Majoring in Socialization and Obedience UK celebrates four-legged service grads By Meg Mills

Y

ou might have seen a few extra feet — or paws — walk across the stage at the University of Kentucky’s May Commencement. Anu, a year-old golden retriever service dog in training, is one of several dogs that crossed the graduation stage with their student handlers. Anu is one of the dogs working with 4 Paws for Ability, a nonprofit organization based in Xenia, Ohio, that breeds, trains and places service dogs with children and veterans with disabilities. The students at the University of Kentucky involved in the program volunteer to train the dogs until they are ready to move on to advanced training. They

receive the puppies as young as 10 weeks old and typically keep them until they are a year old. The dogs go everywhere with their student handlers whether it is a lecture, a trip to the mall or a sporting event. Anu’s handler, Abby Sheeler, has been involved with the 4 Paws for Ability since she started at UK in 2014. Anu is the sixth dog she has fostered with the program. “I was an out-of-state student and did not know anyone at UK, let alone Kentucky. I wanted to find something at UK that would keep me busy and provide me with a place where I could meet different people,” Sheeler said. “The program combines my two favorite passions: working

with dogs and working with individuals with disabilities.” Sheeler and the other handlers at UK have one end goal — to make their pups successful. They introduce the dogs to various environments to make sure their dogs will be fully confident in any surrounding once they are assigned their positions. Along with socializing the dogs, the handlers also volunteer at nursing homes and schools throughout Lexington with their dogs. Sheeler, who is president of the 4 Paws for Ability student organization at UK, will graduate this week with bachelor’s degrees in psychology and special education, with dual specialization in learning and behavior disorders and moderate and severe disabilities. “Being a part of this program has brought me so much joy. I don’t know what I would do without it.” After Commencement, Sheeler and her four-legged pal will be together for a little bit longer. Anu has an evaluation to see if he is ready for advanced training, or if he needs to be socialized more. During this evaluation they will also decide what “specialty task” he is

naturally good at to determine what type of service dog he will become. He could assist with mobility, seizure alert, diabetic alert, autism assistance, posttraumatic stress disorder assistance, hearing alert and much more. By this fall, Sheeler will move on to a position as a special education teacher at Creekside Elementary in Scott County, Kentucky, and Anu will move on to the next phase of his career as a service dog.

Kentucky American Water has awarded Ripple Effect Scholarships to three Kentucky high school seniors—Joseph Craven from Henry Clay High School, Kaitlyn Parker from Owen County High School and Samuel Newman from Tates Creek High School. Each student receives a $500 award from the company for use at an institution of higher education. Lexington Public Library hosts their third annual park takeover every Saturday in June and July from 11 am until 1 pm. Bring the whole family for a variety of performances, interactive art, and games in Phoenix Park.

Brenda Cowan Elementary unveiled the school’s new logo. Representing Brenda Cowan and her service to the Lexington Fire Department and her community, the design also embraces educational pillars: The 3rd Grade Reading Pledge, Arts Integration, and Global

The original Henry Clay High School, on Main street, will no longer host FCPS central office. The Fayette County Board of Education voted unanimously to purchase a 187,000-square-foot office building located on the Lexmark campus for $10 million. The purchase will not be final until after the district completes several due diligence steps and receives final approval from the Kentucky Department of Education. “In many ways, this structure helped build the foundation of our community,” said Fayette County Public Schools Superintendent Manny Caulk, standing in the Main Street building’s main entrance. “History happened in these halls as generations of Lexington

residents were educated here. It’s only fitting that tomorrow’s students carry that tradition into the future.” If the project receives KDE approval, the 701 E. Main St. building would go back into district inventory and would be available to house an academic program. “After 39 years, the building is not a functional office space,” Caulk said. “But I have no doubt the legacy of excellence established in these halls in 1926 will continue for decades into the future.”

