This year has been a very special one for the Poole family, marking the 20th anniversary of our much-loved family wine business… Where did the years go? I took great pleasure in writing down the FWD Co. history for our anniversary celebrations, which reminded all the family of the crazy, exciting and fun times we’ve had throughout. Bad times? They’re part of any business, but the good times and great friends we’ve made along the way remain top of mind! This past year has been a rollercoaster for Kiwis affected by many negative international forces and events, plus of course the long, drawn-out process of electing a new government. Christmas and the Festive Season in general are great opportunities to remind ourselves of the great country we live in and to engage more closely with the most valuable things in our lives… partners, kids, family and friends. Virginia and I will spend plenty of time with family and close friends over the holidays, but the day I most look forward to is our Christmas day celebrations at home. We’ll be up early to prepare for the arrival of 12 family and friends. Virginia will be working inside, preparing a myriad of dishes, while I’ll be firing up the Komodo Joe cooker to BBQ the lamb, pork and chicken. It’s a big job, but one blokes are brilliant at… just ask us! Around 11.30am, I’ll put a large fillet of salmon on the smoker, which will be ready for our guests arriving from midday onwards and will be simply served with red onion and cream cheese on thinly sliced, freshly baked baguettes. Champagne Gardet Brut Tradition is so fresh on the palate at that time of day, and the stunning 2017 Vickery Clare Valley Dry Riesling will be served with the salmon, a perfect start to our long Christmas lunch! Virginia and the girls will quickly gravitate to more of the Gardet Champagne, I suspect. As we work towards lunch at 2pm, thoughts will turn towards the table wines. We’ll start light and fresh, since we haven’t got anything substantial in our bellies yet, decanting a youthful Chardonnay and a Pinot Noir. I’ve chosen two 2015s: the Te Kairanga Runholder Pinot Noir and Villa Maria Ihumatao Single Vineyard Chardonnay. Roast BBQ lamb, pork and chicken, ham off the bone, fresh asparagus, broccolini, peas, roast potatoes, kumara and pumpkin… it’s like an abstract painting, anything goes (almost) when it comes to wine matching. I’ll be digging into our cellar for older vintages of Neudorf Moutere Chardonnay, Esk Valley Terraces and Ata Rangi Pinot Noir… maybe a bottle of the famous Spanish 1st Growth red, Vega Sicilia Unico as well (you can’t take it with you). I will also pull out my last two bottles of 1994 Seppelt Show Reserve Sparkling Shiraz, its rich, plummy, chocolatey, velvety bubbles so compatible with most Christmas table fare, from the mains to the plum duff, pavlova, chocolates, dried fruits and nuts. You could count on one hand the customers who still have bottles left of this remarkable Methode Traditionnelle, however FWD Co. have a couple of fine examples of Aussie Sparkling Shiraz in our Festive Season offering, which will deliver you similar pleasure and diversity. At the end of all this, if we still have room for a glass or two to assist our transition into relaxed banter… I’ll break out a dry, freshly shipped Champagne. The perfect wine is Ployez-Jacquemart Extra Quality Brut NV. Aged 4 years on lees, it has great body and complexity, but remains stunningly fresh with just 4 grams residual sweetness (most Grand Marque Champagne labels are around 8-12gms sweetness) … and its remarkably affordable at $49.99/bottle. If you want to replicate these wine experiences, but you don’t have the luxury of a cellar collected over 38 years in the wine business … then I have compiled two mixed case selections (inside back cover) which will allow you to emulate our Christmas day experience and keep within your budget.

Christmas Crayfish on the BBQ Rated #18 in Trip Advisors ‘Best Fine Dining Restaurants of the World’, adding to an illustrious list of accolades for The Grove. Whilst we can only dream of creating their exquisite cuisine at home, Executive Chef Ben Bayly has kindly shared his recipe for his Totara smoked Karitane Crayfish, one of his specialties. It’s a match made in heaven with Louis Roederer Brut NV… “Karitane Crayfish grilled and smoked over totara, basted in bonito butter, finished with aubergine caviar, golden raisins, verjus and fresh parsley”. Don’t be intimidated though, it’s easier than it sounds especially with Ben’s full method below!

Ingredients • Large Crayfish 3 whole • Aubergines 2 whole

• Chives 1 small bunch

• butter 250g butter

• Golden Raisins 50g

• Flat Leaf Parsley 25g

• Capers 50g

• Verjus 100ml

• Fresh Totara Branches for smoking

Method

• Blanch the crayfish in salted boiling water for 2 minutes. Ice it down until completely cold. • Split the tail lengthways and remove the meat. Cut the tail meat into bite size pieces, season and place back in the shell. • Put the aubergines on the bbq to char the skin. Keep turning them every 5 minutes until they are soft all the way through. Scrape out the flesh and place in a colander to remove the excess liquid • Heat the verjus until almost at a boil and pour over the golden raisins. Leave them to soak up the liquid. • Finely chop the parsley and the chives, mix in with the aubergine and add the golden raisins. Season to taste • Put the butter into a pan and heat until it starts to foam. Add the capers and the bonito. Let the capers crackle and open up then take it off the heat. • Spoon the caper butter into the crayfish tails and put them on the bbq. • Put some fresh Totara branches underneath the grill to impart some smokiness to the crayfish. Grill over a medium heat for 4-5 minutes and finish with fresh lemon juice and salt. • Put the aubergine caviar into the head cavity of the crayfish and serve.

We’ve promoted this wine a lot lately, but it seemed churlish to leave it out when it’s so obviously one of the finest bargains in NZ. Barrelfermented Awatere fruit with 9 months of lees stirring.

Like many Te Mata Chardonnays, this has blossomed with time in the bottle. Amazing purity of fruit and finely creamed texture to die for, it’s pleasurable summer drinking.

One of the most obvious examples of terroir we’ve ever seen, you can taste the sea-spray as the waves crash against Elephant Hill’s Te Awanga vineyards. Rich, long, saline and irresistibly creamy.

Steve Voysey remains the Heavyweight Champion of Heavyweight Chardonnays and the Prospect is the biggest of this bigger than big range. Highly complex with lots of creamy winemaking inputs around a core of ultraconcentrated stone fruit.

We should be called Fine Wine, Beer, Cider and Spirits Delivery Co. but that would be too long… we do however have a great range of all and for the warm summer months we thought it appropriate to feature the fine ciders New Zealand has to offer. There is far more to cider than the sugared-up faux-ciders sold by outlets where quality is not paramount! These three apple ciders are some of the finest the country has to offer. All three use 100% pressed apple juice, are estate grown and have no additives or preservatives. Sure, there’s a range of styles from dry to medium-dry, but all are balanced, full of flavour and perfect for any occasion. FWD Co has a whole section in our chillers dedicated to good quality cider, so if you’re after something clean, crisp and refreshing then give a cider a go.

Made from two separate blends of early and late ripening Somerset cider apples, 100% farm grown in the Upper Moutere. It’s wild fermented and aged for 6-18 months before release making it sound more like a fine wine than a cider.

There’s nothing quite like a glass of cold cider on a hot summer’s day… it’s the adult version of pinching an apple from the neighbour’s orchard (not that I ever did that…) Cider is so thirstquenching because it’s generally quite high in acidity, as well as being lighter than most modern craft beers (including the alcohol level). These three ciders are among the best I’ve tasted this year. They’re all very enjoyable and unique in their own way, plus pair very well with light summer food. I’ll be enjoying mine with a salad nicoise, but cider and cheeseboards are always fun for pairing.
