Coming from the farming community, the Compass Quebec Group’s Culinary Director, Line Lapalme, has grown and evolved in the culture of local, fresh and quality products. This childhood in nature has marked his character and formed the quality of his taste. Driven by her love and passion for cooking (and food), she decided to get involved in the culinary sector at an early age.

Line will join the ranks of Compass Group Canada following the merger of the two companies in 2000. This will be an opportunity for her to return to her first love, cooking, and to use her years of experience in management positions to flourish in the position of Culinary Director. CHEF’S CORNER Vegan croustade with blueberries, maple syrup and grilled buckwheat PREP TIME: 15 MIN COOK: 35 MIN PORTIONS: 8

FIRST STEP: THE CRUNCHY PART INGREDIENTS • 3 cups oatmeal • ½ cup whole-wheat flour • ½ cup grilled buckwheat (kasha) (shelled and roasted buckwheat seeds) • ½ cup maple syrup • ½ cup coconut oil • 1 tsp. grounded cardamom SECOND STEP: THE BLUEBERRIES

METHOD 1. In the bottom of a baking dish, place the blueberries, ¼ cup maple syrup and cardamom. Stir and reserve. 2. In a bowl combine the oatmeal, whole-wheat flour and grilled buckwheat. 3. In a small bowl, combine the unmelted coconut oil and maple syrup. Pour into the bowl of dry ingredients and stir with your hands until a smooth paste is obtained. 4. Place the mixture on the top of the bluberries without compacting it, then bake in the center rack at 350ºF for 30 to 40 minutes. Let it cool a bit before eating. Variation: replace cardamom with cinnamon and nutmeg and use local berries. The croustade can be stored at room temperature for up to 4 days. To keep it crispy, it’s best not to cover it too much.

The buckwheat is gluten-free and is very nutritious and more and more grown in Quebec.

Be sure to pick up shelled and roasted seeds.

PROGRAM HIGHLIGHTS CANADA BREAD - Discontinuation Canada Bread has decided to exit all aspects of the frozen business across all categories including: • Soft Breads and Rolls • Crusty Breads and Rolls • Artisan Breads and Rolls • Bagels • Croissants, Biscuits and Scones Canada Bread expects to conclude this transition by September 13th. To help mitigate the impact to your business, Foodbuy’s Preferred Supplier for Frozen bread is Weston’s. Bagel products will also be provided through Aryzta with products expected to be available by late July/August. We are finalizing some options with other suppliers to make sure the entire category is covered. We ask that you speak to your Account Manager should you have any questions.

PRICE WATCH Price Watch - July 2019 The information below offers a snapshot of some of the price changes customers can expect to see in July. Please review complete list of updates here.

Bacon, OBP Branded Olymel -11% Price Decrease 11% decrease in price. Still above 2018 pricing on bacon. Expect rise in prices to continue next month due to impact of ASF.

Coffee, Roast & Ground - Roasters Brand Club Coffee 1% Price Increase Negotiated contract extension with a price increase around labour, packaging, freight and overhead cost. Continue to purchase Roasters Brand, our preferred selection.

Coffee - Seattles Best Brand Starbucks -4% Price Decrease 4% decrease in price on Seattles Best Brand due to negotiation.

Paper Tissue/Towel/Napkin Kruger 1.3% Price Increase Virgin pulp price increase resulted in overall industry price impact. Kruger is secondary supplier with selected SKUs not impacted. Move spend to preferred supplier - Cascades.

MARKET & COMMODITY NEWS OLYMEL - Ingredient Listing Change Olymel is about to make an ingredient change in its breaded and parfried poultry products. In order to maintain a good operational flexibility, the ingredient statements of their breaded poultry products will be modified to include the option of using canola or soybean oil. This applies to both fully cooked breaded products and uncooked breaded products made in their Quebec and Ontario plants. Several evaluations have been made on their products to ensure and maintain the same level of quality through this change. Olymel is also taking advantage of this change to update ingredient declarations, nutrition information and labeling rules to the latest requirements of the Food and Drug Regulations and the Safe Food for Canadians Regulations. These changes will be phased in starting in May for National branded products. Any change to private label branded product labels will be implemented only once they have received written consent from each customer. MARKET & COMMODITY NEWS DIVERSEY - Chemical Update We wanted to provide an update to the business on the Diversey Chemicals transition that has been underway since the start of May. We are 57% complete Phase 1 of the project, and have currently transitioned 43% of our business. We would like to remind everyone to keep an eye on inventory levels. Managers are encouraged to make best efforts to use-up existing chemical inventory and only place additional orders for critical items (such as sanitizer) to last until the week of your scheduled installation. Poor inventory management will lead to delayed transitions, and significant missed opportunity. There will be senior sector review of all units who don’t transition in time due to over-ordering of EcoLab products. We would like to remind units that doing a case by case comparison on price is not the correct methodology. Diversey products have a longer usage period due to their high dilution rates. With the recent transition, we have identified an issue between the price shown on the MOG and the price that units are invoiced. There is a project underway that will address this issue in September. In the interim, we have attached a Sysco contract price list for all Diversey products that can be referenced. We will continue to audit all transactions and ensure that our distributors are charging units correctly. If you have any concerns, please submit a pricing ticket with BuySmart.
