25 APRIL The Bishops Waltham Gardening Club illustrated talk: Shrubs 'the backbone of your garden' with Geoff Hawkins An illustrated talk with Geoff Hawkins, giving you some ideas of which shrubs you could use in your garden to give structure, shape and texture as well as colour through flowers, stems and foliage. Geoff Hawkins retired in January 2012 as head gardener from the private estate of Mill Court near Alton, Hampshire where I had worked since 1977. As a head gardener running a small estate of 30 acres this meant I worked in greenhouses, vegetable and fruit gardens, herbaceous and shrub borders as well as looking after the trees.This will be held at The Junior School Ridgemede at 7.30pm (doors open 7.15pm). t this time of year the club is very much in planning mode for all of the activities which enable the raising of funds to be distributed to the many local good causes and charities. The Carnival, of course, is the main focus of our current activity. It’s on the 9th of June, which seems a long time away. But the time goes by so quickly, and we are hoping for yet another record attendance. Stall holders are one of the main attractions at the Carnival. So if you are local trader or local charity and want to be at the Carnival, then let us know. The contact for this is mandy.tourle@ bishopswalthamrotary.org.uk The Carnival Photographic Competition proved extremely popular last year, with a record number of entries. This year, we are hoping that even more people will enter the competition. The entry classes allow for all ages to be involved; so you have plenty of time to create your masterpiece. There are prizes for each class and a prize for the overall winner. The classes are as follows: Juniors up to age 12 years; Teens age 13 years to 19 years; Adults age 20 years to 59 years; and Seniors 60 years and above. The last date for entry is 1st june 2018. Are you the next David Bailey? Then get your entry to us by the 1st June and have it on display at the Carnival. Bishop’s Estate Agent has once again, very generously, agreed to receive all entries. The Churchill War rooms and Houses of Parliament in London; and in April a group of club members will be visiting Prince Charles’ Highgrove Garden in Gloucestershire. BW Rotary has paid for a series of 12 sessions at BW House, where the effect was to get get the elderly and infirm, many with dementia, to participate; providing great enjoyment all around. GEORGE HOLLINGBERY URGES RESIDENTS TO HELP FORMULATE BETTER RESPONSES TO DOMESTIC ABUSE

M

eon Valley MP George Hollingbery is asking residents to take part in a government consultation that is looking to improve responses to domestic abuse.There are approximately two million victims of domestic abuse every year, and it accounts for over 10% of all police recorded crime and nearly 20% of all police charges. “The Prime Minister has made this issue a priority and the Government has taken strong action to tackle domestic abuse,” said George.“We are the first country to criminalise coercive and controlling behaviour, and ministers have introduced Domestic Violence Protection Orders and the Domestic Violence Disclosure Scheme to protect victims. “Other measures include the government providing £20 million for accommodation-based services such as refuges, which is already providing 2,200 additional beds in safety and benefiting 19,000 victims. However, everyone recognises there is more to do and I welcome this consultation to seek views on a range of proposals to address domestic abuse at every stage – from prevention through to rehabilitation and I hope people and organisations in the Meon Valley will take part and give their views.” Proposals in the consultation include: providing a statutory definition of domestic abuse, introducing new civil orders allowing police and courts to act earlier, tougher sentences for domestic abuse cases involving children and introducing special measures for domestic abuse victims giving evidence in court. The 12-week consultation lasts until 31 May and it is available at https://consult.justice.gov.uk/homeoffice-moj/domestic-abuseconsultation/

oberton based artist Jackie Hunt is running three icon painting courses this year from Soberton Church. The icons will be painted in the traditional Byzantine style using egg tempera, 23.5 carat golf leaf and wooden panels. Drawings are provided so don't worry if you're a beginner.

May The May course will run from Monday 21st - Friday 25th and will focus on the Christ Pantocrator, which is one for the first images of Christ in the early Christian Church. July The course in July runs from Monday 23rd - Friday 27th and focuses on Mother of God Eleousa - Our Lady of Tenderness, a Byzantine icon also known as the Vladimir Icon. August In August, the course runs from Monday 13th Friday 17th and will be based on Archangel Gabriel, a 13th century icon at St Catherine's Monastery, Sinai. Each course costs £250 which includes all materials, to secure your place a £100 nonrefundable deposit will be required with your booking. Jackie studied Fine Art at university, an interest in icons led her to train with Peter Murphy as an icon painter working in the traditional Byzantine style. The techniques used have changed very little over 1400 years: wooden panels covered in linen and gesso, pure pigments, egg and 23 carat gold. Jackie paints commission icons and also teaches courses. Absolutely no artistic experience is necessary to join one of her courses, Jackie supplies her own artwork and all the materials so that each student finishes the week with a beautiful icon. FRANK OATES IN AFRICA: AN EXPLORER IN A CHANGING CONTINENT - 9TH APRIL

T

o celebrate the opening of the new Frank Oates Gallery at Gilbert White's House, historians Dr John McAleer and Dr Chris Prior from the University of Southampton will be giving an exciting talk about Frank Oates. Frank Oates’s travels in nineteenth-century Southern Africa made him an eyewitness to a period of momentous change in the

