DINING WITH

August 2024

BUFFALO GROVE RESTAURANT & ICE CREAM PARLOR 1180 W. Lake Cook Rd. BUFFALO GROVE, IL 847-808-1120

Full service restaurant serving breakfast, lunch and dinner along with desserts. They also have a case with tubs of ice cream. Check out their flavors. That was the reason I stopped in; I was in the mood for some ice cream. I ordered a Strawberry sundae, choice of ice cream- mine was vanilla and it came topped with whipped cream, a cherry, wafer cookie and a cute pink umbrella. My friend ordered some split pea soup and he raved about how good it was. Their staff was very friendly.

Food Shoppers Seek Authenticity

Millennial consumers who grew up with highly-processed foods have changed habits by purchasing clean-label and organic products and even using food items as social signalers in their homes and on social media, Snaxshot founder Andrea Hernandez said during a session at the Summer Fancy Food Show. In contrast, Hernandez said Gen Z is focused on the validity of claims, making their own decisions and seeking out authentic products. –

FRANK’S BACKYARD BBQ • 13106 Wicker Ave. CEDAR LAKE, IN 219-552-1275. This is the kind of downhome neighborhood BBQ place that you could eat at every day. The menu is large enough to give you a bountiful bevy of BBQ specialties you will want more of. My favorites are the brisket burnt ends and the smoked turkey. It’s best to come early because they always sell out. They offer some unusual sides including smokey beans and smokey cabbage. The sauces, sides and entrees are all made from scratch, in-house. So good!

KONG DOG • 5220 Fashion Outlets Way Rosemont, IL 224-534-9099. They are located in the Food Court at the Mall. This is how you order – select the Kong Dog flavor you want then choose your filling by letter. They have quite a few choices. I tried two of their Kong Dogs; the first was the Original which was sweet & savory with the beef sausage filling and the second was the Sweet Chili Doritos with the chicken sausage filling. These Korean corn dogs were absolutely delicious with a light and crisp batter on them, made fresh and packaged in a cute yellow box. For my drink I ordered a strawberry lemonade.

MACY’S • 1 Oakbrook Center OAK BROOK, IL 630-684-2400 They are located in the mall. One thing I did find there was in the basement of the store, they have a candy counter where you could purchase candy by the pound. They also had some packaged candy as well. I found one of my favorite treats; the chocolate Jordan almonds. I stocked up because those are hard to find. They also have these amazing chocolate malted milk balls and gummy candies. Across from the candy counter there is a Starbucks where you can take a break and enjoy a coffee and a treat while shopping.

MINI DONUT FACTORY • 1057 E. Lake Cook Rd. WHEELING, IL 224-676-0593. This is an adorable and colorful shop where you can get some fresh made donuts. At the counter they have a display of what donut flavors are available. They make the donuts for you right there on the spot. They were served warm and decorated beautifully. I had to try six different flavors; the Banana glaze, Blue Dream, Caramel Glaze, Carmel Waffel, Chocolate Sprinkle and Strawberry. Yummy! You won’t feel bad eating more than one donut because they’re small.

OUTBACK STEAKHOUSE • 5836 W. Touhy Ave. SKOKIE, IL 847-674-7411. They had a brand-new cocktail at the time I dined there that was called Crock-Tail: it was made with Vodka, Midori, Kiwi, Mango and citrus juices topped with a shimmer and crocodile to keep. What a fun drink and it was refreshing. I ordered a bowl of chili to try. For my entrée I had a sirloin steak with the Lobster Mac N Cheese and some asparagus. If that wasn’t enough- my friends ordered the Tim Tum Cake which was essentially a fancy moist brownie with caramel sauce. This was a wonderful meal!

