Jaleo opened in July in the thriving River North neighborhood, bringing Chicago the first and most personal restaurant concept from José Andrés, world-renowned chef, entrepreneur and humanitarian. Located at 500 N. Clark Street, Jaleo brings alive the spirit and flavors of modern-day Spain through an impressive assortment of tapas, paellas, sangrias, Spanish wines and sherries, all within a festive, casual atmosphere. “I love being able to share the flavors and spirit of Spain by bringing this special place to new destinations,” says Andrés. “In Spanish, Jaleo means revelry — a lively celebration — and with the bustling excitement of River North, I cannot think of a better neighborhood to be opening in!” The menu is authentically Spanish with local ingredients that are simply prepared, inspired by traditional dishes of the chef’s childhood and elevated through his experiences, talents and creativity. Jaleo boasts a number of new experiences unique to Chicago, including tableside paella presentations and a full tapas bar, helmed by head chef Justin DePhillips, who moved up to Chicago from Jaleo Disney Springs, as well as the opening of Pigtail, the forthcoming speakeasy. Village of Wheeling Studies Ways to Boost Its Local Dining Scene You’ve probably driven down Milwaukee Avenue in Wheeling and noticed iconic restaurants such as Bob Chinn’s Crab House, Superdawg drive-in, Saranello’s, Phil Stefani’s Tuscany, Boston Fish Market and many more restaurants all in a row. Feeling hungry? You are not alone. This stretch of Milwaukee has long been known as Wheeling’s Restaurant Row, and the Village of Wheeling will soon be working with a team of industry experts to study the unique advantages and opportunities of this corridor, including the feasibility of installing improvements along the adjacent west bank of the Des Plaines River. The foremost goal of the Village’s Wheeling Restaurant Row Corridor Plan and River Walk Feasibility Study is to enhance Milwaukee Avenue’s sense of place — to ensure that a traveler on Wheeling’s portion of this important thoroughfare thinks, “I know I am in Wheeling’s Restaurant Row.” The recommendations that come out of this study will lead to future enhancements along Milwaukee Avenue, and possibly on portions of the Des Plaines River, to foster a unique environment for Wheeling’s existing and future restaurants. You can see the Village of Wheeling’s ad on page 17 of this issue.

AMAZON FRESH, 404 Army Trail Rd., BLOOMINGDALE, Ill.; 888280-4331. This is a grocery store like you’ve never experienced before. Log in to an interactive shopping cart with a screen that automatically scans your items as you put them in your cart. Ready to pay? Roll the cart over to the green area near the checkout, and it will total your items and charge your Amazon account. Just take your groceries and go! BILLY JO’S, 8002 S. Harlem Ave., BRIDGEVIEW, Ill.; 708-701-2926. I received prompt and friendly service at the drive-thru here. They have a big menu offering burgers, gyros, homemade soups, Italian beef sandwiches, salads, subs and more. I ordered the chopped steak meal. The sandwich itself was huge, and it was sliced in two pieces making it easier to eat. It was topped with cheese, lettuce, tomato and onion and came on garlic bread. I loved it, and to go with that, an order of fries — they have the skinny ones — along with a lemonade. CAPRIOTTI’S SANDWICH SHOP, 902 Roby Drive, HAMMOND, Ind.; 219-370-2222. You know you’ve found a good sandwich place when you see construction workers lined up there on their lunch break. The best sandwich here is the Italian sub, which comes with Genoa salami, capocollo, prosciuttini and provolone. Their interesting twist on a Philly cheesesteak comes with ground beef, while their tasty chicken chipotle crunch sandwich is topped with American cheese, a chipotle ranch dressing and breaded crispy cheddar onions. CRUMBL COOKIES, 106 E. Golf Rd., SCHAUMBURG, Ill.; 224-3770925. The first time I went here, the line was so long that I decided to come back. On my second visit, I came during the day so it wasn’t as long of a wait. They have a rotating menu of cookies. I ordered a few: a cotton candy cookie, berries ‘n’ cream and a milk chocolate chip cookie. Those cookies were so good, and the frosting on them is amazing. They’re packaged in an adorable pink box. The staff checks your order with you to make sure everything is correct. DINI’S ICE CREAM SHOPPE, 740 W. Army Trail Rd., CAROL STREAM, Ill.; 224-366-0609. This is a casual ice cream parlor offering dishes, cones, sundaes, hand-dipped shakes/malts, banana splits, soda floats and more. Over 40 flavors of ice cream are available. They also scoop pints and quarts. I had a generous scoop of the Munchie Madness, which consisted of sweet cake batter ice cream swirled with a salted caramel ripple and brimming with Oreos, M&M pieces and peanut butter cups. They have a second location in Roselle. FAIRPLAY FOODS, 8700 S. Cicero Ave., OAK LAWN, Ill.; 708-5764130. This is a large grocery store and what is nice about it is that the aisles are a good size. The bakery was beautiful. I found some treats from the Racine Bakery in Wisconsin; I picked up some of their raisin twist bread. Their meat and seafood department offers a big selection of products along with great prices. The liquor department had a huge display of Corona, Modelo and Miller Life beer. They have all your grocery needs. I also picked up some snack items including a bag of Chicago Gold gourmet popcorn and Zapp’s Evil Eye potato chips. OBED & ISAAC’S RESTAURANT AND MICROBREWERY, 321 NE Madison Ave., PEORIA, Ill.; 309-306-0190. This restaurant was built on the site of a historic renovated church with beautiful stained glass windows and a patio. The restaurant serves craft beer on tap made in the brewery just beyond the bar and elevated pub grub. I chose to eat in their large outdoor seating area, which is dog-friendly. I had their famous Horseshoe, which is an open-faced sandwich that begins with thick-sliced toasted bread, your choice of meat (or veggie burger), smothered with a secret cheese sauce, then topped with French fries. I paired the meal with Obed’s Pride Amber Ale, which is one of their flagship beers. Everything was amazing!

