Shaun Goswell, Chief Food Officer of Chartwells Canada

Shaun Goswell is the Chief Food Officer of Chartwells Canada fueled by compassion and curiosity, providing culinary vision, innovation and product development. His Culinary passion started at a very young age. Born and raised in a rural area near Truro, Nova Scotia, food was always the focus with the family garden and fresh seafood while growing up in a true country kitchen being able to help make jams and his mom’s famous mustard pickles, unknowingly these experiences directly impacted his life. Being an avid lover of nature and spending summers picking berries to make pies and tapping maple trees in the winter months and having sap boiling parties with family and friends sparked his interest for wild food and ingredients which led him to go to culinary school. Shaun attended the prestigious Culinary Institute of Canada in Prince Edward Island where he graduated with honours. He started his career in Nantucket Massachusetts, where he was accepted to work at The Wauwinet

Inn, Relais Châteaux property. After working in Nantucket, he returned to Nova Scotia to take a position at Glen Arbour golf course in Halifax where he executed the LPGA BMO classic golf event and Fox Harbor Golf Resort & Spa Which is the golf resort owned by Ron Joyce, former Owner of Tim Hortons. After a few years, Shaun decided her true passion was working with people to serve more exciting culinary adventures. He worked at the Woodland Inn & Resort in South Carolina and rejoined the Relais Chateaux family again working with Chef Tarver King before working at Colbourne Lane with Chef Claudio Aprile that specialized in molecular cuisine at the time. To pursue his dream of bringing fine cuisine with a local focus to his hometown, Shaun joined to run fine dining restaurants in multiproperties. This experience honed his belief in the power of uniting staff with leadership, in the hard work, to bring positive change. In Summer 2010, Shaun decided to make a move to Toronto to further his knowledge in culinary arts in this transition he was able to experience some of Toronto’s & Niagara’s top kitchens including nota benne, Globe, L.A.B, North 44 and Hillenbrand winery. Also Shaun worked Noma restaurant in Denmark in Winter 2010 which is a Michelin Star Restaurant as well at that time was ranked the best restaurant in the world. After returning to Ontario, Shaun joined Centerplate and ran the

CHEF’S CORNER New 200,000 Sq. Ft. Convention center where freshly prepared food was at the forefront including a whole kitchen dedicated to the preservation of vegetables and meats. In his time with Centerplate, he was directly executed with two Super Bowls and three International Auto Shows and run the Ferrari Suite for Honda Indy. Shaun was the winner of The Best Food and Beverage for North America for convention centers in 2015. That is also where he met Ashton Sequeira, Presidant of Chartwells Canada. Shaun joined Compass Group Canada in 2016 with a vision of bringing a culinary team together and providing culinary product development and focus on quality standards, continuous improvement, professional development and training. Now he continues his efforts to support and inspire people under the Chartwells brand as the Chief Food Officer for Canada and with great privilege to work with over 6500 associates and with them create memorable food experiences for our students.

SCALLOPS & WILD APPLES Wild apples are often too tart to eat straight from the tree, but quickpickling is one way to balance this tartness. I’ve used wild apples for this version of a dish that I often make at the restaurant. The scallops should not be over-cooked; a minute or two in a very hot pan is long enough. Done properly, they should have a nice caramelized face and a middle that’s still creamy. Enjoy! Herbs: • a good handful of fresh herbs parsley, chives, basil, dill • 3 tablespoons of toasted almonds or hazelnuts • 3+ tablespoons oil • 1 garlic clove, chopped • pinch of sea salt In a food processor, mix all the ingredients until coarsely puréed. Scrape the sides and mix again. Adjust consistency if needed by adding a bit more oil.

Quick-pickled wild apple: • 1 small wild apple, julienned • 1 tablespoon apple cider vinegar • 1 tablespoon Maple • 1 tablespoon Britch oil In a small bowl, mix all the ingredients. Set aside for at least 5 minutes. Scallops: • 10 scallops, patted dry on a paper towel • cooking oil • sea salt flakes Heat up a frying pan with enough oil to cover the bottom. The pan should be big enough that the scallops are not cramped. When the oil runs freely and the pan is hot, add the scallops and season with salt. Cook for about 1-2 minutes, depending on the size. Turn the scallops over and cook for another minute. Reserve the scallops on a paper towel and season with sea salt flakes. Serve right away with the herbs and apples. Use some fresh edible flowers if you have them for garnish. 3

Nestlé single bars are all made with Cocoa Plan chocolate, which is clearly identified on the front pack of most products. The chocolate category is large and growing, 2.2B +4%. Canadians love their chocolate, with penetration in 96% of households, of which 69% purchase chocolate weekly. The #1 selling single bar is the Kit Kat 4 finger.

IMPORTANT Until the transition date, continue to book travel through Vision’s online portal. Any travel arrangements made before this date will be honoured by Vision. As airline regulations prohibit flight credits from transferring from one agency to another, It is imperative to use any credits you have with Vision prior to the cutoff date. If you are unable to make a reservation and use your credits prior to February 25th, you will need to arrange to use these with the airlines directly. Regular travelers and travel arrangers will receive information on profile set-up and travel tool training shortly.

PROGRAM HIGHLIGHTS KELLOGG’S - Conversion opportunity Opportunity for cost saving in culinary with product switch from Premium Plus crackers to Zesta® crackers as a key initiative for low cost provider. A price increase effective February 4, 2019 as well as a shortage of supply from now until March 2019 has been identified for Premium Plus crackers. Foodbuy highly recommends a cracker conversion to Kellogg’s Zesta® crackers in mitigating the impacts to our units during this time. Crackers are predominantly used in food court and restaurant environments giving consumers the option to take as an accompaniment to their soup or salad purchase. For the operator, they are an additional product cost to the meal, but it is an advantage in delighting customers with this add on. Zesta® crackers, manufactured by Kellogg’s, have undergone an extensive recipe evaluation and reformulation to improve quality and taste. These crackers have been reviewed centrally and corporately and this switch for the business is highly recommended.

PRICE WATCH Price Watch - February 2019 The information below offers a snapshot of some of the price changes customers can expect to see in February. Please review complete list of updates here.

OBP Branded Bacon Olymel $0.5% Price Increase Commodity Price Change.

Canned Tuna Shafer-Haggart 17.5% Price Increase Solid White (Albacore) Tuna went up an average of 17.5% due to tight commodity supply and FX. Avoid Albacore and replace it with Chunk Light Tuna, as its Net Cost has been improved. (Roughly 50% lower price when comparing Albacore to Chunk Light Tuna).

Protein Sofina 1.58% Price Increase 1.58% on select sku’s. Price increase was communicated April 2018 for June 2018. We have delayed increase to Feb 2019.

Protein Expresco 5.6% Price Increase Primarily driven by beef strips. Beef has been increasing YOY and we have been protected. We have not received a price increase in 3 years. Vendor communicated price increase in November 2017, protected by Contract to November 2018. Delayed further to February 2019.
