This issue marks a sad occasion for myself, and for many of our readers. Kirk Rightmire, a long-time friend of mine and my partner with Westside Christian Chamber of Commerce, passed away on January 4, 2020 at the age of 56. As some of you may recall, several years back we ran a story about Kirk and his struggles with Celiac Disease, an auto-immune disease caused by an allergic reaction to gluten. I first met Kirk in 2006, when he was the marketing director at College of Biblical Studies. His career later led him to Faith West Academy, where he served as their marketing director for ten years, before once again working with College of Biblical Studies. Kirk and I were great friends, and it was an honor to get to know him. I know that he is now in Heaven with the Lord. In so many funerals that I have attended in the past, I had no certainty where the deceased would be spending eternity. With Kirk, there was no doubt. When a loved one in Christ passes away, they are forever at peace and in the presence of the Lord. For those of us left behind, we experience sorrow, but sorrow only lasts for a season. On another note, this issue features our annual Voter’s Guide. We take our time with these selections, and try to vet as many candidates as possible. We also seek outside sources for input. In doing so, we try our best to find the candidates who share the values that our readers hold. We feel that the chief issue to focus on is the sanctity of life. In Jeremiah 1:5, God says, “Before I formed you in the womb I knew you, And before you were born I consecrated you.” That said, this was probably the hardest time we’ve ever had coming up with our Voter’s Guide. So many of the candidates running are not only highly qualified individuals, but outstanding Believers as well. For instance, just about anyone running in Congressional District 22 would do a fine job representing our district. Congressman Pete Olson was an outstanding Representative for CD 22 for many years, and he will be sorely missed. Also, keep in mind that on April 11th, we are having our annual Resurrection Run Katy. The proceeds for this run support the Eagle Initiative, a 501 (C) 3 charity by Faith West Academy that benefits countless needy children in and around our community. 5 Top Parenting Resolutions for 2020 By Dr. Rebecca Deurlein It is a couple months into the new year, and while I'm a big believer in reflecting on our choices and actions and how they panned out for us, I'm also a big believer in wiping the slate clean and allowing everyone to start fresh. With that mindset, I've put together a list of resolutions for parents. Yes, you should think about what worked in the last year and what failed, but then move further into 2020 with a commitment to better parenting. I can't make any promises, but I'm fairly certain that employing at least some of these practices will lead to a more peaceful home and a closer family. 1. Make sure you save time for yourself. There's a reason this is my number one item on the list. I'm going to give it to you straight: You can't be a good parent - no matter how hard you try if you don't take care of yourself and attend to your own happiness first. Selfish? Not even a little bit. Strong parents make for strong kids. So pursue a hobby, take time as a couple, and spend an evening with your friends. You will come home relaxed and rejuvenated while fostering happiness within yourself. 2. Decide as a family that you will all spend less time in front of a screen. My family has taken several cruises where we all agreed to
put away our phones for an entire week. Here's what we got instead: eye contact, uninterrupted conversations, random musings that come when you're lying in the sun just thinking, and way more memories than selfies. If you want to communicate with your kids, put down the electronics and start talking. And insist that they do the same, no matter how much they grumble. Kids need parameters in all areas, including technology. Continued on page 8

3. Commit to speaking more kindly to one another. While everyone gets angry, it shouldn't be acceptable for members of a family to scream at each other on a regular basis, call each other names, say hurtful phrases like "I hate you!" or use profanity towards one another. Family members who respect each other live much more peacefully together. If you wouldn't talk to your friends a certain way, you shouldn't talk to your family members that way. So pause, take a
breath, and think before you speak. 4. Reserve dinner time as sacred family time. Sit down each night together and share stories of your day. Pray together at the dinner table and thank God for that day’s blessings. This will open up conversation and establish positive attitudes as you spend some time together reflecting on the day. Share the dinner chores as a family so that everyone has a role in preparation or clean up. It may sound all Continued on page 10

