ne of my favorite things about our great city of San Diego is the artistic culture that surrounds us. From painted murals of whales, dolphins, and the Surfing Madonna that cover our beachside buildings to passionate performers on our local stages, the artists of our city embody the beauty that is San Diego. Art is everywhere around us. It’s in the clothing we wear, it’s in the music we listen to, it’s in the architecture of our buildings, the plating of our food, even in bottles of our tequila. We will never escape from art, though who would want to? Embrace the creativity that moves our lives from the boring to the fantastic. I hope you have as much fun reading this issue as we had creating it. We are artists too, by the way. Feel free to frame and hang us from your wall, but most importantly, we hope to inspire you. PARISIAN IMMERSION In a town where it can be difficult - if not impossible - to distinguish oneself, Balendra Nagesvaran, Vice President of Hotel Operations for North America and General Manager of Sofitel New York, is eager to point out precisely why she feels this hotel offers its guests a distinctly different level of hospitality. “The hotel is infused with the French art de vivre,” she explains, “and brings elements of French culture to the guest experience, such as a ‘bonjour’ at check-in, Parisian Art Deco-inspired guest rooms, elegant floral displays, and exquisite Brasserie cuisine at Gaby.” Nagesvaran continues, “The hotel’s location is also a differentiator. DISTINCTIVE DIGS True to Nagesvaran’s word, I was greeted by multiple hotel staff with a friendly, “Bonjour,” making me feel like I was actually in the City of Lights. Even once I settled into my room, which incidentally had a direct view of the Empire State Building off to the left, the feeling that I was in a Paris flat remained. All rooms at Sofitel New York feature spacious marble baths outfitted with a separate tub and rain shower, wood-framed beveled mirrors, and marble vanities stocked with imported French bath amenities by Lanvin or, if you’re staying in a suite, by Hermès. The focal point of each guest room is a custom maple or rosewood three-paneled, full-wall headboard with a recessed, spot-lit niche—the perfect display for the large colorful painting above each bed. And, speaking of beds, New York may be the “city that never sleeps,” but with Sofitel’s signature feather-top and duvet “SoBeds,” catching a few winks to recharge for a night on the town is a wonderful indulgence. To further evoke a sense of geography, the walls in the rooms are like an art gallery, showcasing both vintage and current black-and-white photography from Paris and New York. Of course, windows provide various Manhattan vistas that range from 44th Street to the Chrysler Building. All rooms are bathed in natural light, and if you’re looking for something extra, two of the rooms feature private balconies. On the practical side, each guest room includes a builtin or standing desk with integrated data port and multiple phone lines, a flat-screen television, a BOSE music system, wireless internet access, and a fully stocked minibar.
FRENCH FARE No visit to Sofitel New York is complete without a visit to Gaby, the hotel’s acclaimed on-site restaurant that is another source of pride for Nagesvaran, who remarked, “Fine French cuisine served at Gaby Brasserie Française is another differentiator for us. Executive Chef Sylvain Harribey, who won Food Network’s Chopped among many other culinary achievements, serves up classic French cuisine with tons of personality.” With such an endorsement, I eagerly visited Gaby for dinner where I reveled in the restaurant’s creamy Eggplant and Porcini Soup, Mesclun Salad topped with shaved parmesan, and a classic Duck Confit, all capped off with a seductive Tahitian vanilla crème brûlée topped with fresh berries. Gaby is also known for fusion fare, with a range of international dishes containing Asian, Latin, or African influences. The bar at Gaby is a great spot for happy hour, where patrons can partake in 40 different wines by the glass that pair perfectly with artisanal cheeses the restaurant rotates monthly.

A LOOK AHEAD When asked about the hotel’s plans for the future, Nagesvaran is excited about a bevy of upcoming changes that will continue to position the hotel as a premier reference point for the Sofitel brand in New York and globally. “We have plans to renovate the lobby,” she says, “bringing a modern and contemporary feel to the space. he Spirits of Mexico’s 11th anniversary is this year, and they celebrated with a Tequila Tasting Festival at the Del Mar Fairgrounds on September 28th, 2014. eaten, starved, raped, manipulated emotionally, and forced to work until meeting a financial quota; Sex trafficked victims are broken and demeaned, no longer seen as humans but as a means of profit. Those who have fallen victim to “The Life” are not living in another country; they live right here in our San Diego neighborhoods. Sex trafficking in the United States has been a pandemic issue, but unfortunately many of us are not aware of its true severity. Trafficking seems to imply people are being moved across continents, however most exploitation takes place close to home. Sex trafficking is an issue all over the nation in urban cities, agricultural regions, and rural areas. These are all prime hubs of human trafficking; localities are not an independent factor. Sex trafficking cashes in billions of dollars a year brought in by those engaged in the destructive predatory crime. FINE has joined Hidden Treasures Foundation - who works closely with the Rock Church - for a gem of a night in Freedom by Fashion Charity event. The spectacular “AllWhite-Party” will be held on October 18 hosted by Kimi Evans of San Diego 6 News. Vendors will flex their prowess in culinary creativity and specialized cocktails, live/silent auctions, and of course a brilliant fashion show put together

