With his budding stardom on the field for the Minnesota Vikings, Adam Thielen and his wife Caitlin are embarking on a big venture off the field. The Thielen Foundation focuses on youth development and creates programs for kids by equipping and empowering them to reach their full potential in life. We sat down with the All-Pro wide receiver to discuss his foundation and how it impacts FargoMoorhead.

5 New Foods To Try This Month
NEW KID IN TOWN
This August will mark seven years I have lived in the Fargo-Moorhead area. That is kind of surreal to say. It seems like only yesterday I was an unbearded, wide-eyed college freshman moving into his dorm, scrounging up money to have someone buy me Admiral Nelson (no fake). It all seems so close, yet so far away from my memory bank. In this seven-year span, my tastes have changed. I went from Admiral Nelson to craft beer, to the point that I will never drink anything domestic again (Grain Belt being the only exception). I went from endlessly eating sugar cereals to evolving my palate to a diverse array of foods from all over the globe. I can tell you with confidence that when I was 18, I never thought I would one day eat tikka masala or even a Beyond Burger regularly. Much of my evolution (in several areas) is thanks to Fargo and its constant growth. We did not have the abundance of food and drink offerings in 2012 that we do now. Nor did we have the retail and business sector that currently exists (the recent burst in development Downtown was still kind of a pipe dream then). To give you an example, Junkyard Brewing was just getting started when I was a freshman in college (Drekker

Brewing wasn't even open yet) and look at those two now. That growth is only one part of that story. New businesses, restaurants, breweries, etc. are sprouting up all the time. How many cities of Fargo's size have as diverse and fluid economic and social climate as ours? We are privileged as citizens of this city. This month, we picked a few new businesses in our community that best showcase that fluidity and it was a blast seeing what these places bring to Fargo. In describing a trip to Paris in her song "California", Joni Mitchell said, "But I wouldn't stay here / It's too old and cold and settled in its ways here."
I take pride in the fact that I will try anything once (well, not ANYTHING, but you know what I mean). This is especially true with food. We as Fargoans should feel privileged to have such a diverse array of flavors from every corner of the globe. I don't think we truly understand how rare that is in our region. Try something new this month and you can start with these five dishes.
1 Vegetarian Sandwich - Ishtar Mediterranean Cuisine I love Ishtar. Their vegetarian sandwich offers sautéed zucchini, eggplant, potatoes and cauliflower as well as lettuce and tomato. It’s topped with your choice of their homemade tahini or tzatziki sauce. I can never recommend Ishar enough to people who have never had Mediterranean food. Also, Ameen, the owner, might just be one of the nicest guys in our community. 68 Broadway North
2 Lamb Curry - India Palace A staple in Indian food, curry combines ginger, onion, turmeric, cumin, garlic and other herbs and spices to create a flavor explosion. Many people in our area have never eaten lamb, so step outside the box and have that as your protein with this delectable Indian delicacy. 5050 13th Avenue South #3
3 Phở Tái Bò Viên - Pho D’licious As the name indicated, Pho’Dlicious’ staple is pho and this particular dish includes lean beef and beef meatballs. The meatballs (when stewing in the pho’s broth) have an incredible flavor. The noodles and broth are both incredibly light too. The owner, Henry, is a real Fargo gem and will make sure you eat good and are treated well.
While it might be cold on occasion, Fargo is never settled in its ways. It will always look to stand out and be a trailblazer in our region. In my seven years here, it's always stood out and I expect it to for the next seven years and beyond. That is why people stay here, Fargo is our version of "California".

