tradition Created especially for you Giampiero Bodino is one of the most exciting jewellers of our generation. Here he talks to UNIQ about his work and inspiration

“M

y idea of contemporary ‘High ewellery’ is firmly tied to a concept of uniqueness, to an exclusive creation designed especially for a woman who wants a piece of jewellery that represents a new expression of herself and a more profound sense of her sentiments.” In November 2013, Giampiero Bodino, Group Art Director of Richemont since 2002, opened the doors to his High Jewellery maison in Milan. His hallmark is the custom-made ‘sartorial’ jewel created through the personal relationship established between the customer – the project leader – and Bodino, who transforms the dream into something tangible and real. His inspiration is Italy and its art, design, architecture and nature, which is so present in his works that it brings to mind a new Renaissance.

We have the great fortune to live in a country where everywhere is a source of inspiration: an open-air museum Mr Bodino, is your creativity enriched or inhibited by following the instructions and, more frequently, the dreams of your customers? A customer who comes to my maison knows and appreciates my work. I consider it an act of trust in me and that can only be positive. It is a challenge to make someone’s dream come true while following my instincts and taste.

With Gianni Bulgari, I understood the concept of having vision and applying it to tradition. Let me explain: I learned to separate myself from tradition to take new and unexpected paths, to find new ways to wear and design an object, and to make daring choices when selecting materials. In short, I changed my perspective, which was a wonderful and necessary path that I took. Yet one must always return to the point of departure – tradition – which, nevertheless, is renewed in the process.

Your training has taken you from Giorgetto Giugiaro’s aerodynamic design to the sophisticated style of Gianni Bulgari. How do you combine the teachings of these two great masters in your works? What I learned about cars from Giugiaro and about jewellery from Gianni Bulgari continues to be the foundation of my approach to design today and at the basis of my personal research. Cars are the quintessential functional and ergonomic object: they taught me to develop a three-dimensional perspective.

Your works are often displayed in galleries. Do you feel more like an artist or artisan? I want to be frank and perfectly clear: I don’t feel that I am an artist because I’ve always believed that such a label is not up to us or our contemporaries to decide: it can only be decided afterwards, through the work we leave behind. I consider myself an artisan of art or, better yet, an artisan of philosophy and design.

Your creations are also a cultural project inspired by Italy’s artistic heritage. What works and masters most frequently return to your vision? It’s unthinkable to give a specific example because we have the huge fortune to live in a country where each place is a source of inspiration and an ‘open-air’ museum. Everywhere you look, if you’re curious and attentive, you can find something that will express an emotion. At that point, you have to let yourself be guided by your instinct so these elements are transformed into something else: a piece of jewellery, for example.

You say that stones and colours are a celebration of nature... Nature is able to transmit sensorial messages. It amazes me with its colours.

Each piece of jewellery that you design is an expression of Italian excellence. Do you personally supervise every phase, from the design to its production? You can only achieve a good result if you supervise every phase. That’s true especially if technical problems arise: unexpected ideas can emerge through constant feedback and dialog. That’s why I’m always present and I normally heed the advice of experienced artisans, without prejudice, and I also have the courage to accept compromise.

The first international ‘debut’ of the maison was at the Biennale des Antiquaires in Paris last year. There you guided visitors with your works through nine themes – Cammeo, Rosa dei Venti, Chimera, Primavera, Barocco, Tesori del Mare, Corona, Passamaneria and Mosaico – taking them on a journey through Italy. What were the reactions? Extremely positive, including the reviews, but for obvious reasons of modesty, it is di cult for me to speak of them because that would be bragging. Let’s just say that there was very little criticism, but even that is welcome when it’s constructive. And let me just say that it was a dream for me to display my works amidst legends such as Cartier, Van Cleef & Arpels, Piaget, Chanel, Dior, Bulgari…