Hidden Treasures Foundation has become a safe haven for San Diego’s sex trafficking victims. Lynn Burgard, Executive Director of Hidden Treasures Foundation, explains her inspiration for the name of the organization: “The name [is] due to Matthew 13:44, a verse in the Bible that speaks about a treasure a man found in a field,” says Burgard. “He re-hid it and in his joy sold everything he had to go and buy that field. I see three applications of Hidden Treasures for human trafficked victims: Christ sacrificed His life for them because He views them as precious. He found them hidden and brought them to the light. They are treasures, yet live a life that is hidden from the rest of the world.” Victims - usually young girls and women - are trapped in “The Life” with different strategies used by facilitators of sex trafficking schemes. Pimps are notorious for having the ability to recruit young, vulnerable women by creating strong emotional connections often coupled with drug or alcohol dependencies to effectively manipulate them. Soon after winning the trust of the victim, coercion and violence is used to keep them at bay. In some cases, male relatives will

The most vulnerable victims of sex trafficking are young girls who have run away from home due to the abuse and sexual assault they experienced in their former home life. Burgard believes that the most crucial element in the organization is to help victims realize their self-worth. “Possibly the most important application for the survivors’ recovery is that they are a treasure hidden from themselves,” she says. “Hidden Treasures Foundation works hard to give each victim healthy life-restoring relationships, and in this relationship they begin to see the worth that they are. When they begin to see themselves as the treasures that they are, they fight for their recovery and the life that should be theirs. They are not vulnerable to being trafficked again.” Helping a person who has been in “The Life” is a profound undertaking. It can not be done without the help of community members. Maximizing resources is essential to assist the unique situation of each survivor, and it can only be done with the help of the community. Freedom by Fashion, All-White Charity Event will be a prolific opportunity to come together in the community and help victims in through awareness and fashion. Only together can we fight this epidemic that plagues our fair city.

Dawn Hough Sebaugh was born in Mooresville, North Carolina but lives in San Diego, California. An artist and businesswoman, Sebaugh began her career over two decades ago. As a founder and contributing artist of Mara Dawn Studios, she has participated in a wide variety of galleries and solo shows. Sebaugh has donated a large number of her paintings to raise money for a variety of private charities such as the Sherman Oaks Burn Center, UNICEF, Rescue Task Force, Artists with Brain Injuries, and more. American-Canadian artist, Yanya Morton, introduces art to San Diego. BY JACK WOODS
The Art of Yanya Morton can be found in both Canada and throughout the United States. This emerging artist is currently represented by Coolhaus Art in North County’s Solana Beach. Yanya Morton comes from a long line of artists and musicians and has been drawing and painting since childhood, winning various awards and gaining recognition as a respected artist from a young age. This British-born artist traveled throughout Europe and the Middle East, and has lived in such countries as Greece, Germany, Turkey and Afghanistan. These early cultural experiences presented Yanya with the a better understanding of cultural diversity and instilled an insatiable desire for travel. Yanya’s career as an artist started in the film industry in Vancouver Canada at the tender age of sixteen with the feature film “Jumanji” staring the late Robin Williams. With this experience being her first taste of what life as a professional artist would be like, she never looked back. She continued working in the film industry as a scenic artist for nearly a decade. Traveling has always been the ultimate inspiration for this Canadian breed artist. She returned to Europe and moved on to spending time in Morocco before deciding to attend the prestigious Ontario College of Art and Design in Toronto, Canada. Yanya transitioned from the film industry in Canada to focus solely on her career as a painter after moving to Cardiff, California. It wasn’t until she moved to the United States that she was able to allow herself to come into her own as an artist and her paintings became the ultimate reflection of her creative freedom. With her many cultural experiences, her work and subject matter has always been influenced by the mythology and philosophies of ancient and foreign culture and their relation to social and political issues of the western ideal. The art of Yanya Morton embraces the conceptual and the academic. She strives to force the viewer to remove themselves from conventional thinking and question there own perception of the issues addressed in her work. Yanya has acquired an intrinsic style and body of work that sets her apart from other artists. Her work is extremely unique, yet her mediums of choice are not. Her recent works

