City Barbeque was founded in Columbus, Ohio in 1999 with a handful of recipes from a winning barbeque competition team. They’ve since grown to 35 locations (soon to be 43). City Barbeque opened their first Chicagoland location in Berwyn in 2017; that location will be joined this year by new joints in Orland Park, Deerfield, Downers Grove, Vernon Hills, and Park Ridge. Every day, at every restaurant, they slow-smoke award-winning barbeque and craft homemade sides and desserts. City Barbeque’s collard greens start the day as fresh greens; their fanfavorite fries are cut in-house daily and fried to order; and their scratchmade peach cobbler, served with handwhipped cream, is plenty big enough to share (but good luck finding someone willing to share it!).

The Illinois Food Retailers Association has announced that they have teamed up with Food Industry News to present the first Illinois Food Industry Trade Show, taking place Thursday, September 27, 2018, at the Schaumburg Conference Center, Schaumburg, IL. The new show will bring together both food retailers and restaurant operators to taste and learn about new ways to make their businesses more profitable. “This is an ideal opportunity for attendees to experience new food and beverage trends, technology, services and equipment in a more intimate setting than a national show,” said IFRA President Brian Jordan. “Supermarkets are always looking for new ways to engage customers and stay ahead of the ever-increasing sophistication of the American palate. As a result, they are adding or expanding ready-to-eat food service offerings as another way to attract customers.” The new show also offers expanded trade show hours for vendors and buyers and educational programs in the form of mini-workshops taking place throughout the trade show floor. “Both food retailers and restaurant operators are going to like this new concept for the show,” Jordan continued. “Two major segments of the food service industry can come together to learn about new cutting edge technologies and products all in one day, while they network with others who are involved in food service, as well.” Information and registration for the show can be found at www.ifraevents.com/. A Message From Our Publisher Welcome NRA to Chicago. The National Restaurant Association Show will be held from May 19-22, 2018 at McCormick Place in Chicago, IL. McCormick Place is the largest convention center in North America, approximately 2.5 miles south of downtown Chicago. While in Chicago, take some time to visit some of the top tourist attractions. A visit to Navy Pier is a must. Navy Pier, a Chicago Landmark is located on the Chicago shoreline of Lake Michigan with attractions, shops and restaurants. Take a ride on the Centennial Wheel or take a dinner cruise aboard the Odyssey or Spirit of Chicago. The Sydeck Chicago is another highly recommended landmark. Located on the 103rd floor of the Willis Tower, step onto a glass Skydeck for an incredible view of the city. Take an Architectural River Boat Ride on the Chicago River. Ride on one of the Hop-On-HopOff Trolleys & Double Decker Bus Tours Chicago with multiple routes and stops. Take a walk and enjoy the grounds of Millennium Park. Visit a museum which include; the Art Institute of Chicago, Adler Planetarium, the Field Museum, the Museum of Science and Industry and the Shedd Aquarium. Take time for some shopping at the Water Tower Place and on Michigan Avenue. Chicago is known for its hot dogs, Maxwell Street Polish, pizza and Italian beef but there is so much more. The food scene in ,Chicago is very diverse. It is a dining mecca with American, Asian, BBQ, German, Greek, Italian, Polish, Middle Eastern, Mexican and the list goes on and on. Chicago is a meat town too. We have some of the finest steakhouses in the country. The donut trend has seen numerous shops opening around the city. Nightlife includes comedy clubs, theaters, and live music venues including a big country music presence. In the city there are numerous rooftop bars with spectacular views along with sports bars, craft breweries, whiskey bars and the local favorite neighborhood hangout. Enjoy your stay in Chicago! Dunkin’ Donuts will start testing a catering program today at seven Boston-area stores with an eye on taking it national. The success of separate catering programs established by Dunkin’ franchisees and DoorDash spurred the company to test the concept, said Sherrill Kaplan, Dunkin’s vice president of digital marketing and innovation. - Boston Herald The Krystal Co. named longtime industry executive Paul Macaluso the chain’s new CEO. Sugary foods spike your sugar levels quickly and leave you drained and vulnerable shortly thereafter. Eating something that provides a slow burn for your body, such as whole grain rice or meat, will give you a longer window of self-control. #3 – Exercise Getting your body moving for as little as 10 minutes releases GABA, a neurotransmitter that makes your brain feel soothed and keeps you in control of your impulses. If you’re having trouble resisting the impulse to walk over to the people next door to let somebody have it, just keep on walking. #4 – Sleep When you are tired, your brain cells’ ability to absorb glucose is highly diminished. #5 – Ride the Wave Desire has a strong tendency to ebb and flow like the tide. When the impulse you need to control is strong, waiting out this wave of desire is usually enough to keep yourself in control. The rule of thumb here is to wait at least 10 minutes before succumbing to temptation.