Dear Doctor: Is it a Cold or the Flu? By Dr. Clyde McMorris, MD, Brookshire Family Practice It seems to happen every year around this time. You develop a runny nose or your throat hurts, and you wonder; is it a cold or influenza (flu)? It is very important to be able to differentiate between the common cold and influenza. Although many of the symptoms may be similar, the treatments are very different, and the consequences of not receiving the necessary attention can be life threatening in some cases. An important clue to determine which sickness you’re dealing with is how quickly your symptoms worsen. If the symptoms appear and worsen slowly, we should consider a cold. If the symptoms attack and worsen rapidly, we should consider influenza. Your doctor can usually perform a test in their office that will help determine if your symptoms are related to a cold or influenza. Both are contagious, but here are some important differences. If you have influenza, it is particularly important that you limit contact with others, because it can cause serious illness or even death in the most vulnerable people (such as pregnant women, chilFebruary / March 2020
dren under 2 years of age, adults 65 years of age, and people with compromised immune systems). Influenza has an established course of duration, and the treatment should be delivered and guided by your doctor. How to prevent colds and the flu: Wash your hands frequently and avoid persons with symptoms when possible. Maintain good overall health through proper rest, exercise, and food choices; a strong immune system helps prevent infection and reduce its duration. To prevent influenza, we recommend getting vaccinated against influenza every year, especially the most vulnerable populations such as children from 6 months, pregnant women, adults from 65 years of age, and people with chronic diseases. Get to Know Your Republican Candidates By Dr. Rebecca Deurlein Tuesday, March 3 is an important date in Texas, as it is your opportunity to vote in the Primary Election. While Presidential elections draw a crowd, midterm elections are just as important. Congress, state, and local governments affect our everyday lives, and this is our chance to have a say in who represents us. Primaries also offer the public a chance to strengthen a political party. Below are the Republican candidates seeking your vote in 2020.
Cindy Siegel for Congress Cindy Siegel’s life has been about service. She was raised in a Christian home to believe in the importance of giving back to the community and has brought that belief into all aspects of her life. After earning a Master’s Degree in Finance and Accounting and beginning her career at Arthur Anderson, she left to start her own CPA firm where she “fought the IRS for my business and individual clients for 30+ years.” She is the former Mayor of Bellaire and a former City Council Member, and she has served as both Treasurer and Vice-Chair in
the Harris County Republican Party. She is also a past Precinct Chair and has held numerous fundraisers at her home to help elect conservative Republican leaders. Why congress? She explains her purpose with passion. “I decided to run because the Democrats have gone off the rails with their socialist agenda. Their agenda will fundamentally change our country from our Judeo-Christian values and founding principles of government. I decided to run for my two daughters, 25 and 22, who are just starting off their careers. I want them, and everyone else’s children and grandchildren, to have the same opportunity that my husband and I had. And I decided to run to end the possibility of a ‘New Green Deal’ or ‘Medicare for all,’ both radical policies that would destroy Houston’s energy industry and our beloved Texas Medical Center. “ Siegel sees District 7 and our nation as facing many challenges, from pro-life issues to crushing national debt. “By far, though, the number one issue facing our district is flood control, mitigation and prevention. I will make it my top priority to be the squeaky wheel, the fly in the ointment, the burr under the saddle of our bloated bureaucracies that are dragging their feet to help this area. If we don’t get a handle on the problems creating these floods, we will begin to lose business and industry and ultimately, lose jobs.” Siegel shares a personal story that demonstrates her sense of humor and work ethic: “Growing up in rural Northwest Kansas, I learned to operate a combine! I drove one every summer during harvest time in order to earn money,” she says with a chuckle. “I don’t

think there are a lot of candidates in the race that can claim that skill! I will bring the same attributes of grit, determination, and hard work I learned working on the family farm to representing the people of Congressional District 7.”