on canvas and mannequins with oil paint, gold leaf, and text provide a provocative and unexpected dialogue between the viewer and the subject. As a practicing yogi with a great grandmother from India, Yanya has always had a fascination with the fundamentals of Hinduism and its offshoot, Buddhism. Hinduism dates back to 3000 B.C. and is a religion of diverse beliefs, with many gods and goddess. It focuses on reaching enlightenment through the “Path of Knowledge.” Hinduism is about understanding existence within ones own soul, whereas Buddhism is about finding the not soul - dispelling the very illusion of existence through the practice of morality, concentration, and wisdom in order to attain Nirvana. With the rejection of the “Creator God” in Buddhism, replaced instead by the the Buddha’s teachings called the Dharma (which originated approximately 2,500 years ago), it is considered a philosophy by other religious groups. But according to Yanya, Buddhism is not a philosophy. It is the practical teachings of Buddha and its “goal” is “Nirvana.” It is a religion that is based solely upon the virtue of compassion, whereas Hinduism virtue is based upon following “Righteousness.” It is these ideas and how they relate to the common man and his role in society that drives Yanya’s most descent works. Her collector base is predominantly high-end architectural homes in Las Angeles and the hospitality industry in cities such as Las Vegas and Lake Tahoe. Her current works can be seen at Coolhaus art Gallery at 345 North Coast Highway 101.

An interview with Lynn Moon, Founder of Art for Barks. B Y R Y A N S TA N D I F I R D Lynn Moon is the founder and creative mind behind Art for Barks, a unique, online animal charity focused on quality animal art, literary education, and special services to encourage great pet ownership. Moon had always wanted to be an artist. “I’ve always been really artistic,” she says, “but I had to support myself, and so it made sense to apply my creativity in business.” She worked in the business world most her life, but she never lost that creative spark. “I could take my creativity and turn it into marketing ideas or concept business ideas,” Moon says. “I was able to satisfy my artistic soul through practical application.” After retirement, Moon had much more time on her hands. She decided to dedicate that time to the artistic desires that had helped her achieve success in her career. It took a lot of time and hard work. “When I went purely into art,” she says, “I was able to develop a pretty sophisticated understanding of the tremendous amount of time and effort that an artist has to put into their training.” Moon says that in order to be a good artist, “it takes thousands of hours of laborious training.” In 2008, Moon felt she had put in enough hours to where she could consider herself proficient in her style of art: sculpture. “I was at last at a skill level myself in sculpture where I would be a decent displayer of art in a reasonably high-quality art gallery,” Moon says. “And of course, we know what happened in ’08.” With the recession hitting hard, resources for art galleries became scarce. “I felt that two thirds of the galleries would close, and I was pretty much right on that,” says Moon. But she wouldn’t give up. She started studying the economy and found a trend: “I’m very sensitive to technology and I’m very respectful of its creativity and its innovation, and so
I really felt that as literary work was moving to the digital level, and music was moving to the digital level, that it seemed to me that art really needed to go into the digital area.” Art for Barks evolved out of Moon’s love of animals, art, and technology. “I thought if we can bring them together, we can really give our art and literary work a strong audience,” she says. “We are evolving to a kinder, more sensitive humanity, that animals are very important... I could see that online, that the expression and interest in animals was very strong.” As the founder of Art for Barks, Moon has little time to sculpt. “In a way it’s a tradeoff,” she says, “I have to give up my own art to help other artists, and I’m glad to do that.” Art for Barks’s mission is to mobilize animal artists and writers to inspire pet owners and families to become leaders in setting standards of pet care for the rest of society. It is a place where a love of pets and animals can blossom artistic beauty and we can admire our pets. But since it’s a charity organization, Art for Barks cannot sell any of its art. “We can’t sell the art,” Moon says. “If we could sell the art, it could support all the charity’s missions to help the animals.” Art for Barks relies exclusively on donations by the public to keep itself running. An interview with local photographer, Michael Seewald. B Y R Y A N S TA N D I F I R D Cameras are everywhere we look these days. Thanks to smartphone technology, anyone can take a picture or record video. But the difference between a “photographer” and just someone with a smartphone is stark. While most of us take “selfies” and pictures of the macaroni we made for dinner, professional photographer and artist, Michael Seewald, creates something much more. Using advanced techniques and pulling from his deep well of experience, this local San Diego artist captures the essence of a place in time. Seewald began his artistic journey when he was just a child. “My mom taught me painting,” he said. “She got me doing one of those paint-by-number kits... of course I would just throw away the paint-by-number kit instructions and just start painting the little things myself and start drawing my own little things.” Seewald was only thirteen when he won his first award. “I beat all the kids in a window-painting contest for Halloween,” Seewald said. “I won a gift certificate so it was kind of neat. My first income.” But where painting was according to Seewald - “both laborious and hard,” he found a tool with which to let his artwork blossom: the camera. “A little Box Brownie Camera,” he said, “and I couldn’t wait to take the film down to the pharmacy because they always gave you a free roll of film when you got your pictures developed.” Seewald kept developing that film and also began to develop his own style of photography. He recalls a specific college class assignment that really had an effect on him. “It was a dream series,” he said. “I photographed my roommate’s girlfriend out on the pier in Long Beach in a night gown at twilight.” Seewald used long exposures with tri-pods, “creating some really ghostly effects, which I really thought were interesting.” This method is one of Seewald’s trademarks, and can be seen in many of his popular pieces. “Ia’ve just been fine-tuning it

