BONHOMME VENUES: MADE FOR THIS MOMENT
Battling the COVID-19 pandemic and incoming Chicago winter, one restaurant group is prepared to extend the feeling of summer’s patio season: Bonhomme Hospitality Group venues are equipped with distinct amenities that let patrons soak up sunlight while they luxuriate in comfort surrounded by lush plant life. The botanical, Bali-inspired Beatnik On the River (180 N. Upper Wacker Drive) will soon feature a transparent enclosure, while Beatnik West Town (1604 W. Chicago Ave.) boasts a retractable roof. Exotic Botánico (1721 W. Division St.) is a private event space in enclosed rooftop garden above two other Bonhomme restaurants.
The enclosed rooftop garden on the fourth floor of Celeste (111 W. Hubbard St.), a classic American bar, provides a year-round escapist experience, complete with decorated with tropical greenery and vine-covered brick walls. The building was originally constructed in 1888 as a glass factory designed by Louis Sullivan and Dankmar Adler. At seafood-and-wine focused Porto (1600 W. Chicago Ave.), guests in the atrium can warm up by a crackling fire under a glass rooftop that sets the tone for dishes influenced by Portugal and northwestern Spain. a

As we prepare for Thanksgiving this year, things might be a little different for all of us. Since the coronavirus pandemic, life has changed. With social distancing from one another and limited gatherings with family and friends, we will have to come up with new ways to celebrate the holiday in order to keep everyone safe. Nevertheless, in whatever way we celebrate, there is one thing we can all do together: We can give thanks to God for the many blessings we receive each and every day; for the food on our tables and all the incredible people serving in our industry. Many in our industry are struggling, not knowing what will happen in their next daily fight for business survival. But even through that struggle, there are many who are still helping with donations, services, meals and good will toward others. Focused on COVID-19 economic recovery, the National Business League will host its 34th National Black Supplier Conference, an “NBL Live Virtual+” experience from 8 a.m.–3 p.m. on Nov. 18. The organization's first-ofits-kind virtual conference will be sponsored by AmEx, Comerica Bank, DTE, FIAT Chrysler, Flagstar Bank, Ford, GM, Huntington Bank, MPS Group, Toyota and more. Attendees comprise the nation's top Black suppliers, Fortune 500 corporate partners and Tier 1-4 companies. Funding from the Cares Act was available through a grant from the U.S. Department of Commerce Minority Business Development Agency. Mid-pandemic, the NBL strives to continue its mission serving as the prime Black business-development pipeline for businessto-business/businessto-consumer firms. This inaugural virtual conference will introduce the business-to-development ecosystem to the Black supplier community and the corporate procurement community under its four competencies: develop, diversify, connect and advocate.

Specializing in Asian groceries, this store has so many unique items and so many brands that even I wasn’t familiar with. Their produce department carries so many different types of exotic and root vegetables. They had a case filled with assorted sizes of kimchi; a huge fresh seafood department, tons of noodle and rice choices. You could even pick up a rice cooker there, and they had black vinegar. There were so many sauces to choose from. Snacks included Tofu Kimchi Snack, a popular Korean food, along with a variety of rice crackers. EL CARRITO MEXICAN STREET FOOD, 6019 N. Lincoln Ave., Chicago, Ill.; 872-208-3260. You’ll find this cute, colorful restaurant in a strip mall, serving Mexican specialties including burritos, tacos, tortas, tostadas and more. I had the chips and salsa, an order of guacamole and a couple carne asada tacos with onion and cilantro. For your sides you can get rice and beans or an order of the eloté, which is Mexican corn. They have friendly staff, good food, quick service and a nice atmosphere. FRESH STACK BURGER, 20413 N. Rand Road, Kildeer, Ill.; 847847-7223. The day I was there, one of the employees came out of the building to take my order curbside. They offer a nice line-up of burgers, chicken sandwiches, salads and shakes. I went for the American classic burger, which was a burger with lettuce, onion, tomato, pickles, American cheese and house sauce. This was a very tasty burger with plenty of toppings; fresh and delicious. I got some skinny shoestring fries too. For the larger appetite, go for the double or triple burger. Dine-in or drive-thru. GRILL 12, 1350 E. Rand Road, Arlington Heights, Ill.; 224-7357330. This is a fast-food place with seating inside. You can also place your order at the drive-thru. I ordered two things: The first was the beef with Merkts cheddar and hot peppers, the second was a gyros sandwich. When I picked up the bag, it was pretty heavy because those sandwiches were big. The beef with the combo of cheese and peppers was so good. I loved the gyros; it was so flavorful, and they didn’t skimp on the meat. PHOTO’S HOT DOGS, 301 N. I ordered a regular hot dog with the works and also a Wisconsin Bratwurst that came with mustard and sauerkraut on it. Of course, I had to get an order of fries, which hit the spot. They have all the fast food favorites, which include burgers, beef, gyros, salads and chicken, just to name a few. Signs out by the drive-thru promoted fish tacos. I’ll have to try that next time. QING XIANG YUAN DUMPLINGS, 2002 S. Wentworth Ave., Chicago, Ill.; 312-799-1118. The dumplings, which this restaurant is well known for, are handmade and made to order. There are many choices: beef, chicken, lamb, pork, veggie, seafood and more. I tried a combination of dumplings: the lobster; sea urchin; and pork and cabbage dumplings. All were delicious, juicy and moist. Plus, you can put sauce on them—vinegar, soy or chile. I also ordered a cucumber salad and tea. WHOLE FOODS MARKET, 20281 N. Rand Road, Kildeer, Ill.; 847726-4601. This is a beautiful store. Whether you’re looking for meats, seafood, cheeses, bakery goods or prepared foods, everything in their cases is displayed immaculately. Every department looks amazing! They have a big selection of organic and local products, and tags on the shelves indicating what products are local. I picked up some organic packaged turkey, blueberry goat cheese and a few other grocery items.

