What’s that Smell?
Kentucky American Water reports it is conducting its “annual water system flushing program, which involves crews opening selected fire hydrants throughout the water distribution system and letting them flow for several minutes. Before, during, and, for a short period of time after the hydrant flushing program, the company’s three water treatment plants will temporarily change the disinfectant used in the treatment process from chloramine to chlorine. These activities are essential maintenance activities that assist in providing excellent quality water to customers…. The amount of chlorine in the water will remain the same, but customers may notice a stronger taste or smell of chlorine in the water. This poses no health risk and the water remains safe to drink.”

Unicorns & Lollipops Ponies in the neighborhood
A
little bit of magic is making its way to Hamburg. Unicorns and Lollipops is a new pony ride destination set to debut in June. The forthcoming site, located at Sumrtym Farm on Combs Ferry Road, off Winchester Road, will offer pony rides, birthday parties, and more.
“It is really cool for young children to come to our countryside... and enjoy things like riding ponies, learning about riding ponies. It is the perfect, fun atmosphere. I wish I was six again!” —Councilmember Kathy Plomin Owner Summer Frost says, “This is going to be magical. That is exactly what I want those kids to have... magic.” The farm features a herd of ponies, along with a carriage house, a birthday party room, gift shop, and an area that is known as Bunnyland. Additional amenities include a mermaid cart, covered wagon, and vintage wagon. Unicorns & Lollipops has been three years in the making, and Councilmember Kathy Plomin has been aware of the project for about a year and a half, when she first came out to visit the site. Plomin explains, “It was kind of like...what else is out there?” in terms of kid-friendly activities in this area of her district. “I can’t think of a kids’ destination that is out in the 12th district,” she says. Although Raven Run and Kentucky Horse Park fall within her district, Plomin points out, “They’re not kid destinations” specifically.
8 hamburgjournal.com | May 2021
Plomin says that the farm can host a variety of group gatherings, from church and family gatherings, to young kids. While the Hamburg area’s history is literally built around horse farms, there are no pony farms open for kids to come and learn and play. “It is really cool for young children to come to our countryside, and to know that they can come out and enjoy things like riding ponies, learning about riding ponies. It is the perfect, fun atmosphere.” Plomin adds, “I wish I was six again.” Unicorns & Lollipops opens soon.

Horizon Adult Health provides much-needed quality health services to aging Kentuckians
M
ore than 700,000 Kentuckians face the daily stress of serving as caregivers for family members. Too often, they’ve had the limited choices of either placing that loved one in a nursing home — which is costly and often against the wishes of the patient — or trying to handle the needs of an elderly parent while maintaining a fulltime job and raising a family. That’s why Horizon Adult Health provides a range of care for aging Kentuckians and support for their families. It all began more than 20 years ago with adult day-care facilities. Horizon has now worked with more than 3,000 families — whether it’s providing care for senior loved ones at its adult day centers or in-home care throughout the state.
Adult day care Horizon Adult Health operates the largest adult day health-care company headquartered in Kentucky. It provides adult day health-care services to the frail and elderly, including door-to-door transportation, skilled nursing services, nutritious meals and recreation opportunities. These services provide respite for family caregivers, allowing them to continue working while they care for loved ones, and help aging adults stay in their home longer. Horizon’s newest facility recently opened in Lexington at 2433 Regency Road. This modern facility provides security, privacy, and comfort for aging loved ones. “Your loved one will be secure, healthy, and connected to the community, which is important for mental well-being,” President and CEO Kelly Upchurch said. “And it will bring peace of mind and relief to family caregivers. Our goal is to help ensure your loved one can stay safely at home as long as possible. These families aren’t a number. They’re our neighbors. We can help you achieve your loved one’s goal of staying out of the nursing home and being independent for as long as possible.”

FOOD FEATURE
Ramp it Up BY TOM YATES
R
amps are the fleeting darlings of the early spring farmers’ market. With a very short three to four week growing season, they’re usually the first thing to arrive at the market and the first to go. Blink and they’re gone. Members of the allium genus, ramps are also referred to as wild onions, wild leeks, or wild garlic. With feathery leafy tops and long purplish stems, they have a pronounced garlic aroma with a strong onion flavor, making them interchangeable with both garlic and onions in most recipes. If you run across ramps at the market, catch them while you can because they’re very versatile and utterly fabulous. Even with their beautiful leafy tops beckoning in the morning breeze, most of the people in line are buying eggs and bacon. I fill my bag with ramps. I toyed with the notion of tossing the ramps over burning coals to char before serving them on newspaper like Spanish colcotes (early spring green onions) with a ruddy Romesco sauce. I even thought of roasting them and twirling them into nests to cup gently poached eggs. In the end, I went with a very simple spring soup.
Chilled Ramp Soup with Blackened Sea Scallops. Ramps.
Typically, ramps — much like leeks — are a bear to clean. They’re usually covered in dirt and take time to prep. These were stored in buckets of water to keep them fresh, so they were practically preprepped and ready to go. I simply snipped the roots from the bulbs and gave them a quick rinse. After slicing the greens from the stems, I set them aside before roughly chopping the stems and bulbs. After heating a skillet over a medium high flame, I sauteed the ramp stems in a combination of olive oil and butter. When they started to caramelize, I deglazed the pan with white wine, let it reduce by half, and added two cups chicken stock. I brought the stock to a boil, reduced the heat, and added two peeled and chopped Elmwood Stock Farm new potatoes. While the potatoes simmered away in the ramp stock, I blanched the ramp greens along with a handful of fresh spinach (in heavily salted water) for exactly 45 seconds before plunging them into a salted ice-water bath. When the potatoes were tender, I scooped them into a blender along with the cooked ramps, stock, and drained greens. After adding 1/4 cup parmigiano reggiano cheese, a splash of fresh lemon juice, salt, and white pepper, I blitzed the soup into a verdant puree before sliding it into the refrigerator to chill.

Scallops.
To counter and play off of the delicate spring ramps. I slid a small cast iron skillet over a blazing hot flame. When it started to smoke, I added a whisper of oil to the pan, dredged the dried scallops in cajun seasonings, blackened them on each side for 90 seconds, scooped them out of the smoky mess, and set them aside. I ladled the chilled ramp soup into shallow bowls and nestled the blackened scallops into the center of each bowl before topping them with slivers of mango, red bell pepper, and shallots. After scattering Garey Farms micro mizzuna and arugula over the scallops, I finished with a few drops extra virgin olive oil. Simple. Bright. Light. Spring!
