T

he role of Jane Fairfax in Working Title’s adaptation of Jane Austen’s Emma, directed by Autumn de Wilde, was irresistible for Amber Anderson. “It was an amazing opportunity for me to act and to play the piano, and to bring those things together, and in such an incredible production,” she smiles. Performance has always been in Amber’s blood, but it was originally music that called her. “I was planning to be a pianist. That was everyone’s plan for me at least. I was at music school up in Scotland, where I grew up, and I got to about 16, and loved the piano so much, but could feel myself resenting all the practising I had to do,” she confesses. “And so I just began to consider other things. And I had always thought about acting. And completely separately to all of that, I had been scouted as a model, which was very surprising, but also incredible, because it was a real opportunity to get out of Scotland and come to London,” she tells me.

“I think I am sort of obsessed with my job because I feel that you really do get better every time that you do it, and you learn something every time that you do it”

Recalling coming to the Capital, Amber says: “I met some acting agents, and got myself an acting agent. And I just started auditioning, while I was doing modelling on the side. And yeah, I had been doing both of them simultaneously for quite a long time, but the last couple of years it has become really just acting.” Along with financial independence, Amber believes that the modelling prepared her for the audition process as an actor. “I personally find the rejection in modelling is way more brutal, because it just comes down to very surface level stuff. You just won’t get a job because your face is wrong,” she laughs. “If you find a way to thrive and not just survive in the industry, I think it can teach you quite a lot of resilience, which I definitely carried across to being an actor.” So would Amber say the two careers work hand in hand? Not really, she says – at least not for her. She explains that there were some things she had to work hard at letting go of when moving between acting and modelling jobs. “I think in order to be a good model you have to be incredibly self-aware,” she says, carefully. “To really be able to just step outside of yourself and know what your face looks like at different angles, and what your body is doing, and I think you can begin to get quite caught up in how you look, but when you are acting you just shouldn’t be thinking about that at all.” Of course, in acting, the self-awareness comes when having to watch the finished production. “I do know some actors who have never seen anything that they have done – because it is just weird, to be honest,” Amber admits. “It’s kind of like when you hear yourself on an answerphone message, but times 100, because it is how you blink, and how you speak… I struggle to be objective and then I feel quite insecure. I usually watch myself, then have a small breakdown, then let it sit emotionally for a couple of days. Then about two days later I start to feel good about it,” she laughs. She is now, she says, feeling very positive about Emma. The film was her first experience

of period drama, and very different to previous jobs. “The production team wanted everything to be done authentically,” she tells me. “So from the way that they did our hair to the undergarments that we wore under our costumes, everything was made to measure and really authentic to the period. And most excitingly for me, the instrument that I was playing in the film was a fortepiano, which is a very early version of the modern day piano, and something that you usually only find in museums.” As thrilling as she found being up close to the fortepiano, it brought with it its own challenges – Amber had to learn to play it almost as though it were a whole new instrument. “I think there was a thing where they were like, ‘oh, well she’s a pianist, and so she’ll be able to pick it up’, when actually it wasn’t as simple as that, because it is so incredibly different to what I am used to. So I hired a piano teacher, and she came on set with me – that was a really incredible opportunity.” Filmed in stately homes across the country, the schedule was quite intense, but Amber says that it was made bearable by being able to slip home to see friends during weekends off, and being with the very best people while on set. “The cast is just pretty extraordinary,” she tells me, “and there were about ten of us who were in quite a lot of the time, so we really became a kind of gang. We ate dinner together most nights with Autumn, and it was a really lovely atmosphere. Everyone was very supportive – I still see a lot of them now, even post filming.” Amber will be back on the big screen later this year in White Lie, for which she won the Vancouver Film Critics Circle’s award for Best Supporting Actress in a Canadian Film. “It’s a drama by two directors called Yonah Lewis and Calvin Thomas,” she reveals, “and it is about a girl who fakes cancer in order to defraud people. And I play the second lead – her girlfriend, who does not know at all that she is lying. I am also really proud of that film, it is quite dark. We took it to the Toronto Film Festival last year and people left the screening feeling quite shaken.”