Pierce Bush for Congress - 22nd Congressional District Pierce Bush may come from a famous American family, but he doesn’t mention it when I ask him what he wants voters to know about him. Instead, he offers the following: “I would love voters to know I am a man of faith and I pray often about decisions that lay in front of me, and I try to yield to God's purpose and plan for my life, overall. As I look back on my journey of going from the finance world to Big Brothers Big Sisters Lone Star to meeting my incredible wife, Sarahbeth, I see God's fingerprints all over it. God has blessed us richly in this country and I think of Micah 6:8 where the Lord instructs His people to do justice, love kindness and walk humbly with the Lord.” Bush was CEO of BBBS Lone Star, the largest BBBS 501c3 affiliate agency in the country, He helped make a positive difference in the lives of thousands of at-risk kids across our state. He believes that people of the 22nd Congressional District deserve to have a voice in Congress who will fight for their values and conservative reforms, and stand against the rise of Socialism. He also served as CEO of Big Brothers Big Sisters Lone Star, which allowed him to help make a positive difference in the lives of thousands of at-risk youth in Fort Bend, Harris, and Brazoria Counties. “Too often, we saw the damaging effects in these kids’ lives and their families because our porous border has impacted them due to drugs and even human trafficking. Combatting the drug cartels and stopping the human traffickers will be a top priority of mine as the U.S. Representative for the 22nd District.” Bush went on, “There are so many issues of importance that are stagnant because we have a Congress solely focused on attacking the President and ignoring the will of the American people. The issues he wants to resolve include securing the border and fixing the loopholes
being exploited by drug cartels and human traffickers; supporting President Trump’s policies for economic growth, job expansion for our families, and new infrastructure to rebuild America – including flood protection; defending our Constitutional liberties and stopping the rise of socialism; and lowering the cost of healthcare while expanding options. “I am truly hopeful that my candidacy helps bring new people and new generations of voters to understand that Conservatism is the MOST EMPOWERING of all ideologies. Our belief is that individuals, endowed with God-given liberties, can achieve more, accomplish more, and do more for their communities than any government program – and this is being proven EVERY DAY here in Texas and Fort Bend County. We need to have more elected officials who are positive, outgoing, and influential evangelists for the power of conservatism so we can build this movement to protect our fundamental rights and freedoms. I hope to be that kind of candidate and can’t wait to meet even more folks as we continue this campaign.”
J.J. Clemence for Tax Assessor A tax assessor may not be viewed as a glamorous position, but it sure is an important one. The tax assessor represents the bridge between the needs of the residents of Fort Bend County and the government that represents them. J.J. Clemence is running for this position, and she wishes to fill it with transparency, efficiency, and accountability. An immigrant from China, Clemence describes herself as “a citizen by choice and not a citizen by birth. I love this country and what it has given me to achieve my dreams – now I feel it is time for me to give something back to this nation that has given me so much. My combination of outstanding private sector accomplishment as well as public sector exposure give me the tools and insights to provide the leadership required to excel in this position.” Clemence’s education and experience are lengthy. She has an undergraduate degree in accounting and finance and an MBA from Baker University. Apart from her private sector experience, she also has a track record of community work and public service. She is Congressman Pete Olson’s Community Outreach Director; was appointed by Governor Abbott as Vice Chair to the Texas Real Estate Research and Advisory Committee; served as Treasurer and Finance Committee Chair of the Fort Bend County Republican Party; is a committee member of the FBISD Bond