As she begins work on a new production of Woyzeck, Sarah Greene talks about finding the humour in tragedy, harnessing adrenaline on stage and how the audience can make or break a performance FABRICMAGAZINE.CO.UK

We’ve caught Sarah Greene on a good day; the sun is shining, she’s fresh from Pilates and she’s enjoying some time off at home in London. “I’m extremely happy right now,” she assures me. But downtime is generally short-lived for the Olivier and Tony award-nominated actress; rehearsals begin next week for Jack Thorne’s adaptation of Woyzeck at The Old Vic, in which Sarah plays the female lead opposite John Boyega. Choosing 1980s Cold War Berlin for its setting, Thorne’s version of the play breathes new life into Georg Büchner’s seminal drama, unfinished on his death in 1837. On the border between East and West, a young soldier and the love of his life are desperately trying to build a better future for their child. It is a damning social critique, exploring the theme of poverty, and highlighting the people society leaves behind. “But there is also quite a lot of humour in it,” Sarah explains, acknowledging that this is an odd thing to say about a tragedy. “It’s a stunning piece of writing, and the cast is really incredible. I think that it is going to be pretty special.” Perhaps best known for her recurring role as Hecate Poole in the Showtime/Sky Atlantic series, Penny Dreadful – a role that scooped her the Irish Film and Television Academy Award for Best Actress in a Supporting Role in Drama this year – Sarah’s roots are on the stage. At the tender age of four, a visit to the panto first planted the seeds of ambition: “I just sat there in the audience, thinking: I want to do that. It felt like my whole body was propelling me forward onto the stage.” She secured a place at the CADA Performing Arts school in Cork, eventually graduating from the Gaiety School of Acting in Dublin. “I was very lucky to start working as soon as I finished, with the Druid Theatre Company. I did quite a lot of work in Irish theatre for about ten years really.” Film and television roles followed – notably as Christina Noble alongside Deirdre O’Kane and Brendan Coyle in Stephen Bradley’s Noble; opposite Bradley Cooper in Burnt; and as the female lead in CBS’ new drama Ransom, in the US – but the stage remains her first love. “It depends on the character, and the people you are working with, but I suppose that I do prefer the immediacy of theatre. I grew up on the stage, so I’m very at home there. I’m getting there in terms of having a camera right up in front of my face. But they’re completely different mediums.”

That’s not to say that the stage is always an entirely comfortable place to be, either. “There’s nothing like it. It’s the equivalent of being in a car crash, the adrenaline that you feel. And you know, I’ve had some awful times,” Sarah recalls, describing occasions when she has had to go on stage after receiving bad news, forgotten her lines, or taken a tumble. “Literally anything can happen. And every night it is a different show, not least because every night is a different audience.” And for an actor, striking a balance between controlling that audience, and letting them in is vital. And never more so than for an Irish actress in America, as Sarah discovered while appearing on Broadway as Slippy Helen, Daniel Radcliffe’s gleeful torturer in Michael Grandage’s production of The Cripple of Inishmaan. She quickly came to realise that the word “feck” – sprinkled liberally through her lines – though totally inoffensive on this side of the Atlantic, was seriously upsetting to the audience State-side. “I could see them tensing every time I said it, so I had to totally rework my inflection. They had to have compassion for the character, and they just didn’t when I was screaming it very forcefully in their faces!” Sarah’s hoping her audience at The Old Vic should be an easier crowd to please, though. And there’s something special about performing on the London stage: “Dreams coming true,” she muses. Not to mention being able to stay in her own home in the city that she loves. “I’m very happy in London at the moment. I’ve got a wonderful, wonderful home here with two of my best friends and my sister and her fiancé. I think you need to have people around you to appreciate this city. And right now it is the best city in the world.” That said, Sarah assures me that the travel opportunities that her work presents are a large part of the appeal of a job like this: “I’ve got to see the entire world, from Newfoundland to Tokyo. It’s a huge bonus, to see so many different places, and live in different countries and experience different cultures.” I wonder whether – in a job where no two days are the same, and where a phone call can change things in an instant – it is ever possible to make plans and feel truly settled. Sarah laughs: “This job definitely doesn’t suit somebody who needs a plan, because there ain’t no plans. It’s completely out of your control and you have to not stress

