The Gin Commission: an intimate, gin-focused cocktail bar from Lettuce Entertain You recently opened in the lower level of Quality Crab & Oyster Bah at 1962 N. Halsted in Chicago. The Gin Commission will be open Fridays and Saturdays and offer a curated list of more than 50 gins from around the world. Leading the beverage program is industry veteran Kevin Bratt (of Joe’s Seafood, Prime Steak & Stone Crab) who created a menu that features both classic and unique inter pretations of the spirit, as well as an extensive Gin Tonic program. And yes, we said Gin Tonic – not Gin and Tonic. The Gin Commission is inspired by the coastal regions of the world where there are no ampersands or “ands” to be found on the menu.

BACKYARD GRILL • 6355 N. Pulaski Rd. CHICAGO, Ill; 773-478-8802. This is a good-sized restaurant with a big menu; hot dogs, burgers, sandwiches, salads and they offer catering. Greek specialties include homemade spinach pie, delicious Greek salad, homemade gyros and homemade soup. Their chicken skewers were my choice served with Greek potatoes, rice, vegetables and a pita. I ordered some ribs too, and those came with mashed potatoes, garlic bread & coleslaw. They give you plenty of food!

JOHN’S DONUTS • 1570 Bloomingdale Rd. GLENDALE HEIGHTS, Ill; 630-653-1161. This is a small donut shop that serves donuts all day. You can order donuts to-go, or for delivery. I went inside and ordered from the nice gentleman that was eager to help me. I ordered a half dozen donuts, which consisted of a chocolate long john, double chocolate glazed, French cruller, Boston creme, raspberry filled and a coffee roll. They also make specialty donuts upon request such as S’mores and M&Ms donuts.
HERM’S PALACE • 3406 Dempster St. SKOKIE, Ill; 847-673-9757. This is a neighborhood staple offering all your fast food favorites; hot dogs, burgers, chicken, Italian beef & sausage. Plus, they have pasta, chicken, steak and a big selection of sandwiches that include salami, pastrami, Reuben and turkey. I ordered a corned beef sandwich on rye with mustard, pickle and a side of cole slaw. I also had a Super Taco on pita that had ground beef, lettuce, tomato, and cheese; and an order of fries. The man at the counter taking the orders was amazing; he would take your order and not even write it down because he remembered it.
BAKERS SQUARE 5220 N. Harlem Ave. CHICAGO, Ill; 773-792-8481. This location is open for dine in and carry out. They serve breakfast, sandwiches and so much more. I was searching for a coconut cream pie and I was so happy that this location had one. The pie filling is so light and creamy and it was topped with whipped cream and coconut. I also picked up a slice of the triple berry pie too. They have a nice selection of pies. My other favorites include the lemon and apple pie.
TOMMY’S RED HOTS • 1574 Bloomingdale Rd. GLENDALE HEIGHTS, lll; 630-668-9733. This is one of six locations that offers a diverse menu for dine-in, carry out, and catering. They’re famous for their 8” sandwiches, salads, and hot dogs. They also have dinners including pasta, gyros, baby back ribs, fish, and shrimp. Sides include chili, mac and cheese bites, battered mushrooms and more. I ordered the Smokehouse burger which came with BBQ sauce, American cheese and onion rings on the burger. I got my meal as a combo with fries and a drink. The burger was cooked spot-on and the fries were nice and crispy.

