This month, Kizuki Ramen & Izakaya (formerly Kukai Ramen & Izakaya) will be adding a mini “Ramen Museum” to their Wicker Park location in Chicago. Customers will walk through the roughly 100-square foot museum before entering the restaurant. Often this can become a win / win situation for both the venue and the artist. Providing a chance for the artist gets exposure which hopefully leads to sales or other opportunities. While a restaurant’s primary motivation to display art is to enhance their decor with amazing art, which will make their space more appealing to their customers and help them do more business. As a restaurateur seeking out artists, it may be as easy as attending a local art fest and simply just asking artists if it’s something they would be interested in doing. Often times that sort of inquiry will be very well received. If a restaurant or business is able to rotate artwork every few months the benefits are that it usually won’t cost the restaurant any money, the venue won’t be permanently stuck with the art had they purchased it outright, as well as every few months you can have a totally new collection on display to share with your customers.

John Hanke, the technology whiz behind Pokémon Go, was an increasingly restless Google employee (he launched Google Earth, among other things) and his company, Niantic, was an overlooked gaming division. As Google reorganized itself into Alphabet, Niantic looked likely to be shut down. But Google had the wisdom to let Hanke seek outside investors and spin the company out. Hanke approached Nintendo and created Pokémon Co., which oversees the brand’s intellectual property, and made the smartest mobilegaming deal of all time. Google owns almost 30% of Niantic, whose game might hit $5 billion in annual revenue. Not bad for a business just inches from the corporate scrap pile.

Dangers Lurking in Your Frying Oil
Nitro Cold Brew

Chefs and restaurant owners rarely consider frying oil a potentially hazardous food or something that can drastically impact their food quality, but they should. However, some food service operators are unknowingly poisoning customers and destroying their business by using old, rancid, unfiltered or spoiled oil to fry food. According to Felix Amrhein of VITO Fryfilter, “The real problem is the unseen micro-particles in frying oil. They are one-tenth the size the thickness of a human hair. These unseen particles are what break down oil and make people sick. In the U.S. the quality of frying oil is not a high priority point when checking restaurants.” Amrheim continued, “In Europe it is a common practice for health inspectors to check the quality of the oil. If it does not meet their standards, the restaurant is either closed, shut down or fined until the problem is corrected.” The expert in worldwide oil filtration is VITO oil filter systems. VITO is used worldwide to filter and measure frying oil and extend its life by 100%. According to Sascha Geib of VITO Fryfilter, “Having clean oil and higher quality food is critical to the success of American restaurants, specifically in the Chicagoland Market because of the high level of competition and concentration of food service operations. 500 Restaurants Talk Technology: Good and Bad
A new survey of more than 500 restaurant operators was sponsored by American Express. The report’s key findings show: ■ 81 percent of restaurants use a POS or electronic register system. ■ 68 percent of restaurants offer Wi-Fi for guests. ■ 37 percent of restaurants offer online ordering. ■ 32 percent of restaurants accept mobile payment. ■ 53 percent of restaurant operators say they would implement predictive ordering technology if it were available to them today. ■ 37 percent of restaurant operators believe customer ordering is the most important area of technology development in the next five years. ■ 32 percent of restaurant operators consider their operations to be lagging when it comes to technology use. ■ 12 percent of operators consider their operations to be leading-edge. Operators say that costs in various forms remain the primary barrier to implementing more technology in their operations. About half say it also makes the customer experience more complicated. The NRA fielded the survey in Spring 2016.

