he steakhouse genre is alive, well and thriving in Encinitas. This is not just a special-occasion restaurant, but a place where you can devour boldly seasoned, oversized cuts of beef and comfort food classics without bracing yourself for the check. On any given evening, you will find plenty of couples and business people unwinding from a hectic day, as well as families gathering for good conversation in comfortable and friendly surroundings. Bentley’s Steak & Chop House identifies with many of its high-end peers, exuding a traditional, yet elegant, steakhouse charm, complete with classic dark mahogany tables dressed in white linens and a lavish lounge with a granite-top bar. Happy hour can be quite the draw, and for good reason. The lounge menu provides great deals on house favorites, perfectly paired with specialty cocktails, fine wines, and beers on draft or by the bottle. Synonymous with

Southern California culture, Bentley’s also boasts a stunning and spacious outdoor patio that is a shady daytime respite from the summer heat, as well as an elegant nighttime rendezvous, complete with decorative lighting and heat lamps to negate the evening chill. So what sets this eatery apart from the competition? Without a doubt, it’s the personal touch from owners Tom and Diane Fulkerson, who are dedicated to making every diner’s experience memorable. It’s highly likely they’ll be the greeters at the front entrance, offering patrons a warm welcome to their home away from home. Residents of the Olivenhain area for 28 years, the Fulkersons are committed to delivering a first-rate experience to the community, not only for their neighbors, but also for visitors from all parts of San Diego and beyond. For starters, Executive Chef Javier Aranda kicks it up a notch with an imaginative

version of ahi nachos, topping wonton chips with ancho chili mayonnaise, ginger wasabi aioli, diced cucumber, avocado, cubed ahi and garnishes of marinated seaweed. Another beloved favorite is the roasted portobello mushroom stuffed with sautéed shrimp, mushroom duxelle and spinach, layered with melted Parmesan and jack cheeses. “My recipes are a collection from different restaurants I’ve worked at over the years,” Fulkerson explained. “Chef Aranda has been with us since day one, and he manages our kitchen impeccably well. For us, consistency is the name of the game.” Many guests opt for staple comfort food items such as the New England clam chowder, four-cheese macaroni dotted with rock shrimp, or an oven-roasted chicken cordon bleu stuffed with Black Forest ham and covered with Mornay sauce. enowned designer Eric Cohler sagely noted, “There is a symbiotic plasticity between art, architecture, interior design and fashion.” It is easy to understand how they all correlate, because art is simply art in all of its forms. The elements and principles of art and design transcend all mediums. Works of beauty are clearly established on contrast, harmony, balance, light, dark, line, shape, form and scale. We love to surround ourselves with beauty and use it to express our own unique style. As with fashion, the interiors of our homes reflect who we are and what we stand for in this ever-changing world. How wonderful that we can embrace the very core of who we are while spicing things up a bit and staying relevant. It’s fun to watch the trends that debut on the runway and predict when they will reach the home market. Many times, thanks to the increased speed of technology and production, we witness a direct correlation of the latest fashion trends and home interiors almost immediately. We can even see the reverse effect when the interiors of homes and architecture influence the hottest styles on the runways of Paris, London and New York City. It is especially lovely when an ultra-modern room with very clean lines and a minimalist approach has a fabulous, blinged-out chandelier as its crowning piece. Unique shapes and forms add to the drama and balance the low and linear look that, when left alone, can come across as hard and sterile. There is a vast array of chandeliers to suit your taste, from traditional to modern and everything in between, made by designers like Schonbek, Frederick Cooper and George Kovac. Another simple way to add some bling to your home is to add crystal knobs to cabinet doors, a mirrored accent table or metallic pillows. Rich, bold patterns, stripes, chevrons and checks spell fun, fun, fun! Contrast abounds in this really playful design trend. Marry it with clean and tailored construction, and it’s perfect for even the boardroom. When refinement meets the edge, the juxtaposition can make us feel giddy. In our homes, we see bold stripes and exaggerate pattern in wallpapers, fabrics and area carpets. Go bold and play up the contrast with wide, light and dark stripes. Mix a variety of stripes together in your accessories of the same color palette and have tons of fun. However, to create a sophisticated feeling, use softer palettes, more structured and tightly grouped stripes, and pay close attention to the finer details like piping and trim. Take a look at today’s runway and it is apparent that our world is becoming more and more interconnected every day. Influences from around the world have brought to the forefront rich, bold jewel tones normally associated with Spanish, Asian and other international styles. In particular, you will love all things Moroccan, which can be bold, colorful and exciting— taking its design cues from the surrounding landscape of North Africa. Its influences are very wide-ranging from Arab, Spanish, French to Moorish, all giving Moroccan design its very unique and striking look. Long on coastal seas, backed into desert and baked under relentless sun, this exotic style takes inspiration from the colors its geography provides. Ochre mountain ranges, silvery moonlit desert-scapes and golden sands make way for hot, vibrant oranges and reds that are refreshed by