Kikkoman Breaks Ground on $560 Million New Facility

To the sound of massive Japanese taiko drums and a traditional Shinto ceremony, Kikkoman, the world’s leading manufacturer of traditionally brewed soy sauce, ushered in a new chapter in the company’s history at a groundbreaking ceremony for a major new production facility in the rural community of Jefferson, Wisconsin

Kikkoman has played a vital role in the Wisconsin economy for more than half a century. In 1973 with the opening of Kikkoman Foods, Inc. (KFI), in Walworth, Wisconsin, the company transformed farm fields into what has now become the highest-producing soy sauce facility in the western world.

Now, the company is investing at least $800 million in the new Jefferson facility, as well as expansion initiatives at its Walworth plant – an investment that will create 83 new jobs.

The plant will be fully integrated and highly automated using cutting-edge mobile technology. It has been designed for flexibility, speed, efficiency, and scalability, with the ability to make smaller or larger batch sizes as needed. And in keeping with Kikkoman’s commitment to sustainability and stewardship, the facility will reduce CO2 emissions by installing energy-efficient equipment, minimizing waste, and proactively using renewable energy.

The new facility will produce soy sauce and soy sauce–related seasonings, including teriyaki sauce, with the first shipments of soy sauce planned for Fall, 2026.

Study on The Mediterranean Diet and Fish

A study published in the journal Nutrients suggested that following a Mediterranean-style diet potentially could be protective against multiple sclerosis. While data did not reach statistical significance, researchers did note that eating oily fish once or twice weekly was associated with a lower risk of MS, compared with eating no oily fish, and alcohol consumption was inversely related to MS risk when comparing weekly to monthly consumption.

But the company did not dismiss the prospect of drive-thru AI, suggesting that McDonald’s plans to find a new partner for its automated order taking efforts.

Smaller Chains Dominate Unit Growth

You might expect the largest chains, with marketing power, purchasing power, and momentum behind them, to have an advantage when it comes to opening new locations, but with a few notable exceptions (Jersey Mike’s, Wingstop, Tropical Smoothie Cafe, Chipotle, and Chick-fil-A), the 40 chains with 1,000 units or more either had modest growth or, in the case of 11 of them, shrank in unit count.

On the opposite end of the Top 500, unit growth was robust. Obviously, simple math dictates that percentage growth looks more impressive if you start with a smaller

number. The Hampton Social can boast a 21% unit growth because it opened two restaurants in 2023, giving it a total of 11. But other small chains truly saw massive expansion, possibly because consumers root for underdogs these days, or maybe because they’re giving their customers exactly what they want. Most notable among small but fast growers are 7 Brew, which grew from 40 to 180 locations last year, KPOT, a Korean barbecue concept that went from 16 to 55 units, and Dave’s Hot Chicken, whose unit count grew by 76% from 96 to 169. – Source: nrn.com

Fast-forward to today and the family-owned retailer is celebrating its 90th anniversary with more than 500 Meijer supercenters, grocery stores, neighborhood markets, express locations, and distribution and manufacturing facilities throughout six Midwest states operated by more than 70,000 team members.

Want to Lower Your Labor Cost?

Be a Better Leader

Hourly wages are increasing, the labor pool seems to be shrinking, and rising payroll taxes and benefits need to be paid on top of wages. Above the general cost of labor, an additional and controllable impact to the bottom line is turnover—and that is not too sweet.

It’s not simply the placement of ads that drives up cost—it’s the time spent by management and existing employees to adequately train new-hires, as well as the loss of revenue due to insufficient coverage until employees are trained and can capably handle their positions. Especially if the turnover comes unexpectedly. Additionally, there is the cost of learning about customers, familiarity with the systems in the operation, and the cascading effect on team chemistry, productivity and your culture.

What can a restaurant owner do to minimize turnover? Bring in quality new hires, and retain the good ones you already have and have invested in:

• Enlist existing employees for referrals and tap into their network.

• Ask applicants for references, and check them.

• Provide quality new hire orientations.

- Clear your calendar.

- Introduce them to staff and the restaurant.

- Share your vision and explain the training process.

