PUBLISHER’S LETTER

T

he rustle of lunch bags in the morning, the dash to the school bus, and backpacks filled with fresh school supplies all tell us one thing: it’s the start of a new school year. From private and public schools to universities and beyond, we wanted to focus on how great San Diego education is with this issue. Even we can learn a thing or two about ensuring our children’s future through quality schooling, and how education is a precious resource with no equal. There’s something to learn in each of these articles. Reality television stars can teach us the value of patience while famous local chefs can impart wise words to a younger generation of culinarians. High-tech cars and the latest leather styles embody greatness achieved through knowledge and experience, while charities and broadway shows teach us life lessons that can’t be learned in a classroom. Education is something that is very near and dear to my heart, and I believe that we never truly stop learning. So as you hustle your kids to their classroom, remember that the true classroom has no doors, and that you are the greatest teacher in your child’s life.

FRONT & CENTER CORVETTE CONVERTS THE Z06 The car that Corvette lovers have been waiting for. B Y RY A N S TA N D I F I R D

T

he new 2015 Z06 convertible is the first 650 horsepower “supercar” to take its top off. Corvette’s latest cohesion of strength, style and speed draws the eye of everyone it passes by, whether it be on the racetrack or on the freeway.

NO SACRIFICES When one car model comes out with a convertible cousin, there are usually some sacrifices made to the body to accommodate the removable top. But that’s what makes the Z06 convertible stand out: there are virtually no major differences between the specifications of the coupe and convertible models, including everything from the rim size to the body to the engine.

20

FINEsd.com | facebook.com/FINEmagazines

STYLE MEETS PERFORMANCE Nearly identical to the coupe version, the convertible Z06 takes the same great aluminum frame structure sans the top. Designed from the floor up to be a top-down vehicle, the Z06 convertible mimics the aerodynamic aesthetics of the coupe version to increase performance and reduce drag, giving you the most out of your 650 horsepower engine. Each modification of the exotic Z06 body has been sculpted with purpose: the wider vents help keep the engine cool, the fender flares have been widened to support the larger tires, and the frame has been tweaked to generate the most downforce possible which increases high-speed stability and improves cornering. FRONT & CENTER | LU XURY (continued from page 20)

EASY-OPEN TOP Imagine walking out to your Z06 convertible and dropping its top with the click of your key-fob. With the new, fullyelectronic easy-open-drop-top, converting your Z06 is as easy as unlocking the doors. You can also lower the top while driving at 30 miles per hour or below (as if the Z06 wasn’t eye-catching enough). When you activate the droptop, it even slides behind the seats in style using a “waterfall design.” This new top makes mechanical latches a thing of the past. Even when you’re riding with the top up, the intuitive three-ply design ensures for maximum sound absorption to keep the cabin nice and quiet. Which is good, because the engine sure can roar.

THE BELLY OF THE BEAST Under the vented hood of the Z06 sits GM’s new supercharged 6.2-liter LT4 V-8 engine just waiting to carve out those highways and racetracks. Chevrolet boasts a whopping 650 horsepower with 650 lb-ft of toque at your fingers (and toes) which should more than satisfy anyone’s hunger. Corvette has created essentially their most powerful convertible car ever, and continues break barriers with its

22

transmission. While a seven-speed manual transmission comes standard in the beautiful beast, for the first time Corvette is also offering the convertible model with their new 8L90 eight-speed automatic transmission with an optional manual shift control. A carbon-fiber torque tube manages the power from the engine to the rear transaxle, the direct fuel injection boosts engine efficiency and the Active Fuel Management ensures you get the most out of your gas tank. The continuously variable valve timing keeps the engine running smooth, even while it roars.

CUSTOMIZE YOUR RIDE Personalize your Z06 convertible with four different retractable top colors, five different interior colors and choice of GT or Competition Sport seats. The seats are made from magnesium, resulting in superior strength with less weight than traditional steel frames. While the GT seats focus more on casual support and comfort, the Competition Sport seats allow for greater racing support on the track due to their more aggressive side bolstering. All models come with a fully wrapped interior with your choice of Napa leather, aluminum, carbon fiber and sueded microfiber.

Service Sales and Consignment Restoration Race Support Track Days Rallies

DON’T FORGET THE GADGETS One of the coolest features of the Z06 is the Drive Mode Selector. Usually an add-on customization to performance vehicles, the Z06 has one of these built in. This allows the driver to change the performance style of the car on a whim. Choose between five different driver modes: Eco, Sport, Tour, Track and Weather. These modes electronically calibrate up to 12 performance variables in order to quickly adapt to changing conditions, ensuring that you get the most out of your car no matter what road you drive. There’s also a built-in Performance Data Recorder that lets you capture and share video of your amazing drives. Performance, Sport, Track and Touring driver modes allow for data capture including video, audio, speed, g-force, performance metrics, temperature, track times, and much more.

The Cavallo Motorsports Team has over 100 years experience in the industry with a vast knowledge of late model and vintage exotic vehicles. Located in coastal North County San Diego, Cavallo Motorsports is the premier service and sales exotic car super center specializing in Ferrari, Maserati, Lamborghini, Alfa Romeo, Mercedes-Benz, BMW, Audi, Porsche, VW, Mini, Lotus and Jaguar.

WHEN CAN I GET ONE? Chevrolet expects the Z06 convertible to hit dealerships early 2015. If you want the perfect mix of speed, power, performance and style, look no further than the Z06 convertible.

THE ROYAL TREATMENT

Exceptional Service at Fairmont Scottsdale Princess Resort & Spa. BY MERILEE KERN

L

uxurious spas are de rigueur at any high-end resort, but the Well & Being Spa at the Fairmont Scottsdale Princess Resort takes the integrative spa and fitness experience to a whole new level. Arizona’s stark beauty is a stunning backdrop for this revered retreat—a behemoth 65-acre sanctuary neighboring the Sonoran Desert with the McDowell Mountains on the horizon. The initial approach to this property is like happening upon a desert oasis replete with picturesque palm trees and lush landscaping. A cascading fountain beckons guests into the resort’s front entrance. Just as I drove into the covered valet, I was greeted by the property’s resident “cowboy,” offering my guests and me cold water and a warm welcome. This came as no surprise given the Fairmont Scottsdale Princess

24

FINEsd.com | facebook.com/FINEmagazines

Resort is well-known for its award-winning service. Pam Gilbert, the property’s Director of Sales and Marketing, told me that most of the Guest Services/Bell Stand team has been at the Fairmont Scottsdale Princess for at least 10 years and prides themselves on offering personalized service—often getting to know returning guests by name. The resort’s Director of Guest Services, Thomas Williams, was even named “Outstanding Manager of the Year” by the Arizona Lodging & Tourism Association, and went on to win the national award from the American Hotel & Lodging Association in Washington, D.C. And so my vacation began. After regarding the resort’s gorgeous Spanish architecture from the outside, it was time to settle into my accommodations. There are ten different

types of room options at this property that start with the simple, 525-square foot Fairmont room appropriately decorated in Southwestern décor. On the high end, the resort boasts a 2,100-square foot Presidential suite complete with a living/parlor area that seats six, two bathrooms, a 600-square foot bedroom and a covered patio among other inducements. Also available are stand-alone Casita Suites, 850-square foot versions of beautifully appointed Spanish Colonial estates. The separate living and sleeping areas are a boon for families or those on a working vacation, and the gas fireplace sets a more romantic mood for couples in the winter months. The wet bar with a Nespresso machine and the 42” LG flat screen television are crowd pleasers for all. The Casita area of the resort features its own private pool area with Jacuzzi, which makes staying in these detached dwellings perfect for those who truly want to get away from it all. But no matter where on the property guests stay, beauty abounds. According to Gilbert, the resort grounds are one of the hallmarks that set this property apart. Sonoran Desert cactus blends with lily pad lagoons, a fragrance garden, and a “living wall” of flowers. With the desert flora comes local fauna, the most popular of which is Cecil—a desert tortoise with his own habitat where guests can feed, touch and otherwise ogle this gentle creature. Bunnies, blue heron, ducks, fish, and water turtles are other on-site inhabitants that guests will likely see during their visit. For youngsters, the resort offers a Trailblazers Kids Club where children will meet the mascot, a bearded dragon named Skittles, plus see spiders and snakes kept in aquariums. With bags unpacked and having soaked in my surroundings, it was time to focus on what I really wanted to do at the Fairmont Scottsdale Princess: hit the spa! Well & Being is an expansive on-site destination spa that