How the Yellow Grease Market Can Affect Your Business By Todd Mathes, SVP of Restaurant Services at DAR PRO Solutions
Recycling services convert used cooking oil into yellow grease, a valuable component in producing renewable diesel, as well as animal feed and other consumer products. The price of yellow grease is rising. One reason for this is supply. The pandemic closed thousands of restaurants, meaning the supply diminished and demand surged. Another factor is an increasing demand for cleaner fuel alternatives. Why does this matter? Longevity. In a healthy market, competition increases. More providers appear looking to capitalize. They’ll offer a generous rebate. Before deciding, ask:
Study: Cannabis Food and Drink Surge Expected
The ongoing legalization of cannabis is building a market in the U.S. that a new study shows could grow by 15% in the next five years and hit the $20 billion mark. The report from Research and Markets says more mainstream and high-end products are incorporating CBD compounds into food and beverage items, with much of the demand for cannabis products being driven by baby boomers. -Source: Winsight

mass-produced through co-packing. The sauces themselves offer a variety of heat levels and unique flavor profiles. Each Awe-Sauce Hot Sauce is handcrafted in small batches. They are gourmet quality, gluten free, parve, vegan and locally made. The peppers are all organically grown without chemical fertilizers or pesticides. Each concentrated flavor is designed around specific ethnic cuisines. They can be used in a variety of ways, from condiment to seasoning in chili, soups and stews. Just remember a little goes a long way because Awe-Sauce recipes use some of the hottest peppers in the world. However, the heat is balanced by unique seasoning blends. With a given Awe-Sauce you can take a trip to the Caribbean, Jamaica, Mexico, India or New Orleans. For instance, Dree Peppa is the ultimate Jamaican jerk hot sauce. Its complexity combines citrus and savory and balances a little sweetness with the heat of three high Scoville scale peppers. Mr. James loves doing tasting pop-ups and sharing Awe-Sauce with others. He encourages people to experiment with Awe-Sauce in their own cooking. For more information, visit awe-sauce.com.

The announcement comes as the National Restaurant Association reports almost half of culinary establishments are operating with 20 percent less staff than pre-pandemic employment levels and, as accommodations and food service job openings spiked to nearly 1 million in March, according to the Bureau of Labor Statistics. "Now more than ever, our employer partners are looking to us to help them find qualified candidates and not just for a short-term fix," said Patricia Souza, Escoffier's vice president of student and career services. "Our partners know they're getting professionally trained culinary candidates who can hit the ground running and are invested in career growth and development at their establishments. Our students benefit from insider access to positions that match their credentials and culinary growth plans."

Escoffier employer partners are represented from all seven segments of the culinary industry including: lodging, catering, restaurants, retail food, institutional and commercial dining, leisure and recreation and food manufacturers/wholesalers.