ever since,” Seewald said. “Some people call them angels, other people call it ghosts - but there’s always some ethereal effect going on with people. Which, in a way, conveys the fact that, you know, we’re not here forever.” Seewald tends to use a large building or other structure as the focal point of his shots to form a juxtaposition. “In Florence, there’s a bunch of statues and people walk among the statues, but in the picture it shows that the statues were there before them and will be there after them... they’re like ghosts walking among the statues because of the over-exposure.” Though he has been funded by sponsors to travel all over the world in the name of art (62 trips in all), Seewald keeps his collection here in San Diego. You can check it out at Michael Seewald Galleries in Del Mar, where his Cuba Series is currently on display. an Diego Opera’s wild ride from near-closure to rejuvenation and bright hope for the future is unique. Other companies have tried and failed in such efforts. How did this local miracle come about? Newly minted SDO Board President Carol Lazier in a joint interview with COO Keith Fisher provided some keen insights. Fisher, incidentally, is Lazier’s constant companion. “We’re joined at the hip,” Lazier said earnestly. Regarding SDO’s travails and ultimate transformation, Lazier got serious. “I think all the stars were aligned,” said Lazier. “New York City Opera - they were going belly up for years and people were deaf to what was going on. Our board did not understand what was going on either, and things were so abrupt it galvanized both the community and the board into action.” Fisher agreed. “I think what was underestimated at the point in time when the decision was made to close the company was the power of the people. There was clearly a lot of public outcry.” That outcry started with the formation of the White Knights Committee, a group consisting mainly of employees who got the word out to the community via social media. “They were like the new generation,” said Lazier. “They were making cookies with SDO on them. They were amazing.” The White Knights helped promulgate the petition that generated over 20,000 signatures worldwide. But it was Lazier’s overwhelmingly generous gift of $1 million that set into motion an unprecedented crowdfunding campaign. “It overwhelmed us, the level of support we got. The number of gifts,” said Fisher. “There was a new awareness,” said Lazier. “People who’ve never even been to the opera donated because they just thought it was really important. We had ten-dollar donors, fifteen-dollar donors, anonymous donors; the whole gamut.” People who truly care about opera are a powerful force indeed. But the initial gift of San Diego’s “Opera Angel” was the catalyst. “It’s kind of embarrassing. I mean it was a group effort,” said Lazier. “I’m the public face, I kind of got everybody started. But it wouldn’t have happened if I was the only one. Everybody came together in so many amazing ways.” The initial March 19th decision to close the company reflected a mindset that did not portray an accurate picture of that unanticipated outpouring. The gritty SDO was not going to go away quietly. The story of their journey is a remarkable one. “I can’t believe we’ve lived it,” said Fisher. Lazier’s passion for opera is well known. She and her husband, Jay Merritt, were actually married at the Civic Theatre, on the stage set for SDO’s production of Verdi’s A Masked Ball.
“We hadn’t gone on a honeymoon because it was opera season and we had to stay and hear all the operas. Then four days later it was like, what happened? What hit us?” Lazier said. One day later, the company had to perform Verdi’s challenging Requiem (which Lazier also underwrote) on the Civic Theatre stage. The entire company was in shock. But reaction was instantaneous from the public at large and prominent players in the operatic sphere. Opera America put together a group of advisors, which included General Directors from companies in Dallas, Philadelphia and Fort Worth, who offered advice, support and inspiration. “We had this core of wonderful people that shepherded us through the process,” said Lazier. “They kind of came out from the woodwork,” Lazier said, smiling modestly. On April 17th, in tandem with a standing-room-only Town Hall meeting at Civic Plaza, a breakthrough occurred at the SDO Board meeting when members began walking out. “We were like, ‘what do we do now?’” said Lazier, and added, laughing, “It was pretty chaotic. But wonderful chaos.” “We had to question so many things up in the air,” Fisher said. “If the president walked out of the room, then who would take over? Of course it would be the executive vice president, but she walked out. And if it wasn’t the executive vice president? The vice president of finance had already resigned, and Carol was the secretary…” Lazier laughed. “I was the last man standing.” Kevin Smith from Opera America spent a lot of time with company principals, sharing insights and advising them as to the wisdom of crowdfunding to set a goal and satisfy the board’s confidence that the company had enough operating cash for the next season. After Smith’s presentation at the April 17 board meeting, a discussion began that helped spur the spate of board resignations. The resolution to have a season passed by just a narrow margin. “16-14. With two abstentions. It was really close,” Lazier said. “The former model as it existed was completely unsustainable,” Fisher said, citing not only the magnitude of the high-end productions, but also the size of the staff and expense of their high-rent offices. “We should have had these conversations about changing the model ten years ago. I don’t want to come across as being critical, but we did the same thing year after year and never changed.” “And we got the money from the same people year after year. No wonder they were tired,” added Lazier. It came down to a change in the opera’s business model to one of diversification. To a great extent, that involved community outreach by performing in venues other than the 3,000 seat Civic Theatre; offering diverse sectors of the public different types of “product” than the conventional

