PreGel history begins in 1967 in Scandiano (RE), when Dott. Luciano Rabboni gives birth, together with his wife Mrs Elena Frigieri, to a small business producing fruit products for the gelato and pastry laboratories of the zone. In forty years of business, PreGel has contributed to develop the sector of the artisanal gelateria with ever new successful tastes such as YoggiÂŽ (the first and most famous Yoghurt product), the first concentrated fruit pastes, the first fruit bases, the first TiramisĂš pastes, the famous PreGel Zabajone, the first Stracciatella gelato and many more. Today PreGel represents a point of reference inside the worldwide scene of the gelato and pastry products thanks to its continual research, its quality controls and its inventiveness. PreGel is the sole factory in its field to be present in the world with three production plants (Italy and, starting from 2009, in the United States too), nine branches (Australia, Austria, Benelux, Canada, Germany, Mexico, Poland, Switzerland, U.S.A.) and its products are distributed in more than 100 countries with a dense network of importers and distributors. Over the last few years the company has become more open to a confrontation with its final gelato and pastry consumers, anticipating taste trends and satisfying the new requirements: in this sense, to the production and sale of high quality products, has come up beside the marketing strategic consulting service, assuring success to each customer in each market and country. The gelato processings The gelato processings

Milk gelato and fruit sorbets can be made in different ways according to the personal needs of each single gelato maker. There are two main processings to produce this dessert: the hot processing and the cold processing. Neither of these is to be considered better than the other. In fact, both systems offer their own specific advantages to create the finest artisanal gelato.

Hot Processing This processing requires the combination of milk (or water), sugar and the PreGel Hot Bases (or PreGel Fruit Bases). All the solid ingredients are carefully weighed and mixed to obtain a mixture to which to add the liquid. Proceed to the following phase of product heating (with a pasteurizer). Once this process is completed (it takes from 15 to 45 minutes according to the pasteurizer used), add the flavours (PreGel Classic Pastes for milk gelato and PreGel Fortefrutto® for fruit gelato) to the new mixture in a carafe and then mix it all with an immersion blender. Then pour the mixture into the batch freezer, where the product is quickly brought to freezing point and mixed to incorporate air in order to produce and control the formation of minute ice crystals that are necessary to give gelato its creamy structure. This air incorporation also causes a percentage increase in the volume of the finished product compared to the initial basic mixture (called overrun). The product is then taken out of the batch freezer and poured into a specially cooled gelato tub where it is possible to add PreGel Arabeschi® or Toppings to ripple and decorate in order to create new recipes according to the creativity of the gelato maker. Then, after a few minutes’ rest in the blast freezer, the tub is finally ready to be put into the showcase or exposed in the refrigerated counter for sale.

Cold Processing This processing requires the combination of milk (or water), sugar and the PreGel Cold Bases (or PreGel Fruit Bases). There is no heating process and the ingredients, according to the recipe, are simply mixed with the addition of flavours (PreGel Classic Pastes for milk gelato and PreGel Fortefrutto® for fruit gelato). Then mix everything with an immersion blender before pouring the mixture into the batch freezer. At the end of the creaming process, the gelato is taken out of the batch freezer and poured into a specially cooled gelato tub. During this phase PreGel Arabeschi® or Toppings are added to ripple and decorate in order to make new recipes according to the creativity of the artisan gelato maker.Then, after a few minutes’ rest in the blast freezer, the tub is finally ready to be put into the showcase or exposed in the refrigerated counter for sale.

Sprint Products Sprint products are complete products to which you only need to add water or milk according to the directions on the label. Just mix the product accurately and leave it to stand for a short time. Then pour into the batch freezer. Sprint products represent a great opportunity, since they allow to obtain a gelato with a high and constant quality in a very short time, with no need to pasteurize nor to add other ingredients.

THE BASES The Base is the fundamental starting product, the heart and the structure of the gelato to which different flavours can be added in order to make a quality artisanal gelato. In the mixes of the PreGel Bases range the ingredients are mixed and balanced in order to give the gelato an optimal structure in terms of creaminess, scoopability and preservation. At the same time, the taste of the PreGel Traditional and Fortefrutto速 pastes that will be added to the base will be enhanced.

“La Via dei Gusti”: a real “path” that leads PreGel’s national and international customers through interesting initiatives. This project stems from PreGel’s desire to once again be seen standing by its customers, strengthening and supporting them with an effective service, quality products and always offering innovative and unmissable novelties and recipes with which to start each season of the year in a big way. On PreGel’s “La Via dei Gusti” you will meet practical demonstrations of gelato-making and confectionery, the presentation of new products and recipes, festive moments and contests to reward the imagination of Confectioners and Gelato Makers. It is, therefore, a real path for training, updating and growth, both for the company and for the customers: by directly coming into contact with the company and its technicians, the customers have the opportunity to express their opinion and make suggestions dictated by experience on the field, besides being able to make direct comparisons with numerous other professionals. PreGel, on its side, has the possibility of better understanding the impressions and requirements of its customers, learning them directly from the party concerned. This year, to emphasize the exclusiveness and the importance of the project, PreGel has created an interesting Book, fresh from the printers, called “Tutto il mondo in un gelato”: this fine book has been specially created with the collaboration of our best customers from the five continents, who shared their best recipes with the staff of “La Via dei Gusti,” thereby basically putting them at the disposal of their colleagues on the global market.
