One of the biggest restaurant trends for 2020 is the continued rise of high quality kid’s menus. With more millennials becoming parents, their interests skew towards kid’s menus that offer sustainably sourced meals. Chicago’s cult-favorite fried chicken shop, Honey Butter Fried Chicken provides a family-friendly environment that meets both of the above criteria: With a menu for kids that features humanely-raised fried chicken, and flavorful side dishes, Honey Butter Fried Chicken serves conscious comfort food that kids will love. Parents can order a Honey Buddies Meal from the Kids Menu which includes fried chicken strips, pimento mac ‘n cheese, a corn muffin and a side of the must have house-made honey butter made with sustainably sourced honey and milk from local dairy farmers. Honey Butter Fried Chicken is also known for their social activism and advocacy for restaurant worker’s rights. Co-Owners and Chefs Josh Kulp and Christine Cikowski work
hard at making Honey Butter Fried Chicken a family friendly destination on all fronts. Josh Kulp and Christine Cikowski founded Sunday Dinner Club as co-chefs in 2005, made up of everyday people, chefs, farmers, and friends. One of the side dishes served during SDC Fried Chicken Dinner was griddled corn cakes with honey butter. Portions of chicken and side were piled high on small plates to be eaten by staff while standing in the kitchen. Somehow, the honey butter melted on the fried chicken. Surprise: honey butter is really delicious on fried chicken. They ran out to the dining room and exclaimed “Put the butter on the chicken!” to guests, and fried chicken has been served with honey butter ever since. It sparked an idea: Open a Honey Butter Fried Chicken restaurant at 3361 N. Elston in Chicago. That “accident”, created delicious food for happy customers and created an amazing and supportive workplace culture with great jobs. a

A Re-Imagined Tallboy Taco is Opening in Streeterville
Coming soon to Streeterville, a re-imagined Tallboy Taco (676 N. St. Clair St.) will open this spring with a brand new menu. The fast casual taco restaurant will serve breakfast, lunch and dinner daily from 7AM - 8 PM, and offer carryout, delivery and off-premise catering. The new restaurant will feature an expansive 85-seat patio located on St. Clair St. The menu will include more than a dozen creative tacos that explore flavors from around the world. The new tacos include the Pulled Pork Cuban Taco made with Beeler’s natural pork, ham, Swiss cheese, pickles and dijonnaise, the Angry Eggplant Taco with crispy eggplant, gochujang mayo, shredded lettuce and scallion, the Buffalo Chicken Taco with crispy chicken tenders and Danish blue cheese and the Korean Cheesesteak Taco with grilled skirt steak, American cheese, kimchi and miso-sambal dressing. In addition to tacos, Tallboy will offer fresh salads, sides like crinkle-cut fries with queso and chips and guacamole, plus drinks including frozen margaritas, craft beers, fresh juices and more. You can stop in for a cocktail, lunch or dinner. They offer fresh seafood selections along with sandwiches, pasta dishes, steaks and more. The server told us about the Supper Club Menu, which was a great value. You get a choice of a glass of wine or non-alcoholic beverage, choice of soup or salad, entrée and dessert. THE HEN HOUSE 1060 College Ave. WHEATON, IL 630-480-0611. This is a cozy breakfast spot in Wheaton with tasteful décor and a fireplace to warm you up on cold mornings. I had Filet Mignon and 2 eggs with a side of cubed potatoes and pancakes. The filet medallions were cooked to perfection and cut like butter. The eggs and potatoes were just right, and the pancakes were served with warm syrup. They also serve lunch and a variety of specialty coffee drinks. LOU MALNATI’S PIZZERIA 6649 Lincoln Ave. LINCOLNWOOD, IL 847673-0860. I can’t even count how many times I’ve eaten or picked up from here. Their pizza is the best! I recently dined here with a group of friends and we stuffed ourselves with the Chicago Style Deep Dish Pizza with sausage. My favorite part of the pizza is the crust. It’s a buttecrust and I never leave a bite behind. The thin crust pizza is really good too, and you also can’t go wrong with their delicious Malnati’s Salad. I’ve tried so many combinations and have loved each and every one of them. MAPLEBERRY PANCAKE HOUSE 1276 Kuhn Rd, Carol Stream, IL 630668-4477 This is a great place to enjoy breakfast or lunch with family and friends. I had the 2 by 3, which is three potato pancakes, three fresh eggs and two bacon slices, with applesauce and sour cream. They kept the coffee and the great service coming. Get there early on Saturdays and Sundays or expect to wait to be seated. MR. BROAST 820 E. Roosevelt Rd. LOMBARD, IL 630-889-1188. Home of the “Zinger Burger” and that’s what I tried. It was a fried chicken breast topped with seasoned cabbage, and spicy Zinger sauce served on a soft bun. The chicken was moist, the sauce was tasty and the portion size was