A quiet corner of Hampstead turns rock ’n’ roll with a riotous collection of previously unseen photographs from acclaimed snapper Pat Pope. The 13 images, selected from his favourite shoots over the past two decades, feature musical icons including David Bowie, Debbie Harry, Lou Reed and Morrissey. Each image will be printed in limited editions of just ten, and visitors to the Zebra One Gallery can take a print home for £1,500. Owner and curator Gabrielle Du Plooy tells us, “these are remarkable images of some of the world’s biggest musical icons, which capture them in ways they were rarely seen. WE’VE LONG KNOWN THAT JUST LOOKING AT FOOD CAN MAKE OUR MOUTHS WATER, BUT NOW RESEARCH HAS PROVEN THAT “EATING WITH THE EYES” IS HARD-WIRED IN THE BRAIN. THE STUDY DEMONSTRATES THE PRESENCE OF CIRCUITRY THAT CONVEYS VISUAL INFORMATION TO THE PART OF THE BRAIN THAT REGULATES THE MOTIVATION TO FEED IN ZEBRAFISH. WHILE ZEBRAFISH WE ARE NOT, OUR NEURON NETWORK IS SIMILAR, AND FIRST IMPRESSIONS COUNT – ASIDE FROM TASTE, WE ARE INFLUENCED BY AESTHETICS So how to do it? If you’ve ever tried, you’ll know that plating up is a job for an abstract artist. Just because you’re a good chef, it doesn’t follow that you have the presentation skills to match. Here are a few of the basics: 1 Pick your plate For a real contrast, you can’t beat plain white and the larger the plate, the more the food will stand out. Think about what you are serving, too: wood or ceramic work well for more rustic meals 2 Take cues from nature Choose colours that reflect the season and aim to contrast light with dark for a balanced dish 3 Build flavour-filled bites Layer your components one on top of another to ensure that every mouthful over delivers on flavour. Adding height also gives depth 4 Be playful Try shifting the centre – this can have the effect of anchoring the food and adding drama 5 Clean up your act Always use a light hand and clear up any drips or stray smears before serving 6 Finishing touches Pick garnishes carefully: they should work in harmony with your dish, adding a layer of texture and visual excitement

“SOLERO” Ben Murphy, Launceston Place “Where I can, I like to use influences from my childhood. I wanted to create something fun and eye-catching that was also full of flavour. And I really like having an element of surprise: people naturally expect this dish to be an ice cream, but it is, in fact, a coconut mousse. I developed this dish to be vegan friendly, which means it can go on all our menus and every guest has the opportunity to taste it. Here, clean-tasting seared sashimi-grade yellowfin tuna is served with a crunchy Asian salad, carrot purée with a ginger kick and sweet homemade saffron lobster tortellini. Presentation is very important, but if the taste doesn’t match or surpass the initial promise, the customer will be disappointed.”

PEKINESE DUMPLINGS David Muñoz, StreetXO “We want to create unique dishes that have no limits – to go beyond expectations. All of our food is different and a bit crazy. Think of it as fine dining, but eaten with your hands and with juices dripping down your chin. The Pekinese dumplings are presented on a blank canvas of white paper, splattered with strawberry hoisin – like a piece of modern art – and served up to be eaten in one bite. I want my dishes to shock and surprise, both when they arrive at the table and when they are eaten.”

It is fun, impressive to behold, and our customers love it. The sweetness of the black sugar syrup, the savouriness of the bacon and the freshness of the blueberries are all perfect companions for the sweet green tea waffles. First and foremost, we aim to make delicious food, but for a dish like this, presentation is also very important. We often notice our diners taking a photo before enjoying their food.”

Mackerel is a fish that I love to cook with, and accompanied by the crunch of radish, cooling cucumber and a sprinkling of dill, the flavour of the grilled flesh is elevated brilliantly. For me, taste is essential in every dish, but of course the fact that these vibrantly coloured ingredients go so beautifully together is a bonus.”

I wanted a dessert that was white and pure and revealed nothing about itself. It really showcases the best that the season has to offer. In Italy it is traditional to stuff the courgette flowers with anchovies and mozzarella, but at Sartoria we use the Calabrian speciality of stoccafisso (air-dried cod). It is one of my favourite tastes of home and when paired with the vibrant colours and flavours of the fresh vegetables and flowers it makes for a stunning and delicious summer dish.”

We had a lot of fun creating this menu, which combines Middle-Eastern and Asian tastes with traditional Mexican street food, offering guests flavours and influences from all over the world. The presentation of this dish is incredibly important and we were looking to capture a sense of summer – perfect for enjoying on the roof! The bright colours of the octopus and bok choy against the black sesame mayo make this dish really stand out.”