55% of Consumers Cooked at Home The pandemic has brought a surge in home cooking as consumers have avoided restaurants for safety and budgetary concerns. A reported 55% of consumers surveyed reported dining at home more often, according to Acosta, and that survey and others indicate the home-cooking trend is likely to last beyond the pandemic.

Our Industry Loses a Friend and Leader
It is with the deepest condolences that we inform our readers that Barbara Heina, president of Cobblestone Ovens for over 25 years passed suddenly Aug. 31. Karl Heina founded the company in 1980, and Barbara joined in 1982 as a bookkeeper and scheduler. She was instrumental in growing the business of Cobblestone, and established key bakery and food equipment manufacturer contracts, all of which are still in place. Barbara was a woman with the strongest work ethic and a total commitment to honesty and integrity in her business and personal life. Her word was her bond. Many professionals who have called needing help on an older oven were astounded by her technical knowledge. Barbara’s son and industry veteran Chris Heina has been promoted to president, a position for which he has been groomed for many years. Chris has every intention of keeping Barbara’s legacy alive well into the future. Black Barrel Tavern Wins Hamburger Hop

Chicago Gourmet, one of the nation’s most distinguished food festivals, announced the winner of this year’s newly envisioned Hamburger Hop: Chef Jose Rivera of Black Barrel Tavern in Chicago. The official kick-off to Chicago Gourmet, the popular Hamburger Hop expanded beyond Millennium Park with Can't Stop the Hop presented by DoorDash. From Sept. 1-13, more than 100 chef competitors presented burgers for dine-in, delivery or carry out. Food lovers voted for their favorite at chicagogourmet.org. Rivera’s impressive Black Barrel burger featured two black Angus patties, flattop-grilled and topped with white American cheese, caramelized onions, tomatoes and spring greens mix. The burger was topped with a house sauce and served on a brioche bun. The chef received a trophy, magnum of fine wine from wine sponsor Josh Cellars, a Yeti cooler filled with premium meat and seafood from Buckhead Meat of Chicago. One dollar of every burger sold during Can’t Stop the Hop benefited the IRAEF Restaurant Employee Relief Fund, a statewide emergency assistance fund that supports restaurant industry workers facing hardship as a result of COVID-19.