bills itself as one that “embraces a foundation of whole health, inspiring guests to be healthy, balanced and a more energetic version of themselves,” which is achieved by delivering a “personal and sustainable wellness program to guests who wish to incorporate optimal health and lifestyle choices with guidance before, during and long after they leave the resort setting.” I aimed to see for myself how these laudable yet lofty goals would be achieved. It turns out that Well & Being fuses health, wellness, nutrition, integrative medicine, cutting edge fitness classes, advanced skincare, and personal care together in order to give you an exceedingly broad range of innovative spa experiences that suit any guest’s needs or wants. For those seeking to get (or stay) in shape while in Scottsdale, one great option is the individualized “Fitness Prescription” program. It starts with a consultation with the resort’s resident exercise physiologist who performs a fitness assessment and risk analysis, then discusses fitness goals, as well as lifestyle and exercise preferences. The assessment includes three diagnostics: the BodPod, the Body Gem, and the Fit Mate Pro. Quite notably, the BodPod measures body composition of fat versus lean muscle tissue while the Body Gem measures resting metabolic rate. The Fit Mate Pro is also extremely comprehensive, measuring maximum oxygen uptake, anaerobic uptake, anaerobic threshold predictions, individual training zones, strength and stamina. Wellness Coaching and Nutrition Consultation services are also available. When you’re ready to sweat, there are a number of compelling options: Aerial Hammock Yoga, Pilates, spinning, body sculpting, Zumba, TRX, and CrossFit to name a few. There is also themed programming by SICFIT and Krank Fusion. Of course, there is a fully stocked fitness center with (continued on page 26)

all of the free weights, Nautilus and cardio equipment one would need to achieve health goals, whether it be to build strength and stamina or to slim down. Staff fitness pros are readily available for group or one-on-one instruction. After the fitness and nutrition endeavors, it’s a must to indulge in some relaxing spa therapy. The facilities and services offered at Well & Being are truly world class, comprehensive, and rife with creature comforts that include an open-air rooftop adult pool with private cabanas, co-ed grotto waterfall for the ultimate natural massage, Health Spa Cuisine and beverage services available inside the garden atrium or poolside, a wet steam room, eucalyptus inhalation room, Swedish dry sauna, hot therapeutic whirlpool, cold plunge pool, and a Swiss shower. In addition to the full range of traditional spa services you would expect - such as massage, salon services, skin care, and body wraps - the resort also offers acupuncture and acupressure. If outdoor activity is more your thing, the Fairmont Scottsdale Princess Resort also boasts a famed TPC Scottsdale Stadium Golf Course, which is home to the Annual PGA Tour Waste Management Phoenix Open (closed for renovations until November 2014), and the Champions Course. Or, the concierge can arrange any kind of excursion to get your adrenaline flowing, including bike riding, rock climbing, hiking, and more. Of course, no spa-driven sabbatical is complete without some nutritious and delicious eats. Luckily, the resort features a Healthy Cuisine menu that serves up fitnessdriven fare both day and night. Options include made-toorder smoothies, breakfast items like house-made granola, 26

and lunch and dinner dishes like Grilled Shrimp & Edamame Succotash, Black Bean & Quinoa Burger, and Poached Atlantic Salmon. Healthy eating options are offered at the spa café, at any of the property’s pools, or for in-room dining so there’s no excuse not to stay the dietary course. When you are ready to indulge a bit, the Fairmont Scottsdale Princess Resort does offer some incredible dining options. Gilbert notes that Bourbon Steak, a AAA Four Diamond restaurant, has “a cellar with over 3,000 bottles, a sommelier, and a Bar Commander who teaches cocktail classes twice a month.” Or there’s La Hacienda, which was named #1 Best Mexican Food by Arizona Business Magazine for three consecutive years. Gilbert says they have a “Tequila Goddess” who is one of few in the country to be certified as a tequila expert by the Tequila Regulatory Council in Mexico. La Hacienda also has more than 240 tequilas, including their own private barrels from Herradura.” Also according to Gilbert, this fall the property is introducing and operating a new restaurant concept in conjunction with celebrity chef Richard Sandoval. The restaurant, which will be named Toro, will reside at the TPC Scottsdale, and its launch will coincide with the re-opening. Having sweated it out on the fitness front, gratified myself on a range of healthy grub, and basked in more than my fair share of spa services, it was time to bid the Fairmont Scottsdale Princess Resort adieu. Though I was sad to go, I left the property invigorated and ready to get back to the grind of everyday life. With my proverbial batteries recharged, I waved goodbye to that ever-present Guest Services cowboy and rode off into the Scottsdale sunset.

14 YEARS LATER

Children’s Lifeline saves the life and sight of a child from Vietnam. BY ESTHER JANE PAUL

F

ourteen years ago, I sat down for my manicure appointment and sensed something was wrong. Kim Dang had been my manicurist for several years, but this time she was distraught. She told me that her sister, who lives in Ho Chi Minh City, Vietnam, had just given birth to a baby boy named Bao who had cancer behind both of his eyes. He had Retinoblastoma, one of the fastest-growing cancers which can quickly metastasize to the brain. Kim went on to tell me that the doctors in Vietnam recommended removing both eyes. She was heartbroken. She felt desperate to do something to help her sister and her beautiful new nephew, and asked me if I could help in some way. I knew of the wonderful work that Children’s Lifeline International was doing for sick children all over the world; Lifeline Co-founder and Chairman, Salah Hassanein, was a long-time friend of mine. I called him up and he immediately set the wheels in motion. He contacted Dorothy and Dr. Jerold Beeve of the Beeve Foundation For World Eye and Health, Inc. in Verduga City, California. They referred Hassanein and Lifeline to The Institute for Families of Blind Children. Finally, Dr A. Linn Murphee, director of Ocular Oncology at Children’s Hospital Los Angeles, was contacted. Dr Murphee is considered the world’s leading Retinoblastoma surgeon. The baby’s medical records were translated into English and sent to Dr. Murphee. He agreed to help. Baby Bao and his mother, Phong, came to Los Angeles where they were taken to see Dr. Murphee, who examined

28

the baby. He agreed that one eye would have to be removed (the cancer was stage-4 in that eye), but he was confident that he could save the baby’s life and his eyesight in the other eye. The Ronald McDonald House in Los Angeles became their home for the next eleven months. The surgeries were performed, and Bao was fit with a prosthesis/ false eye. He had chemotherapy treatments for months. Children’s Lifeline and an anonymous donor covered the costs. After almost a year, mother and son finally returned to the rest of their family in Vietnam. Bao grew into a healthy boy with 20/20 vision in one eye and a matching prosthesis in the other. He brought back with him a few “Americanisms”—he was giving “high-fives” and saying “hi” and “bye.” Almost immediately upon the start of this journey, the Dangs, Kim, and her husband, Hai, had begun the long and arduous process of obtaining a Visa for the family so they could all come to the U.S. again and stay. They were told that their names would be put on a list and that the wait would be 10-15 years. Fourteen years later, after interviews by the U.S. Embassy in Vietnam and seemingly endless paperwork, the Dangs received the letter from the State Department that they had been waiting years for; Bao, his mother, father, and big brother were approved. A few weeks ago, they all stepped off the plane from Vietnam and stepped into San Diego, California: their new home.