deep blues and sparkling greens of the sea. Traditionally, the decor is very ornate with intricate patterns and bright, rich colors. Modern interpretations of this style are simpler, with large-scale patterns and current color trends. To achieve the most authentic feel in your home, scatter lots of layers of fabrics and textile patterns around the room. If you consider yourself a minimalist, then Moroccan style is not for you, although you can definitely take some inspiration by using huge graphic motifs. But don’t choose anything too showy for your furniture—a simple, rustic style in a dark-colored wood is best. Carved wood and wrought iron decoration will convey ancient sentiments and add to the Moroccan feel. A modern take on Moroccan furniture is the pouf, which is similar to an ottoman. When it comes to accessorizing, it is all about a few key pieces. Creating beauty and interest is as simple as an amazing hand-knotted rug, accent pillows, an antique lantern and a hand-carved side table. What’s great about this exotic look is it is considered timeless, as Moroccan styles have always been popular and in style. Love for all things exciting, colorful and bright gives way to my favorite design style, which I like to call “Beach Chic.” In this style, you combine the luxurious and soft elements of fine linen, cotton velvet and silk with a multitude of texture and a serene color palette that is reminiscent of surf and sand. This design style is soothing and relaxing, but has an exciting twist. Add to this some shimmer as in the crests of the waves on a perfect breezy, sunny day at bay or a little sheen as in the glowing beauty of a strand of pearls, and you have achieved Beach Chic. This is one trend that started from an interior craze—and now we see beach-inspired fashion everywhere, including white on white with baby blue or deep coral accents. Of course we have to have a pop of color, so the look includes an arm of jewelry or a simple silver hair piece to top it off. Just like our wardrobe tells the world who we are, our homes have that very ability to relate our values and convey what excites us. It shows if you’re a trendsetter or if you have a more traditional sensibility. Look around and ask yourself—what does your home say about you?

emember the magnificent floral infused dress designed by Carolina Herrera that Lucy Lui wore at this year’s Golden Globes? From the runway to the wedding hall to home décor, flowers are having their moment in the sun this season. Luckily, Cindy Kemp, owner of c.c.Gilmore in Carlsbad, has her fingers on the floral pulse. Having the eye and experience of an interior designer, Kemp expresses her floral designs by taking into account depth and texture, positive and negative space, and the mixture of vibrant and pastel color tonalities. She likes to add visual interest by using unusual components surrounding the flowers. Never remaining stagnant, Kemp’s designs and inspirations are constantly changing. No two designs are truly alike, and many times, the unexpected becomes her final choice. Kemp said her favorite trend this season is called “French Pave,” which includes small, tight clusters of flowers for table designs or wedding bouquets. Coastal modern is another of her specialties. It utilizes wood, shells, sand and floating flowers to create the casual, elegant beach experience. Soft, pale green succulents, which reflect a California feel, are also trending strong this season everywhere. Kemp said she is eager to tie black and white herringbone ribbon around a luscious bouquet of pure white roses or bright yellow tulips, adding that it’s not only the flowers that make the arrangement special, but also the companion elements with them. In this case, a simple ribbon can make all the difference and change a look completely. Flowers come in all shapes, sizes and colors, but Kemp’s favorite is the parrot tulip. While the colors can vary wildly, this season her preferred color is a variegated lemon zest with tender shots of green. But ask her in September, and her preferred color tones will be totally different. From big and lavish to small and intimate, flowers are the added ambiance that expresses your personal style all year long.