4 Steak Molcajete - Mango’s Mexican And American Grill There is nothing like eating a blend of steak, veggies and cheese out of a mortar. It just hits different. NFL superstar and Detroit Lakes native Adam Thielen discusses his foundation and Fargo’s role in its growth.
G
reatness is defined through a multitude of different criteria. For the casual spectator and sports fan, Adam Thielen’s greatness stems from his play on the gridiron on Sundays.
It comes from his humble beginnings in Detroit Lakes, Minnesota, where he was a standout for the Lakers. He transitioned that into a stellar career at Minnesota State University Mankato where he is tied for first in school history in total receptions. From there, he went undrafted, eventually being signed by his hometown team, the Minnesota Vikings. Since, he has been a two-time Pro Bowler, having the ninth most receiving yards in the NFL in 2018. That is the story you and many others know. Adam Thielen’s rise to the NFL has been told several different times and in distinct forms. The perseverance and hard work Thielen has exhibited and continues to exhibit perfectly defines our region. Hence, why many consider Thielen to be their favorite player. Yet, there is a layer to Adam Thielen you may not be aware of. It is a layer that may prove more fruitful than anything he does on the football field. For however likable and personable you feel Thielen is now, this layer multiplies that by ten. The Thielen Foundation, created by Adam and his wife Caitlin, strives to help serve, educate and inspire youth in need. However, the Thielen family and their foundation may not exist had it not been for Adam’s upbringing in Detroit Lakes, Minnesota. He recalls learning one common value that he believes brought
him to where he is today. It is one that rings true for many in our area. “The first thing would be hard work. I think it’s blue-collar and you work for what you get in Detroit Lakes and I think there is that mentality. It was the mentality of our coaches. As high school football players, you can’t just run around and catch footballs,” Thielen said. “You have to get out there and do the dirty work and you got to block, you got to do whatever it takes to help the team win. I think it’s those things that the community kind of carries, you just bust your tail and let everything else fall into place.” Doing that dirty work on the field brought Thielen to Minnesota State University Mankato. While he was a standout wide receiver for the Mavericks, he found something much more valuable in Mankato. Thielen met his future wife Caitlin while attending school there. The Minnesota Vikings signed Thielen as an undrafted free agent in 2013 and the couple now have two young boys, Hudson and Asher. The Thielen family has always had a passion for youth, even before they had children of their own. It was this passion and growing fervor for helping others that the base of The Thielen Foundation began to take shape. With Adam becoming one of the NFL’s top receivers, the Thielen family felt they could use their platform to help youth in need. “Both my wife and I have a passion for youth. Trying to help them maybe not make the same mistakes we made or try to help them by telling our younger selves 21
what we know now,” said Thielen on their goal in creating The Thielen Foundation. “We have a passion for it, we have a heart for it and I think the more we’ve worked with some of these kids and programs, it just makes us more passionate about it and more excited to dig deeper and impact as many kids as we can.” Giving Back With that in mind, the Thielen family began to put their plan for a foundation into action. One of their core goals was to help youth reach their full potential in life. Whether that be in sports, academics or otherwise, Thielen knew it came down to providing kids resources to reach their full potential. “The biggest thing is helping to provide them with resources and opportunities. So much of it is that they don’t have those resources or those opportunities that
might help them in the future. Sports have done so much for my wife and I that we want to make sure that if a kid wants to play a sport they have the resources or the ability to do that,” he said. “They can go and they can pay to join or they can buy the equipment necessary to play. That’s kind of the basis and the backbone behind it.” Another facet of The Thielen Foundation’s work is with the University of Minnesota Masonic Children’s Hospital in the Twin Cities. Both Adam and Caitlin frequently visit the Pediatric Behavioral Health unit in the hospital to meet and encourage patients. The Thielen family found that behavioral and mental health was an under-appreciated portion of pediatric medicine. What has ensued with these visits are life-changing conversations for both the patients and Adam and Caitlin. “It just came down to it being the biggest
need. We had met with the hospital and they said that nobody had really gone there or nobody has really helped out with that area. That was kind of our sign from God pretty much, saying that this was a great path for us. The more that we’ve worked with them and gone to these visits, we understand why He led us that way,” Thielen said of working with the Masonic Children’s Hospital. “I feel like it has made an impact on the kids, but for us it’s put a different perspective on life. Seeing what some of these kids go through and the challenges they face at a young age that was out of their control, so it’s been really cool and there have been some great stories we’ve had and things we can look back on today that show how they just want someone to come. They want someone to talk to them, we just sit in a circle and talk for an hour, so it’s really cool.” Adam and Caitlin are now branching out The Thielen Foundation. They recognize the communities in our area that provided them opportunities to be great. So, they feel it necessary to give back to these communities with their foundation. Fargo is just one of many communities in North Dakota and Minnesota that have impacted the Thielen family. Hence, Adam and 23
Caitlin took to the stage at One Million Cups on June 19 to showcase their thanks for Fargo. The foundation also hosted a fundraiser and put on a football camp. “It really is just giving back to the communities that have done so much for us. This community is close to home, we feel like it has done a lot for us and we feel the support from this area,” said Thielen of Fargo and his visit to it. “So we want to give back to those areas that we feel supported, we feel people care. It just fits with our mentality and our mission statement and how we grew up and things like that.” How Fargo Can Help One thing Thielen wants to do with his foundation is spread it across the Midwest. This cannot be done without the support of local businesses in communities across the region. Fargo is no different in that respect. While Thielen wants Fargo businesses to come alongside the foundation in their quest to expand, he feels his personal stories with youth is the greatest “sales pitch” for what this foundation is capable of. “Talking about the different stories that