Try as I might, my blow-drying skills leave me feeling flat, so when I want my hair to speak volumes, I call on Duck & Dry at Oxford Circus (where, if the mood takes me, I can also indulge in a mani or pedi – or both – all while sipping on Prosecco). And, during a recent visit, I was excited to hear about their latest offering: making for a truly head-to-toe package, makeovers or make-up tutorials from Alina Milos – make-up artist and co-founder of mineral make-up brand Lin & Lo – have been added to the menu. Clutching my ticket to a day at the races, I head in to be beautified. In a quiet corner of the studio, Alina has set up home. And at home is exactly how I feel in her zen space, which has been beautifully appointed in walnut, copper and marble. To make life easier for clients, she has created 15 different make-up looks, categorised into different moods – so whether you’re feeling romantic, determined or ready to party, you’re sure to find something that appeals. She also creates more customised

looks and can offer tutorials on some of those hard to master make-up techniques, like the eyeliner flick. I like the idea of selecting a look, and decide on “Rose”, which, with its ever-so-slightly smoky eyes and neutral lips, is the perfect blend of natural and made up. And in just half an hour Alina has worked her magic, talking me through the processes and letting me in on trade secrets as she goes. I’m already a fan of the Lin & Lo products, but this gives me the opportunity to try some new ones, and with the whole line available to purchase in the Studio, I’m keen to add these to my stash at the end of the session. We’ve also been discussing brows and lashes – another of Alina’s specialities – and I book in for a tint and curl at a later date. Food&drink THE ART OF THE PICNIC We do love a picnic, but the often-fleeting nature of our summer weather means that we’re not always blessed with the luxury of forward planning. Which leaves us with two options: grabbing some pre-packaged sarnies and packets of crisps en route, or calling on the experts to furnish us with a thoughtful feast. No prizes for guessing which we’re opting for this summer. AH I POK E Bored of barbecues? Wow guests at your next al fresco bash with something they might not have tried before. Hailing from Hawaii, poke (pronounced ‘poh-kay’) is a colourful mix of raw cubes of fish, with a soy-based dressing, served in a bowl with rice, pickles and colourful toppings. Few do it better than Guy Jackson and Celia Farrar, founders of Eat Poke, the original poke traders at Kerb London. Their new book, Poke: Hawaiian-Inspired Sushi Bowls (Hardie Grant, £12.99) is out now. Here, they share one of their favourite dishes.

1 Place rice in a saucepan with a close-fitting lid. Cover with cold water and, using your hand, stir gently to release the excess starch from the grains. Drain and repeat until the water stops turning cloudy. 2 Once fully rinsed and drained, cover the rice with 240 ml water. Place the saucepan on a medium-high heat and bring to a rapid boil. Cover, turn down the heat to a gentle simmer, and cook for 15–20 minutes. 3 Once the rice is cooked, remove the pan from the heat and leave, covered, to steam for a further 10 minutes. Now you can turn the rice out into a wooden sushi rice bowl, if you have one. Using a rice paddle or wooden spoon, gently fold and turn the cooked rice, allowing the steam to evaporate. 4 At this stage, we like to season the freshly cooked rice. Whisk together the mirin with the rice wine vinegar, plus sugar

and salt. Drizzle the mixture over the hot rice while gently folding to coat each grain. The rice should now be left for 10 minutes to cool before using for your poke bowl. 5 In a large mixing bowl combine the tuna, white onion, half of the spring onions, half of the black and white sesame seeds, and the salt. Mix all the marinade ingredients together in a small bowl, add to the tuna and thoroughly combine. Serve immediately or leave to marinate for up to 1 hour. 6 Once ready to serve, spoon the cooked rice into 4 bowls and top with the fish and marinade. 7 Sprinkle the remaining sesame seeds and spring onions loosely over the top of the dish. 8 Try pimping your bowls with beetroot pickled baby corn, lotus root crisps and a few edible violet flowers.

