Welcome to the June / July issue of About Rathfarnham Here comes the sun! Well, we can but hope that June will be bursting out all over! To kick-start the Summer, Personal Stylist Janice Coyne has some great advice on creating the perfect Summer Capsule Wardrobe (page 38). Sound advice, regardless of your plans for the months ahead. Taking Tea at The Marlay by Fiona Tuomey Sue went on to say “Nursing Homes over the years have improved and The Marlay is one of the Nursing Homes developing and leading the changes not only in the standard of care it provides but also in the areas of activities and dining. Our diverse activity programme includes art and music therapy for the soul, while our beauty and complementary therapies look after the body”.

Alzheimer’s Tea day was marked on May 7th in The Marlay Nursing home with residents, visitors and staff enjoying tea, home-made cakes and music while raising €1,000 for the Alzheimer's Society. It also was also an opportunity to invite local residents to come and see at first hand the nursing home and its wonderful facilities. “Serving and being part of the local community is very important to us” said Sue Cameron, Director of Operations at the Marlay. “This is the second time this year we have invited people to come and visit us. We recently held an Open Day at which over 70 people dropped in to see us. Giving people the opportunity to see the home and its facilities, talk to staff and ask questions without obligation was welcomed by those who came. With an ageing population most of us know someone who is caring for an older relative and while thankfully most of us will live out our lives at home it is good to know that there is somewhere within the community available for those of us who may at some time need care within a residential setting. The feedback from the day was very positive and possibly the most frequent and nicest comment being that it didn’t feel like a Nursing Home!” .

ABOUT RECIPE

Sea Bass with Slow Cooked Fennel and Tomatoes Fennel and tomatoes are gently served with wine, herbs and garlic and then topped with pan-fried sea bass. A tasty combination of classic Mediterranean ingredients. Ingredients: For the sea bass: 4x170g/6oz fillets of sea bass, skin on 1 tbsp olive oil salt and freshly ground black pepper For the slow cooked fennel and tomatoes: 4 fennel bulbs, tough outside leaves removed 175ml/6fl oz extra virgin olive oil 400g can of chopped tomatoes 1 head of garlic, split into cloves and peeled 150ml/5fl oz boiling water 120ml/4fl oz dry white wine 2 tbsp chopped fresh oregano leaves 24 black olives, stoned and halved 2 tbsp balsamic vinegar 12 basil leaves

Method 1. Preheat the oven to 170C/325F/Gas 3. 2. Slash the skin of the sea bass fillets and place in the fridge. 3. Cut the fennel lengthways into quarters. Heat the olive oil in a heavy-based ovenproof pan and add the fennel. Cook the fennel over a medium heat, turning frequently, for 20 minutes or until starting to brown. 4. Add the tomatoes, garlic, boiling water, wine, oregano and some black pepper. Bring to the boil, cover and cook in the oven for 1½ hours. 5. Remove the pan from the oven and add the olives, balsamic vinegar and basil leaves. Place on a low heat, season and simmer gently. 6. Take the sea bass from the fridge, rub the surface with the olive oil and season with salt and pepper. Heat a large frying pan. Add the sea bass fillets, skin side down and cook for 3-4 minutes until the skin is crisp. Turn the fillets over and cook for a further minute or until the fish is just cooked through. 7. Place a spoonful of the fennel and tomatoes into the centre of each plate and top each with a piece of sea bass. 10 | ABOUT RATHFARNHAM

Round the Garden in June This is one of the best months for your garden to look good. Growth is now at its most vigorous – that is if there is plenty of moisture in the soil! Grass can suffer in the dry weather so its best not to cut it at all and let any dew cling to the grass blades during the night. Your Summer Capsule Wardrobe Did the recent spell of gorgeous weather set you off to look out last year’s summer clothing to check what would still fit and what was still in? With the Irish climate offering us four seasons in one day it can be difficult putting together clothes that are summery in appearance and yet handle this variety. I would like to suggest a working summer capsule wardrobe as this simplifies the matter of choosing what to wear everyday. What is a capsule wardrobe and how do you create one? A capsule is basically a collection of between seven and ten items that you can mix and match yielding several outfits. This can include for the summer, light weight trousers – perhaps in linen or cotton, a skirt or dress and shorts or cropped trousers. Look carefully at the existing clothes you have, you may well find that you are already choosing items with one colour being prevalent, perhaps white or cream or a paler shade of blue or brown. A good capsule would include either knitwear or a light coat or jacket that works with the colour-way on the bottom half. By mixing in a selection of tee-shirts or tops it should now be possible to create several outfit combinations from this basic collection. This everyday capsule can be adapted to suit your lifestyle or holiday requirements. If you are heading off to certain sunshine then your holiday capsule could include: swimwear with a kaftan or a beach cover-up, shorts and cropped trousers or light weight skirts and an easy to wear dress for evening or sightseeing. It is really simple to totally change the look of an outfit by wearing different footwear and accessories. The kaftan that can be slipped on over your swimwear can look completely different if teamed with strappy sandals or wedges and pretty jewellery. With baggage allowances being cut to the minimum it can be important to choose wisely when packing your bags. 38 | ABOUT RATHFARNHAM

As well as that, Skype is a wonderful and cost effective way of communicating with friends and relatives abroad for free, and there's always email.