about things that you have no control over. It’s exciting living like that; you have to give yourself over to it.” Which probably goes some way to explaining why she is so content to take this idle week in the sunshine as it comes. “I might not get another day off now until Christmas. If the second series of Ransom gets picked up I will have to fly the day after I finish Woyzeck, and then it’ll be an intense six months of shooting in Toronto…” And if the show doesn’t get picked up, what then? “I have one or two projects lined up if that doesn’t work, though I am signed into that contract for the next six years. But, yes, things are a bit uncertain at the moment. I kind of like that.” If anything is certain, it’s that one way or another, she will endeavour to be working. “Acting is a complete release of the emotions that I would usually keep pent up. You can really lose yourself in a role, in a controlled sense. I notice, when I’m not working, how much I need a creative outlet. You know, I can get quite down when I can’t put those emotions anywhere.” Speaking of creative outlets, while working to put herself through college, Sarah took a job on the Helena Rubenstein make-up counter at Brown Thomas, where she was responsible for bridal makeovers. It’s a skill she has put to use in her acting life, too: “When I was starting off in the theatre scene in Dublin, with the smaller parts I had, I would take over doing the wigs, and doing the make-up, and backstage stuff – just to keep myself busy. I like being busy; I don’t like sitting around.” It sounds to me like Sarah’s pretty much got things sorted – is there anything she’d like to change right now? “I’m grateful for everything that I have. I’m working with really great people, and great writing, so, you know, I can’t really ask for anything more! My parents are healthy, my sister is happy. I can’t ask for much more than that… Well, world peace, actually. I’d like world peace. I’d like there to be a lot more love in the world. That would be my wish right now.” It’s hard to argue with that.

The elixir of eternal youth wouldn’t go amiss, naturally, but failing that I want to feel special; I want to take time out from my busy life and luxuriate in me time; I want indulgence; and yes, I want to walk out at the end of my session not just feeling like a weight has been lifted, but looking – indefinably – better, too. is interrupted, but I needn’t worry, things are about to get infinitely better… In the treatment room I’m settled onto the comfortable bed and swaddled in the fluffiest of towels. The lights are turned low and an hour of pure bliss follows. The facial incorporates wonderful massage and the Ila products feel and smell divine. At the end, my therapist uses a Tibetan singing bowl. I giggled when she suggested it, but I have to admit that there is something magical about the sound. FOOD FOR THOUGHT With a rise in the number of children requiring inpatient treatment for eating disorders, it’s vital to emphasise the importance of early intervention

The sooner a child is diagnosed, the less likely their eating habits will become entrenched, which leads to better treatment results and a quicker recovery. Rhodes Wood Hospital understands it can be terrifying when parents are faced with the prospect of their child exhibiting signs of an eating disorder. Most will find it incredibly hard to face dealing with this situation, and may try to manage the illness themselves. When they do eventually seek help from their GP, parents are normally faced with long waiting times before their child is seen by the right people. Sadly, by this time, the illness may have spiralled downwards and the child’s condition can quickly become severe.

Early intervention is crucial for children with eating disorders. It is well documented that the earlier a child is treated, the better the chances are of keeping them out of hospital. With this at the forefront of their minds, the team at Rhodes Wood have developed an intervention service called Positive Steps, which

provides a comprehensive assessment with a specialist eating disorder clinician. Hospital director, Sharon Donaldson believes this can help parents who may have concerns about their child’s eating habits. This extremely affordable and comprehensive assessment is available to anyone on an outpatient basis and does not require a GP referral. Rhodes Wood Hospital will carry out a nursing assessment of physical health, eating behaviours and thoughts on food; complete an eating disorder questionnaire with the young person, led by an assistant psychologist; and summarise their assessment in a report, giving advice on positive treatments.

