The Gift of Giving Supreme San Diego Charities for the Holiday Season By Celia Taghdiri The holidays are the perfect time to give back and help your local community. From North County all the way down to the border, there are a litany of Southern California charities waiting for your assistance this December. Most of us have a charity or two close to our hearts that we donate to on a regular basis, but with the holiday season approaching, perhaps it’s time to start a new tradition! Break from the norm and help a local organization that makes a difference in your community’s daily lives. Here are four amazing charities worthy of your time, attention and generous spirit.

OPERATION HOPE VISTA For more than a decade, Operation Hope-Vista has been providing a safe and clean living space for homeless families with children and single women. Under the guidance of an experienced staff, Operation Hope-Vista is a 501(c)(3) nonprofit organization and an active member of the Alliance for Regional Solutions Network. In 2012, Operation Hope-Vista purchased property from the Vista Community Clinic, creating a permanent home for the organization. Existing buildings were renovated and a new community/dining building was constructed, providing eleven family rooms and one dormitory room for single women. The facility can accommodate about 45 people, of which half are usually children. This permanent site also enabled the organization to transition from a coldweather shelter to a year-round facility. In addition to individual family rooms, Operation Hope-Vista offers laundry facilities, showers, computers, a courtyard and a playground. There is also a conference room for adult education and homework completion overseen by a retired teacher and tutors. A basic breakfast is provided, and donations are the basis of lunches. The shelter collaborates with the Cities of Vista, San Marcos and Oceanside, as well as social service agencies, faith28

based communities, foundations and individual volunteers. On average, Operation Hope-Vista families receive about 108 hours of life-skills classes, counseling and case management. To learn more, donate or volunteer this holiday season, please visit operationhopeshelter.org.

FRESH START SURGICAL GIFTS Since 1991, Carlsbad-based Fresh Start Surgical Gifts has been providing reconstructive surgery for infants, children and teenagers with physical deformities caused by a traumatic birth, physical abuse, burns, accidents or diseases. These children come from low-income or uninsured families. Thanks to a hefty contribution Fresh Start received to cover overhead costs, every cent donated to the organization benefits the patients. Every year, Fresh Start holds six “Surgery Weekends” where volunteer medical professionals provide necessary surgical services. In addition, Fresh Start hosts dental clinics, speech therapy services, laser treatments, health education and treatment plans for every patient. Medical conditions covered include cleft and lip palate, hemifacial microsomia and fused fingers and toes. “Fresh Start is thrilled to celebrate 25 years of medical transformations,” says Christina Curtin, Fresh Start Director of Development. “This year marks a milestone of 25 years of successful surgeries, community partnerships and happy, healthy children going on to thrive and do great things for our world… We are so lucky to be able to say that 100% of all donations go to the children.” Financial donations are used for a variety of services, including paying for a child’s laboratory and travel expenses or paying the food expense for a family during Surgery Weekend. To date, nearly 7,300 patients have received medical treatments from Fresh Start, valued at over $34,000,000. If you would like to learn more about Fresh Start, please visit freshstart.org. ACCION SAN DIEGO Since 1994, Accion has been creating economic opportunities for business owners who may not be able to access necessary funds via traditional sources of credit. Headquartered in San Diego, this non-profit organization is a member of the Accion U.S. Network, the largest nationwide non-profit micro and small business lending network in the country. In addition to San Diego, Accion serves Imperial, San Bernardino and Riverside counties. “Accion’s growing impact over the last few years demonstrates the immense demand for access to capital for entrepreneurs in Southern California,” says Accion San Diego’s CEO Elizabeth Schott. “Our 22 years of experience and our wrap-around approach of one-on-one coaching, resource support and small business loans positions us perfectly to assist entrepreneurs who need it the most.” To help small business owners with credit counseling and budget management, Accion partners and collaborates with various government entities, corporations, banks and community-based organizations. To date, Accion has disbursed nearly 4,000 loans in excess of $28 million to over 2,600 clients. Loans, which range from $300 to $75,000, are available to start-up and establish businesses. TMI is a non-profit agency supporting children and adults with developmental disabilities, as well as the deaf and hard of hearing. According to TMI, one in six people born have a developmental disability. Since 1981, this awardwinning organization has been collaborating with local regional centers and the California State Departments of Developmental Service so individuals with disabilities can get necessary services tailored to their needs and make positive contributions to society. “As TMI embraces its 35th year of serving children and adults with developmental disabilities, we have spent a great deal of time reflecting on all that we have accomplished,” says TMI Executive Director Rachel Harris. “As we look to the future, we are confident our hard work and commitment to our mission will continue to not only increase the quality of life for those we serve, but also raise awareness of developmental disabilities in hopes of opening many more doors for our most vulnerable citizens. We believe that, although challenging, nothing is impossible and all we need is an opportunity to serve.” TMI assesses a person’s needs and creates individualized plans. Since the organization is a licensed Foster Family Agency, it provides alternative homes for children with severe challenges. Another aspect of TMI’s mission is to help their clients build relationships with community members, make friends and participate in activities. The organization’s Independent Living Program provides up to 80 hours per month supporting disabled adults living independently. TMI proudly serves more than 700 clients throughout San Diego, Riverside and Imperial Counties. If you would like to donate or volunteer, please visit tmi-inc.org.