AN INTERVIEW WITH THE HUMBLE OWNER OF RANCHO SANTA FE BISTRO BY RYAN STANDIFIRD

M

ozy Jahanguiri is the owner of the quaint, Rancho Santa Fe Bistro located on Paseo Delicias in Rancho Santa Fe. While the restaurant isn’t huge, it feels larger than life. No corner of the bistro has been underutilized, and plant-life decoration crawls along the outside eating area and accents the inside area nicely. Pictures of Mozy with famous faces like owner of the Dallas Cowboys, Jerry Jones, line the inside walls, and the delicious scent of spices and cooked meat waft through the air. With an elegant, French style that mirrors the FrenchAmerican cuisine on the menu, the Ranchao Santa Fe Bistro feels more like eating in a rustic courtyard than in a small Bistro. Mozy has effectively transported you to the French countryside, and you forget that you’re squeezed between multiple stores and businesses in the heart of Rancho Santa Fe. “I did it all myself,” he says, motioning from the outside dining area to the inside decorations. “I’m changing it every day.” One of the things that can be attributed to the Bistro’s success is also one of the things that makes this restaurant unique. “Value is very important,” Mozy says. “I don’t pay a chef, I am the chef, myself... I don’t pay a manager, because I am the manager.” While this personal touch ensures quality service and culinary expertise, it also spills into the quality of the ingredients he cooks with. “I go to the market,” he says, “and I buy what I want, not what they are going to send me.” By cooking everything and managing the shop himself, he can afford to buy the freshest ingredients and sell his food for the lowest prices. It’s no wonder the Rancho Santa Fe Bistro is so successful, especially when Mozy’s philosophy is, “Be honest with people.” And Mozy’s honesty has earned him many valuable relationships with customers who he considers his friends. “Our food is very honest and simple,” he says, recounting how he never buys lemon juice, but will use a fresh lemon for every fish he cooks. Fish, by the way, is his most popular dish. The next time you find yourself in Rancho Santa Fe, stop by the Rancho Santa Fe Bistro. Whether you’re looking for a fresh, healthy meal, want a little taste of the French countryside, or are just looking for an honest eating experience, you can find a friend in Mozy Jahanguiri. facebook.com/FINEmagazines | FINEsd.com

CARS FOR A CAUSE

Cruise4Kids raises money for children of the community. BY TIFFANY WEI

W

ho knew that 40 miles could help to better a community? From Coronado’s Ferry Landing to the Jet Source Jet hanger, Ferraris, Maseratis, and Lamborghinis light up the street. Heads turn and all eyes are on the 123 luxury cars, all caravanning across San Diego. The nationally-recognized Boys and Girls Club of San Dieguito will host the fourth annual anticipated event, Cruise4Kids. The San Dieguito branch is distinctive among the other branches for the national recognition of its programs. Every year, the Boys and Girls Club honors one “Youth of the Year” at the Cruise4Kids event, and this year, the Cruise4Kids event will honor Anna Ravagan, who is nationally recognized for helping the community. The organization strongly believes that hosting this festive event brings the community together for the benefits of our next generation. Growing rapidly, the event started with just 73 exclusive cars and has now grown to 123 high-class vehicles. Having spent six months meticulously planning for the big day, Nino Venturella encourages everyone to come out and support the event. Venturella is a Private Mortgage Banker for Wells Fargo and started his own event production company, Nino Venturella Productions. He founded Cruise4Kids in 2010 and shared his ideas with the San Dieguito Boys and Girls Club with the hopes of helping the kids while combining his hobby for cars. With his connections from Wells Fargo, Venturella was able to find people to help him start up Cruise4Kids. With over 30 sponsors, he excitedly explained that, “even the Junior Seau Foundation has donated $10,000 to this event.” Every year, Cruise4Kids receives over 80% of new donators. Anticipating a great turnout, owners of these high-end cars donate them for the day and drive around the participants all for the benefit of the Boys and Girls Club. Nino even admits to hand-picking some of the cars. The day begins with breakfast at Il Fornaio Italian

Restaurant, a drivers’ orientation, then to the main rally. Once all the cars make their way up the I-5 freeway, catered lunch will be provided and more of the fun begins. While listening to the DJ mix some tunes, jets will be on display at the “finish line at Jet Source Jet Hanger in Carlsbad to accommodate more people,” informed Venturella. A large experience package will go up for auction by the Legends Group, and kegs will be brought from La Jolla Brew Company and 6195 Vodka. This event is not to be missed! Retail from Ferrari, Lamborghini, NexBelt, and many more will be selling their apparel and shoes at the two destinations. This year, San Diegans can especially look forward to three or four drones to bring us a birdseye view of the sight in real time. Different from last year, more television channels will be actively following the event on Saturday September 6, 2014 where over one million people will watch the festivities from 7:30 am- 2:00 pm. Although automobiles and exotic cars seem to be the highlight, many of the participants enjoy the awards ceremony. At the end of the 40 mile drive, two awards are given: “Kids Choice” and “Best in Show.” Throughout the rally, polls are open to vote for your favorite car. The first award is given to the car that is favorite among the kids, and the second is geared more towards which of the cars is most sophisticated all-around. So this September, instead of sitting on the couch, get yourself out to San Dieguito and get into a car. Families are more than welcome. The cost to drive one of the exotic, donated cars is only $500 per participating vehicles (two people) and and extra $100 for any additional riders. Also, registration includes a swag bag and shirts. And don’t forget that just participating at Cruise4Kids also includes endless Facebook photos and Kodak moments. So relax and sit back. Just enjoy the ride. If you would like to donate your car to the event, sign up to sponsor, or become a participant please visit c4ksd.com.

SUPPORTING THE ARTS La Costa Film Festival Splashes Into Its Second Year. BY ERICA MINER

L

a Costa Film Festival co-founders Michael and Ruby Callihan are on a mission. Three years ago, admiring the passion with which filmmakers try to fulfill their dreams of seeing their work on the silver screen, Michael and Ruby used savvy gleaned from years of business success to plunge into producing a brand new film festival for San Diego’s North County. Their first foray into this “Hollywood-by-the-Sea” was a huge success in 2013. I sat down with them as they discuss how the journey continues in this year’s second annual festival, with events and screenings in and around Carlsbad. EM: Please describe how and why you created this festival, your goals, and what made you decide on Carlsbad as the “perfect” atmosphere for your festival. MC: It’s a two-fold mission. The germ of the idea came to us from La Costa Resort’s association with the old Hollywood pictures. As residents here in Carlsbad, our first thought was bringing this cultural experience. The more we got into it, we realized to sustain this we needed to showcase everything we have here. We thought, “There’s lots of talent here, a desire to have more culture available. Why not bring the festival here?” RC: We presented La Costa Resort a blueprint of our plans in September of 2012, about fourteen months before our debut

32

in October, 2013. We’d already been doing a lot of research, since we’d never put on a film festival before (laughs). MC: They said, “We’d love to support your film festival.” EM: To put that together in fourteen months, even if you’d already put on a film festival, is impressive. MC: It almost has a predestination feel. We’d been successful in business, both of us from entrepreneurial families. RC: Mike and I both were in mortgage banking. That’s how we met. MC: The more we got into it, the more we realized it’s a different kind of business. We’re working to get all the elements necessary to be sustaining; reaching out to the community of Carlsbad to get everybody involved. This area is full of talent. Once people saw our commitment and passion, they came from everywhere and wanted to be a part of it. Every time we hit a roadblock or didn’t know what to do, somebody stepped up. The Mayor of Carlsbad has been very supportive. RC: The City of Carlsbad proclaimed October 24, 2013 La Costa Film Festival Day. We’ve received a grant from the library to cover the rental fees. Cinépolis has been an incredible partner from day one. 99% of us are working as volunteers. We have a passionate core team trying to make this thing happen. MC: We discovered the number one innovating company in