It may only be March, but it is shaping up to be a good year – is Amber happy with the way things are going? “You can never get complacent,” she says. “I think I am sort of obsessed with my job because I feel that you really do get better every time that you do it, and you learn something every time that you do it. And I just think it is incredible to have that in terms of your job – there is no such thing as perfection, you are driven by a mixture of fear and a desire to develop,” she grins. How would she like to see that development taking shape? “I would love to do theatre,” she says. “I haven’t really had the chance to do that yet and it is something that I am really putting everything out there to try and do soon. I just know that I would love the experience of doing theatre… I have performed on stage quite a lot as a musician, and I really love the feeling. There is nothing quite like it really. I think because of its very nature, because it is live, and inevitably it changes every time you do it, I think there is something really magical about that. And actually maybe quite freeing, you know?” she grins. “In some ways I think that it is more of an actor’s medium, whereas I think in film there are so many other components and people contributing to the final form, so as an actor you are actually quite out of control in a sense. Which can be tricky.” Something Amber is very much in control of, though, is her music. “I still take piano lessons,” she tells me. “And I am currently studying to take my diploma, which is quite exciting, and quite terrifying as well,” she reveals. “It will be the first exam I will have sat since I was at school. And it is quite an intimidating exam. I think it’s nice to have something separately to work towards that is like a project I suppose. It’s just yours really.” For now, we’ll have to make do with her fortepiano recitals in Emma. Emma is in cinemas now

Do I want my brows laminated? I’m not at all convinced, actually – not least because the mere suggestion provokes such hilarity among my colleagues. I will admit that some of the Instagram pictures are a little alarming. But Courtney, my therapist at Strip’s Islington salon explains that their newest treatment is the answer to fuller, thicker and bolder brows; exactly what I’m after. I’m assured that my brows need not to be fixed in a perma-alarmed expression, but can be brushed down to give a variety of looks. A better name for it, she suggests, would be the brow lift – the procedure is in fact very similar to the LVL Lash Lift. My arm has been twisted… We chat through the look I do want to achieve, then I lie back on the bed and make myself comfortable – it is, I’m briefed, a relatively lengthy procedure. First, my brows are cleansed and brushed into the desired shape. Then fixed into position with glue before two different solutions are applied to first soften the hairs, manipulating them to grow in the new direction, and then alter the hair structure allowing the brows to maintain their new shape for up to six weeks. Then a nourishing treatment is applied to condition the hairs. We finish with a quick wax and tint to complete the look. It has taken an hour, but the time has passed quickly as we’ve been nattering happily about TV, and I’ve been mining Courtney for beauty tips.

Say hotel restaurant and I think Fawlty Towers, the hapless Torquay boarding house, beloved by 70s sitcom fans. But London is a different world. When The Arch in Marylebone became the Prince Akatoki, the hotel’s popular Britishthemed restaurant was rebranded as the Japanese-style eatery TOKii. On a Friday night it is full enough to feel buzzy and we stop at the Malt Lounge & Bar for a cocktail and an analysis of the décor. It gets the thumbs up from my friend, The Architect, who approves of the restrained elegance, the Japanese-influenced dark wood and minimalist detail. The bartender doesn’t approve of her drink choice though; it’s not one for the ladies, he tells us, and I check the date before opting for the signature Sunset from the Five Elements menu: Roku gin infused with physalis and ginger syrup, hibiscus and yuzu. It’s as pretty as it sounds and as refreshing as it looks. Sakes star, but the list is awash with eclectic fusion: kumquat wasabi jam, Suntory Toki whisky, chestnut liqueur. Easy on the eye is a theme that runs through the menu; presentation is impeccable. Designed to be shared, dishes are small, but flavours are complex. The Architect is used to eyeballing and can see that we are going to need to divvy up the last piece of the yellowtail carpaccio with green peppercorn dressing; a single chopstick slides through the tender fish like warm butter. Beef tataki melts in the mouth while the accompanying Jerusalem artichoke discs lend satisfying crunch. Tempura is hot and crisp to the bite, just as it should be – we try the shrimp and the mixed vegetables. I feel the fusion coming on with the irresistible crispy pork belly paired with apple and Japanese mustard coleslaw; but nothing is out of place. We’re back on the Asian track with succulent cubes of pink Barbary duck alongside sesame greens dressed with honey and soy.