The winning photograph, Typewriter, by Roy Kerckhoffs.

With Talent & Creativity An Insider’s Look at the 2nd Annual Art, Rhythm and Wine Festival Winners By Julie Walke This year’s 2nd Annual Art, Rhythm and Wine Festival— hosted by FINE Magazine to benefit Us4Warriors—exhibited some of San Diego County’s best painters, jewelry designers, photographers and mixed media artists. While visitors to the Carlsbad Forum took delight in over twenty decorated booths, a panel of three judges were busy reviewing the artist’s top work. This esteemed panel—consisting of self-styled neo-surrealist painter Jeannette Scollard, Agora Gallaery owner Susan Kreitzer and publicist Julie Walke—looked for elements such as composition, technique and creativity of the overall body of work. In the end, Roy Kerckhoffs walked away with the gold, while Sue Britt came in second and Matthew Hoag won third. Roy Kerckhoffs is a photographer who prefers to shoot industrial objects, ghost towns and coastal themes. He takes high-contrast black and white photographs and applies hand color with oil-based paint, using techniques similar to the days

of early photography. “Roy has an excellent eye not only in the composition of his photograph but also in the physical frame,” says Scollard, speaking of Kerckhoffs use of repurposed wood for custom frames. “He demonstrates great restraint in the colorization by applying not too much, nor too vivid, color, but rather [by using color] deftly and with spatial silence.” Kerchoffs’s father taught him to sketch as a small boy living in Holland. Later, his parents dissuaded him from attending art school, so he turned to science and engineering. “Being a scientist allowed me to come to the U.S. and to pursue a PhD in bioengineering,” explains Kerchoffs. “It wasn’t until 2008 that I returned to my passion of photography. I entered art shows to see if strangers would respond [as] positively as family and friends.” Without a doubt, they did—now, Kerchoffs works in a studio and gallery in Carlsbad. (cont. on p.34)

Second place winner Sue Britt is a paper tapestry artist with a gallery located in Spanish Village within Balboa Park. Her work is created from weaving paper together like one would weave silk threads. The result? Beautiful tapestries perfect for any unadorned wall. Britt creates vividly picturesque landscapes filled with texture and movement that are compelling to the eye. “I often sketch and weave the undiscovered intersections such as the rise and fall of rivers with the seasons, the fire cycle of Southern California and the erosion of cliffs to the sea,” says Britt. Third place winner Matthew Hoag seeks inspiration from the ocean. “The ocean clears my mind,” says Hoag. “It’s a therapeutic meditation which gives me time to think of my art.” Hoag uses acrylic paint pens to create highly detailed and bright designs that are unique to his vision. According to Scollard, “Hoag’s work is fresh. It feels young. He uses his skill and wit in a cheeky way.” Other artist participants at the Art, Rhythm and Wine Festival included Jason Humphrey, Helen Schultes, Sally Todter,

10 More Minutes An Interview with Musician Dr. Jeeyoon Kim By Tanzie Reynolds

Music is a window to the soul, to life, beauty and human connection. With music, people from all over the world can find common strands that tie them together, bonding them through the light and dark twists of society. Thus believes classical pianist Dr. Jeeyoon Kim, a young talent from South Korea with a Masters of Music and Doctorate of Music in Piano Performance from the Jacob School of Music at Indiana University. A natural overachiever, Kim has followed musical notes on the wind throughout her life––from childhood to her present career––and is currently preparing for the release of her first album, 10 More Minutes. Crowdfunded by her fans via Kickstarter, 10 More Minutes is a sweet celebration of life and longing, something to make listeners yearn for more even after the final melodies hit your ear. With an upcoming CD release 36

concert in San Diego on December 11th at The Scripps Ranch Institute looming on the horizon, FINE Magazine spoke with the young musical savant about the creation of 10 More Minutes, her favorite composers and why music stirs her soul. How did you begin playing the piano? I started playing piano when I was four years old. I don’t think I chose that on my own, but I remember always happily going to the local piano institute for every lesson and practice. I was always a musical kid who liked to sing, play piano and [play the] flute too. I grew up in Busan, South Korea with one older brother. Busan is very similar to San Diego, as both are sea cities. Both of my parents were business owners, singing a lot casually. They always encouraged whatever I did in my life. I was completely

supported in making my own decisions and [was] encouraged to lead my life from early on.

myself ) having a tea party together! Well, I tried to gather them all at one table through my album.

How did 10 More Minutes begin? What does the title mean? I [had the idea] about a year and a half ago to create an album—which is [similar] to my live performances—carrying a consistent feel of longing for 10 more minutes of a great experience. I purposely picked pieces that are very close to me, which I play often as an encore. [Asking] for an encore at a concert is exactly the feeling I wanted to capture in the album— just perhaps ‘10 more minutes’ to cherish.