The never-ending search for total, all embracing wellbeing has led to the creation of the Sports Medical Centre at Forte Village. Now the centre will host Dr. Pier Francesco Parra – luminary of sports medicine, specialist in laser surgery and inventor of a new therapy earning him the nickname ‘Doctor Laser’. Since 1998 his procedures have proved to be extremely successful in the treatment of muscle-tendon disorders among patients from all over the world including professional athletes. The never-ending search for total, all embracing wellbeing has led to the creation of the Sports Medical Centre at Forte Village. Now the centre will host Dr. Pier Francesco Parra – luminary of sports medicine, specialist in laser surgery and inventor of a new therapy earning him the nickname ‘Doctor Laser’. Herbs and spices are not only essential for great cooking, they are increasingly being recognized for their health and wellbeing properties. At the forefront of the renewed interest in these essential ingredients is world renowned chef Alfons Schuhbeck who is opening a new restaurant at Forte Village this summer. 30

Why did you want to become a chef? Was there one particular event or person who influenced you? As a student, I wanted to go on to do something creative but my parents thought that I should find a ‘normal’ job at the post o ce or on the trains as they believed these careers were recession-proof. So, in my Upper Bavarian birthplace of Traunstein I learned telecommunications and, to earn extra money, played guitar in a band that toured the villages at the weekend. However, at 1 I was offered, purely by chance, the opportunity to work in the hospitality

industry and I completed an apprenticeship as a chef with broad training in Paris, London and Munich.

Spices are always important to chefs, of course, but where and when did you first decide that you would give them a particular focus in your cuisine? The general fitness and wellness movement that resulted from increased consciousness about health inspired me to become very interested in the way spices can both add so much to the flavour of a dish, while also boosting it’s health properties

too. I was also introduced to the words of the Greek scholar Hippocrates, who is widely recognised as the ‘father of medicine’ Let food be your medicine and medicine be your food . This phrase, although nearly 2,400 years old, I felt was still highly relevant to this day and is an idea I apply to my own style of cuisine, to create dishes which are healthy yet are still hearty and not ‘clinical’.

The aromas of spices waft in like a breeze from paradise

Q

We hear a lot about how the traditional Hindu medicine practice of Ayurvedic is translated into different recipes these days, but what does the term mean to you? Can you give us an example of how you’ve used it? I have always been impressed with the way Indian recipes, for example, use Ayurvedic concepts to harmonise flavour and wellbeing. However, as in Indian cuisine, for me, Ayurveda only makes sense if you understand it in terms of the unity of body, mind, lifestyle and environment. I therefore never create Ayurvedic recipes simply for their novelty value. It is not a gimmick.

Can you tell us more about your research into the health properties of spices? Where did you go to learn about them? Who did you speak to? Firstly, I was fascinated by the history of herbs and spices. Five thousand years ago the architects of the Pyramids made their workers eat garlic from morning to night to protect against infections that could spread easily because of the hardships of labour and the heat of the desert. It is still a mystery how they knew that garlic protects the immune system, yet the 2, 00 year old bers Papyrus, for example, describes medicines that combined garlic, caraway, juniper and cinnamon. Meanwhile, medieval monastic medicine put great emphasis on the health properties of spicy plants and herbs, the benefits of which modern science has since proven. I believe that this should be of great interest to a chef and should inspire balanced, nutritious and varied dishes. However, it must be said that, as I am a chef and not a doctor, I always consult with specialists before experimenting with rare or unfamiliar spices.

Can you tell us more about your ‘Spice for Life’ concept? What will you be doing with spices this summer at Forte Village? The original ‘Spice up your life’ concept, which has enjoyed worldwide success, was inspired years ago by the Spice irls. What I want to offer people when they sit down to eat is a way of moving beyond our five taste sensations of sweet, salt, bitter, sour and spicy towards satisfying 1001 flavours through the wealth of herbs and spices that are available. When you handle them with sensitivity, the aromas of spices waft into our world like a breeze from paradise. However, increasingly herbs and spices are not only for enjoyment but they’re also healthy. What I serve at Forte Village, will be equally good for our taste buds and our wellbeing.

Research shows that Sardinia has one of the world's largest concentrations of people who have reached an advanced age? Do you think that can be attributed to nutrition thanks to the range of local products, herbs and spices available on the island? It s widely believed that the Mediterranean diet with olive oil, lots of fresh vegetables, fish and seafood plus pasta and rice is an effective guard against the risk of heart disease and stroke. Sardinia certainly has very high quality products as well as clean air. I included elements of the Mediterranean diet and its principles early on in my cooking.