3D technology, Legend3D they did Spiderman, Batman, Transformers, all the 3D films - is based in Carlsbad. RC: The journey these last three years has led us from one person to the next, filmmakers, producers, who live here. We’re being guided to where we are going, almost like a calling. We’ve chosen the Boys and Girls Clubs of Carlsbad as our beneficiary with net proceeds. We’re not quite there yet but we’re hoping to write a check to them and support what they do. MC: After last year’s festival, we got recognition from Mandalay Sports Media, a big Hollywood studio group interested in sports films. One of the co-chairmen, Mike Tolan, did programming out of La Costa back in the 80s. RC: He filmed a series on sports legends back then. He loved our environment here and has given us his commitment to help us grow the festival, as have other film industry professionals. EM: Can you give me an overview or preview of the types of films you’re planning for this year? RC: Right now we’re locking down our program. Last year we had foreign, independent, and narrative films, documentaries, and sports films. A Carlsbad filmmaker has submitted a short that hopefully will make the final cut. It’ll be nice to have a Carlsbad filmmaker in the festival. We definitely want to support that. MC: We’ve developed a great deal of respect for filmmakers. They labor diligently for years to get their films to market. We feel a connection with them, and are proud to show their product. Our goal is not just to have a great opening night. We want every film be special.

Enjoy Pacific ocean view shopping with an incredible price point of $50 and under at OOH Fashionista Boutique.

NOW FEATURING DESIGN BY Kenneth barlis

EM: The quality of the films selected sets your festival apart from others. RC: It’s only our second year. It’s amazing what we did in our first year without the background. We get all fired up when we get good news on things. It validates what we’re doing. EM: As they say in Hollywood, “If the door is locked, just break a window.” RC: I think we’ve broken a few (laughs). EM: Your passion is inspiring. LCFF is certain to be a huge hit. Good luck! RC/MC: Thank you! For more information about the La Costa Film Festival, check out their website at lacostafilmfestival.org.

MAT, MUSCLES, AND MIND How yoga can change your life. BY ASHLEY BAKER

T

he benefits of yoga provide both instant gratification and lasting transformation. For many people, many workouts these days require too much time with too few results and can be incredibly discouraging, while monotonous routines week after week can lead to stagnation. But yoga can improve your physical and mental capacity in no time, many see results after the very first class! Yoga is for everyone. Most yoga studios and local gyms offer yoga classes that are open to all ages and fitness levels. It doesn’t mater if you’re a teenaged athlete, a middle-aged mom, or an older gentlemen. Even fitness buffs and body builders can find a place for them on the mat. Everyone can feel accepted and included and, unlike other workouts that may worsen a bad knee or back issues, yoga’s low-impact style can actually heal damaged bodies. Yoga is not just about working out, it’s about a taking control of your mind and body. The practice of yoga allows the body to be still in a world consumed with chaos. Peace and tranquility are achieved through focused training. Of course, slimming down the body, gaining increased control of balance, and centering your mind are big pluses as well. Yoga’s deep breathing and meditation practices help foster an inner shift from todo lists, kids and spouse’s needs, financial concerns, and relational struggles to something a little bit bigger than your daily stressors. Yoga helps relieve stress, unclutters the mind, and helps you achieve a more focused state. In 2004 a Harvard study found that yoga can reduce the impact of exaggerated stress responses and may be helpful for both anxiety and depression. This works because yoga requires a great deal of focus while holding balancing poses. This intense focus acts as a form of meditation which helps to unite mind and body as one, giving you more control

over things like cravings, anger management, mood swings, and depression. Another amazing benefit of yoga is that there are so many different types of yoga practices. This means that you can choose a yoga style that is tailored to your lifestyle, such as hot yoga, power yoga, relaxation yoga, prenatal yoga, and more. Whether you prefer to be at home watching a DVD, or in a studio with an instructor, there are a huge variety of options available to suit your goals and needs. If you are a yoga beginner, Hatha yoga, which focuses on basic postures at a comfortable pace, would be a great place to start. If you want to increase strength through using more of your own body’s resistance, power yoga may be right for you. You can find a great online yoga program at Gaiam Yoga Studio that focuses on Hatha yoga. And if your looking to bring your yoga routine to the next level try Advanced Yoga, or Bikram (also called “hot yoga”). But yoga’s benefits aren’t just stress relief. Yoga’s focus on strength training and flexibility is an incredible benefit to your body. The postures are meant to strengthen your body from the inside-out, so you don’t just look good, you feel good too. Each of the yoga poses is built to reinforce the muscles around the spine, the very core of your body. When the core is working properly, posture is improved, thus alleviating back, shoulder, and neck pain. An added benefit to doing yoga is that the digestive system gets back on track due to the stretching that yoga involves. This can relieve constipation, irritable bowl syndrome, and acid reflux. Another one of the benefits of yoga is that stretching and the holding of postures also causes muscles to lengthen, which gives the body a longer, leaner look. So whether you desire a leaner body, mental stability, physical strength, or just a fun new work out, grab a mat and start your yoga journey today. Trust me, you won’t regret it!

ELEPHANT WALK OUTDOOR FOOTWEAR

MORE THAN JUST A STORE AN INTERVIEW WITH TODD JOHNSON, CO-OWNER OF ELEPHANT WALK OUTDOOR FOOTWEAR BY RYAN STANDIFIRD PHOTO BY JON POLMAR

E

lephant Walk Outdoor Footwear boasts a unique footwear experience for customers who want high-quality outdoor footwear. The store opened in December of 2010, and has thrived in their Carlsbad location. Owners Todd Johnson and Andy Grimalauskso have a combined forty years’ experience in footwear, and set out to capture the outdoor footwear niche, while offering a personal shopping experience. “What we’re trying to do differently from other stores,” Johnson says, “is to not make the customer feel like a customer, but to feel like a guest, while offering the best product.” Johnson cites UGG as their top-selling footwear brand, and says that they have one of the largest selections of UGG footwear in Southern California, featuring the UGG Collection made in Italy offering footwear, handbags, apparel, and accessories. “We take the time to measure your foot to make sure you get the best fit,” Johnson continues. “A lot of companies don’t do that anymore.” He accredits the focus on customer service as a large part of their success. “We try to anticipate what the customer’s needs are, because some customers don’t know.” Johnson says that one of the greatest joys in working at Elephant Walk Outdoor Footwear is to help a customer find something they didn’t realize they were looking for. “We’re there to give you every option available from what we have in the store to make your shopping experience a complete pleasure.” Elephant Walk Outdoor Footwear also has “a vast variety of UGG for children, and KEEN for children.” Johnson says. “It varies by season, but UGG being the biggest of them all. It’s our number one line for men, women, and children.” Elephant Walk Outdoor Footwear has a complete lineup of footwear brands including OluKai, UGG footwear and accessories, Smartwool socks and apparel for men and women, and CHOOZE children’s brand footwear. CHOOZE is a Goods Returns Company. CHOOZE invest their profits in antipoverty loan programs that enable women to lift their families out of extreme poverty. More powerful then a donation, its a sustainable way to have a positive impact, by giving a hand-up rather than a hand-out. Elephant Walk Outdoor Footwear is much more than just a footwear store. “Come experience us, come experience our store,” says Johnson. “It’s an unusual shopping experience.” They have unique gifts that give back to the community, whether it be artwork and jewelry done by local artists on consignment, or even paintings done by elephants. That’s right, pieces of artwork painted by elephants. “Proceeds from the paintings by elephants go to help the elephant sanctuary in Thailand,” Johnson says. It’s no wonder where Elephant Walk Outdoor Footwear got its name. The next time you need a new pair of high-quality shoes or are looking for an exotic work of art painted by an elephant, check out Elephant Walk Outdoor Footwear, where you’ll be treated as “a guest” and not as just another customer. THE PRICE OF EDUCATION