Gindo’s Spice of Life Hot Sauces: Flavors for Every Season Chris “Gindo” Ginder, the creative mastermind behind Gindo’s Spice of Life Hot Sauces, approaches each sauce like a chef to a dish. He finds inspiration everywhere: ingredients at a farmers market, a meal he had at a restaurant, an idea he had with his wife and business partner, Mary, the changing of the seasons, or a famous style of sauce he heard about from another place in the world. His ideas are endless. Like a good craft brewery, Gindo makes three year-round sauces, plus a different small batch sauce every week of the year. Not only that, he makes dozens of collaboration hot sauces with local breweries, garlic farmers, coffee roasters and more. Each sauce is richly complex yet well-balanced and intended to enhance food by adding flavor, aroma, color, texture and nutrients. Gindo likes to say his goal is to inspire creativity in the kitchen and support local farms and businesses. This year marks Gindo’s 10th anniversary, and the company has a lot to celebrate: Not only the milestone of a decade in business, the Ginders also just built their first brick-and-mortar manufacturing facility (pictured at right), complete with warehouse and retail space in St. Charles, Ill.

Chef José Andrés Brings the Festive Jaleo to Chicago Continued from page 1 From the extensive selection of tapas, signatures at Jaleo include endivias con queso de cabra y naranjas (endives with goat cheese, oranges, almonds and roasted garlic dressing); gambas a la zahara, head-on shrimp prepared as Andrés does in summer with garlic and olive oil; and for dessert, the quesada asturiana, a Basquestyle “burnt” cheesecake made with Payoyo cheese and a creamy center. Four varieties of Photo by Reema Desai paella are served tableside by the pan, including: arroz rabo de toro, which features Meloso-style rice and braised oxtail and is unique to Jaleo Chicago; a classic paella Valenciana; and a traditional arroz de verduras y setas de temporada, made with seasonal vegetables and mushrooms; and arroz a banda con gambas y sepia, made with cuttlefish sofrito and head-on shrimp. Two tasting menus — the Jaleo Experience and José’s Way — offer a culinary journey through Spain with a selection of modern-day and traditional tapas. The beverage program reflects how people drink in Spain, including four varieties of the country’s signature cocktail, gin and tonic. The Spanish wine and sherry list is made approachable by categories based on body and style. Two varieties of sangria — sangría roja La Sueca and sangría de cava — are served by the glass or pitcher. Designed by renowned Barcelona-based firm, Capella Garcia, the open 240-seat interior is filled with bold colors representative of the festive spirit and personality of Andrés. With the recent closure of Clark Street, Jaleo offers an expanded patio, reminiscent of the pedestrian-only streets of Barcelona. The original Jaleo opened in 1993 in Washington, D.C. This Chicago location marks the fifth location worldwide, which will be followed by the sixth location opening in Dubai next year. Jaleo is at 500 N. Clark Street in River North, open for dinner five nights a week. Hours are 4 p.m. to 10 p.m. Wednesday, Thursday and Sunday; and 4 p.m. to 11 p.m. Friday and Saturday. a

Salumeria Lardon Features Cheeses, Charcuterie and Sandwiches
Cured meats are the foundation of Lardon, the first restaurant from Meadowlark Hospitality, a newly formed restaurant group from Steve Lewis (at right in photo) and acclaimed chef Chris Thompson (left in photo). The all-day salumeria recently opened, bringing cured meats, artisanal cheeses, sandwiches and coffee to 2200 N. California Ave. in Chicago. Inspired in part by old-world butcher shops, salumerias and cafes across the globe, Lardon specializes in charcuterie and salumi, all made on site. At the heartbeat of the restaurant is their charcuterie cave, a one-ofa-kind curing room. A white subway tile-lined cabinet with a massive picture window sits at the center of the room where guests can view Thompson’s cured meat offerings. Most meats take anywhere from two to three months to cure, while select offerings can take up to a year. Patience and attention to detail are what sets Lardon’s cured meat program in a class by itself in the Chicago food scene. Thompson’s charcuterie program focuses on the utilization of the whole animal, sourcing from local farmers and purveyors throughout the Midwest. In addition to the deli menu, Lardon plans to launch an eight-item dinner menu that complements their passion for cured meats. Chef Thompson’s knowledge and expertise of coastal Mediterranean cooking shines through in dishes like their mussels aux Provencal with house-made Nduja, tomato, garlic and white wine or their crispy veal sweetbreads featuring snap peas, hen of the woods mushrooms, mint and parsley.