we’ve had from doing these visits. That can impact a lot and really get people excited and wanting to get involved. We’ve had such great stories of kids that just want us to sit down with them. They didn’t even know who I was or who we were, they were just excited that somebody was there, hanging out with them and talking about real life, saying we have the same problems as everyone else,” he said. “It’s tough nowadays with social media and with how media works. Either you look perfect or you look like you’re the worst person in the world. Not everyone is perfect, no one is and no one is the worst in the world. It’s showing that the real-life problems that we have and being real with them. I think if people could be in just one of those sessions, they’d be so excited and want to get involved because it is so impactful and powerful.” With Fargo in full support of Thielen in his ventures on and off the field, The Thielen Foundation will continue to grow. All Adam Thielen wants to see in terms of growth is providing more resources and opportunities for those less fortunate. “Our next step is partnering with a high school and trying to help with the underprivileged youth that doesn’t have the resources or the opportunities. I think
it could really impact them, finishing their sports career or graduating from high school,” he said. “That can make a really big impact on youth, so going toward that way and doing a little bit of behavioral health too. Just trying to help kids that don’t have the opportunities that we had that helped us so much as kids and helped shaped us.” Adam Thielen is a great NFL wide receiver. He caught 113 passes for 1,373 yards and nine touchdowns last season. That is greatness on the gridiron in its purest form. However, those stats will one day not matter. They will not hold any weight outside of a conversation about amazing NFL wide receivers. What will carry weight long after Adam Thielen plays his last snap is his work with The Thielen Foundation. The generations that will be impacted by his work will have a long-term effect on our region, country and world. Yes, Adam Thielen is a great football player. Daily’s Market A Downtown Fargo first, Daily's Market offers a one-stop shop for those who live, work and play in our city's epicenter.
So, Daily’s Market came along and, as their slogan indicates, they are here for Fargo. Taking over the Abovo space on Broadway, Daily’s has brought back a full-service grocery/convenience market in Downtown Fargo. It comes at a much-needed time as Downtown inhabitants have flocked to the location for the necessities. Bread? They got it. Milk? They got it. Eggs? Sure thing.
Obviously, that is not the only thing Daily’s Market offers Downtown shoppers. On the other hand, a traditional American gastropub has wide open spaces, people are talking and laughing and the speakers blare any number of classic rock hits. They are two entirely different atmospheres and, in many ways, are worlds apart from one another. It seems as though combining them would be like oil and water reacting to one another.

On the other hand, Itterman has filled the menu with some American staples as well. Grilled cheese, fried chicken and six different types of burgers are also on the menu. On top of that, 46 North offers up a huge tap list and is sure
to have the brew for you. If beer is not your flavor, do not fret. 46 North has a hand-crafted cocktail menu and has 10 different kinds of wine. Their cocktail menu, crafted by local mixologist Conner Collins is one of the most ambitious in the area. The menu has everything from a Dirty Wheat Martini to a Bourye Old Fashioned or an Aruba Passoa. Collins’ use of underutilized liqueurs and alcohols gives this cocktail menu a sense of exclusivity. He also keeps thirsty guests guessing with a weekly “Mojito Of The Moment” which changes weekly. To accompany their drink menu, 46 North also hosts monthly wine dinners. As the weather warms, they plan to host cocktail and beer dinners each month. These dinners

Much of this is thanks to a very friendly staff and the fact that diners can see inside the kitchen as their food is being made. 46 North’s huge patio also offers a different element for diners too. Whether you like the fine dining experience or a more traditional style of dining, 46 North Pints & Provisions offers both. However, the flavor of their food and drink is anything but traditional. Their recipes and menu items are some of the most unique and tasty in the area. On top of that, their cocktails do not skimp on taste either. All in all, 46 North has been able to do something very few restaurants can. They have successfully merged fine dining and classic American fare. For that, they should be commended and celebrated in our community.