How local private and public schools impact your home’s value. B Y L I S A V O M E RO I N O U Y E A N D J A N E T B I G G E R S TA F F

I

f you are a parent reading this article in full “back-to-school mode,” you already know the importance of your school district selection to your child’s future. The quality of the education, the friendships they are likely to form, and the influences it will have on the rest of their life are all determined by what school they go to. But the quality of the school your child goes to does much more than that. School district rankings also have a large effect on the median sales price for properties located within San Diego County. Incorporated into the traditional “location, location, location” tried and true adage of real estate is the quality of the school district your home falls within, especially for owner-occupied buyers with children. For families of school-aged children, the number-one reason for buying, selling, or staying in a home is directly related to their children’s education and special needs. Even across the county, the resources available to children are not the same depending on where you live. As a result, parents are specifically relocating their special-needs child into San Diego County from other states in order to place their child into a very specific district or programs. Among special needs children, autism is the fastest growing segment of the childhood population, with nearly 1 in every 68 children receiving an autism spectrum diagnosis. Yet, even across the same district within the county, the programs available to special-needs children vary widely by specific school. Regarding the impact of schools on home values, the best school districts are typically located in the neighborhoods with the highest priced homes and corresponding property tax rates. As a result, annual sales typically peak in the three summer months of June, July, and August - when the kids are out of school and parents want to transition their children into their new neighborhood and school. Another alarming trend is the drop-out rate at the lower-performing schools, which correlates to the lower-priced neighborhoods of the county. In some districts the drop-out rate is more than 50%. Compare and contrast the lower school ranking with the growing trend of private schools for those families that can afford the added expense. For these buyers, the location of the home in the vicinity of private schools that offer additional religious instruction or other moral value-based educational options are of paramount importance. For private school attendees, the percentage of children that go to college are a whopping 98%. So it comes as no surprise that the neighborhoods that offer private schools typically out-sell other neighborhoods in less days on market, overall price, and price square foot. If you want to give your children the best chance to succeed while simultaneously increasing your own home’s property value, we suggest welcoming any private schools that want to start up in your area with open arms.

“For families of school-aged children, the number-one reason for buying, selling, or staying in a home is directly related to their children’s education and special needs.”

DR ELIZABETH CHRISTENSEN: OPTOMETRIST Why is my child smart in everything but reading and schoolwork? When you have a bright child who doesn’t achieve to his or her potential we often affectionately call them underachievers, because we know they are capable of achieving so much more. While they may be able to get by with what they learn by listening, reading can be quite a struggle. A clear sign that a vision problem may be at the root of your child’s difficulties is poor performance on written or standardized tests. Over the years I have found that bright underachievers often have vision problems which make reading difficult. Sometimes they are very diligent and able to achieve because they spend significantly more time on homework than it should take. It may surprise you to learn that many of the children who have vision problems interfering with learning actually have 20/20 eyesight (with or without glasses). That’s because 20/20 eyesight merely means you can see a certain size letter at a distance of 20 feet, whereas vision is a complex process that involves 17 visual skills which are critical to academic success; and seeing 20/20 is just one of those visual skills. Over 60% of children who struggle with reading and learning have vision problems which are typically 100% correctable, yet when undetected, these children continue to struggle, don’t reach their potential and perform poorly on standardized tests. In order to determine if your child has a correctable vision problem that is interfering with learning and performance on standardized tests, you need to schedule a visual skills evaluation to test the skills necessary for academic performance, including: eye movement control, focusing near to far, sustaining clear focus, eye teaming ability, depth perception, visual motor integration, and visual information processing skills. Vision Skills Evaluations are typically performed by optometrists who are Fellows in the College of Optometrists in Vision Development. www.covd.org

CAPRICE

BOURRET

Sophisticated Life The

B Y K AT I E M I L L E R

This month, I spoke with Caprice Bourret of Bravo’s Ladies of London reality television series that centers around “sophisticated life” in the United Kingdom. We discussed fashion, art, health, fitness, culture, and the differences between how Americans and Europeans view manners.

facebook.com/FINEmagazines | FINEsd.com

51

ourret has an eye for fashion, be it high-end labels or underrated boutique store trends. She has graced the cover of over 300 magazines as a model and now owns her own lingerie, swim, and bedding fashion lines. I asked her about the differences between Europeans and Americans when it comes to fashion. “Americans are a little more conservative,” she said. “In Europe, there is more originality and people are very much led by edgier fashion.” So what fashion trends does Bourret follow? “After becoming a mom, my style has become quite conservative. I love my power suits, I love my A-line cuts and I love black; it is very timeless.” This may be hard to believe, as she has often been spotted in micro minis and plunging necklines on the red carpet, but her maternity garb has given us a glimpse into her new momma style. Unfortunately, we will have to wait to see more of until the new season premiers. Perhaps we will catch a glimpse of the star in her favorite

52

designers, Prada and Valentino? For now, we must settle on her advice for the most overrated trend of today, which she didn’t hesitate to mention is the high-waisted look. “It is not complimentary on any body shape,” she said. As a Los Angeles native, Caprice now enjoys getting to know her new town and has become quite fond of the London culture. She is particularly drawn to the French Mediterranean and Niçoise-inspired restaurant, La Petite Maison, which she deems is “the best food in London.” Her favorite bar is at the Cannought Hotel, and when asked about her favorite museum, she replied that her favorite museum isn’t in London. “My favorite museum in the world is the Museum of Tolerance in Los Angeles,” she said, which seems rather fitting with the theme of her reality series. To escape the stresses of her everyday life, she rents a house on the island of Ibiza off the coast of Spain each summer, which she says is a popular travel destination in August for Europeans. “The food is unbelievable and the beaches are beautiful; there is a bit of glam and bit of a hippy style.

It’s nice for families and it’s nice if you want to party your tushy off!” And that is exactly what she does! But how does she stay sane the rest of the time? “You have a choice in life whether to be happy or not happy, and I choose to be happy,” she said. “I think it is very important to have this kind of attitude when you are raising children because children are like sponges. Whatever their parents are, they really take that onboard and it shapes their character.” The mother of two infants, one born via surrogate and the other conceived naturally, is clearly all about her two boys now. I asked her how she bounced back after giving birth. Other than her amazing genes, she claims she “can put on weight looking at food, so I am 90% vegan and I eat quite small portions throughout the day. Running after two small boys under the age of one is like a constant cardio routine. When I was pregnant I put on 40 pounds, and thanks to my gorgeous children I have lost it all.” As far as beauty regimens go, she says she’s been getting facials all her life, but what she really thinks is important is what you eat. And also, “just being a happy person. There is nothing worse than looking at a woman who is aesthetically beautiful, but has a very mean and unhappy disposition.” I couldn’t agree more. After watching the season finale of Ladies of London, one may become rather sympathetic toward this mild-mannered beauty getting caught up in all the drama; one slip of the tongue, add some miscommunication, and suddenly a small issue blows up with instigators watching from the sidelines; bias opinions, a little wine, and cameras always rolling. But despite all that, Bourret clearly holds her own amidst the chaos. One thing that you can definitely take away from the series, is that manners and kindness (especially in a stressful situation) can go a long way. When I asked about American versus European customs, Bourret conveys that she doesn’t believe in all the strict rules of British high-society, or American ideals for that matter. She states simply, “At the end of the day, if you are a good person, why should you be judged because you do not know proper etiquette?” I completely agree; when someone dances to the beat of her own drum, we should embrace it.

