Onesti Entertainment Continues to Grow

Another proud addition has been made to the Onesti Entertainment family: The Des Plaines Theatre opened Oct. 31 to a packed house with Oscar-winning actor Kevin Costner and Modern West, his band, headlining. It was an awe-inspiring red-carpet opening with searchlights, a military salute, an opera tenor and a Louis Armstrong impersonator singing “America The Beautiful” while Girl Scouts walked flags of the world onto the stage. Then Onesti Entertainment President and CEO Ron OnPhotos courtesy of Onesti Entertainment. esti welcomed the excited crowd, thanking the city of Des Plaines and Rivers Casino, both of whom joined Onesti in a substantial multimillion dollar investment in the property. “We built it and he came,” Onesti said, referring to Costner’s character in “Field Of Dreams.” “Now, after four years of construction, everyone else can come!” The 1,000-seat, 1925 theatre was refurbished to its Roaring ‘20s splendor including Big Al’s Prohibition Tavern and Bourbon ‘N Brass Speakeasy. Both are exquisite places peppered with antiques to grab a pre-show craft cocktail, small plates or to hang out. Visitors must find the secret door on the second floor to enter Bourbon ‘N Brass, which will also feature live music. Des Pizza is a 1950s-style eatery on the first floor of the theater building. It is an homage to Des Plaines with salutes to local iconic sites, including the original Mc-