huge. For my side, I ordered some fried mushrooms. On the menu they also have salads, wraps, beef burgers, rice bowls and broasted chicken. PETE’S RED HOT’S 6346 Roosevelt Rd. OAK PARK, IL 708-383-6122. This fast food place was extremely busy when I stopped in, and every table was taken. The line moved quickly and the staff was on it. I ordered a Vienna Hot Dog with the works, mustard, onion, relish, tomato, a slice of pickle and sport peppers. Plus, I ordered a gyros sandwich with the works, onion, tomato and sauce. It was a big sandwich, piled high with gyros meat, and oh-so good. The fries were served hot and everything was fresh. OLD FASHIONED CANDIES 6210 Cermak Rd BERWYN, IL. 708-7886669. This is a cute, old-school candy shop with a big selection of vintage candy favorites. On the counter, they had all sorts of bulk candy in jars, sold by the pound as well as a case with chocolates sold by the pound. They had popcorn and so much more. I picked up a decorated pretzel, some licorice bites and a red licorice candy pipe.

On Tuesday, February 18, the Illinois Restaurant Association (IRA) hosted its 2020 Annual Meeting at the Mid-America Club. The afternoon included the installation of new members of the Association’s Board of Directors and Advisory Council, a keynote speech from Deputy Mayor Samir Mayekar, and the organization’s annual awards presentation. It was presided over by President and CEO Sam Toia and Chairman of the Board Greg Schulson, President and CEO of Lunan Corporation/Burrito Beach. Schulson enters his second year as Chairman.

There’s a specialty hot dog called the China Dog which is a hot dog wrapped in an egg roll wrapper with American Cheese, fried and served with Thai chili dipping sauce. They have a Jersey Dog that’s a hot dog fried with sweet peppers, grilled onions, potatoes, ketchup & mustard served on a French bread. They are also known for their Breaded Steak Sandwich that comes with marinara sauce and the Pork Chop sandwich topped with grilled onions. Italian menu items include; pizza, Italian Beef, Italian Sausage and the Meatball sandwich. The marinara and giardiniera served are homemade. Mexican specialties include tacos and tamales. They have wings, and jumbo fried shrimp too. Dine in and carry out is available. WHAT’S HOT IN HOT SAUCE FOR MENUS AHEAD®
Datassentials reports that at least 72% of all menus have a mention of something “spicy”. That description outpaces descriptions such as creamy (49%), rich (30%) or juicy (16%). In fact, the mention of a “hot sauce” in a particular menu item grew 4% in the last year and 10% since 2015. So, there is something about “spicy” that really resonates with customers and menu developers. “34% of consumers said they are consuming more hot sauce than they did a year ago.” It boils down to a population that has embraced international flavors and who has grown up with a bottle of hot sauce in their home. Thus, spiciness is now an essential ingredient for a successful Limited Time Offer (LTO), add-ons to a menu offering or permanent menu. Projections for 2020 and beyond are for continued growth for hot sauce mentions on menus. Here are 7 important trend-worthy facts found in a recent Datassentials report that surveyed consumers and operators on condiments and sauces that you should know: 1. 40% of Consumers Use Hot Sauce Weekly – How much consumers use hot sauce at home is a good indication as to how much they expect it on their restaurant’s table or in a menu item—and a good indication of why hot sauce is growing on menus. In all, 57% of consumers surveyed said they use hot sauce at home and 40% used it at least once per week. More importantly 34% said they are consuming more hot sauce than they did a year ago. 2. Operators Are Stocking Up on Hot Sauce – Four of the top five sauces purchased by foodservice operators in the past year are spicy, led by sriracha, buffalo sauce and hot sauce. 3. When Is Hot Too Hot? – Among consumers, 28% said they prefer “moderately spicy” foods compared to 16% who say, “the spicier the better”. When determining heat levels on your menu, keep in mind that a quarter of Gen Z and Millennials want their condiments to be as spicy as possible. 4. Cross-Utilizing Condiments Can Be Profitable – About 31% of operators are up charging their customers for signature sauces they create by cross-utilizing two or three condiments. For example, combine Texas Pete® Hot Sauce or CHA! by Texas Pete® Sriracha Sauce with mayo or ranch dressing. Signature sauces help differentiate an operator’s menu better than any other message. 5. What Are the Hot Tabletop Essentials? – Operators say there are three condiment essentials on their tables. The survey found that 50% of operators are still filling plastic ramekins with a lid for off-premise applications. Most of the universe exists in random chaos and only through purposeful bravery and intellect do we persevere. Every victor must be strong and observant enough to expect future opposition lest it all fall to ruin again.