Given your interest in herbs and spices, why did you choose to come Forte Village in Sardinia? I like the way that Forte Village incorporates so many of the elements of wellbeing and also the versatility of its culinary offering.

Q A

Sardinia is known for its unique cuisine? How have you chosen spices that complement it? Sardinia is famous for its wonderful wild mountain herbs the scent of thyme, rosemary and sage - so I can make the most of these aromas and tastes and combine herbs and spices harmoniously as well as demonstrating the exciting contrasts of flavours. I’ll also be bringing some traditional wisdom to my modern cooking styles, for example, using cumin to make digestion easierin hot weather.

What are the future trends when it comes to spices? What will chefs – and cooks at home – be doing with spices in the next three, four or five years, do you think? I’ve discovered all kinds of spices that were unfamiliar in our European kitchens when I’ve been to the reater and Lesser Antilles in the aribbean and Africa over the last few years. These are some of the last taste cultures that remain to be discovered. Amateur as well as professional chefs will enjoy this new aromatic variety and diversity. In the professional kitchen, I can easily imagine that the following three Asian spices will be found more often in Europe.

A

Vadouvan: Originally from Pondicherry in India, a French colony for many years, this Indo-French mixture of 12 different spices, including onions, garlic, mustard seeds, curry leaves, sesame and coconut oil has a very complex flavour. It’s meaty, sweet and, at the same time, has a certain sharpness. It goes well with fish, seafood, lamb and white meats. Sansho Berries Found in the mountainous regions of Japan, these are also known as citrus pepper. They’re traditionally used in apanese cuisine and work well with fish, especially grilled eel but they are also good with meat. They’re peppery but with a fresh citrus taste and hint of mint, lemongrass and pepper. Sumac This spice comes from Iran. It’s the dried and ground fruit of the Sumac bush and it plays an important role in Iranian ew ear celebrations. The special feature of sumac is that it intensifies flavours without altering or overpowering them. Its own taste is sour, bitter and astringent. In Iran it’s traditionally sprinkled over salads and kebabs made with chicken or beef but it’s also good for sauces and marinades.

What is your favourite spice and why? I'm doing as the Romans and the ancient Chinese as well as the father of European cuisine – a 14th century Frenchman called Guillaume Tirel alias Taillevent did and that’s to use ginger. It works so well with other flavours and helps blend them together. Its fruity sharpness is incredibly invigorating not only in the kitchen, but it also has a variety of health benefits. Also I really like vanilla, because of the taste and health benefits that it brings.

For nearly 30 years, you’ve been chef at FC Bayern Munich. What do you cook there? What I cook for Bayern Munich has nothing to do with haute cuisine. I started for a simple reason: before an away game in the U FA up now the Champions League) a group of players were staying in a beautiful ussian city but they couldn’t sleep because roadworks were taking place outside their hotel. ot only that but following their pre kick off meal they found themselves constantly running to the loo. I cooked for the players then and have since produced everything for the team to eat and drink. We serve a continental breakfast then lunch is at noon before hampions League matches at 1 . 0 or national games at 15. 0. There’s a hot and cold buffet hors d’oeuvres, mixed salads, fish, meat and poultry plus potatoes, rice, pasta, sauces and olive oil. Before hampions League games at 16. 0 there’s coffee with sandwiches and plain cake, as well as a little pasta which some players like to have around this time.

He’s one of the most celebrated – and controversial – names in Italian football and now he’s heading up the national team, but Antonio Conte times still finds time for his family