Shake Shack to Invest $10M in Employees
Shake Shack will put more than $10 million toward its restaurant employees over the next 12 months in “a commitment to attracting and retaining the best restaurant talent,” according to a press release. More than $9 million will be allocated for hourly wage increases for store employees, and roughly $1 million will be put toward hiring bonuses. The company also will invest in its leadership development programs. The pledge follows a $6 million investment in 2020 to increase wages, which included a year-end bonus of $250 to $400 and a 10% premium pay increase provided from the end of April through the summer to frontline staff. Shake Shack’s investment in its team members suggests that even brands known for high wages and progressive employee benefits will need to shell out to overcome the industry’s historic labor crisis. It boosted wages at over half of its locations last year and two-thirds of its locations this year. These pay bumps could be a savvy way to fight the labor shortage, as 69% of workers who have left the industry report that a livable wage would make them consider returning, per a One Fair Wage report. -Source: Restaurant Dive

Izard Brings Her Girl & the Goat to LA
When Stephanie Izard told a chef she knew that she planned to open an offshoot of her flagship Chicago restaurant Girl & the Goat in Los Angeles, they had a warning: “You’re going to have to just put chicken on salad out there.” Would her Midwest, meaty, shareable dishes fly on the coast? Would gluten now be the enemy to her big bread program? Would she have to make healthier versions of her food? But her colleague’s prediction doesn’t hold. “Our goat liver mousse, we sell four times as many here a night as we do in Chicago,” Izard tells Robb Report. “People have misconceptions about what people in LA want to eat. People are down to try a whole bunch of things.” Izard, the first woman to win “Top Chef,” has packed people into her flagship Girl & the Goat for more than a decade and opened multiple concepts in Chicago. But this project may be her biggest challenge. The LA Girl & the Goat will be her and her business partners’ — Boka Restaurant Group — first time opening a property outside of Chicago. So Izard is putting roots down in LA: She has an apartment around the corner from Girl & the Goat. She’ll continue to shuttle between the two cities, keeping an eye on both closely. -Source: Robb

A law enforcement operation jointly coordinated by INTERPOL and Europol has highlighted the vast quantities of illicit food and beverage products circulating throughout the global economy. Codenamed OPSON X, the operation mobilized police, customs, national food regulatory authorities and private sector partners to undertake coordinated enforcement actions between December 2020 and June 2021 against illicit food and drink posing serious health risks to consumers. Operation OPSON X saw law enforcement globally net 15,451 tons of illegal products, with an estimated street value of about $62.3 million. Nearly 68,000 checks were carried out by the 72 participating countries, resulting in more than 1,000 criminal cases being opened. The enforcement actions have uncovered a wealth of new leads for food crime investigations. More than 600 arrest warrants were issued during the course of the operation, which is estimated to have disrupted the activities of 42 organized crime groups around the world. Catherine De Bolle, Europol’s executive director, highlighted that “Counterfeit and substandard food and beverage can be found both on the physical market and sold online. “The increased health risk for consumers is proportional to the reduced quality of raw materials used in the food processing system.” -Source: Homeland Security Today

Underground Reopens with a ‘Secret’ After a 15-month closure due to the COVID-19 pandemic, Billy Dec’s Underground nightclub reopened in July, heraldimg the return of Chicago’s nightlife. “The COVID pandemic has wiped out many live music and nightclub venues,” says Dec. “Historically, nightclubs have had a pivotal role in cultural evolution. The Underground family fought to stay alive and reopen because we see it as a UNDERGROUND major responsibility. It’s our duty to elevate our community platform so people can come together to celebrate music, fashion, dance, art and design.” Just as the country’s emergence from the influenza pandemic of 1918 brought about the Roaring ’20s, Dec and the Underground team have launched a secret sister venue inspired by that decade. Called the Underground Cocktail Club, the new space was set to open Lollapalooza weekend. The club will be housed in the same building as the Underground at 56 W. Illinois St., but with a separate entrance and will evoke an elevated feel of the 1920s. The Underground has garnered accolades ranging from the Chicago Tribune (“No. 1 Celebrity Spot”) and Cosmopolitan (“One of the Sexiest Places in the World”) to Entertainment Weekly (“Hottest Nightclub”).
Chef Graham Elliot Returns to Hawaii
For years, Pounders Restaurant, the signature eatery at the Polynesian Cultural Center, was churning out burgers, steaks, sandwiches and pizzas to visitors to the center or on their way to Oahu’s North Shore. But a couple of months ago — and almost by chance — chef, cookbook author and “MasterChef” judge Graham Elliot was named the restaurant’s executive chef. Elliot, a selfFood Network described Navy Brat in Oahu, sold his Chicago restaurant and moved to Oahu to surf, skate and spearfish. Hawaii “has always felt like home,” he says. “It’s not fine dining here,” he says. “It’s fun dining.” -Source: Hawaii Magazine

