famous people in the film and music industry. This is also where Robert got the inspiration for his next destination – Canada. With the move to Toronto came the opportunity to work at one of the city’s most notable restaurants, Rosewater Supper Club. The desire to establish a career in hotels is what drew him to take on the role as Sous Chef responsible for Tundra Restaurant at the Hilton Toronto. During his 6 years with Hilton, Robert was promoted to the position of Executive Sous Chef.

Robert Mills was born in Wellington, New Zealand where he began cooking from a young age. His style of Pacific Rim cooking is largely the influence of where he grew up combined with his experiences traveling and working in various countries. At the age of 21, Robert made his first move out of New Zealand when he took the position as the Executive Chef at a resort on the island of Tonga. Looking for further experiences, he moved to London, England and held a job as Sous Chef at London’s prestigious Covent Garden Hotel. This is where he fine-tuned his skills while cooking for some of the most

From there Robert moved to the position of Executive Chef/ Food and Beverage Director at the Thompson Toronto Hotel. His Journey from there moved him in the direction of Aramark where he was the Chef and Director of Operations on the Campus of the University of Toronto. After leaving, Robert was excited to take on the position of Executive Chef at the Fairmont Royal York for 2 years, running the culinary side of this hotel. Currently, Robert is in the role of Director of Culinary for Marquise Canada focusing on Long Term Care and Retirement Residents Associates to create memorable food experiences for our students.

CHEF’S CORNER WARM LINDT CHOCOLATE TART WITH COCOA NIBS AND FLEUR DE SEL This dish includes: - 1 warm chocolate tart, baked to order - 1 scoop raspberry sorbet - 6pc. fresh raspberries - ½ oz. raspberry coulis, brushed as such - ¼ tsp fleur de sel

CHOCOLATE PÂTE SABLÉ INGREDIENTS AMOUNT Butter 150g Icing sugar 75g Vanilla extract 5mL Egg 1 Flour 200g Cocoa powder 30g METHOD 1. Cream butter and icing sugar until smooth. 2. Add vanilla and egg and combine 3. Sift in flour and cocoa powder and form a dough

WARM CHOCOLATE TART FILLING BATTER INGREDIENTS AMOUNT Cream 125g Chocolate 200g Butter 100g Eggs 2 Egg yolks 2 Sugar 50g Salt Tiny pinch Cocoa nibs 20g Fluer de Sel TT METHOD 1. Simmer cream and butter in a pot, then add the chocolate and remove from heat. 2. Whisk together in a bowl the eggs, yolks, sugar and salt. 3. Slowly pour the chocolate into the egg mixture and whisk to combine. 4. Pour into unbaked chocolate sable shells, finish with cocoa nibs and fleur de sel. Chill. 5. Bake to order for 10- 12 minutes at 350 F.

RASPBERRY SORBET INGREDIENTS Frozen raspberry puree Egg whites Sugar Water

AMOUNT 1L 1 50g 50mL

METHOD 1. Make a simple syrup with the sugar and water and beat into the egg white. 2. Fold this into the puree and freeze.

UNFI CANADA - Distribution Agreement Foodbuy Canada and Foodbuy US joined together this past year to renegotiate our North American contract with UNFI. UNFI offers products in the better for you category. Some of the categories would be: organic, kosher, gluten free, made in Canada, fair trade, dairy free, gmo free, nut free, soy free, sugar free, vegan, vegetarian, and wheat free. The new contract came in to effect February 1st 2019. UNFI is a national distributor which has two major distribution centers: an eastern OPCO which carries more than 8,500 products, and western OPCO that carries more than 7,100 products. A new minimum order fee is applicable and is based on your city/region. To find out what your minimum order is, please click here. In addition, the contract will have a 4% fuel surcharge applied to each invoice. PROGRAM ANNOUNCEMENTS OLYMEL - New Contract We are pleased to announce a new contract with Olymel effective March 1, 2019. This new 4 year contract spans all regions on 3 core Foodbuy recommended items of commodity bacon under the OBP brand. On top of the monthly market pricing changes, there is a 2.9% increase for Compass on OBP branded products. The increase is due to fixed cost, such as, labour, packaging & overhead being held for the past 3 years. Despite this increase, Foodbuy was able to mitigate from the original larger increase request of 10%. With Olymel, textures, flavours and enjoyment are part of every meal! Olymel brand products are recognized and appreciated by consumers across Canada.