Grand Opera, and promoting wider appeal, ideally to all the City Council districts of San Diego. In other words, moving forward into the 21st century. Was former General Director Ian Campbell still thinking in the 20th century? “I never want to take away from what Ian has done in this community,” Fisher emphasized. “He is artistically brilliant and should be regarded as such. But I think how to affect change was going to be difficult [for him.] And it’s also fair to say that some of the big donors didn’t have an appetite for what that changed product would be. Case in point, if we did an opera in a warehouse in Barrio Logan.” Moving forward, then, how would Lazier and Fisher describe the heady feelings associated with the coming season of the emerging “New” San Diego Opera challenging or frightening? “Both,” said Lazier. “On one hand, the world is your oyster, you can find cool things to do. On the other hand, will they work? So we’ll have some successes and some failures. There’s a lot of pressure.” A major portion of that pressure will be borne by the person chosen as the new artistic director. “Ironically, he or she would do the same things Ian did thirty years ago when he came here,” said Fisher. “To excite, inspire and engage the community.” Still, innovations involve belt tightening, staff reductions - some to part time positions - and ten percent reduced salaries across-the-board for the remaining staff. The process has been painful but productive: those reductions have amounted to $9 million in savings. Lazier has nothing but praise for the SDO staff. “They’re unbelievable. A dedicated crew.” That dedication extends to Lazier and Fisher: long, tough days, sometimes starting as early as four in the morning; Herculean effort, but definitely worthwhile and productive. How were they able to make needed changes for a viable new season? Opera America’s Kevin Smith also offered budget advice. “We discussed Tannhauser in concert version. With Wagner you’re limited in what you can do,” Lazier said. “We ended up with a Festival concert, with all these different singers. Highlights of opera favorites, a lot of arias.” “It’s a great intro because it’s not a full stage performance,” said Fisher. “And tickets will be less expensive,” Lazier added. “The San Diego Symphony [whose prominent Music Director is Maestro Jahja Ling, and whose musicians also play the operas] has been really generous in donating Copley Symphony Hall. It’s wonderful.” “We cannot underestimate the support we’ve received

from our fellow arts organizations, and from some of the leaders of the organizations,” Fisher said. Lazier and Fisher hope to work more closely with both organizations in coming seasons. A worldclass opera needs a worldclass symphony orchestra. “We can’t exist without them,” said Fisher. The exciting new season features new young singers as well as established opera personalities. Opera star Stephanie Blythe, who performed in Verdi’s A Masked Ball and Requiem last season, has offered her popular Lincoln Center recital, “Stephanie meets Kate Smith,” a sure hit in a military town like San Diego, and a great opportunity for an audience to learn that an opera star can sing American classics. “She demystifies the whole persona of the opera diva,” Fisher said of the spirited singer, who insists on equal billing for her accompanist. Young operatic duo Ailyn Pérez and Stephen Costello, who will present a recital of love duets, will take up the cause of cultivating opera as an art form accessible to the younger generation, thus helping to keep opera alive. But just as important for the immediate future is the search for a new Artistic Director. “We have to do some strategizing to figure out what we’re looking for. I hope within the next couple of months we’ll be able to put on an executive search to find a permanent one,” Lazier said, adding that current new artistic advisor William Mason is “a fine Mid-western human being. Flexible and willing to stay with us for six months. A nurturing and healing person, humble and unbelievably knowledgeable.” What is the biggest challenge in ensuring the company survives and thrives beyond 2015 or 2016? “We don’t really know how to describe the experience except we’re just living it,” said Fisher. “Moment by moment, day by day,” Lazier said. “Keith has been unbelievable. He knows the business inside and out. ‘What do we do now?’ ‘This, this, this and this.’ All this would have totally fallen apart without him.” How would Lazier and Fisher characterize SDO’s future, in a few words? “Novel. Exciting,” said Lazier. “Presenting new works and the classics,” Fisher added. “Bringing opera to all parts of the county. The possibilities are endless.” And most of all, keeping opera alive. Lazier put it simply but effectively: “We need an opera.”

