MAKE-UP TRENDS by jessica hernandez and rosalaura mendez

CHEEKS The 80’s blush styles are coming back. Use pink to highlight your entire cheek. Try glowing pink and rosy blushes. Also, highlight skin to add extra glow. Silver highlighting or with different colors will also be a popular look.

LIPS EYES Think bright or pastel eye shadow colors, including teal, pink, purple, blue, yellow, and warm peach! You'll also find several different shades of green eye shadow variations: sea foam, emerald and forest green being the most popular. Smokey eye with smudged eyeliner is the way to go. You can use a combination of black and grey or black and brown. Apply on your lower lash line for some extra smokiness. Natural eyebrows are back. Finally save on your eyebrow-waxing bill! Grow them out. The bigger, the better! Some people have already been bleaching or shaving their eyebrows to create new looks with different colors drawn on top.

6

Go ombrĂŠ to get the two-toned effect by using a light and a dark tone and blending them together. You can blend the darker color on the corners of your lips. Or simply layer two different colors for a brand new color! Gothic lips will also be popular ranging from plum to black colors, usually done for a nighttime look. Make sure you look for a shade that complements your hair and eye color. If dark colors just will not work for you go with the bright pink or pastel colors. Classic red is also a great choice! Lipgloss will also be back in style. Many of the cosmetic companies have recently come up with less sticky formulas. Lipgloss will be much more enjoyable in 2017!

CONTOURING Contouring will work miracles and make your face look like an Instagram filter. Using a cream kit makes it easier to blend out the color evenly to achieve the perfect contoured face.

Our goal is to create a smokey eye with red lips. Believe it or not there are several types of red lipsticks. You can use a red lipstick with pink tones and a blue base. Blue-based red lipsticks are a favorite because they make your teeth look even whiter! The best way to pick a dark or red lipstick for your skin tone is to find out what undertones you have in your skin first. Since the model has green eyes she looks great with any neutral eye shadow. She could apply brown, grey and white shades. Apply your neutral eyeshadow to your lids and under your lash line. On the creases, apply a darker brown shade outwards. Don’t be afraid if the color comes out too dark. You can always blend the edges. Underneath your brow put a lighter sheer color that will create additional brightness. To complete this look on your eyes put a brown black liner on your upper lash lines. Then apply your favorite lashes or mascara. 7

Most women visit nail salons to get their gel manicures or to relax on a spa chair. Tricia shows up at Wynn Nail Spa to work on a video shoot with two other brand ambassadors. "This is the third straight day of work for me," she beams.

"And the best part is that I get to model AND be myself." Born in Staten Island, Tricia grew up along the

Jersey Shore. She always had an edgy side with her tattoos and piercings, but her affable personality made her very approachable which led to some modeling gigs. After graduating high school, she attended the Paul Mitchell cosmetology school to become a hair color specialist. Her services were in demand, and her client base grew rapidly, but she had always wanted to pursue her dream of doing high fashion modeling. Drawn to LA for its beautiful weather, its variety of vegan food, and cannabis-friendly lifestyle, she finally made the 3000-mile move to Hollywood!

FITNARTISTIC

What is it about the L.A. scene that inspires you? There is always something going on. Every night is a Friday night in L.A. It’s a constant summer party. There are always networking events and you never know who you can meet on a normal “boring” night out!

Do you do your own hair? No, for years I was doing it myself going through every color of the rainbow, but recently I have been keeping the same color. So I’ve been having a friend and fellow hair stylist do it!

Who is your role model? My mother is my role model even though she has been gone for almost 10 years. She was a beautiful person and always stood up for what she believed in. She never sugarcoated anything. She always encouraged me to be myself!

What is your fitness routine? I enjoy hiking Runyon Canyon and walking around Hollywood. Everything that I need is within walking distance. I go to a lot of EDM shows and raves which is quite the workout. I also play with a light show device called Photo Credit: Simon V Green an Orbit which involves a lot of arm work.