It is my great honor and pleasure to introduce you the Ambassador Extraordinary and Plenipotentiary of the Republic of Rwanda to the United States of America and non-resident Ambassador to Mexico, Brazil, and Argentina: Professor Mathilde Mukantabana.

Q Can you tell us a little about your life journey? A I was a tenured faculty at Cosumnes River College in Sacramento, California, and President of Friends of Rwanda Association (FORA). Our Association was instrumental in creating a community of Rwandans and American friends whose main mission was to promote friendships for Rwanda. Even though I lived in the U.S., Rwanda was central to all my main engagements outside of my teaching responsibilities. Even though representing my country as its Ambassador is more noteworthy, I had been going back to Rwanda for

almost a decade to lecture at the National University prior to my appointment. So I wouldn’t say my transition was from California to Washington because my journey was not linear. It was more of a triangle. My involvement with my country predates my appointment as Ambassador. More importantly, even at a time I was forced to live in exile away from my country, Rwanda never left me! I always carried it with me. Q What is the background on the RwandaUSA historical relationships? A Diplomatic relations between Rwanda and the U.S. were established in 1962 following Rwanda’s independence from Belgium. The United States has been a steady ally of Rwanda for decades; provided much-needed emergency relief programs in post-1994 genocide against the Tutsi, partnered in health, expansion of economic opportunities, providing food security programs, education and in many other sectors through various initiatives. Both countries maintain diplomatic missions both, in Kigali and in Washington, D.C., and are part of several international initiatives such as the UN and the World Bank. Both countries explore political relations, trade and investment channels and opportunities, as well as other relevant portfolios such as ICT, health and education. Q Kwibuka25: how is the 1994 Genocide against the Tutsi commemorated in Rwanda and in the Rwandan diaspora across the globe? A Kwibuka – To Remember, is an annual commemoration held in Rwanda and across the world to honor more than 1,000,000 men, women and children killed during the 1994 Genocide against the Tutsi in Rwanda. The genocide began on April 7, 1994, and was ended on July 4 by the Rwandan Patriotic Front Army, Inkotanyi. The Genocide was the culmination of years of oppression, discrimination and massacres of Tutsi spanning four decades. Today, the people of Rwanda under the leadership of President Paul Kagame have taken measures to ensure that what happened in 1994 will never happen again.

They have embarked on a journey of peace, reconciliation, forgiveness and on the forging of national identity. This year’s commemoration was held under the theme: Remember-Unite-Renew. In the U.S. alone, 21 events were held in several Rwandan communities across the country, two major conferences were held, one at Michigan State University, and the other at the U.S. Senate in collaboration with the U.S. caucus on Human Rights, and the U.S. Holocaust Museum. Q Describe the central role of Rwandan women in rebuilding the nation. A The country has institutionalized women’s political and economic empowerment through legislation as well as several initiatives aimed at increasing access to economic opportunity. Rwanda is also known to have the highest representation of women in parliament at 61 percent and 50 percent in the cabinet. The government of Rwanda has been widely recognized, internationally, for its commitment to fighting gender-based violence and in providing comprehensive care to girls, boys, women and men who are victims of GBV. Economic empowerment for women in Rwanda is ensured through the establishment of incubation centers for small and medium enterprises (SMEs) in both rural and urban areas and through the financial inclusion and saving scheme at the village level. Women continue to be instrumental in the development of the country by actively participating in its economy, being at the forefront of policy and decision making in areas such as health and education sectors. Women also, despite carrying difficult scars from the genocide, continue to be at the forefront of unity and reconciliation programs across the country, creating spaces of mutual understanding and growth in their communities. Q What can the current state of the affairs around the world learn from the Rwandan journey? A Even though the world is now more interconnected than ever through technology, there is a big deepening divide that is complex and multidimensional.
There is a huge economic disparity, a growing disconnect in global politics and security as well as a growing gap in gender representation. As citizens of the world, it behooves us to find common ground and build resilient societies that strive to lift up all their citizens. Many of the causes that burden the world today will affect everyone in the long run, regardless of their socio-economic status, race or what country they are born in. Issues of climate change, job security, cyber security, affect us all without regard for borders. It is high time for the world to come together, with world leaders at the forefront and the betterment of the human race at the core of their transformation agenda, to carry us through this fourth industrial revolution. Rwanda had to learn that “out of many we are one”, and this key lesson is just as valuable for world leaders of today and tomorrow, albeit on a larger scale. Q What is the Vision2050 of Rwanda? A Vision2050 is about ensuring high standards of living for all Rwandans in five identified main areas: Quality of life, modern infrastructure and livelihoods, transformation for prosperity, core values and international cooperation and positioning. The groundwork for Vision2050 was laid by other successful initiatives such as Vision 2020, Addis Ababa Action Agenda, Sustainable Development Goals, Paris Declaration on Climate Change, East African Community Vision 2050 and African Union Agenda 2063. Vision2050 will clearly be multifaceted and holistic in the implementation of its stated goals; Rwandans will deftly navigate from the optimization of space utilization through SMART cities programs to quality healthcare and education, to affordable, sustainable and reliable energy and to accessing high value IT and tech services among others. Rwandans are now, more than ever, prepared and ready to take this next phase on their road to progress and increased prosperity. Murakoze!

