Chef William Wallace & Erie Meats In 2008 Erie Meat Products moved into its Listowel facility and has since invested heavily in new employment, technology and production equipment. The hot dog line is constantly packing off 5” 6” and 7” hot dogs ranging from Halal Chicken to All-Beef. Longer than a football field, it runs in a straight line within the 500,000 square foot facility. There are Batter and Breaded facilities, a deli facility equipped with a Ready-To-Eat room and a Sous Vide line that can cook 16,000 pounds of product, perfectly to temp, at one time. Maybe most impressive are the machines that power and heat the facility. Erie Meats invested heavily in not one, but two co-generators. These two natural gas generators, or more aptly described as locomotive engines, generates the electricity required to run the plant and the steam generated is used to run our smoke houses in both the deli and sous vide facility.
Among the many employees at Erie Meats that call the Listowel facility home, is Chef William Wallace. He is rarely seen in one place for very long. As Director of R&D he is typically found on the move to or from his R&D kitchen. Chef William often laments, “You simply can’t replicate the results of a 60 foot fryer!” Which is why you might find him on one of the several lines within Erie Meats or in the lab testing products and recipes to ensure they are meeting the specs demanded by clients. During a recent round of CGC meetings hosted at our Mississauga office, Chef joined the teams to prepare meals including selected Chicken items from the recent RFP process. Seen below is our Chef William in his natural habitat… an actual kitchen, preparing meals for guests as opposed to an R&D kitchen kept at zero degrees Celsius.

PROGRAM HIGHLIGHTS CLUB COFFEE - Rebrand We are pleased to announce Club Coffee is being rebranded to Club Coffee Craft RoastersTM and updating its packaging and pack sizes to meet the needs of today’s foodservice operator. In many cases, the current Club and distributor code will change to reflect the new size. Over the coming months, your pack size will (may) change to a 42ct, 64ct, or 96ct fractional package. As well, all whole bean sku’s will move into 2lb bags (8ct for regular and 4ct for Decaf and Flavour). Finally, your urn pack case sizes may also adjust to our new standard case sizes. Club Coffee’s goal is to help provide user friendly pack sizes and help you serve fresh coffee to your customers. PROGRAM HIGHLIGHTS MAPLE LEAF - Product Rationalization Maple Leaf has been proud to offer Schneiders Sausage Rolls which have been entertaining favorites for years. Recently, a decision was made to reformulate two of these quality frozen products consistent with the new Schneiders Brand standards with intent to launch in January 2020. Unfortunately, Maple Leaf has been forced to make the difficult decision to exit this business until further notice due to unforeseen circumstances with manufacturing challenges. Despite this setback, work will continue and will ideally be re-launching again sometime in the near future. The products impacted are listed below: Product