How do you keep busy when you’re not modeling or orbiting? I’ve been brand ambassadors for Mary Jane Juice and Bad Wizard Concentrates. I’m a big advocate for cannabis. I’m also a brand ambassador for Wynn Nail Spa. As you can tell from my Instagram account, I love nails.

Are there other brands that you would like to promote? I would love to be more involved with high fashion designers. I really do think there is a market for my look in the high fashion world, and I just need to prove it! There are so many amazing products and services out there, but I’m especially fond of vegan products. I love the fact that there’s such a supportive vegan community here in L.A. Veggie Grill on Sunset is one of my favorite local spots!

What exactly is an Orbit? It’s a personal light show where I’m spinning a disc of LED lights around my body. Orbiting has been around for years, but it’s recently turned into an art form. It’s easy to learn, but difficult to master.

Drink Your Years Away 4 ANTI-AGING INGREDIENTS FOR YOUR SMOOTHIE by Geny Katherine Rey

1. Maca Maca has extraordinary rejuvenating powers. It’s said to boost energy and

libido and also balance hormones. The major source of aging is a declining hormonal system. Maca is an adaptogen - a plant substance that can balance and normalize many of the body’s systems. It keeps the endocrine system young and healthy by enhancing hormone function and supporting ideal levels of estrogen, progesterone, testosterone, DHEA, and human growth hormone. This super-food provides high levels of amino acids, calcium, magnesium, iron, phosphorus, and fatty acids. Maca is also known to boost collagen production and protect skin from extreme weather conditions. You can buy maca in both pill and gelatinized powder forms. The powder tastes delicious in a peanut butter and banana smoothie!

2. Camu This tropical berry contains more vitamin C than any

other food. Vitamin C is essential for collagen production and gives your skin a brightening boost. If you want that all-day glow, add this powder to your smoothie recipe.

3. Moringa Moringa contains 17 times more calcium than milk and 25 times more iron than spinach. It helps to balance cholesterol and blood sugar levels in the body. Moringa fights the effects of free radicals that age the skin and make it less resistant to lines. Its excellent cleansing properties help to clear the skin of free radicals and restore the vitality of your skin for a youthful complexion.

4. Goji Berries Minerals! Goji berries contain

eleven of the 22 essential dietary trace minerals, including calcium, potassium, zinc, iron and selenium. Although each has a different action, they all help firm, tighten and plump the appearance of your skin. These berries are also loaded with antioxidants - more than blueberries! That means they’ll help reduce inflammation and sun damage that eventually cause wrinkles, age spots, and sagging. 10

Big pharmaceuticals dominate the airwaves with television ads offering nice-sounding cures for all kinds of ailments. Although the compounds are FDA-approved, they often come with a litany of side effects — reciting them quickly doesn’t make them less serious. Perhaps, it’s time to look beyond the medicine cabinet. Here are three natural food products that deserve your attention.

Avocado oil is a healthy food item that is also

14

highly beneficial for skin. Its soothing, moisturizing benefits complement the oils of human skin due to the many nourishing and healing nutrients that it contains. They include vitamins A, D and E, as well as omega-9 (monounsaturated) fats and a small amount of omega-3 fatty acids. Avocado oil is also high in sterolin, shown in studies to facilitate the softening of the skin and reduce the incidence of age spots. Antioxidants in the oil make it useful for repairing sundamaged skin – one reason avocado oil is said to have regenerative properties.

The coconut is not a true nut, but a fleshy fruit around a shell. It is a nutritious source of “meat”, juice, milk, and oil that has fed and nourished populations around the world for generations. On many islands, coconut is a staple in the diet and provides the majority of the food eaten. In a 100 gram serving, coconut milk provides 230 calories and is 68% water, 24% total fat, 6% carbohydrates and 2% protein. It is rich in manganese, phosphorus, iron and magnesium.