Getting help – whatever the eating problem your child may have – is a step in the right direction. There are many forms of eating disorder that may not be as well-known as anorexia, bulimia or obesity, but which still require attention, such as food phobias; these, although not as severe, can escalate into a more complex eating disorder if not treated early enough. First things first, so you don’t feel like a fool making your booking over the phone – and I speak from experience here: the name is Mere, spelt like a lake, but pronounced Mary. It’s named after Monica Galetti’s Samoan mother, one of a number of very personal touches at the Masterchef: The Professionals judge’s first restaurant. A labour of love for Monica and her husband David, who was head sommelier at Le Gavroche, Mere opened on Fitzrovia’s Charlotte Street in March this year, targeting the higher end of relaxed dining. The interior design and menu are both inspired by classical French and South Pacific influences (born in Samoa, Monica grew up in New Zealand and David is French). It is a little early for lunch, so we start with a glass of the house Champagne in the bright ground floor bar. The restaurant is downstairs, and though long and narrow, the space feels light and airy, thanks to a clever lightwell. It is buzzing on this Thursday lunchtime. Samoan artworks – by Galetti’s cousin – hang on the walls, and doors open onto a terrace area (lined with the wood from crates of the couple’s favourite wines). The pork “boil up” on the starter menu is Monica’s take on a traditional Kiwi dish, but I’m more tempted by the mushroom and Marmite, having recently discovered that I am, in fact, an inhabitant of the “love” camp. Meaty wild mushrooms are served with nutty tortellini and a melting Marmite butter, the latter lending a gentle hint of umami to the dish. Next up, squab: pink and tender pigeon breast glazed with rhubarb, served with a crunchy ras el hanout pastilla. The gentle combination of sweet and spice is a winner. For dessert, rhubarb and crème fraîche layers, with shortbread and white chocolate sorbet, is pretty as a picture, and though it looks saccharine sweet, is light and delicious – the perfect ending. Up on the roof The question of where to enjoy al fresco drinks is on everybody’s lips again this month, and we may just have the answer. After a £300k renovation, Proud Camden

has just unveiled its new rooftop garden, and we think it’s perfect. Complete with landscaped rockery, flower garlanded pergolas and striking water features, it’s a real oasis above the hustle of Camden. There’s no better spot to watch the sunset. And as the light fades, DJs will be on hand to provide a soundtrack to the hazy summer nights. There’ll even be food laid on by street food pop-up, Burger Bear. We’ll drink to that. Nothing beats a warm, crusty sourdough loaf, but try as I might, I’ve never achieved quite the same chewy crumb and crunchy crust combo as the loaves from my local farmers’ market. It seems that a recipe in itself does not guarantee a good loaf. Step up Crumb, with their ingenious, all-in-one, bake-at-home sourdough package. I’m assured that the only things I need provide are an oven, some patience and a little muscle power. I excitedly unwrap my Baker’s Dozen kit. As well as the obvious – the “starter” (a living culture of natural yeasts which you keep in the fridge) and enough flour to make two loaves – there’s a lovely granite baking stone, a plastic scraper and some cute bread baskets. Very detailed and easy to follow instructions are included, as well as tips and links for online videos to help you come up with your own personal kneading technique. TOA S T OF THE TOW N This month sees the long awaited reopening of The Clifton in St. John’s Wood. Hampstead brothers Ed and Ben Robson hope to breathe new life into the historic pub, which has stood empty since 2013. And with successes under their belts including The Horseshoe in Hampstead, and schnitzel and prosecco bar, Boopshi’s, in Fitzrovia, we were excited to discover what the pair had planned. Head chef Karl Calvert (Providores, Beef & Brew and Caravan) has devised an eclectic menu, which celebrates unusual ingredients and overlooked cuts of meat – think haggis sausage roll served with Famous Grouse ketchup. There will be a diverse selection of local and craft beers on tap, including the house Clifton beer, accompanied by a strong wine list, produced in collaboration with Raul Diaz (wine sommelier and expert on Channel 4’s Sunday Brunch). INGREDIENTS For the lamb Best end of lamb, trimmed of sinew Olive oil (50ml) Thyme (4 sprigs) Rosemary (2 springs) Garlic (1 clove) crushed Vegetable oil (2 tbsp) Table salt (1/2 tsp) Unsalted butter (25g) cubed For the beetroot aioli Egg yolks (2) Dijon mustard (1/2 tsp) Cabernet sauvignon vinegar (1 tsp) Olive oil (125ml) Beetroot juice (250ml) reduced to 25ml and chilled Table salt (1/2 tsp) For the cooked beetroot Beetroot (1 long) Rock salt (2 tbsp) Olive oil, to dress For the girolles Girolle mushrooms (10) Unsalted butter (20g) Table salt (1/2 tsp) For the garnish Globe artichoke (1) peeled, cooked and quartered Borage flowers