Calorie Culprits

W
hen trying to overcome the challenge of weight loss, it’s easy to fall into a few common traps and be tricked into thinking it involves a lot more than it actually does. You might be spending numerous hours each week sweating in the gym thinking that will be the key. Or maybe you’re jumping on the newest and flashiest diet train, such as keto, hoping it will help you start shedding the pounds and keep them off permanently. The problem with these approaches is that when it comes down to it, they’re just not doable long-term. Getting down to a healthy and sustainable weight doesn’t require drastic measures by any means. The most important factors are self-awareness and discipline. In most clients I work with, it only takes a little bit of cleaning up their diet and being smart when it comes to what I call calorie culprits, or foods that have a fair amount of hidden calories in them, to start making some great progress. Considering it takes a caloric deficit of roughly 3,500 calories to lose a pound of body fat, a safe and simple reduction of only 300-400 daily calories will start making an immediate positive impact.

Top 5 Calorie Culprits & Weight Loss Killers Food Quality Above anything else, pay attention to the quantity and quality of food you’re consuming. Your body doesn’t just need calories, it craves nutrients. This is why not long after plowing those potato chips you feel hungry again. You gave your body calories, but there was very little quality in them. Although many people looking to lose weight are consuming too many calories, a good amount actually don’t consume enough quality calories and it severely bogs down their metabolism, making them unable to let the weight go. Plain and simple, clean up the quality of food you’re eating and you’ll naturally find that sweet spot of how many calories you actually need by listening to your body’s hunger cues.
Healthy Items Unfortunately, you might be one of many that are continually tricked by the marketing machine that the nutrition industry has. Many are buying so-called “healthy” foods thinking they will help them lose weight. Items listed as “organic” or “non-GMO” are marketed to shoppers as if they’re healthier, when in fact, they’re really no different when it comes to basic nutritional content. Other products such as granola and trail mixes are typically packed with added sugars that will make it pretty tough to move the scale. Liquid Calories Limiting calories in liquid form is one of the best places to start when pursuing weight loss. Fruit juices lack the fiber and nutrients one would get from the entire fruit and contain fast-digesting sugars that jack your body’s insulin up, turning off your body’s fat-burning mechanism. Sodas and sports drinks are loaded with cheap sugars or can contain unhealthy artificial sweeteners that can also wreak havoc on your body’s hormonal and metabolic systems.

Since it’s only the taste of the condiment you really need, start your weight loss progress by just cutting back on the amount of the condiments you’re using. This can easily shave off a few hundred calories or more per day, which is a large percentage of a pretty typical diet requiring anywhere from 1600-2200 daily calories. Alcohol I’ll admit, it’s hard to beat a great margarita at a place like Vinyl Taco downtown. However, between the high sugar levels and actual alcohol content, more than a cocktail or two is a recipe for disaster. This is thanks to the slowdown of fat metabolism and the hormonal disruption it causes in your body. By directing police officers to specific situations, alerting them to trends and communicating details, our partnership can better leverage the Police

