PUBLISHER’S LETTER

A Season of Green Dear Readers, Despite a ‘June gloom’ forecast for the month, the summer season is once again welcomed in the southland. From surf and golf, to baseball and sailing, we are reminded why is it we love our hometown of San Diego. For the month of June, we salute our fathers and our heroes – whether biological or adopted, befriended or admired, here’s to their unending quest to fix the broken, watch “the game” and grill outdoors eight days a week. For their strength and character, we are forever grateful; for their guidance and friendship, eternally thankful. Happy Father’s Day! In this issue, we bring you the season of all things green. From the fairways and greens at the Aviara Golf Club, to the flavors of Farm-to-Table dining, summer fashions of La Perla and luxury hybrids beyond a concept, we hope you enjoy our ‘green’ issue – celebrating San Diego living, from landscape greens and tees to fresh greens from the farm. Be inspired, and don’t forget to think green!

Enjoy!

Evolving California Cuisine at Nine-Ten The

opportunity

to

savor

freshness

is

epitomized by what Jason Knibb delivers dayafter-day at Nine-Ten in La Jolla. He refers to it as “Evolving Califor nia Cuisine,” which involves using the local harvest to deter mine his menu. It is created daily and reflects fresh products found at artisan providers such as Chino Far ms and Crow’s Pass. Fresh fish from the local sea as well as those flown in from Hawaii and the Atlantic provide added flavor to the menu. “[Far m-to-table] is the only way to do it,” responds Chef Knibb. “We’re always looking for

products,

from produce to proteins. Showcasing the freshness of that product and letting it speak for itself has always been my philosophy.” And

Go Hard. Go Long.

The Fat Burning Zone by Jason R. Karp, Ph.D.

T

he most popular myth about exercise is often refrenced as the ‘fat bur ning zone’ - a theory that claims low intensity excercise, in a s pecific

range of heart rates, bur ns fat. Even though many personal trainers subscribe to this so-called theory, it actually remains a myth. The two main fuels used during exercise are fat and carbohydrates; at low intensity, you use more fat, but as intensity increases, you use less fat and more carbohydrates.

While more fat is used at

low intensities, what matters is how many calories you bur n during your workout, not whethe r those calories come from fat or carbohydrates. Despite what people think, you do not have to use fat during exercise to lose fat from your waistline; afterall, carbohydrates

are

actually

muscles’

preferred

fuel. For fat and weight loss, what matters most is the dif ference between the number of calories you expend and the number of calories you co nsume. To bur n lots of calories, going long or going hard are the best options available. W ith high intensity exercise, metabolic rate also remains elevated for hours afterward, which means 56

‘Roll Out the Barrel’ Raises $95,000+ for Make-A-Wish San Diego Photography courtesy of Brian Bostrom

Hosted by Humphrey’s Concerts By the Bay and emceed by Steve Lewandowski, the voice of the San Diego Polo Club, the 3rd Annual Roll Out the Barrel Food and Wine Fundraiser realized a net of more than $95,000 mid-May, benefiting the children and families of MakeA-Wish San Diego. The soulful sounds of Brad Perry and The Acoustic Fingerprints entertained 300+ foundation donors and friends, as they sampled wines from around the world and specialty dishes from some of San Diego’s top restaurants. The energy during the evening peaked at the Live Auction where guests vied for specialty items that included VIP Napa Winery packages, an X-Games VIP behind the scenes tour and a signature Paella and Fortaleza tequila party for 50 guests. Roll Out the Barrel serves as one of the foundation’s signature events, raising necessary funds to support granting wishes to San Diego children battling life-threatening illnesses and their families; monies raised will support an estimated 14+ wishes this year alone.
