VITO & NICK’S HITS 100 Vito & Nick’s Pizzeria is a Chicago South Side institution celebrating 100 years! Located at 8433 S. Pulaski Road for several years in Chicago, the business started out as Vito’s Tavern at 2708 Congress Parkway in 1920. The business was established by Vito Barraco and his son Nick, and in 1945 they started serving pizza. In 1965 they moved to their current location and named the restaurant Vito & Nick’s. This family-owned business has stood the test of time and continues to thrive, headed by Nick’s daughter Rose Barraco George. Rose grew up working in the restaurant and she continues to be there daily. Rose says she follows her father’s philosophy: “You are here to take care of the working-class people. Keep the prices affordable for the family. No matter what, good or bad times, you never vary the quality of the food. The secret to success is consistency.” Today, Rose’s passion is stronger than ever, and it’s become infectious, with her son and granddaughters also working in the restaurant to take care of thirsty and hungry guests. Vito & Nick’s has a nice bar area and full dining room. The thin crust pizza is the specialty of the house: It’s cut in squares, making it easy to pick up and eat with your fingers. Only two sizes, of pizza, are available—small and large—and Vito’s doesn’t deliver. The menu also includes a line of specialties such as Italian beef, Italian sausage, pasta, smelt and more. -V.M.

Military Friendly is the standard that measures an organization's commitment, effort and success in creating sustainable and meaningful benefits for the military community. Escoffier was recognized for its commitment to all branches of the U.S. military and the ability to demonstrate high levels of student support and student satisfaction as required by the Department of Defense and Veterans Administration agreements, as well as best practices within the Department of Education. “We’re honored and humbled by

The bags of gummi bears list how many flavors they contain. I picked up a bag of the 12-flavor bears and a bag of the Ultimate gummi bears, which had eight flavors with colors from fruits and vegetables. You can buy your favorite flavor in bulk, too. I also picked up a package of Pop Rocks and Broadway strawberry rolls. BUONA, 3754 W. Touhy Ave., SKOKIE, Ill.; 224-747-2333. This location recently opened. Follow the signs from the street through the parking lot to the restaurant. I ordered an Italian beef sandwich with hot peppers. It’s one of their classic sandwiches, which is always a good choice. Other classics include the Italian beef and sausage combo and the meatball sandwich. The menu includes a big selection of salads, burgers, bowls, pizza, pasta, sandwiches and more. They have numerous locations and they cater, too. DAN’S MINOCQUA FUDGE, 521 Oneida St., MINOCQUA, Wis.; 715-356-2662. This is a cute, old-fashioned candy shop. In the back of the store, there is an ice cream parlor. They have a huge selection of saltwater taffy and candies to choose from, so load up. They have homemade fudge, chocolates and “bear paws,” which are made with milk or dark chocolate, caramel and nuts. I had one with pecans and one with cashews. You have to get a few of these because they are so amazingly good! FIREHOUSE CHICAGO STYLE, 2037 N. Mannheim Rd., MELROSE PARK, Ill.; 708-629-1110. I picked up food from here in the drivethru. They have a pretty big menu. There was a picture of a Philly cheese steak on the menu, so I tried that. The cheese steak came on a soft bun with plenty of meat, along with grilled peppers, onions, mushrooms and cheese, which was very good. I also ordered some of their boneless buffalo wings and fries. Those wings were very meaty and I loved the hot sauce served on them. H MART, 711 W. Jackson Blvd., CHICAGO, Ill.; 312-966-4666. This store specializes in Asian products. The produce department had a unique selection of fruits and veggies. Their seafood and meat department were gorgeous. They had a big selection of condiments, vinegars, sauces and bases. At the top of the aisles, they had all sorts of different housewares to choose from. They definitely utilize every inch of space there. I picked up a variety of items, including chopsticks, rice candy, OKF watermelon juice and Calpico mango juice. From the snack section, I bought some Hapi mixed crackers and a bag of hot chili flavor wheat crackers. OBERWEIS DAIRY, 515 Roosevelt Rd., GLEN ELLYN, Ill.; 630858-0234. Instead of going into the store, I decided to go thru the drive-thru. If you go in the store, you may be tempted to pick up a few containers of ice cream and some of their bottled lemonade, which is so refreshing. You can find their milk and lemonade in some grocery stores. They have two sizes of shakes: regular and large. I ordered a regular-size chocolate shake, which came with a cookie and whipped cream. It was smooth and creamy. ORIGINAL RAINBOW CONE, 9233 S. Western Ave., CHICAGO, Ill.; 773-238-9833. The Original Rainbow Cone is a long-standing seasonal ice cream destination serving cones, shakes, sundaes and banana splits. They also send out a food truck filled with their ice cream across the Chicago area. The truck happened to be in front of a Buona in Glendale Heights, and I tried the Original Rainbow Cone. This cone consisted of five kinds of ice cream—chocolate, strawberry, Palmer House, pistachio, orange sherbet—available on a cone or in a cup. I never thought those flavors would go well together, but they did. It can get messy if you don’t eat it quickly.

