WHAT DOES THE SEAFOOD MARKET LOOK LIKE?

Seafood has become a major profit driver for businesses in the foodservice industry. Market studies show that items per meal increases among seafood consumers leading to higher than average cheques in restaurants and cafes.
Seafood also has been shown to drive customer satisfaction. Among all proteins, consumers are most satisfied with the quality, taste and variety of the seafood options they experience at restaurants.
Market insights indicate that menuing seafood is good for business, so how do you know which seafood product is right for you? We can help you figure it out. Wild Caught v. Aquaculture Wild Caught Seafood Wild caught seafood is a popular selection for many people and encompasses a wide range of fish both salt water and fresh water. When fish is wild caught it is caught in the world’s oceans and streams and is usually caught in the Northern and Southern parts of the world.
Highliner’s procurement team purchases more than 250 million pounds of wild caught product annually. Our wild caught inventory consists of 30 different species of fish from 20 different countries. Some of the most popular types of wild caught fish we source include cod, haddock, pacific salmon, pollock, blue cod and cape hake. All wild fisheries we work with are managed by local governments to control the level of harvesting along with the method of capture.
Aquaculture Seafood Aquaculture seafood is farmed in contained areas in fresh or salt water. Aquaculture is responsible for providing about 50% of the total fish and shellfish in the world. Most Aquaculture farms are found near the equator and products are generally available year around. Farmed species include shrimp, tilapia, Atlantic salmon and basa.
While all seafood remains popular, salmon continues to be the top fish species found on Canadian menus, followed by cod and tuna. Salmon is an excellent source of protein, low in saturated fat with no trans fat and is a great source of Omega 3s. It is equally popular with adults ages 18 - 34 as well as 35 and up and is a huge export of Canada’s.
While some consumers voice concerns over farm-raised seafood, Aquaculture does have the ability to offer full traceability from broodstock to hatchery to grow-out farm to processing plant to final consumer, if managed properly.
Top selling fish dishes on menus include salmon, Fish & Chips, tuna, salmon/sake and specialty sushi rolls. Some of the fastest growing fish dishes in Canada include tacos and taquitos which have experienced more than 230% growth in appetizer menu
mentions over the past five years and fish burgers which have been on the rise as a healthier alternative to beef patties. In the healthcare sector, it is more of a challange to menu successful food products while meeting diet limitations and ensuring food safety. This year, the top five cuisines in healthcare were Traditional Canadian, Traditional American, Chinese, Indian, and Latin American. Seafood fits well into the top two categories.
Frozen or Fresh: Which is the better option? Frozen seafood is just as good an alternative as fresh, if not better. Fresh seafood has a shorter shelf life (approximately 3 days) and a higher risk of cross contamination. Frozen fish has a much longer shelf life, often 365+ days. Frozen fish is more cost efficient and also allows for species of fish with a short season to be available throughout the year.