Vienna Beef Names New Top Dog Vienna Beef, the iconic Chicago brand and hot dog purveyor, announced Stephanie Esposito of Garfield Ridge in Chicago, claimed the Top Dog title by visiting all 367 participating locations in just five and a half weeks of the Vienna Beef Hot Dog Stand Challenge. From Aug. 19 through Oct. 17, over 4,300 participants traveled across the greater Chicago area, including southeast Wisconsin and Northwest Indiana, visiting as many Vienna Beef hot dog stands as possible. The challenge received over 29,000 check-ins, or hot dog stand visits, in just 60 days. Tim O’Brien, president of Vienna Beef, said, “As people were just starting to again venture out, mingle and return to restaurants, Vienna Beef set out to find a way to bring back fun, and business, to independently owned hot dog stands across Chicagoland.” The Vienna Beef Top Dog prize package includes tickets to Chicago-area sports and entertainment events every month for a year. They have a lovely bakery section; all the desserts look amazing. There are Greek cookies, fresh pastries and baklava, just to name a few. They have fresh house-made sourdough bread, full flavor with a chewy crust. I had to get a loaf of that bread to take home. They have fresh salads, outstanding gyro plates with either chicken or lamb and beef and so much more. Everyone’s yiayia would have loved this place. BEEF SHACK, 30W100 Army Trail Rd., BARTLETT, Ill.; 630-425-0900. This is the home of the Cheezy Beef. Their sandwiches come in two sizes, full and mini. I got the full-size Cheezy Beef on garlic bread with gooey melted cheese on top, seasoned perfectly, with au jus gravy. It’s a good-sized sandwich. The bread and the meat were so juicy. And, they serve fresh-cut fries that were really good. They have hot dogs, burgers, chicken sandwiches and more. Dine-in, carryout or go through the drive-thru. Check them out. They have numerous locations. PILOT STORE, 1050 Busse Rd., BENSENVILLE, Ill.; 630-521-0218. They are open 24 hours. You can gas up and even pick up some tech accessories and items for your car. The place is spotless, with plenty of tables to sit and enjoy a cup of coffee, beverage or some of their fresh pizza. They have plenty of grab-n-go items to choose from along with a ton of snacks including chips, candy, crackers and cookies. I picked up a Mountain Dew along with some Jack Link’s Beef & Cheddar Bites. This is the perfect snack to eat in the car. SMASHBURGER, 4709 W. Foster Ave., CHICAGO, Ill.; 773-669-7933. This fast-food restaurant is in a strip mall. Dine in or carryout. They are known for their burgers. I ordered the Double Classic Smashburger. It came with American cheese, bacon, lettuce and tomato. It was a very tasty burger, nice and juicy and cooked to order. To go with it, I tried an order of their Smash tots, which were seasoned with rosemary, garlic and olive oil and an order of sweet potato fries. On the menu they also have turkey burgers, chicken sandwiches and shakes. SOUL & SMOKE, 1601 Payne St. #C, EVANSTON, Ill.; 847-859-2732. One word describes this place: amazing! There is no inside seating. You order at the window and there are a few tables to sit at outside. I tried their smoked baby back ribs, which were so meaty and flavorful, cooked to perfection. And, I ordered the brisket; it was so lean. Their barbecue sauce is really good too! For the sides we had collard greens, an order of grits that were so buttery, a cornbread muffin and the house-made pickles. I highly recommend them. TARGET, 2241 Willow Rd., GLENVIEW, Ill. 847-657-0095. Every time I go into a Target store, I end up buying something. They have everything! This time I was on the hunt for all things holiday. You can pick up toys for the kids, wrapping paper and items to decorate the house. They had a big section in the back of the store with holiday treats and candies. In the Wondershop-brand area, they had festive snack mixes, candy canes and candy tins. Some of my favorite candies to pick up are the holiday-themed box of Dots, Junior Mints Peppermint Crunch and Reese’s for Christmas. I even found some limited-edition Christmas Crunch cereal. WOODMAN’S MARKETS, 1 Stratford Drive, BLOOMINGDALE, Ill.; 847641-5656. Open 24 hours, this is a brand new grocery store headquartered in Wisconsin. Built alongside the Stratford Square mall, Woodman’s Markets provides shoppers with a large variety of staple foods, produce, meat, dairy, baked goods, frozen foods, international items, organic, liquor and more. Entire aisles are dedicated to meats, cheeses and even yogurt. I’ve never seen as many brand varieties as I have at this store. The size of Woodman’s is daunting and rivals a warehouse store such as Costco. They even have two of their own dedicated gas stations outside next to the parking lot. Avocado Theory Celebrates the Flavor of a Special Fruit When Avocado Theory owner Krunal Patel worked as a produce manager at a grocery store, he was astonished to see people line up for guacamole on Super Bowl Sunday. This made him wonder how he could introduce this healthy, creamy and delicious fruit into a variety of dishes. In 2019, Patel started selling guacamole with his wife under the name Grandma’s Guacamole and Salsa Bar at the Tinley Park, Ill., Farmers Market. Uber Eats Reveals What Americans Ordered Most for Delivery in ‘21 Groceries and alcohol have become some of the most popular delivery requests in 2021, two trends that were adopted during the pandemic and are likely here to stay, according to an Uber Eats report shared with Travel + Leisure. Americans ordered everything from bananas (the No. 1 selling grocery item in the United States) to large margaritas and White Claw variety packs, according to the delivery service’s Uber Eats Cravings Report. And Americans turned to pharmacies and convenience stores like 7-Eleven to order practical things like Tylenol, COVID-19 antigen self-test kits, and — perhaps less practical — blue raspberry Slurpees right to their doors. “Over the last 12 months, our customers have relied on Uber Eats to order sandwiches, sunflowers, screwdrivers and everything in between,” Lexi Levin Mitchel, a spokeswoman for Uber, told Travel + Leisure. When it came to restaurant food Uber Eats users went for comfort as cheese fries exploded in popularity increasing more than 1,234%, compared to before the pandemic. The most popular type of food overall was Mexican cuisine, followed by burgers and sandwiches, and Chinese food. When I first moved away from my hometown, I started working at the pub-style restaurant. Favorite Food: Every time I go back to Japan, I have serious jet lag. But I enjoy Sushi & Beer with my friends when I return because it helps tremendously with that! Memorable Customers: Hideki Matsui was the first Japanese MLB MVP player in 2009. He used to come to our first location in Toronto (when he played for the New York Yankees) with his trainers. He is a superhero in Japan among everyone, not just the baseball fans. When he was visiting Kinton Ramen, he gave me the compliment of: ”Your ramen is the best in North America!” Favorite Food to Prepare: Outdoor barbecue. It’s a fun challenge time to be creative with barbecue, especially when hanging out with friends. It makes me motivated to use that creativity and bring it to the Kinton Ramen brand. What part of the job gives the most pleasure: Creating new dishes as that, in some cases, would translate to experiences. One of the most popular dishes is our spicy garlic ramen, and I got the idea when I was Sushi cook at Nami Seafood Restaurant. At the time, I had to create lunch specials on a weekly basis. I often used spicy salmon or spicy tuna, garlic teriyaki chicken or original garlic sauce because they were popular. So I got the idea of combining the two popular elements of spicy and garlic for our regular menu, but I realize that it’s about finding the best balance between recipes. I also believe that working with your team is the best part of creating new dishes. I’ve been creating new ramen dishes every month since 2012, and this, in combination with working with your staff, is the most pleasurable part of the job. If you couldn’t be a chef, what would you be and why: Baseball player. I was the best player in my hometown until grade 10. Best advice you ever got was: Enjoy the challenge and respect coworkers. When I got a first full time job after graduating culinary college, I met an elder cook at the restaurant, we got closer and he taught me how to work in a kitchen. I worked with him for four years, then he passed away due to cancer. I still remember that during the peak hours the restaurant, he was joking around, sang songs to make kitchen members relax and enjoy the busy hours, and he also emphasized the importance of working as a team. Where do you like to vacation: I like to visit to Mexico most of all! Other than family, who was your greatest culinary influence?: My ramen teacher, back in 1995. When I started working on a food truck after the great earthquake in Kobe. I was 19 years old and he was semi-retired and around 60 years old. He was very strict and an old school chef. He taught me how to make traditional pork soup and prepare the bones on the street next to the heap of rubble, which was a rewarding learning experience.