The responses of British explorers and travellers to this extraordinary natural phenomenon in the heart of Africa – over 5 million cubic metres of water cascade over the Falls every minute in the wet season – tell us much about British attitudes to the continent. This talk will place Oates in the context of this surge in exploration, assess what he and his peers felt about the places they visited, and consider what impact this exploration had on the British Empire. region. European imperial involvement rose dramatically over the course of the nineteenth century, and missionaries and traders, as well as explorers such as Oates, were the eyes and ears on the ground. The British public, as well as politicians and esteemed bodies such as the Royal Geographical Society, became fascinated with a continent about which they had known so little.

n this talk, we will find out more about Jane Austen’s aunt, Mrs Leigh Perrot. On display in the Museum, as part of our Family, Friendship and Northanger Abbey displays, is a contemporary account of Mrs Leigh Perrot's trial for stealing lace from a shop in Bath. Come and discover the full story behind this Austen family scandal, including how Jane Austen nearly ended up in prison herself! This talk is held at Jane Austen's House Museum, Winchester Road, Chawton, GU34 1SD.

Individuals came for a variety of reasons, one of which was the exotic spectacle Africa was felt to offer. For Oates, and many of his contemporaries, no journey in Southern Africa was complete without seeing the Victoria Falls. When David Livingstone became the first European to reach the Falls in 1855, he was awestruck. ‘Scenes so lovely must have been gazed upon by angels in their flight’, he famously declared. British travellers like Oates who followed in Livingstone’s footsteps were equally enthralled by Mosi-oa-tunya, or ‘the smoke that thunders’. For Thomas Baines, an itinerant artist who visited the Falls in 1862, the panorama before him presented ‘the most lovely coup d’oeuil the soul of the artist could imagine’.

At 6pm there will be a short tour of the new Frank Oates Gallery. The talk will start at 7pm in the Gilbert White Field Studies Centre. Tickets are priced at £10 per person. Gilbert White’s House, The Wakes, High Street, Selborne, GU34 3JH Jane Austen’s House Museum in Chawton, Hampshire, is the house where Jane Austen lived and wrote. It is the most treasured Austen site in the world. It was here that Jane’s genius flourished and where she wrote, revised and had published all her major works: Sense and Sensibility, Pride and Prejudice, Mansfield Park, Emma, Northanger Abbey and Persuasion. Jane lived at what is now Jane Austen’s House Museum for the last eight years of her life. She moved there in 1809 with her mother, sister Cassandra and friend Martha Lloyd after a period spent living in lodgings. Admission included with Museum ticket price. This event will take place in the Learning Centre which has a maximum capacity. Admittance will be on a first come first served basis.

awns are hungry feeders; let’s take a look at what they need to remain healthy throughout the year. Far too few gardeners understand what goes into the perfect lawn. Most think it is okay to pick up a bag of weed & feed, sprinkle it liberally on the lawn and all will be okay. Your lawn has a complex relationship with nutrition, which changes throughout the growing season and these things need to be taken into consideration if you want a healthy, attractive, disease free lawn. You may be thinking that surely it can’t be that complicated. Let’s try to explain the basics. When it comes to lawn nutrition there are really three main things to think about; fertiliser composition, timing and application methods.

Fertilisation is important as it influences the colour of your lawn, its ability to cope with the stresses of drought, mowing and extremes of temperature and to fight against disease and weed infiltration. Choosing the right fertiliser and applying it correctly really is the key to success. Chemical and organic fertilisers display the nutrient content by way of three different numbers. These three numbers represent the compounds Nitrogen, Phosphorus and Potassium (or Potash). Often displayed as N-P-K. The numbers correspond to the percentage of each of these compounds in the fertiliser inside the pack. That’s the easy bit! What each of these compounds does for the plant is probably the most important part. Nitrogen helps leaf growth. Phosphorus helps the growth of roots and flowers, and Potassium is important for the overall health of the plant. When to promote leaf or root growth is really the key to successful lawn nutrition.You want healthy leaf growth in the growing season to encourage a stronger grass plant, but you don’t want to go into winter with too much leaf that can be damaged by the bad weather. High nitrogen fertilisers encourage quick leaf growth but potentially make the plant more susceptible to the attacks of pests and diseases. Phosphorus is important going into winter to encourage healthy and robust roots to support your lawn throughout the challenging months ahead. Another important factor in selecting the right lawn fertiliser is the type of nitrogen actually in the product. Nitrogen fertiliser may consist