Saving space for pudding, we don’t try the sushi and sashimi, but given the quality of everything else we’ve eaten it’s a minor regret. Instead I jealously guard the chocolate fondant while sneaking a taste of the crème brûlée. We are reluctant to leave, and the enthusiastic maître d’ presses a plate of petits fours on us. Bite-size nibbles include an incongruous flapjack and it is the first time I feel I could be in 1970s Torquay. But décor and food alike, TOKii is pretty, modern, tasteful and taste full. METHOD Preheat the oven to 180°c. Whisk together the eggs, sugar, salt, milk and double cream. Place the slices of bread in this custard mix and soak for at least an hour. To cook, melt the knob of butter in a frying pan and place the soaked bread into the pan, cook over a medium heat until golden brown. Place on a tray in the oven and cook for 5 minutes, or until the custard is set. To make the orange blossom syrup, put the caster sugar, water, and orange blossom in a small saucepan over a medium heat, reduce to syrup consistency (approx. 105°c in temp). If you do not have a thermometer you can test the consistency by putting a little bit of the syrup on a plate and placing in the fridge to cool down – it should hold its line on the plate. To make the banana jam, gently heat both the sugars over a medium heat until caramelised. Add the bananas and cook on the lowest setting until the bananas break down and completely collapse. The sugar will go dark brown in colour, this is okay, but catch it before it goes black. Place into a blender and blitz until smooth. Allow to cool down before placing in the fridge to chill completely. To make the cream, gently fold the tahini into the mascarpone. Add enough tahini to suit your taste buds. To serve, flip the French toast over and brush with the orange blossom syrup. Sprinkle over the pistachios. Serve with banana jam and tahini mascarpone on the side.

Chef Patron and co-founder, Sussex The first thing I cooked was… a wild rabbit stew for the vineyard harvesters at Nutbourne, our family farm and vineyard. I had caught the rabbit on the farm that day with my brothers. We built a fire outside and cooked a delicious, hearty stew in a cast iron pot. All the harvesters were mightily impressed as they dug in with sourdough bread made by my mum. It was a perfect beginning to a long love affair with local and wild cookery. My failsafe dinner party secret is… to keep the menu simple and use high quality ingredients. Something like a barbecued ribeye cutlet or half a lobster served with fresh salad. I could prepare the accompaniments an hour before my guests arrived and we could all enjoy being rallied around the BBQ before the meal. For afters, my favourite sweet has to be honeycomb with whipped mascarpone. My last meal on earth… seabass, caught on the Jurassic coast with my wife Lucinda and son Wilbur. I’d cook it on the beach over a driftwood fire and eat it with some foraged sea foliage. All I would need is a lighter and a pack of butter. For me, it’s always about more than just the meal. When I feel down, I cook… cheese fondue. The ultimate comfort food.

Thanks to the warmer temperatures enabling you to make the most of the multiple jardins, outdoor spaces and cultural happenings, not to mention fewer tourists and fewer queues, this is a brilliant time to visit Paris. There are various cultural events this month, notably the Louboutin Exhibition at the Palais de la Porte Dorée, which opened at the end of February and runs until 26 July. Revealing Louboutin’s rich imagination, the exhibition will explore every facet of his work in an institution that has played a significant role in his creativity. If you’re seeking something a little more active, the show-jumping event Saut Hermès at the Grand Palais is a really exciting event for both equestrian lovers and amateurs. t’s hard to pinpoint exactly what makes Rhodes such a magical place, because it is the combination of the island’s many charms that make it so special. Even a series of economic setbacks have been unable to dull the shine – if anything, the island is better than ever, boasting a slew of luxury hotels, Michelinstarred restaurants and exclusive wine tasting experiences that have holidaymakers coming back for more. A four-hour flight from London, but a world away from the Capital, Rhodes continues to hold its place in the world of luxury travel. I can’t wait to see what the fuss is about. Nestled on the peaceful and charming southeastern coast of the island, positioned halfway between ancient Lindos with its beautifully preserved acropolis, and the island’s southern tip, we discover the tiny coastal village of

Gennadi and there, the Gennadi Grand hotel. Having made its debut less than two years ago, it is one of five hotels on the island owned by the Minettos family. The Gennadi Grand claims to be the best in the family’s portfolio, and one of the best for luxury on the island, and from first impressions, I’m confident it will live up to its billing. The low-lying resort surrounds itself with nature; verdant wild gardens and palm trees beautifully complement the angular and minimalist grey stone facades of the buildings. Eco-friendly by design, the large floor-to-ceiling windows are fitted with energysaving glass and a huge sustainable living roof aids natural cooling, helping to save energy and seamlessly blend the hotel into its natural Rhodian surroundings. Our sea-view room is a stone’s throw from the resort’s very own private beach, offering sweeping views of the Aegean Sea and the luscious hotel gardens behind. It is comfortable and well appointed with a super king-sized bed, spacious living area and private terrace, complete with infinity plunge pool. The decor is minimalistic: a simple colour scheme of pale white, grey, charcoal and beige helps to emphasise the glorious natural light from those floor-to-ceiling windows. In the bathroom