Committee and Innovation Committee, and has served as the Vice President of the Texas Asian Republican Club. If elected, Clemence has several priorities. “I intend to apply my private sector experience to bring in modern processes and technologies where available to streamline and modernize – to improve service while cutting cost and overhead. My private sector experience has also convinced me of the critical importance of cybersecurity and assuring the privacy and integrity of our taxpayer data. By its very nature this department has access to and responsibility for some of the most critical personal data of the residents of Fort Bend County. I intend to ensure that we are up to date on our audits and adopt the most modern approaches to staying ahead of potential cybercrime. “Apart from this I intend to build upon my predecessor’s excellent work in ensuring that the Tax Assessor is viewed as readily available and responsive to the concerns of taxpayers. Unlike most elected positions, the Assessor is one of the government representatives that taxpayers are forced to interact with year after year, irrespective of their level of interest and engagement in politics. I intend to ensure that this interaction is as positive as possible in every way.” Clemence’s passion stems from her personal experiences as in immigrant. “I came to this country 20 years ago, virtually without a
penny to my name. But I had great trust and confidence in America, full of hope. Showing God’s Love at the Katy Resurrection Run By Caitlin Richards Registration is now open for the Third Annual Katy Resurrection Run. The 5K run and 1K family walk/run will be on Friday, April 10, 2020 at Faith West Academy’s beautiful 40-acre campus. The 5K race will have a 9 a.m. start and the 1K run will have a 9:45 a.m. start, all with some new additions for 2020. “We are adding a costume contest for all participants and an Easter egg hunt to the 1K family walk,” says Chip McKenzie the Resurrection Run Race Director and Marketing Chair. “We are also adding a team competition for businesses and schools.” During the 1K family walk, participants will be able to hunt for Easter eggs adding even more fun to the race. The 1K course travels around a small lake on the Faith West Premises and allows each child entered in the race to collect a specified number of eggs. Certain eggs can also be redeemed for prizes. The costume contest will have a 5K winner and a 1K family walk
winner. Participants are encouraged to dress up with bunny ears or any other creative way they come up with. Businesses are also being encouraged to enter five to seven runners in the 5K to compete for the team competition. “The race will have an individual competition with first, second and third place winners by age group, but then there will also be a

team competition,” says McKenzie. “There will be a first-place team award for businesses and one for schools if students decide to enter as a team.” Just like last year, the Resurrection Run’s scenic route is a certified course. Runners who need credits for marathons can put the Resurrection Run on their list of certified runs. “It is a unique race for many reasons,” says McKenzie. “But with it being a certified course with the added ambiance of a park and lake that you run around makes it more exciting for a runner. The most important thing we don’t want to lose sight of is our ultimate goal to help the Katy community.” Katy Christian Magazine and Fort Bend Christian Magazine team up with Faith West Academy to host the event, and all of the funds raised from the Resurrection Run go towards Faith West’s Eagle Initiative, which supports various local organizations. “The support raised will help the Eagle Initiative do more in the Katy community,” says McKenzie. “It is very kid oriented from child protective services to helping kids who have cancer, and kids who don’t have parents. Those are the top three focuses, but there is more we would like to do than just helping those ministries.” Organizations the Eagle Initiative benefits include Child Protective Services adoption fair, Caring 4 Katy, Good Shepherd, Sunshine Kids, and Sunshine Thru the Rain. The Eagle Initiative’s impact is far reaching as some of the organizations benefit children and families from downtown Houston to the greater area.