of fast-release or controlled-release nitrogen. For lawns, fertilisers containing controlled-release nitrogen sources are best. Lawn care professionals tend to use coated granular product. The coating is formulated to break down gradually over time, therefore providing a slow release of fertiliser as the plants require it. Cheaper fertilisers break down with moisture. We use a technical fertiliser which activates as the temperature increases, ensuring that as the days warm and the plant needs more nutrition it is gradually made available. It tends to be more expensive but it certainly is effective, provides professional results and gradual grass growth, rather than a sudden burst of growth resulting in excess mowing requirements. So we have covered composition and also timing of application. Let’s take a look at application methods. Most home owners who buy their lawn feed from the garden centre will have a choice between granular or liquid feeds. As we mentioned earlier, ideally you want a product that releases its nutrients into your lawn slowly, as required, over time. There are two downsides to cheaper liquid feeding. The first is that it tends to be immediate. Your lawn gets an instant food hit then nothing. The other issue is that liquid feeding can be very time consuming and it’s difficult to get the application rates right. We do use liquid, foliar feeds later in the season when we can mix a complex combination of micro-nutrients, amino acids and soil conditioners in a slow release formula that's more appropriate for professional use. Controlled-release granular feed is by far the best choice for amateur use. Most gardeners will attempt to apply this themselves and this can create issues. Application by hand is almost impossible to get right. The granules slip through your fingers easily and distribution is uneven. Apply too much to one area and you scorch the grass, often blackening or killing it in patches. Uneven application results in uneven grass growth. Ideally use is a broadcast spreader consisting of a hopper holding the fertiliser and releasing a controlled amount onto a rotating disk, powered by the forward movement of the wheels, distributing the granules in a controlled and even manner. The amount of fertiliser released is controlled by adjusting holes in the base. Getting the quantities right is important and you must calibrate the spreader before you use it, based on the flow rate of the fertiliser, the granule size, the application rate required and the size of the hopper holes. It’s important not to miss any of the lawn or to overlap as you make each pass with the spreader to avoid stripes. I’ve tried to make things as simple as possible but lawn nutrition, product selection and application rates can be relatively complicated. By the time you have bought the product, the right applicator and factored in the time it takes to carry out the work, you can usually save money by asking a lawn care professional to help look after this part of your garden for you. The Cuckoo & the Rhododendron

S

pring days are just perfect for woodland walks where you can witness the breathtaking displays of rhododendrons and azaleas, and where if you are lucky, you might just catch the haunting call of the cuckoo. Interestingly enough, both the cuckoo and the rhododendron have similar reputations.They are capable of fascinating us, yet at times can be an irritant as they both share the characteristic of being intruders. Some horticulturists bemoan the presence of woodland rhododendrons because they soak up the goodness in the soil and often rapidly encroach on surrounding areas. However, here in Hampshire, there is no better place to witness rhododendrons and azaleas in all their glory, than in the woodland gardens of Exbury Gardens in the New Forest.This is where the Rothschild family has created a world famous collection, which really is, a breathtaking sight and not to be missed. Is it little wonder then, that it was once said the Rothschilds were ‘bankers by hobby and gardeners by profession’? It is of course easy to become captivated by the vivid displays of colour that rhododendrons are so famous for, or be charmed by the heavenly scent of azaleas, while at the same time forgetting these shrubs can be high maintenance.You will need to treat them with care if you want them to flourish in your garden. Firstly, they need exacting soil conditions, which includes an acid environment as they will not tolerate a chalky or lime bed. Secondly, keep them out of direct sun and in particular the early morning sun, while also shielding them from cold drying winds. They like moisture without having their feet too wet and if you want, bright, beautiful blooms the following spring, you need to give them a good feed after flowering. If you cannot cope with their demanding natures perhaps it is best to stick to springtime woodland walks so you can feast your eyes on displays such as Exbury, and you never know, as an extra treat, you might just hear that haunting call of the cuckoo… www.hambrooks.co.uk

2018 FESTIVAL OF FOOD AND RACING AT GOODWOOD

The Lennox Enclosure will be dedicated to all things al fresco; growing your own fruit and vegetables, cooking outdoors and enjoying food under the sun. Guests of the Richmond Enclosure will be able to taste gins from a number of local micro distilleries and, if any take their fancy, they can sit back and enjoy them in a relaxed, hidden garden setting.

oodwood Racecourse will host a Festival of Food and Racing from Thursday 24 to Saturday 26 May 2018. The event will be a celebration of the Goodwood Estate’s own food heritage and ethos, as well as showcasing local artisan producers and suppliers. Inside a ‘Home Grown’ area, there will be live cookery demonstrations from Michelin-

starred chefs, including Goodwood’s own Darron Bunn, part of the team behind Goodwood’s highly-praised restaurant; Farmer, Butcher, Chef. Bunn, alongside farm manager Tim Hassell and master butcher John Hearne, will give talks on Home Farm – one of the largest low-land organic farms in the UK and nurtured on the Estate for over 300 years – and how its sustainable approach has shaped the dining experience in the restaurant.

BLUEBELL WALK IN HISTORIC PRIVATE ESTATE IN AID OF THE MURRAY PARISH TRUST

he Murray Parish Trust has teamed up with the Earl and Countess of Clarendon to give members of the public a unique opportunity to walk in the grounds of the Holywell Estate on Sunday 29th April. Enjoy the fabulous display of spring bluebells as you stroll around the woodlands, river meadows and historic parklands in the South Downs National Park’s Meon Valley. Tickets are

available on the day at the main entrance. The walks start at 11:00 in the Holywell Estate, Swanmore, SO32 2QE (grounds open at 10:30) with the last walk at 14:00. The Bluebell Walk is 3 miles long and takes approximately 1 – 1.5 hrs. Dogs are welcome but must be kept on a lead at all times to protect the wildlife. Parking will be available onsite. The Murray Parish Trust are now over halfway to reaching their £2million target to help build a brand-new state of the art children’s emergency and trauma department at University Hospital Southampton. ough Runner is an obstacle course challenge, combining distance running with a variety of obstacles along the way, each inspired by game shows such as Total Wipeout, Takeshi’s Castle, Gladiators, and Fun House. Expect a punching wall, giant pigeon battles, sweeper arms, big balls and yes, The Travelator! The South event in Hampshire features an incredible mix of terrain, with stunning views of the surrounding countryside on offer throughout. It’s a huge event every year so join us in 2018 to kick off the season in style! WICKHAM BEER FESTIVAL 2018

W

ickham Beer Festival returns once again, for the 20th year running for Friday 13th & Saturday 14th April. On the 13th, there will be a Beer Blues and Curry Evening from 7pm till 11pm. Tickets can be purchased for Friday Evening with or without a Curry (Curry Tickets only available until midnight on Monday 9th April, as we need to pre order.) On the 14th will be the normal Saturday beer festival. Two sessions from 11am - 4pm and then 6pm - 11pm. The Beer festival will be held in Wickham Community Centre, once again.