T

hroughout his career, Antonio Conte has been known for his own particular brand of diplomacy – just ask anyone who has found themselves on the wrong side of this legendary coach who has led some of Italy’s greatest football teams to victory. But now that he holds great office as the coach of the country’s national team and has entered the ranks of the great and the good, a two year deal he signed last summer, surely he will rein in his rumbustious style? It seems not. “I’m still the same today as I was in my previous roles in Turin, Siena, Bari, Bergamo and Arezzo,” he says defiantly, referring to some of the teams that he’s played for and managed. “I don’t change course because of where I am. Even as the national coach, if someone tries to attack I’ll push back.” It’s not just his big personality that has contributed to Conte’s success but neither is it entirely his footballing skill either, he reveals: “The education that my family gave me and that my life experiences have taught me is that only through hard work and effort can you achieve results,” he says. “I’ve had nothing for free in my own life either. I’ve always struggled to get where are I am.” He’s passionate about the value of team players rather than individual stars. “Nobody benefits from talent unless it is put towards the good of the team,” he says. “I’ve often said that when it comes to a choice between a good player who is a great man and a great player who is a good man, I always take the former.” Perhaps Conte’s biggest challenge stems from Italy’s humiliating ejection from the first round of the World Cup in Brazil. It’s been argued that with Italy’s best players heading to clubs abroad while the country’s home teams import foreign players, the nation faces a dearth of talent. He’s keen to avoid any panic.

“We’ve built a team that has people responding with enthusiasm“ “That said we’re not going in the right direction,” he says. “The percentage of players playing in the Italian Serie A in recent years has been halved. I’ve seen teams with no Italians on the pitch and this is an alarming sign. But I think we have the potential to rise again if we go back to focusing on the importance of hard work and if we complete the reforms to help clubs on the one hand and young Italian players on the other. I reiterate: we need the cooperation and participation of all those involved. The national team cannot be ready for action in four months without training.” To add to this heated debate, some people have suggested that the team that Conte manages and coaches has less talent than ever. “Of six games we’ve won five and drawn one,” he points out. “As we head to the qualifying round for the European Championship in a short time we’ve built a team that has had people responding with enthusiasm in every stadium we’ve played in. We have a group of players who give everything for the national team. I knew it wouldn’t be easy.” He’s looking to create a team with accurate technical skills. Using this as a base, he believes, can develop what he calls a “fighting machine.”

Conte himself made his debut at the age of just 16, playing for his local team Lecce, before arriving at Juventus and he feels a deep connection with both clubs. “My roots are in Lecce where I began my career but I also feel tied to Juventus where I enjoyed an extraordinary sporting career full of successes, and in Turin, the city that welcomed me and where I still live now with my family,” says Conte. Naturally, thought his national responsibilities transcend local considerations – whatever colour shirt he’s worn in the past. “Today in my head and my heart I have only blue, a beautiful colour, which contains all the other colours.” Which arouses the strongest emotions: his debut on the pitch or in the bunker? “A debut, whatever it is, is always exciting, because it’s the beginning of a new adventure – the first steps to Juventina, the team where I grew up, the first times wearing the Lecce shirt and the Juventus shirt, the first time sitting on the bench at Arezzo,” he says. “That’s not to deny, however, that being a player and a coach are different emotionally. In the first case you know you’re part of a team, you have a shared responsibility. In the latter, the anxiety and stress are greater, because you’re alone.” He might be one of the best known names in Italian football but you’re unlikely to read about Conte in the gossip columns. “I’ve always kept my private life out of the spotlight, he says. “Despite the various commitments that often mean that I’m away from home, I always try to set aside quality time with my loved ones: family is central to my life.” That quality time might well be spent at Forte Village, to which Conte is a regular visitor. “Holidays, for me, are a time to put aside the tensions of the job, to enjoy some peace and quiet with my loved ones and to recharge my energy and enthusiasm,” he explains. “Forte Village gives me the opportunity to do this and I have always felt at home here. “

The national team cannot be ready for action in four months without training.” To add to this heated debate, some people have suggested that the team that Conte manages and coaches has less talent than ever. “Of six games we’ve won five and drawn one,” he points out. “As we head to the qualifying round for the European Championship in a short time we’ve built a team that has had people responding with enthusiasm in every stadium we’ve played in. We have a group of players who give everything for the national team. I knew it wouldn’t be easy.” He’s looking to create a team with accurate technical skills. Using this as a base, he believes, can develop what he calls a “fighting machine.”

