Alzheimer’s Tea day was marked on May 7th in The Marlay Nursing home with residents, visitors and staff enjoying tea, home-made cakes and music while raising €1,000 for the Alzheimer's Society. It also was also an opportunity to invite local residents to come and see at first hand the nursing home and its wonderful facilities. “Serving and being part of the local community is very important to us” said Sue Cameron, Director of Operations at the Marlay. “This is the second time this year we have invited people to come and visit us. We recently held an Open Day at which over 70 people dropped in to see us. Giving people the opportunity to see the home and its facilities, talk to staff and ask questions without obligation was welcomed by those who came. With an ageing population most of us know someone who is caring for an older relative and while thankfully most of us will live out our lives at home it is good to know that there is somewhere within the community available for those of us who may at some time need care within a residential setting. The feedback from the day was very positive and possibly the most frequent and nicest comment being that it didn’t feel like a Nursing Home!” .

ENCORE! School of Performing Arts take to the Stage year. The emphasis on participation of every individual in each class has resulted in a learning environment which promotes the growth of self confidence and allows the students develop their talents. In all it has been another fantastic year at this long established school with over 600 performers from the classes in the four centres: Knocklyon, Taney Parish Centre, Sandyford Community Centre and The Mill Theatre itself. The year was sprinkled with fun events such as “Finger Puppet Poetry” “Dress Up Week”, “Encore’s Got Talent”, Poetry writing, Comedy Night: “The Sound of Music” meets “Fame” Recently the talented and enthusatic young performers from Encore! School of Performing Arts took to the stage at the Mill Theatre Dundrum. The performers delighted audiences with their plays, songs and dances with familiar items such as “How do you solve a Problem like Maria” from “The Sound of Music” and that familiar dance number from the eighties “Fame”.

The very young took audiences on a visit to Nursery Rhyme Land and the more seasoned young students entertaining everyone with their newly acquired “Southern American Accents “ not unlike that heard on “Walton Mountain” and dancing to the familiar tune of “Grandma’s Feather Bed”. These plays and songs,written by Emer O’Neill and Caoimhe Brennan, the principals and founders of the school, helped mak the annual show unique as it maximised the talents of each student giving every single child in every group a “speaking part”. This in turn allows every child to develop their talents in a non competitive environment. Encore! was established in 1998 in Knocklyon and since then has grown to service four centres. The two principals of the Encore! School are Caoimhe Brennan and Emer O’Neill both Secondary School and Primary School teachers respectively. ABOUT RECIPE

Sea Bass with Slow Cooked Fennel and Tomatoes Fennel and tomatoes are gently served with wine, herbs and garlic and then topped with pan-fried sea bass. A tasty combination of classic Mediterranean ingredients. Ingredients: For the sea bass: 4x170g/6oz fillets of sea bass, skin on 1 tbsp olive oil salt and freshly ground black pepper For the slow cooked fennel and tomatoes: 4 fennel bulbs, tough outside leaves removed 175ml/6fl oz extra virgin olive oil 400g can of chopped tomatoes 1 head of garlic, split into cloves and peeled 150ml/5fl oz boiling water 120ml/4fl oz dry white wine 2 tbsp chopped fresh oregano leaves 24 black olives, stoned and halved 2 tbsp balsamic vinegar 12 basil leaves

Method 1. Preheat the oven to 170C/325F/Gas 3. 2. Slash the skin of the sea bass fillets and place in the fridge. 3. Cut the fennel lengthways into quarters. Heat the olive oil in a heavy-based ovenproof pan and add the fennel. Cook the fennel over a medium heat, turning frequently, for 20 minutes or until starting to brown. 4. Add the tomatoes, garlic, boiling water, wine, oregano and some black pepper. Bring to the boil, cover and cook in the oven for 1½ hours. 5. Remove the pan from the oven and add the olives, balsamic vinegar and basil leaves. Place on a low heat, season and simmer gently. 6. Take the sea bass from the fridge, rub the surface with the olive oil and season with salt and pepper. Heat a large frying pan. Add the sea bass fillets, skin side down and cook for 3-4 minutes until the skin is crisp. Turn the fillets over and cook for a further minute or until the fish is just cooked through. 7. Place a spoonful of the fennel and tomatoes into the centre of each plate and top each with a piece of sea bass. 10 | ABOUT DUNDRUM