Urban Legend/Myths and Legends was Illinois’ first all-electric brewery as well as one of the state’s smallest production breweries, allowing us to stay flexible and maintain high quality while still maintaining the capacity to service the majority of Illinois. An early strong focus on American styles laid a solid foundation to build a wide repertoire of beers, which now range further into European styles. What has your biggest challenge been with your brewery? Our most recent challenge has probably been our biggest. In recent months, like so many of our fellow breweries, we’ve had to undergo a name change. We were fortunate enough to have friends in the industry who have recently had to do the same and were able to give us some sound advice and guidance, but it’s always a painful process to have to re-brand something that’s already well established in the market. Where do you get your inspiration for new items? Inspiration comes from a lot of places, and that’s how we like it. Our brew master makes a point to try anything and everything he hasn’t sampled before, and loves to brew up new styles. Sometimes inspiration comes from a tasty brew, sometimes from a meal, or even an off-handed comment from a friend (that’s how we wound up with a Chocolate Habanero Stout!). Keeping an open mind and a willingness to try something new has no doubt been one of the most important things. Are your products sold wholesale to on and off premise buyers? Yes, we sell kegs of all the beers we brew as well as 22 oz bottles of select styles What types of products do you produce (stouts, ales, IPA’s, etc) We produce an extremely wide range of beers, ranging from traditional IPAs, cream ales, and stouts, to experimental batches and flavor infused seasonal beers. The best reason to try brewing something new is that we haven’t tried brewing it before. What package sizes do you offer? ½ and 1/6 BBL kegs and 22 oz bottles. What is your brewery’s signature item? Keeping a wide range of products has been a signature of ours for a while, though we have as of late found a niche with our Session IPA, Battra. What seasonal products do you brew? While we keep a small amount of all our beers available year-round, we tend to focus on certain ones during the seasons they’re best suited for. Sweet snack cravings can be satisfied across multiple categories in a convenience store. General Mills Convenience & Foodservice recently conducted a survey among c-store consumers to better understand how shoppers are buying sweet snacks throughout the day and the needs that each sweet snack meets. “While consumers tend to place more focus on health in this day and age, sweet snacking is not slowing down when it comes to convenience stores,” said Kelly Kees, consumer insights researcher at General Mills Convenience & Foodservice. “C-store shoppers still want to indulge and are seeking out sweet treats that deliver on great taste and also have some elements of nutrition, like nut butters, fruit flavors or real foods.” Among the key findings, more than two-thirds of c-store sweet snacks are purchased on impulse and the majority of sweets satisfy afternoon and evening cravings: n 65% of c-store food and beverage purchases are unplanned and purchased on impulse once seen in the store. n 48% of shoppers eat c-store sweet snacks in the afternoon and 14% of shoppers eat sweets to satisfy evening or late-night cravings. – Adapted from nacsonline.com