Factors to Consider When Setting Up Self-Delivery
There are many ways of overcoming food-service challenges during COVID-19, but here’s one that hasn’t been very popular of late: self delivery. Suddenly, it’s gaining traction: Popular restaurants such as Portillo’s announced a new delivery program. Here is what you need to consider for self delivery. Your menu: Keep your delivery menu simple, small and focused. What dishes are you good at? Add only great sellers, nothing more. Travel: Test it at 30 and 45 minutes. Not all food travels well. Cost: Your items—even third-party—must generate strong margins. As a retailer you have one set of offerings and as a wholesaler another one, because the cost structure is different. Safety: Are your establishment, employees and food safe? Communicate your safe practices everywhere. Prepare a short script for phone orders. Packaging must be secure. Use a sticker to make it tamper-proof. Communicate to your customers: Your delivery protocols? Hit the details; sanitation, production, packaging, glove usage, final steps upon arriving. Safety checklist, signed. Make it personal and caring. Implement email campaigns, geo-targeted Facebook ads and paid Google search. Tell customers that supporting direct channels ensures you can keep the doors open. Communicate your fees and reasons for the prices. Your team: Hiring a delivery driver is challenging. COVID has made the job market better in some ways because staff may be looking for more hours. Your team should follow these guidelines. Speak English, be polite, smile, make eye contact, be well groomed, don’t smoke, know the menu, have a cell phone, know the area, able to handle interaction with a customer. If vehicles are needed for delivery, then there are a few more things that are required: A safe and well-functioning vehicle; a valid driver’s license and insurance. Implementing self-delivery has its challenges, but can offer you incredible rewards. Owning your customer touch points is crucial to winning, and this is true now more than ever. Tulkoff Food to Build in Cincinnati Tulkoff Food Products, Inc. one of the nation’s leading food manufacturers of condiments, specialty sauces, dressings and ingredients has announced that it will expand its current U.S. manufacturing footprint with a new facility in Cincinnati, Ohio. This expansion responds to years of increasing demand and growth in the Baltimore-based company’s private label and copack division of their business. The building sits on 9.5 acres and will be fitted to include 52,000 square feet of manufacturing space and 7,300 square feet of administrative space. The building and manufacturing practices will be SQF certified, and the facility is expected to be fully operational by early 2021.