You are performing a CD release concert on December 11th at The Scripps Research Institute. What can fans and music lovers expect from this concert? That is a venue that I often perform at for the San Diego Symphony Chamber Music Series and the La Jolla Music Society. I wanted this national celebration to be where I reside, though this album is not limited to being local. As [with] all of my other solo concerts, I will guide each course of the music before I play. My commentary for each set of pieces on stage started from my wish to get more connected with people. Music speaks by itself, but if there is a chance [to help] people’s understanding of music become deeper with my commentary, then my goal is accomplished. I would hope even my grandma from Korea, who never really listens to classical music, could understand what I am trying to communicate. It will be an hour-long concert without intermission, and there will be a reception to follow.

10 More Minutes was crowdfunded via Kickstarter a year ago by your loyal fans and music lovers. What’s it like to have your hard work come to fruition? This project has reminded me of a valuable life lesson: you can’t do it alone. When the Kickstarter campaign became successfully funded within 30 days, I felt like I’d received an excellent engine that could run well, and all I had to do was drive that engine with my best ability. I could be the one driving this project, but so much love and support from fans were the fuel to make it possible. I look at the album now and still can’t believe this is a reality. From the idea to the actual CD it took about a year and half [to produce]. But I also feel that my whole life is fused in the album; if I didn’t have practice time when I was 4 years old, if I didn’t have those struggles and tears in my past studies and experiences, this would not be the same. Describe the music featured on this album. All of the music from the album is like a great friend of mine; each one of the pieces has a unique feeling to me. I may play them as an encore or opener of a concert or just privately for myself as a treat when I need energy. The overall vibe of the album is songful, nostalgic, longing, romantic and hopeful. What are some of your favorite pieces featured? Which composers are featured on this album? [It’s like] asking me to choose which child is my favorite! But if I have to choose, I would choose Intermezzo by [ Johannes] Brahms or Impromptu in G-flat Major by [Franz] Schubert— or my improvisation called 10 More Minutes. Composers featured on this album include [Frédéric] Chopin, [Claude] Debussy, [Edward] Elgar, [Erik] Satie, [Pyotr] Tchaikovsky and myself. Imagine all of these amazing composers (excluding

Where can listeners find your album? 10 More Minutes will be fully available as a physical CD on Amazon and possible to download through iTunes on December 11th. The physical album is beautifully designed by a team from New York City with a 10-page photo booklet, along with my program notes. But if you choose to download the album, please go to 10MoreMinutesConcert.com for a digital booklet to complete your experience! My hope is that this album will be an experience of my private concert for an hour. Finally, what do you love about playing and creating music? When you think about it, there is absolutely nothing bad about music. For me, if there is any proof in this world that God exists, it would be through music. It heals people, connects people, touches people with a direct pipeline to their souls. I am honored to be a messenger of music-making and also another mere receiver of this amazing thing called music.

COLD WEATHER ESSENTIALS 4 Beauty Products for Flawless Winter Skin By MiKhala Haile The brutal winter months can wreck havoc on your skin, drying it out and turning it into a flakey mess. Even in San Diego, where snow doesn’t fall and sleet doesn’t freeze to ice, the cold can make the most polished face dry and itchy. Avoid staticky, lifeless hair and fragile skin, and enjoy some of the top beauty products of 2016, designed to keep your skin beautiful and hydrated all year ‘round!

BODY BUTTER

We all know about lotions and moisturizers, but what about a good body butter? Kiehl’s Creme de Corps Whipped Body Butter is hydrating and perfect for all types of skin. The mousse-like texture of the body butter is easily absorbed into the skin without excessive rubbing, and it includes ingredients prone to increase hydration in the skin, such as soy milk and honey. This natural body butter contains no parabens, glycols or silicones, but it does contain decadent air-whipped shea butter perfect for 24-hour hydration! Kiehl’s Creme de Corps Whipped Body Butter, $48, kiehls.com.

CUTICLE OIL

It’s important to pay special attention to your nails in the winter to keep your hands smooth and soft. Soak your hands in warm water for 10 minutes nightly, then apply a high-end cuticle oil. Sally Hansen’s 18K Gold Cuticle Eraser comes with a built-in cuticle cutter to keep your cuticles tamed and your nails strong. After applying the oil, put on a pair of cotton gloves for approximately an hour to allow your nails to properly soak up the product. A good cuticle oil is essential for achieving strong, sexy nails in the winter! Sally Hansen 18K Gold Cuticle Eraser, $8, ulta.com.

DRY SHAMPOO

One of the best ways to take care of your hair during winter is to shampoo less often. Instead, use a hydrating dry shampoo; this alternative leaves your hair moisturized and free of dirt and oil. For a good dry shampoo, try Klorane Dry Shampoo with Oat Milk from Amazon. This dry shampoo works on all types of hair, including oily hair. Perfect for women on the go, Klorane keeps your hair clean without drying out your scalp. Klorane Dry Shampoo with Oat Milk, $20, amazon.com.