WELLNESS Why do so many people in Japan live to 100 years of age? Some nutritionists attribute this phenomenon to a diet with an abundance of brown seaweed. This food item contains an active ingredient called fucoidan, a sulfated polysaccharide. This class of sulfated, fucose-rich polymers is an “energized sugar that boosts the immune system through the process of phagocytosis where white blood cells attack and destroy pathogens, such as bacteria and viruses. More mature white blood cells circulating in the body means tougher defense against diseases and infections.

FITNHEALTHY Because fucoidan breaks down proteins and acts as an anti-inflammatory, it helps with pain relief, blood thinning for improved circulation and accelerated wound healing. It can also provide allergy relief and promote smoother skin and healthy blood cholesterol. While edible seaweed can be readily found in Asian cuisines, it is more commonly found in the West as a dietary supplement. Dr. Chris Colgin recommends Limu seaweed extract beverages as a source of fucoidan.

Boost Your Health with

PIGMENTS & ANTIOXIDANTS By Joan Kent, PhD

What Do Pigments Do? Colorful pigments in foods indicate the presence of phytonutrients that can fight cancer, heart disease, and other diseases associated with oxidative damage. Oxidative damage is caused by free radicals, molecules that have lost an electron. Free radicals scavenge electrons from healthy molecules, leading to various diseases, including cancer. Free radicals occur during normal metabolic functions but can also be created by toxins, processed foods, or pollution. Potential sources of free radical production are everywhere. Antioxidants in foods help guard us against the damage they cause. 19

RED/BLUE FOODS

Cherries, blueberries, plums and strawberries – contain anthocyanins. Red/blue foods are anti-inflammatory and protect against memory loss and declining motor skills.

YELLOW ORANGE FOODS

Yellow/orange foods contain carotenoids, which may fight lung cancer. Examples are sweet potatoes, pumpkin, carrots, winter squash, cantaloupe, and broccoli. The chlorophyll in broccoli masks the yellow/orange pigment.

ORANGE FOODS

Orange foods – mangoes, oranges and papayas – contain cryptoxanthin, said to reduce cervical cancer risk.

RED FOODS

Lycopene in red foods is known for its ability to fight prostate cancer and heart disease. Because cooked tomatoes contain lycopene, they sparked, as you may recall, an odd controversy on whether or not pizza is a health food. No comment needed.

EYE-CATCHING YELLOW

Yellow pigments – lutein and xeaxanthin – can protect the eye from bluespectrum light and macular degeneration. Corn and spinach contain them. The chlorophyll in spinach masks the yellow pigment.

PRETTY IN PINK

Astaxanthin is an important antioxidant found in pink foods – wild salmon, shrimp, lobster and crab.

DON’T FORGET WHITE

Often overlooked, white produce can protect against stroke. Examples include cauliflower, parsnips, Daikon radish, cucumbers, bananas, apples, and pears. Apples and pears are also antiinflammatory and may help reduce blood pressure. 20

WELLNESS

FITNHEALTHY

Dr. Joan’s RECOMMENDATIONS

Eat 2-3 servings of vegetables per day and 1-2 servings of fruit. A serving is ½ cup or 1 medium-size fruit. Choose your produce from the lists above.

Stay Away From “5-a-Day.” It too easily turns into 5 fruits with no vegetables!

Be sure to include some nuts and beans.

Avoid junky, processed foods – like sugar or white flour – to limit free radical formation in the first place.