Moving forward, he became tournant chef at L’ Auberge Del Mar—working under executive chef Tom Atkins—where he learned about California’s market-driven cuisine. He then held a position at San Diego’s prominent Star of the Sea and was appointed to executive chef. Paul joined the Park Hyatt Aviara Resort in 2007 and currently oversees day-to-day operations

and menu development for the Park Hyatt’s Vivace and California Bistro. Believing in “letting the ingredients speak,” Paul infuses his own contemporary, California-inspired style into his culinary classics. He emphasizes a refined cuisine that’s accessible and appealing, yet challenges diners to appreciate the clear flavors of Italy by using distinguishable quality ingredients presented with fastidious touches. Each dish melds flavors together without losing the true nature of each component. Substantial appetizers respect tradition while taking on global influences. The Roasted Kurabuto Pork Belly is enlivened with the peppery nuances of rapini, further complimented by provolone fonduta and intensified by the topping of a farm-fresh egg. Of course, another stronghold to the beginning of your meal is the traditional

A stalwart aficionado of baccalà (dried, salted cod), my favorite seafood entrée is the olive oil-poached Skuna Bay salmon with black fennel, onion crème, baccalà cubes and a micro herb salad. The main event in the kitchen seems to be an unusually indulgent array of hand-made pastas coupled with curious ingredients. Pairing butternut squash gnocchi with a wild board ragout is daring

to say the least, but the smoky earthiness of the meat, in step with the sweet scent of cranberries and the slight saltiness of Pecorino Romano cheese, is truly a dynamic explosion of color, texture and flavors. Equally impressive is Paul’s art of mastering ricotta tortelloni with spinach, peanuts, gold raisins and brown butter. Getting the bulk of his produce from local farms, Paul does his best to stay true to using seasonal and organic ingredients, explaining that it’s a difficult path to follow. “It takes research, dedication and the nurturing of relationships with local farmers. It’s much more than just saying, ‘Yes, I use sustainable and local produce,’” he explained. “In the end, it is far more rewarding to support the local businessman, keep your guests healthy and maintain the food at its peak.”

The extensive wine list is centered on Italian varietals from recognizable vintners, including Masi Amarone Classico to the rare find of Tenuta dell’ Ornellaia Masseto. “We have something for everyone,” Paul said “Our servers are very knowledgeable about our wines and what will pair best with the food.” Paul’s passion is on display at the “Pranzo” on Sundays, a deeply traditional lunch event that is a mainstay for families in Italy. Not only are you treated to a memorable meal, but you will enjoy good conversation with family and friends, a necessary part of Italian life. On his days off, Paul can be seen foraging through local farmers’ markets, cooking, skateboarding, playing music and, most importantly, spending as much time as he can with his wife, children and dog.

ove. Love. Love. This crazy thing called love is why King Edward VIII abdicated the gilded British crown for the first time in history so that he could marry a commoner. Grief-stricken love is why the Mughal emperor Shah Jahan took 22 years to build and dedicate the Taj Mahal, a splendid architectural jewel in India, for his posthumous muse, Mumtaz Mahal. In Greek mythology, enchanted love is why the golden-haired Helen of Sparta was abducted, which spawned a 10-year war between Sparta and Troy. Unrequited love and the passionate kiss are why we have sonnets, prose, poetry, torch songs, comedies, dramas, tragedies, motion pictures, gardens, art and dances. Even culinary dishes have been concocted to beguile and seduce. Heart-connected love is usually the prelude to marriage. Soul-connected love is why we remember our wedding anniversaries. Whether public or private, celebrating wedding anniversaries is the

