Your Summer Capsule Wardrobe Did the recent spell of gorgeous weather set you off to look out last year’s summer clothing to check what would still fit and what was still in? With the Irish climate offering us four seasons in one day it can be difficult putting together clothes that are summery in appearance and yet handle this variety. I would like to suggest a working summer capsule wardrobe as this simplifies the matter of choosing what to wear everyday. What is a capsule wardrobe and how do you create one? A capsule is basically a collection of between seven and ten items that you can mix and match yielding several outfits. This can include for the summer, light weight trousers – perhaps in linen or cotton, a skirt or dress and shorts or cropped trousers. Look carefully at the existing clothes you have, you may well find that you are already choosing items with one colour being prevalent, perhaps white or cream or a paler shade of blue or brown. A good capsule would include either knitwear or a light coat or jacket that works with the colour-way on the bottom half. By mixing in a selection of tee-shirts or tops it should now be possible to create several outfit combinations from this basic collection. This everyday capsule can be adapted to suit your lifestyle or holiday requirements. If you are heading off to certain sunshine then your holiday capsule could include: swimwear with a kaftan or a beach cover-up, shorts and cropped trousers or light weight skirts and an easy to wear dress for evening or sightseeing. It is really simple to totally change the look of an outfit by wearing different footwear and accessories. The kaftan that can be slipped on over your swimwear can look completely different if teamed with strappy sandals or wedges and pretty jewellery. With baggage allowances being cut to the minimum it can be important to choose wisely when packing your bags. 6 | ABOUT KNOCKYLON

In order to get the greater number of outfits out of your capsule look carefully at the colours you are choosing, if you can match two or three tops to each bottom then the options increase. Add in flat comfortable sandals or shoes along with a dressier pair with a few well-chosen accessories and the options increase again. If this sounds too complicated, don’t worry, help is at hand. Creating capsule wardrobes and yielding outfits out of existing clothing is my speciality. My aim is to create outfits that work for you whatever the season, whatever your budget.

These are challenging times for business – many small companies are hard pressed for cash and tough decisions are being made on a daily basis by owner managers all over the county. South Dublin County Enterprise Board has been helping people start up and grow business in the county since 1993 - over 15 years experience of diverse economic conditions impacting on small enterprise. During that time the Board has helped many entrepreneurs take an idea and nurture it growing it into a solid business and creating valuable employment and wealth in the county. Unfortunately the past year has not been easy. The employment gains of 2007 in businesses supported by South Dublin County Enterprise Board were negated by job losses in 2008, bringing total employment among Enterprise Board clients back to almost exactly the December 2006 levels. Commenting on the losses, Chief Executive Loman O’Byrne said “This has been a very tough year for our clients and their staff. The adjustments they are making are very painful indeed but, in the circumstances, the losses could clearly have been much worse and we look on these figures as showing a strong element of resilience”. Declining demand and increasing costs are the strongest challenges facing owner/managers over the coming year, with short-term business credit, increased price sensitivity among customers and difficulty in getting paid also causing significant concern. The Board has signalled a shift in emphasis for the coming years, with the creation of employment returning to centre stage. “We have not forgotten the lessons of the past eight years” says O’Byrne and we still understand that sustainable jobs arise from innovative competitive businesses.