Angelo Caputo Receives Street Name in Elmwood Park The Village of Elmwood Park honored the memory of the founder of Angelo Caputo's Fresh Markets by passing a motion and designating a street sign reading Honorary Angelo Caputo Way in front of their store at the corner of Grand and Harlem in Elmwood Park. Family members and friends were present for this special occasion Oct. 14 as Elmwood Park Mayor Angelo "Skip" Saviano, with the help of Angelo's great-granddaughter, unveiled the street sign during the afternoon ceremony. Angelo Caputo died at the age of 89 earlier this year. Italian immigrants, Angelo and his wife, Romana, opened their first store, known as Caputo's New Farm Produce and Italian Specialties, in 1958 on Harlem and Wrightwood in Elmwood Park. As the company grew, they continued to give back to the communities in which they served. Elmwood Park has been a beneficiary of the Caputo family's passion, drive, and generosity since the beginning of the company over 60 years ago. "The contributions are numerous and include economic and cultural aspects," said Saviano. Angelo Caputo's Fresh Markets operates in eight locations in the Chicago area. Angelo and Romana's daughter, Antonella Caputo Presta, is president of the company, and her husband, Robertino Presta is CEO. Their five children are actively involved in the business working in various roles. "Whenever you think of Elmwood Park, you think of Angelo Caputo's Fresh Markets," said Robertino Presta. "It is a vital part of the community, it's where our roots are."

Fast-food is coming back after a 26% visit decline in 2020. And it appears many people prefer Sonic Drive-In. The popular burger joint beat out McDonalds and Burger King in a new study that looks at several fast-food restaurants and the increases they saw as the pandemic carried throughout 2020 and into 2021. And while Sonic topped burger chains, El Pollo Loco topped Mexican chains, KFC topped fried chicken chains and Papa Murphy’s topped pizza chains. Burger chains saw an overall visit increase of 54.4% and Mexican chains saw an increase of 32.1%. Fried chicken had 29.5% more and pizza chains 16.2% more. The fast-food industry is seeing a 33.06% rise, according to Top Agency, in overall business in 2021. Vermont is the state where fast-food visits have increased the most at 83%. With outdoor dining under fire in some cities, the National Restaurant Association warned the nation’s mayors that thousands of restaurants will be forced to close if town halls drop the concessions that eased adoption of the service during the pandemic. “We encourage local leaders to do everything in their power to assist restaurants in offering outdoor dining for as long as possible this winter,” Mike Whatley, the association’s vice president of state affairs and grassroots advocacy, said in a letter to the U.S. Conference of Mayors. The communication notes that the industry’s recovery from the pandemic has been set back by the recent spike in coronavirus infections from the delta variant. Research shows that 78% of the nation’s eating establishments have seen sales slow because of the surge, Whatley pointed out. The Joliet Region Chamber of Commerce & Industry announced the creation of a new subgroup under the chamber umbrella: The Joliet Region Food and Beverage Association (JRFBA) has been established after interest surfaced about forming a strong and unified voice from the food and beverage industry in the Joliet region due to the devastating impact of the COVID-19 pandemic. Chicago-based Foodworks Opens Café, Retail in Austin