- Answer questions.

If you make a promise, keep the promise

• Make sure your managers and leaders are on the same page as you.

• Be aware of potential perceptions for raise inequities or favoritism – employees talk.

• Share how the business is doing and upcoming events in regular staff meetings.

- Ask for questions and concerns, as well as suggestions for improving the business.

- Provide responses in a reasonable period of time if not during the meetings.

• Conduct one on one meetings with employees.

• Offer consistent feedback that includes compliments and/ or mentoring.

• Transparency and honesty go a long way.

Employees are people first

• Post schedules in advance so they can prepare.

• Be aware that things happen in people’s lives and allow for shift swapping.

• Avoid abrupt schedule changes or shift cancellations.

• Speak with respect no matter the situation and challenge. Generally, employees with a stable and respectful environment are more inclined to contribute to the culture of a business through productivity and longevity. Employment longevity provides regular customers familiar faces and a solid staff. By giving employees reasons to stay, your business can increase revenue and profit at the same time. That would be sweet.

The Effect of Sugar Alcohols

Registered dietitian Tegan Bissell says sugar alcohols, a type of carbohydrate, generally are considered safe as part of a balanced diet but could have a small effect on blood sugar levels. Sugar alcohols are used by food manufacturers to sweeten food products with fewer calories than regular sugar, but research has linked them to cardiovascular and gastrointestinal issues.

Outfront Media, the leader in Chicago outdoor ads recently hosted a happy hour for some of their clients and account executives at Koval Distillery on Chicago’s North Side. The event gave clients the opportunity to sip artisan cocktails and mocktails, talk business and learn from each other. As the third largest U.S. city, Chicago is one of the most dense, diverse, and influential markets. If you are looking for high impact, affordable and targeted advertising for your restaurant or consumer food brand, look to Outfront.

Delivery First: Facts of Operating with Your Own Delivery Drivers

If you are employing your own drivers, there are some facts you need to know in order to protect your business. Drivers are not independent contractors so the burden falls on the restaurant owner to pay these employees the proper wage. Illinois laws have changed. All drivers must be documented and paid minimum wage. More time and money is being spent by the IRS to audit small businesses for back wages which includes substantial penalties.

Even if paid per order with cash, these drivers are employees and if audited or reported by a driver a restaurant can be fined thousands or even hundreds of thousands of dollars for not properly documenting or paying these employees. In 2023 a 5-pizza franchise owner had to pay $250,000 in back wages.

Not carrying proper insurance puts you at risk.

Are your employees properly insured? Are they carrying their own insurance? Are you as a business carrying the proper insurance to cover you in case of an incident? An incident involving a driver without sufficient insurance could put the restaurant in a very precarious position.

Do you carry workers compensation insurance on your drivers? If not, your business can be found liable if a driver is injured in or out of your business. Additionally, Illinois law requires employers to provide workers’ compensation insurance on all employees. Not complying can result in heavy fines.

Managing your own driver force is costly and time consuming. Even if you pay your drivers per order, there are multiple costs involved that need to be factored in as expenses. Chicago has already moved away from allowing tip credit and Illinois is following suit. This means that all tipped employees will be required to be paid minimum wage plus tips.

Partnering with Delivery First enables you as a restaurant operator to escape concerns and liabilities around implementing and managing in-house delivery service. This will free your team to focus on bringing value to your customers and concentrating on your bottom line. Join the delivery partners that have made the clear-cut carryout business decision to use Delivery first to manage and implement their delivery business with a cost to your restaurant that’s as low as $2-$3 per delivery.

