pears) or florals to the display for a more rustic appeal. • With different sized glass jars, place unequal amounts of pinecones and cinnamon in each for a burst of holiday scent.
Tabletop Tips
• Adding groupings of candles always illuminates and adds a special touch. • Fill varied sizes of vases with Baby’s Breath; small sprigs can be added to food displays and be placed inside the napkin ring for a more organic feel. • Do not be afraid to add in color with choice of glassware or serving pieces. • Using white or off-white linens gives the table a more luxurious presence. Patterns or solid colors can often appear too busy – but can be downplayed with white dinnerware. F I N E sd. c o m

• Placing an advent calendar on the fridge or bulletin board is a fun, interactive activity for kids of all ages.

A round shape is more classic, whereas a square is more moder n. • Oranges or pinecones make great visual additions to tabletops, window ledges and countertops; not to mention the presence of a fresh seasonal aroma. Deck the Halls: Creating Holiday Vignettes Throughout the Home More than just a tree with lights and garland, consider the entire home when selecting and planning holiday décor for a burst of festive spirit throughout; from a grouping of nativity scenes atop a desk to a cluster of glittered stars [or possibly star fish], dangling mistletoe and layered swags of greens, branches and bows along the staircase.

EVENTS
13th Annual Crystal Ball Gala Raises Funds for Abused and Neglected Children at Casa de Amparo All photography courtesy of Casa de Amparo Held at Fairbanks Ranch Country Club in Rancho Santa Fe, Casa de Amparo’s 13th Annual Crystal Ball Gala – directly supporting the organization’s programs and services to treat and prevent child abuse and neglect – raised more than $290,000. The black tie masquerade-themed event welcomed over 200 guests, including Honorary Chairs Jerry and Sharon Stein, supporters of Casa de Amparo for over 25 years. Jordan Perez, a 16-year old Casa de Amparo volunteer, entertained on piano during the Silent Auction/Cocktail Reception. Guests danced to the music of Atomic Groove following a sumptuous meal prepared by Chef Jeffrey Strauss of Pamplemousse Grille. A highlight of the evening was a presentation by Dominique Cleveland, formerly a client of Casa de Amparo’s Children’s Shelter, and currently a participant in the organization’s New Directions program for former foster youth; she spoke of the abuse she suffered as a child and how her life has changed for the better since coming to Casa de Amparo. In Good Spirits: San Diego Bay Food & Wine Fest 2011 All photography courtesy of Randy Strain At this year’s San Diego Bay Food & W ine Festival – wine connoisseurs clanked their glasses, sampled an array of reds and white wines to other enticing spirits, and indulged in gourmet tastes from some of San Diego’s finest. The festivities launched with a gourmet cooking class and spa experience at La Puerta Ranch for guests to partake in this culinary experience and day of relaxation at this new organic farm and culinary center. Other highlights included celebrity profile chefs performing cooking demonstrations, the Reserved Tasting held at the Aerospace Museum in Balboa Park, and the Grand Tasting held at the Embarcadero by Seaport Village. The bayside event definitely came in a timely manner for San Diego to savor delicious tapas and cuisines, raise their wine glasses, and celebrate with merriment and cheer to ring in the holiday season. for chefs to help their guests rekindle comfort and joy this time of year; it is this spirit of festivity that also over flows into their personal lives, allowing them to reflect on past, present and future. During recent conversations with some of San Diego’s finest, I sought insight from Chef Jeffrey Strauss of Pamplemousse Grille, Chef Jesse Frost of Fairbanks Ranch Country Club, Chef Ber nard Guillas of The Marine Room, and Chef Paul McCabe of Delicias [previously of 1540] – who just recently became a partner. These are their thoughts… Q: What gives you the most pleasure in the kitchen?
Paul McCabe [Delicias]: Watching my team grow and lear n, and become completely invested in what we are doing and watching them grow as chefs. I love to cook. GSB Men’s Clothier, a European boutique for men’s fashions in Rancho Santa Fe [since 2008], along with his wife, Bella, are widely known and respected for their craft; a notion echoed with recent accolades including “Best of: Men’s Clothing Store” from a number of local publications. Enjoying a nature rapport with clientele, “I count it a privilege to educate [our clients] about our fabrics, patter ns, and the designs,” Gary remarked. “Clothes can make a strong impression on others, so of course, it is nice to help people make it a good [one]. We listen, and take extra care to pamper them with a comfortable and relaxed setting. We [also enjoy] making sure the customer feels involved in the process.” In getting to know more about the master tailor and his craft, here is a recent conversation between FINE magazine and Gary.