Do You Have the Time? By Lori Joiner It’s the number one hindrance facing women when it comes to discipling other women. I don’t have time. They don’t have time. Who has the time? I surveyed 100 women formally -- and countless others in casual conversations — over my 20 years in women’s ministry to discover what was their biggest roadblock to pouring their life into another woman spiritually. Time was the number one answer. I get it. As a mom of two active boys with a full schedule of speaking engagements, writing deadlines and running a ministry, the sheer thought of trying to line my schedule up with somebody else’s is almost impossible ... almost. In Matthew 28:18-20, Jesus gave his followers final instructions before ascending into heaven. He said, “All authority in heaven and on earth has been given to me. Therefore go and make disciples of all nations, baptizing them in the name of the Father and of the Son and of the Holy Spirit, and teaching them to obey everything I have commanded you. And surely I am with you always, to the very end of the age.” Jesus wanted us to prioritize discipling others above all else. He wants us to help others learn about Him, understand His commands and follow Him in baptism. Countless women need a discipler and a mentor. They need someone who will get in the boat with them and

then help them understand Jesus, the Bible and the Christian life. But alas, do you have time? Do you have margin to create space for discipling others? Finding Time to Disciple Others in Various Stages of Life I want to help you! I love discipling women, and I know firsthand the challenges to make it work in numerous phases of life. Listed here are some of the ways I have found time over the years. College years – Late afternoons I discipled women in my residence hall, typically in my dorm room. I kept a small fridge of cold soft drinks. When we added a sweet treat and our Bibles, we were good to go! Single years – After college and before I married at the age of 34, I was able to use evenings to disciple women. One dear friend and I met for two years at a local restaurant on Tuesday nights for discipleship. We had a corner booth and were on a first-name basis with the wait staff! Baby years – Newborn baby haze, when you don’t even know what day it is -- let alone where your Bible is -- can be challenging for discipleship. Once your baby is on some sort of schedule, it becomes much easier to find windows of opportunity. I used one nap time per week to disciple a gal from a local high school. It turned out that when my son was going down for his afternoon nap, she was getting out of school.

School years – This is the phase I am currently in. I disciple a group of ladies I met at the gym. A friend and I disciple this group together in case one of us needs to miss for a sick kid or field trip to the zoo! Empty nesters – I know a dear woman who is the grandmother of 14. She is busy with church obligations and is a phenomenal help to her large family. However, she still leads a small group of women spiritually, encouraging them with God’s Word as they face life’s twists and turns. The Bottom Line – In our lives, we have time to do many things. Discipling others and prioritizing the mission of Jesus need to take priority. Make this a matter of prayer. Simply pray that God would bring women into your life to help spiritually and for the time in your week to make her a priority.

Take the Interest in Socialism Seriously! By Gary Gillen For many of us the thought of the election of a Socialist like Bernie Sanders or Elizabeth Warren to the Presidency of the United States is unimaginable. As we enjoy the greatest economy in decades with lower tax rates, less regulation, the lowest unemployment in a generation, the lowest unemployment in history for some segments and a stock market setting records almost daily, how could anyone even consider moving to socialism? I was fortunate to have teachers who taught me how to think, not what to think. We were taught to stand up for our beliefs but to respect the right of others to disagree. We were even taught to stand up for the rights of others to express opinions with which we disagreed because if anyone lost the right to free speech, we all lost it. Perhaps this is a lesson we need to teach our young people today. We can disagree with respect. Shouting down a speaker isn’t just wrong, it’s rude and disrespectful. Now we come to the point of this column. I respect the right of Bernie Sanders and Elizabeth Warren to express their beliefs about socialism. I could not disagree more but respect their right to believe and say those things. I also reserve the right to disagree strongly, publicly and vocally. I want my children to have lunch with the lady I met with recently who is working to raise money for food for the refugees leaving the socialist paradise of Venezuela. Millions-that’s right-millions of people are walking hundreds of miles to escape the suffering that socialism has wrought on a country that, just a few years ago, was wealthy and successful. They have seen their nation descend into destitution. Empty store shelves, outrageous inflation. No jobs, money or food. She told me of meeting a woman who was a doctor in Venezuela but escaped with her family to Columbia only to resort to prostitu-
tion to support her children. Columbia cannot absorb the millions of refugees, so they walk. For miles, for days they walk. Some hope to reach Ecuador. Others simply want to reach a place where they can wait. Wait until the horror in socialist Venezuela dies.
