Traditional freezing methods create undesirable ice crystals that damage the cellular structure of the fish due to the fact that water expands as it freezes. Properly frozen seafood is Flash Frozen which preserves the natural texture, appearance and flavour of the seafood. Items are quickly frozen on board the ship or at the processing plant within hours after being caught (On cooking 5th Edition). All of High Liner’s major species are flash frozen at sea. Based in Mississauga, Ontario, King’s Pastry is a proud Canadian leading manufacturer of cakes, pastries, and other various desserts. They offer a wide variety of bitesized, single-serve and full-sized desserts. PROGRAM HIGHLIGHTS GAY LEA - Butter Rationalization We would like to announce that the Culinary Solution team along with Sector Culinary leads, have completed a SKU rationalization on butter. Rationalizations, completed by sectors are an important step in our savings initiative providing visible cost savings and improvements to rebates. This rationalization will help the business realize a total net savings of $72k. After rationalizing each butter type to one preferred SKU, the completed rationalization shows unit benefit from better overall improved net program. Gay Lea has created a private label brand for us called Mackenzie. The Culinary teams suggest converting spend from the Gay Lea brand butter to our new Private label program under the Mackenzie brand. This proposal only applies to the following three MacKenzie items listed nationally: • #153020 Mackenzie 1 Lb Unsalted • #153010 Mackenzie Whipped Butter Pot These changes will take effect as of October 1, 2019 with conversion to capture full year savings from completed rationalization.

As our preferred water brand with a strong program and available in various sizes, we recommend stocking Aquafina as your still water option. The flat water market maintains its place as one of the largest year after year so be sure to continue to stock and sell. Ambient water racks are a great way to remind consumers to pick up a water. While the consumer may not want an ambient water, they may purchase to chill and drink later. Reach out to your Pepsi representative should you wish to place ambient racks in your unit.

MARKET & COMMODITY NEWS Foodbuy Continued Growth As we enter in to Fiscal 2020 to achieve our highest year results in history we have added some resources to the Foodbuy team to better support our growing business. I am excited to announce that as of September 3rd Matt Robertson has joined Foodbuy as the VP of Member Development. He is known for being a catalyst for growth and change, and has experience in Fortune 500, mid-market and start-up organizations. Matt is excited to join the food service industry, bringing experience to the team from the luxury automotive, CPG and packaging industries. He is a passionate about building collaborative and highperforming partnerships with customers and cross-functional stakeholders. Matt spent 5 years working in the packaging industry, and was responsible for the supply chain team at Menasha Packaging, where he helped establish operational improvements. I am pleased to announce that in addition to the above, Foodbuy has added additional support to the business. Brian Daze has joined the team as VP of Operations, Foodbuy, effective September 9th. Brian comes to Foodbuy with a wealth of experience. He spent 16 years at the Jim Pattison Organization which enabled him to work all over Canada. During his tenure there Brian made substantial operational improvements, sales increases and merchandising rationalizations. From there Brian moved to Sodexo where he led the procurement services company for 6 years. During that time he dramatically changed the business model. I know these two distinguished individuals will be a great addition to the Foodbuy team. Thank you,

Food waste is one of the key action platforms of the Compass Group sustainability strategy, raising awareness and providing tactics and technology solutions to reduce it. As a food service operator, you may have un-served food left over following catering events or regular business, that is still wholesome and nourishing, yet often is discarded as food waste. It is a good time to offer a reminder that many Canadians struggle with food insecurity and access to safe, good quality and nutritious food. People rely on organizations such as food banks and community kitchens to meet their basic food needs, and these organizations in turn rely mainly on donations from individuals and businesses. Second Harvest is Canada’s leading food rescue charity with a dual mission of hunger relief and environmental protection, focused on redirecting unwanted/unsaleable perishable food to nourish those in need. MARKET & COMMODITY NEWS CHANGES TO ORDER GUIDES & ORDERING PROCESSES On October 16th, we are launching the new order guide management processes for all units across Canada. This process is in full alignment with Compass USA, and the primary purpose is to improve the ordering experience for operators, and to create order guides for sectors that better support businesses requirements. These changes will: • Increase and improve product selection on the Order Guides • Create sector specific order guides • Transfer ownership and decision making for sector order guides to sector culinary leads • Improve the response time for Order Guide additions for approved items already available at the distribution center There are changes to One Time Releases, Special Orders and Product Request. The ordering processes will be covered and explained in detail in the training sessions. The project team has scheduled training sessions to provide a project overview, and educate operators on the new processes.