BEYOND THE RAINBOW Looking beyond colors, high-antioxidant foods include beans, blueberries, cranberries (not dried – they’re sweetened!), berries, artichokes, prunes, apples, pecans, cherries, black plums, and Russet potatoes. Cancer-fighting foods include bitter almonds (10 per day), apples (with seeds), apricot seeds/kernels, blueberries, cherries, Brazil nuts, chickpeas, lentils, red beans, oranges, green leafy vegetables, dark green vegetables, tomatoes, wheat grass juice, ginger, and cruciferous vegetables. Those much-touted cruciferous vegetables are broccoli, cauliflower, Brussels sprouts, cabbage, spinach, arugula, bok choy, collards, Daikon radish and other varieties, horseradish, kale, kohlrabi, mustard greens, rutabaga, turnips, and watercress. As you see, several foods appear on more than one list. They’re nutrition powerhouses. 21

FITNESS

RECOVER FROM WORKOUTS Do your legs ever feel not recovered enough for the day’s training? Have you tried ice, massage, cross-training, stretching, acupressure, acupuncture – just so you can work out hard again?

By Joan Kent, PhD For optimal health and optimal recovery, glutamine needs to be replaced after workouts.

What’s the Best Way To Get Some?

Glutamine is an amino acid. In 7th grade biology, we learned that amino acids are “the building blocks of protein. ” They’re what proteins are made The easiest way to replace glutamine is to eat the of, and glutamine is one of the most abundant right foods. aminos in the body.

Glutamine

Glutamine is released when muscles contract. A long, hard workout can deplete glutamine by 25-30 percent.

Why Should You Care About That?

Some vegetables contain glutamine: Brussels sprouts, carrots, celery, kale, parsley, spinach, cabbage, and others. Raw vegetables replace glutamine better than cooked vegetables.

Glutamine fuels the cells that line the gastrointestinal tract. Those cells protect us from microorganisms that cause disease.

Glutamine can also be found in fruits: apples, apricots, avocado, bananas, cantaloupe, dates, figs, grapefruit, oranges, papaya, peaches, pears, persimmon, pineapple, and strawberries. This long fruit list doesn’t contradict my previous recommendation to limit fruit to one or two servings per day. To help you replace glutamine, choose your fruits from the above list.

Glutamine also promotes the creation of glycogen. That’s extremely important after a workout, so you can train well the next day.

Other foods with glutamine are: beans, soy, peanuts and other legumes, wheat, barley, beets, corn, and nuts in small amount.

Glutamine is a fuel. Muscles and immune cells use it. The immune system “oversees” recovery of all types: illness, injury, surgery, and exercise.

22

Because glutamine is an amino acid, many protein foods contain it: beef, fish, chicken, shrimp, pork, eggs, egg whites, yogurt (with 18-20g of protein per serving), ricotta cheese, and cottage cheese.

FITNSTRONG

What If Foods Aren’t Helping? Maybe you’ve been working out hard enough to feel that you’re not fully recovered – even with the above foods in your training diet. In that case, you might want to try a glutamine supplement. I’m most familiar with glutamine powder, but it’s also sold in tablets. If you try it, take one heaping teaspoon — 5 grams, the usual dosage — after your workout, and maybe again before bed. Mix the powder into about an ounce of water, drink it, and drink a full glass of fresh water. Glutamine powder has worked well for me. (Always check with your doctor to be sure that this, or any supplement, is okay for you to use.) One of the benefits of taking glutamine before bed is that it can trigger a release of human growth hormone. HGH is a complex topic, but it has been shown to have immune benefits and to aid in cell and muscle recovery. 23

PEOPLE

FITNINSPIRING

Five people were interviewing for the position at a content marketing company. Instead of focusing on herself, Rosalidia Dubon explained to her prospective employer, “I’ve always been interested in people and their stories, their passions, their challenges and their triumphs.” She was hired on the spot. Within a year, she was put in charge of the division that syndicated press releases to online media outlets. The world’s largest wire services – BusinessWire, PRNewswire and Globe Newswire – were her clients. Rosalidia enthusiastically embraced her job dedicating countless hours to her customer’s needs. It was little wonder that her career was advancing so quickly. However, life itself wasn’t always smooth sailing for Rosalidia.