Top 50 Pizza Places in America

Una Pizza Napoletana, in New York, is reaffirmed as the best pizzeria in the United States, according to the influential 50 Top Pizza guide . This is the third win for Anthony Mangieri, Uno Pizza Napoletana owner on the top of the United States list. In second place is Tony’s Pizza Napoletana in San Francisco, by Tony Gemignani. The third spot on the podium goes to Pizzeria Beddia in Philadelphia, by Joe Beddia. The best Pizza Slice is from L’industrie Pizzeria in New York

In fourth place is Ribalta, in New York; in fifth place is Ken’s Artisan Pizza, in Portland, and sixth is Jay’s, in Kenmore. Another New York restaurant, Don Antonio, takes seventh place. Eighth is Pizzeria Sei, in Los Angeles; ninth is La Leggenda in Miami, and tenth is Robert’s in Chicago.

New York City confirms its status as the pizza capital of America with 17 restaurants in the guide, followed by Chicago with 7, and Portland with 6. The most represented State is New York with 19 pizzerias, followed by California with 14 pizzerias, and Illinois with seven.

Robert’s Pizza & Dough Co. Named #10 Pizza in the US by 50 Top Pizza

Robert’s Pizza and Dough Co. has been named one of the 50 Top Pizzas in the USA for the 4th year in a row! Robert’s Pizza took home the #10 position for 2024, up from #27 in 2023, along with a second award for “Performance of the Year 2024 Robo Award.”

Their recognition as one of the top twelve pizzas in the US secured a golden ticket for Robert’s Pizza to attend the World Pizza Ceremony in Naples this September where they’ll be recognized as one of “The Best 100 Pizzerias in the World” for the 2024 50 Top Pizza Guide. Robert’s Pizza is one of three other Chicago restaurants to make the prestigious list of 50 Top Pizzas 2024, the others being Spacca Napoli and Coda di Volpe, and a fourth recognized for the 10 Best Pizza Slices in the USA – Jimmy’s Pizza Cafe.

50 Top Pizza inspectors spend an entire year anonymously examining an enormous number of pizzerias across the United States to determine the final ranking. The most important criteria are the dough’s quality and the raw materials used for toppings. The service, wine & beverage lists, and customer care are also factored into the evaluation process. The ceremony took place in New York City in June at West Edge NYC in Chelsea Market.

Robert’s Pizza first ranked on the 50 Top Pizza list in 2021. Located at 465 N. McClurg Court on the Ogden Strip in Chicago. Robert’s Pizza & Dough Co. was founded by the husband and wife team, Robert & Dana Garvey. The brick oven-baked, thin-crust artisan pizza evolved from Robert’s obsessive 20-year quest to fine-tune a dough recipe that would deliver the perfect crust.

Robert is a New York native, entrepreneur, marine engineer, business owner, journalist, playwright, teacher and certified Pizzaioli from the Scuola Italiana Pizzaioli. As a boy in New York, pizza was everywhere and each slice was as unique as the next. After moving to Chicago, he became obsessed with creating the perfect pizza. This obsession took him on a 20-year journey of testing his signature recipes until the restaurant was born.

For us, a proper slice of pizza, when folded, cracks but does not break. Striking a perfect balance between “crunch and chew”, we mix, rest, ferment, and rise our dough based on Robert’s journey to perfect a pizza crust. This is what we mean when we say we “Love dough responsibly.” We take dough seriously. For more info visit: robertspizzacompany.com.

Robert’s Pizza is located at 465 N. McClurg Court on the Ogden Strip in Chicago.

Hours: Monday - Thursday: 12 p.m. - 9 p.m. • Friday: 12 p.m. - 10 p.m., Saturday: 11 a.m. - 10 p.m. • Sunday: 11 a.m. - 9 p.m.

We’re adventurers, artists, and engineers who simply love pizza. In attempting to improve a combination of water, flour and yeast, a journey began to craft the perfect slice. We deconstructed hundreds of pizzas and turned our home into a test kitchen. Friends and family gathered, sampled, critiqued, and eventually demanded a restaurant. After years of fine-tuning, Robert’s Pizza moved from idea to a chef-driven restaurant. Since 2016, we’ve become a favorite destination for locals and out-of-towners alike.