annual remembrance of the why. Each year denotes a traditional or modern gem or symbol. The 75th year is platinum, and as one of the strongest metals known, it’s often used in wedding ring designs. Coincidentally, the recording industry uses the term ‘going platinum’ when an album sells more than a million copies—and indeed, celebrating 75 years of marriage is a record! Former New Yorker Lorraine Ferris nee D’Agostino celebrates her 66th wedding anniversary to Tom D’Agostino this year in July. Their generation came out of the Great Depression, which instills an unquestionable resolve and capacity to withstand hurdles through different eras. Together, they have raised four children successfully. Her secret? “Tenacity, humor, and a [shared] belief system—and God’s grace!” Refining the art of marriage is like the legacy of a well-loved family recipe: new memories are made of vintage handcrafted comfort and nourishment. We take

from the success of previous examples and learn from the mistakes of others. Mina Kooklani’s secret recipe for lasting love? “After 30 years, you learn that the tough times will roll over, and life has its fair share of speed bumps. I’ve learned that with patience and compromise, everything turns out fine.” Kooklani adds that respect is also key. “Respect is the most important ingredient,” she said. “When you are married, you should always remember that nobody is perfect and compromise is the key.” Asked if a similar faith is important, Kooklani replied, “I think so. Having similar values are crucial to keeping one another happy and raising children in a way in which both partners can agree. Although I don’t think you both have to share the same religion, having similar ideals are important and that can be accomplished through your outlook on life.” This year, May Zawaideh is celebrating her “27 beautiful years” with her husband,

They both believe in “till death do us part” and also made a vow to never go to sleep upset with each other. “Even if it’s minutes before twelve,” said Zawaideh. “We try to solve all our disagreements the same day.” May Zawaideh offers advice to new couples: “Make sure love is mutual and equal. You need to be assured that you are the number one in his or her life and no one else matters. “My mother-in-law once said to me, divorce is not a joke. Don’t think about it or even joke about it,” she added. It’s not easy to be around someone 24/7 and still have a successful marriage, but Bill and Connie McNally have been inseparable for nearly 40 years. The founders of The McNally Company Antiques, Inc. in Rancho Santa Fe have been partners—in business and life — for 38 years. The two met at the World Backgammon Championships in 1975, where they were both competing. They didn’t win any trophies, but they came home with an even better prize. After six months—and three dates—the couple was married.

“I thought she was the most beautiful woman I had ever seen in my life,” Bill McNally said. Since then, the couple has made a career out of collecting beautiful things. Connie McNally opened her first antique shop in Palm Springs in 1976. In 1978, she and her husband formed The McNally Company, before opening their Rancho Santa Fe store in 1987. The store features an array of paintings, furniture and objects d’art from 17th-, 18th- and 19th-century Europe. San Diego’s own Kimberly Hunt, Channel 10 anchor, and her sports reporter husband, Billy Ray Smith, will be celebrating their 23rd anniversary this summer. Hunt believes, “a similar faith in God is imperative as you both walk through life together. It helps to align your priorities and values.” Hunt always keeps love in mind and even when she gets mad, the idea of leaving is never thought of as the path to happiness. How does she work through their differences? “I bug him until he finally talks about it,” she said. “We then work it out. Most issues can be met in the

middle. Every once in a while you just have to know what issues mean more to whom.” For Hunt, a romantic gesture is one where their relationship is celebrated. “Any free night is a gift, so waiting up for me to get home from work on a Friday night and having champagne on ice, with two glasses ready—it’s a great start to the weekend!” Indeed, enduring pet peeves and making compromises seems easy when basking in the tropical afterglow of an idyllic honeymoon. Life’s challenges with a partner may require copious amounts of ecclesiastical forgiveness and, of course, the ability to find humor to help ride the frothy waves of friction. As humans pursuing cohabitation and “tying the knot” on all levels—financially, spiritually, etc.—it’s hopeful to look at other species such as whales, which bond for life without pesky compromises. Nature never questions instinct. Who doesn’t long for this type of deep kinship and aspire to this ideal? Taking the leap and facing the future with one who always has your best interest at heart is like sleeping soundly under an open safe sky. What would you do for love if you had no fear?