As a student at San Jose State University, she joined a gym and reached her goal of losing 45 pounds. It was then when she realized the importance of maintaining a healthy body, mind, and spirit. Making the decision to lose weight was a challenging one for Rosalidia. Her ability to STAY in shape was even more difficult. It was this honest revelation about her struggle that has inspired many of her followers on social media. “I started FitNFabs in order to empower women to be the best that they can be by helping them find their inner goddess,” shares Rosalidia.

Born in San Jose, California and raised in Honduras by a loving grandmother, Rosalidia inherited abuela’s instinctively nurturing traits, but she did not have anyone to guide her through her darkest hours. Her weight became an issue as a teenager. It was a neverending struggle until the age of twenty when she finally made the decision to take control of her life. “I had to find inner strength and forge ahead on my own,” shares Rosalidia.

Then Make It Happen 25

PEOPLE In fact, FitNFabs piqued the interest of many writers, influencers, and professionals who had stories, ideas and advice to share. They began to submit stories about other inspirational people, stories about products that improve quality of life, and stories about businesses that make a difference in our everyday lives. Recognizing the opportunity in front of her, she reached out to her network of angel investors and pitched the idea of a platform for all of these voices. This magazine is a living embodiment of this community of storytellers and a fulfillment of Rosalidia’s mission to empower women worldwide. “The online and print platforms will seek out stories that stimulate the readers – whether through inspiration, intellect or intuition,” explains Rosalidia. “Does the story motivate the reader to take the next step? Does the story mobilize the community to take the next step? If it does, then that story should be shared with everyone here.” One of the key objectives of FitNFabs is to connect professionals who have the training and experience to show women how to improve their lives and embrace their uniqueness. Rosalidia believes that every woman should have someone to help them with their struggles. She knows firsthand the frustrations of not having a mentor or a confidant. Through FitNFabs, she has been able to provide that level of support to her community.

Q&A with Rosalidia Q: As a content marketing specialist and publisher, what do you like to read? After working on content all day, I enjoy reading marketing and self-improvement books and articles. Q: What are your favorite fitness activities? Core exercises and yoga. I also like dancing to Zumba for an amazing workout. Dancing frees my inner child. Q: What do you do to relax? I have found that guided meditations have been effective for me. I try to do at least 15 minutes a day, usually in the evening since my schedule is so busy during the day. Q: If you had a month for a getaway trip, where would you go? If I had the chance, I would love to go on a spiritual journey and visit temples in Nepal, India, Japan, Thailand and Indonesia. Q: What is your favorite dish? My favorite dish is Indian curry made with paneer cheese and peas. I’ve always been fond of cheeses, but whether natural or processed, cheeses have a significant amount of saturated fats. Certain cheeses also have added salt and additives to extend shelf life. On the other hand, you can use natural ingredients to make curry paneer which is also a favorite with vegetarians. It’s low in fat and loaded with calcium and protein. Q: Who do you turn to for inspiration? Oprah inspires me to reach higher. Everyone knows about her business and media successes. But what impresses me the most is the fact that she has overcome obstacles in her personal life, including an abusive childhood and her struggle with weight. I also admire Dr. Oz as a great communicator. He connects with his audience by making medical issues easy to understand. Then he motivates people to make real lifestyle changes. Q: If you could be any character in any movie, who would it be? I love the main character of Lucy, a role played by Scarlett Johansson where she is capable of accessing a high percentage of her brain which allows her to enter into a state of telepathy and telekinesis.

FITNINSPIRING These are my favorite slimming foods and their benefits.

Celery is full of antioxidants and Vit K. It’s an antiinflammatory and it helps with digestion. It aids with weight loss and keeps your skin with a wonderful glow. I use 2 stalks in my green juice together with one green apple, 1⁄4 of a pineapple and 12 oz of water. You can customize the amount of ingredients to your taste. I drink this throughout the day. Artichoke is

rich in fiber, potassium and vitamin C. It detoxifies the liver, helps controls diabetes and it works as a charm for muscle recovery after workouts. I use an artichoke powder which I mix into my post workout protein shake.