MOISTURIZER

Bare Haven Essential Moisturizing Soft Cream is the ultimate product for winter weather. Perfect for dry facial skin, this moisturizer will keep our skin soft and leave you with a finishing glow. The moisturizer includes a blend of peptides, ceramides and amino acids that will soften the skin and reduce the appearance of fine lines. Made with the flower St. John’s Wort, Bare Haven hydrates normal to dry skin. Bare Haven Essential Moisturizing Soft Cream, $35, bareescentuals.com.

‘Tis the

Season to Tan Glow from Head to Toe with Blush Tan By Bianca Kasawdish

The door to December is open once more, and preparing for holiday parties requires a little extra foresight. From just the right outfit to killer shoes and statement accessories, creating a flawless persona is a never-ending adventure. But while clothing and jewelry can make or break any look, (and inner beauty always reigns supreme) true outer beauty goes skin deep. While San Diego plays host to the sun year ‘round, the skin can feel dull and lackluster as winter dawns. Gone is the glowing summer tan that accentuates any outfit, and in its place is pale skin that sinks into the dreary background of a grey sky. Luckily, with the right type of spray tan, colorless skin won’t be an issue at your next holiday party.

Blush Tan in La Jolla is an organic tanning solution designed to give your skin a youthful, healthy radiance. It was founded in 2010 in response to the rising awareness of the dangerous effects of UV exposure, with a vision to provide a healthy way for people to get the natural-looking tan they crave. Christina Kauffman, founder of Blush Tan, was determined to create a safe way to tan that screams “back-from-the-beach” without exposure to harmful rays, and thus Blush Tan was born. The company provides flawless results for all skin tones using only natural ingredients that keep the skin healthy. The team at Blush Tan created a line of organic sunless solutions with multiple color bases and different levels of darkness to customize client results. They ensure that each consultant at Blush Tan is certified and thoroughly trained in the signature application method to provide even, natural results every time. “We are not your typical tanning salon,” Kauffman explains. “We wanted to create a more luxurious, spa-like feel in our studios. You can expect a clean, modern atmosphere and a comfortable, sunless experience.” The cool winter is a perfect time to turn to an alternative tanning solution—but be sure to prepare properly for the experience. Exfoliate away dead skin and oils before your tan to create a clean, fresh canvas for the solution to set. After your tan, stay hydrated and moisturized to keep the warm look from fading. Besides drinking a lot of water, you can prevent dull winter skin by applying light, gradual tanning moisturizer daily to give you a subtle glow—something Blush Tan also has covered. Blush Tan’s ‘Glow’ by Luna Bronze is a gradual tanning solution infused with antioxidants. “Winter is definitely the best season to benefit from our Blush Tan solutions,” Kauffman admits. “They contain hydrating ingredients to prevent dry skin, so you can keep a youthful glow all winter long!” Whether you want an instant spray tan or a gradual solution, Blush Tan offers multiple ways to create a bronzed and beautiful look this holiday season. Embrace the smoldering look of Blush Tan— because who says your face needs to match the color of the freshly fallen snow this winter?

With a charming smile that could melt even the coldest of winters, Mo McRae is a suave professional who looks dashing in a debonair Rich Freshman suit. McRae’s firm jaw and intense gaze let him shine as the star of our city-themed photoshoot, held at Apex Studios in Los Angeles. Yet while McRae certainly takes a pretty picture, the man’s true talents lie in acting. Known for recurring roles on shows such as Murder in the First and Sons of Anarchy, McRae originated from South Los Angeles and quickly became interested in acting as a profession. Currently, he stars as Blip on Fox’s freshman series Pitch, which follows Kylie Bunbury as Ginny Baker, a rookie pitcher and the first female to play in Major League Baseball. McRae’s Blip is a longtime friend of the controversial Ginny Baker and a centerfielder for the San Diego Padres, the central team featured in Pitch. The series is partially filmed at Petco Park and in San Diego, and it has become a local fan favorite for its ambitious characters and big heart. From friendship to love, with changing times and bitter enemies, Fox’s Pitch has it all. With Pitch’s season one finale scheduled to air on December 8th, co-star Mo McRae spoke with FINE Magazine about his love for acting, the audition process for Pitch and his new production company Scalable Content. Why did you gravitate towards acting as a profession? Did you always want to be an actor? I was introduced to acting in high school in my 4th period drama class. Through the exercises and practices, the teacher felt like he should say I had some talent and some skill. So he encouraged and pushed me to do a play, which I did, begrudgingly. However, the first moment I walked on stage the energy between me and the audience was amazing. Being in the moment, feeling free—yet it was also scary. But I was as crazy then as I am now, and I fully enjoyed that [scary] feeling. From then on, I pursued acting with everything I had.