Lessons from James Beard Winners

The 2024 James Beard Award winners shared valuable lessons learned from past failures during the awards ceremony. “The only way to stay young in life is to always do things you don’t know how to do,” said Lifetime Achievement Award winner Ruth Reichl. “And doing things you don’t know how to do means you’re going to fail, but you’ll figure it out eventually.” – Source: Plate

L.A. Food Boutiques Become Full-Service Grocers

L.A. Grocery & Cafe has the feel of a small food boutique, but with 6,000 square feet and 3,500 items including eggs, pasta, produce and meat, co-founder Caitlin Sullivan said the store is “absolutely intended to be a full-basket shop” that serves as a community resource to its surrounding Los Angeles neighborhood. Golden Poppy Market also seeks to provide grocery staples for Los Angeles residents through its selection of prowduce, butter and California cheeses, and even upscale grocer Cookbook has a 2,500-square-foot location in the city with organic produce, a cafe and espresso bar.

Smashburger Overhauls

Its Brand

Flub A Dub Chubs is a Hot Dog and Burger emporium that resides 5 steps under street level at 3021 • Broadway. As they say, “it’s hard to find, but hard to ignore after you’ve tried it”. True words about a great neighborhood haunt. This unforgettable place has a wall of fame featuring original artwork done by neighborhood kids; and a wall of shame featuring ketchup eating customer mug shots. But the headlines belong to the products on the menu, such as the chubby Vienna Beef Hot Dogs, Polish Sausages and Bratwurst with names like Flubby, Chubby, the Durkowski and Mr Big to name a few.

The place which has been feeding Chicagoans and tourists for nearly two decades was the brainchild of Sam Giarratano, with his wife Rosemary, and their two sons Greg and Bryan.

The name, Flub A Dub Chubs, came from a children’s book, but it also describes the large portions, creative menu ideas and a ‘hodge-podge’ of fun that keeps it fresh and relevant.

Their constant community service participation to the Lakeview East Chamber of Commerce along with their dedication to neighborhood charitable needs and services are paramount in their business. Publicity has been no stranger either. They have been included in endless ‘Best of’ lists as well as being featured on “Chicago’s Best” showing off their BBQ pulled pork wrapped around a Vienna Chubby Hot Dog. The very same menu item to have won the 2023 Vienna Beef x Miller Lite Beers and Dogs competition.

Their tots, fries, fried portobellos, beef chili, and many others are Flub’s opening attractions to the Flubtastic Tuesday, the Willie, the Chihuahua, Greg’s Hangover and The Bryan Burger are just a sampling of what to get. Vienna Beef is proud to have been part of their growth by providing quality products and marketing support from the beginning of this hall of fame worthy foodservice dynamo.

Founded in 1893, Vienna Beef manufactures and distributes Hot Dogs and Sausages following its time-honored original recipes, with premium domestic beef hickory-smoked for authentic flavor. Austrian-Hungarian immigrants Emil Reichel and Samuel Ladany introduced their family Frankfurter recipe at the legendary Columbian Exposition/World’s Fair and the same recipe is still used over 131 years later. The company also produces Pickles and Condiments, Soups and Chilis, Deli Meats, and other premium top-quality foods, distributed throughout the United States. Vienna Beef products are available at Hot Dog stands and restaurants, retail stores, online, and at the company’s factory store in Chicago.

Discounters Win with Shoppers as High Prices Persist

As consumers continue to place heavy emphasis on value when shopping for groceries, they are stepping up their interest in also finding quality goods, fresh products and an optimal shopping experience, posing a sharp challenge to retailers jostling for position in a highly competitive market, according to a report by Boston Consulting Group.

Club retailers are especially benefiting from this trend, the consulting firm said. That sector, which includes chains such as Costco, Sam’s Club and BJ’s Wholesale Club, is winning over shoppers by placing a growing emphasis on fresh goods while helping people save money on those products. – Source: Grocery Dive