Entertainment at this Festival

O

n the edge of the Meon Valley, in the heart of the Winchester, Portsmouth and Southampton triangle, our delightful village will open a number of its gardens to visitors. The gardens vary from small intimate village gardens, to large country house gardens. In addition to our old favourites, there are one or two that have not opened recently and all have, of course, changed as the years have passed. Most of our gardens are within easy walking distance of our start/ finish point outside the Paterson Centre in Swanmore. A free shuttle bus service will be provided. Teas, coffees and homemade cakes will be available from the Paterson Centre all afternoon. We are designating Saturday as Family Day, and to add a bit of spice for the children they will be able to take part in a free 'Troll Hunt'. Hidden in the gardens will be pictures of trolls and each will provide a clue to help find The Treasure. First to find The Treasure keeps it. Don't worry about the children getting muddy - we don't want flowerbeds trampled so all the Trolls will be visible from paths or grassed areas. Note that we will have a second opening on Saturday 30th June and Sunday 1st July 2018 - 1.00pm to 6.00pm. Proceeds will be shared between St Barnabas and Rowans Hospice. There will be plants for sale and a plant creche will avoid the need to carry them around - just give them to the minibus driver and collect them from The Paterson Centre. Tickets are ÂŁ6.00 adults per day, with free entry for one or two accompanied under 15s per adult. Entry includes use of the hop-onhop-off minibus.

BOTLEY MARKET HALL CELEBRATES AGAIN!

he charity which owns and runs Botley’s Market Hall celebrates another successful year at its Annual General Meeting on Thursday 3rd May at 7.30pm in the Hall. It is well used, and loved, by the local community and hosts over 20 groups and clubs serving all interests and needs in the village.

Tickets are available from 12.30pm at The Paterson Centre, SO32 2PA. Approximately 7 gardens will be open, but the total may vary from day to day - please contact the organisers if you need exact numbers.

At the AGM, local bee keeper, Louise Evans, will give a short talk on beekeeping, then there will be an opportunity to get involved in running the Hall, either as a volunteer or on the Committee. The Hall has become a focus for top class live entertainment locally and plans are already afoot to plan more shows for the Autumn/Winter period.

Hampshire Mum The Longer Journey

A

nd so it was that I, along with three other friends who shall be known here as Jenny Wren, Stella Scientist and Miss Petite, were kindly invited to the house of another friend, who shall be known as Tour Leader.

Did I mention that the house was in stunning Provence overlooking the beautiful village of Callas? Well, after a quick trip from Heathrow to Nice, and a short drive, that was where we found ourselves. The following morning the full size of the house and surrounding olive grove was revealed, with fabulous views of the surrounding hills resplendent in the weak, but warm, February sun. Happily wrapped in one of many knitwear items, I sipped Earl Grey seated on the terrace; a contented sigh would be more than enough exercise that day. The following three days were spent being shown around the region by our lovely Tour Leader who, having had the house for twenty years or more, knew every hairpin bend, every hillside village and the best restaurants like the back of her hand. There was plenty of time to stand and stare in the quiet, blissfully out of season streets, explore the markets and enjoy purchasing French delicacies for suppers by the fire. Heaven on a stick. Sadly, we were to leave on the Monday and to our surprise woke to the lightest icing sugar dusting of snow. How lovely, we thought, as we made our way to the village for coffee. However, an hour later the light dusting had turned to serious snow of Alpine standards, powdery, persistent and properly thick. We slipped into our Peugeot 208 and carefully negotiated the tiny streets of Callas until we reached the steep and twisting drive of the Tour Leader’s house. With five of us onboard one would have thought we would have had sufficient traction, but the little French car was having none of it. ‘Non’ was its firm response as we ground to a halt, front wheels skidding in second gear, while the rear end slipped perilously close to a sheer drop into the olive grove. Still, it appeared there are always two lovely Frenchmen around when you need them and two hours later they’d managed to get the car to the village. All we had to do was trek half a mile in four inches of snow with our luggage - picture the Jamaican bob sled team. Stella Scientist successfully calculated how to get six suitcases and five ladies of a certain age into a Peugeot 208 and, having promised never to leave the giddy heights of second gear, we waved goodbye with the muffled words ‘bon voyage’ lost in the whiteout.