You’ve had numerous recurring and guest roles. Is there any previous role that stands out for you? Each of [my guest roles] really stand out to me, especially Sons of Anarchy, as it was a show that resonated with millions of people all over the world, so getting to be a part of something like that will always stand out in my mind. Currently, you’re playing San Diego Padres player Blip on Fox’s Pitch. What was the audition process like for Pitch? How did you prepare to play a centerfielder? For the audition process, I went in and read for the director of the pilot and Executive Producers Paris Barclay, Rick Singer, Kevin Falls, Tony Bill, Helen Bartlett and a few other writers and producers on the show… I was in the process of filming [a project for Apple Inc], but when I got the script [for Pitch] they wanted me to come in and I wasn’t able to make it. I remembered being so concerned that I was going to miss out on the opportunity because the moment I read everything, I loved it. So I went and did the audition for them. I felt it went great, and they were like “Okay, can you do the other scene?” I had no idea they had another scene for the audition, but apparently all of the other actors auditioning had received another piece of the audition material. So they gave it to me right then and asked if I wanted to come back another day. I told them I just needed a couple of minutes. There were three additional pages of material with a monologue. Paris Barclay, who I had worked with before on Sons of Anarchy, said, “He’ll be fine,” but everybody else just sat staring.

went out of the room and prepared while they saw [another] actor before I came back in. I walked in, set the script down, and they asked me, “You memorized the whole thing already?” I was able to memorize and perform for them on the spot the same day. I feel like I was able to do that because the writing was so good and everything just flowed naturally… A few days later, I got a phone call; they wanted to do a chemistry read and screen test with [series lead] Kylie Bunbury. Once I was cast in the role, I began obsessively watching baseball and trying to identify players who I would want to pattern Blip after. The network, studio and producers of the show provided coaching for me, Kylie and MarkPaul [Gosselaar]. Then, we began training several times a week… It’s funny because we would have this constant stream of information and clips between me, Kylie and Mark-Paul from YouTube, Instagram or ESPN of different people in the batting box or showing various techniques… We really tried to immerse ourselves in the baseball community as much as we could with everything from the actual physicality of it to talking to former players about the psychological and emotional side. What’s it like filming scenes in Petco Park? Filming in Petco Park is pretty magical. I think it makes the job a lot easier because sometimes, as an actor, you are so removed from things. But for this, I don’t have to act like I’m playing in the stadium where the Padres play—I am really in the stadium. There is something special about actually being there that makes everything become so real and tangible, and I think it drives the performance to an authentic place. We also film at Dodger Stadium, which is a big deal for me because I am an LA native, so to get to play in historic Dodger Stadium only miles away from where I grew up was pretty surreal for me. Why do you think Pitch resonates with audiences? I think Pitch is resonating with audiences because there are a lot of layers and so many different things that people can connect to and relate to in terms of the desire to be successful. Everyone has that desire, but with that desire you inherently encounter obstacles and conflict—the show is full of that.

t’s complicated, it’s messy, it’s heartfelt… You can look at that and strive to be like some of these characters, whether it’s Ginny Baker, who’s a pitcher, the first women drafted and breaking glass ceilings, or you can be like Mike Lawson, who’s had a 15-year career and is the captain of the team. There is Evelyn, who is the support system of a man who has pursued his dreams and she has folded her dream into his, which is a huge sacrifice. [You can] even like Al Luongo—I was out the other night, and I was stopped by a fan of the show. He was like an older gentleman, a silver fox gentleman, but he is very different than the 19-year-old person that stops me at the sneaker store. That’s a fan of the show [who] could probably gravitate towards Al: this guys who’s been around for awhile and has been a part of the team, [but] it’s now a very different world. I feel like at some point for all of us the world changes at a pace that we can’t keep up with, so there is that component with the millennials and the older generations. Baby boomers vs. millennials. All of those dynamics are in the show. In addition to acting, you’ve also produced and written work. What’s it like working behind the scenes? Are writing and producing something you see yourself pursuing more in the future? I really push myself to be an artist, and I think art is something that exists without boundaries… Right now, I am in the directing and producing space, and I started a production company where we really want to develop short-form content. I work with Mark-Paul Gosselaar from the show because he is also a director and a storyteller—we felt like it would be cool to bring our resources and ideas together and work under a company. We started a company called Scalable Content, and we just want to create interesting narrative pieces to share with the world. Thank you to everyone who watches this show or has received any of the other art that I have put out into the world. I think it’s very humbling, and I am very aware that I’m getting to live a dream, so anyone who supports that, I [appreciate].

ANNUAL DMTC FALL FASHION CONTEST GOES PATRIOTIC By Evangeline Turner

ear the clipping of hooves as the horses race by, the cheering of the crowd as spectators bet on their favorites. The fall season of the Del Mar Racetrack is nearing conclusion, but the fashion contest held on Opening Day is still the talk of the town. Five years previously, the Del Mar Thoroughbred Club (DMTC) approached Deena Von Yokes about partaking in the fashion aspect of the Del Mar races. Von Yokes is the founder and owner of the renowned Studio Savvy Salon in Rancho Santa Fe; currently, she works with the Del Mar Thoroughbred Club on Opening Day of the races during both the summer and fall seasons to produce stunning fashionbased contests.