METHOD 1 To prepare the lamb, marinate overnight with the olive oil, herbs and garlic. 2 To make the aioli, whisk the eggs with the mustard and vinegar until pale and fluffy. Slowly drizzle in the oil whilst whisking continually. Finish with the beetroot juice and season to taste. Place into a piping bag in the fridge until needed. 3 To make the cooked beetroot, preheat the oven to 160°C. Wrap the beetroot with the salt in foil and bake for 3 hours, or until soft. Remove from the oven and allow to cool slightly. Peel whilst still warm, then refrigerate. Cut into neat wedges. When ready to serve, remove from the fridge 1 hour before and dress with olive oil and Maldon salt. 4 To cook the lamb, heat the vegetable oil in a medium frying pan. Season the lamb all over, then place in the hot oil. Brown all over then add the butter. When foaming, baste the lamb all over until well caramelised and cooked through to your preferred liking. Remove and set aside somewhere warm to rest. Place the girolles in the pan with the lamb butter and cook through, add the artichoke quarters and warm through. 5 To serve, place the beetroot aioli on the plate. Carve the lamb into four, placing two pieces on each plate. Garnish with the beetroot, artichokes and girolles. Finish with the borage flowers.

DA N S H E R LO C K SALT YARD When I was a child I wanted to be… a fireman. The idea of saving people seemed quite exciting. But then one day I popped in to my dad’s work; he was executive chef in a very large kitchen. I can still remember the smells and seeing all these chefs running around like crazy. I thought: “this looks like fun,” and from that day I knew that I was going to be a chef. The first thing I cooked was… scrambled egg. I remember Dad showing me how to cook it. He called it “egg in a cup”. I still make scrambled eggs the same way today, thirty-odd years later. The presentation? Well, in a cup, of course! My kitchen heroes are… my dad and my brother. I can honestly say that their dedication, energy and love of all things food-related really does inspire me. I have a lot to thank them for. My fail-safe dinner party menu is… a big bowl of mussels to start, steamed with chickpeas and fennel, served with crusty sourdough and a dollop of saffron aioli; slow cooked ox cheek, with soft parmesan polenta and sautéed porcini mushrooms for the main; and, to finish, light and fluffy cinnamon churros, stacked high and served with whipped mascarpone and a bitter chocolate sauce. My last meal on earth would be… a dozen native oysters served with lemon wedges, followed by grilled Txuleta (a rib steak from retired Basque dairy cows) with duck-fat-roasted potatoes, béarnaise sauce and a simple tomato salad. To finish, tarte tatin with vanilla ice cream. My ultimate London day consists of… sunshine, good food and wine, enjoyed with family and friends. The simple things make me happy. They can be paired with food or can be a healthy non-alcoholic option,” he enthuses. It’s clear that Juice A Day was very much inspired from the consumer’s point of view. Fast forward to 2017 and co-founders Harrison and Parmi launched their juices to the retail market at Britain’s biggest food and drinks exhibition, IFE. “We had such good feedback at IFE this year, with chefs coming by our stand and saying, ‘Wow, that would go great with fish!’ or ‘I really want to try your watermelon juice with vodka,’” says Harrison. They’ll also be serving up their healthy juices at this month’s Balance Festival, where visitors will get to preview cutting edge fitness sessions before refuelling on cold pressed drinks and healthy snacks. Harrison and Parmi bring a wealth of expertise in capturing the freshest flavours, ensuring customers are getting their five-a-day – and then some. “We believe cold pressed is the only juice extraction method you should be using, as it avoids any improper blending or grinding of the ingredients,” says Parmi. “Having a juice a day has really improved our energy levels and keeps our appetite stable throughout the day. It’s such a life saver when someone puts a meeting in the diary at lunchtime and I know I’ll get through it with a green juice by my side!”