After a two-year restoration, the historic French Legation in downtown Austin is reopening with the addition of a new café in the visitors center, thanks to a partnership with Foodworks, a Chicago-based food-service organization that specializes in unique dining solutions. The new café powered by Foodworks will allow visitors to stop at the coffee bar or grab a variety of quick bites and sweets while checking out the gift shop for mementos for friends and family. Illinois Athletics Adds Homegrown Restaurant in Urbana

The University of Illinois Division of Intercollegiate Athletics announced the naming and grand opening of Homegrown, the new restaurant at the Atkins Golf Club in Urbana. Homegrown will be managed and run by Wheelhouse owners Abbie and Ryan Rogiers of St. Joseph, Ill. The Homegrown grand opening for full dinner service is set for early December. Analysis: Mass Robot Potential for U.S. Food & Beverage SMEs Robot technologies — once unattainable for SMEs — are now becoming a commodity: Standardized, affordable and easier to implement. A huge range of robot technologies that were considered experimental a few years ago, are now commercially viable for small and medium sized enterprises (SMEs) in the food and beverage manufacturing sector, according to a recent analysis from global robot hub HowToRobot.com. The study estimates that robots will be a feasible option for more than 50% of SMEs within the next three years due to a global trend toward “proven robotics,” which has reduced both the cost and complexity of implementing robots. The analysis identified the three key factors driving the trend: A range of robot technologies has reached a mature stage: The global food robotics market was valued at $402.2 million in 2019, and it is expected to reach $745 million by the end of 2026, growing at a CAGR of 9.1% during 2021-2026. Prices of robot technology are falling: By 2025 prices are expected to have fallen by 76 % since 2010. Global availability of suppliers and solutions has more than doubled in the last 20 years. Commenting on the findings, Søren Peters, CEO of HowToRobot. com, said: “The robot market has reached a pivotal moment for small- and medium-sized businesses. SMEs have been hesitant to invest in robotics because of the price and complexity of the technology. Automation used to be exclusively for custom-machine builders, developing a new solution for every project. In the last five years however, many new robot technologies have reached a level of maturity and price point where they can be standardized, meaning lower cost and quicker implementation. Food and beverage SMEs can now adopt these technologies on a larger scale.” Examples of new robotic solutions entering the commercial stage include Autonomous Mobile Robots (AMRs) that can navigate freely in environments with people and handle a range of logistics tasks. Also, pick and place robots that used to handle only large volume production, can now handle small batches more commonly needed by SMEs. Additionally, the market for collaborative robots is expected to grow by 30 % per year (CAGR) from 2020-25. Other growth areas are packing, palletizing, machine tending and where SMEs often lack people or need to cut costs.

A PwC survey shows that a significant amount of people will travel during the holidays this year, reports Axios. Typically, about one-third of people travel during this time, but the survey shows more than half (52%) plan to travel. Most people will go by car (72%), and 57% with household incomes over $150,000 will fly. Though many airlines are adding flights to popular destinations in anticipation for the holidays, there will be higher prices and limited availability most likely, as demand will outstrip availability. Rental cars will also be a hot commodity. United is upping flights and will fly its busiest holiday schedule since the pandemic, but at 3,500 daily flights in December, it’s still at 91% of its capacity. “We’re seeing a lot of pent-up demand in our data and are offering a December schedule that centers on the two things people want most for the holidays: warm sunshine and fresh snow,” Ankit Gupta, vice president of network planning and scheduling at United, told Axios. Additionally, consumers plan to spend more on travel, with holiday travel spending projected to increase by 69% in 2021 over 2020. Travel is even expected to be higher this year than 2019, with average related spending expected to increase 24% to $461 from $372. Retail sales this holiday season should increase between 7% and 9%, while e-commerce sales are projected to increase by 11-15% year over year. Holiday retail sales should hit $1.28 trillion to $1.3 trillion from November to January, and holiday e-commerce should reach between $210 billion and $218 billion this season. -Source: NACS

Clarifies Requirements BUY SELL TRADE DOL Hiring in COVID-19 Aftermath NEW& USEDEQUIPMENT By Griffen Wilson