Canadian Flaxseed blend with pineapple and Lucuma.Lucuma is know as the “Gold of Incas”. It's rich in antioxidants, B vitamins and fiber. It helps stabilize sugar and controls cravings. I make this as one of my mid morning snack by mixing it with a coconut and almond drink.

Cactus aids with

digestions. It has anti inflammatory properties, promotes healthy bones and improves sleeps. I have this for breakfast as part of my omelet or I blend it in my green juice with cucumber, spinach and orange juice. If you have any thoughts or questions on these or if you need to know where to purchase, I can track a few links for you and send them your way. Just email me at rosalidia@fitnfabs.com 27

EXERCISE Can Help You Boost Your Energy When you are running low on energy, exercise will be the last thing you will feel like doing. But that’s actually when you need the exercise most. Fortunately, to reap all the energy boosting rewards of exercise, you don’t have to turn to a difficult sweat session. Studies have found that just 10 to 20 minutes of low intensity exercise is enough to reduce fatigue. This means something as simple as going on a walk, stretching or cycling can totally transform your mood and productivity. In the long run, a regular workout regimen can lead to better quality muscles tissue, better blood circulation, higher cardio fitness and improved mindset. Exercise will also help you sleep better.

NUTRITION also plays an important role in boosting your energy levels as workout. Just as sedentary lifestyle can drain you of your energy, bad food choices can destroy your energy levels. Make sure you are getting your daily dose of fresh fruits, vegetables, complex carbohydrates, proteins and healthy fat.

Here are few points that you can follow to boost energy through exercise: 1. As a rule of thumb, plan for at least three-20-minute cardio workout per week. 2. Go on a 10-minute walk at lunch time. You will experience more productivity for the rest of the afternoon. 3. Spend a little time in the morning for bending and stretching. You can touch your toes, stand tall and rotate your spine a little. Reach up overhead, open up your chest and perform few side bends. 4. When in gym, don’t just stick to exercises that move up and down, such as running and squats. Include in your routine movements that engage your body in multiple directions. 5. Skipping rope is a great way to boosts your energy. Bouncing motions are one of the best ways to hydrate your connective tissue, boost circulation and warm up your muscles. Skipping rope is one of those exercises that you can easily perform anywhere, even while you are travelling. 6. Put on your headphone and tune in to your favorite sound track while you perform your workout. This will always work to skyrocket your motivation no matter what time of the day you perform your workout. 7. Spend some time exercising your mind instead of your body. Five minutes of meditation and 20 minutes of power nap can go a long way in increasing your productivity and boosting your energy. 8. Perform a downward dog if that suits you. It will increase blood flow to the brain and boost your energy instantly.

ANCA GOUSSEN

Anca is a competitive bodybuilder and entrepreneur who graduated with honors from the Academy of Fine Arts in Bucharest, Romania. She moved to California in 2004 to do sales and marketing in retail and wholesale sales until 2009 when she started her own real estate company. She has partnered with her husband, Oscar, to launch Goussen Organics which specializes in importing organic foods from Nicaragua.

What inspired you to begin this health journey? My journey started about three years ago, when I was getting convinced by friends to do a fitness competition. It was then that I started researching what a competition diet looks like and I found what is usually always readily available on the internet which is the typical low carb and low fat diet that is high in protein. About three months into it I was feeling weak and dizzy all the time, and I had nausea all the time. Worst of all, I could no longer do my double training days, which is when I would exercise twice a day. Everyone would tell me it was a normal symptom of my training and diet, but I didn’t think that’s how a healthy person should feel. That’s when I learned about the ketogenic diet.