INGREDIENTS Base 240g white sushi rice 2 tbsp mirin 2 tbsp rice wine vinegar 1 tsp sugar ½ tsp salt Poke 400g fresh yellowfin tuna, cut into 1.5cm cubes 2 tbsp sliced Maui or sweet white onion 4 tbsp spring onions, just the green tops, finely sliced ½ tsp toasted white sesame seeds ½ tsp toasted black sesame seeds 1 tsp alaea or Hawaiian sea salt (sea salt or Himalayan salt are good alternatives)

DALLOWAY TERRACE The Bloomsbury Hotel’s Dalloway Terrace is such a gem that I’m almost reluctant to spill the beans. Tucked away behind the hustle and bustle of Tottenham Court Road and the Dominion Theatre, the restaurant has recently re-opened after its winter hibernation. Festooned with pretty blossom, it’s a true oasis in the city. Basking in the evening sun, we can’t help feeling we’ve lucked out with the weather, but with the ability to cover the terrace, rain never stops play here. As we peruse head chef Hans Louis’ new seasonal menu, we toast our good fortune. The No.3 Berry Martini and Frosé (Lillet Blanc, rosé wine and strawberry) cocktails are both excellent – we’re impressed by (though not moved to order from!) the range of delicious-sounding low-sugar cocktails and mocktails that are also on the menu. Starters are promising – it’s a creamy mushroom soup with an exquisite hint of truffle, accompanied by warm sourdough bread for me, and a retro prawn cocktail, with the restaurant’s signature Guinness bread for my companion. This proves to be the king of all breads, though with two courses to come, restraint is called for. Inspired by the sunshine and feeling the holiday vibe, we’re tempted by the Salcombe crab and crayfish ravioli, but the lure of fillet steak is too strong. Cooked to perfection, it is served with hand-cut chips and a goat’s curd and avocado mousse salad on the side. A well balanced and medium-bodied Argentinian Malbec is the perfect complement. We’ve just enough room left for something sweet and choose to share a sublime pistachio cream profiterole with salted caramel ice cream, which we wash down with a glass of Tokaji – the Hungarian dessert wine holds huge sentimental value for us, providing a fitting end to a truly memorable meal. Al fresco dining in the West End doesn’t come much better than this. But don’t wait for a sunny day to get yourself down there! BP

I loved the team aspect, but alas, it wasn’t to be. The first thing I cooked was… spaghetti Bolognese. I was taught to make it from scratch by an Italian lady – ready-made sauce jars are not an option! My kitchen heroes are… those who are true to the ingredients and do not try to complicate flavours and dishes. Less is definitely more. The terrace makeover is accompanied by a new seasonal menu from head chef Hans Louis

My fail-safe dinner party menu is… arancini with goat’s cheese for starters. They can be made in advance and are always a real winner among guests. For main course, I always go for slow roast lamb shoulder (us Brits are blessed with the best meat) with port reduction, accompanied by a selection of seasonal veg. For dessert, nothing beats a traditional sticky toffee pudding. My last meal on earth would be… steak and kidney pudding with chips and gravy. I was born and bred in Manchester and every time I go back I have to have this. I’ve converted many southerners with this simple yet classic dish. When I feel down, I cook… a mean, hot curry – I’m so preoccupied with everything that goes into perfecting the dish that I forget about everything else. My favourite London restaurant is… sadly no longer. Les Trois Garçons was amazing. That said, London is now a Mecca for food, and to choose just one place would be an injustice to all the others. My ultimate London day consists of… bacon sarnies at home with my son, followed by a stroll – we’re always in a rush, but once in a while it’s good to saunter through W1. Then dinner and drinks in the evening with friends. What better way to spend a day? Boxcar, a butchery, deli and grill opened last month at 23 New Quebec Street, W1H (boxcar.co.uk)

A taste of Puglia

A weekend escape at Don Totu, a very special B&B in San Cassiano, provides an opportunity to experience “la dolce vita” WOR DS KA R EN HEA N EY

When Milanese couple Mauro and Chiara Bini restored this beautiful 17th-century building in San Cassiano, Puglia, they wanted to give it back its soul. They did more than that. They transformed it into a very special boutique B&B, where guests truly experience “la dolce vita”. Named after the landowner’s local steward, Don Totu is a “secret palazzo”, designed for gracious living rather than ostentatious entertaining. Its deliberately unassuming façade conceals a much grander interior with star-vaulted ceilings, exposed stonework and soft furnishings in a soothing palette of ivory, cream and grey. Local ceramics and collectables from all over the world add intriguing accents. A maze of corridors and stairways lead off to the hotel’s six bedrooms: five doubles and one family suite. The rooms retain the original building’s materials – ancient brickwork, magnificent wooden doors with original ironwork – but each has its own distinctive style. All are discreetly luxurious. Beyond the main building there is a spectacular pool area with landscaped gardens and a pool house that is quite simply jaw-dropping. Designed by the owners, it’s a double-height loggia, with a reproduction of Matisse’s 18-metre-long 1952 cut-out La Piscine running its entire 58 |