Cretian contrasts With its temperate climate, outstanding cuisine and fascinating culture, the perfect holiday awaits on Greece’s biggest island

O

n paper, Crete has it all; the climate (it’s one of the most temperate islands in Greece, due to its southerly location); the history, both ancient and modern, from the Minoan temple at Knossos to its strategic importance to the allies in World War II; the culture, which is unique even among Greece’s rich tapestry and continues to fascinate. Indeed, one of the biggest hit page-turner beachreads of recent years was set here – The Island, by Victoria Hislop, which weaves a heartbreaking tale around the real life leper colony on Spinalonga, a small islet just off the north coast at Plaka. With such credentials, I was bemused as to why I had received such mixed reports from friends and family who had visited, from FABRICMAGAZINE.CO.UK

the absolutely glowing to the distinctly ambivalent. As such a committed philhellene, it seemed remiss that I was relying on the opinions of others, and so it was that I set off to establish my own. The size of the island was probably, I discovered in my research, the key to this disparity. It’s Greece’s biggest, which means a huge variance in landscape – there are even regional cuisines – and quality of tourism development, and, sadly but unsurprisingly, the coast is studded with the sort of UK-on-Sea type resorts so beloved of some Brits. But again, here the island’s size counts in her favour, as it is perfectly possible to spend, I’d imagine, months on end on Crete and avoid so much as a whiff of Full English; and so we settled upon the upmarket resort of Elounda, where the promise of luxury accommodation combined with proximity to Spinalonga proved the decisive factors. The Elounda Peninsula All Suite Hotel is one of a handful of exclusive hotels propped on the water’s edge, with a number of award-winning restaurants on site, including Old Mill, repeatedly voted the best in Greece; as well as a private beach, a yacht club and all the other bells and whistles one would expect from a hotel of this calibre. We were super excited by the private plunge pool on our terrace, complete with hammock strung across it, although in the end, if you are anything like as inelegant as I am, the main value of this will prove to be its über-Instagramability, as the sight of me actually trying to get on and off the thing gave my partner the best laugh he’d had in months. Still, I put that down to my own failings rather than the hotel’s, although my slippery struggle became even worse towards the end of our week, having made the most of not only the culinary excellence on offer within the grounds, but also exploring more hidden gems around the region. One restaurant we visited twice (almost unheard of for us, when each meal is an opportunity for new discoveries) was Kanali, a small family-run taverna reached by driving along a causeway; we had the most outstanding meal there on both occasions, and their fried cheese croquettes 62 |

became not only my new obsession (I haven’t mentioned that I was pregnant – give a girl a break) but became my most-liked post on social media for some time, proving that... er, everybody loves cheese? Anyway, it was a fabulous place and you must visit. Of course, our real must-visit was Spinalonga, and it didn’t disappoint. Although I don’t necessarily recommend scrambling around crumbling ruins in the midday sun wearing flip flops, particularly if you’re 24 weeks pregnant, the fascinating fusion of Venetian, Ottoman and 20th century history proved too strong a pull to resist. Exploring the outward, fortified side of the island was exhilarating, imagining raids by Saracen pirates of yore, but wandering the tumbledown streets of the old village, and realising that the last permanent resident left the island as recently as 1957, was as eerie as it was moving. If this was our most active adventure of the holiday, in stark contrast was the following day, when the most spectacular thunderstorms swept the coast, and we took the decision to stay in our suite all day. As if preempting us, housekeeping had made up two day beds in our living room, and so we spent the most wonderfully cosy time watching the weather and reading (in my case The Essex Serpent by Sarah Perry, which was phenomenal). It struck me, lying there, that this is the essence of Crete: its contrasts. It can be as wild and rugged as the infamous mountain bandits of its history, then in a heartbeat, as warm and welcoming as only the Greeks know how. If your experience of Crete previously hadn’t quite hit the mark, I urge you to revisit; the holiday of your dreams could be around the next corner. We certainly found ours. Overseeing a team of 44 at Madigan Browne, including architects, interior designers and project managers, Paul has helped many a Londoner realise their dream home. The Mayfair-based interior design studio and architecture practice specialises in high-end luxury abodes with serious wow-factor. It’s only fitting, then, that Paul’s own home should be an entirely glamorous affair, and, stepping inside, I’m not disappointed. The large detached Victorian house has recently been refurbished. It is, in itself, a masterclass in successfully mixing old and new, with a modern extension that, by Paul’s admission, is “a complete contradiction to the elegant period features found in the original parts of the house” – and yet, as the eye moves from ornate cornicing to clean lines, there’s a seamlessness that makes you wonder how it could be any different. “This house is a great example of old and new working together,” Paul confirms. “It’s seen so much now in London – listed buildings with contemporary extensions. Of course, there needs to be a balance. We find that highlighting the period features helps to define the balance and the addition of contemporary features is usually complemented by original building details.” Comprising five bedrooms and oodles of entertaining space, the house is beautifully light and bright. High ceilings, large windows and polished parquet flooring offer traditional English elegance, while a show-stopping swooping staircase comes to life with clever underlighting, merging period grandeur with contemporary sass. Paul has lived here for three years with his wife and children, and despite having the best possible means at his disposal, didn’t change a thing structurally when he