ew who enter college embrace the idea of giving back. Few are financially able to, either. It’s hard to part with even five dollars for most university students on a stringent budget. Working part-time while studying full-time before getting the chance to enter the work force with a college degree is difficult. Therefore, most let alone giving back, for there is often a student loan to pay back. It is no secret higher education comes with a hefty price tag. A high school education is now a calculated academic preoccupation with every choice of subject that also includes “community hours” along with a varsity sport for optimizing the best chances of a “full ride.” The pressures of junior year in high school are riddled with

maintaining an outstanding GPA, and studying perpetually for SAT and ACT tests to guarantee acceptance to an elite and prestigious university. Knowing what you want to be when you grow up is now an expectation that has diminished many a carefree childhood. But these days, at least the concept of giving back is introduced and encouraged as early as preschool. An education in giving back was established in 1999 by alumni Patricia (’83) and Marc Brutten (’79) who gave the original endowment of $100,000 to provide an on-campus experience of running a foundation, the importance of philanthropy, and the realities of investing and fundraising for and by students. It was then, on the botanical campus

of University of California, San Diego, the UC San Diego Student Foundation took its first baby steps. With each year, it increases its student donor participation and has thrived. “This year has seen the highest student donor participation ever,” said Brandon Buzbee, alumnus (’06) and Senior Director of industry engagements. “The portfolio has grown to over $500,000.” “Friends asking friends to donate has been the most effective campaign,” said Rubi Trevino, Assistant Director of student philanthropy and advisor to the Student Foundation. “We have also used social media with success to promote the ‘Give. Invest. Gain.’ initiative.” The money collected is for scholarships to students in need of financial assistance. “The top scholarship qualifications are financial needs and merit,” said Buzbee. “About 64% of UCSD students are on ‘need-based’ aid.” He goes on to explain that there are two different categories that each offer 10-15 scholarships. “One category is the Senior Class scholarship for $2,000 from graduating seniors to incoming freshman, and the other is the Student Scholarship for $3,000 to $5,000 for those continuing with their education. The gratitude of the seniors

and the excitement of the incoming freshmen are capstone moments which inspire philanthropy.” “A written summary of philanthropic mindset is also carefully considered on the scholarship application,” added Trevino. “Former scholarship recipients become our best stewards of philanthropy and often, become trustees as well.” Tommy Sy will be a UCSD senior this fall. His major is Management Science. Although he isn’t a Student Foundation scholarship recipient, he is a scholarship recipient and a volunteer enthusiast from Rosemead High School in East Los Angeles. He chose UCSD because of its exemplary Economics program and beautiful location. The faculty and other students inspired him to give back to the Student Foundation with a donation and by volunteering. Sy is now serving as Vice President with the Student Foundation investment committee. “I decided in high school to make an impact wherever I go,” said Sy. “And I am motivated by inspiring people at UCSD. I am really thankful to be here. During spring break, I volunteer with Alternatives Breaks that specializes in helping people with disabilities because I like to help.” Sy’s sibling has autism, and while there isn’t a lot that can

“The only person who is educated is the one who has learned how to learn and change”—Carl Rogers alleviate this disability, he continually gives back. UC San Diego Student Foundation is a pioneer in the UC system and one of the few in the nation. In 2012, the University of California, Riverside launched their annual Dance Marathon by engaging students in philanthropy. The event is planned and executed by students that have raised funds for the Guardian Scholars Program at UCR. “In its three years running, Dance Marathon has raised over $83,000 to support UCR students,” said Kristin Ann Seiler, Director of Philanthropy and Young Alumni Engagement at the UCR Office of Alumni and Constituent Relations. “Because of the success of Dance Marathon, the program is expanding and a new student philanthropy group is launching that will organize community service events and teach other student groups how to execute their own events. The group, R Philanthropic Culture, will launch in the fall of 2014. We also feature Donor Appreciation Week hosted by our Student Alumni Association, which features student participants.” 58

UCSD also hosts a charity organization called the Foundation for International Medical Relief of Children. Jonathan Winfield will be the President of UCSD’s FIMRC branch this upcoming school year. “We take orphanage trips to Mexico, where we play with orphaned kids down there and make a donation as well,” says Winfield. “FIMRC also delivers international medical aid to those in need.” Most private schools, particularly the Ivy League schools, have 300-year-old legacies in place as each generation is expected to continue with the tradition of giving back: lifelong donors. This insures a high return on investment in a solid education, which doesn’t guarantee a job or career, but will often put a graduate in the final selection process. Student-driven philanthropy is alive and thriving, and before long it will be offered on most university campuses as a creative means to meet the financial stresses of each new influx of students. The notion of students giving to students is a fairly new resource, and an education as well. facebook.com/FINEmagazines | FINEsd.com

“He who opens a school door, closes a prison.” —VICTOR HUGO

School Bells or B Y R AY M O N D D A L E Wow, is that a radical statement or profound thinking? What did Victor Hugo know? Maybe more than we might imagine. He studied the law, but never practiced law, and spent 15 years in exile. With that background, I am assuming he knew firsthand the benefits of an education, and the vagaries of imprisonment. What does that have to do with us? Almost every parent struggles with the decision of how to educate their children. Some choose Public Schools, some Private, and some Home School. The vast majority in this country choose Public Schools. Why? Largely because of the cost compared to Private schools. There are other reasons of course like convenience, but cost is the single biggest reason based on research compiled by the National Center for Education Statistics (NCES). However there are costs associated with Public Schools beyond the obvious…books, supplies, lunches, outings and more. Alarmingly the NCES cites student dropouts as a major cost factor, both to the student and to society in general. You can read national, state and local statistics, and while the numbers vary, the fact is we have an alarming number of student dropouts in our Public School system. Not so much in the Private

60

FINEsd.com | facebook.com/FINEmagazines

Alarm Bells? Schools. In fact it is nil. Before getting to those other “costs” of student dropouts let’s explore an important question: Why do students drop out? In a report from Civic Enterprises, funded by the AT&T foundation, these four reasons are cited for students dropping out of school before completing high school: Lack of academic preparation Boredom or lack of engagement Family obligations including parenthood The need for paid employment Students themselves have added “too much freedom, not enough rules, and parents unaware of attendance or grades.” By contrast a brochure published by the Council for American Private Education says that students benefit from “academic excellence, high achievement, values based setting and a safe secure setting.” From the same brochure we find this illuminating chart: Percentage of teachers who perceive certain issues as serious problems in their schools student disrespect for teachers use of alcohol drug abuse student tardiness student absenteeism students unprepared to learn lack of parent involvement student apathy

PUBLIC 17 7 6 10 14 30 24 21

Private 4 3 2 3 3 5 3 4

What are the estimated costs attributed to the student dropout problem? Let’s quantify the problem. There are almost 1.5 million students dropping out of high school each year. Some have asserted that the costs of public programs to “deal” with this problem are expensive. No doubt, but aren’t the costs of inaction far greater? The truth is that high school completion is needed to enter college, and most of the job market. If we don’t have

a solid educated workforce, how do we grow our economy? If we aren’t producers and only consumers, how long can that go on? If we reduced the current number of dropouts by 750,000, or about half, the graduation rate goes up of course. The

“It seems to me that if the public school system could attain to some level of equivalency of the private schools, we would enjoy a real economic recovery.”

benefits of a decreased dropout rate are that high school graduates make more money than a dropout; estimates are as much as 50% more income per year. Some estimates are even higher. If the 50% increase in income came to $20,000 over 50 years in the work force, that would equal $1 million! The public benefit is staggering. It could mean more income tax, less welfare payments, less subsidized health care and less likelihood of involvement in the criminal justice system. No matter how you run the numbers, the benefits, both to the graduating student and the taxpayers is in the 100’s of billions of dollars each year that the high school dropouts are decrease by half. In about a decade that would be $1 trillion. It seems to me that if the public school system could attain to some level of equivalency of the private schools, we would enjoy a real economic recovery. Did Victor Hugo pen the words “penny-wise and poundfoolish?” I don’t think so. Yet the term fits the current method of dealing with a very real problem in the education system. I think Hugo would agree.

caught up with a few of my favorite San Diego chefs who are trailblazers in their industry. From pure, utter passion to technique and skill, these chefs are committed to their craft and provide delicious inspiration to everyone around them.

