Frankie & Desiree, co-founder of The Foraging Fox The Foraging Fox is shaking up the world of condiments. Co-founders Frankie Fox and Desiree Parker launched their first Beetroot Ketchup in February 2015. Since then the former city high-flyers have used their business acumen to fill a gap in the market. Within months, the Original Beetroot Ketchup was awarded: winner of ‘Great New Idea’ at the Farm Shop & Deli Show; winner of the Cook Vegetarian – Vegetarian Innovation Award; finalist two years in a row at the Free From Food Awards and the brand made it into the Top 5 in Ocado’s ‘Britain’s Next Top Supplier’ competition. During 2016, their Hot Beetroot Ketchup received the FoodBev World Innovation Award for Best New Condiment; Both Original and Hot were shortlisted in the Veggie Awards. Frankie Fox What Christmas gift do you covet this year? Hopefully my family is reading this, I’d love really fancy new chicken coop for the girls, their old one really is on its last legs! Fresh eggs are just amazing. What gift would you like to give? I love making all sorts of Homemade jellies, jams and chutneys from fruit and veg we have grown in our garden. Last year it was Medlar jelly, the year before that Quince. This year will be crabapple jelly. A favourite gift you’ve received in the past? A polytunnel. I can’t tell you how much joy it’s given me. We still have home grown tomatoes in November! Desiree Parker What Christmas gift do you covet this year? I spent some time in Italy this year and I was reminded just HOW GOOD homemade pasta is! You just can’t beat it! What I really need in my life right now is a good pasta making machine! What gift would you like to give? The gift I would most like to give would be a grow kit from the Espresso Mushroom Company - they are so beautiful, imaginative and tasty! I have it in mind for my 7 year old son... Obviously I would share in the fruits of his labour! A favourite gift you’ve received in the past? I received the most exquisite looking box of chocolates not so long ago from a friend - they were from Troffle they almost looked too good to eat! They were divine! I love anything with chocolate in it so that’s a sure way to get me smiling at Xmas!

Mary Quicke MBE – Cheesemaker, Campaigner, Columnist and Campanologist Mary Quicke is the 14th generation of the Quicke family to run Home Farm at Newton St Cyres in Devon and the second generation to create multi-award-winning cheese in the farm’s dairy. Mary's dedication to her dairy herd and artisan cheesemaking methods, make her a leading authority and she frequently judges at international competitions including the prestigious American Cheese Society Awards. She has been instrumental in establishing the Academy of Cheese which launched this autumn. Quicke’s is the largest British naturally matured traditional cheddar maker, selling to wholesalers, the independent market, and to export, mainly US and Australia. Quicke’s has a £3.5m turnover comprising of integrated cheesemaking and farming business. Mary has run the business since 1987. What Christmas gift do you covet this year? A cheese board with all my favourite cheeses. Other than our cheddars, goats’ and ewes’ milk cheese, which make up about half my cheeseboard, I will add a Colston Basset Stilton, a glorious Tunworth, a Goddess and a delicate Ragstone. There is nothing greater than the pleasure derived from indulging in this pure sensory pleasure.

What gift would you like to give? A cheese board with all my favourite cheeses. If I love them, I want everyone to share with me. A favourite gift you’ve received in the past? A cheese board with all my favourite cheeses. The more cheese, the merrier! I would add one of the late greats. There used to be an exquisite mould ripened cheese, Bonchester, which the maker, John Curtis once gave me. I drool over the memory of that cheese. Sadly it’s no more.

Emma Macdonald, founder of The Bay Tree Having grown up making delicious preserves with her mother, The Bay Tree’s founder, Emma Macdonald, has always had an obsession for food and the pursuit of taste. This passion for discovering exciting and innovative flavours saw her travel the world as a chef, before launching The Bay Tree more than two decades ago. The early days were humble, with Emma lovingly creating batches of Aga dried tomatoes and Cucumber Relish in her mother’s kitchen. Within days of launching, Fortnum & Mason and Harvey Nichols were keen to place orders and the kitchen was quickly outgrown. Emma moved The Bay Tree to its first manufacturing unit, where she continued developing new ranges and exploring new flavour profiles. Today, The Bay Tree has over 150 mouth-watering products in its range. What Christmas gift do you covet this year? I think this year, I am looking at doing things so would love to get a day out or day away doing something different rather than a gift. What gift they would like to give? I would like to give all my family, home made damson and sloe gin, as it has been an amazing harvest for wild berries and I have some delicious home brew. A favourite gift you’ve received in the past? I received some home baked cookies in a jar once, which I always felt was a lovely idea if you want to be remembered.