We intrepid Brits seemed to be the only people negotiating the sharp bends of the Provence hills, but we soon arrived at snow-free Nice to find… BA flights cancelled. Tour Leader immediately took to the Internet, booked overnight accommodation and attempted to access the BA site before it crashed. Meanwhile Miss Petite was doing her bit for Brexit by chatting to various Europeans who were in the same very long queue at Information as us. We stood for around two hours and I contemplated starting a sing-along or a Mexican wave, but the mood was getting ugly. Suddenly we were surrounded by armed police, “Evacuate! Bomb!” Trust me, one can understand that in any language so we hurriedly left the building. An hour later and mercifully bomb-free, we were finally at the desk and given a flight for the following day. Jenny Wren was perturbed, “If we fly from here at nine why will it take until seven at night to get to Heathrow?” “Because we’re going via Madrid!” I said cheerily. This was not good news apparently, but I was secretly wishing for further cancellations at Madrid. I’ve never been, so a stay with some tapas was very appealing. Our overnight stay in Nice was punctuated with texts to carpet layers and BT, (Tour Leader was trying to move house!), fabulous Rustic Paws for walking the Pagan Pup for an extra day and, given the news that we were at the dawn of another Ice Age, text to The Husband to get milk, bread and loo roll, those well-known staples for a climatic disaster. After a restful night and very good breakfast courtesy of Ibis, a short hop to Madrid beckoned. But having cleared security we were confined to the airport for nine hours. Madrid airport may be like a Bond set, but there’s only so much Versace and Prada one can look at before the longing for Blighty and a cup of tea takes over. Then Miss Petite received a text saying that both Gatwick and Heathrow were closed. It just happens I had a correspondent on the ground; The Immaculate Niece works at Heathrow. ‘We’re open, Auntie Sandra, and there’s no snow’. Phew. Every cloud, as they say. We secured an upgrade to Premium Economy, which due to my lack of worldly ways and being far from a frequent flyer, I assumed was First Class. Well the gin and tonic tasted first class to me. So our journey ended safe and well, but part of me wanted our journey to go on a little longer. Sandra Pagan

WAYS TO SAY GOODBYE

M

y father passed away 7 years ago and, despite his son being a funeral director, our family still had very little clue as to what he wanted at his service. So what chance does everyone else have.

It’s not an easy topic of conversation, but most families should have a discussion, at some point, to decide on what sort of funeral they would prefer. It might be a very brief conversation at the pub ‘I would rather be buried/cremated’… or even ‘ I really don’t care, I wont be around’ but at least it’s a start. Don’t underestimate how many times we hear from bereaved families that they have been left no instructions. There is no legal obligation to hold a funeral service at all. But here are some ideas to get you thinking. A religious funeral: Whatever your religion, the customs and traditions of a familiar structured service can offer great peace of mind in your place of worship. There is flexibility to add personal touches such as musical or spoken tributes. If you haven’t been to church for a while, it doesn’t matter. They are well suited to large gatherings and the service has no time limit. A non or ‘less’ religious funeral: In recent years funerals have edged away from the ‘very traditional’. The emphasis is on the life of the person, not the beliefs of the person officiating. The service will reflect their character through words, music and personal reminiscences. Green and woodland funerals: These are environmentally friendly alternative to traditional burials. Biodegradable coffins are used in woodland settings and a tree or wooden plaques replace traditional headstones. A good example is The South Downs Natural Burial Site in East Meon. Burial at Sea: While not widely encouraged, burials can be performed off the western end of the Isle of Wight. We will handle all the paperwork for you and its not as expensive as one might imagine. Crematorium Service: This can be either religious or non-religious and you can nominate your own minister/celebrant, or we will do this for you. Local crematoriums include Havant, Portchester, West End, Southampton and Romsey. They vary in price and appearance. Leaving instructions makes it straightforward. lton School, historically girls only in the Senior School, is welcoming boys from September 2018. So why do it and what does it take to get ready? Headmaster, Graham Maher, says, “The time is right to recognise that the world is not segregated and that teaching girls and boys to have mutually respectful and positive relationships with one another is an important part of educating young people. The first step for us was to change our name. Whilst removing the word ‘convent’, we remain committed to our Catholic heritage and ethos. 26

In one of these they have reached a Hampshire FA County Cup Final to be played at Ringwood Town FC in the New Forest (Long Lane BH24 3BX) on Tuesday 24th April at 7.45pm. The Chase team would love villagers of Waltham Chase and Hampshire football lovers to come and support them against Dorset side AB&C St. Peter's who have beaten Kings three times in this competition over the last five years. Jane's Kitchen WHITE CHOCOLATE MOUSSE

Ingredients

∙ 8 Plump cardamom pods, crushed ∙ 1 – 2 bay leaves ∙ 100ml whole milk ∙ 250 good quality white chocolate (Lindt vanilla or Vairhona) ∙ 300ml double cream ∙ 3 free range egg whites