Conte himself made his debut at the age of just 16, playing for his local team Lecce, before arriving at Juventus and he feels a deep connection with both clubs. “My roots are in Lecce where I began my career but I also feel tied to Juventus where I enjoyed an extraordinary sporting career full of successes, and in Turin, the city that welcomed me and where I still live now with my family,” says Conte. Naturally, thought his national responsibilities transcend local considerations – whatever colour shirt he’s worn in the past. “Today in my head and my heart I have only blue, a beautiful colour, which contains all the other colours.” Which arouses the strongest emotions: his debut on the pitch or in the bunker? “A debut, whatever it is, is always exciting, because it’s the beginning of a new adventure – the first steps to Juventina, the team where I grew up, the first times wearing the Lecce shirt and the Juventus shirt, the first time sitting on the bench at Arezzo,” he says. “That’s not to deny, however, that being a player and a coach are different emotionally. In the first case you know you’re part of a team, you have a shared responsibility. In the latter, the anxiety and stress are greater, because you’re alone.” He might be one of the best known names in Italian football but you’re unlikely to read about Conte in the gossip columns. “I’ve always kept my private life out of the spotlight, he says. “Despite the various commitments that often mean that I’m away from home, I always try to set aside quality time with my loved ones: family is central to my life.” That quality time might well be spent at Forte Village, to which Conte is a regular visitor. “Holidays, for me, are a time to put aside the tensions of the job, to enjoy some peace and quiet with my loved ones and to recharge my energy and enthusiasm,” he explains. “Forte Village gives me the opportunity to do this and I have always felt at home here. “

Champion cyclist Mario Cipollini He’s one of the most successful – and the most eccentric – cyclists in the world. Now lucky visitors to Forte Village can get in the saddle under the guidance of Mario Cipollini

H

e’s won a record breaking 42 stages in the Giro d’Italia, snatching the record, in the sprint as usual, from the near mythical figure of Alfredo Binda. He’s also won many stages of the Tour de France and only Eddy Merckx has outdone him. He’s also one of the best sprinters of all time and was world champion in the Circuit Zolder, the gruelling motorsport and road cycle racetrack in Belgium. He has a mantelpiece full of the most prestigious titles including winner of the Milan-San Remo race of 2002. But beyond all these impressive achievements he is known as the ‘Lion King’, a title conferred on him by the media and his fans alike because of his long blonde hair as well as his determination, his magisterial bearing and his powerful sprint. Mario Cipollini has been racing for decades but his love affair with cycling continues. Indeed, if anything, the ambitions of Commendatore Cipollini (the title of

‘Knight Commander’ was awarded to him by the President of Italy in 2002) have become even more impressive. In particular he wants to put his experience to use to benefit a new generation of cyclists, creating revolutionary racing bikes, made entirely in Italy by Italian craftsmen and even more capable than the ones that he used himself. MCipollini, was launched in 2010 and the brand is already at the forefront of competitive cycling technology. In short, it’s about cycling excellence made in Italy. Think that you don’t qualify as a triathlete? Think again, says Triathlon Champion Alessandro Fabian

W

e’ve all swum in the sea as kids during the school holidays, right? And everyone has ridden a bike as a child haven’t they? All of us has run at some point during our lives too, correct? So, based on that we can all describe ourselves as triathletes! OK, that might be pushing it a bit but since it’s the view of champion triathlete Alessandro Fabian it should sound more convincing. Fabian himself is a regular at the Challenge Forte Village Sardinia, having taken part in both of the races that have taken place so far. Launched in 2013, in its second year the Challenge Forte Village Sardinia saw the number of competitors more than double to over 700 – including children – from 38 countries. Amateurs, national and international champions, para-athletes and elite sports men and women of all ages have taken part in this gruelling but thrilling race. And it appears that the numbers are up again for this year’s event, scheduled for October 25. In fact, it might well be a good idea to

sign up early to avoid the risk of missing out. Alessandro Fabian himself will be a commentator on the race for Sky Sports. “The backdrop of South Sardinia is the most beautiful I’ve ever competed in,” he says. “The Triathlon of Forte Village is the most beautiful in the world.” That’s hardly surprising given that for the last 17 years Forte Village has been named the World’s Leading Resort and undoubtedly the best place in the world for a holiday. But having a wonderful location does not in itself guarantee automatic success for a triathlon - although it certainly helps. and running. It’s a task that is performed by an army of people inspired by the beautiful scenery. There are many triathlons in the world but no one else can do it like Forte Village does it. Everyone knows and loves Italy for its pasta, ice cream, cakes and excellent coffee but can it do caviar? The answer is yes! Just ask the Russians.