This is the humanitarian crisis you have not heard about. And you won’t because the liberal media doesn’t want to explain the reality of socialism. They don’t want to tell you that you can vote your way into socialism but not out. They don’t want to expose the lie they continue to spin about the failure of capitalism. Students from seven high school and junior high chapters across the region attended the workshop. Students participated in breakout sessions learning more about FCCLA, service learning projects, competitive events, running for officer, and ways to spread kindness. 2) On October 5, 2019, young men from the Missouri City - Sugar Land Chapter’s 2019 Beautillion Class, enthusiastically completed their class community service project at ‘My Brother’s Keeper’ where they stocked shelves with food and supplies for families in need within Fort Bend and Harris counties. 3) The Central Fort Bend Chamber hosted its highly anticipated Annual Gala & Awards Ceremony on November 15, 2019 at Safari Texas Ranch. The Winter Masquerade inspired evening brought together 330 business leaders and community members to help fund the Chamber’s mission of promoting growth and constructive change within central Fort Bend County. 4) In October, St. John XXXIII College Preparatory (SJ23) hosted its inaugural Middle School Fine Arts Frenzy. Flagship school participants included students in grades sixth through eighth from Christ the Redeemer; Salyards Middle School; St. Elizabeth Ann Seton; St. John Paul II; and St. Rose of Lima. 5) In October, the Central Fort Bend Chamber celebrated the ribbon cutting ceremony for Blanchard CPA. Why Reddy? Why Now? By Bangar Reddy The congressional race for the U.S. House in District 22 is not just a local election but a contest for the heart and soul of the country. Democrats came close to winning this reliably Republican seat during the last cycle. They relied on changing demographics, adding new voters, and their usual tactics of calling conservatives racists, anti-immigrants, supporting only the rich, and against women and minorities. They were able to carefully capitalize on the lack of diversity in the Republican party and apply unfair labels. This time, they are ready to do the same. With the DNC machinery and liberal media at their disposal they are going all out to win this election. We cannot take a knife to a gun fight! We can’t squeak by this time or worse yet lose! We have to a have a candidate who can increase the base of the Republican party in the general election. There is only one candidate who can do that among the crowded pack of primary contenders – that is Bangar Reddy Aaloori. You see, Reddy is not a career politician. He just loves America. He loves the Constitution. He loves the good and decent people here. He knows the country was founded by people who had deep faith in God. He hates to see the other party claim a monopoly on

immigrants, minorities, and compassion. He is running to change that by making sure the promise of conservative policies reaches all Americans. He can connect with people at all levels. Reddy grew up in a working-class agricultural family in India. He knew what it was like to be poor – dirt poor. He knew what it was like to have poor access to health care. He knows what it is like to have to work during school and still have trouble meeting your ends. He also saw the failure of big governmental policies to solve those problems. He personally saw those socialistic programs filled inefficiency and corruption and stifling individual effort. He credits his success to faith in God, a hard work ethic endowed by his parents, and the generosity of the American people who took him in as a legal immigrant. He has been a Sugar Land resident for 25 years. Educated with a master’s degree in the IT sector, he started his own business here. Later, he joined a larger company with many senior leadership responsibilities. From the beginning, he was involved in many community service volunteer projects including leadership roles in the Hurricane Ike and Harvey disasters. He has been involved in charity programs for battered women, for poor and destitute persons, and for the homeless. Reddy says the reason to be conservative is that, “conservative policies bring more prosperity to more persons than any other form of government. They bring out the best in everyone rather than reducing the country to lowest common denominator.” We see no better candidate to articulate the message of conservatism during this election than Bangar Reddy Aaloori whose life story shows the way. 1. Reddy believes in free markets, competition, and incentive for ingenuity and entrepreneurship — the American way. He is for lower taxes and less regulation to let the private sector blossom and employment increase. Will the Democrats who tout Socialism be able to call Reddy anti rich? How can they with his background of personal poverty? 2. Reddy believes in a strong border including a wall and technological surveillance and eschews illegal immigration. Who best to communicate this to the general voters than Reddy himself an immigrant? The Democrats cannot call him anti immigrant! Clearly
he can relate to all the other legal immigrants who had to follow the rule of law with patience. He also can show how the illegal trafficking of drugs and contraband is there with porous borders.