EXECUTIVE CHEF JEREMIAH BRYANT OF SALTBOX Executive Chef Jeremiah Bryant of Saltbox graduated from the Western Culinary Institute in Portland, Oregon, which is now known as the Le Cordon Bleu College of Culinary Arts. He has 20 years of experience in restaurants, hotels, catering, and as a private chef. “I have learned something unique from each experience I’ve had, whether it be what I should be doing or what I should not be doing,” Chef Bryant explains. “I think any good chef is a puzzle of pieces fit together over time.” Chef Bryant’s advice to up-and-coming chefs is to get in the kitchen and be the hardest worker there. Shaping a changing menu of seasonal items, he works with a close-knit team, encouraging them to have a vested interest in everything they do. “I tell all my cooks I will teach them everything I know so they can take my job one day,” he says. Bryant may have a classical training background, but his style is much bolder than that. “I like to break down the components of traditional comfort food and reconstruct them in a way that is unexpected. I like to say my creativity is not to do what nobody does, but to do something everyone does in a way that nobody expects.” Don’t miss Chef Bryant’s Fried Pickles or BBQ Chicken and Waffles. EXECUTIVE CHEF BRANDON FORTUNE OF KITCHEN 1540 Born and raised in Georgia and Classically French-trained from Le Cordon Bleu, Kitchen 1540’s Executive Chef Brandon Fortune jokingly says that his advice to up-and-coming chefs is to “run!” All kidding aside, he says the biggest factors to consider are dedications to the craft, patience, understanding, and acceptance. “As students are graduating culinary school at a very young age, natural human maturity plays a key role in taking on more responsibility in the kitchen,” he says. “When entering the industry as a young culinarian, understanding the systems, structures, and hierarchy will help in better strategizing professional goals and help a person work up the ranks as time allows.” Chef Fortune uses local, organic, and sustainable ingredients on his menu, doing his best to keep all produce purchased from within a 200-mile radius of the restaurant. “As we continue to mature as a food scene here in San Diego, our farmers will be able to continue to expand their services with us,” he explains. “Our dishes are approachable, less fussy, simplistic, and all about flavors. Of course there is a dash of whimsy, but all-in-all, diners will find it soulful and warming because that’s what the nostalgic dishes do for me.” At Kitchen 1540, Chef Fortune pays homage to classic dishes he enjoyed as a child including Shrimp and Grits, Chicken and Dumplings, and Curried Pork Gumbo.

CHEF GIUSEPPE CIUFFA OF GIUSEPPE RESTAURANTS AND FINE CATERING Born in the northeastern valley of Ferrara Italy, Chef Giuseppe Ciuffa was surrounded by food and family as a child. He enjoyed spending time in

the kitchen and learning all of the simple culinary techniques from his mother. He strongly believes in cooking, eating, and using sustainable, local, and organic ingredients, as well as special ingredients imported from Italy. “I like to create all of the menus in my business,” Chef Ciuffa says. “My idea of healthy eating is to incorporate everything your body needs: protein, fat, grains, and fruit. When I put together a dish, I make sure every category is included. I don’t believe in diets, I believe in discipline and regime.” As an avid cycler and outdoorsman, it’s clear that Chef Ciuffa takes this philosophy seriously. Considered one of the most popular Mediterranean-inspired catering companies in San Diego, Giuseppe Fine Catering is available for all special occasions, including weddings and corporate events. Giuseppe’s popular San Diego restaurants include Caroline’s Seaside Café, Museum Café, the newly opened Sonata Bistro, High Note Café in Symphony Towers, and Bottega Americano which is scheduled to open in August 2014.

CHEF DEBORAH SCOTT OF INDIGO GRILL Executive Chef Deborah Scott of Indigo Grill has a distinctive style in the kitchen, showing a love for aesthetics, presentation, and flavor contrasts. She attended AA Baltimore Culinary College and says her mentor was her dad. Chef Scott’s advice for up-and-coming chefs is straightforward: “Don’t put all your eggs in one basket! Get a good education and supplement with culinary classes unless you have a good amount of experience in the field.” Using organic, local, and sustainable ingredients, Chef Scott loves to support local farmers. “Typically, I change the menu quarterly with seasonal selections,” she says. “The theme of my cooking is eclectic, with a concentration on presentation and combining ingredients that play off of one another.” Don’t miss Chef Scott’s Pipian-Crusted Brie or her new Bibimbap Hot Pot at the newly-remodeled Indigo Grill in the heart of San Diego’s Little Italy. And since she loves spending time in the dining room interacting with her guests, you might get a special opportunity to meet her.

here was no such thing as fast food in our home; ingredients were simple and straightforward, and this recipe is no exception. This was one of my favorite recipes that my Italian mother made for me often, simply because I asked her too!

18 CHINESE CABBAGE LEAVES Serves 6 ½ pound ground veal ½ pound ground Italian sausage 1-1/2 cups prepared brown rice ¼ cup Italian seasoned breadcrumbs 2 large eggs, lightly beaten 2 cloves garlic, crushed 3 tablespoons chopped flat-leaf parsley ¼ cup grated Parmesan cheese, plus more for garnish ¼ cup extra-virgin olive oil Pinch of chili flakes Salt and pepper, to taste 1 jar of your favorite marinara sauce

METHOD: For the cabbage leaves: Bring a large pot of salted water to a boil; blanch the cabbage leaves for 2 minutes. Remove leaves and immerse in a bowl of ice and water. Remove to a plate lined with paper towels. For the cabbage filling: In a large mixing bowl, combine the veal, sausage, rice, breadcrumbs, eggs, garlic, parsley, Parmesan cheese, olive oil, chili flakes and salt and pepper; incorporate thoroughly.

Preheat oven to 350 degrees F. Place a whole cabbage leaf on a cutting board. Add some of the cabbage filling to the center and roll up, folding in the sides and fastening with a toothpick. Repeat procedure for remaining leaves. Add cabbage rolls to a baking dish; cover with marinara sauce. Cover baking dish tightly with foil. Place cabbage rolls in oven and bake for one hour. At service: Place three cabbage rolls on a plate. Garnish with Parmesan cheese.

Certified Dating Coaches Q & A with Karian Forsyth and Bryan Lindahl

How can a dating coach help to improve a person’s dating life? Feedback, Feedback, Feedback. Sometimes we don’t realize how we are being perceived by others. Gaining feedback from a dating coach is much better than feedback from your family or even your closest friends because friends and family are more focused on making us feel ok with the situation. Sometimes the truth hurts, but when it’s done with common goal in mind people a usually are more open to it. As a dating coach I am neutral and unbiased to the person and have only one goal for them, and that is to help them be successful.