MARKET RESTAURANT + BAR A native of New York, Executive Pastry Chef James Foran of Market Restaurant + Bar restaurant says he knew early on that he wanted to work with his hands and didn’t want a suit and tie job. He attended Johnson and Wales culinary school in Rhode Island and graduated with a Pastry Arts degree in 1990. “Working at Market is a constant challenge and that’s what I like most,” he says. “I’m always looking for creative ways to make a dessert more satisfying to the senses.” A Culinary Arts Professor at Grossmont College, Foran says teaching is the most rewarding thing he’s ever done in his life. “I enjoy seeing the fruits of my labor tapping into a student’s passions as they excel in their chosen fields,” he says. “I’ve been teaching long enough now to find out that a few of my students are in executive positions already.” Foran’s best advice to up and coming pastry chefs is to not only get a solid foundation of the basic techniques, but to also understand how the final outcome should feel and taste. “In other words, go out and taste everything you can from reputable chefs who put out quality product so you can experience it first hand as a consumer,” explains Foran. “Once you respect how important every little detail is, then it becomes easier to except the hard work it takes to achieve greatness.” Don’t miss the luscious Market Bar for dessert and look for several of Foran’s dessert recipes in the new Market Restaurant + Bar Cookbook to be released in December, 2014. www.marketdelmar.com
NINE-TEN RESTAURANT AND BAR Executive Pastry Chef Rachel King of NINE-TEN attended the San Diego Culinary Institute, which she says gave her a great basic skill base and technique understanding. Having worked at quite a few restaurants around San Diego, she’s been able to pick various skills from each place. “I’ve done a range of things, from breakfast to dinner, casual to fine dining, low volume to high volume, traditional to modern, and a little catering,” she says. “This has all shaped the way I cook.” At Nine-Ten, King uses the freshest ingredients possible and utilizes them in a way that compliments their true character. Local, organic and sustainable produce are the corner stone of the menu. “I’m in love with all of the ingredients I use and try to compliment them in a fun, yet sophisticated way,” King explains. “Nothing is better than a great piece of fruit in the height of its peak season.” Fresh fruit, yes, that’s a wonderful choice. However, I’ve always been that person that desires chocolate cake. I recently indulged in King’s Triple Layer Chocolate Cake, and I still say “Let’em eat cake!” www.nine-ten.com

ECLIPSE CHOCOLATE With a Masters in Sculpture from SDSU, Will Gustwiller bills himself as Executive Chef, Executive Chocolatier and Creative Director of Eclipse Chocolate where he offers sweet and savory fusion cuisine. His seven-year experience in the arts provided him with many valuable skills that have translated into his building a successful food production company. “Today I am independently capable of doing all of my own recipe development, budget-getting, production and packaging design, as well as all marketing and digital production,” he says. “Culinary-wise, I am self-taught.” Gustwiller says the food he represents at his restaurant is half chocolate factory,

HUMPHREYS RESTAURANT Pastry Chef Helen Coyne of Humphreys restaurant had formal training through the culinary arts program at Grossmont College and trained at the Culinary Institute of America at Greystone, Napa Valley with Chef Stephen Durfee. One of Coyne’s mentors is Market Restaurant + Bar’s Executive Pastry Chef James Foran, also an instructor at Grossmont College. When she was growing up, Coyne’s mother put her in charge of baking the pies for the holidays. “My mom was a great cook but always burned the pastries,” she says. “I remember cutting brown paper bags open to lay the cookies out to cool when they came out of the oven.” At Humphreys, Coyne likes to keep things clean and simple and enjoys collaborating with executive chef Paul Murphy. “He comes up with some great ideas and I make them come to life,” she says. “We use Suzie’s Farm for the best organic produce and I like to use high quality ingredients including TCHO organic chocolate made in San Francisco.” Coyne changes the dessert menu often, but one decadent mainstay is her Milk Chocolate Mousse Bon Bon. CUSP DINING AND DRINKS Executive Chef Donald Lockhart of Cusp Dining and Drinks in La Jolla says he has a big sweet tooth, so there are a large variety of desserts he likes to prepare. “I love chocolate!” he says. “It’s delicious and indulgent, almost like you’re doing something bad, but in the best way possible.” One of Lockhart’s dessert favorites at Cusp is the Turkish Coffee Affogato. He pours spiced Turkish coffee over house made apricot ice cream and serves it with candied oranges and a cardamom almond cookie. “I want our guests to end the night on a high note,” he explains. “I like to add heart to my desserts as well as invest the time it takes to put out quality products.” Lockhart makes all his desserts from scratch including the crumbles, jams, compotes, ice cream and cookies. “These are all the things that restaurant’s don’t always do, but I prefer to put that extra care into our products,” he says. “I think it gives our guests examples of our investment in their experience and how good we want it to be!” www.cusprestaurant.com

hen I’m in the mood for a quick and easy recipe using fresh autumn apples, I make this cake. With just a few ingredients, you’ll surprise your friends and family with a delicious comfort-food dessert they won’t soon forget!
MAKES 1 CAKE Serves 6 1 box yellow cake mix (recipe halved) ½ tablespoon freshly grated ginger Butter, for greasing pie dish 4 golden delicious apples, peeled, cored and thinly sliced Ground cinnamon, for dusting 1/3 cup maple syrup Powdered sugar, for dusting

