Bradley Yip’s interest in food was first sparked from the exposure to the several cuisines he encountered as a child. Born in Ottawa, Bradley moved to West Africa and soon realized that you could enjoy food in all of its incarnations. In what began a whirlwind of adventure in his early twenties, Bradley pursued a degree in psychology at York University and then began a modelling career which took him to London, England. This experience allowed Bradley to travel extensively around Europe, experiencing various peoples, cultures, and of course, foods. His first foray into the culinary world happened after a chance meeting. Bradley found himself studying Ayurveda and Ayurvedic cuisine in Kovalom in India.

Bradley has since become an Executive Chef for major events happening all over the country. He executed the “Ride to Conquer Cancer” both in Canada and the United States, was the headline Chef for Diner en Blanc—where he created his own menu and design for the secret dinner—and also starred as the Main Chef for Bloor Street Entertains and AIDSBeat. In addition to his corporate responsibilities, Bradley has managed to combine his love for travel and cooking. He has cooked privately for a number of Forbes top 50 as well as Hollywood A-listers. These jobs have taken him to locations in LA, the Hamptons , Aspen, Tokyo, Bahamas and as far as the Arctic. When not travelling, Bradley calls Muskoka home. He tends an Organic garden there to keep himself inspired in the kitchen.

AYURVEDIC OJA BALLS

INGREDIENTS

PREPARATION

• 1/2 cup dried figs • 1/2 cup dates • 1/2 cup dried apricots • 1/2 cup pumpkin seeds, lightly toasted in a dry skillet • 1/2 cup sunflower seeds • 1/2 cup white sesame seeds • 1 tsp. ground cardamom • 1 pinch mineral salt • 1 tsp fresh organic orange zest (optional) • 1/8 to 1/4 cup extra virgin, cold-pressed olive or coconut oil • 1/3 cup whole white sesame seeds, ground flax seeds, or unsweetened, shredded dried coconut to coat the finished balls (optional)

Lightly toast the pumpkin seeds in a skillet without oil. This helps to remove any traces of E-coli on their skins. Remove from skillet and transfer to a bowl. Allow to cool. Meanwhile, separately grind the sunflower seeds and the sesame seeds into a coarse powder, reserving each of the ground seeds in a medium-sized mixing bowl. Grind the pumpkin seeds once they have cooled. Add the cardamom and salt to the seeds and combine well. If you are adding carob, cacao, and/or spirulina powder (see below), do so now and mix well. Drain the dried fruits, reserving the soaking water for another use (such as drinking it on an empty stomach). Add the soaked dried fruit and the optional orange zest to the ground seed mixture. Incorporate the ingredients using the back of a fork to obtain a very coarse mixture. Now add enough oil to obtain a thick, paste-like dough. Using a teaspoon, scoop up a spoonful of the mixture and roll into a walnutsized ball in the palms of your hands. If the balls don’t easily stick together, add a bit more oil. If too wet, grind more sesame or sunflower seeds to thicken the mixture. For a nutritive, decorative touch, roll the balls in the whole sesame seeds, ground flax seeds, or shredded coconut. This also prevents the balls from being sticky on the outside. If you don’t have time to roll the balls, opt to make bars by pressing the mixture into a lightly oiled, glass 9 x 9” baking dish. Cut and enjoy as needed. Store in an airtight glass container in the refrigerator.

PRICE WATCH Price Watch - May 2019 The information below offers a snapshot of some of the price changes customers can expect to see in May. Please review complete list of updates here.

Paper Tissue/Towel/Napkin Cascades 0.3% Price Increase The price of virgin pulp has increased significantly resulting in an industry wide price increase for the Tissue, Towel and Napkin category. Cascades, our preferred supplier, has only increased the price of 5 SKUs with all others remaining at their current price.

OBP Branded Bacon Olymel 2.4% Price Increase 2.4% increase in price. We are starting to see prices far above seasonal due to the impact of the African Swine Fever spreading throughout China and other countries. We expect increases to continue and recommend sausage and other proteins as options.

MARKET & COMMODITY NEWS Agropur - System Implementation As a Canadian leader in the fast-changing dairy industry, Agropur is constantly evolving to stay competitive for its customers. In relying on innovation to exceed expectations, they are implementing a new Enterprise Resource Planning (ERP) system to upgrade its IT systems. On April 29, its Quebec Customer Contact Centre will be deployed. With this major step forward, stores will need to use their new customer number to identify themselves when dealing with the Customer Contact Centre. Agropur will make sure the transition is as seamless as possible for customers. In addition, customers who are accustomed to calling Customer Service now have the option of placing their orders online. This solution will give customers greater flexibility and independence. They can use a computer, tablet or smartphone to easily access the service and place an order at the time that is convenient for them. It’s user-friendly, intuitive and free.