Pritesh Mody - Owner of World of Zing Coming from one of the UK’s oldest and most respected spice merchant families, and a career in food and drink marketing, there are few people who can claim to have such a rich background in the world of flavour. Emily and Annabel Lui Photograph: BILLIE SCHEEPERS Sisters Emily and Annabel were born into a world of food, helping their parents run their busy family restaurant from a very early age. After graduating from university, Annabel went into the City where she worked as a financial consultant. It was here that she learnt skills that would stand her in good stead later on. They first set up their stall one freezing cold morning in February 2013 at Partridges food market; by lunchtime they had sold out. Within a matter of months their reputation had spread to the point when Selfridges asked them to supply their store with a range of Biskies, The sisters were then asked to design an exclusive collection for Harrods. This was then followed by a hugely successful pop at Selfridges which they ran themselves. It was the latter that gave Annabel and Emily the desire to do something similar. With Cutter & Squidge now an established brand, and a successful pop up partnership with global mega brand Hello Kitty under their belt, the sisters have plans to open more stores. LIKE TO RECEIVE We are dreaming that Father Christmas is going to bring us the newest Thermomix - it does amazing things to get the right texture off ingredients, and also saves precious time that we’re very short on these days! GIVE We love Spain for their incredible foodie culture and the flavours they use. How to Choose Wine for Christmas Dinner by Honest Grapes Festive wines for festive vibes The best wines to take care of those Christmas culinary conundrums 1.
Nibbles and starters
You have a lot of options here depending on how brave you want to be. For fizz, a fine Prosecco like the Dal Bello Don Gallo Prosecco is always a good choice but you can break the mould with a Crémant d’Alsace as a great value alternative to Champagne. Bright, crisp wines drink well on their own and excite the palate for food to come. Go for a crisp and lightly fruity white wine such as Sauvignon Blanc or unoaked Chardonnay. If you’d rather start with red wine, choose something softer in character, with lighter tannins and pleasant fruitiness without puckering your mouth. Try an Italian Merlot, Light Pinot Noir , or perhaps a Beaujolais Villages. 2.
Hors d’ouvres
Chablis or Sancerre are classic matches for seafood, but try Menetou-Salon for an exciting, great value alternative. The crispness and weightiness of these wines balances the salty delicate flavours of the seafood. For creamy, rich food try a bold Pinot Gris from Alsace or the Italian Alto Adige. The richness, spiciness and acidity of these wines perfectly complements the creaminess and fat of dishes like paté. 3.
Main course
Fish with white wine is a classic combo, but did you know that meatier fish and salmon work beautifully with delicate red wines? The texture and oiliness of the salmon complements the light red fruit and rounded notes of Beaujolais or Pinot Noir. Pinot Noir is very versatile and also pairs great with lamb and turkey (perfect for Christmas). The delicate red fruit aromas complement the meat, whilst the natural acidity aids digestion. Have Chardonnay with chicken, especially with creamy or mushroom sauces. Chardonnay with mushroom and chicken risotto is a good idea for a delicious dinner that’s quick and easy. Chilean, American or French Chardonnay have a richness and acidity Pair Chardonnay with chicken, a classic combination, especially with creamy or mushroom sauces. The richness and acidity of a Chilean, American or French Chardonnay brings out the flavours in chicken breast. For red meats, you can’t go wrong with a classic Italian red or a classic Bordeaux red. We recommend Certosa di Belriguardo Chianti DOCG from Tuscany or the Terrelíade Nero d’Avola-Syrah from Sicily and the Chateau Civrac 2008 or Chateau la Croix de Grezard 2009 And now the moment we’ve all been waiting for… 4. Dessert Tip: As the colour of the dessert gets darker, the wine should get darker. Christmas pudding is in season. Pair it with a fragrant Gewürtztraminer and pink champagne. The spiciness will complement the fruit. Custard desserts taste great with aromatic white wines, demi-sec champagne and Italian sparklers, like Castello di Neive Moscato d’Asti. Rich chocolate and caramel desserts pair with red wine like Grenache, Australian Shiraz, or one of our top sweet wines from a favourite producer of ours, La Giaretta Recioto Classico.