3. Reddy is a strong supporter of the pro-life movement. He has deep friends in both Christian circles and those of Eastern religions and is able to show that the sanctity of life is respected at all ages by most human beings of all backgrounds. right radical view. 4. Reddy, a family man and father of two daughters cherishes the importance of the traditional two parent family. He is able to point out to new minority and immigrant voters who take this for granted that they are being destroyed by the liberal and secular policy makers. 5. Reddy is against government takeover of the health care system. He advocates more competition in the insurance market including crossing state lines and more flexibility in deciding on how much coverage to buy. He does not want the government rationing health care. He can give personal testimony for which other new voters can relate on how scary it is to be admitted to a government hospital in the developing or developed world. 6. Reddy believes in a strong national defense and is not afraid to point out the need to target those with fanatical beliefs who will terrorize the country. He easily undercuts the liberals’ arguments who say it is discriminatory to have critical vetting processes. 7. Reddy is a gun owner, defends the second amendment, and a role model to new Americans who may have never had the opportunity to have weapons for self defense in their homelands. He is encouraging more new Americans to take full advantage of this fundamental right. 8. Reddy believes in strengthening education through school choice and creating safer neighborhoods rather than race based quota programs. the other party. 9. Reddy believes in the free expression of religion. He says the founding fathers laid a framework for freedom of religion, not freedom from religion. In his own experience he has seen a plurality of different religious leaders giving benedictions at national events. He wants to see God be front and center of the national life. All in all, Reddy is the right choice and this right time to stop the Democrats in their tracks. By electing a candidate like Reddy, we can attract more folks to support the Republican party, give confidence to more minorities to join the party or run for its offices, and we can communicate with them that the whole reason they cherish America is because of her conservative heritage. Reddy lives and breathes this philosophy and is spreading the message to many new voters. Let’s join him now before its too late. If the Democrats win the house again and keep attracting minorities, the Republicans will be the permanent minority party in the country. To win again, they will resort to compromising their principles and then the effort is lost. Lets not take that risk. Recipe: Vegan Southern Tofu Scramble By Hannah Menslage Assistant Publisher Fort Bend Christian Magazine & Katy Christian Magazine
1) Pat tofu dry and roll in a clean, absorbent towel with something heavy on top, such as a cast-iron skillet, for 15 minutes. 2) While tofu is draining, prepare sauce by adding dry spices to a small bowl and adding enough water to make a pourable sauce. Set aside.
Ingredients Scramble • 8 ounces extra-firm tofu • 1-2 Tbsp olive oil • 1/4 red onion (thinly sliced) • 1/2 red pepper (thinly sliced) • 2 cups kale (loosely chopped)
3) Prep veggies and warm a large skillet over medium heat. Once hot, add olive oil and the onion and red pepper. Season with a pinch each salt and pepper and stir. Cook until softened - about 5 minutes.
Sauce • 1/2 tsp sea salt (reduce amount for less salty sauce) • 1/2 tsp garlic powder • 1/2 tsp ground cumin • 1/4 tsp chili powder • Water (to thin) • 1/4 tsp turmeric (optional) For Serving (optional) • Salsa • Cilantro • Hot Sauce • Breakfast potatoes, toast, and/or fruit February / March 2020

4) Add kale, season with a bit more salt and pepper, and cover to steam for 2 minutes. 5) In the meantime, unwrap tofu and use a fork to crumble into bitesized pieces. 6) Use a spatula to move the veggies to one side of the pan and add tofu. Sauté for 2 minutes, then add sauce, pouring it mostly over the tofu and a little over the veggies. Stir immediately, evenly distributing the sauce. Cook for another 5-7 minutes until tofu is slightly browned. 7) Serve immediately with the breakfast potatoes, toast, or fruit. Enjoy!