moved in. I wonder how this house measured up to his ideal. What does he usually look for when buying a home? “Personally, I like a large, open-plan kitchen and family space. The kitchen is the beating heart of our house, and with young children, the open-plan aspect is important. Large bathrooms are also essential!” Given his architectural prowess, I wonder what was the appeal of a period property, as opposed to a complete new-build? “We have lived in both,” he tells me. “Actually, our first two family homes were new-build properties. A new-build is great if delivered right. So many developers deliver housing solely based on the bottom line, and forget the end-user experience, overall quality and durability. Period houses have stood the test of time, they are constructed with old-fashioned bricks and mortar and have bags of character.” But here, Paul undoubtedly has the best of both worlds, and without the need to knock down walls and rearrange the rooms, he was free to concentrate on the interiors. The use of neutral decor throughout the property brings continuity to the otherwise disparate spaces, but a lack of colour in no way means a lack of fun: the open-plan kitchen space is perfect for parties, with its walk-in wine cellar, sociable marble bar complete with Bouchon stools resembling Champagne corks, and enough room to fit a full-size ping pong table. Telling me he has a penchant for “unique and quality materials, finished by expert craftsman,” Paul’s attention to detail is obvious. I wonder if he ever impulse buys furniture. “Being in the industry has generally moved me towards the opposite of impulsive,” he reveals. “I like to plan, design and design again before I’m sure!” I’m intrigued to know where he sources his favourite pieces. “Personally, I really like the Portuguese furniture movement: there are some great guys producing really good furniture in Portugal especially Boca do Lobo and Koket. The style is very opulent, very bold and certainly leading a new movement in furniture design.” (020 3735 2298; madiganbrowne.com)

Local connoisseurs can pick up a bottle of fine wine, old or new, and enjoy it straight away, paired with a cheese and charcuterie platter. Look out for monthly themed tasting sessions, too, as a member of the Tannin & Oak wine club. Simon Deen from Aston Chase is enamoured with this new opening, telling us: “The customer service is excellent, as is the breadth of knowledge of the staff. Love them or hate them, smartphones and other mobile devices have transformed our lives. But what about the effect they’re having on our children’s brains?

What makes it different? The children are the focus. That may sound basic, but I’ve worked in a lot of nurseries and it isn’t always the case! Every Asquith nursery provides well-planned and ageappropriate activities for its children.

“I commonly hear parents say that smartphones disrupt their children’s sleep,” says clinical psychologist and parenting expert, Dr Claire Halsey. “They also create anxiety about missing out and cyber-bullying.” On top of that, a recent study by Microsoft showed that most adults stop concentrating after eight seconds. Even goldfish can manage nine. For Claire, this is why parents need to lead by example. “If we’re glued to our screens, we’re in no position to tell our kids to get off theirs,” she says. “And let’s face it, devicefree time is good for all of us.”

How would you describe the atmosphere? West Hampstead Day Nursery is a family unit and a second home to all of us. How would you describe your personal educational ethos? Every child is different and learns at his or her own pace. It’s also important to give parents regular feedback on how their child is progressing: we give progress reports every 10-12 weeks.

Here are her tips for giving young brains a break. 1. Start early. It’s much easier to set boundaries with pre-teens than it is to wean a 15-year-old off a 24/7 smartphone habit. 2. Treat it as a negotiation, not a battle. Sit down as a family and agree fair limits for everybody, such as text-free meal times and switching smart technology off at 9pm.

How do you balance learning with play? Play is vital for children – it helps them to understand the world around them and to develop early life skills. Our early years practitioners create a healthy balance between this and adult-led learning.

Children’s lives are full of fast-moving, high-emotion activities. Extend their concentration by getting them to focus on one, more sedate activity at a time – like cooking a meal together, or going to the cinema. It’ll help you to focus better, too!