After sixteen years operating from the Main Street in Dundrum, Dillon Solicitors have moved to impressive new offices in the Nutgrove Office Park in Rathfarnham (behind where Homebase used to be). May is a frantic month in the garden. You may not need a list of what to do in the garden in May, because it is staring you in the face every time you walk through your garden. But here are some reminders of what you can do. Don’t panic. The season is just beginning. ENCORE! School of Performing Arts take to the Stage environment which promotes the growth of self confidence and allows the students develop their talents.
It is that time of year again where the many talented and enthusiastic young performers from Encore! School of Performing Arts take to the stage of The Mill Theatre, Dundrum (2nd – 9th May). The performers range from 4 to 18 and will delight audiences with their plays, songs and dances with familiar items such as “How do you solve a Problem like Maria” from “The Sound of Music” and that familiar dance number from the eighties “Fame”. The very young will be taking audiences on a visit to Nursery Rhyme Land and the more seasoned young students entertaining everyone with their newly acquired “Southern American Accents “ not unlike that heard on “Walton Mountain” and dancing to the familiar tune of “Grandma’s Feather Bed”. These plays and songs are written by Emer O’Neill and Caoimhe Brennan, the principals and founders of the school, which makes the annual show unique as it maximises the talents of eaËch student giving every single child in every group a “speaking part”. This in turn allows every child to develop their talents in a non competitive environment. Encore! was established in 1998 in Knocklyon and since then has grown to service four centres. The two principals of the Encore! School are Caoimhe Brennan and Emer O’Neill both Secondary School and Primary School teachers respectively. They have developed a formula of work and play: the “Rainbow System” TM which allows the pupils of the school explore their creative talents at class while also taking part in a full scale theatrical production every year. In all it has been another fantastic year at this long established school with over 600 performers from the classes in the four centres: Knocklyon, Taney Parish Centre, Sandyford Community Centre and The Mill Theatre itself. French Summer School (11 - 17 years) The French Summer School’s aim is to enable students to experience the French language in an enjoyable and effective way. ABOUT RECIPE
Sea Bass with Slow Cooked Fennel and Tomatoes Fennel and tomatoes are gently served with wine, herbs and garlic and then topped with pan-fried sea bass. A tasty combination of classic Mediterranean ingredients. Ingredients: For the sea bass: 4x170g/6oz fillets of sea bass, skin on 1 tbsp olive oil salt and freshly ground black pepper For the slow cooked fennel and tomatoes: 4 fennel bulbs, tough outside leaves removed 175ml/6fl oz extra virgin olive oil 400g can of chopped tomatoes 1 head of garlic, split into cloves and peeled 150ml/5fl oz boiling water 120ml/4fl oz dry white wine 2 tbsp chopped fresh oregano leaves 24 black olives, stoned and halved 2 tbsp balsamic vinegar 12 basil leaves
Method 1. Preheat the oven to 170C/325F/Gas 3. 2. Slash the skin of the sea bass fillets and place in the fridge. 3. Cut the fennel lengthways into quarters. Heat the olive oil in a heavy-based ovenproof pan and add the fennel. Cook the fennel over a medium heat, turning frequently, for 20 minutes or until starting to brown. 4. Add the tomatoes, garlic, boiling water, wine, oregano and some black pepper. Bring to the boil, cover and cook in the oven for 1½ hours. 5. Remove the pan from the oven and add the olives, balsamic vinegar and basil leaves. Place on a low heat, season and simmer gently. 6. Take the sea bass from the fridge, rub the surface with the olive oil and season with salt and pepper. Heat a large frying pan. Add the sea bass fillets, skin side down and cook for 3-4 minutes until the skin is crisp. Turn the fillets over and cook for a further minute or until the fish is just cooked through. 7. Place a spoonful of the fennel and tomatoes into the centre of each plate and top each with a piece of sea bass. 30 | ABOUT KNOCKYLON

As I sit here typing on my keyboard, I realise that I am as comfortable holding a computer mouse as I am holding a pen. That wasn't always the case, though. I did not reach that level of comfort around computers until many years after being exposed to them a little at work and then later in the classroom. Computers have come a long way since I took my first class and, I guess, so have I. In most places of business today, a computer is standard. If you are looking for employment, there is a good chance a computer will be a basic tool you will have to use. Being computer literate will help you get a job and it will help you advance in your career. Computer literacy does not mean you need to know how to use every single piece of software you may encounter. You just need to know some basics — how to save and open a file, how to use a word processing programme, and how to send and receive email — for starters. Basic computer courses are offered by most continuing education programmes. They are usually reasonably priced and conveniently scheduled. These courses can usually be found in your local community school and library on evenings and weekends. For those of you who may want a piece of paper to certify that you are computer literate, there is the ECDL. The European Computer Driving Licence (ECDL) is the world’s most successful IT skills certification programme. Almost three million people are participating in the programme today in over 60 countries world-wide. It is a certificate that verifies competence in computer use, making the holder readily mobile within Ireland and internationally. Employers and job seekers all 38 | ABOUT KNOCKYLON
agree on the importance of this standard definition of practical competence in Information Technology.