Father’s Day is Ice Cream Season By Chef Tom Yates

A

s a kid growing up on my grandparent’s Western Kentucky farm, my favorite summer days always involved homemade ice cream. We didn’t have it all the time, so it was a treat when my dad hauled the rickety old wooden hand-cranked ice cream maker from the dank cellar. Without fanfare, he’d prepare the ice cream base, flavor it with whatever was in season, and load the canister before covering it with rock salt and crushed ice. He’d crank the handle until the cream-filled canister glided smoothly through the melting ice before turning the wheel over to me. Churning ice cream was important work. While I loved the messy fun, he’d take over and finish the job when it got too hard for me to crank the cream. After wiping away the salty ice, we’d slide open the lid and sneak the first few bites of our homemade ice cream. Churner’s treats. Secrets. One year, out of the blue, my dad used an old hand drill, duct tape, and a long industrial extension cord to rig a very primitive hands-off electric ice cream maker. It was a revelation. Although it was loud and absurd looking, his zany contraption did the trick. We were modernized. When we bought our old Victorian house several summers ago, we jumped through hoops to make the old house feel like home. We shopped around for an ice cream maker. We looked at several fancy models before bowing to nostalgia and buying a clunky updated electric version of the ancient cranker. While it served us well throughout that long hot summer, we carelessly forgot about it and left it exposed on the back deck. It’s now a recycled retro-fitted tomato planter. Win. Last summer, in lieu of anniversary gifts, we picked up a spiffy counter-top ice cream maker. The sleek modern box didn’t scream nostalgia. It still doesn’t, but it cranks out tasty ice cream.

Basic custard. I warmed 2 cups of Chaney’s milk and heavy cream over a medium low flame. After whisking 4 large egg yolks, 1/4 teaspoon salt, and 3/4 cups sugar until everything was well blended, I tempered the sugary yolks with a few ladles of the simmering cream before pouring the mix back into the pot with the remaining warmed cream. Stirring constantly with a wooden spoon, I cooked the custard until it thickened enough to coat the back of the spoon. I pulled the custard from the heat, stirred in 2 teaspoons of Madagascar Bourbon Vanilla Paste, cooled it down over an ice bath, covered it with plastic wrap, and slid it into the refrigerator to chill. I hulled and sliced 1 1/2 pints of gorgeous Cain’s Strawberries. After tumbling the crimson jewels into a glass bowl, I splashed them with lemon juice, tossed them with 1/4 cup sugar, and slid them into the refrigerator to macerate. When the custard and strawberries were well chilled, I pulled them from the refrigerator. After smashing half of the strawberries into a rough pulp, I stirred them into the chilled custard, poured the mix into our 2 quart ice cream maker, and let it rip for 25 minutes, adding the reserved sliced strawberries during the last 5 minutes. Before stashing the strawberry-swirled ice cream into the freezer, we slurped several creamy spoonfuls straight from the frozen canister. Just like I did as a kid. Families enjoyed pet selfie stations, kiddo activities, food and drink vendors, retailer pop-up shops and live entertainment. We also spotted our neighbors from Souther Barker.

Woodford Wag

Last month the Woodford Humane Society hosted their annual Woodford Wag that raised money for the shelter. Families enjoyed a casual walk through Falling Springs Park and games with their furry friend.


PETS HJ’s Pet of the Month

The June Pet of the Month is Hero. He is a 19 lb Beagle/Border Collie mix that is 7 years old. His primary fur color is black and a white secondary color. Hero is great on a leash and does well with other dogs. He likes dry food, but isn’t interested in wet food. He does extremely well with vet techs which comes in handy for his check-ups.

The Lexington Humane Society has two adoption locations, Old Frankfort Pike (main location) and the Hamburg PetSmart. Hamburg Journal’s Pet of the Month is available for adoption at the Hamburg PetSmart location. Hurry over and meet your next furry family member.

Artist Traffic Box Wrap Program

Lexington has approximately 400 traffic signal boxes. Typically, the signal box is a nondescript gray metal box. The Artistic Traffic Box Wrap program allows citizens and groups to propose artwork that will be turned into a wrap and placed at a specific intersection, adding to Lexington’s public art projects. The proposing individual or group is responsible for funding the wrap and installation. The wrap can cover the entire box or a limited number of sides. Art must be approved by the Urban County Arts Review Board before installation. A permit from KYDOT is required for wraps located along state routes. Check out these boxes from

Recycling Center

Lexington Recycling Center is being forced to temporarily suspend the recycling of paper products due to the global market. This change goes into effect immediately. To reduce processing costs, residents are encouraged to throw office paper, newspaper, magazines, cereal boxes, paper towel rolls, and similar products in their trash cans. No clear date as to when they will begin taking paper again.