The summer season features an infamous hat contest, where outlandish, beautiful, decorative hats flood the Del Mar Racetrack. In fall of 2016, however, patriotism took center stage. Because Opening Day for the fall season was held on Veterans Day, the fall fashion contest adopted a Stars and Stripes theme as a way to honor the men and women who serve our country. Awards were presented for the Most Patriotic and Best Pin-Up or Celebrity Look. From camouflage and garrison hats to red, white and blue chic, the fall fashion contest presented beautiful patriotic looks for all. There was a dazzle to the fatigues, a vintage glam to pinup couture, that tied everything together. With the fall season of the Del Mar Thoroughbred Club concluding on December 4th, the annual fashion contest served as a fun way to usher in the classy competition.

GINGERBREAD COOKIES

IRISH EGG NOG

3 cups Deanna’s Gluten-Free Pastry Flour 1 1⁄2 teaspoons baking powder 3⁄4 teaspoon baking soda 1⁄4 teaspoon salt 1 tablespoon ground ginger 1 3⁄4 teaspoons ground cinnamon 1⁄4 teaspoon ground cloves 6 tablespoons unsalted butter 3⁄4 cup dark brown sugar 1 large egg 1⁄2 cup molasses 2 teaspoons vanilla

4 egg yolks 1/3 cup sugar, plus 1 tablespoon 1 pint whole milk 1 cup heavy cream 3 ounces Irish Whiskey 1 teaspoon freshly-grated nutmeg 1 teaspoon cardamom 4 egg whites 6 cinnamon sticks

Preheat oven to 375°F. In a small bowl, whisk together Deanna’s Gluten-Free Pastry Flour, baking powder, baking soda, salt, ginger, cinnamon and cloves. In a large bowl, beat butter, brown sugar and egg on medium speed until well blended. Add molasses, vanilla and lemon zest, then mix. Gradually stir in dry ingredients until smooth. Divide dough in half and wrap each half in plastic; refrigerate for at least 2 hours. Line baking sheets with parchment paper. Place dough on a lightly floured surface and sprinkle flour over dough and rolling pin. Roll dough to 1/4” thick; use cookie cutters of your choice, and place the shapes 1.5” apart. Bake 8–10 minutes, though a shorter time will produce softer cookies. Remove from oven and cool.

Using a stand mixer, beat the egg yolks until they lighten in color. Gradually add 1/3 cup sugar and continue to beat until completely dissolved. Set aside. In a medium saucepan over high heat, combine milk, heavy cream, cardamom and nutmeg. Bring to a boil, stirring regularly. Remove from heat and slowly add the egg yolk and sugar mixture into the pot. Continue to cook until the mixture reaches 160°F. Remove from heat. Stir in the Irish Whiskey, pour into a medium mixing bowl and set in the refrigerator to chill. In a medium mixing bowl, beat the egg whites to soft peaks. With the mixer running, gradually add 1 tablespoon of sugar and beat until stiff peaks form. Whisk the egg whites into the chilled mixture. Portion into 6 cups, sprinkle with nutmeg and add a cinnamon stick to each glass.

Bourbon &Scotch

Of

Holiday Gifts for the Whiskey Connoisseur

By Rosalie Cushman

T

he subtlety of an exceptional bourbon or scotch is not lost on the true connoisseur. In fact, their palettes are exquisitely primed, able to discern the bouquet and flavor of some of the finest fluids in the world. Yet, descriptive terminology pales in comparison to the drink experience. Whether straight or in a cocktail, a worldclass whiskey, by definition, excites the senses in an extraordinary way. Anyone can throw back a shot, but a connoisseur would never compromise themselves (or the liquid) in such a way. They say it starts slow, the fragrance, pungent with a nostril flare. Then the tongue takes over, gently sluicing the liquid down the throat, followed by the finish. A fine bourbon whiskey or scotch is not to be toyed with. Rather, whether amber or golden, the

66

FINEsd.com • facebook.com/FINEmagazines

liquid must be savored. Slowly. Easily. You might even say, the taking in of the straight sip alters time. But how? Why? Of what is it comprised? According to Brett Winfield, General Manager of Seven Grand Whiskey Bar and Bar Three Piece in San Diego, a good gift for the whiskey connoisseur this holiday season is about knowing the person to whom you’re presenting the bottle. “It’s what a person likes the most based on flavor profile and cost,” Winfield contends. And with over 700 whiskies available for clients, Seven Grand Whiskey Bar in North Park aims to please whatever anyone’s palate and price can afford. That said, we’ve put together a few suggestions for this holiday—to either enjoy imbibing with friends and family at the Seven Grand or other establishments around town, or to give a bottle as a gift to lovers of fine whiskey everywhere.

For the Bourbon Epicure

A bourbon is all in the mash, as they say. For a whiskey to become a bourbon, the grain mixture must be at least 51% corn, with the remainder typically comprised of malted barley, rye or wheat.

Pappy Van Winkle’s Family Reserve, 20 Year Old The price tag is irrelevant for the true aficionado. This bourbon whiskey is considered by those in the know to be the best in the world and therefore worth it. As high as $100 a pour in some places, the combination of sweetness—but not too much—and the long finish provides a delectable time-space dimension-altering experience. Rich, it glides easily down the throat, carrying with it hints of vanilla, nutmeg, cinnamon, allspice and pepper. Not so easily come by, it seems to be a phenomenon unto itself: rare, fine and filled with character. Start looking for the bottle now as the distillery creates limited runs. Produced in Kentucky, Pappy Van Winkle’s Family Reserve is $900 a bottle with an aftermarket price as high as $1,800. The company also makes 23 Year, 15 Year and 12 Year vintages, along with an exceptional Family Reserve Rye. Seven Grand Whiskey Bar carries the last four vintage years available, poured by the glass.