METHOD: Preheat oven according to labeled instructions for cake recipe. Prepare cake recipe according to labeled instructions (recipe halved) and add ginger. Lightly butter a pie dish and layer the apples inside; dust apples with cinnamon. Drizzle maple syrup over apples; pour cake batter on top and spread evenly. Bake cake according to labeled instructions or until toothpick inserted in center comes out clean. Cool cake on cooling
rack 15 minutes. Run knife around sides of pie dish to loosen cake. Place heatproof serving plate upside down over pan; turn plate and pan over. Remove pan. Lightly dust cake with cinnamon and powdered sugar. *Note: If you would like to use the whole box of cake mix, this will make two cakes. Be sure to double remaining ingredients on the ingredient list.

The Mitchell Thorp Foundation (MTF) held its inaugural event on September 6th, 2014 at Cielo Village in Rancho Santa Fe. The event is devoted to the families the foundation helps support and the dedicated doctors, educators, practitioners and therapist who give not only their time but who also go above and beyond in helping families in the San Diego Region. The evening was filled with elegant food, hosted bar, live music and New YorkStyle Runway Fashion Show. This year’s “Pillar of Hope” awards were given to Dr. Seth Pransky M.D. from Rady’s Children Hospital, Dr. Mark Drucker M.D. from the Center of Advanced Medicine, Ruth Westreich, President of The Westreich Foundation and Kim Schuette, C.N. from Biodynamic Wellness. Vendors were also on hand creating a unique marketplace atmosphere. The event also featured health and wellness options and resources available around San Diego County. The evening’s finale highlighted a sponsored Fashion Show from Worth New York, “Giving is always in fashion” is their motto; alluring, modern and sophisticated designs. At Jet Source Jet Hangar, C4K drivers were able to indulge in a hosted bar and catered lunch. They also had a DJ, vendor/sponsor booths, driving simulators, silent auction and raffle, and award presentation. This event was filmed by local news media, helicopters, HD car mounted cameras, and videographers to create their C4K 2014 movie. The “rally” is not a race, but a high end cruise limited to only 130 drivers. All proceeds from C4K benefit the Boys and Girls Clubs of San Dieguito.

The Leonard Simpson’s 10 Best Dressed Awards 2014 is on November 13th, 2014 at the Hilton La Jolla Torrey Pines and will be hosted by celebrity actress Vanessa Williams, along with Founding Chair Sally B. Thornton; Honorary Chair super model Kelly Emberg; Chairpersons Mina Kooklani and Kristi Pieper of La Jolla. But before the event, there was a pre-party held to raise further funds. Founded and produced by Leonard Simpson, the entertaining evening features an awards ceremony, formal seated dinner, theatrical show, dancing and auction. Friends, family, and pooches come together for a day of fun, sun, and surf, all to benefit the animals we love! Many came to join the fun as more than 80 surf dogs competed for “top surf dog” at Del Mar’s Dog Beach. There was lots of fun for the whole family including the dog surfing competition, kid’s activities, pet and fitness related booths, and freebies for all! Owners and their pets participated in 10 minute heats based on the dog’s weight class. They were judged on their ability to stay on the board, ride the wave, and have fun! There were 1st, 2nd, and 3rd place medals for each weight class. All the first place winners from each weight class moved on to the finals. There were trophies awarded to their top three finalists at the end of the day. The event helped raise over $50,000 to help orphaned dogs at the Helen Woodward Animal Center.

RACHEL CHAVKIN: THEATRE GENIUS An interview with the director of “The Royale.” BY BRANDI LACY
T
he Old Globe Theatre is known for staging world-class productions for both known classics and world premieres. This season, they will be presenting a production of Marco Ramirez’s “The Royale.” The plot follows heavyweight champion, Jay “The Sport” Jackson, a black boxer with the talent and drive to win, yet the obstacle of adversity packs a powerful punch. Being a black man living in 1905, Jay must overcome the jabs of racism and his boxing opponents. “The Royale” had it’s world premiere with Center Theatre Group last year, anad this season the Old Globe steps into the ring with director Rachel Chavkin in their corner. This will mark Chavkin’s first time working with The Old Globe. Chavkin is a heavyweight champion in her own right. She
holds a BFA in Theatre from NYU and an MFA from Columbia. She is the Founder and Artistic Director of “The TEAM,” a Brooklyn based theatre company that is at the forefront of bringing new American works to the stage. “The TEAM” travels abroad, often appearing at places like the Salzburg Festival and often collaborating with The National Theatre 80