7-Eleven Stores Hire More Than 50,000 Amid Pandemic, Expects to Add 20,000 Additional Jobs This Year In March, 7‑Eleven Inc. made the call to employ 20,000 new store employees. Since then, the company estimates the organization and independent 7‑Eleven franchise owners have hired more than twice that many: over 50,000. And they’re recruiting 20,000 more to work in its 9,000-plus U.S. stores to meet continued demand for 7‑Eleven products and services amid the COVID-19 pandemic. Classified as an essential retailer, 7‑Eleven kept its doors open all year long, adding enhanced cleaning procedures and extra safety protocols such as acrylic shields at checkout, floor distance markers, sanitizing stations and offering employees masks and gloves. Topo Chico Hard Seltzer will be the third hard seltzer brand in Molson Co‑ ors’ portfolio. The seltzer will launch in the U.S. in the first half of 2021, and will be available in four fla‑ vors: tangy lemon lime; ex‑ otic pineapple; strawberry guava; and tropical mango. The Topo Chico agreement is similar to one Molson Co‑ ors announced earlier with Yuengling. Garlic Powder Makes Comeback in COVID-19 Era Now that everyone —not just enthusiasts —is cooking at home because of COVID-19, “old school” spices have reemerged from the back of the cabinet to help get dinner on the table more easily and efficiently. Americans Delay Medical Care
The COVID-19 pandemic obviously had an impact on many people’s health, but not all of it was due to the virus itself. The Kaiser Health New website reports that almost half of Americans (48%) postponed or skipped seeking medical care because of the outbreak. Of those people, 11% indicated that their medical problem got worse, although 36% said it did not. Almost seven in 10 of those who had skipped a doctor’s appointment said they plan to seek medical care in the next three months. The good news: Eightysix percent of U.S. adults say their health has remained “about the same” since the beginning of the outbreak.

When you walk inside their place, it smells incredible. The scent of smoked meat hits your senses. The Tapleys cook their meats low and slow in their signature dry rub. On the menu, Taps Tips has rib tips, baby backs, hot links, turkey tips, turkey links, chicken, smoked wings, pulled pork (pictured above) and brisket, too. They have pulled pork nachos and brisket nachos. The sides, made from scratch with love from special family recipes and traditions, include greens, coleslaw and red beans and rice. I tried the baked mac and cheese, which was very creamy, along with some cornbread. On Thursdays Taps Tips has smoked turkey legs on the menu. Their baby back ribs (below) were smoked perfectly and were meaty and flavorful. The ribs are so delicious as-is—they don’t even need any sauce on them. Since the Tapleys do make their own sauce, I had to try some. I opted for the house mild, which was very tasty. Other choices include bourbon or hot. Insurance Brokers Helping to Steer Their Clients Through COVID-19 During COVID-19 proactive insurance brokers responded by reaching out to help their clients to not only navigate the COVID-19 pandemic, but also the already hardening insurance marketplace. Below are some examples of strategies used with clients to help them manage liquidity and preserve cash flow. Work with insurance company and ask them to modify client’s payment schedule. Most carriers were happy to make concessions such as skipping a payment or restructuring the payment schedule to help clients keep needed cash on-hand. Make mid-term exposure adjustments to refund clients excess premiums by adjusting sales, payroll, property schedules and active auto unit status to better reflect their business post-pandemic. Present risk optimization studies in order to understand if taking on more risk by reducing policy limits in order to reduce short-term fixed costs makes sense. Present retroactive or go-forward premium finance options for premiums paid 100% in advance to preserve cash on-hand. Provide more protection to accounts receivables while many customers and stakeholders begin to default through trade credit insurance. Work to free up any letter of credit and/ or cash collateral tied up with their insurance carriers. Create an online pandemic resource center to help customers’ businesses and employees by providing instant access to FAQs, recovery plans, compliance guidebooks, access to pertinent webinars and continuous updates on changing regulations. Coca-Cola CEO James Quincey announced that the company plans to roll out its first hard seltzer, which will be made under the Topo Chico brand acquired by Coca-Cola in 2017, in the U.S. in 2021's first half. FDA Announces FSMA Food Traceability Proposed Rule, a Major Milestone in the New Era of Smarter Food Safety
Plant-Based ‘Bacon’ Burger Launched in Partnership with Univ. of Mass. Sweet Earth Foods, a Nestlé brand and award-winning plant-based food innovator, recently announced the launch of their Plant-Based Triple Play, the first fully plant-based “bac’n cheezeburger” to debut in food service. The launch debuted at the University of Massachusetts Dining Program, which is the largest collegiate dining program in America and a recognized leader in campus food quality, nutrition and innovation. The partnership with UMass marks the first time the PB Triple Play will be available for food-service customers.