Here is a simple way to extend the shelf life of your autumn bounty. 1: Dry It. Drying food is one way to make an overwhelming abundance of produce fit into a couple of jars. If you were overzealous at the orchard, try making apple chips. Sprinkle thin slices with lime juice, then cook them at 225˚ F until crisp, or about 2.5 hours. 2: Freeze It. Freezing veggies seems simple, but if done wrong, it can leave produce limp and tasting odd. Prevent that by blanching vegetables such as carrots or peas. Dip them in boiling water for one to two minutes, then plunge them into ice water. Dry the veggies, then spread them on a cookie sheet. Once frozen, transfer them to a freezer bag. It should have clear guidelines around the services you promise to perform as well as payment terms. n Make it easy for customers to pay. The Chicago Craft Beer Networking Group comes together about every 6 weeks for craft beer and networking. They meet at local breweries and craft beer lovers and those in the business attend for great conversation, delicious beer and networking fun. The Whisky Jewbilee Chicago is a Kosher catered premium whisky event focused on fine spirits and cigars, open to all whisky lovers. To the right they had a case with pastries in it. I tried a few different ones; the Quesito, a light pastry filled with cream cheese, some corn bread and the strawberry strudel, which was so moist. They have a counter area where you can order coffee and they serve sandwiches. FRANK’S DELI 7971 Lake St. RIVER FOREST, IL 708-689-0269. First off, their staff gets a high mark for their excellent customer service. This is a convenience store with all the regular staples including some Italian specialties. They have a deli area where they make fresh sandwiches and they have pizza. I ordered a roast beef sub sandwich. You can also pick up chips, drinks, candy and whatever essentials you need there. PEELED JUICE BAR 940 Church St. EVANSTON, IL 847-424-1022. Fresh made pressed juice and smoothies made to order. The cold pressed juice smells so good and it is so healthy for you. They also offer a nice selection of acai bowls. Across from the counter they have a case with an assortment of bottled juices and prepackaged salads. I recommend trying the taco salad. PILOT PETE’S 905 W. Irving Park Rd. SCHAUMBURG, IL 847-8915100. This restaurant and bar is located in the Schaumburg Airport. You are facing the runway so you can see the planes taking off and landing. The walls of the place are adorned with an extensive collection of airport and flight memorabilia. This is a fun place to take the family and the food is really good. On the menu Wednesdays and Fridays they have an all you can eat “Fish n Chips”. It’s fried cod, plus it comes with coleslaw. RED HEN BREAD 736 Lake St. OAK PARK, IL 60301. If you haven’t tried Red Hen Bread then put them on your list to check out. They really make the most amazing breads. Fresh bread is always at the top of my list. I got one of their plain baguettes and a loaf of the multi grain. Other choices include brioche, ciabatta, pumpernickel, cranberry multigrain to name a few. This is a bakery and café offering beverages, sandwiches and desserts. SERRELLI’S FINER FOODS 6454 W. North Ave. CHICAGO, IL 773-2377530. Family owned and operated since 1934. Italian Deli & Grocery and they have a Beef Stand inside the store where you can get sandwiches to go. They are known for their Italian Beef. You can pick it up at the store or you can order online at serelli-st.com and have it shipped anywhere in the U.S. Packages can include a bucket of beef & gravy, rolls, homemade Giardinara and sweet peppers. They have Italian sausage and meatballs too. This is an ideal gift for any foodie. SLICE FACTORY 421 N. Harlem Ave. OAK PARK, IL 708-725-3500. This is a small place. On display they had four 30’inch size pizza pans with different kinds of pizza. They serve a jumbo slice of pizza, and I’m not kidding, its super-size thin pizza. The guy working there asked me if I would like it sliced, so he cut it up in squares which made it easier to eat. I tried the tomato basil pizza; it was light and flavorful. They also have wings. WORLD MARKET 1725 Maple Ave. EVANSTON, IL 847-424-1022. This is neat market to check out. You can pick up some accessories for your house and some specialty food products. They have a big selection of imported candies and cookies along with spices, oils and sauces. They have a section with coffee and tea and they even sell beer and wine there. I picked up some peppermint vanilla sugar free mints in front by the registers.

Create a Safe Workplace for All Employees
A manager’s responsibility for workplace safety goes well beyond exhorting workers to follow safety rules and enforcing violations when they don’t. You’ve got to motivate your people to protect themselves and their co-workers from injury before it happens. Here’s how to get started: ■ Listen. Don’t just talk about safety. Listen to your employees’ questions and concerns. Ask them to help you improve safety measures. They’ll be more invested in rules and procedures they’ve had a role in shaping. You won’t have much credibility telling people to adhere to safety procedures if you ignore them yourself. ■ Reinforce good practices. Praise employees for bringing hazards to your attention. You won’t spot hazards by sitting in your office. Chicago Residential and Commercial Real Estate Trends
Chicago residential market began 2016 with fewer homes on the market than at any time in at least nine years. Declines in the inventory of homes for sale are the result both of fewer sellers listing their homes for sale, and of those that are for sale being snapped up quickly. Rents at top-tier Chicago apartments downtown hit another high in the first quarter, extending an upswing that began in late 2009. Rents keep rising even as developers keep building (Correlated to Barclays' Skyscraper index suggest after construction booms, economic downturns historically follow). The average effective rent at Class A downtown buildings rose to $2.98 per square foot in the quarter, up 4.56 percent from a year earlier. The Chicago industrial market is strengthening, led by the formidable distribution and logistics sector, as well as the metro’s growing tech industry. Already, vacancy has dropped to the lowest level in more than 10 years. The rate is especially tight in the suburban markets, at 8.6 percent at midyear. Older buildings in the River North area, including the Fulton Market Cold Storage facility, are being re-purposed into offices aimed at luring tech companies (Chicago tech-sector jobs rose 16 percent between 2009 and mid-2014). The conversion of additional industrial buildings in the neighborhood will likely follow, further depleting stock. As rents and land values increase nearby, many of the existing industrial users are relocating farther south to lower expenses. While the overall real estate market is significantly stronger than just a few short years ago, many economists predict an impending economic downturn sometime in the next few years. The real question is how your real estate is positioned and what is your strategy to take advantage of the next real estate cycle.