Dinova, Inc., a business dining marketplace, is celebrating another year of positive growth with the release of its 2017 results. Significantly, Dinova reports that its annual business dining spend under management surpassed $7 billion in 2017, a milestone for the nine-year-old startup. This increase comes on the heels of a great fourth quarter, in which overall spending through the company’s marketplace increased 24% over Q4 2016. For the year, the number of transactions in the entire Dinova marketplace increased by 22% compared to FY2016. Business dining is the third largest travel and entertainment expense category for enterprise and small to medium sized businesses, and it’s the most undermanaged. Dinova companies seek to harness this expense category by participating in the program. Aptly, in Q4 2017, Dinova’s enterprise accounts saw a 17% increase in marketplace spend and participating restaurants saw a 6% increase in average check size. While the restaurant industry at large saw little growth in the first 3 quarters of 2017 and a small uptick at the end of the year, it still wasn’t a good year overall. In contrast, Dinova partner restaurants saw increased traffic throughout the year from a 20% increase in marketplace spend. Competitive nature They’re competing for jobs thinking that they need to beat the next guy or girl to get there. “If you want something done right, do it yourself” is often their motto once they land the job. Ernst & Young ran a multigenerational survey of 1,800 people in the U.S. in order to gain insights into Gen Z and found that the majority of them have a “doit-myself’ mentality. 2. Entrepreneurial spirit This generation has watched people their own age begin successful businesses, so they are are eager to work on independent projects. Managers should encourage them to think beyond their job descriptions in an effort to keep them engaged and help them feel loyalty to the company. 3. Benefits that matter They are more about health care plans and 401(k)s. New, younger employees may not know how to manage these new benefits and may need some guidance. They will feel the loyalty of the company when they are given the opportunity to learn. 4. Let’s talk Older employees may vote for virtual meetings, but Gen Z workers enjoy ongoing face-to-face contact. They want to stay engaged. Proof of this is the increase in open workspaces and creative work areas used by startups and technology companies looking to bring in younger talent. 5. Structure Experts say Gen Z-ers like structure in the workplace. They are less likely to enjoy a mobile office at Starbucks. They like expectations in their setting. They like to feel connected to their workplaces and to co-workers. Don’t micromanage them; you’ll lose them. 6. Feeling safe Many in this group saw their parents struggle with financial hits experienced during the most recent economic downturn. Therefore, they want to know there is a future for them at their place of employment. Managers should outline their career path to help them realize there is a future. 7. Multi-tasking to the max It’s quite normal for them to go from one task to another. This can be perfect for a workplace that requires multi-tasking. This group grew up writing a research paper and briefly checking their phone for a few seconds to look at a picture and then return to the task at hand. Some experts say the younger employees don’t have as much of a harsh delineation between work and home, and this could change the workplace even more in years to come. 8. Office etiquette As with any generation coming into a new job, setting workplace rules is essential. Discussions should take place about the dress code, for example. Rules about how much time should be taken for lunch and breaks should also be communicated. 9. Writing tips The younger generation is often more about texting and social media than writing emails and letters. Survey: Millennials Want More Ethically-Sourced Food Options Ethics On the Go, a new report from Culinary Visions Panel’s Mindful Dining Initiative™ project, finds younger consumers to have increased expectations for ethical snacks and grab-and-go foods. In this study, 1,500 US consumers were surveyed about their attitudes towards ethically-sourced foods and how it impacts their dining choices of portable and grab-and-go foods outside the home. The study finds that while all consumers care about ethical eating, consumers under 35 years pay the closest attention to responsible practices behind menus. The report found that the 18-34 year demographic valued ethical eating choices much higher than any other demographic. Where 50% of general consumers agreed organic foods tasted better, 60% of consumers under 35 equated organic foods with better taste. Ethical efforts made in foodservice - from vegan food options to composting on-site - is the new cool “it” factor for Millennial consumers who have to navigate multiple dining options. 76% of consumers under 35 equated ethical efforts made by restaurants as trendy.

Home Costs Keep Climbing

The median home price (half of all homes sold cost more, and half cost less) as of December 31 was $232,000. That was $20,000 more than at year end 2016, reflecting strong demand by buyers for a scarcity of homes for sale. Sales of existing homes rose by 1.1% in 2017, to 5.51 million, and will rise by a smidgen in 2018, according to the National Association of Realtors. Nationwide, the number of existing homes for sale fell in 2017, and the year ended with a historic low of 3.2 months’ supply (the time it would take to sell the current number of homes on the market at the current pace). That favors sellers; six to seven months’ supply is considered balanced between buyers and sellers. –Money