I

taly might be famous for some of the world’s most wonderful food but how many people know that it also exports the highest quality caviar? Moreover, who would believe that since 2013 it’s been sending large quantities of this most luxurious foodstuff to ussia, the home of caviar? Black gold pours out of the Padania region of Northern Italy – but it’s the kind that goes onto your plate not into your car. The 25,000 tons a year of caviar that Agroittica yields end up on tables outside the region, mainly in France, the US, Japan and ussia. It was during the 1970s in Davis that Gino avagnan, honorary chairman of Agroittica, and Professor Serge Doroshov, a marine biologist at the University of California, had the ingenious idea of breeding sturgeon in the Calvisano territory, in Brescia, Lombardy. Famous mainly for its rugby team, this small town has a rich source of pure water that is perfect for a much sought-after white meat variety of sturgeon common in the Pacific called the Acipenser transmontanus. The conditions certainly sound very good but all the same, how did an Italian producer conquer the ussian caviar market For Lelio Mondella, eneral Director of Agroittica, it’s an obvious question. “I often joke that it’s like selling ice to Eskimos,” he says. “But the real reason for this success is a combination of the quality and freshness of our product and the huge demand for caviar in ussia. Demand has particularly increased since sturgeon fishing in the aspian Sea became illegal in 200 . There’s no one secret to the success of the Calvisano brand, according to Dr Mondella. In fact, there are three. “First, we’re focused on quality even though we’re producing great volumes and increased product range,” he says. “Second, the passion of our experts and their knowledge is the key to our success. This is a craft that relies on human hands and, I’d even say, hearts. Third, we always think very carefully about the positioning of our product. We only sell caviar to places known for the excellence of their food, such as Forte Village.” Aside from the quality of the product, sustainability is a watchword for the company. “It’s thanks to the ingenuity of two families, the avagnan and the Pasini, that Agroittica was launched. They decided to use the excess heat produced by a steel mill to heat the pure but cold waters of the area in which small sturgeon were bred at a lower cost and with zero impact on the environment. We’re among the few farms who have been certified by Friends of the Sea because of the way in which we farm our fish.

Forte Village is a culinary icon and its guests are the ideal audience for Calvisius So, how did Dr Mondella and his colleagues go from breeding sturgeon to producing caviar? “Thirty years ago, when we began this adventure, our aim was only to produce the flesh of the sturgeon,” he explains. “Gradually, we realized that the eggs from our female fish were of excellent quality and so we began to favour the production of caviar. Eventually we understood that the quality of these eggs was equal to, and in some cases better than, what was produced in the Caspian Sea. And so, day by day, with the help of our artisans, we’ve refined the product. Among these artisans are ‘Caviar Masters’ – experts who have learnt their skills alongside other aviar Masters. The company’s first product, in the 1990s, was the Calvisius Tradition. Now the range has expanded. “Today we market about twelve types of caviar from six different species of sturgeon, says Dr Mondella. “Tradition and Oscetra are doing well but, obviously, pride of place goes to the Beluga. It takes a total of 22 years for the roe’s production to mature. The costs of doing this are huge and there’s a very small amount of eggs but the quality is excellent.”

Some of the greatest chefs in the world use Calvisius caviar in their recipes, although this is less the case in Italy. Dr Mondella and his colleagues are working to change old perceptions. “You have to realise that in Italy the culture of caviar dates back to the enaissance and that until a few years ago our rivers and the Adriatic Sea were populated by three species of sturgeon,” he explains. “Then pollution and indiscriminate fishing led to its extinction and sturgeon and caviar were wiped off the menus of the best Italian restaurants. Since our arrival in the 1990s consumption has slowly recovered. In the domestic market we now sell about two tonnes a year.” He believes that Forte Village can play a part in that return thanks to its drive for culinary excellence and the use of only the very best ingredients. On the menus of the many chefs who work at Forte Village, in fact, there’s only one brand of caviar - Calvisius. “Forte Village is a culinary icon, one of the few places that manages to maintain a special position in the world of food,” says Dr Mondella. “Its guests are the ideal audience for Calvisius. For us it’s an honour and a pleasure to work with Forte Village.”