length. Iconic 1950s-style furniture completes the picture. It’s the perfect place to kick back and relax with a Negroni after a day in the sun; alternatively, you can head up to the roof terrace above the loggia, which doubles as an open-air cinema. Fortified by a delicious lunch on the terrace – think creamy burrata, the ripest tomatoes, local cheeses and irresistible home-baked bread – on our first afternoon we head out to the local Parco dei Paduli. Alessandra, the manager, and a San Cassiano local, explains that the site is the focus of a major regeneration project. Fourteen localities have joined forces to bring the neglected olive groves back to life and create a cultural hub. In late spring it’s a bewitching place: there are wild flower meadows under the olive trees, nature and history trails and the odd teepee, which you can camp in and stargaze from at night. Strict licensing laws designed to protect the local restaurants and bars in San Cassiano mean that Don Totu can’t offer its guests dinner. But this being Puglia, one of Italy’s richest culinary regions, there is no shortage of excellent places to eat. We enjoy a fabulous – and at €35 a head, incredibly good value – tasting menu at Farmacia dei Sani, an osteria that’s a half-hour drive away in Ruffano. The following morning we get up early to take advantage of the yoga class that Don Totu offers its guests (there’s a Hammam and small gym on-site, too). The post-yoga breakfast, taken outdoors under a stone portico, is sublime: fresh fruit, homemade pastries and biscuits, a selection of local jams, local charcuterie, cheese and eggs cooked every which way. We can’t linger quite as long as we would like, as the serious business of the day is about to start. Don Totu’s guests can book a cookery day with local restaurateur Raffaele Fanciullo. The course starts with a visit to a local farm and farmers’ market, to

source ingredients. It’s a fascinating insight into the local economy and the gastronomy of Puglia – the freshness and the quality of the produce here is extraordinary. Back at Don Totu, under Raffaele’s eagle-eyed supervision, we prep the ingredients for lunch – a selection of mouthwatering salads accompanied by stracciatella (burrata with an even creamier centre). We are allowed a couple of hours at leisure before we’re required back in the kitchen for dinner prep. This provides the perfect opportunity to hop on one of the guest bikes and cycle to the next village; if we’d wanted to go further afield, we could have taken one of the Vespas that are also provided for guests’ use. Dinner prepped – a ricotta and cima di rape starter, three pasta dishes and roast rabbit with fava bean purée – we make our way down to the dining room for winetasting led by Davide, Alessandra’s colleague and wine-buff, before sitting down to eat the fruits of our labour. This is a dinner with difference – not just because we’ve had a small part in cooking it – but also because our chef is a talented opera singer and serenades us as each course is served. Their aim, say the owners, is to make Don Totu guests feel as comfortable and as pampered as if they were Don Totu himself. There’s no doubt in our minds that they’ve succeeded.

The very best hotels are those that achieve a feeling of homecoming. And after a sat nav malfunction that saw our journey take a mammoth five hours (sob), the home-from-home welcome we received upon arrival at Foxhill Manor was the stuff that dreams are made of. Sister hotel to Dormy House, Foxhill Manor has just eight suites, and the most relaxed eating and drinking ethos I’ve ever come across. Their “eat what you want, when and where you want” philosophy was just crying out to be put to the test after our epic journey, so we ordered a late lunch of toasties, which we asked to be served on the terrace. While this was being prepared, we were introduced to chef, who talked us through menu options for the evening – all with the caveat that we were totally at liberty to order anything we chose. We overheard a group of fellow guests doing just that, requesting soufflés and fish dishes, all met with a relaxed smile and can-do attitude – in fact, we got the impression that the team enjoy a challenge; but the suggested menu sounded so like something we would have conjured up, we were more than happy to go with the flow. In between all this eating fell the important matter of checking out the Dormy House spa next door – although “spa next door” hardly does it justice. I’ve been lucky enough to have sampled a fair few luxury spas in my time, but let me state for the record – you read it here first – that Dormy House takes first prize. I was going to say that it may have been due to being exhausted from the over-long journey, but that would be doing the place a disservice; the massage I received was like no other; so warm, cocooned and nurtured did I feel that I almost wept when it ended.

Any dismay was forgotten, though, on discovering my new Favourite Place On Earth: the outdoor hot tub. Wallowing in the steaming hot water, drinking in the view was such a delight that I often find myself drifting back there. Even so, the real highlight was to come at dinner time, as so often in life. After resisting the temptations of the help-yourself pantry, situated RIGHT OUTSIDE OUR SUITE, appetites and anticipation were running equally high. The intimate scale of the hotel was never better illustrated than at dinner; food was served in a cosy dining room lit by twinkly candlelight. Such was the feeling of being at a friend’s house for the weekend that tables of guests were actually talking to each other, for heaven’s sake! The food was, predictably, exemplary; beautifully cooked mackerel for starter, and a superb beef Wellington to follow. The spirit of Foxhill, though, was embodied in the smaller touches; having expressed my hearty admiration for the marmite-infused butter (yes, yes, I know) that accompanied the bread, guess what was presented with my breakfast tray the following morning? For all I knew, they’d whipped up a fresh batch just for me. Leaving somewhere wonderful is always a wrench, and we were positively beside ourselves with grief upon departure. Our consolation was plotting to return – a special birthday or anniversary is just crying out to be marked by taking the place over for the weekend. Really, what could be better than filling your home with wonderful food, free-flowing drinks and loved ones? The only answer, of course, is calling somewhere as perfect as this home while you do so. After all, there’s no place like Foxhill...