Tips and Insights From Certified Master Chef Stephen James Miller When I look back at my career that started at age 15 and now spans 47 years, I reflect that the industry and dictatorial instructor chefs understood it was their responsibility to lay out and instill a basic foundation of knowledge and practices that would stay throughout a career. I was taught the following about our primary tools, knifes and a butcher steel. ■ Never catch a falling knife. ■ Never point with a knife. ■ Wash, rinse, sanitize your knife between tasks and switching ingredients. ■ Walk, never run with a knife Walk with a knife with the point facing directly down to the floor. ■ If you are giving a knife to another person to use, lay the knife on a table with the point facing away, this will allow a person to pick the knife up safely themselves. ■ Never work on a cutting board with other knifes or implements on the board while you cut; learn to cut smoothly this will allow the knife edge not pressure to do its job. ■ You cannot sharpen a knife on a butchers steel, you can only keep it sharp. Get in the habit of using the steel every 10 to 20 cuts because it will keep the knife razor sharp. ■ Knives that have the edge maintained on a steel will only need sharpening on a grindstone 1 to 3 times per year. ■ Get in the habit of holding your knife each and every time you use it at a 45 degree angle to the work surface. Once formed, the habit will result in more accurate presentable cuts. ■ Use the right knife for the job. ■ When using the butchers steel, grasp the steel firmly and ensure your fingers and guide are behind the guard. When you steel the knife the entire blade from heel to point should whisper (not clang) along each side of the steel. Build speed once you have mastered the basics. Noisy sharpening damages and dulls the blade. If our team members took these simple rules to heart perhaps our actions would pay homage to those who went before us, they had the vision to give us a safer, more comfortable and productive understanding in regards to using knifes and the butcher steel, our key tools. In teaching we learn! Happy cooking colleagues! Movie Set Designers Hit Restaurants Kris Moran had five months to source props for Wes Anderson’s 2001 film The Royal Tenenbaums, including three to prep. The set designer did interiors of the Bombay Bread Bar restaurant in one week. Hollywood and Broadway’s best set designers are turning miracles for top restaurants. With experience with working with tight time frames and budgets, hiring the wizards of stage and screen proves to be amazing. Who’s doing this? Roman and Williams principals Robin Standefer and Stephen Alesch designed the sets for such films as Practical Magic and Zoolander. Yet they’ve become renowned for their restaurants, including Le CouCou, which re-introduced New York to fine dining, with grand chandeliers, enough candles to light up a medieval palace, and a kitchen awash in copper. When the Times Square institution Bond 45 reopened in fall 2017, it did so with the help of David Korins, the Tonynominated scene designer for Hamilton and War Paint, as well as Dear Evan Hanson. For the upstairs room, Korins recreated the feel of the former restaurant, with tiled floors and mirrored walls, as well as a marble island adorned with antipasti platters. In the subterranean downstairs space, he managed to create the vibe of an Italian patio, with video installations of the Mediterranean and an abstract star field of light bulbs overhead. David Rockwell, a trailblazer in the hybrid world of restaurants and theater design, concurs, but with a caveat. His Rockwell Group has designed dozens of restaurants, including the new Union Square Café and Nobu downtown; he has also won a Tony Award for the set design of She Loves Me, and his newest project is Broadway’s upcoming Lobby Hero.

RPM On The Water, a dramatic four-level restaurant and events venue, is slated to open on the north side of Chicago’s downtown riverfront at 321 N. Clark Street RPM in summer 2019. This marks the fourth collaboration for the RPM Restaurants team of partners, celebrity couple Bill and Giuliana Rancic, acclaimed chef Doug Psaltis and siblings R.J., Jerrod and Molly Melman of Lettuce Entertain You Enterprises (LEYE). The building that RPM On The Water will occupy is part of a $50 million building upgrade with global real estate developers Hines. Levy Family Partners, Diversified and American Realty Advisors who are working with architecture firm Goettsch Partners. Awardwinning architecture and design firm Rockwell Group will do the restaurant’s interiors. “A project of this magnitude is a true team effort, and we’re lucky to work with the best of the best,” says R.J. Melman, partner and president of Lettuce Entertain You. “This includes the premier ownership group as well as two of the world’s best design teams, Goettsch and Rockwell Group,” Melman adds. RPM On The Water will house three separate venues including an upscale bi-level restaurant, a private events space and a yet-to-be-named casual concept, all with outdoor areas and expansive views overlooking the Chicago River. There will also be boat slips for those arriving via waterway. “This latest restaurant in the RPM family will focus on high-quality seafood and more, in addition to the exceptional wine program and impeccable service for which the brand is known,” says partner Bill Rancic.

Boomers Are Helping Kids Pay the Bills Nearly half of millennials said their parents helped them financially in the past year and gave them $2,543 on average, according to a recent survey. But they might be getting more support than they realize — or want to admit. See the financial gap between the boomer and millennial generations. Grandparents said they provided their children with $4,527, on average, in the past year. Rent/mortgage: The biggest bill boomers helped pay was the mortgage or rent. The 15 percent of millennials who got help with housing reported receiving $2,033, on average. Boomers reported providing $3,462 in support, though. Car payments: The survey found that 14 percent of millennials said they got help making car payments and received, on average, $787. Parents said they gave their adult children $2,239, on average, for car payments in the past year. Groceries: Almost a quarter of millennials said their parents help them pay for groceries ($423, on average). Boomers said they gave their kids $898, on average, last year. Utilities: Fifteen percent of millennials received support from their parents for utility bills and got $408, on average. Parents said they gave their children $607, however. Cellphone: Almost 20 percent of millennials said their parents help them pay their phone bills. On average, they said they received $262. Parents, though, reported giving their children twice as much — $547, on average.