How did you find the ketogenic diet? After feeling completely depleted on my previous diet, I got a call from a friend who began telling me to try this diet that is based on high protein and high fat. At first I was totally skeptical, because my whole life I thought fat is what I had to avoid. I thought to myself, how am I going to eat fat and lose weight? After doing my research, especially since at the time I was getting my certificate as a trainer and nutritionist, I realized that we are getting our energy from two sources, protein and fat. This is all going to your muscles. It was then that I went on full prep with the diet.

PEOPLE What changes did you notice while on this diet? My body loved it! It took about two weeks and I revived. My strength was going up, I could sleep better at night, my acne was going away, and best of all I felt amazing. At this point I didn’t care so much about being show ready as I did about feeling healthy. A couple months later I must say the results were magical, I kept losing pound after pound and I was looking toned. I was definitely show ready.

ANCA’S RECIPES

Coconut Cacao Bomb 2 tsp coconut oil, melted 2 tsp salted butter, melted 2 tsp almond butter 1/4 tsp unsweetened cacao powder 5 drops hazelnut liquid stevia How to: Mix all ingredients. Pour into cupcake paper and freeze for 15-20 min. Serve cold.

Can you give us an example of the foods that we can eat while on this diet?

I try to maintain my carbohydrates to a minimum and that means including vegetables, some fruit, nut butters, to about 20-30 grams a day. Most of my carbs come from seeds and nuts, because they are a great source of fiber as well. Everything else comes from fat sources and I try to stay as true as possible to the fat sources. That means eliminating all processed oils. Instead I cook with butter and bacon fat, cold. I like cold pressed coconut oil, and if I am really craving milk, I drink it raw. I love avocados, eggs with the yolks, and bacon.

Chocolate Cheese Mousse 1/4 cup sour cream 1/3 cup whipped cream cheese 15 drops liquid stevia chocolate flavor 5 drops liquid stevia vanilla flavor 1/2 oz cacao butter How to: Melt cacao butter in microwave. Add remaining ingredients and blend well. Serve!

FITNSTRONG Curried Pecans 4 oz pecans 1/2 Tbs coconut cooking oil 1/2 Tbs salted butter 1 tsp curry powder 1/2 tsp garlic powder 1/2 tsp onion powder 1/4 tsp hot paprika (optional) Salt and pepper to taste How to: In a saucepan, blend coconut oil and butter. Add curry powder, garlic powder, onion powder and paprika, if desired. Mix well. Add pecans and mix until fully blended. Cover and cook for 1-2 min. Add salt and pepper to taste. Serve warm or cooled. (I really dig them still semi-hot!)

Creamed Spinach 3 handfuls fresh spinach or 1 cup frozen spinach 1 Tbs butter 2 Tbs cream cheese 1 Tbs heavy cream Salt and pepper to taste How to: Melt butter in skillet and add spinach. SautĂŠ until softened. Remove from heat and add remaining ingredients. Stir until well blended and serve.

FABNFLAVORFUL

A FOODIE'S TOUR OF HOLLYWOOD BY DEVIN STRECKER Hollywood continues its transformation into a foodie heaven. With more than $4.8 billion in investment announced since 2000, more retail, commercial, residential and hospitality projects have brought lots of new life – and new flavors – into Hollywood! To spread awareness of some of the newer eateries in the district, the Hollywood Business Improvement District worked with its PR team at Haines & Co. to invite a group of freelance journalists and food bloggers to experience a walking tour featuring six locations. First up, we visited the newly opened Demitasse Roastery and Kitchen (1542 N. Cahuenga Blvd.). While many were familiar with Demitasse and their home- brewed coffee, they were delighted to discover the full food menu available at this location. Since Demitasse is big on seasonal ingredients, the group was first treated to beverages including a Strawberry Ginger Latte, the boozy Strawberry Fresa, and a delicious Strawberry Gazpacho which included jamon serrano, quail eggs and croutons. A medley plate including Crudo, Hangar Steak and Vegetarian Lumpia was served to provide a better idea of the menu offerings. 33