Trucking Industry Adds Freight, Jobs
Pods Show Lettuce Can Be Grown Pathogen Free GP Solutions Inc., developer of controlled environment indoor micro-farms called GrowPods, released test results showing lettuce grown in their systems to be free of dangerous pathogens. The tests were conducted by Midwest Laboratories in Nebraska, and show zero levels of salmonella, listeria and E. coli. GP Solutions developed GrowPods so that farmers can grow contaminant-free food. GrowPods are controlled environment micro-farms with a sealed eco-system, purified air and water, and a pest-free environment that can eliminate pathogens. The company also operates its own units and provides clean food to local markets and stores. According to the Centers for Disease Control, about 48 million people get sick each year from food. The trucking industry generated $791.7 billion in revenue in 2019, down from $796.7 in 2018, and moved 11.84 billion tons of freight, up from 11.49 billion tons in 2018. Restaurant Association Names Leader Sodexo Earns Accolades for The National Restaurant Association named former Sysco Corp. CEO Tom Bené to head the Inclusion industry trade association and its educational foundation, the group announced. Bené assumed leadership at the Washington, D.C.-based association on June 1, succeeding Dawn Sweeney, who retired at the end of 2019 after a dozen years with the group. The position had been held on an interim basis by Marvin Irby, the association’s chief financial and people officer. Bené stepped down as president and CEO of Houston-based Sysco Corp., the food distribution giant, at the end of January. Bené has worked in the food-service industry for more than 30 years. Prior to his Sysco tenure, he served as president of PepsiCo Foodservice from 2011 until 2013 and worked in a variety of leadership roles in his 23 years at the company.

Frozen Pizza Sales Soar In Pandemic
Within a month of the U.S. government’s March 13 COVID-19 state of emergency declaration, more than a third (38%) of consumers told Datassential they were spending more per grocery store visit to stock up on food, including frozen goods, and other staples. Research from the American Frozen Food Institute confirms that 70% of consumers purchased more frozen foods than usual in the first five weeks of the crisis. Frozen pizza, in particular, has been a popular retail choice. In March alone, Americans spent $275 million on it—a 92% increase from the same time period a year ago.

The park in Lemont features activities for all ages and abilities. Olympia Foods Sees Sales Increases Good News: Food Industry News advertiser Olympia Foods is reporting strong sales gains from existing customers, as well as increases in new accounts buying their “carved off the spit” products. These include pre-carved gyros, chicken or pork al pastor, traditional Greek chicken and chicken shawarma items. In addition to reducing waste and improving consistency, these items have helped solve labor issues for many operators, who, due to the COVID-19 pandemic, are having a hard time getting employees to come to work. Olympia also reports increases in sales of their new line of premium-oven ready pizza crusts, which enable owners to still make delicious, highquality pizza. The company has been serving the industry for nearly 50 years. Unlike some other food manufacturers, Olympia has not had issues supplying the market.

Premium Quality Whipped Butter Consumers Making More Trips to the Grocery Store, Study Says The latest CPG Clarity Study, an ongoing series designed to analyze real-time and future consumer shopping and usage behaviors, shows a slow return to normalcy in the grocery and household essentials space. According to the study, developed by Cadent Consulting Group and Fetch Rewards, consumers are increasing their frequency of shopping trips and finding fewer empty shelves once at the store. Shoppers are also expressing fears of an uncertain economic future, however, and report higher prices on the brands they prefer. This is the second installment of the CPG Clarity Study, which marries extensive consumer surveying with purchasing data gathered from millions of consumers across the U.S. Consumers are expressing a better and more normal shopping experience since the first Study was researched and compiled in June. While behaviors are not at all near pre-COVID levels, shoppers are visiting stores more frequently and purchasing less per visit. In April, shoppers were averaging just over five shopping trips every two-week period with an average receipt of $60. Based on data from mid-June, shoppers averaged more than six shopping trips every two weeks and their per trip expenditure fell to $51. The trend is positive, but still a far cry from a year ago when trips over two weeks were in the double digits. The number of survey respondents reporting an inability to find their preferred brands is down 10 percent in recent weeks. This has resulted in less “scavenger shopping” and fewer instances of shoppers buying “whatever option is available” in a particular category. At the same time, however, 60 percent of shoppers reported frustration with higher prices. -PRNewswire

Neapolitan, German chocolate cake and Arctic tundra are the three new flavors released by Chocolate Shoppe Ice Cream Company out of Madison, Wis., this summer. The company that has been making super-premium ice cream for more than 50 years has focused its attention on adding personality to classic flavors. Neapolitan has combined three awardwinning flavors to customize the classic ice cream. Arctic tundra is a customer creation from a 2019 new flavor contest. The ice cream has white chocolate flakes and a fudge ribbon in a crisp, white mint ice cream. The last single batch flavor for the season is classic German chocolate cake. The company previously made the flavor in the 1990s, but the new release is enhanced. Chocolate Shoppe Ice Cream Company looks forward to creating more unique flavors and to continuing to serve hundreds of wholesale customers nationwide.