Over the past few years, have you seen more of a need for dating coach guidance? Or less? More for sure. With the increase of singles in our society, and all the online dating websites keeping people in their homes, the need for a dating coach and guidance in successful dating is much greater! There are several million singles in the United States and so many people are relying on technology to connect. A real connection comes from meeting someone and getting to know them on an emotional level and liking that person. People today are relying on pictures and profiles for that “instant” attraction and they think that dating should be the same way as well. So many people say that they can tell if there is chemistry within the first 5-10 minutes of meeting someone. It takes time to really get to know someone. Life isn’t a Hollywood romance.

Why is dating coaching such an important part of a person’s dating success in today’s busy dating world? Dating coaching is important so that we make the most of every date and every opportunity to meet and connect with the right person. It can be difficult in today’s busy world to meet someone we connect with, and it’s important to not make mistakes and possibly turn off that person. We may not even realize we are doing something or saying something that can be undesirable.

KYLE TAYLOR PARKER GETS HIS ‘BOOTS’ ON Q&A with the star of the first national tour of “Kinky Boots” BY ERICA MINER

K

yle Taylor Parker, one of the Angels in the original Tony Award-winning Broadway musical, Kinky Boots, will take over the starring role of Lola on the show’s national tour this fall, appearing in San Diego from Sep. 23 - Sep. 28, 2014. Parker will be kicking high onstage in his ruby-red thigh-high boots, along with a bevy of feisty drag queens in this highenergy Broadway blast. With songs by Cyndi Lauper, libretto by Harvey Fierstein, and choreography by Jerry Mitchell, the show opened on Broadway April 4, 2013 and continues to play to standing-room-only crowds. Q: Kyle, how are rehearsals going? A: We’re having a blast. Rehearsals are going really, really well. It’s this dynamic, talented cast. I can’t wait to see what the show’s going to look like. Q: What does it feel like to morph from your former role to the leading role of the “hottest show of the year?” A: It really is an honor to be moving up into the leading role after being in the ensemble of the original, such a magical experience. From creating it for Broadway, I actually have grown up with the show. Having done the original version, you get to see what the script started out as. I feel privileged to walk in with all this information and experience. Q: What was it like working with icons Cyndi Lauper, Harvey Fierstein, and Jerry Mitchell? A: A dream come true. The realization of a dream I never knew I had. I always wanted to do Hairspray growing up. I wanted to work with Harvey Fierstein so badly. I auditioned for an Equity version of the show, and never got cast. So to be in a room now, years later, with Jerry Mitchell and Harvey Fierstein and on top of that Cyndi Lauper, creating something original, really was the best I could ever hope for. Q: You actually saw your first Broadway show, Annie, in

80

FINEsd.com | facebook.com/FINEmagazines

that very same Hirschfeld Theatre, which then was the Martin Beck. Do you have specific memories of that show? A: That was when I fell in love with musical theatre and Broadway as a kid. I don’t know if it was seeing the kids on stage or the music, but after that show I said to my mom, “I want to do that.” I got into class immediately. I found out that the Hirschfield was Martin Beck from my hairdresser when I was in a dressing room getting my wig on as an Angel in the show, doing my rendition of “The Sun Will Come Out Tomorrow.” I think that’s what they call right place, right time. Magical. Q: Tell me about your character, Lola. Is she similar to the character of the same name in Damn Yankees? A: They’re definitely both feisty. There’s so much grit and honesty and charm in my Lola, it really does fuel the rest of the show, similarly to the way Lola does in Damn Yankees. This show really is filled with heart, heart, heart, heart, heart. You start from the basis of this feisty character and you find out what’s underneath the surface. Q: What is the heart of this show? Everyone’s talked about its spiritual, uplifting message. A: It’s about acceptance and finding who you are, becoming a man on your own terms. I think that’s what people really relate to: acceptance. Being a good person and accepting people for who they are. Our message is one that many people relate to.

LA JOLLA ART & WINE FESTIVAL

Q: Having played an Angel, now you get to inform Lola with your experience. Is it an advantage to start in a different role and then move up to the lead? Does it make your performance more meaningful? A: I can be a stronger leader because I know what’s happening around me and I’ve been able to see this show from all different angles. The story is one I really know and I can be confident in exploring it. Q: Is it difficult to rehearse a show that’s going on tour and is going to be in so many different theaters, as opposed to being in your home theater on Broadway? Does it help you to grow as a performer? A: Absolutely. In rehearsal, I’m having a ball just trying out all the different choices and exploring the character. The fun part of tour is that we get to take the show to so many different places. It’s not a concern, but a joy to share the show with so many people. You learn how to do it no matter what, no matter where we are. If we can do a national tour eight times a week in eight different places, we’ll be giving a consistent fabulous show all across this nation. Q: Do you feel equally passionate about the music, story, and lyrics, or is there some aspect that twists your top more than others? A: I’m equally passionate about all aspects of the show. It’s like a perfectly woven quilt: all the fibers come together to make one great thing. The show is not strong without one of those pieces. Working with Harvey, Cyndi, and Jerry was an honor, too, because you got to see what comes from great teamwork. It was a beautiful collaboration. Once we go out on the road, they’re trusting us with the story. Q: They must have a huge amount of confidence in you all. What are your hopes and aspirations; what do you hope to achieve in your career in the future? A: I would love to have a life in the theatre telling great stories written by great people, and to be in film and television. This is my heart, being a performer. So I would just love a life in the theatre. It sounds like you’re well on your way, Kyle. They’re certainly going to love you here in San Diego. I can’t wait.

LA JOLLA ART & WINE FESTIVAL

Q: It’s kind of ironic that such a feisty group is called Angels, isn’t it? A: The Angels are a sassy backup group full of heart and joy and love that really support the story. You see them lift Lola up and lift the story up. Each person is different and special and beautiful, a true sample of individuality and creativity.

IT ALL STARTS WITH ART BY BOB MOREY

S

eptember marks the beginning of the 2014-2015 season for the Performing Arts, and there will be more shows and events playing around the county than we could ever possibly list here. Normally I would use this space to tell you about some of the shows not to miss or what I will be going to, but this month I’m going to do something totally different. There are about 120 non-profit performing arts groups that play across our county throughout the year. Some offer up a continuous full season such as the Old Globe and The La Jolla Playhouse, while other smaller companies are only able to run less than a handful of productions in a season that have a very limited run of maybe 8 performances over a couple of weekends before the show closes. All of these groups, no matter how big or small they are, have one thing in common: they can only survive through your support. In most cases, it’s more than just buying a ticket and enjoying the show, it’s through your tax-deductible charitable donation that these groups survive and flourish. Many of us watched the live action drama played out earlier this year with the San Diego Opera (which launches its 50th season this month), did everything possible to stay afloat to offer San Diegans some of the highest regarded Opera offerings in the nation. Both the new SD Opera Board and their generous sponsors did a remarkable job in a very

82

short time to save this grand institution. “We tend to overlook the role and influence of arts and culture in our everyday lives,” says Michael Murphy, Managing Director of the Old Globe. “From the pop and rock music we listen to, the graphics and sounds in a video game, the lines and curves of buildings and signs, photos, movies, compelling ads, the designs of our homes and neighborhoods, on stages, in religion and in countless other ways. Not only do the arts help to develop, shape and record our history, they help us to learn about our history and provide opportunities to creatively design our future.” It’s not just about the arts, it’s about education as well. As our schools have taken massive cuts in funding over the past few years, mostly coming from the art and music departments, all but eliminating many of those programs. The efforts made by our leading performing art groups to fill as much of that void with their creative outreach programs for our students has been nothing less than a Hercules size task which they have been very successful in achieving. These are only a few of the ways your hard earned money filters out through the performing art community. Hopefully it encourages our youth to engage in these artistic crafts and develop a passion as rich and deep as the one many of you share now and then, to whom the artistic torch will be passed, so that the show can continue to go on.