Method

Infuse the milk with the cardamom seeds and bay leaves in a small pan. Bring them to the boil and then leave to cool. Then melt the chocolate in a small bowl over a pan of hot water. While the chocolate is melting whip the cream and whip the egg whites separately until they form soft peaks. Pour

the cooled milk slowly into the melted chocolate and stir gently until velvety. Fold this mixture into the egg whites using a metal spoon and then add the whipped cream mix carefully until ingredients are combined. Finaly scoop into small wine glasses or espresso cups. Chill for at least 3 hours and dust with cocoa powder before serving. Taken from ‘Jane’s Kitchen,’ an eclectic collection of mouth watering recipes. aving been postponed last month due to the snow, local butchers and producers finally gathered at Rownhams House and Gardens on Thursday 15th March for the much-anticipated results of the Great Hampshire Sausage and Pie Competition organised by Hampshire Fare. This year’s competition attracted a record-breaking 261 entries from 46 butchers across 12 categories which were all judged by a panel of national judges. Guests gathered at the wedding, events and office space, Rownhams House, where they were treated to sausage and pie themed canapés prepared and served by Vanilla Catering. The awards were hosted by BBC South Business Correspondent, Alastair Fee, who is an avid follower of Hampshire’s local food scene. The Supreme Champion 2018 was presented to Ambrose Sausages for their BBQ Back Bacon. Owned by Sue and Phil Ambrose, who rear their own pigs as well as producing award-winning products, the business is located near Bishopstoke but trades across the county and online. Sue Ambrose commented on their success: “We are overwhelmed, surprised and delighted! This year we entered some of our newest products, mainly to test ourselves and also for the expert feedback from the judges. To win in two categories and also overall is just brilliant. We know our customers have been rooting for us, we look forward to sharing our good news with them!” The event was sponsored by Lucas Ingredients, AHDB, Dalziel, Santa Maria, Rational, Eastleigh College and Mozzo. LAUNCHES COUNTRYSIDE AWARDS 2018

PRE Hampshire has announced the launch of its Countryside Awards for 2018, with new incentives for businesses, groups and individuals to enter and champion the work they do standing up for the countryside that makes Hampshire so unique. The Countryside Awards are designed to celebrate our beautiful, diverse and thriving countryside and all those who sustain it so that that everyone can value and enjoy it. The Awards - sponsored by Southern Co-op – are divided into four categories, each supported by its own sponsor. New this year is ‘Hampshire’s Choice’. For the very first time, the public will be asked to vote, from all the finalists, who they think should win a cash sum of £500, giving potential applicants even more incentive to get their award submissions in. Charlee Bennet, CPRE Hampshire CPRE comments: "Our awards showcase the very best of those who support our mission of 'standing up for the countryside'. Respecting this countryside has never been as important as it is right now and as we grow our awards we want to seek out those who really deserve to win – whether they’re big organisations or individuals doing monumental things on their own. This award is being supported by a new sponsor, Forest Holidays (www. forestholidays.co.uk) which has previously won a CPRE Countryside Award for its Blackwood Forest location. Forest Holidays will bring both a fresh approach as a new sponsor, alongside a level of shortlist and finalist expertise to the category which recognises projects involving young people up to the age of 18. This could include educational establishments (all levels), youth groups, scouts, guides, cubs, brownies and youth offender programmes. Rural Enterprise

This category benefits from the support of Hildon Natural Mineral Water (www.hildon.com) and is awarded to a business or council organisation which, through their work, either directly or indirectly enhance the rural environment and the rural economy. This category includes both ‘for profit’ and ‘not for profit’ enterprises. The Lead Judge for this award is Hildon’s Executive Director, Debbie Jones.

Making Spaces

The final category has the support of Hastoe Group (www.hastoe. com) and recognises, amongst others, architects, developers, parish councils, housing associations and renewable energy companies that are positively contributing to the sustainability of the rural environment or communities. This can be either new or regenerated buildings or landscapes. The Lead Judge for this award is Hastoe’s Land & New Business Manager, Karen Hillhouse The awards are now open for submission until 31st May 2018. Meetings with applicants are then conducted between June – August, with finalists then invited to the awards ceremony in September, where further networking opportunities are available for all. Hampshire People: Stuart Christie THE FORUM TALKS TO HAMPSHIRE GUITAR MAKER - STUART CHRISTIE

T

he serenity and beauty of the countryside that surrounds the Hampshire home of classical guitar maker, Stuart Christie, is mirrored by the interior of his studio workshop. It’s an immaculate space with ordered rows of tools and timbers including rosewood, maple, mahogany, cypress and cedrela (also known as Spanish cedar) the scent of which hangs in the air, all carefully stored in neat racks. The overall feeling is one of calm; this is a place to lose oneself in. “I forget time and everything else when I’m working, it’s totally absorbing. I imagine hearing the guitar and what it would feel like to play” Stuart Christie was a GP searching for a more rural practice when he found himself in Hampshire in 1982, and on retirement in 2013 he turned his time and attention to classical guitar making. “I had played classical guitar at university but I came across a book in the library some twenty years ago that fired my passion for classical guitar making. I love to listen to Julian Bream recordings; Jose Ramanillos made Julian’s guitar, and another maker, Kevin Aram, produced a plan from that guitar, that still influences my instruments. It was a small bodied guitar which made a sound with great clarity. Larger bodied examples can sound loud, but with less clarity they don’t always project the sound so well.The guitar is an instrument with little sustain, but, as with other aspects of its sound, choices can be made which tailor it to the player’s needs. For instance, sustain can be increased by making the back and sides heaver and stiffer, or making the bridge heavier.” Stuart sells his guitars to both amateur players and professionals. The guitars can be adapted to suit individual players, both in the sound they prefer, and to accommodate their style of playing. A forceful player may need a different set-up and a different neck shape to that which suits a gentler playing style. “I have heard top professional guitarists play my guitars too. I remember sitting right at the back of an auditorium and being able to hear the music with such clarity.”