After sixteen years operating from the Main Street in Dundrum, Dillon Solicitors have moved to impressive new offices in the Nutgrove Office Park in Rathfarnham (behind where Homebase used to be). Commenting on the move, Brendan Dillon, who set up the firm 16 years ago, said “While it is sad to be leaving Dundrum, the move was necessary due to the expansion of the firm over the last few years and the need to offer our clients the best possible service. We were anxious to stay close to our client base and to hold onto the same contact numbers. We have much more space in Rathfarnham, our meeting facilities are much better and we have free parking for our clients.” Since acquiring the firm of Anne Colley & Co. (Anne Colley is still a Consultant with the firm) the firm has almost doubled in size. According to Brendan this has enabled the firm to offer a more efficient service as well as broadening the range of services offered to its substantial client base. “While we continue to offer the traditional services in the area of property sales and purchases, refinances, wills, probate and litigation, we have substantially increased our client base in three key areas – Family Law, Employment Law and Business Law”. In relation to Family Law, Brendan commented “The break-up of a marriage is traumatic and can be very difficult for both spouses and particularly the children. Virtually all of our Family Law work comes from referrals from existing clients, because they felt we understood their difficulties and worked hard for them to bring about a fair but workable outcome which allows both parents to move on and protects the children as much as possible.” Dillon Solicitors have also developed a strong reputation in the area of Employment Law. Round the Garden in June This is one of the best months for your garden to look good. Growth is now at its most vigorous – that is if there is plenty of moisture in the soil! Grass can suffer in the dry weather so its best not to cut it at all and let any dew cling to the grass blades during the night. If you do mow, set your blades a little heigher than you usually would. Watering they say, is best done in the early morning and best given to the roots and not all over the plant; if the sun is out, the sun on the water can burn the leaves. Pupils from ten schools in the Ballinteer/Dundrum area were invited to participate in the Creation Matters competition organised by the Three Rock Churches’ Environment Group. An evening to celebrate the entries and announce the winners was held at Dundrum Methodist Church on 24th April. Kate Boyd Crotty, a 4th year pupil at St Columba’s College, took first prize in the essay section and was invited to read her winning entry. “The earth is not ours to destroy,” she said. “We are only loaned it for the time we are on it.” Sylvia Thompson of The Irish Times, who judged the essay section, said Crotty’s essay was “an absolute winner” because it raised the questions of over-population and why we have become so dependent on fossil fuels. Dean Eaton, assistant environmental officer of Dun Laoghaire-Rathdown County Council, praised Ballinteer Community School pupils for their innovative recycling project. “The work that is being undertaken by first years at BCS is fantastic, with the support of third and fourth years and some teachers,” he said. “They have come up with a recycling project that will help protect the planet.”

The first year pupils designed boxes for collecting paper, plastic and cans, which they encourage other pupils to use. They have also made Reduce, Reuse, Recycle posters and displayed them in the canteen, encouraging others to consider the environment. James Finney, Jake Clifford and Robert McNulty explained how the cardboard boxes were prototypes and that they hoped to make metal boxes, which would last for years to come, in the school’s metalwork lab. Rev Jeremy Nicoll of Dundrum Methodist Church concluded the evening by saying there was some “fantastic” work being doing by school pupils. “It is a wonderful thing to see young people inspired about the environment,” he said. “They’re the future and it is good to see them taking a lead.” The Three Rock Churches’ Environment Group, an initiative of Eco Congregation Ireland, is an ecumenical committee, representing six churches working together to promote environmental awareness in the local community. It consists of lay representatives from Holy Cross, Dundrum, Dundrum Methodist Church, Society of Friends, Churchtown, Whitechurch and Kilternan Church of Ireland parishes and the Church of the Ascension of the Lord, Balally. As residents may be aware, Lenridge Properties Ltd got the green light from the council to proceed with Phase II of the Dundrum Town Centre plan, which includes a retail centre, hotel and houses, all subject to 61 conditions. Dundrum Farmer’s Market The market started in May and operates each Sunday from 10am to 4pm in Pembroke District, Dundrum Town Centre. The market will feature a dozen artisan retailers, offering a wide range of produce including meats, breads, cheeses and fruit and vegetables. Your Summer Capsule Wardrobe Did the recent spell of gorgeous weather set you off to look out last year’s summer clothing to check what would still fit and what was still in? With the Irish climate offering us four seasons in one day it can be difficult putting together clothes that are summery in appearance and yet handle this variety. I would like to suggest a working summer capsule wardrobe as this simplifies the matter of choosing what to wear everyday. What is a capsule wardrobe and how do you create one? A capsule is basically a collection of between seven and ten items that you can mix and match yielding several outfits. This can include for the summer, light weight trousers – perhaps in linen or cotton, a skirt or dress and shorts or cropped trousers. Look carefully at the existing clothes you have, you may well find that you are already choosing items with one colour being prevalent, perhaps white or cream or a paler shade of blue or brown. A good capsule would include either knitwear or a light coat or jacket that works with the colour-way on the bottom half. By mixing in a selection of tee-shirts or tops it should now be possible to create several outfit combinations from this basic collection. This everyday capsule can be adapted to suit your lifestyle or holiday requirements. If you are heading off to certain sunshine then your holiday capsule could include: swimwear with a kaftan or a beach cover-up, shorts and cropped trousers or light weight skirts and an easy to wear dress for evening or sightseeing. It is really simple to totally change the look of an outfit by wearing different footwear and accessories. The kaftan that can be slipped on over your swimwear can look completely different if teamed with strappy sandals or wedges and pretty jewellery. With baggage allowances being cut to the minimum it can be important to choose wisely when packing your bags. 38 | ABOUT DUNDRUM

As well as that, Skype is a wonderful and cost effective way of communicating with friends and relatives abroad for free, and there's always email.

Meadowbrook’s Away with the Birds! Meadowbrook Residents Association has commissioned and erected an educational and environmental Bird Panel . It is made from state of the art materials and has sixteen representations of local birds with their names in English agus as Gaelige . The panel is made from stainless steel treated against rust and the illustration is protected from the ultra violet rays of the sun. It is lectern style which makes it easy to view.The Transportation Department of Dunlaoghaire -Rathdown County Council erected the panel on behalf of Meadowbrook at the junction of Sycamore Road and Sycamore Drive. You must go and view it! It is a tremenduous addition to the area and with the other two landscape scuptures makes a walk through the estate a very pleasant experience. The Artist is the Kerry domiciled Micheal O'Clery and the panel was manufactured by Signiatec based in Castlehale , County Kilkenny. The 182 Household strong Association which is celebrating forty two years since their houses were built commissioned this as part of their ten year strategy to enhance their area.