Hudson Baby Bourbon Whiskey

Considered by some to be a New York upstart, Hudson Whiskey has turned the bourbon world on its head. According to Seven Grand’s aficionado Winfield, Hudson Whiskey is “a cool little distillery that’s on its way.” Beginning in 2001 in upstate New York, they have refined their craft in a unique way. While bourbon by definition has to be at least 51% corn, they distill at 100%. The combination of pure corn mash that is aged in smaller barrels (more surface to liquid) has taken the bourbon world to a whole new level. This gem is expressively woody, smoky and with mellow notes of vanilla and caramel. More affordably priced at about $40 a bottle, it’s easier to buy a case (or two) for friends and family. 68

FINEsd.com • facebook.com/FINEmagazines

Blanton’s Bourbon Whiskey

Yes, vanilla and caramel comprise the note (and aroma), and some may recognize the Blanton name as Frank Underwood’s drink-of-choice on House of Cards. Reasonably priced at $65 a bottle, this single oak barrel bourbon offers unique variations by the barrel and bottle. Hence, no two bottles’ bourbons are quite the same. Yet the mash combination of corn, rye and malted barley teases the nose, consistently delivering a delicious citrus, orange, vanilla and caramel fusion. Then, a rich and intensely stimulating burnt sugar and clove taste stimulates the palate. The finish? A perfect selection of vanilla, honey and citrus.

For the Scotch Savant

A good scotch is comprised mostly of malted barley, with a single malt produced using a pot still distillation process of malted grain mash. In Scotland, the recipe must be only barely. Other countries may distill using a blended malt—though that isn’t true scotch. Scotch remains in oak barrels typically for a minimum of three years.

Laphroaig Islay Single Malt Scotch Whiskey, 10 Year Old

This affordable, yet exceptional, scotch boasts a full-bodied and smoky taste with a residual sweetness and a hint of salt amid peaty characters. Featuring a long finish, Laphroaig Islay is a very smoky experience, with its rich flavor coming, in part, from the peat found only at Islay in Scotland. The average retail per bottle of this 10 Year scotch ranges from $60 to $70.

70

FINEsd.com • facebook.com/FINEmagazines

Glenlivet Single Malt Scotch Whiskey, 21 Year Old

This time and palette-tested single malt scotch offers a phenomenal taste for the price. By the distillery’s own admission, it is rich and exotic, fostered by what they describe as “selective maturation.” What that means is part of the spirit is moved to virgin oak casks made from French Limousin oak, which is also used for French wines/cognacs. This forges a succulent taste that is both sweet and spicy, without an uncomfortable end bite. It retails at $210 per bottle. No matter what your loved one’s taste is, be it a sweet bourbon or a smoky scotch, there’s a well-crafted choice out there perfect for everyone this holiday season!

UNE PETITE FÊTE City Ballet Brings The Nutcracker to Spreckels Theatre

G By Jess Yacovelle

ather ‘round on Christmas Eve with all of your family and friends, surrounded by dancing dolls and toy soldiers. With laughter, presents and good cheer, the festivities will draw to a close late at night, until everyone finally departs into the winter air. And as the clock strikes midnight— with a wave of the hand by the magical Herr Drosselmeyer— the world changes, becoming filled with Waltzing Snowflakes, Dancing Dewdrops and the Sugar Plum Fairy. This isn’t a hallucination or sugar-fueled dream—no, this is the plot of the prominent holiday ballet The Nutcracker. Originally composed in 1892 by famed Russian composer Pyotr Ilyich Tchaikovsky, The Nutcracker is one of the most well-known ballets and favored holiday productions in the world. While the premiere production, choreographed by Marius Petipa and Lev Ivanov, was not successful, The Nutcracker has since become a show audiences clamor to see. From little girls in puffy dresses and big hair bows amazed by a wide-eyed Clara, to seasoned adults looking for a theatrical production this holiday season, The Nutcracker is a familyfriendly affair, and no local company performs the ballet better than City Ballet of San Diego.

City Ballet is the brainchild of Steven and Elizabeth Wistrich, two ballet dancers determined to make a world-class company in San Diego. Established in 1993, the Balanchinetrained Steven Wistrich is now the Artistic Director of the company, while Elizabeth Wistrich serves as the resident choreographer. Now within its 24th year, City Ballet of San Diego is a local staple and at the forefront of Southern California ballet companies. In the midst of their 2016–17 season is their rendition of the classic ballet The Nutcracker, performed at Spreckels Theatre and accompanied by the live City Ballet Orchestra. City Ballet melds classic dance with holiday traditions in their production of The Nutcracker, filled with enough pirouettes, jetés and pas de deux to excite even the most casual viewer. We spoke with Steven Wistrich about City Ballet’s upcoming production, The Nutcracker’s thrall and what’s next for the high-quality company in 2017. With 12 total performances, The Nutcracker is your longest running show every year; what can audiences anticipate? City Ballet of San Diego is presenting its award-winning production of The Nutcracker this December for the 22nd year. There are families who attend our performances every year, and they tell me they wouldn’t enjoy the season nearly as much without seeing our [The Nutcracker]. It’s choreographed by our

long-time resident choreographer, Elizabeth Wistrich, who just this month was honored with a Women Who Mean Business Award.

