Program Announcements Liquid Eggs: The Better Choice for Your Menus Eggs are an important daily menu item for many Foodbuy customers and liquid eggs offer the same great taste and nutrition as shell at a better value. Benefits of using liquid eggs include: • Liquid eggs dramatically reduce the risk of spreading salmonella from eggs in your kitchen. Salmonella can live on the outside of an egg’s shell and doubles every 20 minutes, putting your whole kitchen at risk with just one infected shell egg.

• Liquid eggs by Brunbrae Farms go through an Ultra Pasteurization Process which kills 99.99% of Salmonella, E-Coli and Listeria making them the safer choice for keeping foodborne illnesses out of your kitchen.

• Liquid eggs are less labour intensive. It takes 45 seconds to open the equivalent of 15 dozen shell eggs in liquid form!

• Liquid eggs are less costly as they drastically reduce waste and loss due to breakage.

• Liquid eggs have a 70 day shelf life compared to the short 35 day shelf life of shell eggs and they take up less shelf space! • Burnbrae Farms, offers liquid egg products that contain the same proportion of egg yolk to egg white as shell eggs. See the conversions here.

Some of your customers may not even notice the difference in liquid eggs as compared to shell eggs. For those that do, we can offer tips to subtly integrate liquid eggs into your menu. They include: • Pouring liquid eggs into a coldwell or pitcher that can stand next to your grill as you ladle eggs onto your cooking surface. A coldwell or pitcher conceals the egg container and offers a much more pleasant view for your customers. • To make your liquid eggs look more like whisked shell eggs, use liquid for the majority of the solution and crack a few shell eggs in at the end to offer the same colour and texture. Make sure your operation is getting the best value out of your egg purchases. Consider switching from purchasing shell eggs to liquid eggs and you’re guaranteed to see savings in time and money.

Program Announcements Foodbuy Secures Rebate Improvements with Kronos and Maidrite Foodbuy is pleased to announce that we have secured improved rebates with two of our protein suppliers Kronos and Maidrite.

Kronos - Foodbuy has secured a 10% improvement on rebate on item 10077589271609- Beef Gyro Kronobroil.

Maidrite - Foodbuy has improved our program on select Chef Italia, QSel and Maidrite brand meatballs and sausage SKUs. The improvement ranges from $.50 on select previous items to $.70, and from $1.50 on some select items to $3.00.

Program Announcements Update: Foodbuy Secures Some Replacement Items for La Danoiserie Shortage In April, Foodbuy was notified by La Danoiserie that they would no longer be supplying foodservice operations with imported frozen pastries and breads. The reason for this decision is that the principle supplier of these items can no longer continue its operations. La Danoiserie has informed us that they are looking for another solution, and Foodbuy has also been looking for alternative products. Foodbuy has compiled a comprehensive list of all La Danoiserie products that are impacted, and this list also includes alternative products for many items and an estimated amount of time Sysco will still be able to provide La Danoiserie products based on current quantities. View this list here to minimize business disruption because of this issue. As this situation evolves we will provide more updates. Program Highlights OBP Bacon Prices Decrease By 7.8% This Month In May, OBP Bacon prices will decrease by 7.8% for Foodbuy customers. This price decrease is a result of positive market changes and an increased supply in the market.

Bonduelle Implements Slight Price Changes in May, Increases and Decreases on Frozen Vegetables Effective May 1, seven frozen foodservice products under the Bonduelle and Arctic Gardens brand will be increasing in price by 2.3%. This price increase is due to a challenging domestic crop season resulting in more imports from the U.S. This increase was introduced to the market in November 2017 and Bonduelle requested implementation by Foodbuy in March, however, Foodbuy was successful in delaying this price increase until May. Items impacted are listed below: Bonduelle and Arctic Gardens Products Increasing by 2.3% • Edamame • Mushrooms • Diced 3/8 Onions • Diced 1/2 Onions • Pearl Onions • Zucchini • Diced Celery Also in May, customers might notice small price decreases on the following items. This decrease is a result of small fluctuations in the market. Bonduelle and Arctic Gardens Products Decreasing From $.16/lb to $.155/lb • Puree Broccoli • Puree Carrots • Puree Green Beans • Potatos Au Gratin

Program Highlights Increasing Raw Materials Costs Lead to Price Increases on Janitorial and Sanitary Equipment In May, Atlas Graham, one of Foodbuy’s preferred suppliers in the janitorial and sanitary products and equipment category will implement a 7% price increase on all products. This increase is due to rising raw materials costs like resin, cotton, fuel and cardboard. In total, market costs have gone up by 11%, but Foodbuy was able to negotiate that down to an overall 7% increase implemented this month.

SS Frutas Implements 10% Price Increase on Plantain Veggie Chips In May, SS Frutas, a Foodbuy supplier of snack foods and veggie chips, announced a 10% price increase on Plaintain chips. This increase is due to inclement weather conditions that have impacted the South American region where plantains are grown. Storms and harsh rains have decreased the crop yield causing a shortage of supply and driving up prices. Moving forward, Foodbuy will be reviewing our “healthy snack” category and offering some alternative options to Plaintain chips. Please stay tuned for further communication.

Market and Commodity News Chopped Romaine Lettuce Recalled In April In April, Foodbuy communicated a QA Product Suspension on all bagged, chopped romaine lettuce due to an E-coli outbreak associated with the product. This suspension has recently been updated to include ALL ROMAINE LETTUCE as of April 21. Foodbuy customers have been advised to stop using ANY kinds of romaine lettuce including: ALL fresh prepared foods; green/salad mixes that include romaine; salad kits; prepared salads; sandwiches with romaine; fresh grab-and-go items containing romaine; bagged, chopped romaine lettuce; whole romaine hearts; and any products other products containing romaine lettuce. Customers are also directed to pull all romaine lettuce and related products from unit inventories and vending machines. As of today, Foodbuy is pleased to inform that Hector Larivee, Bamford and H.E. Keddy have provided an alternate supply of romaine lettuce (chopped and unchopped) that is not coming from the Yuma region. Foodbuy customers are able to begin ordering again from both Hector Larivee, Bamford and H.E. Keddy. Sysco and any other produce suppliers you may be purchasing from have NOT been cleared. Customers should NOT be selling any romaine lettuce from suppliers other than Hector Larivee, Bamford or H.E. Keddy.

Erie Meats Roast Beef Recalled In April Also in April, Erie Meats recalled all roast beef products due to Listeria contamination. Until further notice consumers should not consume and distributors, retailers and foodservice establishments such as hotels, restaurants, cafeterias, hospitals and nursing homes should not sell or use the recalled products.