Your BID Ambassadors are also trained in social service issues and connecting individuals with the help and services they might need. Tell us about yourself: I am a wife and mother of three daughters. My oldest got married last summer so I now also have a son-in-law. I grew up in Grand Forks but have lived in Fargo for the past eight years. I am a high school counselor (for the past 15 years). My husband and I enjoy traveling, time at my parents’ lake home and working out. In addition to candle-making, I also enjoy photography, making farmhouse signs and baking cakes and cupcakes. I am on a mission to get the perfectly smooth frosted cake! What do you make through do good adventures? I am a candle maker. Our candles are made of natural soy, fragrance oils and are
hand-poured in small batches. I don’t add coloring to candles so the product is very clean in appearance and in its burn. How did you get into candle-making? My oldest daughter, Abby, got married last summer. I made jelly jar candles for each place setting at the reception. I researched products and the process and loved all of it. The candles were a huge hit and a conversation piece the whole night. The whole experience was just fun and I wanted to do more. So I made some fall scents, opened an online store and started sharing candles with my friends. This led to the holiday season, more scents, a few events and things have just continued to grow from there.
Where did your name come from? The name “do good” came together from a few different sources. First, as a school counselor, character is an important part of my job and doing good is an important character trait to help students develop. It is such a simple, basic concept for how we should live our lives and an easy goal to have - just do good. If people can just try to “do good” in their daily lives, imagine what an amazing place this world could be!? Personally, the phrase makes me think of the person that I want to be, contemplate how I can make an impact today, and explore ways that I can make a difference in the world. Secondly, my daughters and I are members of a sorority that has “do good” as its motto so it is something that connects us. Finally, “d.o.” are my initials so it all just played together for a business name. Favorite scent you’ve created? I started with a lot of holiday scents and there is something about a candle at
Christmas time that is so enticing! For this reason, I really like our “o Christmas tree!” scent. One of our classic year round scents is “ginger basil”. It’s clean, crisp, calming and makes me happy! Any scents you’ve tried that haven’t worked so great? Yes! I tried a lemon verbena and coconut combination that was not pleasant! Word that best describes you? Passionate. Most rewarding thing doing your own business? I love when people walk up to our booth, smell a candle and smile and say things like “this reminds me of the road driving into my grandma’s house”. Scents are connected to memories and experiences and when a candle helps bring that memory back for someone, it is really special to watch. Most challenging thing? The most challenging part for me is
not enough time. Balancing do good adventures with my full-time job has been tough. Because I work in a school, I am blessed to have the summer off and I am excited to spend more time on do good adventures to see what other possibilities are out there. hy does everyone seem to go crazy as soon as you see the first sweet corn stand? Because it's summer. We’ve been waiting for this moment for eight long and cold months. And if the highlight is a juicy, crunchy, ear of corn, I’m a happy camper. Corn, as we know it today, is said to have been created by man, some 7,000 years ago. It started off as a wild grass grown in central Mexico. Corn found its way into the present-day Eastern woodlands of the now United States roughly 1,000 years ago. From then on, Christopher Columbus made contact with the people of the Americas and he brought corn back home and spread its wealth throughout Europe.

Some can say that corn is one of or is the most important crop because of its versatility. Everything on the plant is usable, nothing is wasted. Kernels are ground into food, husks used to make tamales, stalks can be made into animal food. Food products from corn include corn oil, corn meal, corn syrup, corn starch and even some alcohols. Other uses include everyday products like spark plugs, drywall, aspirin and the biggest one of them all, ethanol. Other than the great uses from corn, it brings with it a seasonal romance because of its short growing season here in North Dakota. With the corn season being so short if you're going to be getting it locally, you have to move quickly. When I was growing up, during the summer, corn was at the table for almost every meal. One can only have a boiled an ear of corn so many times in those short four months without wanting it prepared some other way. It could be made by cutting off the kernels and using those kernels to make homemade creamed corn. Also, you could take that cob, roasting it in the oven, placing it in cold water and bringing it up to a simmer to create an awesome corn stock that you can use in a soup or even risotto. And remember those silks that you tore off when shucking? Those can also be saved and used in a century’s old household remedy, corn silk tea. New ways of using corn are being developed every day, the only limitation is our own imagination.
Bacon & Corn Griddle Cakes Ingredients • • • • • • • • • • • •
1 Cup Corn Meal 1 Cup Flour 4 teaspoons baking powder 1.5 teaspoon salt 1 egg beaten 2.5 Cups whole milk 1 Cup cheddar cheese 1 Cup Raw corn kernels 1 Cup cooked, diced bacon 3 green onions, finely sliced 2 Tablespoons butter 1 Tablespoon vegetable oil
Preparation
• 1. Mix together cornmeal, flour, baking powder, salt in a medium sized bowl. • 2. In a separate bowl mix together egg, milk, cheddar cheese, green onion, corn, and bacon. • 3. Gently fold the wet ingredients into the dry. • 4. Heat up a cast iron skillet or sauté pan on medium heat. Add butter and oil, melt. • 5. Once butter and oil are melted, spoon in the batter to the desired size. Once the one side has caramelized (2 minutes), flip and cook for another 2 minutes. Remove from pan and serve.
DRINK OF THE MONTH Grapefruit Aperol Punch 1.5 oz Tanqueray Gin 0.5 oz Aperol 2-3 dashes of bitters 0.5 oz lemon juice Simple Syrup Grapefruit juice
Combine ingredients in a shaker. Pour into a single serving glass and garnish with a slice of fresh grapefruit. Mezzaluna mixologist Max Parker made up this single-serving refreshing beverage to quench our desire for a lighter, summery punch. A classic on the cocktail menu is the Aperol Spritz, made of prosecco, Aperol and soda water. Similar in effect and arguably tastier is this Grapefruit Aperol Punch. Parker noted that punches often have a spice or a tea in them, but he instead opted for bitters as a way to add some depth.