Researchers found increasing consumption of whole grain foods reduces the risk of developing Type 2 diabetes, according to a study published in the BMJ journal. People who ate whole grains the most frequently (two or more servings per week) had a 29% lower rate of a Type 2 diabetes diagnosis than those who consumed the least amount of whole grains (never or less than one serving per month). The research showed the benefits of whole grain intake plateaued after two servings per week.

Aldi Is Named Top Value Grocer and Is Set to Open More New Stores Aldi has been named the top grocer for value this year, according to the Market Force Information Grocery Benchmark Study, marking the retailer’s 10th straight year as Value Leader. Aldi’s private labels were also named as U.S. shoppers’ most preferred, the study found. The Batavia, Ill.-based company recently announced that it plans to
open more than 70 new stores by the end of the year. The grocer will enter the greater Phoenix market and will support further Gulf Coast store expansion with a new distribution center in Loxley, Ala. In recent years, Aldi has invested more than $5 billion in a growth initiative to update existing stores and to open hundreds of new locations.

Anti-Cancer Lowdown on Herbs, Spices Many spices and herbs are believed to be imbued with health-building properties and have anti-cancer effects. Herbs and spices are believed to be full of antioxidants, which prevent the damage that free radicals can do to cells. The National Cancer Institute has identified the following herbs and spices as having cancer-preventing properties: tarragon, cumin, coriander, anise, caraway, turmeric, fennel, rosemary, thyme, oregano and sage. Some of these—caraway, tarragon, fennel and cumin— may also prevent tumor growth, and they are believed to reduce cholesterol levels. Coriander, it is believed, is effective in combating carcinogens. Turmeric contains curcumin, which gives it a yellow color, and has been shown to protect mice against Alzheimer’s. Saffron and paprika are believed to stimulate immunity. Cloves and nutmeg are believed to fight bacteria, and chili peppers and ginger might help prevent tumor formation. Cinnamon could be a possible treatment for diabetes in the future. One to two teaspoons were found to lower blood sugar and prevent insulin spikes.
Domino’s Sales Surge Domino’s had a particularly strong second quarter, with same-store sales up 16.1% for U.S. stores and up 1.3% for international stores. Global retail sales growth increased 5.7% systemwide, affected by the U.S. samestore sales growth, but were negatively affected by temporary store closures, particularly in international markets. KFC Enters the Chicken Sandwich Wars When Popeyes introduced and brought back its famous classic and spicy sandwich, same store sales surged 38% in the fourth quarter of 2019. Even when the coronavirus flattened business in mid-March, Popeyes reported first-quarter same store sales growth of 29.2%. Is it time for Popeyes to declare victory in the sandwich wars? Not so fast, says Ethan Chernofsky, vice president of marketing for Placer.ai, a foot traffic analytics firm. “While Popeyes has seen a tremendous surge, Chick-fil-A’s overall lead is significant. At no point has Popeyes come within the 2 million visits of Chick-fil-A,” Chernofsky says. Now the Colonel is entering the battle with the new KFC Chicken Sandwich. Tortilla, Pasta, Dough Demand to Rise Demand for dough, dry pasta and tortillas is forecast to advance 3.1% per year in nominal terms through 2024, according to “Dough, Dry Pasta, & Tortillas: United States,” a report recently released by Freedonia Focus Reports. Suppliers will benefit from population growth, including in the Hispanic cohort, and disposable personal income gains. While demand for prepared foods from food-service establishments will be stifled in the near term as restaurants remain closed, a return to trend is expected through 2024, as consumers will continue to place value on the convenience and entertainment of dining out. Furthermore, a preference by some consumers for higher-value niche products, such as gluten-free pasta, will boost gains in dollar terms. Other niche trends relevant to flour-based foods include marketing products that feature high-protein, heritage or ancient grain, and pulse flour. 