Knowing other languages is worth more money. Invest your time and money wisely: The payoff is in less commonly studied languages. A Wharton/LECG Europe study found that speaking German translated into a higher wage premium than for second languages overall. Successful people do more favors at work. Research by the Wharton School shows we feel more warmly toward people after lending them a hand. It’s called the Benjamin Franklin effect: Franklin recalled winning over a legislative rival after borrowing a book from him. “Our attitudes often follow our behavior instead of vice versa,” says David McRaney in his book You Are Now Less Dumb. The average pay bump from a promotion for managers or upper-level executives is 7% or more, according to Mercer. But how do you get one? “The meeting room is where we exert leadership and develop credibility,” says corporate trainer Dana Brownlee of Professionalism Matters. Don’t dominate—nudge the group toward concrete goals. If someone can’t let go of a point, try saying, “Good idea! I’m writing it down.” You’ve now freed a room of grateful co-workers to move on. If you get paid a flat salary, turning a 10-hour day into nine more-productive hours is like giving yourself an 11% hourly raise. 1: HANDLE EACH EMAIL JUST ONCE. Reply, file, or trash—don’t come back to it later, says former Fidelity president Bob Pozen, author of Extreme Productivity. 2: HIDE THAT EXTRA CHAIR. Discourage co-workers from lingering. 3: PLAN BREAKS. Your brain loses focus after about 90 minutes. A clear, unfussy writing style will get your ideas heard at work. (HR pros ranked writing second, behind only computer aptitude, among skills applicants most often lacked.) Harvard professor Steven Pinker says: 1. Don’t use words that most people don’t understand. “Fulsome” (as in “fulsome praise”) does not mean full; it means insincere. If you use hoity-toity words to sound posh, you will look pompous and may say the opposite of what you mean. 2. Be brief. John Kerry once said, “The President is desirous of trying to see how we can make our efforts in order to find a way to facilitate.” What he meant was, “The President wants to help.” Much better. 3. REVISE. What’s clear to you may not be clear to someone else. If you run a business or work in marketing, social media like Twitter seems like a great way to get your message out. But remember that users have zero interest in following companies that clutter their feed with ads. Use social to establish your expertise or spark ideas; then when people are in the market for what you sell, they’ll remember you.