San Diego’s Favorite Holiday Tradition

Why is The Nutcracker such a beloved and timeless ballet? Our production is loved for several reasons. First off, we have the best dancers in the area performing in this production. The scenery and costumes are spectacular and a perfect reflection of the period of time that the beloved story takes place. It’s very colorful—but extremely tasteful—and is enhanced with a Christmas tree that grows to the full height of the proscenium of the magnificent, historic Spreckels Theater. I always get chills watching it snow on stage during the famous Waltz of the Snowflakes. We also have the excellent City Ballet Orchestra to play the magnificent score by Tchaikovsky. What makes City Ballet’s production of The Nutcracker stand out? What are some of the best/most fun dances in the production? The production will have nearly 100 children this year in four different casts. They have been rehearsing their parts every weekend since the end of September and will look very polished in their various roles. Some of my favorite parts of the production are watching the party scene in Act I—it’s very engrossing as we watch the story unfold and see how the mysterious Herr Drosselmeyer creates magic on the stage. The second act is especially colorful and filled with wonderful dancers doing challenging, imaginative choreography. There is an exciting Spanish Dance, and the Russian Dance features our excellent male dancers doing high-flying jumps and exciting turns. The large scale Waltz of the Flowers always thrills our audiences! Our principal dancers who perform the roles of the Sugar Plum Fairy and her Cavalier are good enough to perform their grand pas de deux anywhere in the world. It’s not uncommon for our performances to receive standing ovations at the end. Finally, how is the 2016–17 season shaping up for City Ballet? The 2016-17 season is off to a great start! After The Nutcracker, the company will be presenting performances in March with two ballets by George Balanchine and our first ballet by the great Jerome Robbins: The Afternoon of a Faun with music by [Claude] Debussy. His work has never before been presented in San Diego, so we are thrilled to have that honor. We will also be presenting our first ballet by Peter Martins, the Artistic Director of the New York City Ballet. It’s called Hallelujah Junction, with music by John Adams. Then in May 2017, we will present Elizabeth Wistrich’s spectacular production of Carmen with the famous Georges Bizet score. It has opera-quality scenery and lavish costumes—[it] has always been one of our most popular production. And our second resident choreographer, Geoff Gonzales, will choreograph a new productions of Vivaldi’s Four Seasons! Season subscription tickets are available!

AND THERE, THE BRIGHTEST STAR IN THE NIGHT By Bob Morey

I

n the Christian tradition, three men of different faiths— one an Egyptian, one an Athenian, and the other an Indian; none of whom knew one another—were called upon by the Lord and directed to meet in the middle of nowhere at a certain time and place. There, they shared their stories and compared the tasks they were assigned to perform, before setting off on their journey guided and protected by the Lord. They traveled across a vast desert (stopping only for food and drink), knowing not where they were headed, just that their mission would be revealed in due time. One night, the brightest star ever seen appeared in the sky. The star guided these Three Wisemen of Faith to a stable in the town of Bethlehem, where animals were normally kept for the travelers that passed through. Here, under the star, they found a newly born child asleep in a manger. The task the Wisemen had been given was to bear witness to the birth of Jesus, the Son of God. Today, we use the end of December to celebrate this traditional story of the birth of Jesus through Christmas. Nowadays, there is no media left untouched by the story of the Three Wisemen—from esteemed novels to high-budget films, no matter what faith or religion you follow, Christmas and the birth of Christ dominates December. But it’s not just

popular holiday tunes or visions of Christmas angels dancing in your head that bring the worldwide faith to life. Be it T.S. Eliot’s The Journey of the Magi, James Taylor’s song “Home By Another Way” or the 1959 epic motion picture Ben-Hur, biblical undertones following the birth of Christ and the Three Wisemen are everywhere. While the tale of the Three Wisemen is known to be both religious and holiday-central in nature, there’s a greater life lesson that we should all keep in mind this season. Keep others in your heart at this time of year—don’t be afraid to deviate from your daily path to visit with those who need you, and give to charities that matter. As you pass by the shops on your way to buy gifts for your loved ones, remember the Three Wisemen and the vast journey they made out of faith to give to someone they didn’t know. And then, the next time you pass by a charity donation bin, maybe follow their example and give a little help to someone in need this Christmas season. December is the time of year where we open our hearts to joy, love and holiday cheer. This is my gift to you, to remind you that Christmas is about more than fancy gifts or catchy carols. It’s about celebrating each other and doing good for your community. From all of us here at FINE Magazine, may you have a Merry Christmas and a Happy New Year!