7-Eleven Opens its 71,100th Convenience Store 7-Eleven Inc., the company that introduced convenience retailing to the world more than 90 years ago, has hit a significant milestone: the 71,100th 7-Eleven store in the world opened in Seoul, South Korea. Today, 7-Eleven is the world’s largest convenience brand. The store’s "iconic orange, green and red stripes are easily recognized in 17 countries around the world,” said Joe DePinto, 7-Eleven president and CEO. “The company got its start because an entrepreneurial ice dock employee saw his customers had a need and came up with a creative way to serve them. Most Restaurant Customers Accepting of Delivery Charges, Study Says During the lockdowns associated with the COVID-19 pandemic, many restaurants offered delivery and pickup. Unless the restaurant does the delivery itself, there are substantial commissions associated with offering delivery. Restaurant operators need to recover those costs, but must consider customers' reactions to these delivery charges. Restaurant customers were generally accepting of delivery charges, as long as those charges are seen as fair. That is one conclusion of a survey of 329 U.S. residents who had used pickup and delivery, conducted during May and June 2020, by Sheryl E. Kimes and Chaoqun Chen. One way to establish fairness is when restaurants state delivery charges as the "regular" price—with the lower cost of order pickup stated as a discount. These and other findings are found in "Consumer Perceptions of Restaurant Delivery Fees," by Kimes and Chen, posted on the sherrikimes.com website. "One particularly interesting finding was related to whether delivery was conducted by the restaurant or by a delivery provider," said Kimes, who is professor emerita, Cornell University School of Hotel Administration, and a visiting professor at National University of Singapore School of Business. "As part of the survey, we reminded half of the respondents that it costs restaurants money to use delivery firms. Those respondents were more likely to favor delivery by the restaurant itself, given the understanding that restaurants need to cover their costs." "In terms of delivery charges, we found that our respondents generally considered flat fees or distance-based fees to be fair," added Chen, who is assistant professor, Cox School of Business, at Southern Methodist University. Drive-Thru Sales Give McDonald’s A Needed Push Drive-thru, which is featured at nearly 95% of McDonald's U.S. locations, allowed for nearly all of the chain's domestic restaurants to remain open during the novel coronavirus pandemic, said McDonald's CFO Kevin Ozan. During the second quarter of 2020, drive-thru accounted for nearly 90% of sales as customers shifted to a more contactless experience. The market also saw an uptick in delivery and digital transactions, Ozan said. "Our drive-thrus overall have proven to be a competitive advantage for us. Markets with a higher percentage of drive-thrus are showing a quicker recovery," he said. Delta Requires Medical Consultation for Travelers Who Refuse to Wear Masks Medical research tells us that wearing a mask is one of the most effective ways to reduce the COVID-19 infection rate. That's why Delta Airlines requires customers and employees to wear a mask or face covering. And further, “Any mask with an exhaust valve is not approved as an acceptable face mask for customers traveling on any Delta operated flight.” Effective July 20, customers who indicate they have an underlying condition that prevents them from wearing a mask are required to complete a "Clearance-
To-Fly" process before being permitted to travel. The virtual consultation process facilitated by a Delta agent with a third-party medical professional could take up to an hour, so customers needing a rare exemption should show up to the airport early. Delta is encouraging such customers to reconsider travel altogether. A "Clearance-ToFly" process is required for each trip. Exceptions that remain in place that do not require pre-travel clearance include young children who cannot maintain a face covering and unaccompanied minors.

Survey Shows That More Americans Say They Are Less Likely to Travel Soon The latest polling data confirms that recent news about the COVID-19 pandemic has considerably worsened Americans’ overall feeling about returning to travel. The percentage of poll respondents who say they will travel this fall has slid to 36%, down from 50% in early June, according to Destination Analysts. Meanwhile, Harris Poll figures show that: n 58% of leisure travelers say they will substitute vacations with staycations for the remainder of the year. n While 43% say they miss flying on a plane, only 37% say they feel safe flying right now. n 74% of business travelers are more likely to substitute business meetings that require flying with virtual meetings for the remainder of the year. More than three-quarters (77%) of respondents support states enacting mandatory 14-day quarantines for out-of-state travelers from states with a high resurgence of COVID-19.