I discover a large powerful shower but no bath – an initiative, I’m told, that is designed to help save water, tying in with the hotel’s strong sustainable ethos. It is all very impressive. Keen to truly unwind, we soon discover that we are in the right place; should you so wish, you can potter around all day without a plan here, thanks to the many facilities that the hotel has to offer. From yoga and tennis in our more active moments, to lounging on the comfortable day beds beside one of the three fresh water swimming pools in our quieter moments, we are truly spoilt for choice. The ultimate rejuvenation and relaxation comes at the hotel’s state-of-the-art subterranean spa, though, with its heated indoor swimming pool, sauna and Hammam. Pampering sessions here focus on treatments that promote inner balance and harmony, all carried out by expert therapists. I opt for a restorative massage and settle myself onto the bed in the peaceful treatment room as my masseuse begins to tend to my stiff back with smooth, purposeful strokes. Thirty minutes later, in a state of total Zen, I am led back to the pool area to relax. Reclining on a lounger beneath the soaring ceiling, with no vibrating phone to jolt me back to reality, I sip a glass of Champagne and relish the feeling of uninterrupted bliss. The pleasure seeking doesn’t end there: with 12 à la carte restaurants, the foodie offering at Gennadi Grand is well worth breaking the

bikini diet for. One not to be missed is Greek fine dining restaurant Edesma. The modern restaurant opens out onto a large rooftop lounge offering glorious views of the glistening aqua sea. Here, surrounded by the natural beauty of the Greek hills, we discover a culinary experience that makes us forget everything we think we know about the country’s traditional cuisine. Redefining the traditional flavours that everyone associates with Greece, the food at Edesma is fresh, bold and creatively prepared. T

he London couple live with their miniature dachshund Izzie in an Edwardian two-bed end of terrace house. It was their first property purchase and the very definition of a doer-upper: interiors were dated and worn, it had suffered some dubious DIY attempts, and the layout was far from ideal. But with an ambitious plan to renovate, and a vision to create a home of rich textures with a glamorously dark aesthetic, it became a true labour of love.

Did you do anything structurally when you moved in? Initially the property had three

bedrooms, but we decided to move the bathroom upstairs. Having a big bathroom upstairs was really important for us and the downstairs WC wasn’t suitable for a bath. One of the biggest issues with any project like this is finding a good builder. We went through a couple but eventually found someone we could trust to do the work.

Any further plans to improve? We still have some renovating to do, we want to add a singlestorey extension, which will consist of a kitchen, second reception space and a dining area. We also want to convert the loft into an extra bedroom and bathroom. But the biggest change we made was to the exterior: removing the dated pebbledash, re-rendering, and also improving and modernising the front garden.

How important is character to you?

It’s the most important aspect. I love a property with lots of period features. It’s so important to preserve character in a property or to add it back in if it’s been taken away. If there’s history or a story behind a property it’s very appealing to me. Character also adds architectural interest. I want my eyes to dance around a room when I look at it – hence why I also love maximalist design. We were able to strip back and renovate an original fireplace in our bedroom, which had been hidden under layers of paint. It’s now one of my favourite features in the room.

Describe your interiors style

Maximalism is close to my heart. We have so many beautiful objects that mean a lot to us – things we’ve picked up on our travels; things we’ve been gifted from friends and family; and things we’ve both found that we admire. I want to be surrounded by them. I feel darker colours offer atmosphere and ambiance, I like a room to feel cosy and inviting. Upmarket bars often have a darker colour palette, which is good for entertaining and conversation, and I wanted to reflect this in my own home.

How did the look come about? As we were renovating I created mood boards for my lounge and hall, which helped me get a clear idea of what I wanted to achieve. I can often see what I want a design to look like in my mind’s eye, but throughout the process I may change my mind or have a better idea and the final look can evolve drastically. How does your online presence influence your interiors choices? I really enjoy sharing

my home and my ideas with my followers on social media but I don’t design my house for Instagram. More often than not, my favourite pictures don’t do so well! I love the visuals I’ve created on my Instagram page and it’s very pleasing that the images look great together. AT HOME WITH Brave and indulgent, dark colour choices offer atmosphere and ambience

budget but I associate the use of dark colours with brave and indulgent design. My goal was to portray this from the walls to the furnishings. I used deep and heavy textures in my home to add interest, I’ve done this in my lounge with the curtains, sofa and cushions. Using house plants brings a freshness to a room, especially when you’ve chosen to be bold with dark colours on the walls. The use of metallic finishes makes for a nice contrast, too. They reflect the light. I’m like a magpie, if it’s shiny, I want it.