Q: Tell us about yourself and your background. Gary Sanfir: My family has always been involved in the fashion industry, so naturally I grew up around various fabrics and designer outfits. My father owned a large scale production and distribution factory of men’s clothing and when I was 13-years-old, he arranged for me to lear n from the best tailor in town. My grandmother would sew amazing outfits at home and so as a young child I was always trying to imitate her creations. It was the 1960’s and gentlemen would only wear custom-made

factory clothing was considered low-class. By the time I tur ned 15, I was sewing clothes for myself and a few outfits for friends. I would experiment and redesign my dad’s old shirts, grandpa’s linen suits, fabrics for shoe insoles, etc. I’ve been involved in fashion and men’s clothing all my life, tailoring for top designers and men’s clothing stores in Europe and Los Angeles, and working with a host of celebrities, models and professionals; until I

Q: What are the advantages of having a tailor over buying machine made clothes? Sanfir: I’ve had clients tell me they felt 20 years younger when they put on our suits, and others have said that the suits helped correct their posture. Customers say that my suits give them another avenue to express their individuality.
Light and soft fabric, styles in color and figure, and refinements in the cut were all used to manifest elegance, which was the aesthetic priority in post-war fashion. The hobby turned into a career and soon I was purchasing land, commercial properties and foreclosures. I really enjoy finding a value and improving on it. It is something that has always made sense to me. The fact that there is only so much of it –and as something tangible you touch and affect makes it just that more attractive to me. Q: How does your approach differ from others? Jeff: My approach is vastly different than many of my peers. I utilize my expertise to strategize each listing and offer, properly positioning my listings to best achieve the price and ter ms desired. Jeff: The Status of our local market though still faced with challenges and pressure from distressed inventory is poised per fectly to rebound. Lorraine Richards – a volunteer of four years for the USO, helping with various administrative duties and activities including Tuesday Dinners [a weekly gathering designed for military families to enjoy a familystyle dinner amidst the company of others in similar situations] – fondly noted how “the USO has been our home away from home. We have three sons in the service, [and] they [all] received care packages and support. The Holiday Program helped my large military family have a fabulous Christmas. Words cannot ex-

press our gratitude. Every time, I am able to see the joy the [USO] brings to a service member, it makes my heart swell with pride.” This year the USO will be celebrating a monumental anniversary – their 70th year of service within the community; first established regionally in 1941. And, although the USO provides assistance to our ar med forces, ironically, their resources do not come from the gover nment; however, as a congressionally-chartered effort, the organization is recognized by the Department of Defense, Congress and the President, who serves as Honorary Chair man. The local chapter is primarily funded through financial contributions from San Diego area businesses and the generosity of individuals who participate by donating to help keep its programs alive; in addition, both centers are supported through the assistance of 250 dedicated volunteers annually. As with the endearing story of the young girl who sent her father a simple watch as a Christmas gift, making him feel loved and thought of while he was away during the holidays, Pagano reminisced and commented, “Seeing firsthand the impact of this program and knowing that we truly brought a smile to that family during [the holidays] by continuing to provide ‘our touch of home’ [with] every deployment is just one of the many reasons I am proud to [be part] of and work for the USO.” u U S O S a n Di e g o usosandiego.org

Local USO Programs Feed Our Troops // Provides sustenance for the weary traveler through homemade soups, sandwiches and healthy snacks at the USO Neil Ash Airport Center. Individual volunteers and corporate partners assist the center, which can handle between 300-600 new recruits on busier days. Entertain Our Troops // Through weekly pay-per-view access to a wide range of sporting events and feature movies, this program [held at the recently renovated Downtown Café] offers geo-bachelors and single active duty members a safe and fun environment to hang out on the weekends; the lounge is designed to reflect the comforts of home and an opportunity for guests to simply relax. Snacks and beverages are provided and served by friendly volunteers at no cost to our service members. Care Packages // Offering a way to reach out to loved ones who are about to deploy or those who are already deployed, care packages can be requested for a single military member or the entire unit or command. The packages include a USO camouflage toiletry kit, non-perishable snacks, entertainment items such as decks of cards and crossword puzzles, and other useful items such as baby-wipes and band aids. Additional items vary based on season. The Therapy Dogs // Through weekly visits at the Neil Ash Airport Center, the List Srv4 Therapy Dog Team provides an unsaid comfort to our active duty members and their families with the help of ‘man’s best friend’; whether it is a child handling a tough good-bye or an active duty member gearing up for a flight to their next deployment, the therapy dogs have the ability to lift spirits and create an unexpected bond. United Through Reading® // Helping to ease the stress of separation for military families, this program offers deployed parents an opportunity to read children’s books aloud via DVD for their child to watch at home; a chance to make powerful and lasting parent/child connections from afar. The DVD, a copy of the book, instructions, as well as information on the program are mailed to the child and family back home. *Additional programs and services are offered for seasonal holidays and celebrations as well

“The Evoque is an incredibly exciting vehicle that joins a product range which across both of our brands is the strongest we have ever had - and it fits in perfectly,” commented Dr. Ralf Speth, Jaguar Land Rover Chief Executive Officer. “It is groundbreaking; a Range Rover with concept car looks, lightweight technologies and the capability to deliver [28] mpg fuel economy.