Diners Still Want to Keep Cocktail Delivery U.S. consumers drank 14% more alcohol during the pandemic, according to some reports, and some states helped restaurants and bars stay afloat by allowing them to offer beer, wine and cocktails in delivery and takeout orders. Now that restaurants are reopening, about half of consumers surveyed by Adweek want the looser laws to stay in place, and data shows consumers with higher incomes ordered alcohol to go more often. -Source: Adweek

Vienna Beef Inducts Bubby’s Beefs & Red Hots Into Hot Dog Hall of Fame
Vienna Beef, the legendary Chicago company synonymous with the city’s iconic hot dogs, Italian neef and other products, announced Bubby’s Beefs & Red Hots (1026 E. Higgins Road, Elk Grove Village, Ill.) was inducted into the Vienna Beef Hot Dog Hall of Fame. Bob Schwartz, vice president of Vienna Beef, bestowed the honor on the local vendor that has been providing exceptional customer service and quality food for nearly 20 years. During the induction ceremony attended by Mayor Craig Johnson, Bubby’s Beefs & Red Hots was presented with an Elk Grove Village proclamation and with a commemorative Vienna Beef Hot Dog Hall of Fame plaque, banner, pin and Hall of Fame branded T-shirts at the event. “Congratulations to Andy Arnowitz and the staff, family, friends and customers of Bubby’s Beefs & Red Hots on being the newest member of the Vienna Beef Hot Dog Hall of Fame,” said Tim O’Brien, president of Vienna Beef. “We are proud to work with beloved neighborhood restaurants like Bubby’s Beefs & Red Hots that prides itself on building longlasting relationships and featuring only the highest quality ingredients in its offerings.” Two decades ago, Andy Arnowitz, the owner of Bubby’s Beefs & Red Hots, went to work on making a lifelong dream of owning and operating a successful neighborhood hot dog stand a reality. Arnowitz has been hard at work perpetuating and enjoying his dream with his supportive wife, Sharon, and two grown daughters, Lizzie and Allison, by his side. One interesting side note is that Andy has taken this “neighborhood mom-and-pop restaurant style” and applied it to a business district. For example, Bubby’s supports local businesses by sponsoring their sports teams. Elk Grove Village is a small community with one of the largest numbers of small businesses in the Chicagoland area. From 10 a.m.-4 p.m. Monday through Friday, Arnowitz has been serving up Vienna Beef hot dogs, Polish sausages, and his Bubby’s specialty sandwiches like the meatball and Italian beef sandwich smothered in marinara sauce, and the grilled Vienna Beef salami sandwich. Bubby’s hand-cut fries are also a customer favorite. Arnowitz makes a point of knowing his customers and their families, and together with Arturo and Carlos, his key guys rounding out the team, they get the job done. “It is such an honor and celebration to be 1 standing here today acknowledging our new Hall of Fame status and approaching 20 years in business with Vienna Beef,” said Arnowitz “Thank you to the Vienna team for this recViennaBeef ognition and to our supportive customers for helping make this possible. We are so grateful to our community for helping us thrive and look forward to serving up many more Hot Dogs in the years ahead.” The Vienna Beef Hot Dog Hall of Fame was created in 2006 to recognize loyal vendors who have become landmarks in their neighborhood through outstanding customer service, community leadership, operational longevity, philanthropic efforts and devotion to quality operations.

‘Top Chef’ Alum Creates Recipes for West African Line Ayo Foods Summer is all about flavor, fun and a little bit of spice, and no one knows that better than Ayo Foods. To celebrate the return of dinner parties, cookouts and everything in between, the popular line of West-African cuisine has partnered with “Top Chef” alum Eric Adjepong to introduce two new recipes: Waakye (beans and rice) and Chicken Yassa to the Ayo family. Adjepong's Ayo dishes are available at retailers nationwide. Chef Adjepong is the perfect partner for Ayo's inaugural recipe collaboration given their shared love for the rich culture and flavors of West Africa. Adjepong draws from his Ghanian heritage to create memorable dishes that are bold, creative and comforting. Since launching in July 2020, Ayo Foods has built a loyal following of millennials, travelers and first-generation West Africans looking for a taste of home. Inspired by their Liberian family, husband and wife team Fred and Perteet Spencer launched Ayo Foods in mid-2020 with the goal of making it easier for people to experience the food of the West African diaspora.