Cargill Launches Plant-Based Consumer Meat Products
Cargill Inc. will launch plant-based hamburger patties and ground “fake meat” products in April, the company said on Monday, challenging Beyond Meat and Impossible Foods for sales in grocery stores, cafeterias and restaurants. The entry of Cargill, one the world’s largest privately held companies, in the market for imitation meat highlights the growing popularity of plant-based foods and expectations that consumers will continue to gobble up meat substitutes. The 155-year-old company presents new competition for startups Beyond Meat and privately held, Silicon Valley-based Impossible Foods. you, but they want to believe you’ll treat them right, that you’ll take care of them. So, if this is how you want to be viewed, get yourself prepared. A good way to start is by answering the questions customers ask themselves about salespeople. Will my salesperson listen to what I’m saying? If “I’m a good listener” is your answer, don’t be too sure. “The greatest problem with communication is we don’t listen to understand. We listen to reply,” says Roy T. Bennett, the author of The Light in the Heart. If we are figuring out what we want to say next, we won’t get it. Will my salesperson give me options? Some in sales believe that choices confuse customers, so they stick with a single solution. Yet, options stimulate discussion and keep customers involved. Rather than letting customers slip away, talking about choices builds trust and certainty. Will the salesperson make sure I understand? Salespeople often assume that people know more about what they’re buying than they do. Customers can be too embarrassed to say, “I don’t understand what you’re saying.” No salesperson ever spoke too simply or too clearly. The smart salesperson knows that there’s no perfect solution. There are always pluses and minuses. Everything has drawbacks and customers respond positively to the salesperson who is transparent when presenting. If they’re 80% or 90% OK, most customers will say they can live with that. Will the salesperson push me to sign the order? This is where things can get dicey—the tension between wanting to get the order and not wanting to pressure the customer. Too much either way can kill a sale. Summarizing what customers like about what they’re buying and why they see it as a good fit gives them “permission” to move forward. Will the salesperson provide customer references? While this may not be necessary for every sale it’s a helpful tool for creating confidence. Having a list to satisfied customers who are willing to share their experience creates confidence and trust. What type of support can I count on after the sale? It’s so easy to be so focused on making a sale that we can forget that this is a top-of-mind concern for many customers. It comes up because they’ve had bad experiences in the past. Not only providing contact information, but introducing them personally to a go-to person provides reassurance. Can you tell me something about yourself? Even though most customers may not ask a salesperson this question, don’t think it isn’t on their mind. For some reason, we feel better knowing about those we are doing business with. It makes it more personal and puts us at ease. What’s my recourse if I’m not satisfied with my purchase? No one wants to do battle if a problem arises. They don’t expect to be ignored or given the run around. They want to be dealt with fairly. Yet, as we all know, horror stories and one-star reviews abound. The best solution is to anticipate the issue and make clear the path forward—in writing. What type of guarantee comes with my purchase? Smart companies spell out the coverage clearly in writing. Because words make a difference, savvy salespeople go over it with customers to clarify the terminology, Why should I do business with you? It’s the 800-lb. gorilla in the room and it can even supersede the importance of the purchase in the customer’s mind. It boils down to this: “I want to know why I should give you my money? What’s the whole package, not just what I’m purchasing or even the price? I want to feel good about what I’m doing.” A word to the wise, if you want to make more and better sales, have a short but compelling answer to the question, “Why should I do business with you?” The old saying, “Keep your eye on the ball,” is true if you’re selling. Caution When Cutting Avocados
Avocados have seen a surge in popularity—think avocado toast! But they can be dangerous. Anecdotal evidence suggests that emergency rooms have recently seen a surge in patients who sliced open their palms. or fingers while cutting into these increasingly popular fruits. Actress Meryl Streep is perhaps the most prominent victim. Unlike most fruits and vegetables, avocados have tough exterior skins but extremely soft flesh inside. People push down hard on knives to cut through that tough skin, only to have the knife slice very quickly through the fruit’s soft flesh...and into the hand that’s holding the avocado. There are nerves, tendons and blood vessels very close to the skin of palms and fingers, so the damage can be extensive. Victims sometimes require delicate surgery followed by as much as three to six months of rehab before full use of the hand is restored. Not long ago, bagels were the food most closely associated with these sorts of kitchenknife injuries. (Like avocados, bagels tend to be tough on the outside but soft within.) Bagel injuries seem to be less common lately, perhaps because many bagel fans have purchased bagel slicers. To safely slice an avocado without slicing yourself, place the avocado on a cutting

Pill Offers an Alternative to Insulin Injection
People with type 2 diabetes may have a new alternative to insulin injections, according to the Science Daily website. A research team at MIT has developed a capsule that patients can take orally to receive their insulin through the stomach. The blueberry-size pill contains a tiny needle filled with compressed, freeze-dried insulin. The needle itself is made of a biodegradable substance and is attached to a compressed spring held in place by a disk of sugar. The capsule is designed to orient itself so the needle can contact the lining of the stomach. When the needle is injected, the insulin dissolves at a controlled rate and then passes harmlessly through the digestive system. Tests in animals found that the device can deliver sufficient insulin to lower blood sugar at a rate comparable to injections through the skin. The device can also be adapted to deliver other medications.