HAROLD’S CHICKEN • 5N105 IL 53 ITASCA, Ill; 847-773-6112. This is a small place with a delivery counter in which you order and pick up your to-go orders. This is yet another location carrying on the Harold’s Chicken tradition that started in 1950 in the south suburbs of Chicago. They serve a variety of fried chicken, fish, gizzards, wings, fries, slaw, mushrooms and more. From their menu, I chose the half chicken mix, which was a 4 piece combo of (white and dark meat) chicken with a side of fries, slaw and hot sauce on the side. The chicken was hot, juicy, and it had just the right amount of crunch. You’ll want to pour that sauce on your chicken, because it makes it all the more tasty!
WINDY CITY MARKET • 3340 N. Pulaski Rd. CHICAGO, Ill; 773-685-3605. For a small store they have mastered filling every inch of space. The produce department was amazing. They had plenty of packages of cut up fruits and a cooler full of packaged ingredients cut up for guacamole and salsa. In the back of the store at the meat department there was such a good vibe going on: happy customers talking with the employees. You can find all your grocery staples here along with some unique products. I had an excellent shopping experience here!

Processes that track inventory from the moment it arrives until it’s prepared for your customers is essential for controlling costs, and that applies even more so to alcohol, and specifically, liquor. Ensure that you know weekly what is coming in and what has been used, and then address any discrepancies immediately. When it makes sense and is possible, order liquor and other alcoholic beverages in bulk. This eliminates excessive fees for partial cases or extra delivery fees. These days, profit margins for many restaurants and bars can be thinner than a rosemary sprig garnish, so any way to cut pour costs can help. This guide offers some suggestions for cutting down on pour costs while still offering a great cocktail program to guests.
Pre-Made Cocktails
List beer and simple cocktail drink specials with happy hour and appetizer foods. This allows happy hour customers to enjoy a range of their favorites without a classic entrée. Best of all, it allows under standing of what items you need in bulk to earn the highest return rate. List a detailed wine and sophisticated liquor drink menu with premium entrées and dinner specials. This encourages a higher price point for alcohol sales, with either a bottle of wine, a moderatelypriced glass of wine, or a custom-made cocktail featuring only premium liquors and ingredients.
Over the last couple of years, it’s been clear that fluctuations can be devastating in restaurants. Alcohol sales are no exception. If your prices have not fluctuated with the changes in the overall economy, it’s time to take a hard look at the numbers to see if your alcohol prices are in balance. If you are looking at increasing prices, it may be helpful to reduce the time period for happy hour, or only have drink specials on certain nights instead of every day at 5:00. This will also eliminate over-consumption and other issues that arise with extended drink specials.
Once considered taboo, there’s a new generation that actually pre fers non-alcoholic drinks. So why not capitalize on that opportunity? Let the creative juices flow for your servers and bartenders to create delicious drinks that mimic classic cocktails. This results in an upsell for you and an improved experience for your restaurant guests.
Consistency is key when it comes to tracking alcohol sales, mean ing that the guidelines for alcohol pours are followed for every pour made in the restaurant. By setting a target pour size, you can anticipate and control the costs for standard drink prices, as well as happy hour specials and other drink specials.
Efforts to reduce inconsistent pours and overpouring are as simple as pre-measuring ingredients ahead of time. Having bartenders or servers take time before their shift starts to make enough base liquors with other ingredients will ensure a consistent pour and leave less margin for errors, such as spilling.

R. Jelinek continues a more than 400-year tradition of Wallachian fruit brandies production. Thanks to its climate, the Vizovice region of Czech Republic is one of the best in the world for growing plums – that is why the production and subse quent processing of these fruits has always been an important part of local farmers’ lives. The master dis tillers of R. Jelinek produce their flagship product Slivovitz, a triple distilled plum brandy, aged for five years. The firm produces several products including the traditional clear, gold aged in oak casks and the single-variety unblended, all of which are kosher. These superb brandies are produced from the best assortment of late-harvested plums. The triple distillation and patient aging process gives a gentle taste to this brandy. The R. Jelinek Bohemia Honey is a distinctive product which is the result of blending together aged plum brandy with pure honey. This product won a Gold medal in the 2019 Honey Spirits Competition. He would put a smile on everyone’s face when he came in. The corner where he sat has a plaque that says “Chet’s Corner” in honor of him.

Sherwood, Little Caesars vice president of franchise development, said in a statement. This growth follows a record sales year for the chain in 2021, Forbes reports.