DINING The next stop on the tour, Mama Shelter (6500 Selma Ave.), gave the group a bird’s eye view of Hollywood. From the rooftop restaurant and bar, the writers were treated to a selection of Mama’s craft cocktails. Staff reminded the group that while many people have raved about Mama’s food and drinks, it is also a hotel featuring over 70 guest rooms and suites. From there, the group stopped by the brand new Cre8 Crepes (6654 Hollywood Blvd.), where everyone received their own custom- made crepe. The crepes are designed to be hand-held so they can be eaten while on the move! Fresh ingredients and quality toppings combine for a memorable indulgence.

Cre8 Crepes

Jinya Ramen Express 34

Mama Shelter Two newcomers to the Hollywood & Highland complex (6801 Hollywood Blvd.) were visited next, both on the third floor dining deck overlooking Hollywood Boulevard. Jinya Ramen Express is “where the relationship between broth and noodles is serious but delicious business.” Here, you can create your own ramen bowl with handmade noodles and a wide array of authentic toppings. “I was most impressed, however with the perfectly cooked ramen egg!” Kristi Hang, one of the food writers on the tour, said. “It’s really hard to get a soft boiled marinated egg just right.”

Next door, PokiNometry specializes in Poki bowls, a dish originating in Hawaii. At PokiNometry, you can customize your bowl with eight types of fish including different types of tuna, salmon, shrimp, octopus, and more. Over fifteen toppings are available to get just the flavor you’re craving!

PokiNometry

Sushi of Gari

The last stop on the tour was east coast transplant Sushi of Gari (6201 Hollywood Blvd.), now open at Eastown. The high-end restaurant was founded by Chef Masatoshi “Gari” Sugio in New York City. One of the writers on our tour, Chef Jay Terauchi, had previously experienced Sushi of Gari in New York and was glad to have a closer location. “Gari san takes pride in creating original sauces and topping to enhance the individual fish served to his customers,” Terauchi, said. “But, it doesn’t overpower the flavor of the fish.”

DID YOU KNOW? There are more than 8,500 restaurants in Los Angeles. Cole's Pacific Electric Buffet and Philippe's were both founded in 1908. They both claim to be the first to serve French dip sandwich. The Cobb Salad was invented at the old Brown Derby in Hollywood. The Oyster Cocktail was concocted by Al Levy out of his push cart in downtown LA. Clarence Clifton Brown created the world's first hot fudge sundae in downtown LA. 35

31st Union has been open in San Mateo for four years. They prepare small plate seasonal comfort food with a price point of approximately $14-$20 per dish. Each dish includes seasonal, fresh, all organic ingredients with just about all of the foods and beverages coming from California farms. Innovation is second only to customer service at 31st Union. They will be opening for Brunch starting in February of 2017, as well as creating prepped meals to go. These meals can be selected on their website, www.31stunion.com, and will include vegetarian items with the convenience of keeping a credit card on file for future purchases. Tradition, however, is just as important, and 31st Union holds their own annual feasts. Each August, the restaurant chooses one farm from Pescadero or Half Moon Bay, and creates a “farm dinner with a menu prepared exclusively from that individual farm.

“My cooks are artists, and I encourage an environment of creativity in my kitchen.”

David hunsaker was born and raised in Orange County, and is the father to 3 children. His wife and business partner focuses on marketing and social media, as well as day to day business decisions.

“There are multiple fires in a restaurant every day, Don’t let one of those fires ruin your day.” “You really have to have a passion for your restaurant in order to be successful. I keep each day pretty routine. I make sure the menu is ready in accordance to what’s in season, I talk to the kitchen staff to make sure they have what they need, and brief the front of the house to let them know what traffic to expect. Basically I set the table, but everyone else does their job and it becomes a sort of controlled chaos. At the end of the day, I love it when I walk out to talk to my patrons and I don’t know anyone, because that means word of mouth is working”.