Hidden Causes of High Blood Pressure Many factors affect your blood pressure, including genetics, diet, and even your sleeping patterns. The Healthline website advises you to be mindful of these possible contributors to high blood pressure, as well: ■ Over-the-counter medications. Common medications used to address everyday aches and pains can increase one’s blood pressure. These include anti-inflammatory drugs like Aleve, Advil, and Tylenol, as well as decongestants. You don’t have to stop taking them, but check with your doctor. ■ Caffeine and alcohol. Both of these can heighten your blood pressure. Limit yourself to less than 300 milligrams of caffeine a day—two to three cups of coffee—and one alcoholic beverage a day for women and two for men. ■ Food ingredients and supplements. Some herbal supplements, for example, use licorice, which can raise blood pressure. In addition, some cheeses, cured meats, and also soy products contain high levels of tyramine, which can interact with medications like antidepressants, causing a spike in blood pressure.

Disconnecting May Not Lead to the Benefits You’re Looking For
Ever feel the need to disconnect from your devices for a “digital detox”? The Yahoo Finance website reported on a survey by Mojo Vision (Saratoga, California), which found that people tend to use technology as much, if not more, after distancing themselves from their smartphones and tablets for a while. The survey of 1,000 Americans found that 67 percent agree that technology makes life easier, but 55 percent believe that all that tech is a distraction, with one-third worrying that it hurts people’s ability to connect with one another. Still, 54 percent said that abstaining from their devices didn’t produce the positive benefits they’d hoped for—or at least were unsure whether it had a beneficial impact. The most common strategies for “subtracting” tech are setting devices to send fewer notifications, putting them on a “Do Not Disturb” setting, scheduling times to not use their devices, or simply turning them off for a period of time.

James Beard Foundation Announces 2020 America’s Classics Award Honorees The James Beard Foundation announced today the six recipients of its 2020 America’s Classics Award. Dairy Farmers of America announced that it has agreed to buy Dean Foods, America’s largest milk producer, for $425 million. The dairy co-operative will also assume Dean’s liabilities as part of the deal to acquire 44 of the company’s facilities, as well as other assets. Dean filed for Chapter 11 bankruptcy in November as the business struggled to attract consumers who have instead turned to nondairy milk or private-label products. At the time it filed for bankruptcy, Dean had reported a net loss in seven of its last eight quarters. If approved by the bankruptcy court, the agreement would make the Dairy Farmers of America the stalking horse bidder, meaning that the transaction would be subject to receiving higher or better offers while the company is in bankruptcy. The company is also talking with other buyers interested in plants and assets not included in the deal with the co-op. The deal would also need approval from the Department of Justice, which has reportedly begun probing the merger, according to the Wall Street Journal. So, how can you measure the ROI (Return on Investment) of fleet graphics? There are several ways to accomplish this. I’ll share a few of them. In a study by The Outdoor Advertising Association of America (OAAA), Advertising, such as billboards and fleet graphics, reach 95% of Americans who are on the road. The question is, how can any business know if their fleet graphics are effective? How can they know the ROI? A white paper shared by the ATA (American Trucking Association) Vehicle Branding: Is there Hidden Value in Your Fleet? discovered that 75% of people developed a first impression about a company and its products from truck advertising. Furthermore, an impressive 91% of people stated that they not only noticed adverts on the side of trucks but could also remember them days later. Most importantly, however, the survey revealed that almost a third of people would base a buying decision on the impression they got from vehicle advertisements.” Chose Where Prospects Land This is a modern version of the dedicated phone number. Entice them, tell them what you do, and solve their problems. When you do this, customers will come calling. They’ll take action. Use a Dedicated Phone Number This is old school, but it still works. Use a phone number on your fleet vehicles that isn’t used anywhere else, and then track the calls, leads generated, and sales from this phone number. Ask Prospects How They Found You Asking a prospect how they heard of your business is the least accurate of these tracking methods because someone might see your truck, write down the web address, and then when asked how they found your business answer that it was the website. It was the website, but
they saw the fleet vehicle to learn of the website. Having said that, it does no harm to ask prospects how they heard of you. Check the Stats Checking statistics won’t inform you how your fleet graphics are faring as far as a marketing device, but it will give you an idea of what to expect. For example, impressions are the number of times an advertisement is seen, whether it’s a TV ad or fleet graphics. The stats can give you a good idea of how many people see your fleet graphics and the cost per impression. Here are some stats on impressions (Statistics courtesy of the Outdoor Advertising Association of America): ■ A 30-second primetime spot in the top 100 television markets costs $17.78 per thousand impressions ■ A 60-second drivetime ad in the top 100 radio markets costs $8.61 per thousand impressions ■ A one-third b/w