A great summer cocktail often starts with gin. Next time you are searching the cocktail menu for a beverage to sip while on the patio, look for ones with a gin base.
Bitters are the "spice rack of the bar." Want to add extra depth to your beverages? A few dashes of bitters will tickle your fancy.
Fresh juice is always best. Easily enough, you can squeeze a grapefruit just like you would a lemon. Roll the whole grapefruit on a counter for a few seconds, this will make the juice come out easier when squeezed and the warmth from your hands will also increase the juice yield. Cut the fruit in half and use a modern hand squeezer or an old-fashioned reamer to get the juice out. And you're done!

"We are currently focused on a five-year plan to complete the relocation of our Stepping Stones Resource Center for youth at risk and the additional housing opportunities needed to support them."
"We believe every person is an individual who should be given an opportunity to make choices in life which affords them the dignity of risk and the opportunity to contribute to society," said Sandra Leyland, the CEO and President of Fraser.
However, there is no shortage of challenges and needs for Fraser. Leyland identifies the need for permanent housing and identifying those who need support.
So, how does Fraser do this? While they accomplish their mission through a multitude of means, it comes primarily through housing opportunities. "Fraser, Ltd.’s housing opportunities and independent living case management provide the foundation for all children, at-risk youth and developmentally disabled adults to build their lives," said Leyland. "Through person-centered planning, we teach the basic skills necessary for individuals to live independently and learn to make good choices." Fraser provides services for people of all ages in their journey towards independence. "We provide services to individuals age six weeks to end of life.
"Permanent supportive housing, like the Butler House, renovated in 2014, along with transitional housing opportunities for youth is a tremendous need in our community. Being proactive on the front end by providing a home to youth without family or meeting the emotional supports often lacking, can open many doors in their future," she said. "Collaborating with other providers is key in identifying at-risk youth. Youth at risk of homelessness, incarceration, trafficking, and addiction are skilled at flying under the radar and are often referred to as the unseen population. But through the accomplished efforts of our case management staff; we see them or they find us." Despite being around for 125 years, Fraser still sets lofty goals for their organization.
"To meet these needs we have set financial goals and identified in-kind needs now and for the future. Fraser Ltd. is no longer a grassroots organization and we need to secure our ability to fulfill our commitment to service. We recently formed The Fraser Foundation to assist us in continuing our work into the future," Leyland said. "On the immediate horizon, however, and over the next three years is a 4 million goal to complete work started to provide homes and increase case management efforts for our community’s youth. Another $500,000 McNair challenge kicks off this effort." None of this can be accomplished without the support of our community. Leyland says Fraser is lucky to have had great backing by those in our region. "Our organization has persevered and helped our clientele succeed for many years because of the humanity found in the Fargo + Moorhead + West Fargo communities. Volunteer time and talent is always appreciated," she said. "Our scope of service is broad and so are the volunteer opportunities. And of course, we are not shy about asking for financial support to meet our goals. No gift is too small. We have been blessed with major gifts but this need touches all of us and your support in any capacity will make a difference."