Who would Stuart most like to make a bespoke guitar for? “I would never ‘mass produce’ - turning out the same guitar. I like to make for individuals because ninety–nine percent of what you hear is the performer, not the guitar. If you ever get the chance to hear Amanda Cook play, you should. She is an amazing guitarist, such a lyrical player, so I would love to make a guitar for her.The downside of making a guitar for such a famous player would be that everyone would ask for one like it, so it would limit my scope to experiment and adapt.” Does Stuart play professionally? “No, I don’t play enough to perform! Plus, my nails aren't tough enough even for amateur playing at the moment. I am currently trying a product for horse’s hooves to get them stronger! I belong to Southampton Classical Guitar Society so we play solos to one another there when we meet in Chandlers Ford.” As well as making guitars Stuart also does a few repairs. “Guitars can develop cracks if the humidity is too low, anything below thirty percent is not ideal. So I have a few repairs to do since the recent cold snap when the humidity fell below that level.” Apart from the intricacies of bending the wood for the body of the guitar Stuart shows me the painstaking labour of love that is the construction mosaic type patterning round the sound hole. “I sometimes make my rosettes, the decorative inlay around the sound hole, using veneers reduced to 0.3mm in thickness to create mosaic tiles, which are combined with thin strips of veneer to produce an individual pattern.This is a process only to be undertaken by the obsessive!” When Stuart takes a well-deserved break from his work creating such beautiful instruments, he and his wife may occasionally be found at their local - The Pub with No Name with their two trusty spaniels. CELEBRATING 25 YEARS OF BUSINESS

n an era that is challenging for any business, it is rare to find one that has stood the test of time. That is exactly what Pat Staples Interiors has achieved as they celebrate their twenty fifth birthday this month.

Pat Staples began her own business in 1993 at Symes Corner, Houchin Street in Bishops Waltham after ten years working as an interior designer for Pullingers, once a long established firm in Bishops Waltham. While at Pullingers, Pat became a well known designer gaining a reputation for trust and high standards of workmanship that customers could rely upon, which continued as the core ethos of her own business. Pat’s daughter Corinne joined Pat Staples Interiors a year after graduating as an interior designer in 1996 and in 1998 fellow designer Helen Jempson, also a design graduate, made up the team that is still in place today; aided by accounts manager Karen Lipscombe and a small body of professional curtain makers, upholsterers, curtain fitter, decorators, carpet fitters and Corinne’s partner Mike, a bespoke cabinet maker. Over the last twenty five years Pat Staples Interiors have designed for thousands of local, private homes, but also contract interiors including several hotels and pubs in The Meon Valley, Bournemouth, and the New Forest, a time share complex in London, the Marriage Room at Portsmouth Registry Office and race course boxes at both Ascot and Goodwood. I ask Corinne what has attributed to Pat Staples Interiors longevity and success. “We offer such a wide range of services; bespoke window dressings, carpets, wallpapers, paints, upholstery and re-upholstery, hand-made lampshades, lighting and accessories. But it’s so much more than that,

over the past twenty five years we have created a design team known for honesty, trust, experience, the ability to understand a brief and stick to a given budget and of course expert design, making and fitting. Our clients return again and again as their lives alter, they move or their home requirements change. It’s wonderful to have that continuity and share with them as their lifestyle evolves. We take pride and an enormous amount of time in our interior design consultation service for which we charge a nominal fee that is then refunded upon completion of the project. While some clients know exactly what design they want others struggle to visualise and make decisions surrounding the enormous range of design products available. It’s our job to understand their requirements and home aspirations and help make those decisions easy for them whether we are asked to co-ordinate to an existing scheme or create a new one. You have to build a relationship with a client to understand what scheme suits their lifestyle, home or workplace and never inflict our own personal taste upon the design. The Pheasant - Not such a bird brain BY CLAIRE THURLOW

I

’m hanging out washing in the garden when I get the distinct impression that someone, or something, is watching me. Instinct tells me to look over my shoulder, and there he is, about three metres behind.

“Go away.” I ignore him and continue pegging laundry, but when I’ve finished and turn around, he’s edged two metres closer. If I reached out, I could touch him. “I don’t have anything for you, and you’ve had quite enough already.” My stalker takes a tentative step forward, then stops, head cocked to one side, thinking. A pheasant’s head is very small in relation to its body, suggesting a negligible brain inside, but this one clearly has enough mental band-with to reason that humans can be a soft-touch where food is concerned. Judging by the size of this specimen, half the village has been feeding him. I walk back to the house, the pheasant strutting companionably by my side. I stop. He stops. If only my dog had walked to heel so calmly.We reach the back door and he looks at me expectantly. “You’re not coming in. Go and pester someone else.” He takes me at my word.Tom is back from university and my husband is working from home, so that’s two more humans to tap up for a meal. “Mum, Phil’s banging on the window.” “It’s not Phil, he’d be ancient by now. And this one looks different. Perhaps this is son of Phil.” We stand by the French windows and consider the impatient diner on the other side.The pheasant raps on the pane, etching a pattern on the glass with his beak. “Stop that!” I kneel down and tap back.The pheasant pauses and looks at me. Nose to beak with the bird, with a sliver of