Which interiors brands are your favourites? House of Hackney is one of my

favourites for their use of clashing prints, depth of colour, and beautiful images. I used them a lot throughout the house. I also love Swedish hardware company Buster + Punch. I’ve bought many light switches and handles from them and we’ll be finishing our kitchen off with their handles. A huge part of my design aesthetic is colour, and for this I went bold. Ahead of the renovation I discovered Irish brand Colourtrend, who produce a massive range of high quality paints. As soon as I painted a sample on the wall I knew it was right, I loved the depth of colour and it created a warm atmosphere.

What was your best thrifty find for the house? Our bed is the most expensive piece,

but it was also a bargain. It’s from Heal’s, but I found it new on eBay. A lovely family in Surrey were selling everything in their home because they were moving back to the Middle East. It cost £4,000 new, but we got it for £350. An absolute bargain and also the best bed in the world. Which room is your favourite? I love my lounge. It’s the perfect place to relax in and I particularly love it in the evening when I have all the candles lit and the lamps on. Second favourite is my bedroom because I love the Fornasetti Cole & Son Nuvolette wallpaper with clouds on.

Living in Primrose Hill you get all the wonderfully charming benefits of living in a village, whilst still being a stone’s throw from central London. I start the day by walking my dog Poppy, either through Primrose Hill or Regent’s Park. One of the benefits of having a dog is it gets you out of the door every morning, rain or shine. It is a privilege to have such beautiful green spaces on one’s doorstep, while living in London. The lake in Regent’s Park is a

particular favourite spot of mine. As a morning pick me up, I often grab a chai latte from Melrose and Morgan while dashing off to a site visit for one of my projects. If I have an early meeting, Greenberry serves the most wonderful breakfast menu, the staff are all so friendly and take very good care of the locals! My days can be quite varied and often involve a lot of running around between projects and suppliers. I like to unwind at the end of the day either by cooking a delicious supper

at home or going to The Lansdowne for some drinks. I love to have friends over for supper or Sunday lunches; if I’m cooking, I will stop by either La Petite Poissonnerie for fresh fish, or Primrose Hill Butchers for meat, and I always go to Yeomans for the best fresh fruit, vegetables and flowers. Whether you plump for the lemongrass and ginger chicken or the Bulgogi beef, mains are a mouth-watering affair. The speciality sushi rolls are a must, too, including the hot jalepeno salmon roll and the crab-based spider roll. This one’s a firm favourite of Neil Stone from Bargets, who tells us, simply: “It’s top notch food, really pukka!”

London Zoo launched in April 1828 as the world’s first scientific zoo, for ‘teaching and elucidating zoology’. Originally, the animals were kept indoors 24/7, until they started dying and the zoo realised they needed fresh air and exercise. The zoo was used entirely for scientific study until 1847, when it was opened to the public. Today the zoo houses a total of 673 different species. 73

The Greta effect

Step aside, teen hunks: if anyone is getting today’s schoolchildren hot under the collar, it’s Greta Thunberg. The 17-year-old Swedish activist has opened her generation’s eyes to the devastating effects of climate change on the planet. And they’re taking action, protesting in their millions and pressuring adults to cut their carbon footprints. It’s a shift Rod Jackson, head of International Community School (ICS) in Knightsbridge, has seen first-hand. “There’s definitely more interest from our pupils,” he says. “Even years one and two want to hold us to account in terms of recycling, over-consumption and single-use plastics. And lots of our

primary kids walk to school. Parents are keen too, but it’s pupils that are driving the change.” This drive, along with Rod’s passion for the natural world, explain why ICS is determined to achieve an Eco-Schools Green Flag in two years. It’s also part of Globeducate, the first schools group to partner with the World Wildlife Fund; this year, pupils will attend a mock-UN sustainability summit and run a Wear it Wild fundraising event. Rod counts leadership, debating and problem-solving among the skills pupils will learn from these activities. And he believes having a real voice will create happy, fulfilled and successful children who interact positively with each other and the world. So how can you do your bit to build a better future? “If your child’s school isn’t part of the Eco-Schools movement, book a meeting with the head to find out why,” advises Rod. “Ask how much waste the school generates, how it monitors recycling and if its electricity use is going up or down. Is sustainability on the PSHE programme as well as the schedule for clubs? How does it make use of the student voice and leadership?” To make a difference at home, Rod recommends choosing products with less packaging, taking holidays in the UK and asking if a family member really needs something before you buy it. “These things are hard because we’re a very consumerled society,” he says. “But children and young people have a strong sense of natural justice, so they’ll respond well to parents having this conversation with them.