What’s the appeal of a 1960s property? The thing I love about ’60s architecture – apart from the aesthetic – is the use of space. Before this we had a Victorian flat. The building was a lovely old schoolhouse but the use of space was terrible – the rooms were all wrong! You move from that into this and it’s like, wow, everything makes sense. It’s really nice that you’re elevated off the street and you have these huge windows that give you lots of natural light. To what extent did the architecture inform your interiors choices? We had some items beforehand, like the sofa. And the mid-century sideboard – Briony’s mother found it in a charity shop in Essex for about £70 and we thought, brilliant, we’ll have that! So yes, it’s influenced us a bit, but we didn’t want to make this a history lesson or too themed. I guess the mid-century style is something that I personally really like, but there are older pieces, quirkier pieces, and we’ve tried to make it look a bit more curated and collected, if you like. How does your personal interiors style differ from that of your work? What we do at Central Design Studio is very relaxed, informal and comfortable. It’s very natural in feeling and I guess that’s my personal style as well. With work you always have the commercial constraints, so that’s a very tangible difference, and because what we do is commercial it’s hardly ever about someone’s personal opinion. Luckily Briony and I agree on most things. She has a good eye for design. Tell me about your interiors shopping habits. Are you impulse buyers? We try to buy stuff as and when, so it’s very much built up over time. And I think it’ll probably continue to evolve. The coffee table we found on Etsy, from a guy in America, and we thought: that looks pretty cool, let’s get it shipped over. So that was one purchase from the other side of the world, whereas the wingback chair is from a local shop. We were looking for ages for a modern one and this was perfect. Artwork’s a big thing for us, too, but having so many windows, you don’t always have enough wall space to hang stuff. And which finds are you most proud of? The table lamp is a good one. I found the base in a junk shop in West Norwood for about £3, and then I bought the fabric in Berwick Street. It was just a metre of patterned silk, which FABRICMAGAZINE.CO.UK

we got made into a lampshade. It’s a quirky piece. I like it because it’s so individual. The tiles are from Mexico. We were looking for something interesting for the fireplace and we didn’t want anything overly mid-century, or overly ’60s, and we found these handmade Mexican tiles online. Our builder had a nightmare because they were all wonky. You’ve designed the interiors of top restaurants. Why eateries? I’ve always loved food. I grew up with an Italian mother, surrounded by food and the preparation of food. I’m a bit of a frustrated chef myself – I love cooking but it was never going to be my career. I studied spatial design, which is a mix of architecture and interior design. I was interested in how buildings were used and how they made you feel, focusing on this whole idea of creating an atmosphere. Hospitality design was just a natural fit, really. I was lucky enough to land a job designing bars and nightclubs in my early 20s and it just went from there. Does outdoor entertaining feature heavily at home? It’s hugely important for us because in a house with this small a footprint, to have that space as well, and to have that inside/outside connection is a real bonus. It almost doubles the size of your living space. The garden is very much an extension of our kitchen and we’ll eat outside at every opportunity. What’s next for Central Design Studio? We’re opening Salt and Pickle, which specialises in cured and preserved food. It’s actually a joint venture with four of us in total. We thought, let’s do something different – instead of just designing a restaurant, let’s invest in one as well. Long term, we’re working on a restaurant in the Cotswolds, a roof bar in London, a couple of hotel projects – one in Liverpool, one in Cardiff, a restaurant in the Middle East… That’s about it at the moment. Q: How important is kerb appeal?

When it comes to property, a new study suggests that our priorities are changing: factors such as low noise levels, a relaxing environment, good natural light and views of nature are now coming out top on our list of non-negotiables – over and above financial investment. The report, conducted by house builders Saint-Gobain, also revealed that 84 per cent of UK homeowners and renters want a property to be environmentally friendly. Clare Murray, head of sustainability at London architects Levitt Bernstein comments, “From the results of the survey there’s a distinct opportunity to connect views of external green spaces with areas of safe and easily accessible play to suit all life stages.