The U.S. Food and Drug Administration has announced a proposed rule to establish additional traceability record keeping requirements for certain foods. The FDA also published a draft Food Traceability List, which describes the foods that would be subject to the proposed requirements. The list includes leafy greens, fresh cut fruits and vegetables, some types of fish, shell eggs, nut butters and more. The proposed rule, Requirements for Additional Traceability Records for Certain Foods (Food Traceability Proposed Rule) is a key component of the FDA’s New Era of Smarter Food Safety Blueprint and would implement Section 204(d) of the FDA Food Safety Modernization Act (FSMA). If finalized, the proposal would standardize the data elements and information that firms must establish and maintain, and the information they would need to send to the next entity in the supply chain to facilitate rapid and accurate traceability. At the heart of the proposal is a requirement for those who manufacture, process, pack or hold a food on the Food Traceability List to establish and maintain records associated with specific Critical Tracking Events (CTEs): growing, receiving, transforming, creating and shipping. For each CTE, entities would be required to establish and maintain records containing Key Data Elements (KDEs). Examples of KDEs include the traceability lot code, the date the product was received, the date the product was shipped and a product description. The proposed rule would require records to be maintained as either electronic, original paper records or true copies. In addition, the proposal states that in the event of a foodborne illness outbreak, a product recall, or other threat to public health, the FDA could require that firms submit, within 24 hours, an electronic sortable spreadsheet containing relevant traceability information for specific foods and date ranges. The proposed rule and draft Food Traceability List are available for public comment for a 120 days from the date of publication. -Source: U.S. Food and Drug Administration
Chicago Restaurant Group Pivots to Making PPE Masks Desperate times call for desperate measures, and with 100,000 square feet of virtually unusable restaurant space and hundreds of employees’ livelihoods at stake, Sam Sanchez (vice chair of the Illinois Restaurant Association, founder & CEO of Samco Enterprises and Third Coast Hospitality) knew he had to act fast. Given the unknown fate of the restaurant industry, Sanchez’s entrepreneurial instinct kicked in and he ventured outside his comfort zone. Together with partners Michael Gonzalez and Bing Zhou, they carved out a section of unused space (due to mandated capacity limitations) in the back of Old Crow Smokehouse in Chicago and put their money where they felt it could do the most: American manufacturing. In a room that would have been full of celebration, you’ll now find a production line of SDS Blocker (made in the USA) three-layer face masks, inventory of hand sanitizer and a discovery team working on new personal protective equipment designed especially with hospitality and other essential workers in mind. Through manufacturing the group was able to bring longtime employees back to work and create new jobs for the community. Their office team is now designing packaging and learning a new market, the legal team is working on FDA and patent approvals, and jobs in production, packaging and fulfillment were created for those who struggled to find work during the shutdown. Hotel at Purdue University Marks New Era of Hospitality and Dining
Purdue University in West Lafayette, Ind., is ushering in a new era in hospitality to campus with the reopening of the historic Union Club Hotel. The 182-room hotel recently completed a comprehensive $35 million, yearlong renovation where snapshots of Purdue’s legacy can be found everywhere, including in the names of its three new dining concepts: 8Eleven Bistro, Boiler Up Bar and Leaps Coffee & Artisan Pastries for guests and the public. The Union Club Hotel renovation involved an overhaul of guest rooms and public spaces. Throughout the renovation, original Purdue architecture and academic-inspired design are preserved in carpet patterns, upholstery, room fixtures and countless other elements in the hotel. “We want our alumni to be proud of the new hotel,” said Vicki Wicks, general manager at the Union Club Hotel, “and those that didn’t attend Purdue to be impressed enough to share the experience with their friends and colleagues after their stay.” The hotel will also be used as a hands-on learning laboratory for students in Purdue’s School of Hospitality and Tourism Management, a program expected to roll out in 2021.

To provide some much-needed relief during the COVID-19 pandemic, Frito-Lay has partnered with Feed the Children, a leading nonprofit focused on alleviating childhood hunger, to launch the "Building the Future Together" initiative supporting thousands of students across the U.S. The program will provide shelf-stable food to supplement more than a quartermillion meals and distribute 500,000 pantry staples, school supplies, snacks, books, hand sanitizer and personal care items to schools in underserved communities. "As a food company, we have an opportunity to serve a greater good and work to support children having access to the food and resources they need," said Steven Williams, CEO, PepsiCo Foods North America.

Mental Health Benefits n According to a survey from mental health provider Ginger, nearly 7 in 10 employees cited the COVID-19 pandemic as the most stressful time in their careers. n As employees return to work, many are experiencing financial hardship, balancing new care-giving responsibilities, managing concerns over their physical well-being, and maintaining their mental well-being and health. n To help employees navigate these times and ease their return to work, employers should consider offering or revamping an existing employee assistance program and expanding mental health resources for the next benefits plan year.