of Scotland and London’s National Theatre. “There are a lot more federal subsidies for the arts abroad,” says Chavkin. Theatre is less of a luxury in Europe but more common place, whereas in America, “art becomes an arena of the privileged.” In places like the United Kingdom, taxpayers fund much of the art being presented. This makes going to the theatre affordable, whereas a Broadway ticket will cost a patron anywhere from $60 to upwards of $200. There are positives to American theatre, however. Our unions are much stronger and tend to fight more for the actors. Also according to Chavkin, in her experience, American theatre tends to be more organized. As if being the head of a theatre company wasn’t enough to keep her busy, Chavkin is also a playwright with six plays under her belt. Being that busy all the time, it would be no wonder if she hadn’t slept for a while. “I have had a particularly insane day... but I get a full night’s sleep all the time,” she says. Directing a show comes with a long list of challenges. There is quite a bit of organizing, research and preparation that must be done for each show. Then there are the technical basics and blocking where the actors need to be, how they should look and how they should sound. It can be quite time consuming directing a show; the same can be said for running a theatre company. Chavkin’s theatre company “The TEAM,” which celebrates its ten year anniversary this year, keeps her busy, but the reward is worth the demand. “Oberon books, which is a publisher in London, is publishing a book of our early works,” Chavkin boasts. The book will be released this December. On the TEAM website, it states their objective is to “...combine aggressive athleticism with emotional performances and intellectual rigor, keeping the brain, eyes and heart of the audience constantly stimulated.” These qualities are what

drew Chavkin to “The Royale.” A major factor in why Chavkin decided to direct the show is “the athleticism of Marco’s language combined with the physical energy that I can feel when I read the play.” Chavkin is not only a dedicated director, but a keen observer of humanity as well. “As a human, I am most interested in understanding and trying to examine through the current moment...How and why are we here?” The struggles depicted in “The Royale” make the play accessible to our current generation. “The play is so incredibly relevant in terms of looking at what the costs are to society when a major color barrier is broken,” she says. Reading a play multiple times before signing on to a project, Chavkin wants to make sure it is in line with her interests in the world. “The first thing I do is walk on over to the New York Public Library,” she says. According to Chavkin, the New York Public Library on Fifth Avenue and Fortieth street is “the best kept secret in New York.” Once Chavkin has committed to a project, she finds her way to the third floor of the New York Public Library where she finds a treasure trove of pictures from all eras. “It’s a great place to think laterally,” says Chavkin, “and I find that that’s how my brain is free to work.” After reading the play several times and doing as much research as possible, the rehearsal process begins. Rehearsals begin on September 9, and with only three and a half weeks to rehearse, it is important to have an idea of what needs to happen first. “The first thing that will happen is that we will do the design presentation,” she says. “It’s a really wonderful, grounding first step that allows the actors to see the world they will be working in.” Giving the actors a grasp on the world that their characters live in constructs a reality that makes bring the show to life. Theatre magic is created, and the shared experience of watching is enough to make the audience connect to one another. Obviously passionate about her current project, it is no surprise she hopes the audience will be affected. “I go to the theatre to see extraordinary things,” says Chavkin. So what does she really want the audience to take with them after the actors take their bows? “An interest in the history. Jack Johnson was an incredibly charismatic and complicated figure in our nation’s history and I think the violence between races that sprung up in response to him is really just fascinating to know, but also as it relates to the larger moment, thinking about what has happened in Ferguson this summer...I think increased vigilance and increased humanity in interaction between the races is vital.” “The Royale” runs Saturday, October 4 through Sunday, November 2 in the Sheryl and Harvey White Theatre. hen you can look at the calendar of upcoming events for this month and see such a diverse offering of productions running across our county, you just have to feel blessed to live in America’s Finest City. Broadway SD starts it off as the ‘The Blue Man Group’ blows into town for just 3 days from the 3rd to the 5th at the Civic Center. Over in Balboa Park on the 4th, “The Royale” opens for a month-long run at the Old Globe (see interview on page xx). A week later, from the 10th through the 12th, The San Diego Symphony brings us “Scottish Fantasy” with Hilary Hahn at Copley Hall. Meanwhile, down the street at the Civic Center on the 11th, The San Diego Ballet kicks off its 25th Anniversary season with the US premier of “Seven Beauties.” All of this in just the first 12 days of the month! Take a couple of days off to catch your breath then head back to Copley Hall for the Symphony featuring Van Cliburn Gold from the 17th though the 19th. Starting on the 21st to the 26th, “Jersey Boys” rocks the Civic. But not to skip a beat on the 25th, the 2014 Opus Gala and Concert is at the Copley

Symphony Hall starting at 5PM. Just across town, opening on the 26th at the La Jolla Playhouse, the award-winning duo of Alan Menken and Steven Schwartz do the book and lyrics for Victor Hugo’s “The Hunchback of Notre Dame.” And to close out the month, be sure to catch the Symphony having a spooky fun night with “Nightmare on B St” on October 31st and November 1st. Just about everybody has heard about the ice bucket challenge by now. I’m challenging you to see how many of these performance’s you can attend this month.