glass in between, I’m impressed by the complexity of his plumage.The neat, burnished feathers on his chest overlap like fish scales or a chain-mail vest.Those on his back are larger, tougher, ending in long, regal tail feathers. Between his folded wings, the colouring is much paler, like old, faded denim. Phil, last year’s resident pheasant, had a broken tail, but this one, so far, has evaded such injuries or accidents. Up close, I can admire the tiny black tufts over his ears, the brightness of his eyes and the softness of the feathers on his ample belly, which are fluttering in the bitter, east wind. “We could give him something,” I say, wavering. “He’s huge! What have you been feeding him. Ginster’s pasties?” “Just normal bird-seed.” This is true. But the pheasant has been hoovering up any spillage from the bird feeder, as well as food left out for himself.This would be fine, but the smaller birds who like to feed on the ground – the robins, sparrows and blackbirds – now have to compete with the enormous interloper. Should I be encouraging a pheasant in the garden or should I let him fend for himself? This is hardly an endangered species, unlike some of our garden birds which would perish without human help in the winter. “I think we should call him Frank.”Tom suggests, heading for the kitchen. “Why?” “He looks like a Frank.”The pheasant squawks and stretches his wings. So, Frank it is.We shouldn’t anthropomorphise, giving animals personalities; even Beatrix Potter, creator of Peter Rabbit with his bright blue jacket admitted that, but inevitably we do. Being able to share our gardens with wild creatures is a privilege, even if sometimes they’re a pest. And our lives are all the richer for it.

Online pre-entry is the easiest way of entering and saves £8.00 per person vs. entering on the day. Online entry closes on Wednesday 11th April 2018 at 1pm. On the day entries are available at all our events as long as the event has not sold out prior to the event day. On the day entries are subject to an additional £8.00 per person surcharge. he Wiggle New Forest Spring Sportive is one of our most popular event and has become a welcome start-ofseason test for for many cyclists. Based at Somerley House, Ringwood. Due to its popularity, the event runs on both a Saturday and Sunday – and usually sells out before the day. Take this as a sign that you’ll get your cycling fill from this sportive, which takes in much of the stunning New Forest on the route.

Although all our rides are non competitive events (i.e. not races), most people still like to know how well they've done. With this in mind we will time each participants ride. When you complete your ride your time will be calculated and these timings, along with the timing award you achieved, will be displayed on the Website. Each rider will receive a timing award of either; bronze, silver or gold, depending on their average speed. Of course, some riders aren't bothered about all these awards and just cycle for the experience and stunning scenery. As you ride and take in the views in the rolling scenery, there will be a number of hills to challenge your legs – plus a test to come near the end – with short and sharp climbs popping up every now and again to keep you on your toes. Beautiful New Forest villages of Sway, Beaulieu and Lepe are passed through before you head north and back into the centre of the district. Quickly in and out of central point Lyndhurst, you’ll soon take on the events major climb of the day, just outside Nomansland. It’s steep, but fairly short, so you should be able to dispose of this quickly and continue on your way. From here, it’s downhill all the way – with one spiky hill exception around Stuckton and the final feed stop – as you roll back around the edges of the Forest, towards Ringwood, and claim your medal, t-shirt and recovery product at the finish line. Somerley House and Gardens are not usually open to the public; however as an added bonus, riders of the Wiggle New Forest Spring Sportive and supporters will have the chance to view some of the State rooms within the House and access to the Gardens on the event day. Please remember, no dogs are permitted on the grounds of Somerley Estate As the event is likely to sell out well in advance of the event, please book early to avoid disappointment. We ask all riders to read and observe the New Forest Cycling Code: www.newforestnpa.gov.uk/cycling-code. We want to encourage young riders to enjoy the pleasure of cycling. That's why all riders under 16 years old only have to pay a small fee to cover the entry process. All under 16 riders must be accompanied by a paying adult. Valid ID will be requested on the day.

he Hampshire Country & Garden Festival is dedicated to promoting the fun of the great outdoors and all it has to offer. We are celebrating the benefits to our health and wellbeing of gardening for all ages, healthy eating, inspiring speakers, learning new creative skills, enjoying music plus a wonderful array of childrens’ activities - in the most welcoming environment, the beautiful grounds of Bere Mill on the River Test. Despite the terrible tragedy of the recent fire at Bere Mill the Festival will go ahead. The event will give us the opportunity to celebrate the power of regeneration and regrowth that gardens and the great outdoors inspire in us. The Festival promotes all that is great about Hampshire, from food and drink to music, workshops and demonstrations, plant experts and nurseries. Whether you are an avid gardener or a family looking for a wholesome day out this is the event for you. As well as a truly memorable, fun and informative experience all the money we raise is going to the North Hampshire Medical Fund which supports our local hospitals and patients in Basingstoke, Andover and Winchester. One of the highlights of the Hampshire Country & Garden Festival will be a ‘Gardeners’ Question Time’. Chaired by Stefan Buczacki, well known former panelist and Chairman on Radio 4’s ‘Gardeners’ Question Time’ he also wrote and presented ‘The Gardening Quiz’ on Radio 4. One of the most experienced and prolific non-fiction authors in the country, he has written around sixty books. Also on the panel are high profile and popular garden personalities that include David Jewel, Jane Owen and Sarah Eberle. A Gala Evening will launch the Festival at Bere Mill on Saturday 9th June.