Amtrak Implements Procedures to Help Protect Passengers During COVID-19 With a new normal comes a new way for consumers to travel—and with that new travel comes new standards to uphold. In collaboration with a full-time medical director and public health and safety team, Amtrak has studied, analyzed and made improvements to its travel experience. Amtrak is delivering a new standard of travel with enhanced safety and cleaning measures. Here are five helpful tips to keep in mind when preparing for your next trip:

To make trips contactless and encourage physical distancing at stations, Amtrak encourages boarding with eTickets, which conductors scan from the Amtrak app. To reduce crowds at departure boards, Amtrak app users can receive gate and track information via push notification at select stations. 2. Find the best seat in the house. Amtrak is limiting bookings on most trains to allow for more physical distancing in seating areas. Individuals traveling alone may use the seat next to them for personal belongings, while friends and family members can find seats together. Likewise, private rooms, offered on many routes across the country,

provide an option for customers seeking privacy and space on a short trip. 3. Face coverings required. To ensure everyone’s safety, Amtrak is requiring that all customers and employees in stations, on trains and Thruway Buses wear facial coverings throughout their trip. Face masks can be removed when customers are in their private rooms. 4. Expect a clean scene. In addition to following industry recommendations for deep cleaning and sanitizing of its trains prior to, during and after service, all of the trains are equipped with onboard filtration systems with a fresh air exchange rate every 4-5 minutes. Amtrak also removed all nonsafety materials from seatback pockets to reduce exposure and will be installing hand sanitizer dispenses in cafe cars. 5. The onboard dining experience has been re-envisioned all in the name of safety. Signage, protective plastic barriers and markers leading up to cafe counters are being added to promote physical distancing and hand sanitizer dispensers are being installed for customer use. Onboard food and beverage services have been streamlined. While customers in private rooms are encouraged to opt for complimentary room service, dining and lounge seating will remain available on select long distance routes with physical distancing protocols in place.
Portillo’s Expands to Suburban Michigan, near Detroit Portillo’s, the fast-casual restaurant concept known for its menu of Chicagostyle favorites, is excited to announce its forthcoming restaurant in Sterling Heights, Mich. This marks the brand’s first-ever restaurant in Michigan, the ninth state for the chain. The site for the upcoming Portillo’s restaurant is located on Hall Road, a popular restaurant and retail corridor in the northern suburb of Detroit. “We have had Portillo’s fans asking us to come to Michigan for years,” said Michael Osanloo, CEO of Portillo’s. “We can’t wait to be a part of such a great, thriving community in Sterling Heights.” Guests can expect to enjoy Portillo’s signature menu items like Chicago-style hot dogs, Italian beef sandwiches, char-grilled burgers and Portillo’s chocolate cake. The 7,900-square-foot restaurant is expected to open in the second half of 2021. It will feature seating for more than 180 guests, a seasonal outdoor patio with seating for more than 50 guests, and double drive-thru lanes. Once complete, the restaurant will be the first Portillo’s location to feature a garagelike environment. Paying homage to the Motor City, the interior will draw décor inspiration from the automotive history of Sterling Heights and its surrounding areas. In Chicago, construction is under way on Portillo’s first Northwest Side location on Addison just west of Kimball Avenue. That site is expected to open later this year. Additionally, the company will hire a few hundred drivers as it rolls out a new in-house delivery service. The 62-unit fast-casual chain said it will also continue offering delivery with third-party partners DoorDash and Uber Eats.

Grubhub’s Top Orders Delivery orders for spicy chicken sandwiches, acai bowls, plant-based foods and Mexican dishes saw a significant uptick from Jan. 1 through June 20, according to Grubhub’s comparison to the same period last year.