BARTOLINI’S RESTAURANT
“Live to eat, don’t’ worry about eating to live.”-Dominic Bartolini Brothers Christopher and Dominic Bartolini opened Bartolini’s Restaurant in 1995 in Midlothian, a suburb south of Chicago. Both brothers graduated from the Culinary Institute of America in Hyde Park, N.Y. With their culinary background and family-inspired recipes passed down from their grandparents and parents, Bartolini’s has become a staple in the community. They are known for their legendary pizza and meatballs. The meatball recipe was passed down from their grandfather. They started out with a small space in a strip mall, offering carryout only. Throughout the years they have expanded the business and now have plenty of space for indoor dining. They also have a full bar with an impressive selection of bourbons along with some local beers to choose from. On certain nights you can play Triingo, a game that is a combination of bingo and trivia. You MUST try the meatballs, whether in a sandwich or on your pizza. I tried both. The Bartolini’s Meatball Lover’s Pizza came with halved meatballs and chopped meatballs; the pizza crust was delicious along with the sauce. The meatball sandwich comes with red sauce and I topped mine with their homemade Other favorites include: Over 40 Years ofgiardiniera. To survive, you must fit a market niche, do what you do better than anyone else and also show the ability to adapt to changing market forces. To make it through the last 50 years, you’d need the grit to withstand six recessions. Plus, you’d have to regularly make adjustments in services to mirror customers’ wants and needs. That’s the story of Sexton Complete Care, in a nutshell. In 1971, the company started as a commercial carpet cleaner, primarily in restaurants. As more restaurants switched to wood floors, Sexton became an expert in cleaning those too, after their crew was sent to train at the National Wood Flooring Association. Today, the installation and maintenance of wood flooring makes up the bulk of their business. As the testimonials reveal, Sexton Complete Care has built a reputation for successfully completing very difficult jobs and creating visually memorable floors. Most restaurants have quarry tile in their kitchens, but grout lines capture dirt and make it difficult to maintain a sterile back of house. After time, grout breaks down and water migrates under the tiles and destroys the flooring. Many years ago, Sexton came across a quartz floor that is seamless and that eliminates this problem. This closed system is more sanitary, durable, easy to maintain and keeps the long-term integrity of the floor. This innovation has been a game changer for their clients, providing a solution to a common pain point while also increasing the life of their investment. In addition to unkept flooring, restaurants can also get negative reviews from worn furniture, dirty drapery and “lived in” upholstery. These items usually need to be removed to be cleaned or repaired, so Sexton Complete Care developed on-location maintenance, a service that has proven quite popular. Restaurants get like-new décor without the disruption. In the last year, the COVID-19 pandemic made restaurants rethink environment sanitization routines, and Sexton adapted yet again. When they found ActivePure, a hospital-grade air sanitization technology with NASA certification, they knew it could make a difference for their clients. By installing these centralized purification systems to an existing HVAC, a location can kill nearly 100% of pathogens, including COVID-19, from surfaces and the air. Now that people are thinking more critically of clean environments, it gives restaurants a way to pass along peace of mind to their customers. The units are available for new systems, as well as portable units. Sexton’s goal going forward is to underscore the desirability of a cleaner environment in the front and back of the house. After 50 years, the biggest advantage they can offer is the knowledge accumulated. It’s something you can only get by thriving this long. They’ve seen it all, which makes a big difference to every one of their customers. Call them at 847-827-1188 and arrange a free review of your maintenance and environmental control policies. You can see Sexton Complete Care’s ad on page 6 of this issue.

UTZ Brands Celebrate 100 Years The Utz story began in Hanover, Penn., in a smalltown kitchen in 1921. Bill and Salie Utz thought potato chips could be better. They believed potato chips should be made from clean and simple ingredients to bring out the natural flavor of farmfresh potatoes. While much has changed and evolved over the past 100 years, Utz’s focus remains the same — making fresh, crunchy and great tasting snack foods. The way Bill and Salie Utz intended. After a century with strong family heritage, Utz continues to have a passion for exciting and delighting consumers with delicious snack foods made from top-quality ingredients. Utz’s products are distributed nationally through grocery, mass merchandisers, club, convenience, drug and other channels. Still based in Hanover, Utz operates fifteen facilities in Pennsylvania, Alabama, Arizona, Illinois, Indiana, Louisiana, Massachusetts, Michigan and Washington.