On Oct. 28, the U.S. Department of Labor (DOL) announced the publication of a new rule for tip regulations under the Fair Labor Standards Act (FLSA). The new rule clarifies that employers may only take a tip credit for tipped employees when these employees are performing work that is part of their tipped occupation. The new rule becomes effective Dec. 28. Workers can only be paid the tipped minimum, established under federal law at $2.13 per hour, for tasks that directly support tipped work and do not take up more than 20% of a worker's time or 30 consecutive minutes. Tip Credit: Section 3(m) of the FLSA permits an employer to take a tip credit toward its minimum wage obligation for tipped employees equal to the difference between the required cash wage (which must be at least $2.13) and the federal minimum wage. Thus, the maximum tip credit that an employer can currently claim under the FLSA section 3(m) is $5.12 per hour (the minimum wage of $7.25 minus the minimum required cash wage of $2.13). Under certain circumstances, an employer may be able to claim an additional overtime tip credit against its overtime obligations. Dual Jobs: The DOL recognizes that some employees routinely engage in both tipped and nontipped occupations. These are known as “dual job” situations. However, the DOL also recognizes there is a difference between employees with dual jobs and employees who incidentally engage in nontipped occupations, such as maintenance work and preparatory or closing activities. The new rule clarifies that employers can take a tip credit for the time a tipped employee spends performing work that is not tip-producing (but directly supports tip-producing work) unless that work is performed for a substantial amount of time. Tip-producing work is “any work performed by a tipped employee that provides service to customers for which the tipped employee receives tips.” Directly supporting work is work performed by a tipped employee in preparation of or to otherwise assist tip-producing customer service work. Substantial amount of time: The new rule defines “substantial amount of time” as either (1) at least 20% of the hours in the workweek for which the employer has taken a tip credit or (2) a continuous period of time of at least 30 minutes. The new rule provides a number of illustrations to help employers navigate different scenarios. Employers with tipped employees should review their current policies and procedures to prepare for the Dec. 28 effective date. DESTINATION: Mayflower Cruises & Tours’ Mystery Tour A Mystery Tour is a trip on a motorcoach that takes you to unknown places. The destination is kept secret throughout the tour, which is five days and four nights. The guide gives out clues along the way to the travelers and everyone tries to guess where they are going. All you have to worry about is being on the bus at the time specified and everything else is planned out for you. The tour begins with local pickup at your home. They accommodate Northern Illinois, Wisconsin, Indiana and Michigan. No other company offers this extensive service. Imagine beginning your vacation being chauffeured to your departure point and having the same wonderful service upon your return. Their FREE home or local pickup and return service has been designed to add ease to your holiday, allowing you to concentrate on the most important part, enjoying yourself! If you’ve been on a Mystery Tour before, then you are familiar with the game and rules on the bus. This time everyone was required to wear a mask on the bus at all times. There was no rotation of the seats; you stayed in your same seat throughout the journey. This was a very large group with 48 travelers. This time we stayed in one hotel for four nights. Many of the guests in our group had been on numerous Mystery Tours before and have gone on other tours with Mayflower. Our guide, Kileen, and our driver, Kevin, did a great job keeping everyone happy! On this Mystery Tour they had a jam-packed itinerary that kept us very busy. There was still free time on your own, too. The hotel where we stayed, the Drury Plaza in St. Paul, Minn., was recently remodeled and the rooms were very spacious. Every morning our group had breakfast there before heading out. It was nice meeting new people and chatting with ones that had been on previous tours with me. Tour highlights included:  Cranberry Discovery Center in Mathers, Wis.: We had a tour of the museum and learned about the production of cranberries, visited the gift shop and had lunch at the Cranberry Cafe.  Old Log Theatre in St. Excelsior, Minn.: Dinner and a show, “The Play That Goes Wrong,” a classic murder mystery full of mishaps and madcap mania. It was so funny!  Skyrock Farm and Carousel in Medina, Minn.: Art, history, farm, horses, carousels all in one place. We saw a horse jumping demonstration, took a tour of the carousel building and listened to music on antique dance organs, followed by a sit-down dinner for our group.  St. Paul Cathedral in St. Paul, Minn.: Tour of the cathedral dedicated to Paul the Apostle, who is also the namesake of the city of St. Paul. It is the third-largest Catholic cathedral and sixth-largest church in the United States.  Taylor Falls Scenic Boat Tour in Taylor Falls, Minn.: This 115-year-old business, founed in 1906, is family owned and operated. The scenic, narrated boat tour along the St. Croix River had stunning views of the rock formation along the way. Lunch was served on the boat. These are only a few of the places that we visited. I will keep the rest of them a secret. One thing I know that everyone will agree with on this tour is that there was never a shortage of food. We were always eating! On our route home we made a stop at Ehlenbach’s Cheese Chalet in DeForest, Wis., where we were able to shop and everyone in our group got a bag of their famous cheese curds.
